Process: 1. Charge aqueous & polyol phase: Charge ~50% of process water into the kettle. Begin gentle agitation. Add sorbitol 70% and maltitol syrup gradually while stirring. Heat to 70–75°C. 2. Disperse pectin: Pre-disperse pectin into a small portion of cold maltitol syrup (or use highshear dispersion) to avoid lumps, then add to the kettle under high-shear/sweep agitation. Maintain agitation until fully hydrated (5-10 min). Keep temp 70-75°C. 3. Add buffer/acid and adjust pH: Dissolve sodium citrate in a small portion of water and add. Add citric acid slowly and monitor pH. Target pH (post-mix): 3.4 – 3.6. pH must be within 3.4-3.6 before proceeding (ensures proper pectin gelation and preservative environment).

With the kettle at 70-75°C, slowly add the premix under moderate agitation. Maintain temperature and mix until uniformly dispersed (5-10 min). Avoid high shear that introduces air. 5. Add remaining solids & flavor/color: Add remaining maltitol powder (rest), strawberry flavor, and colorant. Mix 3-5 min. Bring the mass to cooking temp: 85-90°C briefly to reach the target soluble solids (°Brix). Do not exceed 90°C and avoid long residence times to minimize sterol oxidation. 6. Hold/rest & deaeration: If foaming occurs, briefly apply gentle vacuum or allow to rest; avoid excessive oxygen pickup. Maintain temperature ~75-78°C for depositing temperature. 7. Depositing/molding: Set depositor to deliver 4.0 g per deposit. Preheat depositor lines to avoid premature setting. Deposit into molds (starchless silicone or metal molds) while product is at ~75-78°C (pouring temp). 8. Setting/cooling: Allow molded gummies to set in a controlled environment (20–25 °C; RH 35– 45%). Typical setting time is 2-4 hours (depends on gel strength).Flip/demold when firm. 9. Oil phase: Charge carrier oil; heat to 45-55°C with gentle stirring. 3. Antioxidants: Add mixed tocopherols and ascorbyl palmitate; mix until fully dissolved. 4. Active addition: Add phytosterol esters slowly; maintain temperature to keep fluid/clear. 5. Viscosity set: Add melted beeswax (60-70°C), mix until uniform; cool to ~45-50°C. 6. Process: 1. Aqueous phase preparation: In a clean mixing tank, add the required amount of purified water (~25-30 °C). Dissolve citric acid completely and adjust pH to 3.4-3.5 (critical for preservative efficacy). 2. Preservatives: Add sodium benzoate and potassium sorbate to the acidified water. Mix until fully dissolved at the set pH. 3. Sweeteners: Add maltitol syrup under gentle agitation. Dissolve sucralose thoroughly until homogeneous. 4. Thickener hydration: Disperse xanthan gum by sprinkling into the vortex under strong agitation or by pre-wetting in part of the syrup. Continue mixing for 20-30 minutes until fully hydrated and lump-free.

Preparation: 1. Pre-heat the soy base to approximately 30–40 °C to prepare the pre-mix. 2. Heat Vitasterol S‑80® EST NGM to 50–65 °C and add it to the pre-mix under continuous soft stirring. 3. Add the acidity regulators (potassium phosphates) to adjust pH and support protein solubility and stability. 4. Disperse the calcium carbonate thoroughly to ensure uniform mineral fortification and prevent sedimentation. 5. Add natural flavors and sea salt to achieve the desired sensory profile. 6. Hydrate and incorporate gellan gum into the aqueous phase under controlled agitation. 7. Add vitamins B2, B12, and D2, and Sun E® 900, preferably at a lower temperature or towards the end of the process, to protect their stability. 8. Sun E® 900 is a clear amber viscous oil composed mainly of d-α-tocopherol, the most effective form of Vitamin E in protecting the human body from the damaging effects of free radicals. Vitamin E is an essential nutrient, and the recommended dietary allowance for individuals aged 14 years and older, including pregnant women, is 15 mg (22 IU) daily, while for lactating women the recommended value is 19 mg (28 IU) daily. Suggested recipe for 100g yoghurt with Skimmed or semi-skimmed milk: 97.3% Vitasterol S-80 EST: 2.7%

Preparation 1. Heat for premixing skimmed milk to 50ºC 2. Premix Vitasterol S-80 EST heated to 50-65ºC and heated skimmed milk under continuous stirring 3. Add the premix under stirring to the bulk milk 4. Two steps homogenization (200/40 bar) 5. Cool down to fermentation temperature 6. Add yoghurt culture and process fermentation 7.
