Preparazione La pasta Preparate una fontana con la semola, aggiungetevi l’acqua e il sale e lavorate per 5 minuti fino ad ottenere un impasto liscio ed omogeneo che lascerete riposare per 30 minuti.

Create dei rotolini di pasta del diametro di 5 mm, tagliateli in cilindretti di 5 cm di lunghezza che, utilizzando due dita, trascinerete per dare forma ai cavatelli. Lasciate seccare i cavatelli per 1 ora in luogo fresco ed asciutto. Cuoceteli in abbondante acqua salata per 6 minuti.

Aggiungete l’acqua ed emulsionate con il burro. Versate nella padella i cavatelli precedentemente cotti e mantecate con il pecorino grattugiato.

Cuocete i calamaretti a vapore per qualche secondo, pulite i gamberi, tagliateli a pezzettini e condite il tutto con olio extravergine d’oliva, sale, pepe, erba cipollina e prezzemolo. Impiattate la pasta adagiandovi sopra i gamberi e i calamaretti. Servite immediatamente.

Preparazione Bollire l’acqua con il sedano, la carota e la cipolla. Metterci il muscolo di manzo e bollire a fuoco dolce per circa 3 ore.

Far raffreddare la carne nel suo brodo.

A parte cuocere le cipolle rosse tagliate a julienne con una quantità di acqua che le ricopra completamente. Quando bollono ridurre il fuoco al minimo e lasciarle stufare molto lentamente finché tutta l’acqua sarà evaporata. Aggiungere l’aglio privato dell’anima e la salsa di pomodoro.

Quando la carne è raffreddata tagliarla a striscioline e unirla alla salsa di cipolle e pomodoro. Regolare di sale e di pepe e cuocere per circa mezz’ora.

Mescolare l’olio di nocciole con l’aceto di vino rosso e la demi-glace e “ghiacciare” il piatto. Usare il crescione, la lattuga e la brunoise di cipolla per decorare il piatto.

Method Boil the water with celery, carrot and onion. Add the beef shin and boil gently for about 3 hours. Let the beef cool in the water completely.

Julienne the red onions and cook in a separate pan just covered with water. When it boils, reduce heat to low and cook very slowly until the onions are done and the water evaporated. Add the garlic cloves without the green germ and the tomato sauce.

When the beef has cooled, cut into strips and add the onion/tomato sauce. Season with salt and pepper and cook for about half an hour.

Blend the hazelnut oil with the red wine vinegar and the beef demi-glace and glaze the plate. Use the watercress, lettuce and brunoised onion to decorate the dish.

Preparazione Per il pollo Preriscaldate il forno a 180°C e aprite il pollo a libro.

In una padella che possa andare anche in forno mettete un filo di olio extravergine d’oliva e arrostite il pollo da entrambi i lati.

Sfumate con il vino bianco, regolate di sale e pepe e cuocete in forno per circa 1 ora, aggiungendo di tanto in tanto dell’acqua calda se necessario.

Method Chicken Pre-heat the oven to 180°C and split-open and flatten the chicken.

Place the chicken in an oven-safe frying pan with a drizzle of extra-virgin olive oil and brown on both sides.

Simmer with white wine until reduced, season with salt and pepper and cook in the oven for about 1 hour, adding warm water if necessary.

Per le verdure Pulite e tagliate a cubetti le verdure. Togliete il pollo dal forno e aggiungete le verdure. Regolate di sale e pepe, aromatizzate con salvia e rosmarino e finite di cuocere sul fuoco per circa 15 minuti.

Vegetables Clean and dice the vegetables. Remove the chicken from the oven and add the vegetables. Season with salt and pepper, add the sage and rosemary and cook again on the stove top for about 15 minutes.

Finitura del piatto e presentazione Togliete il pollo dalla padella, tagliatelo a pezzi, dividetelo nei piatti e servitelo ben caldo con le sue verdure in accompagnamento.

PICCIONE DI “LAURA PERI” AL VIN SANTO, COTTO IN VESCICA CON FRUTTA CARAMELLATA AL TIMO “Laura Peri” pigeon cooked in pork bladder with Vin Santo and thyme scented caramelized fruits

Ingredienti per 1 piccione

Ingredients for 1 pigeon

1 piccione pulito 1 vescica di maiale 200 ml vin santo 50 ml brandy 1l brodo di pollo 1 spicchio pera 1 acino uva bianca 50 gr zucchero 10 pesche noci Sale, pepe Zucchero Olio Extravergine d’Oliva

1 cleaned pigeon 1 pork bladder 200 ml Vin Santo 50 ml brandy 1l chicken stock 1 pear slice 1 white grape berry 50 gr sugar 10 nectarines Salt, pepper Sugar Extra-virgin olive oil

Preparazione Lasciate la vescica di maiale per 24 ore in acqua, sciacquatela e fatela riposare per una notte in acqua ed aceto. Sciacquatela nuovamente e lasciatela riposare per altre 12 ore in acqua corrente.

Condite il piccione con aglio, alloro, sale e pepe, ed introducetelo all’interno della vescica insieme con il Vin Santo, il brandy e 300 ml di brodo di pollo.

Chiudete con uno spago la vescica ed immergetela nel restante brodo già caldo a circa 78°C e lasciate cuocere per 25 minuti.

Nel frattempo caramellate la frutta nello zucchero per circa 2 minuti. Finita la cottura fate riposare il piccione all’interno della vescica per altri 5 minuti, poi servitelo già disossato e con la frutta caramellata a fianco.

Method Soak the pork bladder in water for 24 hours, rinse and leave to rest overnight in water and vinegar. Rinse again and leave to rest in water for another 12 hours.

Season the pigeon with garlic, bay leaves, salt and pepper and place inside the pork bladder with the Vin Santo, brandy and 300 ml of chicken stock.

Tie the bladder with butcher’s twine and place in the warm chicken stock at a temperature of about 78°C and cook for 25 minutes.

In the meantime, caramelize the fruit in the sugar for about 2 minutes. After cooking, leave the pigeon to rest inside the pork bladder for another 5 minutes, remove the bones and serve with the caramelized fruit on the side.

La crema Mettete in una teglia da forno 10 pesche noci, copritele con la stagnola ed infornatele per 40 minuti a 160°C. Una volta cotte, fatele raffreddare, denocciolatele e passatele al mixer bilanciando il sapore con un po’ di sale, pepe, zucchero ed olio extravergine d’oliva.
