At Harvey Goodman, Realtor®, we’ve been helping area residents with their home and commercial real estate needs for over 60 years. 2018 marks our 61st year in business, and we’re proud to usher in our next era of serving the Ohio Valley. A lot has changed since we started. Used to be folks would come by the office and look through file cards with property descriptions on them to select the properties they wanted to see. From there, we went to the first database searches via the “MLS”, or Multiple Listing Service. We had 300 baud terminals spitting out endless pieces of thermal paper. No photos, of course, just data, data, and more data. From there, the MLS upgraded to actual photos for the agents to provide prospective buyers. The internet came to be, and buyers and sellers were able to actually see their homes online! Technology advanced again, and fancy web-based search sites sprung up, all vying for buyers’ attention. Cell phones came on the scene, and now, most folks search for property information right from the palm of their hands. It’s 2018, and things are moving as fast as light. Today’s technology will be old tomorrow. What we think is the best will become obsolete in the flash of an eye. But one thing that never goes out of fashion is good, old-fashioned customer service. THE STORY OF THE VAGABOND CHEF

From washing dishes to creating dishes, the Vagabond Chef has worked his way to where he is today:
Award winning, locally loved, foodie-celebrated, and an all around great guy. I caught up with Matt Welsch, who we know as “The Vagabond Chef”, at his newest Vagabond Kitchen location in Wheeling, right across from the McClure Hotel on Market Street in downtown Wheeling. Like his other locations, The Vagabond Kitchen is relaxed, comfortable, and with a unique vibe that you just don’t find everywhere. It’s contagious. The menu is contagious. Actually, everything about the place says “Come back. Eat more. It’s delicious!” Matt Welsch is an interesting character- the kind of guy you want to get to know. He cares. His food isn’t just food. It’s artistic cuisine at it’s best. Like him on Facebook and you’ll get a daily temptation, a snippet of his menu and a reason to venture to Market Street. Every dish is unique, interesting, and perfectly balanced. Says Welsch, “Good food should be beautiful.” His is. We call it “Eclectic Elegance”. Welsch likes to “marry” flavors: he enjoys balancing flavors and sensations. Most every dish has a slight to heady kick- with an equal balance so as not to overwhelm. The balance, so far, has worked out to pure perfection. Newton said, “For every action there is an equal and opposite reaction.” Newton would be pleased- and we’re pretty sure he’d probably eat at the Vagabond Kitchen. As a guy who started life in Marshall county, W Va. as an 8 pound preemie, and having spent all his time exploring the countryside and reading the likes of Jack London and stories about Davy Crockett, Matt’s never gotten his fill of that explorer’s mindset. He never lost his desire to know more, see more, and create more. His love of exploring grew into a love of travel, and Welsch set out at an early age to discover different ways- and different menus. When he was younger. he started doing jobs to support his travels and his curiosities, and it was in 2013 that, on one of those jobs, working as a sous chef at a resort in Idaho, it all started to come together: Matt Welsch knew he wanted to create unique, perfectly balanced, delicious cuisine that everyone would enjoy, while introducing the various cultural flavors and techniques from places he had visited, like Europe, Germany, Dominican Republic, and numerous places within the states. In fact, one if his heartfelt missions is to introduce Appalachian cuisine to the rest of the world, whether from the Vagabond Kitchen or as a visiting chef. The world of Social Media is loving The Vagabond Chef. Daily offerings posted online are but a small glimmer of Welsch’s world. His exploits are being followed by thousands of fans, with more finding him every day. It was a photo on Instagram that garnered the attention of the famous chef Guy Fieri, and that led to an invitation to participate in Fieri’s “Grocery Games”, on which Matt Welsch, the Vagabond Chef, Wheeling’s own, took home the winning prize of $20,000.
The Vagabond Kitchen is open Tuesday Through Friday 11-9, Saturdays 4-10, and closed Sunday and Monday so the chef can recharge and plan the next weeks amazing menu. PORK CHOPS WITH VAGABOND APPLE CHUTNEY YOU’LL NEED: Pork Chops (flour, salt and pepper) Green beans, red pepper and portabella mushrooms (also, olive oil, salt and pepper) Mashed potatoes (salt and pepper, heavy cream, granulated garlic, and butter) Dredge the raw pork chops in flour, pre-seasoned with salt and pepper. Sear in a cast iron skillet a couple minutes, both sides. Pop them into an oven, heated to 350, until done (about 5 minutes) Snip the ends off of your green beans, but keep them long Julienne your red peppers Slice up your mushrooms Add some olive oil to a pan, heat it up, and cook your veggies until they are done, adding a little salt and pepper along the way. Boil whole potatoes until they fall off the fork (in salted water) Drain ‘em, mash ‘em Incorporate heavy cream, salt and pepper, butter, and granulated garlic
APPLE CHUTNEY
You’ll want to spoon a dollop of this delicious chutney over the edge of your pork chops, and have it on hand for your guests to enjoy more, if they want. It’s the Vagabond Chef’s own recipe- and now it’s yours, too!: 4T Butter 3 Green Apples, peeled, cut about 1/4 inch, then cubed 1 C dried cranberries 3/4 C Brown Sugar 1/4 C Cider Vinegar 2 1/2 Tablespoons fresh ginger 1 tsp salt 1 tsp dry mustard 1/2 tsp ground allspice 1/2 tsp cayenne To prepare chutney, melt butter in a non-stick skillet over medium-high heat. Add apple, saute 4 minutes or until lightly browned. Add the rest of the ingredients, bring to a boil. Reduce heat and simmer 8 minutes or until apples are tender, stirring occasionally.
