Tables are set far enough apart from each other and the menu is disposable. Employees are wearing face masks, regularly disinfecting high-touch surfaces, and practicing social distancing. We are spraying our buildings daily with a sanitizing mist. We continue to take temperatures and direct employees to stay home if they are not feeling well. Precautionary measures are being taken at every turn of events to protect our members and staff.

HAMPTON HALL CHARITABLE FUND CELEBRATES A Year of Help and Hope

T

he year 2020 brought unimagined challenges to communities everywhere, and the Lowcountry was no exception.

But it also brought an outpouring of compassion as people reached out to help not only close friends and neighbors but also those most in need.

Through the strong support of our community, the Hampton Hall Charitable Fund (HHCF) was able to do our part to help families cope with issues brought on by the COVID-19 pandemic.

We started the year with high expectations. Our annual Tee Off Against Cancer in the Lowcountry attracted almost 100 golfers and raised several thousand dollars in February to support the work of the Beaufort Memorial Hospital Foundation (Keyserling Cancer Center) and Hospice Care of the Lowcountry. Both organizations focus on helping patients and their families better cope with cancer.

As everyone’s focus and fears turned to the pandemic, we are very proud of the fact that the Hampton Hall Charitable Fund was the first organization to donate to the COVID-19 program launched in March by the Community Foundation of the Lowcountry. The fund was designed to help nonprofit organizations respond to the needs of local families and first responders.

In just 48 hours, our generous Hampton Hall neighbors matched and then quickly exceeded our $2,500 contribution. Together, with an additional match from the Community Foundation, we raised over $15,000.

Although we had to cancel both the Mah Jongg Tournament and the Holiday House Tour, which proved so popular last year, our School Supplies Drive brought in more donations than we could have expected. Our contactless drop off enabled us to collect several carloads of everything students and teachers from Bluffton Middle School and Whale Branch Elementary School needed during a very challenging school year.

With the effects of COVID-19 in mind, we focused our 2020 grants program on agencies that provided food, clothing and shelter to families in the greater Bluffton area.

As of this writing, we are getting ready to hold the annual Christmas Toy Drive and award our 2020 grants. Our budget in 2020 was smaller than we had hoped, but we never lost sight of our mission to support local organizations that directly help children and families in need. With the effects of COVID-19 in mind, we focused our 2020 grants program on agencies that provided food, clothing and shelter to families in the greater Bluffton area.

Despite a year of upheaval, we believe the HHCF accomplished a great deal, and we owe all of our success to Hampton Hall residents whose generosity, volunteerism and spirit of community we can always count on. Thank you for your support!

memberSPOTLIGHT Meet Bill and Lisa Odell

B

ill and Lisa Odell moved to Hampton Hall Club in July 2019 from Thousand Oaks, California to be closer to their children. Their original plan was to live on the island, but on a weekend house-hunting trip, they decided it was too busy during tourist season. Once their real estate agent showed them Hampton Hall, they knew it was exactly what they’d been looking for!

You can find Bill out on the golf course 3-4 times a week and Lisa enjoys early mornings at the tennis courts. They love to socialize and meet new people and are members of the craft beer, euchre, and book clubs. They always look forward to Club events, making memories with friends, and meeting more of our community members.

Their son, Andy, is studying finance at Clemson University and loves golf. He recently had his first eagle on #9! Their daughter, Charlie, is 23 and resides in Atlanta. With a degree in Applied Physiology and Sports Management, she loves her work teaching yoga to children.

Outside of the Club, the Odells love to travel. They were eagerly anticipating a trip to Italy and Spain this past April and hope 8 | Winter 2020-21

Although her family is originally from Smithfield, NC, Lisa was born and raised in Pusan, South Korea! Her parents were Southern Baptist missionaries and lived there for over 30 years.

We loved the wine tastings, the comedian, park concerts in our golf cart, MGS golf tournaments and so many others!”

The Odells are avid Los Angeles fans and watch the team almost every night. Since most games don’t start until after 10:00 PM ET, it makes early tee times and tennis matches a challenge! Additionally, they are big country music fans and have attended the Stagecoach Country Music Festival for the past seven years. They look forward to enjoying the Carolina Music Fest in 2021 at Myrtle Beach.

When asked what they love most about the Club, the Odells agreed on the amenities and wide variety of social events. “We have tried to participate in as much as we can. We loved the wine tastings, the comedian, park concerts in our golf cart, MGS golf tournaments and so many others! We have also been very happy with the Tavern and Pete’s Grill.”

Bill and Lisa would tell someone considering moving to Hampton Hall, “When we moved, we knew we would love the natural beauty, the golf course, and amenities, but what has been the best part is the people. by Jared McElroy, Executive Chef I am always asked how we cook a perfect Prime Rib whenever we serve it at the Club. One of the secrets to our amazing Prime Rib is that we cook it low and slow so the meat cooks uniformly across the entire roast. This also allows the fats in the meat to melt slowly, flavoring and tenderizing the meat as it roasts. The ovens we have at the Club allow us to cook and then hold the Prime Rib overnight, tenderizing the meat even more as it holds, meaning that we cook our Prime Ribs for 24 hours. This recipe is an excellent alternative to our process, which requires specialized equipment, but it will require a 4 to 4 ½ hour cooking time so plan accordingly.

THE PERFECT HOLIDAY PRIME RIB

INGREDIENTS Standing Rib Roast

(about 4 rib bones)

Chopped Fresh Rosemary

Fresh Ground Black Pepper ½ oz Kosher Salt

Egg White

EQUIPMENT NEEDED 1 Roasting Pan 1 Roasting Rack 1 Digital Thermometer I prefer the Taylor Digital Remote Thermometer.

The probe has a long cord that attaches to the digital display, so the thermometer is constantly taking the temperature while cooking. It also allows you to set an alarm for when your roast has hit its final cooking temperature.

METHOD: Preheat oven to 200ºF. 1. Take the meat out of the refrigerator and allow it to rest at room temperature for 30 minutes.

2. Combine the chopped herbs, salt and pepper and mix.

3. In the mixing bowl, whisk the egg white to a velvety foam. The egg white should be uniformly frothed; you are not making a meringue, so you are not looking for peaks just foam.

4. At this point you can French the rib bone if you would like. Frenching is when you remove the meat and fat from around the last inch of the end of the bones.

5. With your chef knife remove the rib bones from the loin by cutting along the ribs. Save the ribs. Remove any cartilage and silvery connective tissue from the bottom of the roast from where the bones were removed. (Connective silvery tissue never breaks down in the cooking process so this step will help make this a more tender roast).

6. Tie the rib back onto the roast using the butcher’s twine.

7. Brush the frothed egg whites over the outside of the entire roast except the frenched ends of the bones (if you frenched your roast). This will help the herb mixture to stick to the roast and create a wonderful crust.

8. Coat the roast with the herb mixture.

9. Place the roast in the roasting pan on the rack and insert the thermometer probe into the center of the meat. Place the roast in the oven. Cook the roast at 200ºF for about four hours or until the thermometer reads an internal temperature of 125ºF. 10. Remove the roast from the oven and allow it to rest for 10-15 minutes before carving. The roast will continue to cook to about 130-135ºF, making it a perfect medium-rare to medium. If you would like it more medium, cook the roast to 135ºF before resting. For medium well, 140ºF and for well done 155ºF. 11. To carve, remove the butcher’s twine and take the loin off the ribs. Slice portions and serve with au jus and horseradish cream sauce.

A

s we move ahead in 2021 following the tour de force that for all of us was 2020, I am, in retrospect, thinking about the wine collection.

Traditionally, a wine cellar’s purpose is to afford the collector an opportunity to put away bottles of wine that over time, perhaps years, would age to some level of perfection.

In recent years it has become obvious that a greater number of wines that once absolutely required extended aging no longer do so. Many of today’s wines reach their optimum potential after five or less years of additional cellaring.

There are many exceptions — the wines of Bordeaux and of Burgundy (both red and white), the great Brunellos and Barolos, German and Alsatian Rieslings, some Napa Valley Cabernets and Chardonnays and Hungarian Tokajis.

These long-lived wines all can still age gloriously. However, these are the exceptions and even among them, most don’t require anywhere near as much aging as in the past.

As noted wine writer Matt Kramer suggests, “Buy fine wines, cellar them in a cool space for five years—10 years, tops—and then drink them in secure confidence that the great majority of their full-dimensional goodness is available to you.”

Member Member Memories

O

ne of the most enjoyable events of the year is the Member Member.

It certainly was a peculiar time to try to conduct this large-scale event due to the pandemic, but the committees for both tournaments did a wonderful job! It is always interesting to see our groups pick their partners and take on the field. Watching the teams that have been matched up for a long time as well as new partnerships that are just beginning, is a great source of entertainment.

Overall Ladies’ Member Member champions Kay Williams and Annette Hausman. Dy-no-mite!

The Ladies’ theme was Golf A GO-GO. Many players were decked out in some hip 70’s attire which made for memorable photo opportunities and added extra excitement to this year’s theme. I am still having a hard time getting those catchy songs out of my head! The overall champions were Kay Williams and Annette Hausman. Their groovy gameplay over those two days propelled them to the victory! In what proved to be an enjoyable event and format, the teams played the first day in better ball of partners and could improve their score on the second day. The champions put together a fantastic 58!

The 2020 committee was led by Sherry Rockwell and Patsy Mason. They, along with their committee, did a great job providing us with a memorable event!

The Men’s Member Member was nothing short of fantastic as well. In what was the first large event since March, our men played some good golf over a beautiful mid-September weekend. I

’m pleased to announce the Hampton Hall Club golf course has recently been recertified as an Audubon Cooperative Sanctuary! The Club has been certified since 2012. To become a sanctuary course, you must demonstrate you are managing your course with the surrounding environment in mind and are dedicated to improving the environment and habitat around and on the golf course. When we improve the environment on the course, we improve the entire environment throughout the Hampton Hall community! Every three years, the golf course must go through recertification to keep our sanctuary status, which requires a good deal of paperwork along with other environmental projects we maintain year after year.

In 2011 we installed 60 Bluebird houses and 30 duck boxes on the golf course and throughout the community, which are maintained with the help of our golf members.

The high cut Bermudagrass areas on the course and Cordgrass around the bottom of the lake banks filters water and provides habit and feeding areas for wildlife.

By planting trees, Cordgrass beds, and establishing low maintenance areas around the golf course, we have cut water usage by 30-40% per year.

Water testing is performed on the lagoons to check chemical levels. We have lowered fertilizer and chemical

inputs on the course.

Small actions we take make a big difference! When we clean out wetland drainage, build brush piles for wildlife, or leave a tree trunk for insects to feed on, we facilitate the circle of life for nature to take its course.

This year, our recertification project was building a butterfly pollinator garden at the front of the Golf Clubhouse. Next time you visit Pete’s Grill, take a look to the right of the entrance at the vibrant flowers!

I could go on and on about all the steps Hampton Hall Club is taking to ensure our course and community is an environmentally sustainable haven for years to come.

Our junior tennis students here at Hampton Hall move along the “Pathway to Success” program which utilizes graduated equipment, focuses on fundamentals and technique, reinforces good sportsmanship and most importantly, FUN! Different colors of low compression tennis balls have made it easier for children to learn the game. These balls are designed to play slower and therefore gives kids more time to react as well as the ability to play on smaller sized courts since the balls do not go as far.

There are three kinds of low compression balls: red, orange, and green.

Activities are tentative depending on social distancing safety restrictions that may remain in effect or be altered this winter.

Every child develops at their own rate, therefore there is no specific timeline for moving along the pathway, but generally our students are grouped together by age.

Discover Tennis Level: Adult Beginner; $90 Discover tennis is an adult beginner tennis program that teaches players to “rally” using low compression balls and a smaller court. It makes learning to play fun, affordable, and accessible to anyone who is looking to learn the sport, find a fun workout, and meet new people. Players will learn all the strokes of tennis along with the basic rules and scoring. This will be a 6 week session with a level 2 class to graduate into.

Rusty Rackets Clinic Level: Adult Beginner; $90 Fun program for anyone who may have played as a child or young adult and is looking to get back into playing again. 6 week session that will get you hitting the ball again and reintroduce you to tennis, no matter how long you have been away! (Players must have prior tennis experience)

Pickleball Said to be the fastest growing sport in America, pickleball is sweeping the nation and Hampton Hall members are loving it! Pickleball is a great way to exercise and meet new members in the community! Never played before? No problem! Hampton Hall has a schedule to accommodate even the newest beginner.

fit&HEALTHY Planning is Key to Managing Exercise and Nutrition During the Holidays

T

he holidays may be a little different this year, but there will still be the temptation to overindulge in high calorie foods and cut back on workout time. With a plan in place, you can avoid this scenario. We hear it every year, but how many times have you gone through the holidays as you first intended to? Make this year different by setting reasonable and measurable goals. Write your goals down and keep the note in a place where you’ll see it frequently so you are reminded to stay on track. For example, make the decision not to eat after a certain time each night. Another example would be to set an activity goal throughout the day. Set a reminder on your phone to stand up and move around at least every hour.

Plan workouts for days when time is limited. Shorter workouts are okay. Every workout does not have to be an hour or longer. For example, choose 10 exercises you can do without equipment like squats, lunges, pushups etc. Do each exercise for 1 minute. Make sure to add a quick warm-up at the beginning and a stretch at the end. Write these exercises down and keep track of the times you complete this workout.

You could go through the exercises 2 or 3 times for a 20 or 30 minute full body workout.

Keep moving throughout the day! Go for a quick walk

or run before or after the main meal. If that’s not possible, use isometrics to get a muscle workout. Wall squats are a great exercise you can do anywhere and can be spread out throughout the day. If you find yourself sitting for long periods of time, remind yourself to use your best posture and tighten your abs. Practice this so that good posture becomes a habit.

Not gaining weight during the holidays also takes planning.

When doing your grocery shopping, pick high nutrition foods that you know you will eat. If you know you do not like carrots and celery, do not buy them! Maybe apples and almond butter would be a better replacement.

Lighten up your recipes. Replace 1 egg with 2 egg whites.

Instead of oil or butter in baked goods, you can substitute apple sauce.

If drinking, make sure to have one glass of water before and between alcoholic drinks. This cuts down on calories from alcohol and keeps you hydrated.

Accept the fact that there will be days when you are unable to meet your exercise and nutrition goals, but do not throw in the towel. Every day is another chance to start again.

Remember: small steps to big success!

CHOCOLATE CHIP PUMPKIN MUFFINS Try this recipe and enjoy some added health benefits! • High antioxidant content may reduce the risk of chronic diseases and cancer • Contains Potassium, Vitamin C and Fiber which may benefit heart health • Packed full of vitamins that boost immunity and promote healthy skin

INGREDIENTS 2 eggs ½ cup pumpkin puree ½ cup milk 2 Tbsp maple syrup ½ tsp vanilla extract ½ tsp pumpkin spice ¼ tsp salt 1 cup oats 1 tsp of baking powder ¼ cup chocolate chips

DIRECTIONS Preheat oven to 375° Whisk together eggs, pumpkin, milk, syrup, vanilla, spice and salt. Once mixed add oats, chocolate chips, and baking powder. Stir until combined and pour into muffin tins.

Bake for 18-20 minutes.
