Graduation plans? A look at Edwardsville-area high schools honoring graduates

EDWARDSVILLE — It’s graduation season and area high schools are making efforts to celebrate the class of 2020, following the state’s COVID-19 guidelines.

Edwardsville High School Principal Dennis Cramsey explained, in his most recent update last month, that a virtual graduation will take place on Saturday, May 23, and will feature speakers who would have delivered keynote addresses at the traditional ceremony. Any in-person graduation or celebration will be determined, depending on state guidelines.

EHS is working on its plans for a virtual ceremony, while Metro East Lutheran High School, in Edwardsville, has set dates for its graduation.

MELHS Principal Jay Krause said it will hold its graduation Saturday, June 27, and its prom Friday, June 12.

“We are planning as much of a ‘normal’ graduation as possible, given the guidelines,” he said.

Father McGivney Catholic High School, in Glen Carbon, also continues to look for alternatives to a traditional commencement, which would infringe on Illinois safety guidelines, such as social distancing and gatherings of large groups.

Father McGivney High School Principal Joe Lombardi said a date for graduation has yet to be determined. He said he still plans to celebrate graduating seniors and that an update will be provided in the near future.

Edwardsville’s indie Good Weather Gallery goes virtual

EDWARDSVILLE — There’s still time to catch Good Weather Gallery’s current Bharat Ajari show since the gallery turned to the web for its public exhibitions.

“Our shows will continue as we go virtual,” said curator and owner Brooke Peipert, who opened the independent gallery less than one year ago at 301 N. Main St., in Edwardsville.

Peipert originally scheduled the closing of “What Would Ernie Barnes Say”

by Bharat Ajari, May 23, but now patrons and casual viewers can enjoy the exhibit for the duration of the state’s modified stay-at-home “All the shows can be seen at the gallery’s website, www.goodweatherartgallery.com, and its Facebook page.”

Not only can visitors view Ajari’s paintings beyond May 23, but also be

the first to see “Kafka in Surburbia” by m.sass, which opens virtually May 23.

“Because of force cancellation and closure of all opening receptions, figure drawings, our art bazaars, we are really struggling to keep consistency with lack of foot traffic,” Peipert said. “We want our artists, visitors and patrons to stay involved as we move past this pandemic, and see our momentum continue.”

“We have also began e-commerce, so work can either be purchased directly from the gallery or directly from our website,” Peipert said.

Ajari’s style is grounded in post-modernism and inter-subjective perspectives.

He has exhibited his work in solo gallery shows and has works included in the permanent collection of The Santos Foundation, a nonprofit that supports the needs of visual artists.

“The primary investigation of my work is around what it means to be black,” Ajari wrote in his artist’s statement.

“The figures in my paintings are the embodiment of of blackness. By blackness, I mean in additional to ethnic identification, it is an open-ended question of what it means to be human,” he said.

In the title of his exhibition, Ajari refers to another black painter, Ernest Barnes Jr. (1938-2009), an American artist well known for his signature style of elongation and movement.

“My style, as opposed to Barnes, is angst driven and with static figures,” Ajari said.

Several of the paintings in this show are derived from taking figures out of Barnes’ paintings and re-situating the figures as isolated figures in his own paintings.

“In this regard, the title of the show is meant to evoke a conversation,” he said.

“I have thought about the paintings of African American artist Ernie Barnes most of my life,” he explained. “A neo-mannerist painter, his work was a celebration of black life. His unique style consisted of elongated forms in movement.”

The next exhibit to open virtually, “Kafka in Suburbia” by m.sass, conversely is about the “ephemera of the mid-20th century filled with idealized images of American life.

“School books and magazine ads portray morally upstanding people, living in happy suburban homes, brimming with shiny things,” m.sass wrote in his artist’s statement. “But these were

also the years during which America was grappling with the aftermath of the Great Depression, a second World War, the perceived threat of communism, the fear of the bomb, segregation, assassinations, another war … and yet another.

“In these representations of ‘everyday life’ those fears are not absent, but rather made more conspicuous by virtue of their absence.”

In m.sass’ “Kafka in Suburbia” series, these images are juxtaposed and recontextualized to reveal the absurd.

Peipert’s plan also is to continue the figure drawings, that were gaining in popularity in the months before the coronavirus pandemic was declared by the World Health Organization.

Lawn rangers offer yard insights

Don’t cut corners on mower maintenance

ALTON — Don’t cut it too short. Make sure your blades are sharp. Keep on top of your weeding. And maybe give Forrest Gump’s machine a spin.

The mow you know, the better it will go.

Grass is growing — courtesy of spring rain and sunshine — and that seasonal rite of passage, lawn mowing and landscaping, is in full swing. Whether you landscape,

everybody mows their lawn or has it mowed, but not everyone does it the right way or takes the proper care of their mowing machines, according to experts.

“I always try to cut the grass a little bit higher,” said Tyler Dreith who makes his living mowing lawns as the owner of Alton Lawn Company. “That prevents disease from setting in and suppresses the weed growth as well.

It’s also important for people to keep their blades sharp on their mowers, which gives a cleaner cut and it’s not as hard on your engine.”

Dreith said every yard and customer is different, so he varies his mowing strategy accordingly. He prefers to leave grass clippings in the yard as mulch, but some people want their cut grass to be bagged.

The best time of day to start mowing is about 9:30 a.m.

or as soon as the morning dew is gone, he said, and you can effectively mow at any daylight time after that. But Dreith avoids mowing when it’s wet, and for good reason.

“It dulls up your blade,” he said. “It doesn’t do a good, clean cut and it’s going to get clumpy. It also causes your engine to work much harder.”

Dreith and his employees will create patterns in customers’ yards if they want, and it’s not hard to do: Mow parallel with the house one time and perpendicular the next.

Trysta Mueggenburg, the owner of Elements Turf & Outdoor Solutions in Alton, is another proponent of longer versus shorter grass.

“You never want to cut off more than one-third of the grass blade. So you may need to mow more than once a week,” Mueggenburg said. “Typical lawns around here are a tall fescue grass, and you need to mow those to three and a half to four and a half inches or so.”

A good-looking lawn needs to be fertilized and free of weeds and pests; many homeowners will perform these treatments themselves. Mueggenburg said that if you do your own weeding, you need to realize that not all weeds can be treated equally.

“Some weeds you can only treat during the germination phase. Some of them you have to treat after they’ve

already popped, and that’s why you need a year-long program,” Mueggenburg said. “You can’t get that when you are spot treating or using a weed-and-feed program.”

Elements uses a six- to seven-application process to kill weeds and “all kinds of creepy-crawlies” that try to take up residence on your lawn, Mueggenburg said. The company also uses a granular, longer-releasing fertilizer designed to more effectively give grass the nutrients it requires. And if you need to sow some new grass seed, she said the cooler months — especially the fall — are the best times to do it.

Now that you know how to keep your lawn healthy, it’s time to turn to the machines that do the work. Your lawn will look nicer and taking care of it will be easier if your lawn mower is properly maintained. That’s something Nick Miller does every day at Bertels Sales and Service in Dorsey.

“If the blades are sharp and the deck is level, the grass is going to look good,” Miller said. “Tire pressure plays a bigger role than people realize. A lot of the time if somebody says their mower is not cutting correctly, it’s almost always a low tire on one side.”

Miller said you should change the oil, oil filter and air filter in your lawn mower at least once a season. You should also regularly check the fuel filter, spark plugs and the hydraulic oil if it’s a zero-turn mower, he said.

Early spring is Miller’s busiest time of year because homeowners want to awaken their mowers from a long winter’s nap, only to find that many of them won’t start.

“Probably 80 percent of what comes through this shop is fuel-related,” Miller said. “You put it in your shed at the end of the year with gasoline still in it. But with the ethanol

You should also get fresh gasoline in your fuel can, he said.

“Gas any more has a shelf life of 30 to 60 days and after that it’s kind of up in the air,” Miller said. “It depends on how you store it.”

If you’re fed up with your old mower, or itching for a new one, Bob’s Lawn and Garden in Godfrey has been a go-to place for 40 years now. Owner Rick Crivello said battery-powered lawn mowers are the latest trend in lawn care, but they’re only good for smaller yards. Most of the

“Aside from price you’re looking at horsepower, engine size, deck size and the propulsion system,” Crivello said.

“You can have front-wheel-drive for level yards, or rearwheel-drive and all-wheel-drive for customers who have grades.”

Crivello said one of their best sellers is a 30-inch-deck, self-propelled walk-behind mower for customers who desire the cutting width of a riding lawn mower but still want the exercise of walking behind it. That machine will set you back about $1,100, he said.

Crivello services what he sells, and he cautioned buyers to make sure where and how they will get service and repairs to their mowers regardless of where the machines are purchased. His core product lines are two big names in the business: Toro and Snapper. Toro has more than half the market share on zero-turn riding mowers. Snapper, on the other hand, still sells the product that made them famous — the rear-engine riding lawn mower.

“The old Snapper rider that Tom Hanks was driving around on ‘Forrest Gump,’ they still build that unit,” Crivello said. “One year I’ll sell a dozen of those and the next year I’ll sell two or three. But we still sell those for smaller yards.”

This Old House: Edwardsville’s ‘Charles Springer home’s’ storied history

EDWARDSVILLE — Although the house at 112 Elm St. is more than 150 years old, it has been at its current location for only a century.

Before the house was moved from 1023 St. Louis St., it was one of the oldest homes on the street and remains among the oldest homes in Edwardsville.

The prior property owner, David Gillespie, who owned the property before its development, sold it July 5, 1869, for $675 to Charles and Adelaide (Isbell) Springer. Charles Springer was born in Indiana, a cousin to the Springers who would later move to St. Louis Street.

After graduating from law school in 1858, Charles Springer moved to Edwardsville, where he became the law partner of Gillespie, to whom he’s related. Springer enlisted in the Union Army early on in the Civil War and rose to the rank of colonel before being mustered Jan. 16, 1866. A few years later he was active in Republican politics, elected as one of Madison County’s representatives for the 1869-1870 Illinois Constitutional Convention.

After the war, he returned to his Edwardsville law practice. By the end of 1866, in December, he married his longtime sweetheart, Adelaide “Ada” Isbell, in Altoona, Iowa, where her father was pastor of the Methodist Episcopal Church. Back in Edwardsville, the couple built a house at 1023 St. Louis St., the house that now is locat-

ed at 112 Elm St. “Removing to Edwardsville, four years of perfect blessedness were granted and a perfect home erected, in which they lived nearly two years, when death, who spares neither friend nor foe, but always takes the best, tore down this bright hearthstone and put out its altar fires,” wrote the author of Charles Springer’s biography in 1869 for “History of Jones County, Iowa,” as told by Springer’s wife.

After surviving four years of war, Charles Springer, 36, suddenly died Nov. 15, 1870, of complications from a disease he contracted during the war. He was buried in Edwardsville’s City Cemetery, adjacent to Luck Cemetery.

A year later, his wife moved to Evanston, for a teaching position at Northwestern University. The following year, in the fall of 1872, Ada Springer returned to Iowa, due to the ill health of her sister and mother. She also took a position as principal for the Jones County Academy. In 1875, she also moved her husband’s remains to Iowa, where family members were laid to rest, so that she could someday be buried next to her husband.

Although the 1873 Atlas of Madison County still shows Gillespie as the owner of the property at 1023 St. Louis St., court records prove that, since 1869, the Springers owned the property. A warranty deed, dated July 7, 1881, transferred ownership from Ada Springer to Moses B. Sherman for $2,000.

Sherman came to Edwardsville as a teacher

in the 1850s. Although he taught for many years, he went on to have a varied employment history. When he died, in 1901, he was working as deputy clerk for Madison County.

The Sherman household was a musical one. A newspaper article about Edwardsville’s history of musicians stated that Sherman and his daughter, Mattie, had powerful voices. The latter participated in local musicals and plays for two decades before she married Thomas Ramey. The article also said, “… she always sang a fraction of a beat behind the rest of the congregation at church, with the result that the hymns became slower and slower.”

In 1919, the lots in the 100 block of Elm Street were purchased by contractor Ciro Erspamer, and within a year he moved the house on St. Louis Street to 112 Elm St., rolled on logs to the new location. Erspamer completely renovated the house, adding a basement, doubling the flooring and rewiring to upgrade electricity. A two-sided porch was removed from the house and replaced with a modern front porch that gave the house a 20th-century appearance.

The Edward A. Fresen Sr. family became the first to occupy the house at its new location. The family enjoyed the novelty of hot running water, a gas stove, a coal furnace in a usable basement and a telephone, all amenities unavailable at their previous residence. The exterior of the house, originally clapboard, was changed to white stucco, probably

by Erspamer, and later to shakeshingle siding. The only visual hints of its earlier origins are an open walnut staircase and the style of four-panel doors throughout the home.

Thanks to Edward “Ed” Fresen Jr., this house has a well-documented history, containing both his memories and additional research.

After 35 years as a minister, Fresen Jr. returned to Madison County upon retirement. He took graduate classes at Southern Illinois University Edwardsville in the 1980s, and also participated in SIUE gerontology outreach courses working with college seniors, encouraging them to document the past.

Fresen Jr.’s family was made up of his parents, Edward and Elsbeth (Plassmann) Fresen, who married in 1906, and his sister, Ruth. Edward Fresen Sr. (1884-1956) was a second-

generation American, but his wife was born in Germany. Thus, German was spoken in the household.

The children didn’t learn English until they started school.

Fresen Sr. studied bookkeeping at Jones Business School in St. Louis. Sometime after his marriage, he moved from Horseshoe Lake, near Granite City, to Edwardsville where he worked as a cashier for Citizens State Bank. Then, in 1917, he was hired by Charles Boeschenstein to work as a cashier at the new National Bank of Edwardsville. He worked here for the remainder of his career, retiring as bank president. His passport savings book was the first issued by the bank.

The Fresen family’s first home in Edwardsville consisted of rooms rented from Phoebe Montgomery at 829 St. Louis St., where Fresen Jr. was born in 1910. Then they rented, from 1914-1919, a house at 1009 St. Louis St., where, in 1915, their daughter was born. Their third move, in 1920, was to the house at 1023 St. Louis St., the one eventually moved to Elm Street.

They rented the house, popularly known as the Charles Springer house, for a few years, before purchasing the house in 1922. Members of the Fresen family would live there until 1982.

Fresen Jr. lived near or on St. Louis Street until 1928, when he left for college. He remembered the steep lots at current day Randle Street, behind 1023 St. Louis St. During construction of the new county courthouse, in 1914-1915, dirt that was removed for the courthouse basement was used to fill some of the hollows. His father would later bring in additional truckloads of dirt to level the Elm Street house’s yard.

When Fresen Jr. was a child, the area looked much different than today.

West of Elm Street, between Grand Avenue and St. Louis Street, no houses existed. On St. Louis Street, there were a few houses, but none on the south side of Grand Avenue, where there was a trash dump. West of Elm Street, Randle Street did not yet exist. For the most part, the lots provided a woodland paradise for children to play, with a clear stream, wildflowers, hills and the the Yellowhammer streetcar line’s trestles.

Fresen Jr. and his sister were two of few children living near St. Louis Street before 1920. The neighbor-

hood was populated with attorneys, judges, merchants and bankers.

Many new homes were being built by professional men, whose children were now adults, near the end of their careers. But, by the time Fresen Jr.’s father died in 1956, he was one of the few older residents of the neighborhood, by then populated with young families and children.

During Fresen Jr.’s childhood, his family’s home was the only house on Elm Street. Across the street, where a house exists today, sat the Springer barn. The house next door, at 114 Elm St., was built in 1922, by Erspamer, for Oliver Thornton.

Fresen Jr. walked to Edwardsville’s Columbus School every morning, stopping at a butcher shop to buy meat for the noonday meal as he returned home for lunch and then went back to school for afternoon classes. His father also walked to work, but if the weather was especially bad, they might catch the Elm Street streetcar that took them Downtown, near Fresen Sr.’s office building.

Neighborhood children were aware of the streetcar, especially

when sledding on Elm Street toward the tracks. The Fresens regularly took the streetcar to Granite City to visit relatives or to St. Louis to shop. In the mid-1920s the Fresen family purchased their first car, a Ford Model T, from a Ford dealership established by family-friend Albert Bothman, in approximately 1920, on West Vandalia Street.

Because they were friends, the Fresens always drove Fords.

While living at the second rental house on St. Louis Street, the Fresens were in quarantine twice: once when their daughter contracted typhoid and again during the 1918 flu pandemic. Fresen Jr.’s mother and sister both contracted influenza and, although both survived, his mother never again achieved good health. She died in 1933 at age 41.

In 1938, Fresen Sr. married Marie Quernheim. The couple enjoyed many wonderful years together until he became ill in the early 1950s, dying in 1956. She continued to live in the Elm Street house until a fire damaged the home, shortly before she died in 1982. The current owners purchased the home 35

years ago.

By coincidence, currently the house is on the market, allowing interested buyers to view photographs of the interior, featuring a staircase and doors dating to the 1860s.

Rosanne Cash wins prestigious MacDowell arts medal NEW YORK (AP) — Rosanne Cash’s latest honor is a medal previously awarded to Toni Morrison, Stephen Sondheim and Georgia O’Keeffe, among others.

The singer-songwriter is this year’s winner of the Edward MacDowell Medal, presented by the MacDowell artist colony, which announced the prize Sunday. In a statement issued through MacDowell, Cash said she was “profoundly humbled” to receive an award that Morrison and others had been given.

“I do not place myself in any way equal, but I accept this honor with deepest gratitude, as an encouragement to do my best work, and in the service of future inspiration. My heart is full with this precious recognition,” she said.

Cash, who turns 65 later this month, has won four Grammys and is known for such albums as “Interiors,” “Seven Year Ache” and “The River and the Thread.” The award committee was chaired by the critic Greil Marcus, who in a statement cited her long history of achievements and her background as the daughter of Johnny Cash.

Great conspiracy theory flicks

For The Edge I don’t want to talk about the coronavirus again, but that’s really the only thing people ever talk about anymore. I’m sure you’ve noticed.

Over these last few weeks some conspiracy theories have gained traction.

Nothing gets the old imagination fired up like a good conspiracy theory.

What is it about a conspiracy that people can get behind? Is it a take on the underdog story where we all want to be marginalized against a great, big evil? Is it the thrill of danger that makes our hearts race a little faster and charges that release of adrenaline that comes with it? Is it our do-gooder hope that we can right a wrong that not everyone even knows about yet?

It’s all of these. And I love a conspiracy just as much as the rest of you. More probably.

So this week, as my lack of movie-going opportunities reaches into its third month, I thought I’d hit you with my take on a few great conspiracy theory flicks (personal favorites; there are countless others and a few done better) that you could use to supplant your need to think about China, respiratory infections or why we still can’t get name-brand bathroom tissue at Schnucks.

Here are my top four: • “JFK” (1991) — I’m not going to tiptoe into this assignment for you. The Kennedy assassination is among the most famous conspiracy theories of all time, and one I’m endlessly fascinated by. Oliver Stone’s movie is based on the 1969 trial brought by New Orleans District Attorney Jim Garrison (Kevin Costner) against parties allegedly associated with the (overtly favorite) multiple-shooter theory. It’s a doozy, but this movie leaves you with more questions than it provides answers to, especially with some of the dramatic license that Stone takes. Kevin Bacon, Gary Oldman, and Tommy Lee Jones make for an unforgettable cast.

I was a die-hard believer that what happened that day wasn’t as simple as Lee Harvey Oswald shooting President John F. Kennedy, but I’ll admit reluctance now in adulthood. I read the Warren Commission Report, I’ve visited the book depository building facing Dealey Plaza in Dallas but no federal officials ever told me unpublished investigative secrets. So, don’t ignore the hype, but don’t let it consume you.

• “All the President’s Men” (1976) — I don’t consider myself among the cadre of newspaper workers who do the hard work that defines truth and defies a state-run media. But, I’d like to think I could have the guts to follow the thread like Woodward (Robert Redford) and Bernstein (Dustin Hoffman) did. They broke the Watergate story, which took down President Richard Nixon. This is career-high work for Hal Holbrook (“Deep Throat”) and Jason Robards (Ben Bradlee) and makes me proud every time I utter the line, “Follow the money,” which is often.

• “Chinatown” (1974) — I didn’t love Roman Polanski’s neo-noir thriller when I first watched it, but repeat viewings helped me understand what I’m seeing so much better. So, too, did the recently-released companion memoir, “The Big Goodbye,” by Sam Wasson. Jack Nicholson is Jake Gittes, a private investigator looking to solve a murder, and then a case of mistaken identity, and then a missing persons case, and then an incest scandal.

And they’re all part of the same scheme to defraud farmers in Southern California. Seriously.

• “The X-Files” (1998) — This and subsequent features, such as the television series of the same name, have been nothing more than keeping fans of the 1993-2002 television series hooked and makes them feel good for distrusting the military-industrial complex (which I always have) and shadowy government operatives who work in the dark. The truth is out there.

“The X-Files” promised me when I was 12. It didn’t matter if it was aliens, Nazis, aliens, computer viruses, or aliens. I stayed around to make sure I got the truth and my fair share of Gillian Anderson every Sunday night. I regret nothing.

“The Big Goodbye: ‘Chinatown’ and the Last Years of Hollywood,” by Sam Wasson, is a film criticism of “Chinatown,” published this year, and highly recommended if you’re a fan of the movie. (For The Edge)

Cheesecake isn’t ‘cheesy’

OK, anyone who knows me or who has read my columns, knows that I don’t care for cheese. But that’s not to say that this aversion doesn’t come with some caveats, which drives one of my friends, in particular, crazy.

She doesn’t understand how I cannot like some of the cheeses that she craves. And the fact that I eat pizza with mozzarella (not provolone or Romano or any of the othVicki ers), leaves her baffled. “Just Bennington try some of my blue cheese,”

she will say. “It is so good.”

Sorry, it’s just not something I care for, yet I love cheesecake.

However, most cheese lovers, including my friend, will admit that cheesecake isn’t “cheesy.” Seriously, I have smelled or accidentally tasted cheeses (when someone sneaks it in, to do a dish, thinking I won’t notice) that actually made me feel sick.

But cheesecake — definitely different.

Part of that is probably because we start with cream cheese, considered very mild in the world of cheeses. Then you add all the scrumptious ingredients that takes it to a whole new level.

So … I usually buy my cheesecake (Schnucks and Walmart bakeries both have

good selections) — or have it at a restaurant (Tony’s Steakhouse and Bar, in Alton, is hard to beat), but being home a lot, not eating out, has inspired me to try some things that I had never made from scratch. I ran onto this cheesecake recipe that is attributed to the original “Dear Abby,” which many people have raved about, claiming that it is a true “New York cheesecake.” So, I gave it a go.

First thing I had to do was open my brandnew springform pan that I had bought quite a while ago (I guess I had the thought of making a cheesecake in the past, but never followed through).

Turns out, I could have used it for more than just the cheesecake I never previously made. According to the instructions, you can

use it for deep-dish pizzas, which I think is a great idea, and something I will definitely try.

You don’t have to have a springform pan to make cheesecake, but it makes it much easier to serve because you can unlatch and, basically, break the sides away, leaving your hopefully perfect cheesecake to be sliced and served with ease.

I tried the recipe, and it was good and somewhat satisfying that I had made it myself. But I did learn a few things for next time. Some of you experienced cooks may scoff that I didn’t know some of these beforehand, but what can I say? At least I learned from making the mistakes only once!

First of all, I thought the crust was a little hard. I, of course, investigated what could have gone wrong, and it was suggested that I may have put in too much butter (I don’t think I did that, I was trying to be pretty precise) or that I had pressed too hard when forming the crust (now, this I might have done). The problem with that, evidently, is that when pressed too hard, then baked, then chilled, it becomes harder to get out of the pan. I made a mental note for next time.

Second, I did let the cream cheese sit out to become room temperature prior to using it, but I really think it should have been even softer, or maybe I should try the pots of cream cheese they now have, which is a little fluffier. Or, I’ve read that you can even take it out of its foil wrapper, and zap it in the microwave for a few seconds. That would have made beating the mixture easier, and probably would have made for a smoother, creamier filling, though it did still turn out creamy.

I’m going to go for round No. 2, and while the first one was good, I think I can do better. I did not use one of the optional toppings, but this next time, I may top it with blueberry pie filling.

As a side note, I did find it interesting to learn that “cheesecake,” in one form or another, has actually been around since the fifth century BC. Every country has a few, little bit different variations, and modern cheesecakes come in both baked and uncooked versions. This sounds like a new adventure that could be fun — trying different recipes for cheesecake!

Abby’s Cheesecake Servings: 16 Crust: 1 1/2 cups graham cracker crumbs 1/2 cup butter, melted (1 stick) 1/3 cup powdered sugar Cheesecake Filling: 3 (8-ounce) packages cream cheese, softened 4 eggs 1 cup sugar 1 teaspoon vanilla

1 pint dairy sour cream (at room temperature) 1 (21-ounce) can prepared cherry, blueberry or strawberry pie filling (if desired) Heat oven to 350 F. Combine graham cracker crumbs, powdered sugar and melted butter. Press into bottom of 8- or 9-inch springform pan. In a large bowl, beat cream cheese, eggs, sugar and vanilla until smooth. Pour mixture over prepared crust. Bake for about 50 minutes (until center is set).

Remove from oven and spread sour cream on top of cheesecake. Return to oven and bake an additional five minutes.

Remove from oven and allow to cool. Spread desired topping on cheesecake. Chill overnight. Before serving, carefully remove sides from pan.

Tip: To minimize cracking, place shallow pan half-full of hot water on lower rack of oven during baking. And be sure the sour cream is at room temperature when you spread it on.
