Saints Of The Ditches And Fields

S

pring is traditionally the time when the acequias, or irrigation ditches, of northern New Mexico are cleaned and opened for the year. In many rural villages and pueblos, this is a quasi-religious event marked by processions and blessing ceremonies dating to colonial times. Two saints in particular are associated with irrigation and agriculture, and their feast days are conveniently observed back-to-back this month.

One is San Isidro Labrador, known to the English-speaking world as Saint Isidore the Farmer. He was a humble but devout husbandman who lived near Madrid, Spain, from about 1070 to 1130. There are several versions of his story, but the common element seems to be that he was so pious that he neglected his farm chores to spend time in prayer and that when he returned to work, he found an angel and a team of heavenly oxen plowing the ground for him. His image is carried into the fields by the faithful on his feast day, May 15, as part of the traditional blessing offered on that day. Originally, this observance was a novena, taking place over nine successive days, but like so many other rituals, has been shortened in deference to the demands of modern life.

San Isidro is one of the most venerated saints in New Mexico.

Several communities in the state bear his name, often spelled San Ysidro. It should be noted that whether spelled with an I or a Y, the pronunciation is the same: a long e sound. I wince whenever I hear people say “San Yuh-siddro.”

The following day, May 16, is the feast of another popular saint, San Juan Nepomuceno, rendered in English as John of Nepomuk and affectionately known to New Mexico Catholics as “Nepo.” He was a 14th-century Bishop of Prague who suffered martyrdom

at the hands of King Wenceslaus IV of Bohemia in 1393. (Needless to say, this was not the Good King Wenceslaus of the Christmas carol.) In the traditional version of the story, the king, apparently suspecting his wife of infidelity, ordered Nepo to tell him what sins the queen had revealed in the sanctity of the confessional. When the bishop refused, the king had him

bound hand and foot and thrown off a bridge into the Vltava River, where he drowned. It’s a romantic tale, but probably untrue, and the church has disavowed it. More likely, his murder was the result of a political dispute.

Nevertheless, because of his watery demise, he is venerated as the patron of bridges and waterways, and by extension, irrigation works. Along with San Isidro, San Juan Nepomuceno is invoked to ensure the fertility of the fields and an abundant flow of water in the acequias.

In this year of drought, when many fields will lie fallow and there’s a danger that the acequias may run dry by mid-summer, let us hope, whatever our religious inclinations, that the prayers of the faithful do not go unanswered. Agua es vida, as all New Mexicans well know. Water is life.

besity is a serious chronic disease, and many have labeled it as an epidemic.

The prevalence of obesity has greatly increased since the 1970s.

While recent studies show the overall trend may be slowing a bit,

the trend continues to increase for women 60 years and older. Obesity affects our nation’s overall health, cost of health care, economy and productivity. Obesity is also a risk factor for developing severe illness from COVID-19.

How is obesity defined?

Obesity is a condition in which a person has an unhealthy amount or distribution of body fat.

Body mass index (BMI) is a measure of body fat based on height and weight. A high BMI can be an indicator of high body fatness. BMI can be used to screen for weight categories that may lead to health problems, but it is not diagnostic of the body fatness or health of an individual.

• Normal is defined as a BMI of 18.5 kg/m2 to 24.9 kg/m2.

• Overweight is defined as a BMI of 25 kg/m2 to 29.9 kg/m2.

• Obesity is defined as a

BMI of 30 kg/m2 to 39.9 kg/m2.

• Severe obesity is defined as a BMI greater than or equal to 40 kg/m2.

How does obesity affect overall health?

Obesity can lead to the development of other chronic conditions. It is a risk factor for developing diabetes, hypertension, heart disease, stroke and some cancers. Studies have shown obesity may be linked to endometrial cancer, stomach cancer, liver cancer, esophageal cancer, colon cancer, and kidney cancer, just to name a few. Obesity can impair lung function to cause asthmalike symptoms and sleep apnea.

Being just 10 pounds overweight puts an extra 15-50 pounds of pressure on the knee joints. This increases the risk for developing

osteoarthritis, also known as wearand-tear arthritis. More studies are beginning to show that excess fat triggers the release of inflammatory factors in the body, causing a state of constant inflammation. Constant low levels of inflammation have been suggested to explain how obesity might increase the risk of cancers, the development of cardiovascular disease and diabetes, and the progression of chronic diseases. Obesity also affects mental health, negatively impacting overall quality of life and increasing all-cause deaths.

How does obesity increase the risk for severe illness due to COVID-19?

Obesity is associated with worse outcomes from COVID-19. In fact, having obesity may triple the risk of hospitalization due to COVID-19 infection. Because obesity decreases lung function and lung capacity, having a respiratory illness such as COVID-19 can make breathing more difficult. There are also

studies that show obesity can impair the functioning of the immune system. The COVID-19 shelter-inplace orders have resulted in many of us taking less steps per day, working longer hours sitting at our desks, being less socially active, and increased snacking and overeating.

While the shelter-in-place orders were necessary during the pandemic, studies are showing these orders are linked to approximately 1.5 pounds of weight gain every month. The weight gain, often referred to as the “quarantine 19,” is a result of a change in lifestyle and reactions to a very stressful time.

Weight loss during the pandemic has also been reported. It’s important to realize the unintended consequences and take steps to address them.

How can I get back on track and control my weight?

It’s never too late to get back on track. Set reachable goals and focus on lifestyle changes. Incorporating a daily routine that includes some form of exercise is a good first step. A brisk walk for 30 minutes

can burn calories, increase metabolism and increase the body’s endorphin levels (the body’s natural pain and stress reliever).

Depending on your physical condition, the addition of light weights to your routine helps to preserve muscle mass, increase metabolism and tone your body. At mealtimes, portion control, selecting food choices wisely and eating slowly are key to controlling weight. Finally, remember to consult with your health care provider about your plans for weight control. Your health care provider can determine if further evaluation is needed to ensure you can get back on track safely and have the best possible outcome.

taying active and physically fit is so important and so many have found it challenging during this time. But it doesn’t have to be! New Mexico Senior Olympics is here to help with Virtual Senior Fitness Classes being held statewide to reach Seniors 50+ as part of our Health Promotion series in 2021. The Virtual Classes focus on Balance, Tai Chi, Fall Prevention and indoor Cycling. The Instructors for these classes are certified in their respective areas of expertise and are excited to keep our Seniors active and healthy while being in their own homes.

Most classes are held virtually 3 x per week for a one-hour class and all are accessible through Zoom links, all you need is a reliable internet service and an email address. Class sizes are limited to no more than 16 senior participants in one class.

e have lost jobs and loved ones, gained new hobbies, changed priorities, taken stock, and flapped about unmoored for more than a year. The only certainty has been our homebound routines. But now that the world is opening up, people are like zombies, ravenous to feel fully alive, and they want to feel that way right now. So, they’re turning in droves to psychics for immediate direction on how to start living in the sun again.

“People have been cooped up and are looking for the answer to the next stage,” said Mitch Rubin, owner of Blue Eagle Metaphysical Emporium, which celebrates its 36th anniversary in Albuquerque this month. “They are wanting to reassess what’s important, find

reassurance, and we offer them the tools to rebuild.”

The store, which was known until 2007 as the Blue Eagle Book Shoppe, bills itself as “providing Albuquerque with spiritual tools for transformation.” With occupancy limited due to Covid safety measures, there’s often a line of customers out the door. Once inside, they linger over a mesmerizing A-to-Z spectrum of do-it-yourself healing and divination products, including tarot and oracle decks, stones and crystals, angels and statuaries, books and baubles, herbs and incense.

“We offer a pathway for all spiritual seekers,” Rubin said. “We don’t tell you what to do, unless you ask.”

psychics like Christina Florence, who, prepandemic, had offered regular readings at the store for more than 20 years. Since Covid-19 hit, she and other local seers have adapted to conducting contactless readings by phone or via online meeting apps like Zoom.

“Some people want instant answers and don’t want to have to wait for their therapy to work in order to get them,” Florence said. “People are helped by knowing what’s coming up. If I see something that’s not good or looking scary, I’m also going to give them the remedy for it. It’s not written in stone, and we figure out how to get around it.”

The future of the psychic industry certainly looks positive.

Trusted market research firm IbisWorld values the psychic services industry – which includes astrology, mediumship, palmistry, aura-reading and tarot – at $2.2 billion and projects 2.6 percent growth in 2021. Forbes reports that supernatural readings nationwide already increased by 136 percent as of the early months of the pandemic.

Anecdotally, many psychics have said their business doubled in the last year, with people desperate for healing, connection, and guidance from someone other than the family members they’ve been seeing 24-7.

Paranormal trend has historical roots No crystal ball or tarot deck was needed to predict the psychic surge.

History foretold the phenomenon was likely as a result of Covid-19.

A psychic craze happened in similar fashion 100 years ago, when the Spanish flu swept the country. Both that virus, which caused 675,000 U.S. deaths in 1918, and its impact on American life has been widely compared to the 2020 pandemic.

Then as now, it shook people’s collective consciousness, cracked their foundations, and challenged long-held norms.

As the Spanish flu subsided and people emerged from solitude, they sought an outlet for all that pent up energy. The Roaring ‘20s exploded.

People hungered for a life outside of their comfort zones. This manifested in new fashions (shorter haircuts and shorter dresses for women), raucous parties, increased spending, greater risk tolerance, a burst of artistic creativity, and a fervor for the paranormal and spiritual.

“When the influenza pandemic hit the U.S. between 1918 and 1920, Americans wanted answers.

Their questions weren’t limited to what caused the pandemic or might prevent the next one. They struggled with more eternal concerns, such as what happens to us after we die and whether it’s possible to communicate with dead loved ones,” said a History Channel article in April 2020. “Not surprisingly, spiritualism, which promised a window into the afterlife, saw a sudden resurgence.”

Ouija boards, seances, and mediums were the preferred vehicles then. Tarot cards, astrology, psychic intuition work, and life coaching are the most popular today, with mediumship becoming more acceptable.

People are seeking connection with those they suddenly lost in the last year, and they are more comfortable using a medium to make contact thanks to TV shows that have familiarized them with the practice, said Elissa Heyman.

1979, said her business came to a halt in March 2020. People only had the time and energy to deal with what was immediately in front of them, from homeschooling to navigating unfamiliar work arrangements.

“It was only when people were able to plan and hope and think about their life again that they called in any numbers - people wanting to be inspired by their potential and have some kind of release process from this event and what’s happened,” she said.

Pyschic work goes beyond predictions Heyman said clients are driven to her and others in her field today not in search of miracles or promises but rather for help that resembles avant-garde counseling. Four common reasons of late are:

• Circumstance has created opportunity. Perhaps a job has been lost, giving someone “permission,” or providing validation, to finally do what they want. “They come to me saying, ‘My life was crazy. I was going at the craziest pace.’ And they don’t want to go back to it. They come to people like me to find out what else is possible. They don’t want to be limited.”

• The pandemic has heightened people’s awareness of meaning and purpose. “For many people, the 2020 experience turned into something profound, full of death and hardship and surprises,” Heyman said. “So, people felt that they could rise to the challenge of change. Why not do what you thought about doing for a decade but were too comfortable or cozy to acknowledge?”

• People want to try something new but want to know the outcome first. “People benefit

from psychic work by looking at the consequences of one thing vs. another. That’s one thing that differentiates me from other counseling work,” Heyman said.

“For example, ‘What’s the result of me moving to Massachusetts in May?’ This gives them a chance to get feedback about things they are thinking of doing and also explore why they are thinking of doing it.”

• Connection and companionship are needed. “The pandemic made people alone and very aware of that. They realize how little connected they are.

People with no family, no dog, and all career are deciding it’s time to reconsider how they’re living life.”

Often, though, whether in a crisis or on an everyday kind of day, the reasons people seek psychic help are much simpler, Florence said: “Sometimes people just want to talk. They just want someone to tell them, ‘This is what’s going on and it’s going to be OK.’”

Psychic Scams On The Rise

Scammers have been just about as busy as psychics during the pandemic, and some of the scammers are pretending to be psychics.

The AARP helpline reported in September receiving at least one or two weekly calls from victims of psychic fraudsters compared to one complaint every couple of months in the past. Among the complaints were a 54-year-old woman who lost $24,000 to a psychic who promised to connect her with a loved one and a 72-year-old woman who gave $20,000 to a psychic for information about a new relationship. (See the full AARP report at https://www.aarp.org/money/scams-fraud/info-2020/psychic-scamscoronavirus.html) To protect yourself, it’s best to follow the same advice you would when seeking any professional service: • Don’t give out financial information.

• Don’t just pick a psychic off the internet; hire someone who is a known entity, either through friends, local word of mouth, or reputable businesses.

• Conduct research on industry standard fees for service, and don’t pay someone more than what’s reasonable.

• If someone promises something that sounds too good to be true, it probably is. Run with your wallet held tight.

To be fair, it’s not just the psychic industry that’s being exploited and given a bad rap due to opportunistic thieves. In 2020, the Federal Trade Commission got more than 2.2 million reports about fraud, with people telling the organization that they lost nearly $3.3 billion. Top frauds involved online shopping and imposter scams.

City’s ABQ RIDE Offering Sun Van Service For Vaccinations

Individuals with no transportation who live in Albuquerque or Bernalillo County may take Sun Van to vaccine appointments

A

new collaboration is getting approved vaccine recipients who face transportation or disability obstacles to their vaccine appointments in the Albuquerque Metro Area. The collaboration is through the City of Albuquerque’s ABQ RIDE Sun Van Paratransit system in partnership with the Governor’s Commission on Disability and with assistance from the New Mexico Department of Health (NMDOH), UNM Office of Community Health, and the New Mexico Commission for the Blind.

ABQ RIDE will transport individuals to vaccine sites using Sun Van service—even if they don’t fall into the traditional service criteria for the Sun Van system.

This is a tremendous step forward in

addressing the needs of people who are unable to drive or do not have access to transportation. The ABQ RIDE Sun Van is already transporting riders who are approved to use the system to receive the vaccine.

“As vaccine distribution expands and more Burqueños are making their appointments, no one should be unable to get the shot because they don’t have access to transportation or experience mobility challenges. ABQ RIDE is stepping up to get people where they need to go, ensuring that no one misses out on the opportunity to get vaccinated,” said Mayor Tim Keller.

“Expanding this service to others in need of transportation to get vaccinated is just the right thing to do and the right thing to start getting us back to normal.”

A multitude of agencies have been advocating for increased accessibility for those living with a disability.

“The help these residents are receiving is significant as we all work together to make sure that persons with disabilities are able to access the vaccine,” said NM Commission for the Blind Director Greg Trapp.

“We know that individuals with a disability are more vulnerable to COVID-19, as such, our goal is to ensure that all our systems for providing vaccinations are accessible to those with disabilities. We are so thankful the City of Albuquerque and their Sun Vans have stepped up to provide this vital service to our disability community and we encourage other cities and counties to leverage their local resources to fill this void for their constituents,” said Linnea Forsythe, Acting Executive Director of the Governor’s Commission on Disability.

The UNM Office of Community Health is contracted with DOH to reach out to people with disabilities to arrange transportation and support, and ABQ RIDE is assisting in this outreach.

The ABQ RIDE Sun Van Paratransit System is for individuals who are approved by NMDOH to receive a vaccine. To utilize this service, Sun Van passengers must have a confirmed vaccination appointment and should call ABQ RIDE at (505) 243-7433 at least one day in advance to schedule their trip.

ABQ RIDE has currently transported more than 100 individuals to vaccine clinics in the Albuquerque area through its Sun Van service.

patient we’ll refer to as KW had “heartburn” for three days that turned severe enough that he went to an emergency room. The “heartburn” was a heart attack. He was 52

At the heart hospital, an interventional cardiologist placed a stent in a major coronary artery. After his discharge, he had no idea when he could go back to work, how safe it was to exercise or have sex, and what he should be eating.

Fortunately, his doctor sent him to New Heart Fitness and Health for cardiac rehabilitation.

Cardiac rehabilitation (CR) is a treatment that cardiologists offer to patients who have had a heart attack, heart failure, or heart surgery. Because at least 80 percent of second heart attacks are related to lifestyle, a vigorous exercise and nutrition program is the foundation for recovery. At New Heart and at other major CR programs, patients come immediately after hospitalization for an initial risk assessment, then for 36 one- hour sessions with a personal trainer before being given an exercise program that they continue on their own. Patients learn how to manage their weight and incorporate the Mediterranean diet into their lives.

KW had smoked for more than 30 years. He had failed at multiple attempts to quit. At New Heart, he was told by the exercise specialists that smoking is the No. 1 cause of second heart attacks. He said he wanted to cut down, but “cutting down” doesn’t cut it. Any amount of nicotine is poison for the heart.

Nicotine replacement therapy (NRT) with patches or gum was advised.

(By calling 1-800-QUIT NOW, smokers can access a free program providing NRT and counseling.)

The cornerstone of CR is exercise.

A sedentary lifestyle is a major cause of heart attacks. KW, like many of our patients, sits for eight to 12 hours a day, first at work and then after dinner watching TV. Because studies have shown that the more we sit, the greater the likelihood we will have a heart attack, KW was advised to buy a standing desk to keep him moving.

Many patients are weak after a heart attack or heart surgery and think that they could not possibly go to New Heart to work out. They worry that exercise is dangerous.

Taking it easy after these events increases weakness, making

recovery longer. The majority of our patients have never exercised and are fearful of starting. CR exercise trainers know about training heart patients safely. We find that patients’ fears dissolve once they meet our staff and dedicated trainers. They are not your local body builders. They have a college degree in exercise science and are skilled at training and motivating patients to develop a safe, lifelong exercise program.

We have patients do two types of exercise. First, aerobic exercise increases heart rate and breathing.

Exercise machines at New Heart allow people with orthopedic problems like back, hip, knee, and shoulder issues to exercise without injury and to develop a fitness program.

The second type of exercise is strength and flexibility training.

This training is incorporated into the workout sessions. When patients graduate after 36 sessions, we provide an exercise program telling them what to do on their own. We recommend 30 minutes of aerobic exercise five times a week and 20 minutes of strength training twice a week. Patients leave confident that they can safely exercise and return to work. The Mediterranean diet is a way of eating rather than a formal diet plan. It emphasizes foods like fish, fruits, vegetables, beans, high-fiber breads and whole grains, and olive oil. here are a lot of reasons why you shouldn’t spray toxic pesticides outside.

Here are the two most important.

First, your safety and that of your family and pets may be put at risk by general pesticide use. Second, pesticides can harm the ecosystem, as there are numerous beneficial organisms in every yard that may be unintentionally killed.

Many insects and other arthropods can be beneficial: Some are pollinators and therefore life-giving.

Others serve as cleaners, feeding on decaying or dead plant or animal matter. Then there are the predators that feed on plant pests, helping your garden stay healthy.

Spiders, predatory mites, and centipedes feed on numerous pests.

Other beneficial insects include praying mantids, which prey on a lot of insects and even kill and eat black widow spiders. I have had people tell me they find more dead praying mantids in their yard than dead cockroaches, the targets of the spray, after the exterminator has treated the perimeter of their home.

Ladybird beetles, also known as ladybugs, are a predator of aphids and other small pests. Ground beetles are large, black beetles that feed on grubs and insect pupae.

Many soft-winged flower beetles are predators of pest species.

Rove beetles feed on grubs, insect pupae, root maggots, and in some cases, aphids.

There are other beetles that are beneficial, too. Recently a man sent me a bunch of beetles that he claimed had been “infesting” his desert willow. It turned out the beetles were soft-winged flower beetles that were doing good work on the tree by helping to control real pests. If in doubt about a bug, get it identified, so you don’t kill something that is good to have around.

The hover fly feeds on nectar in the adult stage, but in some species, the larval stage is a predator of aphids. Bee flies and flower flies also feed on nectar and pollen in the

adult stage, while their larvae are parasites of other insects, including pest species. Some true bugs are beneficial, such as assassin bugs, which hide under leaves and ambush caterpillars. Minute pirate bugs are very small and prey on thrips and other small pests. Some seed bugs are beneficial; these big-eyed bugs will prey on various plant pests.

Lacewings are predators of aphids, thrips, spider mites, leafhoppers, and other small pests.

There are many species of parasitic wasps, most very small, that will offer good control.

The careless use of pesticides will also harm birds and lizards that feed on insects. If a bird eats a dead or dying insect that has been sprayed with pesticides, the bird can die or be unable to reproduce. Don’t let anyone generically spray pesticides around your home or spray for mosquitoes in your area.

The study will test whether an investigational medication called fasudil taken for up to 126 days (minimum of 84 days) is safe and can reduce wandering behaviors in patients with dementia.

Dear Senior, There are many different technology teaching tools available to older adults that can help you learn new tech skills so you can better utilize your devices. Here are some good options to consider.

Local classes or workshops: Depending on where you live, there may be community resources that offer beginning computer and personal technology classes, be it online or in-person, for older adults that are new to technology. To find out what’s available in your area, contact your local public library, senior center, college or university, or local stores that sell computers.

Your Area Agency on Aging may also be able to help you. Visit the Eldercare Locator at Eldercare.acl. gov or call 800-677-1116 to get your local number.

GetSetUp.io: This is one of the best online learning websites that partners with guides to provide training on tech tools for adults 50 and older. They provide more than

350 online classes taught in real-time by retired educators and tech industry experts in a way that lets older adults learn-by-doing, versus just watching a video.

Some of their more popular tech classes include “All Things Zoom,” “Everything Smartphones,” and an “Introduction to Social Media.”

They even offer a “lunch & learn – tech discussion group” offered at various times throughout the year where you can ask questions as well as share your struggles and experiences.

hether you gravitate toward a swimsuit or hiking gear in the summer, exposure to harmful ultraviolet radiation from the sun will be inevitable. People tend to think about protecting their skin with a high SPF but may not be as attentive to protecting their eyes from ultraviolet (UV) light.

Sun-related eye damage is cumulative; it adds up over the years.

Solar damage may result in many eye problems, including cataracts, the leading cause of vision problems in Americans over age 60. Ultraviolet (UV) light can damage the eye’s lens proteins in a distinct way (called glycation) that is typically seen

in cataracts and in cells damaged by oxidative stress. The lens becomes clouded and may require surgical removal.

Cataracts are usually associated with aging. However, evidence has shown that with prolonged strong sun exposure commonly found here in New Mexico, cataracts develop more rapidly. Research shows that those who don’t smoke and eat healthful diets in the form of green leafy vegetables, fruits, and antioxidants are reducing the onset of cataracts.

UV400 sunglasses are recommended for the best sun protection.

Acutely sun-damaged skin hurts, but imagine the discomfort of a sunburnt eye. Doctors refer to the inflammation associated with a suninflamed cornea as photokeratitis.

Symptoms of this condition include blurred vision, tearing, light sensitivity, and redness or eye pain.

This condition can also be prevented by wearing protective eyewear when outdoors. Reflection of sunlight

from sand, water, or snow can also cause photokeratitis. Be aware that fresh snow can reflect as much as 80 percent of UV radiation. Sea foam can reflect about 25 percent, and dry sand reflects about 15 percent of UV radiation. Photokeratitis is a temporary problem and can usually be treated with ocular antibiotics and artificial tears.

Macular degeneration is a condition affecting a portion of the retina responsible for our sharpest vision in the center of our visual field called the macula. This condition is usually seen as a slowly progressive deterioration of the central vision.

Prolonged unprotected sun exposure has been related to early onset of macular degeneration. Although no cure is available, treatment can retard its progression. Prevention is critical.

A pterygium is a white wedge or wing-shaped growth over the surrounding pigmented part of the eye. If this continues to grow, then it may lead to scarring of the cornea,

which could lead to permanent vision loss or distortion. If the pterygium is growing, then surgery may be required to remove it to preserve vision. Pterygia have been related to prolonged unprotected wind and sun exposure.

Tanning booths pose a similar risk of radiation damage. If possible, avoid the sun’s harshest rays between 10 a.m. and 4 p.m.

Cumulative damage can sneak up and cause problems acutely. Proper eyewear limits sun damage. Choose sunglasses that limit transmission to no more than 1 percent UVB and 1 percent UVA rays. Wrap-around sunglasses or lenses large enough to completely cover the eye and prevent as much light as possible from entering through the edges of the glasses are best. There are even UV blocking contact lenses.

Just remember three things before leaving the house: Put on sunscreen, and grab a hat as well as protective eyewear.

ndustrial seed oils dominate consumable products. They are inexpensive oils for just about any food product. They bring the cost of goods down considerably, but there is a growing concern over human health costs presented by seed oils.

Seed oils are often high in omega-6 (linoleic acid) fats.

Omega-6 fats are present along with nutritionally balancing cofactors such as omega-3 fatty acids

in eggs, nuts, and seeds. Industrial seed oils bear concentrations of omega-6 far beyond what occurs in non-industrial food. Processed food that includes industrial seed oils contains ingredients that a farm-to-table approach could

Seed Oils- A Seedy Business not and would not replicate. The resulting consumable toxins and the imbalance of omega-6 (in relational balance to omega-3) fats could contribute to chronic inflammation, leading to heart disease, cancer, diabetes, and many other chronic illnesses.

Seed oil development began with the rise of the cotton industry. When the cotton industry massively expanded in the 19th century, 5 percent of the seeds went for planting, leaving 95 percent to throw away or turn into a profit. It took the industry roughly 50 years to perfect the technology to transform the heaps of seeds into more than toxic waste. But during this time, cottonseed oil fueled lighting for the modern world.

Fossil fuel replaced the need for cottonseed oil in 1859, leaving the product without a buyer.

Oil makers began to blend in cottonseed oil with other fats and oils to reduce production costs and maximize profits. Italy banned adulterated American olive oil in 1883. But a little tinkering by Procter and Gamble in the 1870s made sure cottonseed oil had a new home. They looked for fat-style bases for their soap business at a lower cost than the rendered pork fat they used. They learned how to “partially hydrogenate” cottonseed oil to make soap. Little did Procter and Gamble know that they created the base for what would soon become Crisco.

The technology of seed oil production and partial hydrogenation was a big hit in food manufacturing. By the 1950s, corn, cottonseed, peanut, sesame, rapeseed, rice bran, safflower, soybean, and sunflower entered the market as industrialized oils.

Seed oils must undergo extreme temperatures in manufacturing that cause the unsaturated fatty acids to oxidize (a known toxic by-product to human health). The seeds also undergo petroleum-based solvents, deodorants, and chemical colorants to extract and purify the final product. Also, many of the original crops were genetically modified.

These oils are used excessively (nearly exclusively) in processed food manufacturing plants, restaurants, and home kitchens alike. These oils are toxic and in the human body; they also throw

off necessary omega-6 to omega-3 fatty acid ratios.

To reduce exposure to toxic oils, including seed oils, start reading labels. Be wary of corn, cottonseed, peanut, sesame, rapeseed, rice bran, safflower, soybean, and sunflower oil ingredients. Most salad dressings, packaged deli, and restaurant foods use these oils. Pick and choose where you can make changes and take action. Better alternatives for your cooking and food preparation include olive and coconut oil, butter, ghee, and animal fats.

The health of a salad increases significantly when toxic oils do not coat the ingredients.

Check your grocer’s refrigerated organic salad dressing labels that include ingredients with health benefits.

My favorite

dressing at the moment combines fresh ginger, turmeric powder, olive oil, salt, pepper, and vinegar to taste. Abundant blessings in reducing seedy ingredients in your kitchen.
