Two Lakeland Republicans announced their candidacy to replace the retiring Rep. Dennis Ross (FL-District 15) recently.

Polk County Commissioner Neil Combee resigned as the state director of the USDA Farm Service Agency April 17, five months after being appointed by the Trump administration, to take a shot at representing the Lakeland area in Washington, D.C. Ed Shoemaker also announced a candidacy recently.

Lake Wales city commissioners authorized the transfer of six city-owned properties to the Lake Wales Community Redevelopment Board at the city commission meeting April 17. By city code section 2-476, properties owned by the city can only be sold at auction to the highest bidder. Transferring property to the CRA allows city leaders to control who takes ownership of the property based on priority of end need as opposed to highest bid.

Details about a $240M steel mill coming to the Frostproof area were released at a Polk County Board of County Commissioners meeting April 17. Nucor, the largest steel manufacturer in North America, chose Polk County for the new mill. Plans are to build in the middle of an orange grove so that it could not been seen from U.S. 27.

Church is denied zoning request, Putnam takes a for now stand

Over the next four years, Lake Wales Rotary Club members plan to plant more than 200 Florida Live Oak trees around the city. Each member of the club is responsible for planting a tree starting on the north shore of Lake Wailes. In 2017, every Rotary member on the planet was challenged to plant a tree to combat climate change by Rotary International President Ian H.S. Riseley.

Winter Haven City Commissioners voted 4-1 against a zoning request by Beymer Memorial United Methodist Church, overturning the Planning Commission’s original OK for the move. Commissioner Nat Birdsong was the only commissioner in support of the move. Had the request been approved, the church’s six parcels would have been converted from multi-family residential use to public institutional zoning. The church now has the option to appeal the matter, press a lawsuit, or revisit a zoning with a “special use” permit.

Florida Commissioner of Agriculture Adam H. Putnam sent a letter to Ambassador Robert Lighthizer as NAFTA negotiations continue.

“Current remedies available to address unfair trade practices are simply insufficient to protect Florida’s specialty crop producers. It is critical that the NAFTA negotiations result in policy that ensures producers of seasonal and perishable crops have access to trade remedy law that applies to every other commodity or manufacturer in the U.S.,” stated Putnam.

Solar power coming to Bartow

Local woman wins $1 million

In addition to the recent grand opening of NovaSol, the first city-owned solar farm, there are plans to work with TECO and build two more solar farms in the coming years.

The city commission voted unanimously to pass and adopt Resolution 18-3985R which updated the city policy on residents who have installed solar panels on their homes or businesses.

Winter Haven resident, Paula Sullivan had the prize patrol visit her house on April 27th awarding her $1 million.

Founded in 1953, the Publishers Clearing House is now a leading interactive media company. They have awarded over $315 million in prizes over the years. Paula has the option to take a lump sum up front or spread the winnings over 29 years. Congratulations to her!

Lake Maude Project

Recently hired Lake Wales Airport Director Jared DeLong was introduced to the Lake Wales City Commission April 3. DeLong hit the ground running as construction is ongoing at the airport where the main runway and taxiway are being improved as a means to attract corporate jets as customers at the city-owned property.

A long awaited project is moving ahead as the City of Winter Haven obtained a permit to begin construction of phase 1 of the Lake Maude project, in spite of the sand skinks habitat. The habitat, which is .36 acres, required the city purchase “sand skink credits” at $21,600.

Eco-friendly

literally means earth-friendly or not harmful to the environment.

This term most commonly refers to products that contribute to green living or practices that help conserve resources like water and energy. Eco-friendly products also prevent contributions to air, water and land pollution.

Consider your day for a moment. You have breakfast, go to work, lunch, come home, maybe you have kids, dinner, how about your weekends? How can you change one small part of your day, and make it a better place to live? How can you make it a better place for your kids or grandkids? Think about where we live, where we’re going, how we affect our environment. How can we create less trash? How can we save resources? Plastic is used everyday and almost everywhere. But we can’t deny the problems of plastic accumulating in our waterways, landfills and oceans. In the Northern Hemisphere, ocean currents are deflected to the right, in a clockwise motion. In the Southern Hemisphere, ocean currents are pushed to the left, in a counterclockwise motion. Beneath surface currents the Coriolis effect results in what is called an Ekman spiral creating a gyre. Every year, millions of tons of plastic enter the ocean ending up in one of 5 major gyres. Once trapped in a gyre, the plastic will break down into microplastics, which may be ingested by sea life. Thousands of tons of plastic debris now occupy an area three times the size of France in the Pacific Ocean between California and Hawaii, known as the Great Pacific Garbage Patch. And it’s growing larger every day. How does it end up there? Litter including plastic bags, beverage containers, food wrappers, food containers and more end up going down storm drains into our waterways. From there it travels out into our oceans. What can I do? What can we do?

• Don’t litter. Throwing trash on the ground means it’s final destination is probably a body of water.

• Go paperless! Pay your bills online.

• Use less water, turn off the faucet when brushing your teeth, only run full loads of laundry.

• Repair don’t replace. Before you throw it out, can you fix it? Can it be repurposed?

• Walk or bike whenever possible. I know it gets unbearably hot in the summer. Until then, consider walking or riding a bike if possible.

• Reusable instead of disposable. Bring your own shopping bags, water bottles, coffee cups, flatware, etc.

Instead of using plastic items one time and throwing them out, use items that are reusable.

• Buy from thrift stores & garage sales. It’s good for the community, our landfills and our wallets!

• Instead of using plastic straws, plastic sandwich bags, trash bags, coffee filters, K-cups, plastic toothbrushes, paper towels, consider buying things made out of environmentally friendly or biodegradable materials such as bamboo, recycled materials, hemp, glass, etc.

Whenever you do throw it away, it won’t cause the pollution that plastic does.

• Turn off electronics when not in use. Unplug and turn it off.

• Buy clothes made from sustainable materials like bamboo or silk that will last a long time vs. cheaply and irresponsibly made “fast fashion” that you only wear a few times.

• Buy in bulk. Instead of buying individual servings or containers of food, buy in bulk and store in small portions in your own containers.

• Eat a meat-free diet one or two days a week. A plantbased diet uses less natural resources than producing meat or other animal proteins. It also cuts down on greenhouse gases.

• Use energy efficient light bulbs, they are a little more expensive up front, but they last longer and use less energy.

• Buy one less new thing a month. The more stuff we accumulate, the more stuff ends up in landfills, in rivers, and cluttering our homes.

• Don’t throw it out! Can you donate it? Can you repurpose it? When you clean out your closet or garage, donate what you don’t need anymore. To a neighbor, a young family, thrift store or sell it.

• Buy a plant for your home. Plants can remove toxins from the air, increase humidity, improve and health, and more. Make it modern by repurposing old mugs, jars or other containers you might’ve just thrown away.

Use all natural cleaners instead of products full of harmful chemicals. Not only are they bad for you to breathe, but the chemicals get washed into our waterways. It’s easy to make & you probably have everything in your kitchen already.

Common ingredients used to make cleaners:

All-Purpose Scrub 1/2 cup baking soda Plant-based liquid soap 1/2 of a lemon Pour baking soda into a bowl. Add just enough liquid soap to make a creamy paste. Spread mixture on the flat side of lemon and scrub. The lemon acts as a sponge and leaves a natural citrus scent. Use a damp rag or sponge to wipe away any residue. You'll find the paste will stay moist for a few hours.

Baking soda works as a deodorizer and gentle scrub; it polishes shiny surfaces like stainless steel without scratching.

Distilled white vinegar is also a deodorizer, disinfectant and a mild acid that breaks up dirt, grease, mineral deposits, mold, and soap scum.

To clean stubborn pots and pans, pour kosher salt into pan and scrub with ½ lemon. The salt acts as an abrasive.

Essential oils; some, including eucalyptus, lavender, and tea tree, are natural disinfectants and antifungals. Pure essential oils can irritate eyes and skin upon contact, so handle carefully.

Mold + Mildew Spray 2 cups distilled white vinegar Pour vinegar into a spray bottle and spray on infected area. The smell will dissipate in a few hours (open a window to speed up the process). For areas with persistent mold problems, use tea tree oil instead of vinegar, combining 2 drops of tea tree oil with 1 cup of water in a spray bottle. A natural antiseptic and fungicide, tea tree oil costs more than vinegar but will kill most types of mold and help prevent new growth.

Lemon is a deodorizer, stain remover, and grease cutter.

Olive oil is a natural oil that helps to nourish and polish wood.

Plant-based liquid soap made with oils such as olive, palm, and coconut, rather than petroleum derivatives or animal fat.

Window Cleaner 1/2 teaspoon plant-based liquid soap 3 tablespoons distilled white vinegar 2 cups water

Always be careful to label containers of homemade cleaners intended for storage and keep them well out of the reach of children.

Pour all ingredients into a spray bottle and shake. Spray onto window and wipe clean with newspaper or a 100 percent cotton cloth.

MIDFLORIDA Mayfaire by-the-Lake Mayfaire started as a way to promote awareness of the arts in 1971 as well as providing a wonderful way for families to spend Mother’s Day. It is run by the Polk Museum of Art, a nonprofit organization that allows free admission to everyone.

Midflorida Mayfaire attracts over 70,000 people each year to enjoy the art that can only be described as tres magnifique. Lake Morton was chosen to host the Mayfaire event for one reason. “We wanted it in our back yard so that patrons can come to the museum while they are at Mayfaire, if they would like,” said Joy Williams, Mayfaire Coordinator.

This year’s cover artist, Tony Eitharong, was chosen by the Mayfaire coordinators, museum curator and the executive director.

Deciding on the cover artist each year depends on different concepts. “We look at what the theme is, a feeling we are trying to convey,” said Mayfaire Coordinator, Leslie Norman.

Every year, a panel of five experts are chosen to judge and score all the art submissions for Mayfaire. “The top scores get invited to Mayfaire,” said Williams. All chosen judges have to be out-of-state judges so there isn’t any bias.

“We are affiliated with the Smithsonian and we have a point of contact there that knows people in the art industry,” said Williams.

This year’s judge for Mayfaire is Leland Bryant, who was chosen by Claire Orologas, Executive Director at the Polk Museum of Art and the museum curator, Dr. H. Alexander Rich. Bryant will be judging art pieces and giving awards, including a $5,000 top prize for Best of Show.

Other awards include 2 Awards of Excellence, 4 Awards of Distinction, 6 Merit Awards, and 5 Honorable Mentions with a $17,000 prize total.

“All applications are submitted digitally,” said Norman. Artists are able to start submitting their work through Zapplication, a computer program used amongst the art word, in October. This year there will be 165 booths including a children’s art tent that will have arts and crafts, printmaking, collages and perspective drawing for children of all ages and abilities to participate in.

Another booth worth looking at is the Kids Tag Art booth. “[Kids Tag Art] is a program developed out of the Polk County Tax Collector’s office,” said Ellen Chastain, Education Manager at the Polk Museum of Art, “We are proud partners of theirs; working

to help organize the Awards of Distinction for 5th graders throughout Polk County, which includes public, private and home school.” The children are able to design a license plate or a vanity plate for purchase and all proceeds go back to that school’s art department. Two works are chosen as Awards of Distinction from each school and are placed on a traveling exhibition throughout Polk County. “Since we have been doing this, there have been nearly 20 other counties that have adopted this program,” said Chastain, “it’s something that has grown over the state of Florida and it started here in Polk County.” This will be the 12th year for the Kid’s Tag Art and they have hit $1 million in raised funds.

Mayfaire Saturday Night will have a live performance from MPiRE, which is returning for the fourth year. This group of nine performers plays a variety of music from Pop, Rock, Top 40, Disco, Country and R&B from 5:30pm-11pm. Firework show at 9pm.

The Lakeland Runner’s Club will be hosting their 39th annual MIDFLORIDA Mayfaire 5K Race Saturday, May 12th at 7pm. The race runs around Lake Morton and Lake Mirror and will be chip timed. Awards will be awarded at 8pm to runners

for overall male and female gun time, Overall Masters using chip time, Grand Masters using overall chip time and top three finishers male and female in each age group starting at age ten. A portion of all proceeds will go to the Polk Museum of Art. During the event the Polk Museum of Art encourages art lovers to view the current exhibits within the museum.

“We have Mayfairy golf carts that transports people through the show including one that is wheelchair accessible,” said Williams. These carts will also make stops at the museum as well as around the lake.

Lyndsey Venrick: One Hilarious Cross Stitch at a Time Local creative Lyndsey Venrick has put her love of crafts to work, turning it into two thriving businesses. She was born and raised in Winter Haven, attended Winter Haven High School, and now works at State Farm.

In 2014, Lyndsey ordered a metal stamping kit. “After making all of my girlfriends custom hand-stamped necklaces, I started researching other jewelry making methods and decided to open an Etsy shop just to see if it could be a legitimate side hustle.”

According to Lyndsey, it took her about a year to really navigate what she was doing with the budding jewelry business, Olive + Lemon. “I was just kind of throwing stuff out there,” she said, “I didn’t know how to use Etsy, I didn’t know how to cater to a market, I didn’t know how to use social media to grow things.”

Lyndsey did eventually find her stride and grew the online shop by, “focusing on high-quality, delicate gemstone designs and custom stamped necklaces. We also love anything and everything sparkly.”

Her pieces are comprised of simple, delicate designs made with natural gemstones for necklaces and earrings.

She’s so passionate about the quality of her product that she travels the country to source gems.

Customers covet her bestselling gemstone aquamarine, but lava rocks, amethyst, and tourmaline aren’t far behind. What are Lyndsey’s favorite orders to fill? Custom designs, especially those that commemorate a special day in her customer’s lives.

She’s overjoyed to be the hands that make a bridesmaid necklace, a oneof-a-kind earring set as a wedding gift or jewelry for moms-to-be.

Olive + Lemon has a community presence in Winter Haven, Lakeland, and Tampa and is carried in boutiques across the country. Lyndsey frequents markets especially during the fall season, posting her shows on social media. Moving forward, the owner is focusing on expanding the wholesale aspect of her shop.

In 2015, a year strong into Olive + Lemon, Lyndsey rediscovered her love of cross stitch. “My mom taught me when I was a kid, she used to do cross stitching. In my childhood home, we have these major, huge cross-stitched pieces that my mom would make" she remembered.

Lyndsey bought a book on subversive cross stitch and made little gifts for all of her friends, deciding to try her hand at selling her embroidery items on Etsy, calling the shop Pin + Needle.

The emerging subversive style of cross stitch not only played a part in her picking up the pin and needle again but has been a popular point of sale on Etsy. She explained the subversive cross stitch phenomenon, “Cross stitch is making a comeback–mixing a very traditional (old-fashioned, even) art form with modern and often inappropriate designs is so fun!”

Much of her inspiration comes from Pinterest with quirky quotes and memes, “People love their memes,” she laughed. From Michael Jordan crying, the poop emoji, to the F-word and pop culture references, Lyndsey has stitched it all. “I have the best customers! I’m always blown away by the hilarious ideas people want to have embroidered,” said the Pin + Needle owner. “I love being pushed out of my comfort zone to bring their ideas to life. One of our shop rules is ‘no judging and no questions asked.’ We want customers to feel comfortable bringing their subversive ideas to us.”

To be all-encompassing of her customers’ requests, Lyndsey has expanded to different types of embroidery. She’s constantly learning new techniques to, “make our pieces the best they can be.” Pin + Needle will soon expand to have DIY kits and Make and Take classes which will be announced via social media.

Alongside her subversive cross stitchings, she also does incredibly beautiful pieces. At the Moonlight Market at Grove Roots, I was eyeing a cross stitch of a nude woman with flowers as her hair covering her body.

Family portraits are a Pin + Needle shopper fave. Lyndsey can create a sweet, or funny, or both, embroidered version of your family and pets. To further personalize it, the skyline of your favorite city or hometown or the family camper can be added to the background.

Of her two blooming businesses, Lyndsey expressed that she couldn’t have done it without the support of her friends and family that helped her get them off the ground. “They’ve spent so much time helping at shows, fulfilling crazy holiday orders and telling everyone they know about my

shops. The Tampa Bay Etsy Crew really showed me the ins and outs of running an Etsy shop and the local craft show circuit.”

“I am a very driven and dedicated person, and I really needed an outlet to focus this energy on (outside of my corporate gig). I’m so happy to be able to spend my time on this creative, fulfilling endeavor,” said the Pin + Needle and Olive + Lemon owner.

“There’s a new wave of emerging businesses in Winter Haven, and I think we’re all working to grow the character and culture of our town. In my case, one hilarious cross stitch at a time.”

INGREDIENTS: peeled, cored and sliced apples lemon juice water Leighton’s honey ground cinnamon brown sugar all-purpose fl our rolled oats butter

DIRECTIONS: 1. Preheat oven to 350 degrees F. Lightly grease a medium casserole dish.

2. Evenly spread the apple slices in the prepared dish. In a small bowl, mix the lemon juice and water, and pour over the apples. Drizzle apples with Leighton’s honey, and sprinkle with cinnamon.

3. In a bowl, mix the brown sugar, fl our, oats, and butter until the mixture resembles coarse crumbs. Sprinkle over the apples.

4. Bake 25 minutes in the preheated oven, until apples are tender and topping is lightly browned.

5. Serve warm over ice cream.

Haines City Cardboard Boat Challenge and 7 Rivers Water Festival The Cardboard Boat Challenge has been a long-running tradition in Lakeland, with Fall of 2018 marking their 15th year. It was such a success that, according to Executive Director with LEAD (Lakes Education/ Action Drive), Tabitha Biehl, “Haines City saw the value of outreach and community education for the lakes that we brought it to Haines City on Lake Eva last year.”

The mission of the event is simple: to raise awareness for water conservation and educate the communities in a unique, fun, and teambuilding way. In step with the education aspect, Biehl explained that each team gets a theme centered around lake awareness. She used pollution and native plants on the shoreline as examples. Once their boats have been built, teams will decorate and name it based on their theme.

For the challenge, there are two main categories: pre-built boats and onsite boat building. There is a list of materials for those that chose to build their boats ahead of time. Supplies are provided for those that build onsite.

There are three types of teams for participants to choose–a corporate/ community team (both paddlers are over 18), a family team (one paddler is over 18 and one is under 18), and youth team (both paddlers are under 18). “The actual challenge,” Biehl

says, “is to put two of your team members into the boat and they actually have to paddle a course in a race around Lake Eva off the shoreline.”

The boat race will start at 10 am when guests will be, “Welcomed to come and watch and cheer on their favorite team. There is a people’s choice winner for the cardboard boat challenge so people get to vote on which one they liked the best. There is the Titanic Award and that is awarded to the team that has the best sinking boat,” Biehl explained.

Following the Cardboard Boat festivities will be the 5th annual 7 River’s Water Festival, a free event from 10 am to 3 pm at Lake Eva Park.

“The idea of water conservation really needs to get out there because we are running out of our clean water supply.

There are a lot of different ways that people can not only save water but save money,” said Jackie Hollister of Polk County Utilities who started the event and continues to coordinate it.

The festival’s Water Conservation Art Contest welcomes any student K-12 in public or private schools within Polk County to enter a poster depicting water conservation. The top contenders are presented at the festival to be judged by the public. The 1st, 2nd, and 3rd place winners in each grade are placed in a water conservation calendar that is published every year.

For any animal-lovers attending the event, Hands-On Wildlife will bring some of their animals to raise awareness of the importance of water conservation not only for humans but wildlife as well. Hollister noted, “These animals are also affected by what we do with our water. If we pollute our water, they suffer as well and if we use too much of it and lakes start drying up, they suffer for that too.”

Check out the butterfly tent or snap a selfie and post it using their hashtag (to be announced) to be entered into a contest for a special prize. If all the water conservation good times have your tummy rumbling, the Boy Scouts will be there serving food.

The festival will have a host of activities for attendees that are aimed to be fun, raise awareness, and educate. Last year they held their first Recycle Fashion Show and will be bringing it back again. The show is a judged competition in which participants repurpose recyclable items that were destined for the landfill, to create a stylish outfit.

“Water conservation is getting more and more important all the time,” said Hollister, “We really have to be more choosy about how we use our water.

We need to use it more efficiently and be more careful about what we do with it. We need to be really careful about what we throw out on the sides

TACO HAVEN It’s Saturday morning and I am sitting here thinking, the pontoon’s fixed, but it’s going to be too windy and cloudy to take it on the Chain. What can we do that’s fun and productive today? I immediately texted Jordy saying, “Today is the day!” Last week we came up with this great idea. Since Cinco de Mayo is coming up and Jordy loves authentic Mexican tacos, (and we’re down for good authentic tacos too) we could do a tour of a handful of taco trailers in the area and share our unbiased reviews in Haven. Amy approved so… here we go. I am so not eating breakfast because as soon as Jordy gets back from the track with his racehorses the taco race will begin. Fasten your seatbelts and grab the reins for TACO HAVEN.

Back to the meat and well… cilantro!

Traditionally (in Polk County) The tacos come with options of 2 sauces: RED – tomatillo, tomato, red chili GREEN – tomatillo, avocado, jalepeño, green onion, and garlic The standard choices of meats: BARBACOA-SHREDDED BEEF- Somewhat fatty but when cooked right, the fat melts in your mouth and you don’t even notice.

PASTOR-PORK- Roasted crisp thin shavings. Always a nice safe option.

ASADA-STEAK- Skirt or flank charred and thinly sliced.

CARNITAS- BEEF- More of a stew meat, (depends on the stand).

POLLO-CHICKEN- Usually pulled or chopped dark and white meat mixed.

LENGUA- TONGUE- It’s cow tongue no matter which way you slice it. It’s tender.

CHORIZO- SAUSAGE- crumbles of pork sausage with warm smoky flavors.

Classic.

CABEZA- COW HEAD- Actually the “cheek” part, often same as Barbacoa. The best! *Of course there are slight variations from taco stand to taco stand.

While most Canadians around these parts are “expats” or “snowbirds,” we like to call our Canadian-friend Jordy, a “Tacobird.” Whenever he’s in town, he will eat tacos 1-2 times a day. When he isn’t eating tacos he is talking about tacos.

I’m sure on this adventure, he will have a lot to “taco-bout.”

Nando and I ran around doing a few errands and returned to the farm to find Jordy wearing a striped “taco shirt” with flamingo Chino shorts. The minute we got out of the truck he said, “Where are we going Sal? Do you like my outfit?

What’s our first stop? Did you GPS it? Are we gonna read anything on YELP?” From one horseman to another Nando said, “Whoa Jordy, easy does it. We have to set some guidelines or rules. We can’t just go into this taco thing blindly.”

“Okay Nando, I’ve already made a playlist for the ride and I’m starving so lets figure it out quick!”

The tacos are always garnished with a lime, (to squeeze over the top and then wash your hands with after.)

Expect fresh cilantro and onions 100% of the time.

If you’re getting tacos and they don’t have this heavenly match sprinkled on top, then you might have accidentally rolled into the Taco Bell drive thru! No Bueno!

ROUGH GUIDELINES FOR THE TACO CRAWL: We were not going to go crazy here but we decided we would try to individually repeat what meat we ate at each taco joint and then we would give a review. We had to try both sauces and any toppings that were provided. Notes would be made on atmosphere, setting and general experience. Oh, and, Jordy could not compare every taco stand to “THE GOLDEN PLAZA,” which is his absolute already determined best taco stand in all of Polk County and North America for that matter…

Nando always orders extra onions, cilantro and lime. He usually gets denied, but I don’t think he notices half of the time. In general, they give you a lot in the first place. Or you will have to pay a little bit extra for extra toppings or sauce.

While not all tacos are the same, the price point is pretty universal. $1/taco is average. (We always pay in cash!)

Now, we’re going to get this party started but… I just want to mention again that it is really amazing how many taco trailers and Mexican restaurants are located all over Polk County. We are surprised that visitors come here with their primary destination being LEGOLAND, when we could be known as the taco capital of Central Florida. We actually did have an Airbnb guest come from the Midwest just last week and she took an Uber to the last stop on our taco tour. So… maybe the word is getting out there.

He goes to “THE GOLDEN PLAZA” so much that I think in the beginning they might have thought he was DEA or some sort of undercover cop. He completely doesn’t fit in. This guideline would be a challenge for him, because he talks and compares everything to this place, (even if it’s an Italian restaurant), but this is what he signed up for. He wanted to branch out and try new tacos just in case there was or is something he has been missing.

NOTES: Conveniently located next to a little store where you can grab a Jarritos (Mexican soda) or a road soda. They provide you with a little buffet of toppings outside so you can garnish with as much of the cilantro, onions & cucumbers as you want. We interviewed the cook and they heavily marinate all the meats and let them sit for hours, which is their signature. They have a SPECIAL buy 5 tacos get 1 free!

SAUCES: Red: It was amazing (not too picante) it was my favorite all day.

Green: Bold flavors and the avocado was the star in it!

TACOS/CARNE-(Meat) Barbacoa- Great flavor like the seasonings -Barbacoa kind of a bit fatty though.

Asada- totally gets 5 stars. We are so getting this again next time.

Pollo- It’s hard to keep chicken from being dry, but the marinade made it decent.

NOTES: This is actually a restaurant inside a Mexican Market, (which does not fit into the guidelines of our taco tour). But Nando and I frequent the spot often and once Jordy laid eyes on it, he couldn’t resist. So we headed inside for the “Taco-Addict“ to order a couple of tacos to go.

We open the doors and it is as if we just walked on stage. “Havana” by Camila Cabello is playing; I dance down the aisle with Jordy, (in his striped taco shirt) running along side me. The people eating are looking at us like we are a few gringos that took a wrong turn, but… little do they know, Nando is Latino, The Canadian Tacobird thinks he is and I speak Spanish along with my Rumba.

NOTABLE COMMENTS: Nando: It’s taking a long time maybe they couldn’t catch the chicken!

Jordy: Tacos make me talkative. Red and Green Tables, Sal, these places always paint the picnic tables red or green. Wonder why?

Off to LAKELAND! Jordy’s sound track started to turn a bit too alternative and we were craving something more taco-ish if that makes sense.

We’re not bothered… We’re on a taco crawl in Polk County and this place feels like we’ve landed in authentic Mexico! We love it! Jordy is at the counter ordering and I’m now in the market section dancing to Shakira and buying Mexican candles.

LA MICHOACANA

SAUCES: The Green Sauce was so hot that Nando couldn’t handle it. He drank the sauce right out of the plastic container, which is normal, but the heat was an after heat that bit him like a water moccasin. He had to eat half of Jordy’s Mexican coconut candy to try to combat it. He really needed sour cream but there was none to be had. Deceptive green sauce is what Jordy dubbed it. Jordy is not a big sauce fan, which is fine. He prefers the natural state of the meat not to be enhanced or masked by Red or Green. Such a Canadian…

JORDY’S PRO TIP #2) Most every taco stand/place has rolls of paper towels, which is brilliant. Tacos are messy. This spot, maybe because it was a “to go order” didn’t give paper towels or napkins, so Jordy used the limes to clean his hands. Then his hands were sticky so, he ran back in the restaurant to wash them anyway. He’s a bit particular...

SAUCES: Red was HOT, way picante!

Sally: I cannot believe you are still analyzing the picnic table colors.

Nando: Fine, one more place then I’m “tac-oed out.” – the tables are painted the colors of the Mexican flag people.

JORDY: I don’t know Nando, I really think it might be the 2 colors of the sauces.

Nando and I were back in the saddle and we have been here before so, we just had 1 taco each. Jordy could literally see his favorite taco stand from here so, I think he almost felt like he was “cheating.” He was a bit quiet at this stop. Overall, we don’t have many comments other than it was a 4/5 star and we would go back. We heard from a local that the Tortas (Mexican Sandwiches) are the absolute very best here. Hands down. Too bad Jordy only eats tacos.

TACOS/CARNE: Barbacoa- Juicy, almost perfect!

Asada- Good. But when you know the grass is greener on the other side…

SAUCES/TOPPINGS/TORTILLAS: This day, we only tried the green because they were out of red. Tons of Cucumbers and Plenty of Cilantro. It is also super close to “THE GOLDEN PLAZA” so, we think the tortillas are fresher as well.

Side Note: Jordy couldn’t handle hearing the music and smelling the familiar aromas from “THE GOLDEN PLAZA” so we had to Vamos.

TACOS MY FRIEND

NOTES: The sun is setting, we chose to sit in the VIP taco cabana with the sticky red picnic table, not green, and you can also sit under the repurposed Amoco gas station overhang.

It was slow, we were the only ones there and we definitely waited. The VIP tent, sunset and the fact that we could watch cars fly down Recker Highway helped pass the time.

SAUCES: Not bad. Basic.

TACOS/CARNE: Barbacoa-not fatty at all. Nice subtle flavor.

Asada-Once again, Good. Enhanced by fried onion.

NOTES: We called ahead to order. This taco trailer is pretty popular amongst any taco fans in Polk County so… we didn’t want to have to wait and we knew what we wanted. This was the 5th time ordering the same thing!

NOTABLE COMMENTS: GENERAL CONCENSUS FROM THE 3 OF US: Not Bad. Not bad at all.

JORDY: They should have named this place “Overflow My Friend” I feel like this is where you go when “Tacos My Friend” is too busy.

We showed up and the paper towels were boldly blowing in the wind on top of the tables like banners that we imagined would say, “Welcome my Friend to Tacos My Friend!”

We closed the night with a Margarita at Central Tavern. It was manifest destiny. We had to ice the Taco cake with some Tequila.

TACOS/CARNE Barbacoa-freaking great!

Asada- Really on point. Not over seasoned. More embracing the natural meat savor.

Throughout this entire experience, I realized that 1) Jordy and the taco thing isn’t just for sport. He takes it almost as seriously as the racehorses. 2) He is a taco eating machine. He consumed 5 drinks and 12+ tacos and could have kept going. 3) He is probably right; the best tacos do come from “THE GOLDEN PLAZA.” Jordy made me change the name to protect the identity of his sacred taco stand.

SAUCES/TOPPINGS/TORTILLAS: Sauces get a thumbs up. Not enough cilantro and onion but they do top the Asada with grilled onion and it is amazing. We like how they give cucumbers on the side too. Nando says the cucumbers cool the mouth and clear the palate making it ready for the next taco. Jordy says, hmmm maybe I should switch from Jarritos to cucumber water.

So, only very serious inquiries shoot us an email and we will consider taco telling you the location. (Just Don’t tell Jordy.) But if you are a real taco nut like Jordy, you already know.

We three Amigos would like to wrap this thing up by saying, whether it’s Cinco de Mayo, Taco Tuesday, Margarita Monday or Jordy Day… you don’t EVER need an excuse to eat tacos in Polk County. We promise, the dollar tacos will blow away anything on the dollar menu at any chain any day.

The corn tortillas are pretty small. They are 2/3 the size of the tortillas at “The Golden! Plaza” JORDY’S PRO TIP #3) If it ain’t corn, it ain’t authentic. Any place that tries to sell you a taco with a flour tortilla… is an imposter. Run for the border.

“U-Pick” Me Up

For the syrup: 1 cup Local Blueberries ½ cup Sugar ½ cup Water 1 1 ½ inch Rosemary stalk (optional) For the cocktail: Blueberry syrup Ginger ale or Club Soda Vodka Crushed ice Rosemary to garnish To create simple syrup: In a small saucepan, combine berries, sugar, water and rosemary.

Bring to a boil, stir and smash berries until sugar is dissolved. Let cool. Strain.

To make cocktail: Fill glass with ice and 3 tablespoons of blueberry syrup. Add one shot of vodka, or more to taste. Fill glass with ginger ale (for a sweeter taste) or club soda. Garnish with rosemary.

Alternative: Leave out vodka & rosemary for a sweet blueberry drink.

Victor & Mika’ s Bakery “Oh…it’s vegan…I’ll try it I guess,” might be the initial trepidatious response of someone who has never tried vegan food, or good vegan food anyway. That is until you bite into a puffy, sugary morsel of pastry and question everything about the world. Who am I? What is life? How can a vegan donut taste better than every other donut I’ve ever tried?

Making these options available to their customers are important to Mika and Victor for different reasons. “I am vegan for serious health concerns, and I knew that there were other people here in Polk County who would want healthy baked options and sweet treats,” explained Mika.

Victor added, “We are not gluten-free, but it was important to give those who are gluten-free, a local bakery who can bake their cakes, breads, and anything that they would want to have.”

“Polk County has a vegan bakery?” This might be another question you’re asking yourself. Whether you’re gluten-free or vegan for health or moral reasons, Victor and Mika, owners of the Winter Haven Fruit Stand and now a vegan bakery, have the goodies for you.

Anyone who has ever baked something that turned out beautiful and delicious knows that familiar sense of accomplishment. Baking something that is beautiful, delicious, and vegan is something special all on its own according to the bakery owners. “The favorite part for me is turning on the oven light and watching the breads rise. It makes me feel good to see the dough transform,” said Victor.

Engaged couple Mika and Victor are just as sweet as their vegan churros when you stop by for a pick-me-up. Both are transplants to Polk County. Mika was born in Michigan but raised in Polk County and Victor moved from Chicago 10 years ago to help run the family fruit stand. Victor’s family has been in the produce business for over 20 years, owning several stands around the county.

“My favorite part about baking is the smell coming from the oven, it’s incredible!

And, also watching the satisfied faces of our new customers eating a sample of our products,” Mika said.

The duo, who grow their own mangoes, avocados, papayas, and tomatoes, had initial goals for the fruit stand, “To provide fresh produce grown seasonally and locally, and create a mini farmer’s market.” An organic new venture caused them to temporarily put the stand on hold.

Victor and Mika reflected on the journey to the current state of their growing bakery and have goals set to continue that growth. “God has been pretty good to us,” they said. “For the fruit stand, we plan on growing more produce and reopening the fruit stand this year. Growing more organic fruits and vegetables is a big priority. We hope to continue growing our wholesale clients for the bakery.

Also, Customers will be able to buy their baked treats daily once the fruit stand is reopened this year.”

How did they make the transition from the family fruit stand to a vegan bakery?

“Well, we wanted to bake something healthy for ourselves and this created a chain reaction to bake for our produce customers. The demands for the bakery forced us to put the fruit stand on hold since 2017. Since we love food, guess this passion motivates us in the bakery.”

Crum Brothers Family Farm “Let us not forget that the cultivation of the earth is the most important labor of man. When tillage begins, other arts will follow. The farmers, therefore, are the founders of civilization.”

If you’ve eaten at Nutwood, you’ve likely indulged in Crum Brother’s produce.

From kale to tomatoes, the chef sources many of his ingredients from the local farmer. It’s this relationship with restaurants that gives Will a sense of purpose in the movement for sustainable agriculture.

For 7 generations, Will Crum’s family have been stewards of the land. Four years ago, Will left Berkeley, California to join his father on the Florida farm. Though he came with the original intent to help his father with his 20-acre blueberry farm in Wahneta, Will began growing arugula and his love for sustainable, quality agriculture took him to a 6-acre farm in Lakeland.

“I think that by working with restaurants, I’m making more of a difference right now as a farmer,” he said. “They can represent me in a broader spectrum.”

Sharing the same unwavering work ethic as generations before him, there are no days off for this modern farmer. He works 7 days a week, 365 days a year, performing every task that needs tending to on his farm. “I work every day. I wake up and I work until the sun goes down and then I’m probably still working on some aspect,” Will said. “I think farming is serious and I think you have to be on it every day.”

Will was born in Bartow and grew up in Toronto where he is a dual citizen. His only brother Dave who still lives in Toronto, helped him start his farm in Florida.

It was Dave, in fact, who encouraged Will to drop everything in California to pursue his desire to farm. “We grew up together, he’s my best friend basically.

I keep Crum Brothers [the name] because it’s symbolic of the importance of family,” said the 33-year-old farmer.

Will does the work of about 20 people, handling every aspect his farm. “It slows me down if I have anyone else working with me right now,” he explained.

Like his agricultural practices, Will’s origin with farming is organic. “All my summers and all my holidays and throughout the years I’d drive through the groves with my dad,” he recalled.

“Everything is a personal touch. Every seed in the ground, everything I do is from the farmer.”

Will’s connection and dedication to the land are deeply rooted in his family.

“They were stewards of the land,” Will said of his ancestors, “They took care of their land through the generations. Now it’s up to me to take care of my land by growing organic vegetables.”

The proof is in the produce of the Crum Brothers Farm. Will eats what he grows on a daily basis–freshly picked kale with blue cheese dressing, fresh tomato sauce, basil and tomato from his garden over mozzarella, or pesto using his herbs.

The man with a content energy about him, came alive discussing the ins and outs of sustainable agriculture and the part he plays in revolutionizing the restaurant industry. “People don’t have a good idea of what a farmer is,” said Will. “I’m a farmer.”

“I think that is my nod to them. They did well here and it’s up to me to continue that tradition.”

Will now runs and lives on his sustainable 6-acre Crum Brothers Family Farm. He grows a variety of things, consulting with true blue farm-to-table restaurants all over Central Florida about what they need for upcoming menus. He was actually making a delivery to one of his customers, Chef Steven at Nutwood when we met for the interview. Where Nutwood sits today used to be the Seasoned Stone which was one of Will’s first customers when he began selling his produce to local eateries.

What keeps this modern farmer tending to his crops and customers? “I get my energy from knowing that it’s going to go on a plate, he [the chef] is going to do his best with it. That’s the motivation.”

Before coming to Florida to till the fields, he was strumming a guitar in L.A. and San Francisco. In the little downtime that he finds, Will plays music in a studio he has on the farm. “That’s my life, farming and rock and roll,” he smiled.

Sustainable farming seems to be a buzz-term in foodie culture of late, but what does it actually mean? Out of the mouth of a sustainable organic farmer, “Sustaining the land, sustaining seed sources, choosing non-GMO. I only grow heirloom seeds that can be traced back hundreds of years because they are from here and they survived various things. So, sustaining good seed, sustaining the land, sustaining good working practices like cleanliness.”

Though the life of a farmer is tireless and the work never ceases, it’s something Will has invested himself in wholeheartedly. When asked about his future, Will responded that he would like to continue what he’s doing in partnering with restaurants that are dedicated to giving the community high-quality, sustainable, delicious food. “I want to see the people that really believe in sustainable agriculture move forward with me,” he expressed. “I want more people eating more of this food. That’s my goal.”

As part of his clean, sustainable farming methods, Crum does not use pesticides to keep the critters away. “Plants, naturally, without being farmed, they have to grow somehow,” he said, elaborating on his natural approach. Instead of using “cheap and easy” synthetic fertilizers, Will creates his own using worm castings brewed in molasses water that he sprays on his crops.

Without like farms to model his after in the area, how did Will become so knowledgeable in the field of sustainable agriculture? According to him, “It’s mostly passion.” He relies on his father’s lifetime of farming experience and, of course, Google, but passion aside, “Most of it through straight up failure.” Trial and error have been good to the farmer though, with the Crum Brothers Farm offering up some of the best produce around. havenmagazines.com

Beth Evan’s family moved to Lakeland in 1976 because her father was an engineer with the mines. She went to high school there and attended college at the University of Florida. After college, she came back to Polk County, worked a few different jobs, and eventually landed a trainee planner position with the Polk County Planning Department.

by the heart-pumping, adrenaline-inducing sport, crossfit. “I love to crossfit,” said Beth, “That’s really my passion, is to work out.”

“It’s really a community thing, it’s not just getting fit.”

Beth expressed that people often have misconceptions about crossfit, remarking, “They think it’s really hard and super intense and that you have to be muscle bound, and it’s not like that. It’s for everybody.”

A few years later she interviewed for a position at Envisors. “When I was hired here in 1988, it was all engineers. The owner of the company said he needed somebody to translate between all of his engineers and the rest of the world,” she smiled, “So, he hired me.”

“It’s so much fun to go there. A person from every walk of life is in there,” she noted.

Envisors was founded in 1976. In 2004, Beth and a few partners purchased the company and owned it until 2014 when Pennoni acquired it. Beth is now a Certified Planner through the American Institute of Certified Planners and serves as the Office Director of the Winter Haven location. Pennoni will be moving their offices in July to a building on 3rd Street that was previously a Red Lobster.

“We have teenagers, moms that bring their babies, people with disabilities, and it’s just amazing to see people challenge themselves and get a feeling of, ‘Oh wow, I can’t believe I can do this!’ and feel like they’ve accomplished something that they didn’t think they could.”

Outside of her Office Director job, Beth is a lover of modern art and architecture.

Though she’s not an artist herself, she supports local artists, adorning her home with their work. “I really admire people that can create art. A lot of my friends are artists and I love to collect their pieces. My house is full of it.” So full, in fact, that Beth often rotates the pieces.

The road calls to Beth and her husband Hank, who love everything outdoors, often loading up the RV to travel to different parks around the state to camp and kayak. The pair took a big trip about 5 years ago where they took 4-5 months off to tour the whole country. “You don’t often get that chance to take that amount of time off,” Beth said, “So, we loaded up our three rescue Chihuahuas and just set off without a plan.”

A huge fan of local architect, Gene Leedy, Beth has lived in three of his houses, including her current home. Beth was the president of Main Street Winter Haven for many years and one of her proudest projects was the implementation of the Downtown Leedy Lifetime Works Tour. Her only bone to pick with Leedy from the homes she has lived in was the lack of a closet for a vacuum cleaner, she said laughingly.

While traveling the U.S., Hank and Beth visited friends along with many state and national parks. “We took our motorcycle and we experienced the West, the way you should,” she said.

On the trip, her love of architecture and CrossFit intersected. They visited many important architectural spots, including Frank Lloyd Wright’s home in Wisconsin, but what they visited the most of–CrossFit gyms. “We went to 35 different crossfit gyms across the United States which was so cool!” Beth exclaimed.

A local girl at heart, Beth kept her picks for favorite architects to the area, naming Leedy, Max Strang, and Kenneth Treister.

Why is Beth so passionate about architecture? “Because it shapes our lives. It affects everybody that sees it or lives in it. For instance, Max [Strang], he grew up in a Gene Leedy house, and his parents went to work in a Gene Leedy building. It really affected him and look at him now. He is a world-renowned architect,” Beth said. “The space that you’re in, really affects you.”

Beth paused when asked about what her future holds, “Usually I don’t think much about that, I just do what is in front of me.”

“Lately I really have been thinking about a new project.” Beth kept tight-lipped about the new project, giving only enough information to intrigue, “I think it’s going to combine several of my passions. Now that I’ve said it out loud, which this is literally the first time, I’ll have to make it happen,” she laughed. “We’ll see, to be continued.”

“Aesthetics and design, I think, make people’s lives better.”
