With a reduced diameter of ¼”, the 708 will minimize the compartmentalization zone (dead wood area) affected by tap holes. The diameter and depth of the tap hole have a direct influence on how large this area becomes. If sustainability of your bush is a priority, ¼” spouts are ideal, as they drastically reduce the compartmentalization effect.

JASMINO A FAMILY TRADITION IN EVERY BOTTLE IN HAM-NORD, at the heart of maple syrup country, Kathie and Jasmin have built their business around a simple but meaningful concept: working as a family, in a way that reflects their values and their everyday reality. Because they both came from families of sugarmakers, producing maple

syrup has always been a part of their lives. It’s a hands-on and demanding trade that has naturally been passed down to them through the generations. In 2011, they bought their very first piece of land in Ham-Nord. That fall, they built their sugarhouse,

the cornerstone of what would eventually become the Jasmino brand. Then came Jacob (2013) and Rose (2017), along with two additional sugarbush located in nearby villages. Every single expansion was intentional; the goal was never to grow just for growth’s sake. The goal was to build a sustainable business around their dayto-day reality. Today, Jasmino is firmly rooted in their community. Their company culture is built on simple ideas: optimizing their operations, reducing waste, caring for their forest, and striving for consistent quality. Their mission is to produce exceptional maple syrup that embodies their commitment and their know-how. For them, it was never about impressing others with volume. And their dedication to consistent and precise results has allowed them to produce a syrup perfectly suited for both retail sales and crafting maple-based products. This is what it’s always been about: creating a solid family business that moves forward thoughtfully and without ever losing sight of what matters.

Mainely Maple ROOTED IN TRADITION IN THE WESTERN MOUNTAINS OF MAINE, just outside the hamlet of Avon (population 450), a fresh new sugarhouse perches on a leveled piece of land at the base of a maple-rich hillside. So new is the sugarhouse, in fact, that the fragrant tamarack rafters and clapboards still have a fair bit of shrinkage to achieve. Ruthie's Sugarhouse rose up from site work to sugarmaking in just 18 months, the passion project of arborist and fifth-generation sugarmaker

Austin Thorndike and his wife, Lauren. They dipped back into the craft during Covid (“looking for another thing to do with the kids”), and then it “grew and grew and grew.” The operation is named for their stillborn daughter, a detail that holds a lot of meaning for the family. They also happen to be, at his telling, “the only Jewish sugarmakers I know of, anywhere.”

Thorndike has been sugaring “for almost 37 years” (as he is just 36). His great-great-grandfather was a maple sugarmaker and a dairy farmer. From there it passed down through two more generations to Thorndike’s mother, who taught him to sugar “on a little pan in the backyard.” After graduating from college, he worked for over a decade as a forester before the itch to get back into sugaring took hold. “When I was out in the sugarbush working and tapping the trees and just kind of getting out there with my dog and enjoying the weather and the trees,” he recalled, “it kind of clicked 75

in my head one day that I had killed enough trees in my lifetime. It would be way more fun to tap them. “I talked to my wife, and we talked about how many maple trees we had, and I said ‘I think we can kind of make a run at this.’ She wasn't quite on board at first, but she came around once she ran out of maple syrup to make sugar and candy.” In early 2024, Thorndike set his eye on a piece of land near their home “that was just literally just a field,” he said. “But to me, it was a lot more than that. It was kind of an iconic spot where a sugarmaker can see all of the sap flows downhill to this one place.”

Earthwork and a foundation followed. All the wood for construction was harvested from their woods (remember, he’s an arborist), and family and friends pitched in, aiming to get the space done and dusted for the 2025 sugaring season. Meanwhile, Thorndike also had to pipe his woods (to about 2,000 taps) and get all the equipment he needed. “When we built this sugarhouse,” Thorndike said, “we knew we were going to need a lot bigger rigging than we had beforehand [an 18 x 48 pan of undisclosed origin]. I got looking around and ended up finding out about H2O Leader and a little town called Swanton, Vermont, where they still manufacture really high-quality sugaring equipment.” He went to the 2024 Open House Weekend, planning to visit multiple factories, but hit H2O Leader first and “just never went anywhere else.”

“The people in the building,” he said, “they really cared about your operation. And I didn't have any taps. It didn't matter to them. They were really excited to talk about maple with me and, how to grow into a bigger operation, and what different fuel options there were for evaporators. And the craftsmanship is second to none. So I ended up outfitting an entire new sugarhouse with, H2O Leader equipment, and I couldn't be happier.” He tooled up with a Leader Vortex Arch and Leader 3 x 7 Max Raised Flue pans, with two 18x36 Cross Flow Pans. “That thing is a ripper,” he said. “It is. It boils. I'd put it up against any evaporator in the industry and I'd bet the farm on it. It is something that is truly impressive.” To that he added a Leader 18-gallon bottler (“flawless”), a 325-gallon H2O head tank, a 3850-gallon H2O raw sap tank, a Leader MicRO RO machine, and a 12x30 H2O releaser. “That thing has been a beast,” he said. “It runs

flawlessly and it's handled all the sap that's been thrown at it. And we couldn't be happier with that.” So happy, in fact, that he took things one step further. “I love the equipment so much,” he said, “that the wheels started turning in my head, and I was like, I wish I could share this more with people that are in my area. If I could share a product that I truly believe in and I think is worth what you're paying for it, I kind of want a part of that.” Thorndike said he feels that sugarmaking is on the brink of a reemergence in Maine. “People, they want to know where their food comes from,” he said. “And a lot more people, even if they have no prior experience… are grabbing some buckets and a spout and they're trying to make syrup.” And H2O Leader could play a big role in that, he said. “In this area… things being built in America mean a lot to people. They'd rather pay more and know they're supporting American jobs, American manufacturing, American steel. There are still some things that are made in Canada with H2O Leader, but a lot of those things are made in the US, and [people here are] happy to know that their dollars are going to American families in their homes.” He said he is particularly excited “to help people with moving to high vacuum and all the different kind of nuances that are in the syrup world... If I can help people in my region take those steps, kind of like boots on the ground, I would love to do that.” For his own part, he said he’d like to see Ruthie's add another 10,000 taps, so he and his family can make sugaring a full-time thing. It might take a bit more than 18 months, but something tells us he’ll get there soon enough.
