Building Preventive Health Through Education: A Growing Lunch & Learn Series

Medical fitness centers play an important role in bridging the gap between clinical care and everyday lifestyle habits. At the Matagorda Regional Medical Center Wellness Center, a collaborative education initiative demonstrates how structured programming can support chronic disease education while strengthening community engagement. Over the past several years, the Wellness Center has hosted a quarterly Lunch & Learn series focused on diabetes education. Developed in partnership with the Texas A&M AgriLife Extension Service of Matagorda County through the Dinner Tonight Healthy Cooking School program, the series combines nutrition education, cooking demonstrations, and practical lifestyle guidance designed to help participants better manage and prevent chronic disease. What began as a small educational initiative continues to grow into a recognized community wellness program and is now expanding to include a new series focused on heart health.

A Collaborative Approach to Diabetes Education

The Diabetes Lunch & Learn program is presented through a partnership between the Matagorda Regional Medical Center Wellness Center and the Texas A&M AgriLife Extension Service. The quarterly sessions focus on practical strategies for managing Type 2 diabetes through nutrition, physical activity, and daily lifestyle choices.

Each session emphasizes real-world application. Participants learn how to prepare healthier versions of familiar meals while exploring topics such as carbohydrate awareness, recipe modification, and strategies for celebrating holidays and special occasions while maintaining balanced nutrition.

Sessions include cooking demonstrations, nutrition education, and recipe tastings so participants can experience practical ways to prepare healthier meals at home. Recipes featured throughout the program include approachable dishes such as chicken tacos with black bean and cilantro spread, oven-fried chicken paired with garlic mashed cauliflower, and slow cooker taco soup. Practical Learning That Builds Confidence

One of the strengths of the Lunch & Learn series is its focus on practical cooking skills that make healthy eating feel achievable rather than overwhelming.

Sessions highlight how small changes in ingredients, cooking techniques, and portion choices can support better blood sugar control and overall metabolic health. Participants learn how to adjust traditional recipes, identify healthier fats, and build balanced meals that support long-term wellness.

The relaxed, interactive format allows participants to ask questions, share experiences, and gain confidence in making lifestyle changes that support their health goals.

Expanding the Program to Heart Health

Building on the success of the diabetes series, the Wellness Center is expanding the Lunch & Learn program to address another important area of preventive health: cardiovascular wellness.

The new Heart Health Lunch & Learn series is presented through a collaboration between the Matagorda Regional Medical Center Wellness Center, Matagorda Regional Medical Center Cardiac Rehabilitation, and the Texas A&M AgriLife Extension Service.

These sessions focus on topics such as healthy fats, reading nutrition labels, grocery shopping strategies, and the role of physical activity in maintaining heart health.

Participants are introduced to heart-healthy recipes including parsleycrusted fish with balsamic glazed carrots, garlic orzo chicken with salad, and turkey tacos with cranberry salsa. Like the diabetes series, the heart health sessions emphasize practical cooking techniques and everyday nutrition strategies that support long-term wellness.

A Model for Community Wellness Programming

Programs like the Lunch & Learn series demonstrate the value of medical fitness centers as community hubs for preventive health education. Through collaboration with clinical departments and community partners, wellness centers can create programs that extend the reach of healthcare systems beyond traditional clinical settings.
