Sunshine Coast Mum Wins Awards With Her Innovative ‘Croc’ Beach Bag

Design a ‘Croc’ bag but make it cute. That was the mission of Sunshine Coast Mum Krystal Rand when she set about creating her cult classic Kove & Co Tribe Bag

The idea was born not long after her daughter arrived, when Krystal’s days were spent rushing around doing errands with a toddler in tow and dealing with swimming lessons and beach trips

“I wanted a bag that was sturdy and large enough to fit all the things in the one place, but also lightweight and waterproof.”

THE JOY OF FOOD & EATING RECIPES FROM NONNA’S CUCINA

Sunshine Beach local, Marie Lewis, had long contemplated the idea of documenting her Mother's recipes, following interest from her niece, a task initially perceived as modest but quickly snowballed into a monumental undertaking.

However, this project became more than recipes, prompting Marie to reflect on her parents' hardships in immigrating to Australia and their unwavering commitment to provide for their family!

Marie’s Mum and Dad had well defined areas of responsibility: he grew the fruit & vegetables and Mum cooked them!

Living in a country rich with Italian heritage, Marie expressed gratitude for her familial roots and the abundance of culinary traditions they brought with them Despite financial constraints preventing outings and travel, Marie's parents ensured there was always a hearty meal to share with loved ones.

Marie recalls a moment when she expressed reluctance to help her Mum with cooking; Marie's mother imparted her wisdom and said “making food that brought sustenance and enjoyment to the people you love, was a gift and something to be proud of doing.”

SAVED FROM ‘SCOURGE’

PROGRAM’S IMPACT FOR WILDLIFE REVEALED

Sunshine Coast Council’s Coastal Fox Control Program runs from autumn to spring each year, with operations recently resuming for the tenth year.

With this season’s vital program now underway, Council analysis has found more than 45,000 animals have been saved through the program’s removal of 217 foxes through the program.

Council estimates that fox control throughout the program area since 2015 has saved about 8100 native small mammals, 27,100 birds, 9100 reptiles including turtle hatchlings and 600 macropods.

Division 8 Councillor Taylor Bunnag said all areas of operations for the program were clearly identified with warning signs at all entrances

“This program covers a significant area stretching north of the Maroochy River to Peregian Springs,” Cr Bunnag said.

"We ask our residents and visitors to please heed all program signage and be sure to keep your pets out of vegetated areas for their safety.”

“The European red fox was introduced to Australia for recreational hunting in 1855 and has become a significant contributor to native animal decline across the nation.

FREE TAFE ENROLMENTS ARE OPEN IN OVER 70 COURSES

Queenslanders looking to save money on upskilling, reskilling, or kick starting their careers as a Queensland “SuperGrid Superhero” are being encouraged to apply for the Government’s Free TAFE program as enrolments open for the second semester of 2024.

Free Apprenticeships for Queensland’s Big Build are also available for Queenslanders under 25 years of age who want to earn while they learn by combining work with study in over 130 qualifications including construction, plumbing, carpentry, wall and floor tiling, and mechanical.

Certificate III in Electrotechnology Electrician has been the state’s most popular course at TAFE with over 5,000 students enrolling in 2023.

BATTERY BOOSTER PROGRAM INCREASED

The Battery Booster program, announced earlier this year, will now be increased from $10 million to $16 million, following the popular uptake by Queensland households.

Eligible households with a new or existing solar PV system of at least 5 kilowatts capacity may receive a rebate of between $3,000 and $4,000 to purchase an approved solar battery system of 6 kilowatt hours (kWh) or more.

The rebates, which are means tested, will see households on an annual taxable income of less than $66,667 benefit the most, with $4,000 cash back.

Households with a combined annual household taxable income of $180,000 or less will be eligible for $3,000 cash back.

BEWARE OF FAKE INVOICES IMPERSONATING BUSINESSES

Australians are being urged to check payment details directly with a business before paying an emailed invoice, following a rise in losses to payment redirection scams.

“These criminals are posing as genuine businesses that a consumer has recently dealt with, sending fake invoices with altered payment details so that the money ends up with the scammer,” ACCC Deputy Chair Catriona Lowe said.

“This scam is hard to detect because the scammer will either hack into the email system of the business or impersonate the business’ email address by changing as little as one letter,” Ms Lowe said

The most common industries targeted by this scam are traditionally those that regularly deal with large transfers of money, such as the real estate, legal and construction sectors. However, Scamwatch has received recent reports that car dealerships, travel companies and their customers have been targeted.

“If you receive an invoice via email, take the time to call the business on a number you have found yourself to confirm that the payment details are correct,” Ms Lowe said.

“We know of an Australian man who lost more than $35,000 after scammers compromised the email account of the car dealership he was buying a car from. After paying the deposit securely through the dealership’s official website, he received an email with an invoice for the remaining amount owed which he paid thinking it was genuine When he went to pick up his new car, he found out that the invoice was a scam and the dealership had only received his deposit.”

Pedas is a restaurant for Malaysian and Chinese cuisine lovers, open 6 days a week for Lunch or Dinner offering inside or outside dining & takeway. They are fully licensed with BYO (wine only). Not open all Monday or for Saturday Lunch

Location & Access

Located on Birtwill St (right towards the end of Birtwill if entering from David Low Way). There is ample free street parking plus a carpark across the road and easy access for wheelchair guests.

Service

Water was served as soon as we sat down outside. An ice bucket for BYO wine and wine glasses arrived soon after. The menus were already sitting on the table. Staff were friendly and kept checking on us to order, without being pushy. Could not fault the speed of service as our dishes arrived extremely fast. Perfect if super hungry!

Food & Beverage Menu

The cuisine is Malaysian/Chinese with lots of favourites to choose from along with Gluten Free options We opted for a Sweet & Sour Pork (there is a chicken option) & Sizzling Mongolian Beef with side serve of fried rice. All dishes were tasty and really good in portion size. Prices are reasonable, our order came to under $70 for 3 people, including BYO Wine corkage charge for 2

Summary

Overall we found Pedas a really friendly place to enjoy quick & tasty Asian dishes. Their outside seating is dog friendly, and inside looks light, open and comfortable Worth also trying when next you have a craving for some good Chinese takeaway!

Sweet & Sour Pork with Vegetarian Fried Rice

Rustic Apple Raspberry Pie

The kids can spoil mum this Mother’s Day with this quick and easy rustic pie. Loaded with apple and raspberries it makes a great finish to Sunday lunch.

INGREDIENTS: (serves 6-8)

2 cups plain flour

2 tbsp caster sugar

180g cold butter, diced

3 tbsp iced water extra flour, for bench

4 apples, red or green

1 cup frozen raspberries

3 tbsp caster sugar

2 tbsp cornflour

1 tsp vanilla extract

To serve: icing sugar, for dusting cream or ice cream

METHOD: To make pastry, place flour, sugar and butter into a food processor and process until mixture resembles fine breadcrumbs. Add iced water, pulsing a couple of times until the dough begins to come together.

Turn out onto a floured surface (taking care when removing from the processor blade!) and knead into a smooth ball.

Flatten and wrap in plastic wrap. Refrigerate 30 minutes.

While dough rests, peel, core and dice apples into approx. 1cm cubes. Place in a large bowl with raspberries, sugar, cornflour and vanilla and toss to combine.

Preheat oven to 200°C and line a baking tray with greaseproof paper.

On a lightly floured surface, roll out pastry to a 35cm round (approx. 1/2 cm thick) making sure it doesn’t stick to the bench by moving and turning regularly, adding more flour as needed.

Place pastry onto prepared tray then top with apple filling, spreading evenly to cover pastry but leaving a 6cm border.

Fold the pastry edge up onto the apple filling to encase, leaving the centre of the pie open.

Bake in preheated oven for 35-40 minutes or until golden.

Dust with icing sugar and serve with cream or ice cream.

TIP: Make the pastry the day before so you can assemble and cook right when you need.

FREE FLU SHOTS

BOOKINGS ARE NOW OPEN

The Queensland Government is backing free flu vaccinations in 2024, as part of a $40 million commitment to ease pressure on hospital emergency departments this flu season.

All Queensland residents over the age of 6 months are eligible to receive the free vaccine from vaccination providers, including GPs and pharmacies. Bookings are now open.

The peak season for influenza varies from year to year, but typically starts in May and lasts until around October, with most cases typically recorded in August.

Queenslanders are encouraged to consider vaccination ahead of the peak season to ensure coverage over the winter months.

The 2024 Free Flu Vaccination Program, concluding on 30 September 2024, aims to encourage more Queenslanders to get vaccinated, while putting money back into the pockets of families who do not qualify for a free vaccination under the Commonwealth’s National Immunisation Program (NIP).

New Sunshine Coast Mayor’s vision for region

The Sunshine Coast faced an “exciting time in its story’’, where Council had an opportunity to create “a better place for us all”, the region’s new Mayor said in her first official address to a Council meeting.

At the post-election meeting of Sunshine Coast Council in April, Mayor Rosanna Natoli vowed to always put the community first.

Mayor Natoli promised to work with fellow councillors and the region’s state and federal members “to secure the infrastructure the Sunshine Coast so desperately needs”.

“I promise to be open and accountable, available, accessible. Most of all, I promise to listen.

“This is an exciting time in our region’s story. We are facing enormous growth, which brings challenges, but also tremendous opportunities, the chance to make the Sunshine Coast a better place for us all, and for future generations.

“I look forward to working with Council officers, executive and my fellow councillors to make this a reality.”

Council also determined at the post-election meeting that Councillor Maria Suarez would serve as Deputy Mayor

Cr Suarez represents Division Nine and gained valuable experience in the previous Council where her areas of interest included Environment, Liveability and Community and Economic Development
