Ginevra Antonini is a young and lovely female chef who, four years ago, started her own in-home catering business, Mood, for private dinner parties and corporate events

When did you first realize that you wanted to be a chef?

At a very young age. I had a nanny from Fiuggi who kept us children busy cooking. And it was love from that moment forward. At the age of eight, I made my first shortcrust pastry from scratch. After high school, I began training in several restaurants in Rome and London.

What does food mean to you?

Food is love and my goal is that of making people fall in love with what they are eating, by taking in every aroma, every nuance, and offering them a pleasant experience for the palate and heart.

Why in-home catering service?

I wish to bring good cuisine to everybody’s home. I enjoy the idea of changing location every time I cook and being a sort of traveling chef. I bring my mood everywhere, that is why I called my business “Mood”.

Why should someone choose Mood?

Those who plan an event with Mood, just have to choose the menu and then relax. We design the event to the customer’s requirements and suggestions, we choose the basic ingredients and take care of the setting and flower arrangements. We try to find the right mood to suit all tastes.

What is your signature dish?

I enjoy preparing fish-based fresh egg pasta dishes. I love rolling out the dough, making ravioli, but I also enjoy preparing finger food as appetizer.

Quando hai capito che avresti voluto diventare una chef?

Da piccolissima, avevo una tata di Fiuggi che per intrattenerci ci faceva cucinare ed è subito stato amore. A otto anni ho impastato la mia prima pasta frolla. Finito il liceo germanico che ho frequentato dalle elementari al liceo, ho iniziato la mia gavetta in vari ristoranti di Roma e Londra.

Cosa rappresenta per te il cibo?

Il cibo è amore, e il mio intento è fare innamorare le persone di ciò che mangiano, far assaporare ogni aroma, ogni sfumatura, con piacere del palato e del cuore.

Perché a domicilio?

Volevo portare la buona cucina a casa di tutti. Mi piace l’idea di cambiare location ogni volta che cucino e di essere itinerante. Portare il mio mood dappertutto, da qui il nome del catering.

Perchè scegliere Mood?

Chi organizza un evento con Mood, deve solo concordare con noi il menù e rilassarsi. Noi progetteremo l’evento secondo le esigenze e le indicazioni del cliente, sceglieremo le migliori materie prime e ci occuperemo dell’allestimento e dei fiori. Cerchiamo di trovare il giusto mood che accontenta tutti.

Qual è il tuo piatto forte?

Mi piace cucinare i primi di pesce con la pasta fatta all’uovo. Adoro stendere la pasta, fare i ravioli e non nego mi diverte molto fare i finger come antipasto.

When did you start working as an actor?

I have always dreamt of working in front of a camera. I first studied in Naples, at the Drama Academy, and then in 2005 I moved to Rome to be closer to what I love doing. I have worked my way up: plays, comedies, mime, musicals. I also lend my voice for cartoon characters.

I am the Italian voice for characters in The Simpsons, Griffin Family and Postman Pat. What do you enjoy best about being an actor?

I love the building of a good working relationship with the film director. I enjoy being a good executor of the film director’s wishes. I enjoy feeling the mutual trust between filmmaker and actor that makes you understand exactly what he wants you to do and do it right.

Being such a hard worker, do you have time for other passions?

I have a lot of dear friends with whom I spend my free time and, in order to combine business with pleasure, I enjoy going to the theatre or movies with them. I stay fit by dancing rather than going to the gym.

What part of Rome do you best identify with?

San Giovanni, the neighborhood I lived in when I moved to Rome, and Trastevere, which is where I meet with my friends. I’m not a night-club person, I love staying outdoors. I use car sharing to move comfortably around the city, so I walk a lot and I love downtown Rome: Campo de’ fiori, Lungotevere and the Colosseum.

Gennaro Iaccarino, 34 years old, was born in Sorrento and has been living in Rome for ten years. In the past year, he has appeared in five roles on the big and small screen, including the serial for RAI television called Baciato dal Sole (Kissed by the Sun) 22 Roma | the Eternal City

Quando hai iniziato a fare questo lavoro?

Sognavo di lavorare davanti alla telecamera. Dapprima ho studiato a Napoli, all’Accademia di arte drammatica e poi nel 2005 mi sono trasferito a Roma per essere più vicino a quello che amo fare. Ho fatto molta gavetta: prosa, commedia, mimo e musical. Inoltre presto la voce per i cartoni animati. Sono la voce dei personaggi italiani di varie serie tra cui I Simpson, I Griffin e il Postino Pat. Cosa ti piace di più del lavoro come attore?

Amo la sinergia che si crea con il regista. Mi piace essere un buon esecutore e interpretare la sua volontà. Mi piace sentire quel feeling che si crea tra regista e attore che permette di capire la sua indicazione e farla propria.

Con tutte queste cose che fai, hai del tempo libero, da dedicare ad altre passioni?

Ho tanti cari amici con cui passo il mio tempo libero e per unire l’utile al dilettevole, con loro, mi piace andare al cinema e al teatro. Invece della palestra, preferisco fare un po’ di danza.

Qual è la zona di Roma in cui ti rispecchi di più?

Amo San Giovanni, che è la zona dove ho vissuto appena mi sono trasferito a Roma e Trastevere che è il nostro punto d’incontro prefererito. Non sono un discotecaro, preferisco vivere i luoghi della città all’aperto. Visto che mi muovo con il car sharing, per trovare la macchina mi muovo spesso a piedi e adoro tutto il centro: Campo de’ fiori, Lungotevere e Colosseo.

How did you develop the passion for photography and art?

I love taking pictures of nature, especially when I travel abroad, far from civilization. I enjoy going on spiritual journeys and becoming one and the same with the surrounding environment.

I love infusing these objects with life and making my fantasies come alive. In New York, where I lived for ten years, I used to get old pictures and transform them into something matching new concepts I had inside my head.

What is your source of inspiration?

I use naturalistic patterns (bark, animal skins and tracks) as my initial inspiration for my pictorial creations. I am attracted by objects with different surfaces, shapes and materials and I go looking for the traces of mankind on wood, stone and metal in order to decontextualize them. Through the combination of photographs, painting and pieces of transparent paper, I recreate something that goes beyond mere geometry.

What works best represent you?

The works that best represent me right now are zebras. I invented this new collage technique with paper which allows me to recreate zebra stripes exactly the way they are in nature. All different from one another and unique. Just like in the real world, my zebra stripes vary according to the visual angle from which they are viewed, creating depth, mixture and sudden clearness.

Come è nata questa passione?

Amo fare fotografie della natura, specialmente quando faccio viaggi all’estero, lontano dalle forme di civilizzazione. Mi piace guardarmi dentro e diventare un tutt’uno con quello che mi circonda. Amo riuscire a dare una vita a questi oggetti e farli incontrare con le mie fantasie cerebrali. A New York, dove ho vissuto per quasi dieci anni prendevo le mie vecchie foto e le trasformavo dando vita a nuovi concetti che erano dentro la mia testa.

Qual è la tua fonte d’ispirazione?

Uso i pattern naturalistici (cortecce, pelli di animali e tracce) come ispirazione iniziale per le mie elaborazioni pittoriche.

Sono attratta da oggetti con diverse superfici, forme e materiali e cerco i segni dell’uomo su pezzi di legno, pietra e metallo per decontestualizzarli. Attraverso la combinazione di fotografie, pittura e pezzi di carta trasparente ricreo una mia riflessione che va oltre la geometria.

Quali sono le opere che più ti rappresentano?

Il lavoro che più mi rappresenta in questo momento sono le zebre. Ho ideato questa nuova tecnica di collage con carte che mi permette di relizzare le strisce delle zebre proprio come sono nella realtà. Tutte differenti e uniche le une dalle altre. Come nella realtà, le linee delle mie zebre cambiano a seconda dell’angolo di visuale in cui le guardiamo, creando profondità, mescolanze e improvvise chiarezze.

When did you begin working in the fashion business?

We started the shop in Piazza Pasquino in 1993. We started off as a multi-label shop and then we began producing our own collection under the brand name SBU, the first and only in Rome and all over the world.

What is your strength?

We have worked hard on the brand’s global identity and on product quality. Our products are made 15% in Japan and the rest in Italy, in particular, in the Triveneto area, the home of Italy’s best textile companies. Our latest development is the e-commerce solution and we can’t wait for our online adventure to begin around Christmas time.

What is your target market?

A month ago, we decided to stop carrying on the women’s line to focus on menswear. We work a lot with the show business and motionpicture world.

The one SBU garment that every man should have?

Jeans and T-shirts are our signature pieces and the ones most popular with our customers. Twenty-three years ago, I was a very young man, but over the years I have felt the need to provide our customers with a total look: from socks to underwear, from tailor-made suits to shoes.

Why Piazza Pasquino?

We were looking for a shop downtown, but not in the traditional designer boutique area. We were favorably struck by this more “alternative” area, close to Via del Governo Vecchio, where there were only second-hand and old coffee shops. Now it is filled with elegant and high-end stores.

Quando avete iniziato questo percorso nella moda?

Il negozio a piazza Pasquino lo abbiamo dal 1993. Siamo nati come negozio multilabel e negli anni abbiamo iniziato a produrre la nostra collezione, fino a far diventare Sbu il nostro monomarca: unico a Roma e nel mondo.

Qual è il vostro punto di forza?

Abbiamo lavorato molto nella brandizzazione del marchio e nella qualità del prodotto che è realizzato per il 15% in Giappone e per il resto in Italia e precisamente nella zona del Triveneto, dove ci sono le migliori aziende tessili italiane. L’ultima novità che abbiamo sviluppato è l’e-commerce e non vediamo l’ora di iniziare questa nuova avventura on line a Natale.

Chi è il vostro acquirente maggiore?

Da un mese abbiamo deciso di togliere l’abbigliamento femminile per concentrarci solo sull’uomo. Lavoriamo molto con il mondo dello spettacolo e del cinema.

Il vostro capo che ogni uomo dovrebbe avere?

I jeans e le T-shirt sono il nostro cavallo di battaglia e sono stati anche i prodotti per i quali i clienti si sono affezionati a noi. Ventitre anni fa ero poco più che ventenne poi con gli anni abbiamo maturato l’esigenza di offrire alla nostra clientela un vero total look: dal calzino al boxer, dal casual al capo sartoriale fino alle scarpe.

OCTOBER From the 24th of October to the 31st of January, Rome will celebrate the 15th anniversary of Balthus’ death with Balthus.

The Retrospective, a great monographic exhibition held in two different exhibition areas:the painter’s most famous works at the Scuderie del Quirinale, while the masterpieces completed during the artist’s stay in Rome at Villa Medici, where visitors will discover Balthus methods and creative process: the art practice in a studio, the use of models, the techniques and the use of photography.

While the Romaeuropa Festival celebrates its 30th anniversary with a sensational program dedicated to the best of contemmporary dance, music and theatre (see pg.134-135), this Autumn the theatres in Rome are ready for the start of their new seasons, offering a wide-ranging spectrum of production, with new performances and unmissable events (see pg. 128-131). They are also starting with the new seasons of symphony concerts, while massive queues are expectd to form at the box office for lyrical performances. “The fountains are enough to justify a trip to Rome” declared the great English poet Shelley during his Roman sojourn, fascinated by the beauty of the eternal city’s fountains. Indeed, no other city in the world can compare. Wherever one looks— in elegant courtyards, the grounds of ancient and noble villas, along the streets of Rome or the Vatican, isolated and solitary, in small urban gardens and piazzas— Rome’s fountains represent a fundamental element of this city, as well an immense artistic and cultural heritage.

Today Rome is home to some two thousand fountains, some of which embody in the collective imagination not only a symbol of the city of Rome but all of Italy. Describing all of them is impossible; here we will present a selection, in an itinerary that traces Rome’s architectural grandeur.

In the centre of Piazza Farnese are two magnificent fountains: essentially two large granite tubs that originated from the ancient Roman Baths of Caracalla. The first was installed by Paul III around the mid-sixteenth century. Sources from that time note that this tub had been used by nobles and city authorities such as the honorary tribune to watch the bullfights held in the piazza. The second basin was installed under Cardinal Alessandro Farnese, forty years after the first. Both tubs were originally empty of water when installed, and it was only after the significant restoration works carried out on the Roman aqueduct acqua Traiana that they were transformed into fountains, by Girolamo Rainaldi in 1626. The tubs are placed within large Travertine basins, with a richly-decorated, amphora-shaped balustrade that holds a small fountain topped by the heraldic lily of the Farnese house, to decorate the space facing this palace, the richest and most magnificent of seventeenth-century Rome.

In Piazza Barberini we come to the Fontana del Tritone (Triton Fountain) by Gian “Bastano le fontane per giustificare un viaggio a Roma”, cosi il grande poeta inglese Shelley si pronuncia durante il suo soggiorno romano, affascinato dalla bellezza delle fontane della città eterna.

Effettivamente non c’è nessun’altra città al mondo che possa essere paragonata a essa, ovunque si osservi: all’interno di eleganti cortili, nei parchi di antiche e nobili ville, nelle strade della città o del vaticano, isolate e solitarie, in piccoli parchi urbani e nelle piazze, le fontane costituiscono un elemento caratteristico di Roma oltre che un immenso patrimonio artistico e culturale.

Oggi nel tessuto urbano si contano circa duemila fontane e alcune di esse rappresentano nell’immaginario collettivo non solo il simbolo della città ma anche dell’Italia. Tentare di descriverle tutte è impossibile, ne presenteremo solo alcune, tracciando un itinerario tra le immense bellezze architettoniche della città.

Partiamo da Piazza Farnese, dove al centro sorgono due magnifiche fontane: sono essenzialmente due grandi vasche di granito di epoca romana provenienti dalle antiche Terme di Caracalla.

La prima delle due è stata posta da Paolo III intorno alla metà del Cinquecento. Da alcune stampe del tempo si nota che la vasca veniva anche utilizzata dai nobili e dalle autorità come tribuna d’onore per assistere agli spettacoli di corrida che venivano organizzati nella piazza. La seconda vasca fu fatta sistemare dal cardinale Alessandro Farnese, quaranta anni dopo la precedente. Entrambe le vasche, prive d’acqua, furono sistemate dove si trovano attualmente e, solo dopo gli imponenti lavori di ripristino dell’antico acquedotto Traiano, furono trasformate da Girolamo Rainaldi, nel 1626, in fontane. Lorenzo Bernini, commissioned by Pope Urban VIII during the refurbishment of the palace and piazza, built between 1642 and 1643. Made entirely from Travertine, this fountain features a triton kneeling on a large shell and blowing into another shell, out of which water flows, while propped up by four dolphins; the dolphins in turn are portrayed with open mouths at water level, their bodies raised upwards, and the papal coat of arms with the heraldic Barberini bees in between.

At the foot of one of the world’s most celebrated staircases, the Spanish Steps, is the Fontana della Barcaccia (Fountain of the Ugly Boat), built in 1626 by Pietro Bernini and commissioned by Urban VIII. Completed in 1629, the fountain originally stood in the piazza prior to the construction of the famous staircase. Young Gian Lorenzo also participated in its construction. Given the low water pressure in the area, Bernini designed a fountain in the shape of a boat, partially sunken into an oval tub that was placed under street level. At the centre of the boat, a short balustrade supports a small basin from which water spurts. The name “barcaccia” derives from the boats used to transport casks of wine in ancient Rome, which were very similar to the fountain with their noticeably low sides needed to facilitate the unloading and loading of casks.

In the small piazza Mattei is an unusual and gracious fountain called “Delle Tartarughe” (“The Turtles”), built by Giacomo della Porta in 1581. Although not one of the city’s most monumental, this fountain is worth highlighting not only for the fineness of the piece but also for the popular legend associated with it: Duke Mattei, whose palazzo is right off this piazza, meaning to impress his future father-in-law (who did not want to agree to the duke’s marriage to his daughter), had this fountain constructed in only one night. He invited his future bride and her father to a palazzo più ricco e sfarzoso della Roma seicentesca.

In Piazza Barberini sorge la Fontana del Tritone.

Opera di Gian Lorenzo Bernini, fu commissionata dal papa Urbano VIII Barberini, nell›ambito dei lavori di sistemazione del palazzo e della piazza antistante e venne realizzata tra il 1642 e il 1643. Costruita interamente in travertino, rappresenta un tritone inginocchiato su una grande conchiglia sorretta da quattro delfini, nell›atto di soffiare in una conchiglia, da cui zampilla l›acqua. I delfini hanno le bocche aperte a pelo d’acqua ed i corpi sollevati, tra essi appaiono le chiavi e lo stemma pontificio, con le api araldiche dei Barberini. Ai piedi di una delle più celebri scalinate al mondo, Trinità dei Monti, sorge la Fontana della Barcaccia, costruita nel 1626, da Pietro Bernini su commissione di Urbano VIII. Quando la fontana fu ultimata, nel 1629, essa sorgeva sulla piazza ancora priva della scalinata. A lavori partecipò anche il giovane Gian Lorenzo. A causa della scarsa pressione dell’acqua della zona, il Bernini ideò una fontana a forma di barca semisommersa in una vasca ovale posta al di sotto del piano stradale. Al centro della barca un corto balaustro sorregge una piccola vasca dalla quale fuoriesce uno zampillo d’acqua. Il nome «barcaccia» deriverebbe da una imbarcazione che, nell’antica Roma, veniva usata per il trasporto fluviale di botti di vino, e che, molto simile alla fontana, aveva appunto le fiancate particolarmente basse per facilitare l’imbarco e lo sbarco delle botti stesse.

Nella piccola piazza Mattei sorge un’insolita e raffinata fontana detta “Delle Tartarughe”, costruita da Giacomo della Porta nel 1581. Nonostante non sia tra le più monumentali della città, ci piace segnalarla oltre che per raffinatezza dell’opera, anche per la leggenda popolare a essa legata. Si narra, infatti, che il duca Mattei, il cui palazzo si affacciava sulla piazza, per stupire il futuro suocero (che non voleva concedergli la figlia in moglie), abbia fatto realizzare la fontana in una sola notte, Roma | the Eternal City 65

window in the palace to admire the work, and then, as to prevent anyone else from admiring the view onto the fountain, had the window bricked up, as it still is today.

Our voyage through the fountains of Rome concludes with one of the most impressive and famous: the Fontana dei Quattro Fiumi (Fountain of the Four Rivers).

Designed and modelled by Gian Lorenzo Bernini between 1648 and 1651, and commissioned by Pope Innocent X, this fountain is located in the centre of Piazza Navona and supports an Egyptian obelisk that originates from Circus Maximus. Both an architectural and sculpture work, the fountain is an example of true Baroque artifice, in its seeming to support the obelisk out of nothing. Four colossal figures represent the great rivers of the Nile, the Ganges, the Danube, and the Rio della Plata. Crowned by the dove of the Holy Spirit – the emblem of Pope Innocent X – it has been interpreted as symbolic of the Church’s triumph in the four corresponding parts of the world. A popular legend speaks of the rivalry between Bernini and Borromini, holding that the raised arm of the statue of the Rio della Plata is meant to protect against the possible collapse of the bell tower or the dome of the church of Sant›Agnese in Agone (by Borromini); and that the statue of the Nile covers its face in order to not see it. In reality this is a historical anachronism, since the fountain was completed in 1651, while the Sant›Agnese in Agone church was begun by Borromini in 1652. It is also said that construction costs were so great that the pope made use of the bread tax to finance it, igniting the ire of the Roman people. Anecdotes and popular traditions aside, the Bernini fountain so impressed the pope that it was to become the first in a series of even more impressive works. Sorge al centro di Piazza Navona e sorregge un obelisco egizio proveniente dal Circo di Massenzio. Opera di architettura, oltre che di scultura, la fontana mette in mostra un vero e proprio artificio barocco, nell›appoggio dell›obelisco sul vuoto. Quattro colossali figure, impersonano i grandi fiumi dei quattro continenti: il Nilo, il Gange, il Danubio e il Rio della Plata. Coronata dalla colomba dello Spirito Santo - emblema del papa Innocenzo X, committente dell›opera - fu anche interpretata come simbolo del trionfo della Chiesa sulle quattro parti del mondo. Una leggenda popolare è legata alla rivalità tra il Bernini e il Borromini. Si tramanda infatti che la statua del Rio della Plata tenga alzato il braccio per ripararsi dall’eventuale crollo del campanile o della cupola della chiesa di Sant›Agnese in Agone ( opera del Borromini) e la statua del Nilo si copra il volto per non doverla vedere. In realtà si tratta di un anacronismo storico, poiché la fontana fu finita nel 1651, mentre la chiesa di Sant›Agnese in Agone fu iniziata dal Borromini nel 1652. Si narra inoltre che le spese per la realizzazione della fontana furono talmente elevate che, per finanziarle, il papa ricorse a una tassazione sul pane, scatenando l’ira dei romani. Oltre agli aneddoti e alle tradizioni popolari, la fontana del Bernini impressionò talmente il papa da diventare la prima di una serie di opere ancora più imponenti, oggi è ancora li, a incantare i visitatori di tutto il mondo, incastonata in quella magnifica e straordinaria scenografia che è Piazza Navona.

It’s all ready to go at Rome’s Argentina Theatre Luca Zingaretti ritorna sulle scene con un nuovo spettacolo. Tutto è pronto all’Argentina di Roma Italy’s most popular actor- he has become a pop icon in his role as Detective Montalbano- will be debuting at Rome’s Argentina Theatre in his new show, The Pride. He is the director as well as playing the leading role of the enigmatic, wonderfully-built play by Alexi Kaye Campbell. We had a chat with the most Roman of Romans Luca Zingaretti.

How important is the theatre in your career?

I was born as a theatre actor. I attended Drama School and I worked in the theatre for the first fifteen years of my career. In 2008, after having worked in film and television for a long time, I returned to the stage, from which I had stayed away too long.

Why are you saying so?

I believe that having a theatre background is essential for an actor. Returning now and then to the stage is like going back to the gym when you need to strengthen your muscles and posture.

You are the director of the new show while playing also the leading role, and it’s not the first time. Why have you decided to take full responsibility for the direction?

Because after so many years spent following other people’s instructions, I felt like giving it a try myself. The director is the one who decides what to place emphasis on, and so the story changes according to what is emphasized and what is kept in the background. It’s like two people telling the same joke, one with all the proper inflections, the other not, one makes it funny, the other just makes you ask “Is the joke over? Shall I laugh?”.

What kind of show is The Pride?

I was struck by the story: two parallel homosexual love stories taking place in different periods, one in 1958, the other in 2015, which become interwoven. It’s a story we can all relate to, for it deals with the pursuit of self-identity. Sooner or later, whether gay or hetero, we are all faced by the same dilemma: what have I become, is it really what I wanted to be, am I happy with my reflection in the mirror?

Il più popolare degli attori italiani, diventato un’icona pop nei panni del solerte Montalbano, ormai commissario di famiglia, debutta a novembre al teatro Argentina di Roma con un nuovo spettacolo teatrale The Pride. Sua la regia e l’interpretazione del protagonista della storia enigmatica, magnificamente costruita da Alexi Kayne Campell. Incontro con il romano, che più romano di lui non ce n’è, Luca Zingaretti.

Che posto occupa il teatro nella sua carriera?

Nasco come attore teatrale, ho fatto l’Accademia e nei primi quindici anni della mia carriera ho fatto praticamente solo questo.

Dopo la lunga parentesi televisiva e cinematografica, intorno al 2008 ho ripreso a fare teatro dal quale ero rimasto lontano anche per troppo tempo.

Perché dice questo?

Credo che per un attore sia fondamentale la formazione teatrale così come, ogni tanto, tornare a teatro come si torna in palestra per rimettere a posto i muscoli e la postura.

Lei porta in scena questo nuovo lavoro teatrale da regista oltre che da protagonista, e non è la prima volta. Perché in teatro ha scelto la strada più libera della regia?

Perché dopo tanti anni passati a seguire le indicazioni di altri, viene la voglia di dire “adesso voglio provare a farlo io”. Il regista è quello che decide dove porre gli accenti del racconto, e ogni racconto a seconda degli accenti che ha assume, prende di volta in volta una diversa fisionomia. Pensi a due persone che raccontano la stessa barzelletta, uno sa mettere gli accenti giusti e arriva la grande risata, all’altro che non lo sa fare, alla fine tutti gli chiedono “ma è finita la barzelletta?”.

Che spettacolo è “The Pride”?

Sono rimasto colpito dal racconto, due storie di omosessualità che si svolgono in periodi diversi, una nel 1958 , l’altra nel 2015, che alla fine si intrecciano. E’ un testo che in qualche modo riguarda tutti, perché parla dell’identità di cui ognuno è alla ricerca. Prima o poi nella vita, gay o etero, ci troviamo ad affrontare tutti lo stesso Roma | the Eternal City 69

Da cosa nasce questo desiderio di insegnare qualcosa al pubblico, invitarlo a riflettere attraverso il divertimento?

Offriamo semplicemente quello di cui la gente ha voglia.

E di cosa ha voglia il pubblico adesso?

It has been home to thirty popes- from Gregory XIII in 1572 to Pius IX in 1870-, four kings of Italy- from Vittorio Emanuele II to Umberto II, who left in 1946- , and twelve presidents of the Italian Republic: the first president was Enrico De Nicola, the current one is Sergio Mattarella.

We are talking about the Quirinal Palace. In spring 2015, the President decided to open it to the public: “A way to make the Palace feel like everybody’s home” said Mattarella, referring to an expression, the home of Italians, which former President Carlo Azeglio Ciampi had used for the first time. Therefore, the Palace is not a museum, although it has all the characteristics you would expect of a museum, but a dynamic place which should bring citizens and the country’s highest office closer through art and history. And here we are talking History with a capital “H”: the halls, the corridors, the recently-restored frescoes, even the sumptuous and timeworn upholstery, everything speaks of the history of a country where power has been handed roundfrom the Church to the King to the State- but always side by side with art. The Quirinal Palace offers two kinds of tours for the general public: a short, free of charge (upon reservation) tour and a long tour with an experienced guide describing the events and stories associated with the Palace. We have chosen the long guided visit- two hours and a half-, during which we imagined the President sitting down to lunch with Queen Elizabeth or George Bush, or Queen Margherita di Savoia wearing an evening gown and dancing, or we waited for the arrival of Napoleon, who actually never lived here…The evocative power of places and of the events which took place over the centuries and represent the Quirinal’s true heritage, in addition to its great artistic value.

The Palace is located on the Quirinal Hill. Being Rome’s highest hill, the Quirinal has been used since ancient Roman times as the site for the construction of public and religious buildings. The

Parliamo del Quirinale. Dalla scorsa primavera proprio questo Presidente ha deciso di aprirlo al pubblico: “un modo di rendere questo Palazzo più concretamente casa di tutti nel nostro Paese” ha dichiarato Mattarella, riprendendo un’espressione, casa degli italiani, usata per la prima volta da Carlo Azeglio Ciampi. Quindi non un museo, per quanto abbia tutte le caratteristiche per esserlo, ma un luogo vitale che riavvicina i cittadini alle istituzioni attraverso la bellezza e la storia. Qui la Storia è di quelle con la maiuscola: le sue sale, i corridoi, gli affreschi recentemente restaurati, persino le tappezzerie opulente e usurate dal tempo raccontano le vicende di un paese dove il potere è passato di mano in mano - dalla Chiesa, al re, allo Stato - ma che allo stesso tempo, ha visto nell’arte sempre un fedele alleato.

Sono previsti due tipi di visita, uno più breve e gratuito (a parte la prenotazione), uno più lungo con una guida esperta in grado di raccontare le vicende e gli aneddoti di questi luoghi. Abbiamo scelto per voi il giro più lungo, un valzer d’antan di due ore e mezzo durante il quale abbiamo potuto immaginare il pranzo della Regina Elisabetta o di George Bush; seguito con lo sguardo Margherita di Savoia mentre ballava in abito da sera; aspettato l’arrivo di Napoleone, che qui in realtà non visse mai…Potere evocativo dei luoghi e delle vicende che si sono stratificate qui e che sono il vero patrimonio del Quirinale, anche oltre il suo valore artistico. Il Palazzo del Quirinale sorge sull’omonimo colle di Roma, il più alto. Per la posizione elevata ospitò fin dall’antichità edifici pubblici e di culto: risale al IV secolo a.C.

temple to Quirinus, after whom the hill was named, dates back to the 4th century B.C. The current building was built in 1583. Many masters of Italian art have contributed to the construction and decoration of the Palace over the centuries, including Pietro da Cortona, Domenico Fontana, Ferdinando Fuga, Carlo Maderno, Giovanni Paolo Pannini and Guido Reni. The Palace features 1,200 rooms and extends over an area of 110 thousand square meters. Therefore, visitors are led through an amazing suite of rooms decorated with breathtaking frescoes and stuccoes: the Great Hall of the Cuirassiers, the Piffetti Library, the Map of the World Hall, the Pauline Chapel- where Umberto II and Maria José got married soon after the signing of the Lateran Pacts and which now houses chamber music concerts-, Napoleon’s sitting room and the Mascarino Staircase, a sixteenth-century spiral staircase of rare beauty. And then comes the study of the first King of Italy, Vittorio Emanuele II, the frescoes by Pelagi, Queen Margherita’s room, featuring one of her silk gowns with silver and crystal embroideries dating back to the mid-1800s. And the Hall of the Mirrors, still in use for institutional activities and, in the late 1800s, the heart of the Palace when, after centuries of austere papal rule, the Quirinal became the scene of sumptuous parties and balls. And the sparkling rococo-style Grand Ballroom, where each newly-elected government is sworn into office.

Of great interest is the suite of kitchens and rooms showcasing an impressive collection of plates, tableware and centrepieces- over 9 thousand pieces designed by Ginori and Meissen and Sevres ceramists- still used for formal receptions and parties. At the end of the indoor tour, visitors are taken through the sweet-smelling gardens. Rome’s mild climate makes them enjoyable yearround, allowing you to relax beneath the palm trees and pines overlooking the city, accompanied by the soothing sound of the fountains. After a visit to the Coffee House, where official meetings still take place, the tour ends with a look at the coach-house, filled with landau, brougham and magnificent hand-painted carriages, used by the Palace’s residents from the early 1800s to the 1940s. il tempio del Dio Quirino che impose nome al colle. E come non citare la Sala degli Specchi, oggi sede di attività istituzionale importanti e, alla fine dell’800, cuore pulsante del palazzo sabaudo quando il Quirinale, dopo gli austeri secoli del papato, era divenuto teatro di ricevimenti mondani, pranzi sontuosi, balli di corte. O ancora il Salone delle Feste, teatro del giuramento di ogni nuovo Governo della Repubblica, sfavillante nei frame televisivi e rococò fino all’eccesso dal vero.

Di grande fascino la vasella del Quirinale, una serie di cucine e sale dove è conservata una collezione impressionante di piatti, stoviglie, composta da oltre 9 mila pezzi firmati da Ginori, dai ceramisti di Meissen e di Sevres, utilizzati per i ricevimenti e i pranzi ufficiali.

Solo alla fine del percorso si attraversano i profumati giardini. Il clima di Roma sempre miti invita a concedersi un po’ di tempo sotto le palme e gli ombrosi pini affacciati sulla città, accompagnati dal rumore dell’acqua delle tante fontane. Dopo uno sguardo alla delicata coffee house, che ancora oggi ospita incontri ufficiali, la visita termina nella rotonda e nelle rimesse delle carrozze dove, tirate a lucido si trovano i landò, i brougham e le splendide carrozze dipinte, utilizzate dal primo ‘800 fino agli anni 40 del ‘900 dagli abitanti del palazzo.

Rome is history, past, antiquities and famous monuments such as the Coliseum, the Vatican, the Trevi Fountain and the Pantheon, but it also has many beautiful areas that are less known to tourists but are a treasure to be proud of for the Romans. Among them is the Ostiense neighbourhood that is experiencing a burst of new life thanks to the major redevelopment works that have been completed there over recent years and the very visible combination of industrial archaeology and folklore. The symbol of the neighbourhood is the gasometer whose round shape calls to mind a modern Coliseum. It once stored gas and is now the backdrop for the whole area and an unusual location for many films.

What most distinguishes the area and recently started to attract tourists too, who are curious to see the capital’s street art, are the many graffiti that are appearing on the façades of the buildings and that even cover some of them entirely. The most important and significant is without a doubt the building with many colourful faces painted by Blu, an Italian street artist famous the world over. At the intersection between Via del Porto Fluviale and Via delle Conce, the artist has painted an enormous mural with 27 gigantic faces on the façade of the former air force barracks - today a centre that houses 450 homeless people - whose windows have become eyes, and the front door a mouth. On the same road Iacurci’s great swimmer that was painted in 2011 overlooks the Ostiense Fish Market and still brightens up this part of the capital with its playful sporty outfit, complete with a red swim cap and goggles.

Focusing on Roman street art, there are many open-air works of art scattered along the streets that go from Saint Paul’s to the Pyramid. On the same road, alongside these very important graffiti, a number of restaurants, bars and ice cream parlours have opened. They have been there

Roma è storia, passato, antichità e monumenti famosissimi quali il Colosseo, San Pietro, Fontana di Trevi e Pantheon, ma ha anche tantissimi bei quartieri che i turisti conoscono meno ma che per i romani sono un tesoro di cui andare fieri. Tra questi c’è il quartiere Ostiense che sta vivendo una nuova vita grazie agli importanti lavori di riqualificazione che sono stati fatti negli anni e al connubio ben visibile di archeologia industriale e tradizione popolare. Simbolo del quartiere è il gasometro che ricorda per la sua rotondità un Colosseo moderno, che un tempo aveva lo scopo di immagazzinare gas ed oggi è lo sfondo di tutta l’area e una location particolare di molti film.

Quello che più contraddistingue la zona e ultimamente inizia a richiamare anche i turisti, curiosi di vedere la street art nella capitale, sono i tantissimi graffiti che stanno comparendo sulle facciate dei palazzi fino anche a ricoprirli interamente. Il più importante e significativo è sicuramente il palazzo dai tanti volti colorati dipinti da Blu, street artist italiano di fama internazionale. All’incrocio fra via del Porto Fluviale e via delle Conce, l’artista ha dipinto sulla facciata dell’ex caserma dell’aeronautica militare - oggi una casa che ospita 450 senzatetto -, un gigantesco murales con 27 volti giganteschi, le cui finestre sono diventate gli occhi, e il portone d’ingresso una bocca. Nella stessa via anche il grande nuotatore di Iacurci che sovrasta la Pescheria Ostiense che fu realizzato nel 2011, e ancora oggi rallegra questo scorcio della capitale con il suo giocoso outfit sportivo, con tanto di cuffia rossa e occhialetti da mare. Concentrando l’attenzione sulla street art romana, molte sono le opere a cielo aperto disseminate lungo le vie che vanno da San Paolo a Piramide. From Balthus to Moore to Toulouse-Lautrec, by way of the Impressionists, the Eternal City offers a packed calendar of not-to-be-missed exhibitions.

From 24 October 2015 to 31 January 2016, Rome will commemorate the great artist Balthus, fifteen years after his death, with Balthus. The Retrospective, a major monographic exhibition presented in two different venues. At the Scuderie del Quirinale, his best-known masterpieces and at Villa Medici, the works realized during his stay in Rome, which reveal the working method and the creative process of Balthus: his work in the atelier, his use of models, his techniques, his recourse to photography.

There is a strong connection with France, thanks to numerous exhibitions covering the Impressionist, Post-Impressionist and Realist periods. From 15 October 2015 to 7 February 2016, the Complesso del Vittoriano will host the exhibition entitled Impressionists. Tête à tête, which brings together the works of artists who can rarely be seen in a single context: Manet, Renoir, Degas, Bazille, Pissarro, Cézanne, with over sixty works from the Musée d’Orsay. The exhibition gives a glimpse of Parisian society in the second half of the 19th century, affected by great artistic, cultural and social changes which the Impressionists represented and bore witness to. exhibition explores the sixty years of French painting (1860-1919) in which Impressionism was born, developed and established, and its final outcome, Post-Impressionism. Through the faces, clothes, poses and accessories of the persons portrayed, through the settings and situations in which they are placed, Impressionists. Tête-à-tête will offer the possibility to reconstruct the cultural environment, the social contexts, and the artistic stimuli in which the Impressionist artists worked; and, above all, to understand that “revolution of the rapid glance” and that stylistic renewal announced by the Impressionist movement. The selected works, some of which have become true icons of Impressionist art, highlight the innovative aspects of this artistic movement and reflect, at the same time, the characteristics of individual personalities.

From 4 December 2015 to 8 May 2016, the Museo dell´Ara Pacis will host Henri de Toulouse-Lautrec, the Post-Impressionist artist, illustrator and lithographer who recorded in his works many details of the Bohemian lifestyle of late-19th-century Paris. Open until 21 February 2016, James Tissot at the Chiostro del Bramante: 80 works by the French painter, exponent of the Realist movement which began in the mid-19th century. Various exhibitions will be held at the Palazzo delle Esposizioni. Among others, we would like to mention the exhibition running from 16 October 2015 to 14 February 2016, Impressionist and Modern.

Dal 4 dicembre all´8 maggio il Museo dell´Ara Pacis ospita Henri de Toulouse-Lautrec, l’artista postimpressionista, illustratore e litografo che registrò nelle sue opere molti dettagli degli stili di vita bohémien della Parigi di fine Ottocento.

Sarà visitabile fino al 21 febbraio 2016 James Tissot al Chiostro del Bramante: 80 opere del pittore francese esponente della corrente Realista nata a metà dell’Ottocento.

This American museum, founded by Duncan Phillips in 1921, will soon celebrate its centenary with a travelling exhibition which will bring a part of the Phillips Collection to Rome. From Goya to Ingres, from Delacroix to Courbet and Manet, then Cézanne, Degas, Van Gogh, Monet and Sisley, up to the modern masters, including Bonnard, Braque, Gris, Kandinsky, Kokoschka, Matisse, Modigliani, Picasso, Soutine and Vuillard. Without forgetting the great American and European artists of the post-war period in the mid-20th century such as de Staël, Diebenkorn, Gottlieb, Guston and Rothko. The Phillips Collection is substantially different from other institutions that were established between the wars in the last century as its founder was very interested in the connections between works of art of the past and the present. Willing to support young artists of diverse aesthetic temperaments, Phillips acquired works based on their merits, not because they illustrated schools of thought, were faddish or by famous names. In 1954, addressing the new generations, Phillips wrote: “Centuries and nationalities are mixed in our Gallery so that old and modern paintings can be brought together to be relevant and significant in some new context, some new contrast or analogy.” The exhibition brings together the work of modernism’s greatest masters and demonstrates “that art is a universal language” meant to be shared and enjoyed by audiences everywhere.

Here are some of the exciting theatrical dates not to miss this fall, from classics to brilliant and delightful new productions and a touch of the avantgarde and international.

TEATRO DI ROMA The Teatro di Roma is launching its second season (the first at the National Theatre) under the artistic direction of Antonio Calbi. A total of 95 shows cover a wide range of classic drama and new art dramas to be staged Argentina Theatre and the India Theatre. Ninetto Davoli pays tribute with to Pasolini on occasion of the fortieth anniversary of his death with Il vantone, re-written in the Roman vernacular, of Plauto’s Miles glorosius with Edoardo Siravo. Not to miss is the national premier of Pride at the Argentina, directed by and starring Luca Zingaretti (November 24- December 6), and 7 minuti, written by Stefano Massini and directed by Alessandro Gassmann (February 1621). The season will see the return of some great international directors, such Peter Brook with Battlefield (based on his historic work on Mahabharata 30 years ago, May 11-15), Daniel Pennac with the theatrical reading Journal d’un corps (in original language, March 23-25).

The dancing Theatre is a showcase of contemporary choreography with Le Sacre, new choreography by Virgilio Sieni.

TEATRO ELISEO The historic Eliseo Theatre reopens its doors with the new, enticing artistic direction of Luca Barbareschi, now at the apex of a long career begun 40 years ago with Gabriele Lavia. The program takes place in the rooms of the Eliseo and the Piccolo Eliseo (the main space is intended for a wide audience, while the smaller retains characteristics of an experimental theatre). Playbill titles include Mamet’s China Doll, the national premier directed by Alessandro D’Alatri with Eros Pagni (April 5-24) and A Clockwork Orange by Anthony Burgess, directed by Gabriele Russo (April 26 – May 15). Playing at the Piccolo is the historic Edipus by Giovanni Testori, with Eugenio Allegri and directed by Leo Muscato (March 9-20).

Dal 14 al 29 novembre all’Auditorium Parco della Musica Thirty-nine editions with concerts, workshops and big international artists at the Auditorium Parco della Musica of Rome. Food and Jazz in harmony, both with a strong openness to external contributions, two universal worlds speaking two languages -of sound and taste- that are the same everywhere, for a rich program of music shows starring international artists from different continents.

Directly from New York, Gregory Porter, the new star in the international jazz world, who will open the Roma Jazz Festival on the 14th of November. His rich baritonal voice has conquered both the public and the critics over the last years, and his music is a combination of Soul, Gospel, Blues and Jazz that reminds to the fascinating atmospheres of the clubs of the Fifties. Among the events you will not want to miss, the concert of an Australian pianist and singer who has been living in Boston for years, Sarah McKenzie, on the 20th of November. Often described as a ‘national treasure’, she has conquered the international music scene with her unique timbre and an exquisitely jazzy groove at the piano.

On the 23rd of November, the magic music of Vinicius Cantuària, a Brazilian guitarist, singer and percussionist who has a seris of extraordinary collaborations with artists like David Byrne, Arto Lindsay, Laurie Anderson and Bill Frisell. On the 25th of November, at the Auditorium, the ‘French style’ of the great duo made up of Vincent Peirani and Emile Parisien in a refined and somewhat even light hearted performance that is an example of innovation and modernity while reflecting the French music background and the influence of true legends like Richard Galliano and Sydney Bechet. The last music show, on the 29th of November, will be an absolute premiére: the charismatic and unpedictable trombonist, tuba player and composer Mauro Ottolini, accompanied by an orchestra of 11 musicians, the Sousaphonix, on stage with Chef Giorgione, real name Giorgio Barchesi, one of the stars of Gambero Rosso Channel.

Il 25 novembre, approda all’Auditorim lo stile francese di un duo di grande classe, quello composto da Vincent Peirani e Emile Parisien che si cimenta in uno spettacolo raffinato e a tratti anche scanzonato alla ricerca di innovazione e modernità, senza tralasciare il background musicale d’oltralpe e l’ispirazione da parte di vere leggende come Richard Galliano e Sydney Bechet. At the RomaEuropa Festival Fino all’8 dicembre, al RomaEuropa Festival, il meglio di teatro, danza e musica Until the 8th of December, a great edition of RomaEuropa Festival to celebrate the Festival’s 30th anniversary 50 events is going on with 50 events, 300 artists and 15 different performing areas (not necessarily theatres). Thanks to Monique Veaute and Fabrizio Grifasi, this edition sees thatre, dance, circus, high technology and music at an international level, with contemporary art performances of the highest level.

RomaEuropa was first held in 1986, as a Festival of Villa Medici nel 1986. Thanks to the participation of other foreign Academies, it soon became an international event.

“The challenge has always been that of creating some points of convergence between Rome and its uncomparable beauty” say President Veaute and General Director Grifasi “with the most innovative artists we try to look for all around the world”.

Artists with whom the Festival has managed to create relationships of profitable and continuous cooperation. So the great friends of RomaEuropa couldn’t but be present for the Festival’s anniversary.

Jan Fabre and 27 performers from Troubleyn in their most daring challenge –a 24 hours performance – in terms of time and theatre with, Mount Olympus.To glorify the cult of tragedy (Teatro Argentina, on the 17th of October); Emma Dante staging the impossible interview entitled Io, nessuno e Polifemo (Teatro Vittoria, November 4-8).

Dance takes on the color of flamenco with Aurélien Bory’s choreography for Stéphanie Fuster, Questquetudeviens? (Teatro del Vascello, November 19-22). Circus, theatre and dance are also the ingredients of the culinary and surreal performance Cuisine et Confessions (Teatro Brancacciom, November 25-29) by the nine extraordinary performers of the Québecois company Les 7 doigts de la main, for the first time at the Festival.

Beside the shows also many unmissable occasions to meet international artists given by the “Informazioni” program, as well as the edition of “Digitalife” itself, the exhibition hosted in the suggestive area of Pelanda, entitled Luminaria: 11 installations accompanied by a rich program of performances.

What do you love most about your job?

The variety. I like to follow the entire hotel business process, from restructuring to the Sales & Marketing activities to the financial aspects and therefore every day is different and full of new ideas for learning.

Surely the Roman Penthouse, the most exclusive apartment in the heart of La Dolce Vita, located on the eighth floor of the hotel, which lets you see Rome from a new perspective and offers something that has never been available before: the most incredible 360-degree views of the Eternal City, the Sistine Chapel, the Colosseum and beyond.

Plans for the future?

The opening of the Baglioni Marrakech, scheduled for late 2016.

It is a very ambitious project that will include a boutique hotel with 80 rooms and 26 villas, realized in collaboration with prestigious partners such as the Six Senses Spa. We are also actively seeking opportunities in cities such as Paris, New York, Miami and we recently signed a management contract in Dubai.

When I think of Rome I think of pizza, warm evenings with friends in a pizzeria, after a film or close to home because the fridge was empty. And when I think of pizza, I get a rush of well-being, a sense of sharing and conviviality. A pizza represents a carefree, relaxed and cheerful moment in the life of everyone.

It was inevitable for Expo to celebrate the pizza and its fascinating history by beating the world record for the longest pizza in the world and launching the collection of the one million signatures that are necessary to propose the art of Neapolitan pizza makers for candidacy as a Unesco World Heritage. The origins of pizza go back to the Neolithic epoch, when porridge of toasted and milled cereal grains was cooked on stone. The Egyptians discovered yeast which made the pizza softer, lighter and easier to digest. Today’s flour derives from Roman wheat, created by crossing different varieties of spelt. Roman farmers worked the flour with water, salt and aromatic herbs, they cooked it in hot ashes in the fireplace and then used these flat disks of bread as plates to hold the seasoning. Pizza as we know it was already made in Naples in the sixteenth century and spread rapidly through southern Italy. From about 1750 an exotic berry was imported from the Americas, the tomato, which would change the destiny of the pizza. Slowly, the nobles too learned to appreciate this dish and Ferdinand IV had it baked in the ovens at Capodimonte, famous for its ceramics. The Margherita pizza was created in 1889 in honour of Queen Margherita of Savoy and carried the colours of the Italian flag. L’Expo non poteva non celebrare la pizza e la sua affascinante storia battendo il record mondiale per la pizza più lunga del modo ed avviando la raccolta di un milione di firme necessarie per la candidatura dell’arte dei pizzaioli napoletani come Patrimonio dell’Umanità Unesco. Le origini della pizza risalgono al Neolitico, in cui polente di cereali tostati e macinati venivano cotti su pietra. Gli egizi scoprirono il lievito grazie al quale la pizza divenne più morbida, leggera e digeribile. La farina di oggi deriva dal frumento romano, creato incrociando diversi tipi di farro. Artichoke or nymph? carciofo o Ninfa?

The Romans call it mammola, but its owes its Latin name to an ashen-haired Greek nymph, Cynara, whose purple-flecked green eyes made Zeus fall in love. Having been badly rejected by her, he transformed the beautiful nymph into an artichoke, prickly like the averseness of her character, but with a tender heart, to be seized like a forbidden fruit. This is the mythological origin of the artichoke (Cynara scolimus). Also known to the Greeks, this king of the Roman tables seems to have been cultivated by the Etruscans, as several of the tombs in Tarquinia are decorated with frescoes depicting artichoke leaves.

Despite its ancient presence on Roman tables, documented since the Renaissance, the diffusion of the artichoke as a typical dish, boasting, since 2002, IGP (Protected Geographical Indication) status as the Carciofo Romanesco del Lazio (Romanesque Artichoke of Latium), started only in the 1900s when, with the introduction of intensive cultivation along the Roman coast, it began to be distributed by the neighbourhood farmers’ markets in Rome (the www.mercatidiroma.com site offers a very useful search function; just enter the name of a street to find the nearest markets).

Nowadays artichokes are available 12 months a year and the quality of the product is so high that they can be eaten all year round, but the harvesting season begins in the fall, with the Castellammare variety, and ends in late spring with the Campagnano variety, considered the finest because of its round and fleshy cimarolo, which grows on the uppermost part of the plant.

There are essentially two traditional Roman recipes: carciofo alla romana (Roman-style artichokes), with breadcrumbs, mint and a hearty sprinkling of grated Parmigiano cheese, and carciofo alla giudia (Jewish-style artichokes), fried whole, head downwards.

I romani lo chiamano mammola, ma deve il suo nome latino ad una ninfa greca dai capelli color cenere, Cynara, i cui occhi verdi con riflessi violacei fecero invaghire Zeus. Questo, malamente respinto, trasformò la ninfa in un cardo spinoso come la ritrosia del suo carattere, ma dal cuore tenero, da cogliere come un frutto proibito.

Questa l’origine mitologica del carciofo (cynara scolimus).

Già noto ai greci, il re della tavola romana pare che sia stato addomesticato dagli Etruschi, tanto che in alcune tombe di Tarquinia si possono trovare affreschi adornati con foglie di carciofo.

Nonostante l’antica presenza sulle tavole romane, documentata già dal Rinascimento, la diffusione del carciofo come piatto tipico, dal 2002 ha ottenuto l’IGP come Carciofo Romanesco del Lazio, si afferma solamente nel ‘900 quando, con l’introduzione della coltivazione intensiva sul litorale romano, ha iniziato ad essere distribuito dai mercati rionali della Capitale (il sito www.mercatidiroma.com offre una funzione di ricerca molto efficace, basta inserire il nome di una strada per trovare i mercati più vicini).

Ormai il carciofo è disponibile 12 mesi l’anno e la qualità del prodotto è così elevata da consentirne sempre il consumo, tuttavia la stagione di raccolta inizia in autunno, con la varietà Castellammare, per finire nella tarda primavera con la varietà Campagnano, più pregiata per via del cimarolo tondo e carnoso.

Le ricette tipiche romane sono essenzialmente due: Il carciofo alla romana, con pan grattato, mentuccia e una abbondante “incaciata” e il carciofo alla giudia, fritto intero a capo all’ingiù.
