Taking inspiration from wonderful Italian cuisine and favourites among foodies across the globe, we have picked out four delightful recipes for you try this summer.
INGREDIENTS
HOMEMADE PASTA
300g ‘00’ pasta flour, plus extra for dusting 2 eggs and 4 yolks, lightly beaten
Fresh and homemade, this pasta is fun to make and even more fun to eat! SERVES 8

Add the flour to a food processor with ¾ of your egg mixture and a pinch of salt. Blitz to large crumbs – they should come together to form a dough when squeezed (if it feels a little dry gradually add a bit more egg). Tip the dough onto a lightly floured surface, knead for 1 min or until nice and smooth – don’t worry if it’s quite firm as it will soften when it rests. Cover with cling film and leave to rest for 30 mins. Cut away ¼ of the dough (keep the rest covered with cling film) and feed it through the widest setting on your pasta machine. (If you don’t have a machine, use a heavy rolling pin to roll the dough as thinly as possible.) Then fold into three, give the dough a quarter turn and feed through the pasta machine again.
Repeat this process once more then continue to pass the dough through the machine, progressively narrowing the rollers, one notch at a time, until you have a smooth sheet of pasta. On the narrowest setting, feed the sheet through twice.

Pour the mixture through a fine sieve into another bowl and whisk in the vanilla seeds. Pour the mixture into a freezer-proof container and freeze for 2-3 hours, or until set. Recipe Credit: BBC Good Food

Katy has been waiting years for Carol to take her, and now she is faced with embarking on the adventure alone. But as soon as she steps foot on the Amalfi Coast, Katy begins to feel her mother’s spirit. Buoyed by the stunning waters, beautiful cliffsides, delightful residents, and - of course delectable food, Katy feels herself coming back to life.
And then Carol appears, healthy and sun-tanned... and thirty years old. Katy doesn’t understand what is happening, or how - all she can focus on is that somehow, impossibly, she has her mother back. Over the course of one Italian summer, Katy gets to know Carol, not as her mother, but as the young woman who came before.
