ome renovation trends are ever-changing. Renovations that might have been de rigueur 20 years ago may seem dated now.

Recognizing the potentially popular trends of tomorrow is a great way for homeowners to give their homes a fresh new look and put themselves in position to capitalize on popular trends when they put their homes on the market. That’s especially so after 2020, a year when millions of people spent more time at home than ever before.

All that time working from home and relaxing at home gave millions of homeowners ideas about what they like about their homes and what they hope to change. The following are some renovation trends that various experts suspect could emerge in 2021.

• Eco-friendly living: Climate change, and how to combat it, was a hot button issue during the 2020 presidential election in the United States. So it should come as no surprise that urdesignmag.com, a web magazine that showcases creative trends in design, architecture, art, technology, and fashion, predicts that eco-friendly living solutions figure to be hot commodities in 2021. Eco-friendly appliances, furniture and designs can help to conserve energy and reduce waste, which environmentalists and government agencies like the Environmental Protection Agency note are two critical components in the fight against climate change.

• Large windows: Large windows can provide stunning views of the outdoors and allow ample natural light into a home. It may not be

DID YOU KNOW? Flowers can have sentimental value, particularly those received as gifts or those that were part of momentous occasions, like weddings. Fresh flowers have finite life spans unless measures are taken to preserve the blooms.

The flower experts at ProFlowers say pressing flowers can preserve them for years to come. While flower lovers can invest in a flower press, other heavy objects also can be effective at pressing flowers. Start by choosing flowers that are either still in bud form or are freshly bloomed.

Dry the flowers out as quickly as possible to prevent browning. Place the flower between two pieces of white, nontextured paper. Then place all within the pages of a book. Depending on the size of the book, you may be able to press more than one flower at a time. Place other books on top to weigh down the book with the flowers inside. Change the moisture blotting sheets every few days. After two to three weeks, the flowers will be completely dry and flat. Remove the flowers carefully using tweezers or fingertips. Store the fresh flowers in a cool, dry place or consider framing them in a shadow box.

Cheesecake makes a decadent Valentine’s Day treat

A

cheesecake recipe can be useful on any special occasion, and especially so on Valentine’s Day. For many people, cheesecake is not cheesecake without the addition of ricotta cheese. While ricotta is included in savory dishes like lasagna or manicotti, it is at home in desserts like cheesecake as well.

Ricotta means “recooked” in Italian, and its production involves reheating the whey left over from making other cheeses, like mozzarella. Its texture is like a creamy/grainy, thick sour cream.

Ricotta is included in this recipe for “Ricotta Cheesecake With Coffee and Chocolate” from “Nick Stellino’s Family Kitchen” (G.P. Putnam’s Sons) by Nick Stellino, but it is not the only flavorful ingredient in this decadent dish. Coffee liqueur, chocolate and lemon zest add to the complex profile — which only get more pronounced if you prepare this cake a day in advance.

Ricotta Cheesecake With Coffee and Chocolate (Tortino al caffè e ciccolato) Serves 8 to 10 1 cup graham cracker crumbs 2 Tbsp. butter, melted 2 Tbsp. sugar, plus 1⁄2 cup sugar 2 lbs. ricotta cheese, drained of excess liquid 8 eggs, separated 1/2 cup cream

1/4 cup espresso or extra strong coffee, cooled 1/4 cup coffee liqueur 1 tsp. finely grated lemon zest 1/2 tsp. salt 1 cup semi-sweet chocolate morsels

1. Preheat the oven to 325 F. 2. Make a graham cracker crust by mixing together the melted butter with the crumbs, and sugar. Press into the bottom of a 9-inch springform pan.

3. Mix together the ricotta, sugar, egg yolks, cream, espresso, coffee liqueur, lemon zest, and salt until creamy. In a separate bowl, beat the egg whites until they form stiff peaks. Carefully fold the egg whites into the ricotta mixture. Stir in the chocolate morsels and pour onto the prepared crumb crust.

4. Bake the cake for 1 hour and 15 minutes or until just set in the middle.

The cake will still seem wobbly, but will be lightly browned and cracked around the edges. Remove the cake from the oven and cool on a rack for 30 minutes. Refrigerate the cheesecake for at least 6 hours or overnight before running a sharp knife along the edge of the cake and removing the pan.

Cut into wedges to serve. Garnish with shaved chocolate and strawberries, if desired.
