Exploring new foods and flavours is what life is all about. Food is there to nourish us and for us to enjoy, we have picked out some delicious recipes perfect for Spring.

MUST TRY RECIPES THIS SPRING HANDS-ON TIME 15 MIN. OVEN TIME 30 MIN, PLUS RISING AND PROVING

Bread is always fun to make at home. This savoury Spring Onion Focaccia is a joy to make, bake and eat.

ACCIA RING FOC

SP SAVOURY

METHOD Put the warm water in a jug, add the yeast and mix briefly. Leave for 5 minutes or until frothy. Put the flours, sugar and salt in a large mixing bowl and make a well in the centre. Pour in the yeast mixture and combine with your hands until everything just comes together. Add the olive oil and mix well to form a loose dough (it should feel wet and very soft). Turn the dough out onto a work surface and knead for about 8 minutes using the ‘slap and fold’ technique (see Knowhow.) Alternatively, knead in an electric mixer with a dough hook on a medium speed for 5 minutes.

INGREDIENTS

SERVES 6

300ml warm water 7g sachet fast action dried yeast 300g strong white flour 200g ‘00’ flour 2 tbsp caster sugar ½ tbsp salt 100ml extra-virgin olive oil, plus extra for greasing and drizzling A few fresh rosemary sprigs Sea salt flakes for sprinkling

Lightly oil a large clean bowl, then add the dough and cover with lightly oiled cling film. Leave in a warm place for 1-2 hours until doubled in size (see know-how.) Heat the oven to 160°C/140°C fan/ gas 3. Put the spring onions in a small baking tray, drizzle over the balsamic vinegar, then sprinkle over the sugar and a pinch of salt. Toss to coat, then bake for 6-8 minutes until soft. Set aside.

in a warm place for at least an hour or until nearly doubled in size. Check it’s ready by pressing your finger gently on the surface – if the indent stays, it’s ready to bake.

When the dough has risen, turn it out onto a work surface and knead gently for 5 seconds to distribute the air. Carefully lift the dough into a 20cm x 30cm high-sided rectangular baking tin. Don’t stretch and pull the dough to fit the tin – instead, gently push it to the sides using your fingertips. Don’t worry if it doesn’t reach the edges – it will puff up and fill out as it proves.

Heat the oven to 220°C/ 200°C fan/gas 7. Bake the focaccia for 10-15 minutes until golden, then lower the heat to 200°C/180°C fan/ gas 6 and cook for 20 minutes more.

Arrange the spring onions on top and dot with the rosemary sprigs. Sprinkle generously with sea salt flakes and drizzle with oil. Create dimples all over the surface of the dough by pressing deep down with your fingertips, then leave it to prove

8

Take the foccacia out of the oven and drizzle with more oil, then leave it to sit in the tin for 5 minutes. Carefully remove the bread from the tin, then cut or tear it into thick slices and serve warm.

INGREDIENTS

APPETISING ASPARA GUS AND GOATS CHEESE TART

Packed full of delicious greens, fresh herbs and suitable for vegetarians, this Asparagus and Goats Cheese Tart is not to be missed.

METHOD First, make the pastry. Pulse the flour and butter in a food processor with a pinch of salt to the consistency of breadcrumbs. With the motor running, steadily add the chilled water, stopping as soon as the dough comes together. Tip out the dough, knead it a couple of times, then wrap and chill for at least 30 minutes. Remove the pastry from the fridge and let it come up to room temperature before rolling. Heat the oven to 180°C/160°C fan/gas 4. Roll out the dough to a circle about 3mm thick and a few centimetres wider than your tart tin. Line the tin with the pastry, leaving an overhang (see Make Ahead). Prick the base, then line it with baking paper and baking beans/uncooked rice. Bake for 20 minutes, then remove the beans/rice and paper and return the case to the oven for 10-12 minutes until just golden. Remove from the oven and trim the overhanging pastry. Set aside. For the filling: pod the beans and peas (you can leave any very small pods whole). Set a large frying pan over a medium heat. Add the oil, then the asparagus. Season and cook for 2 minutes, then add the spring onions, lettuce, peas and broad beans. Cook for a few minutes more until the lettuce has wilted – you’ll need to toss the veg around the pan. Add the tarragon, parsley and lovage to the pan.

SERVES 4-6

For the pastry 300g plain flour

150g unsalted butter, cubed and chilled 150ml chilled water

For the filling

Large handful each fresh broad beans in the pod, peas in the pod and sugar snap peas 1 tbsp extra-virgin olive oil 12 asparagus spears, trimmed 6 spring onions, cut into 1cm pieces 1 little gem lettuce, halved and sliced into ribbons Small handful fresh tarragon and flatleaf parsley leaves, chopped Handful fresh lovage, leaves only, roughly chopped (see swaps) 150g soft goat’s cheese 2 medium free-range eggs, plus 2 yolks 100ml whole milk 300ml double cream

Season again with plenty of salt and pepper, then spoon into the tart case. Dot the cheese over the top. Combine the whole eggs, egg yolks, milk and cream in a jug. Season and mix well, then pour the mixture over the tart filling. Carefully transfer the tart to the oven and bake for 30-35 minutes until it has a mottled golden top and the filling has puffed up slightly. Rest for at least 20-30 minutes before serving. TAKES 10 MIN TO MAKE, 1 HOUR 10 MIN TO BAKE, PLUS COOLING AND DECORATING

Fresh and flavoursome, this Lemon and Poppy Seed loaf is bound to bring your taste buds alive. 175g butter, at room temperature, plus extra for greasing 175g caster sugar Finely grated zest of 2 large lemons 3 medium eggs 250g self-raising flour 50g poppy seeds 4 heaped tbsp natural yogurt

For the crystallised rose petals 1 pale yellow rose Caster sugar, for dusting 1 egg white For the cream cheese frosting 100g soft cream cheese 1 tbsp caster sugar 2 tsp lemon juice 1 tbsp natural yogurt

MON AND LOVELY LESEED LOAF CAKE POPPY INGREDIENTS

SERVES 8

METHOD • Carefully pull the petals off the rose. Fill a bowl with sugar. Brush each petal with egg white, then bury under the sugar. Lift out, shake off the excess sugar and leave on a tray to dry for a few hours or until brittle (see video in tips). Preheat the oven to 150°c/fan130°c/gas 2. Grease and line a 19cm x 12cm x 9cm deep loaf tin with baking paper. Put the butter into a bowl and beat with an electric hand whisk until creamy. Add the sugar and beat until it is almost white. Beat in the zest and eggs, 1 at a time, and a spoonful of flour with the second and last egg to prevent curdling. Sift over the rest of the flour and fold it in with the poppy seeds and the yogurt. Spoon into the tin and bake for 1 hour 10 minutes or until a skewer inserted into the centre of the cake comes out clean. Cool for 10 minutes, then turn out and cool on a wire rack. Beat the frosting ingredients in a bowl with a wooden spoon until fluffy. Spread thickly over the cake and scatter with the crystallised petals.
