No tengo la menor duda, si me hubieran preguntado de pequeña por mi restaurante favorito, hubiera señalado un lugar con variedad de cosas fritas y postres, donde todo lo que cotidianamente es prohibido, ahí era permitido. Este no solo era mi lugar favorito, sino que era un lugar espectacular para lo que mi paladar conocía y quería a esa edad.

Viéndolo en retrospectiva, dicho restaurante no es tan glorioso; simplemente me permitía ser niña, disfrutar de lo conocido y saborear aquello que me sigue dando confort. Sin embargo, no significa que no siga amando lo frito, los postres y esos antojos prohibidos que todos tenemos; sino que ahora, al haber ampliado y educado mi paladar, sé con que puedo comparar.

Al contar esto, confirmo que creo locamente en la idea que la industria culinaria guatemalteca esta en la etapa de “niña”. ¿Porqué? Porque desde hace ya

algún tiempo, cada vez es más normal contar con más variedad y talento creativo, que tiene y viene con las ganas necesarias para ampliar este espectáculo culinario en el país.

Al escribir esto puedo causar un poco de revuelo, porque no todos pueden estar de acuerdo conmigo. Pero lo que más me gustaría trasmitir con esta gran variedad y cantidad significativamente mayor de páginas en esta edición, es todo lo que los comensales y los que pertenecemos al medio hemos logrado en Guatemala y en esta industria. Al final, la cocina es el escenario del cocinero y el cocinero no es nada sin la complicidad del cliente; pero aún más importante, en este camino todos vamos creciendo juntos.

I have no doubt that if you had asked me when I was younger for my favorite restaurant, I would have mentioned one that served a variety of fried things and lots of desserts; a place that allowed everything that wasn’t allowed on a daily basis. This was not only my favorite place, it was a spectacular place to what my palate knew and loved at that age.

In retrospective, such a restaurant wasn’t that glorious after all, it just allowed me to be a kid, to enjoy and savor everything that I liked then and that still gives me comfort now.

However, that doesn’t mean that I stopped loving fried food, desserts, and all those banned cravings we all have; now, having expanded and educated my palate, I can actually compare and choose a real favorite.

By telling you this, I confirm that I have this crazy idea that the Guatemalan culinary industry is in the “kid” stage. Why? Because for

a while now, it is becoming more usual to have a wider variety and creative talent that comes with the necessary desire to extend the culinary stage in the country.

This idea can cause a bit of a stir because not everyone agrees with me. But what I would like to convey the most, with the wide range and significantly more pages in this issue, is what customers and all of us who work in this field have caused in Guatemala and especially in the industry. In the end, the kitchen is the stage of the cook and the cook is nothing without the complicity of the customer; but more importantly, in this journey we all grow together.

We still have a lot to do, and so much to discover, of the culinary richness offered by this country and the world.

Hay lugares en los que se vive una experiencia desde el momento que se entra. Se comienza a vivir una aventura, nada deja de ser interesante, te gustaría fotografiar todo y volver a probar todo. No quieres que la experiencia termine, porque el objetivo del lugar es que lo pases increíble.

Desde la primera vez que visité “Las Tres Marías” tuve la sensación que estaba en un parque de atracciones donde cada detalle había sido escogido cuidadosamente; y donde todo el personal está pendiente de ti para que lo pases estupendamente.

Nuestro país está en un crecimiento evidente de la industria gastronómica. Pero el crecimiento, al menos para Guatemala, no solo se da con la apertura de nuevos restaurantes, sino también con el establecimiento de nuevos tipos de cocina.

Desde hace aproximadamente cinco años, se estableció el primer auténtico restaurante Hindú: Abbasi. Su fundador, Tanveer Abbasi, un paquistaní que desde hace 16 años comercializa alfombras persas y arte del medio y lejano oriente, nos deja saber que parte del deseo de abrir un restaurante Hindú en Guatemala era porque extrañaba los platillos de su tierra y de su niñez. “Uno anhela por lo que come en su infancia; los guatemaltecos afuera anhelan su frijoles y tamales, yo anhelaba el malai gosht o el palak paneer de mi madre…”.

Al momento de preguntarles cual era su platillo favorito, nos respondieron de manera muy particular “… la comida Hindú no es un platillo en especial, más bien es ordenar una variedad de platillos para probar y compartir…”

Por ello, la autenticidad en los sabores, el balance de las especies y la frescura de los ingredientes son fundamentales para considerar a un restaurante como un auténtico restaurante Hindú.

El ambiente de Abassi es también único, pues todo el mobiliario del restaurante se une al tema de la cultura Hindú. Las sillas, mesas y decoraciones son antigüedades de la India, Indonesia y Persia.

La India es tan grande que dependiendo de la región en que se encuentre, los sabores e ingrendientes varían mucho.

Abbasi se especializa en comida del norte de la India, en especial la cocina de Delhi.

Sin lugar a dudas, Abbasi es de esos restaurantes únicos en la ciudad donde el ambiente y los exóticos sabores proveen de una verdadera experiencia gastronómica.

Our country is on an evident expansion of the gastronomic industry. But expansion, at least for Guatemala, is not only through the opening of more restaurants but also by the establishment of new types of cuisine.

Abbasi´s chef, tells us that “… the Indian cuisine varies depending on the region; we serve mainly punjab dishes, but we try to have some dishes from other regions. We offer a Vindaloo (a portuguese-influenced dish of pork and spices), Chicken Tikka Masala(consider England’s national dish for its broad acceptance), Palak Paneer (spinach and Indian cheese), samosas (deep fried veggies accompanied with chutney). Indian cuisine is mainly vegetarian, but we also offer non vegetarian dishes…”

Aproximately five years ago, the first authentic Indian restaurant opened to the public: Abassi. His founder, Tanveer Abbasi, a pakistani that for the last 16 years has specialized in selling rugs, antiques and art for the Middle and Far East, tells us that part of the reason he established an Indian restaurant in Guatemala was because he missed the food of his land and childhood.

“You miss the food you ate as a child; just as Guatemalans abroad miss their frijoles and tamales, I missed my mom´s malai gosht or her palak paneer…”

El chef de Abbasi, nos comenta que “… la cocina Hindú varía según la región; nosotros servimos principalmente comida punjab, pero intentamos tener platillos de otras regiones.

Tenemos un Vindaloo (platillo a base de cerdo y especies de influencia portuguesa), Chicken Tikka Masala (platillo tan popular en Inglaterra que es considerado un platillo nacional), Palak Paneer (espinaca con un queso Hindú), samosas (fritura rellena de verduras acompañadas de chutney). La cocina Hindú es principalmente vegetariana, pero también ofrecemos platos no vegetarianos…”

When we asked them about their favorite dish, their answer was quite unique “… Indian cuisine is not about a particular dish, it’s about trying and sharing different dishes…”

That is why the authenticity of the flavors, the balance of the spices and the freshness of the ingredients are fundamental to consider a restaurant an authentic Indian restaurant.

The decor of the restaurant is also one of a kind because it blends to create an environment where you actually feel in India. The chairs, tables and decorations are all antiques from India, Indonesia and Persia.

India is such a vast country that the flavors and ingredients vary significantly depending on the region. Abbasi specializes in the cuisine of northern India, especially the cuisine of Delhi.

No doubt, Abbasi is a unique restaurant in Guatemala City where the atmosphere and the exotic flavors make a true gastronomic experience.

Pasta Pescatore

Pero en esta ocasión no llegamos a Pecorino a retar a Christian o a platicar de su vida; sino a degustar sus platillos.

Para ello escogimos 3 diferentes entradas. Iniciamos con unos Funghi Ripeni, unos champiñones rellenos de queso provolone, parmesano y especies; estos venían sobre una salsa roja de tomates y chiles pimientos. Seguimos con la Bruschetta Pecorino, la cual es siempre una fresca opción.

Luego ordenamos un Carpaccio di Atún, que fue mi platillo favorito, pues las finas lascas del atún se deshacían en mi boca y combinado con un buen aceite de oliva, era simplemente irresistible. Es un plato que a pesar de su sencillez, no pueden dejar de probar.

Entrar a Pecorino y ver las mesas con grandes girasoles y sombrillas amarillas sobres las mesas de vidrio me recordó la portada de la película “Bajo el Sol de la Toscana”. Y es que, en efecto, Pecorino es un restaurante italiano cuyo chef fue nombrado en 2012 como el Chef del Año por la Gremial de Restaurantes.

When I entered Pecorino and saw sunflowers in every table and yellow umbrellas over them, it reminded me of the poster of the film “Under the Tuscan Sun”. And indeed, this is because Pecorino is an Italian restaurant, whose chef was named in 2012 Chef of the Year by the Restaurants Association.

However, this time we weren’t at Pecorino to chat with Cristian, but to try out his dishes. For starters, we ordered three different entrees. We began with the Funghi Ripeni, which are mushrooms filled with provolone cheese, Parmesan and herbs. They came with a red sauce made out of tomatoes and peppers. We continued with the Bruschetta Pecorino, which is always a refreshing option. The last entree was a Carpaccio di Atún, which was my favorite; the thin slices of tuna melted in my mouth, and combined with a nice olive oil, it tasted great. Even though this is a simple dish, you have to try it.

As for the main course we wanted to try some typical Italian dishes. The first one was the Gnocchi’s in Gorgonzola cheese sauce; the potato flavor of the gnocchi’s combined very well with the intensity of the cheese. We

Además ordenamos un Ossobuco, el cual es un platillo de carne hecho a base de la pantorrilla de la vaca o ternera. Su preparación es todo un arte pues la carne se deja cocinar por más de 8 horas, de manera que cuando es servido, la carne se desmenuza fácilmente. Y en efecto fue lo esperado, el Ossobuco fue servido con una salsa pomodoro y rissotto.

We also tried the 16oz Ossobuco, a meat dish made out of the shank of the calf. Its preparation is a true art, since it has to be cooked for more than 8 hours; when served, the meat is so soft you can take it apart with your fork.

And indeed, it was as expected, the ossobuco was served with a pomodoro sauce and risotto.

After all that food, we still had to have dessert. For those of you who have read my previous reviews, you probably know by now that I have a soft spot for chocolate desserts, especially chocolate mousse, and this time wasn’t the exception. The chocolate mousse was made with Frangelico and it seemed to have little bits of nuts inside. This mousse has been one of the most dense I’ve had, and is definitively a dessert to

share, although the exquisite flavor might make this hard to do.

Next, we had to go with another of my favorites: fried mojarra and garlic shrimp. Mojarras are available in several different ways, but fried has always been my favorite. What stands out it’s the combination of seasonings and the perfect texture of the frying. They serve it with a side of spinach au gratin and green salad. Everything was excellent!

This was the first time I had the shrimp here, honestly. The way they make garlic shrimp is awesome and very special: the shrimps are seasoned in garlic first, then they are cooked in a skillet for a while but finished in a hot clay pot with toasted garlic and chives. Too good to be true! And what’s best 34

Besides being an icon in Guatemala because of their food and the time they have been around, it is a place where service and quality of the ingredients have always been the most important things. “Sama” a la parrilla

Los buenos secretos son los que siempre quedan bien guardados, pero al referirse a un restaurante, creo que tal cosa como un buen secreto simplemente no debería existir. Por eso me propuse revelar uno de los grandes secretos de la cocina japonesa en la ciudad. “Ran”, que significa orquídea en japonés, tiene uno de los ambientes más tradicionales que se pueden encontrar en la ciudad; nos hacen sentir verdaderamente en Japón. Al ser un lugar al que solamente se puede

llegar con reservación, la atención y el servicio que ofrecen es prácticamente personalizado.

Good secrets are those that are always kept safe, but when it comes to restaurants such thing as keeping it secret is almost impossible.

So I decided to reveal one of the great secrets of Japanese cuisine in the city. “Ran”, which means orchid in Japanese, has one of the most traditional atmospheres in the city; it makes us feel we’re in Japan. Being a place that can only be visited with a reservation, the attention and service they offer is practically personalized.

To start, we had an “amuse bouche”, a super traditional boiled spinach with sesame sauce.

Delicious! To tell you the truth, we came with an empty stomach and a wide-open mind, so we asked the chef for recommendations. He explained some of the flavors and recommended what he believed our palate would allow us to try, as well as some unusual things to add a little emotion to our lunch.

Para empezar, nos sirvieron un “amuse bouche”, el súper tradicional de espinaca cocida con salsa de ajonjolí. ¡Delicioso!

La verdad, llegamos con el estómago vacío y la mente totalmente abierta, así que pedimos recomendaciones al chef. Nos explicó varios de los sabores, nos recomendó lo que consideró que nuestro paladar podía probar, y algunas

cosas fuera de lo común para ponerle emoción al almuerzo.

Teníamos que probar algún rollo, y a decir verdad esperaba una gran variedad, pero para mi sorpresa solo tienen dos. El conocido “California roll” con cangrejo, aguacate y pepino, por un lado; y el vegetariano con verduras cocidas y un poco de vinagre, que nos comentaron es de lo más tradicional en Japón. ¡Ambos súper sencillos pero espectaculares!

We had to try some rolls and I expected a wide variety, but to my surprise they only serve two. On one hand, the already known “California roll” with crab, avocado and cucumber; and the vegetarian roll with cooked vegetables with a little vinegar, which we were told, is the most traditional offered in Japan. Both super simple but spectacular!

Sashimi Variado

Siendo amante del sashimi, la combinación a elección del chef fue impresionante y la frescura del pescado increíble. Al ser también amante de lo frito, no podía dejar de pedir los camarones con verduras tempura, y “Sama” a la parrilla, el plato recomendado desde el principio por el chef por ser el más fresco. Del tempura no me queda nada más que decir que tienen que probarlo, excelente sabor y textura.

Con el “Sama” estaba un poco nerviosa pues no encontraba la traducción a

In several sites I found that it is related to the Mahi-Mahi, but the texture and flavor makes me think it’s related to anchovies or cod. But regardless of its genealogical tree, its taste is super special and definitely acquired, but I loved it (there are always anchovies on my pizza). Definitely grilling it helps soften the strong taste and mostly the texture, which is part of the western shock to Asian food.

The atmosphere of the place is so tranquil that, between the delicious food on the table, the green tea and the sound of the water from the Koi’s river, time goes by really quickly. I really didn’t want to leave this isolated secret; now all I have left is to hear your experiences in Guatemala’s own island of Japan in the city.

La atmósfera del lugar es tan tranquila que, entre deliciosa comida en la mesa, el té verde y el sonido del agua del rio “Koi” que recorre el lugar, el tiempo pasa rápidamente. No quería irme de tan aislado secreto; ahora no me queda más que oír sus experiencias en nuestra propia isla de Japón en Guatemala.

Hay una bebida alcohólica que ha formado parte de la historia de la humanidad desde sus inicios, esta esa bebida es la cerveza. En todos los países en todas las épocas han desarrollado su propia cerveza, al punto que se ha convertido no solo en una bebida más, sino parte de la cultura de algunos países y además de ser considerado un arte que se expresa a través de su elaboración y degustación.

Europa es el continente en que se considera que el consumo de cerveza está principalmente arraigado, países como Bélgica y Alemania tienen más de 5,000 variedades de cervezas; algunas cuyos orígenes se remontan del siglo XIII. Y ahora esta tradición ha llegado a Guatemala.

Desde Noviembre del año 2012 Sensi Di Vini, empresa dedicada a la importación de vinos, apertura el primer Beer Garden, ubicado en la 6ª avenida 14-35 de la zona 10. El propósito del Beer Garden, nos comentan, “es muy similar al que se acostumbra en Europa, donde en un lugar al aire libre puedes degustar de una variedad extensa de cervezas acompañadas de una buena comida, además parte del encanto del lugar es ver a sus meseros vestidos en los típicos trajes Bávaros” Actualmente Sensi Di Vini Beer Garden es el único lugar que cuenta con una oferta de más de 60 tipos de cerveza, “tenemos cervezas de Alemania, Bélgica, Cuba, México, There’s an alcoholic beverage that has been part of human kind since its beginings, that beverage is beer. Almost every country has developed its own type of beer.

And through that time, beer has become more than just a drink, its production and consumption is now considered an art.

It´s in Europe were the consumption of beer is more developed. Countries like Belgium and Germany have over 5,000 brands of beer; some of them can trace their beginings all the way to the XIII century. And now all this tradition has arrived to Guatemala.

“Queremos crear una cultura cervecera en Guatemala, por ello, a finales del junio estaremos inaugurando la primera Escuela de la Cerveza; en ella se les explicará el origen de cada cerveza, los diferentes tipos de cerveza que existen, porque cada tipo cerveza debe servirse en un vaso determinado y con qué comida se marida mejor, etc.”

La comida es parte importante de este lugar, por ello su Chef, de origen uruguayo, se especializa en ofrecer variedad de platillos especialmente elaborados con el concepto de la Cultura Cervecera, como pizza, hamburguesas, alitas y tablas de quesos y jamones importados. “La calidad de los productos es de suma importancia para nosotros, por ello solo utilizamos los mejores ingredientes importados; … además todo es elaborado por nosotros de forma artesanal desde cero.”

“We want to develop the beer culture in Guatemala. That’s why we´ll be opening the first Beer School by the end of June; here we will explain the origins of beer, the different types there are, why it is served in certain glasses, what food combines the best, etc.”

Food is an important part of the place. That is why its uruguayan chef especializes in offering plates that complements the beer culture of the place, like pizzas, burgers, chicken wings, imported hams and cheeses, etc. “The quality of the products is very important to us, that is why we only use the best imported ingredients; … besides everything that we cook is made from scratch.”

Sensi Di Vini Beer Garden plans to open two more locations in Antigua and Zone 11.

Todo lo que rodea a esta área de la ciudad permanece en una época distinta; se conserva como uno de los ejemplos de un período y arquitectura de esplendor. Al caminar por ahí es inevitable imaginar los días en que la “crème de la crème” guatemalteca reinaba sobre la “Sexta”. La gente que recorre estas calles suele ser muy amable y no es extraño ver a familias “domingueando”. Personalmente, lo más extraño para mí fue la sensación de no sentirme en el país, pero al mismo tiempo estar rodeada de memorias.

Definitivamente el Centro tiene parte de la gastronomía más rica del país, culturalmente e históricamente hablando. A los típicos lugares que comenzaron con comida típica se le han sumado, a través de los años, cientos de influencias no solamente de Europa y Asia, sin también del Caribe y África, y otras partes del mundo.

Estas calles son hogar del restaurante de comida China más antiguo de la ciudad, de las famosas Morenitas, de las exóticas mezclas de la típica panadería Palestina y la cocina Garífuna, y de los helados de los más peculiares sabores. Además, el Centro es el guardián de lo que queda de nuestra cocina maya y también es escenario de muchas fusiones y talento joven en el país.

Cualquiera que quiera experimentar su sentido del gusto al máximo, debe anotar esta visita como inmediata en su lista de lugares a visitar.

Everything about this area of the city remains in a different time; it is preserved as one of the examples of a period and architecture of splendor.

Walking around “la Sexta” is inevitable to imagine the days when the Guatemalan “crème de la crème” reigned over these streets. People walking around the area are usually very friendly and it is not unusual to see families having Sunday fun days. Personally, the strangest feeling for me was that of not feeling at home, but at the same time being surrounded by all type of memories.

These streets are home to the oldest Chinese food restaurant in the city, to the famous “Morenita” ice cream, to the exotic mixtures of typical Palestine pastries and Garifuna’s cuisine, and to the most peculiar ice cream flavors.

Additionally, “El Centro” is the guardian of what remains of our Mayan heritage, and it’s also the scenario of many fusions and talents in the country.

Definitely “el Centro” houses part of the richer cuisine of the country, culturally and historically speaking. Over the years, the typical places that began with Guatemalan street food have gained hundreds of influences, not only from Europe and Asia, but also from the Caribbean and Africa, and from all over the world.
