U N D E R S T A N D I N G C H A M PA G N E Champagne is a prestigious sparkling wine renowned for its finesse, elegance, and celebratory association around the world. Defined by its origin as much as its style, Champagne is characterised by its lively bubbles, bright acidity, and complex flavor profile, which can include notes of citrus, apple, brioche, almond, and minerality. Crafted primarily from three grape varieties. Chardonnay, Pinot Noir, and Pinot Meunier. It is considered one of the finest expressions of sparkling wine due to its balance, aging potential, and distinctive sensory qualities.
WHERE IS IT? Champagne comes exclusively from the Champagne region in northeastern France, approximately 150 kilometres east of Paris. This cool- climate region is divided into key subregions including Montagne de Reims, Vallée de la Marne, Côte des Blancs, and Côte des Bar, each contributing its own terroir- driven characteristics to the wine. The area’s chalky soil, rolling hills, and marginal growing conditions play a crucial role in producing grapes with high acidity and subtle flavour, essential for creating high- quality sparkling wine. 6
HOW ITS MADE Champagne is made using the traditional method (Méthode Traditionnelle), also known as Méthode Champenoise, which involves a secondary fermentation in the bottle. After the base wine is created, a mixture of sugar and yeast (liqueur de tirage) is added to initiate this second fermentation, producing carbon dioxide that becomes trapped as bubbles. The wine is then aged on its lees (spent yeast cells), enhancing texture and complexity. Before release, the bottles undergo riddling to collect sediment, disgorgement to remove it, and dosage to adjust sweetness levels, resulting in a refined and precisely crafted sparkling wine.
7
C H A M PA G N E HISTORY Champagne, the famous sparkling wine from northeastern France, has a history that dates back to Roman times when vineyards were first planted in the Champagne region. However, it was not until the 17th century that sparkling Champagne as we know it began to develop, largely due to the region’s cold climate causing wines to undergo a secondary fermentation in the bottle. This process was refined by winemakers such as Dom Pérignon, a Benedictine monk often mistakenly credited with inventing Champagne but who actually improved its production methods. Over time, strict regulations were introduced to protect its quality and origin, ensuring that only sparkling wine produced in the Champagne region using specific methods can legally bear the name “Champagne.”

UNDERSTANDING MÉTHODE TRADITIONNELLE The term Méthode Traditionnelle (traditional method) refers to the classic technique used to produce high- quality sparkling wines with fine, persistent bubbles and complex flavour. Wines made this way are typically elegant and layered, showing notes of citrus, orchard fruit, toasted bread, and brioche, with a creamy texture developed through extended contact with yeast lees.

CRÉMANT - FRANCE UNDERSTANDING CRÉMANT Crémant is a category of high- quality French sparkling wine made using the same traditional method as Champagne, offering elegance and complexity with a distinct regional identity. Typically softer and more fruit-forward than Champagne, Crémant is known for its fine bubbles, fresh acidity, and approachable style, with flavour profiles ranging from crisp orchard fruits and citrus to light brioche and floral notes. It is produced from regional grape varieties, which vary depending on the appellation, giving each Crémant its own unique expression.
CRÉMANT HISTORY Crémant is a French sparkling wine made using the same traditional bottle-fermentation method as Champagne, but produced outside the Champagne region. The term crémant originally referred to a style of sparkling wine with softer, "creamier " bubbles. In the 1970s, French wine regulations formally adopted the name for high- quality sparkling wines from other regions, helping distinguish them from Champagne. Today, Crémant is produced in several French appellations, including Alsace, Burgundy, Loire, Jura, and Limoux, and is known for offering excellent quality and regional character at a more accessible price point than Champagne

C AVA - S PA I N U N D E R S T A N D I N G C AVA Cava is Spain’s signature sparkling wine, celebrated for its vibrant character, fine bubbles, and excellent value. Generally fresh, lively, and fruit- driven, Cava often displays notes of green apple, citrus, pear, and occasionally toasted almond or brioche depending on its aging. Made primarily from traditional Spanish grape varieties such as Macabeo, Xarel·lo, and Parellada, Cava offers a balanced style that can range from crisp and youthful to richer, more complex expressions with extended aging.
WHERE IS IT? Cava is predominantly produced in the Penedès region of Catalonia in northeastern Spain, although it holds a unique Denominación de Origen (DO) that allows production in several regions across the country. Despite this broader geographic scope, the heart of Cava production remains around Sant Sadurní d’Anoia, often referred to as the capital of Cava. The Mediterranean climate, with warm days and cool nights, combined with varied soils, helps produce grapes that balance ripeness with the acidity needed for quality sparkling wine.
46
C AVA H I S T O R Y Cava, Spain’s renowned sparkling wine, originated in the Catalonia region, particularly around the town of Sant Sadurní d’Anoia, in the late 19th century. Inspired by the success of French Champagne, Spanish winemakers began experimenting with the traditional bottle fermentation method, with Josep Raventós of the Codorníu winery producing the first recognized Cava in 1872. Unlike Champagne, Cava is typically made from native Spanish grape varieties such as Macabeo, Xarel·lo, and Parellada, which give it a distinct Mediterranean character. Over time, Cava became an important part of Spanish wine culture, valued for its quality and affordability. Today, it is protected by Denominación de Origen (DO) regulations, ensuring it is produced using the traditional method in designated regions, with Catalonia remaining its heartland.

UNDERSTANDING PROSECCO Prosecco is one of Italy’s most popular sparkling wines, known for its fresh, aromatic style and approachable character. Typically light-bodied and fruit-forward, Prosecco displays flavours of pear, apple, white peach, and citrus, often complemented by floral notes. Its bubbles are generally softer and more frothy compared to Champagne, making it an easydrinking and versatile option that is widely enjoyed as an aperitif or in cocktails such as the Bellini.
WHERE IS IT? Prosecco is produced in northeastern Italy, primarily in the regions of Veneto and Friuli Venezia Giulia. The highest quality expressions come from the Denominazione di Origine Controllata e Garantita (DOCG) zones of Conegliano-Valdobbiadene and Asolo, where steep hillside vineyards and favourable growing conditions contribute to greater concentration and complexity. The broader Prosecco DOC area covers a larger, flatter territory, producing wines that are typically lighter and more accessible in style.
HOW IT’S MADE? Unlike Champagne and other traditional method sparkling wines, Prosecco is made using the tank method (Charmat method), where the secondary fermentation takes place in large stainless steel vessels rather than individual bottles. After the base wine is produced, it undergoes a second fermentation in pressurised tanks, preserving the fresh fruit flavours and aromatic intensity of the Glera grape, the primary variety used. The wine is then filtered and bottled under pressure, resulting in a vibrant, youthful sparkling wine designed for early consumption. 51

FAQ HOW DOES THE TRADITIONAL METHOD INFLUENCE THE S T Y L E O F S PA R K L I N G W I N E ? The Traditional Method (Méthode Traditionnelle) involves a second fermentation in the bottle, creating finer bubbles, greater texture, and increased complexity. Extended ageing on lees can contribute aromas of brioche, toasted nuts, pastry and biscuit.
H O W D O E S L E E S A G E I N G A F F E C T C H A M PA G N E ? Lees ageing enhances texture, depth and complexity. The longer a wine remains in contact with its yeast lees, the more pronounced its autolytic characteristics become, often resulting in flavours of brioche, bread dough, hazelnut and toast.
H OW D O E S D O S AG E I N F L U E N C E T H E F I N A L S T Y L E O F C H A M PA G N E ? Dosage is the addition of a small amount of wine and sugar after disgorgement. Lower dosage levels emphasise acidity, minerality and precision, while higher dosage levels can add roundness, balance and perceived richness.
WHAT SWEETNESS LEVEL SHOULD I CHOOSE? Brut Nature/Zero Dosage: Bone dry and mineral-driven. Extra Brut: Very dry and precise. Brut: Dry, balanced and versatile. Extra Dry: Slightly softer and fruit-driven. Demi-Sec: Sweeter style suited to desserts.
WHAT IS THE DIFFERENCE BETWEEN BL ANC DE BL ANCS AND BLANC DE NOIRS? Blanc de Blancs, typically produced from Chardonnay, often displays citrus, floral and mineral characteristics with a fine, elegant structure. Blanc de Noirs, made from Pinot Noir and/or Pinot Meunier, generally offers greater body, texture and red-fruit character.

Champagne and Cava are produced using bottle fermentation, which generally creates finer bubbles and greater complexity.
