ucatán –cuyo propio nombre es de indudable origen maya (el u’uy u th’an: oye cómo hablan, que se supone dijeron los indígenas cuando oyeron hablar a los españoles con quienes se encontraron en el mar) es uno de los pocos estados, junto con Campeche y Quintana Roo, donde la mayoría de sus poblaciones conservan nombres en el idioma autóctono o derivado de él. De los 106 municipios, sólo Mérida, Progreso y Valladolid tienen nombres en español. La revista Explore Yucatán te sugiere recorrer el estado a través de sus rutas turísticas, y a continuación te presentamos el significado de algunos de estos lugares para que al pasar por ellos conozcas un poco más de nuestro legado cultural.

ucatán, whose name itself is of undoubted Maya origin (u'uy or th'an, meaning “hear how they speak,” which is what the Maya said among themselves when they heard the Spaniards they encountered at sea for the first time. Yucatán is one of the few states—along with Campeche and Quintana Roo—where most people have kept the names in the indigenous Mayan language, or in a Maya derivative. Of the 106 municipalities in Yucatán State, only Mérida, Progreso, and Valladolid are Spanish names. Don Manuel Garcia Rejón in his book Etimologías Maya ((Marcos de Chimay, 1910) tells the origins of these names. Here are some, taken from Rejón as well as other authors:

Con motivo de la celebración de la Independencia de 1810, se presentó un proyecto para realizar un parque recreativo cercano a la ciudad, cuya idea original fue la creación de un Jardín Botánico.

Hoy en día cuenta con seis áreas: aviario, herpetario, primates, mamíferos, área de juegos y galería.

With the idea of having a celebration for the Independence of Mexico in 1810, a project for a recreational park near the city was presented, which originally was focus on creating a botanical garden. It holds now six main areas: Aviary, endemic snake collection, primates, mammals, play ground area and gallery.

Por más de tres siglos la Plaza Grande, como es llamada por los meridanos, es el corazón a partir del cual se desarrolla la vida política, eclesiástica y civil de la ciudad. En su alrededor y calles adyacentes se observa el movimiento y el tráfico de toda ciudad moderna.

For over three centuries, the Plaza Grande, as it is called by local people of the region, is the heart from which develops the political, ecclesiastical and civil authorities of the city. In this neighborhood of adjacent street it is observed the movement and trafficking of any modern city.

En 1877 se le nombró Parque Hidalgo en honor a don Miguel Hidalgo y Costilla. Es un sitio frecuentado por la comunidad estudiantil, visitantes nacionales y extranjeros. Bajo las hojas de sus almendros se puede disfrutar un buen libro, una deliciosa bebida en alguno de los restaurantes, o bien se pueden adquirir diversas artesanías.

In 1877, this park was named in honor of Don Miguel Hidalgo y Costilla. It is a place visited by the student community, national and international visitors as well. Under the leaves of the almond trees you can enjoy a good book, a delicious drink in one of the restaurants, or you may purchase various handcrafts.

It was built between (1942-1945). The Parque de las Americas resemble the Pan-American ideal. It consists of four sections which covers four blocks that limit the Colon Ave: The Mayan gable-shaped facade, the exhibition hall with murals, the outdoor theater, with an acoustic dome, and the playground.

El Parque Zoológico del Bicentenario Animaya fue concebido bajo el esquema de un moderno parque temático. Representa una ciudad maya abandonada y rehabitada por diversas especies, se extiende a lo largo de 26 hectáreas y está ubicado en el poniente de la ciudad, en la zona conocida como Ciudad Caucel.

Bicentennial Park Zoo Animaya was conceived under the scheme of a modern theme park. It represents a Mayan city abandoned and rehabitada by various species, extends over 26 hectares and is located in the west of the city, in the area known as Ciudad Caucel.

The use of this type of toy has a long history since remote eras when ancient civilizations were looking for a means of entertaining children. abemos por hechos de la historia local de nuestra ciudad, se vivía en el tercer tercio del siglo XIX, conocimiento de propios y extraños que en ese entonces había un paradero de arrieros que con ruta a la ciudad de Campeche, por última parada para asistirse de provisiones y alimentos propios tenían que hacer en la Ermita de Santa Isabel, donde ahí se encontraba establecido Don Ucho, cariñosamente conocido en el área, responsable de ofrecerles antojitos regionales conocidos en nuestra cocina y una vez Don Ucho que había agotado las existencias de su menú, cuando llegaban arrieros requiriendo alimentos, la habilidad de servicio de este señor fue cuestionar a su esposa que podían ofrecer, sólo había una olla de frijoles colados a lo que res-

ccording to local history, in the latter third of the 19th Century there was a rest stop for mule drivers along the road to Campeche,

the last stop to stock up on food and provisions.

It was here, in front of the Santa Isabel Hermitage, that Don Ucho, dearly remembered in the neighborhood, served up regional cuisine. One day Don Ucho had run out of everything on the menu when a group of mule drivers arrived needing food. He asked his wife what there was to serve and she responded that they only had beans. Don Ucho decided to serve them by putting refried beans in a tortilla, frying it and then topping it with some onion and tomato. He served them as he prepared them and the delay caused one of his diners to yell “dame un pan, Ucho” (give me some bread), and the refrain caught on, “dame un panucho”. And that’s how Don Ucho’s astute creation became the famous Yucatecan dish: the panucho.

omo se sabe, la gastronomía del estado de Yucatán es reconocida internacionalmente por sus fuertes sabores y por estar estrechamente ligada a la historia, cultura y tradición de la península; pues es el resultado de una mezcla de ingredientes mayas y españoles, lo que le dan el toque especial a sus sabores.

Normalmente estas recetas mayas se ven transformadas en los famosos “antojitos tradicionales” del estado, repartiéndose en algunos restaurantes como botanas, en los estadios o incluso en las calles del Centro Histórico por medio de los vendedores ambulantes.

Uno de estos antojitos más reconocidos en la ciudad son los “Polcanes”, los cuales has sobrevivido gracias a que en su preparación no se utiliza ningún producto importado. Polcan proviene de las palabras “Pol” (cabeza) y “Can” (Serpiente), debido a la forma tan peculiar de este bocadillo.

Por otro lado se encuentran los Tuniches, o mejor conocidos como “Piedras” por su significado en lengua maya. Estos al igual que los polcanes son preparados a base de ingredientes mayas, pero con la inclusión de cochinita pibil.

Las “Piedras” o Tuniches consisten en una bolita de masa rellena de cochinita pibil, la cual se fríe hasta lograr una consistencia crujiente.

Comúnmente se acompañan con cebolla rosada, lechuga picada o guacamole.

Basta con una pequeña mordida de cualquiera de estos dos bocadillos para transportarse a la cocina prehispánica.

s is known, the gastronomy of Yucatan State is recognized by its strong flavors and by being linked to the history, culture, and traditions of the peninsula. It is, after all, a cuisine that combines Maya and Spanish ingredients, which gives it a special touch to its flavors.

Normally, these Maya recipes are transformed into the “traditional treats” of the State, offered in some restaurants as appetizers, at sports events, and on the streets of the Historic Center by street food vendors.

One of the better known treats in the city is the “Polcanes”, which have survived thanks that there are no imported ingredients in their preparation.

“Polcan” is derived from the Maya words “pol” (head) and “can” (serpent), due to the peculiar shape of this appetizer.

One also finds Tuniches, better known as “stones” because of the meaning of the word in Maya. These, not unlike the polcanes, are prepared with Maya ingredients, but also include cochinita pibil (roast pork marinated in achiote and citrus).

The “stones” or Tuniches consist of a roll of corn dough stuffed with cochinita pibil, which is fried until it has a crusty consistency. It is usually served with red onions, diced lettuce or guacamole.

It is enough to take a bite of either of these appetizers to be transported back to the pre-Hispanic kitchen.

DZIBILCHALTÚN. which in Maya means, “the Place of Scriptures on Flat stones,” dates back 500 B.C.E. Its apogee is between 600 C.E. and 1000 C.E. The respectful and wise relationship of the structures with nature is one reason Maya astronomers continue to use these buildings, particularly the structure known as ‘THE TEMPLE OF THE SEVEN DOLLS,” so named because seven dolls were found inside its chamber.

The building, perfectly aligned with the cardinal points. Its facades, with 1 door on one façade and 2 windows on the other, are constructed in a way that allows for an extraordinary phenomenon of light during the equinoxes each SPRING and AUTUMN. Legend has it that Kin, Maya for the Sun, took possession of the temple through the hollow space of its doors, whose frames give a reverential embrace to the celestial orb. When you climb the stairs, enjoy the beauty of the temple and feel its energy. Contemplate “THE OPEN CHAPEL OPEN,” which dates from the Colonial era, with its running vault shrine.

Explore the structures and admire the longest Pyramid of the Maya world. The cenote “XLAKÁH,” Maya for “Old Town,” provided water to the population and was the center of religious rites.

Today, not only can you admire it, but you can immerse yourself in their fresh and ancient sacred waters! There is also a museum where you will find objects removed from the cenote. PROGRESO, founded in1871, is a port whose shore is so shallow that it prevents large vessels from docking. This was not an obstacle for the enterprising people of Yucatán and the contemporary Maya, who together built the dock, the longest such structure in Mexico, called the “PUERTO DE ALTURA,” or “Height Port.” It is considered a miracle of maritime engineering.

Enjoy the seaside boulevard, known as the “Malecón,” as a true Yucatecan by strolling and sitting on its walls, enjoying the fine-white sands, and swimming in the calm warm waters. VALLADOLID: Founded in 1543 by Francisco de Montejo (the cousin) to subjugate the indomitable, warlike Cupul Maya. In 1848 the defiant, brave Cupuls rebelled against the injustices of the time in the Caste War between the Maya and the ruling classes. Also here, in May 1910, “the Spark of the Mexican Revolution” was struck and began an uprising against 30 years of Porfirio Diaz’s dictatorship.

Local dishes include a famous sausage, pork roast and escabeche sauce. Colonial architecture dots the city: ex-CONVENT OF SAN BERNARDINO (1553) built over an enormous cenote, has a stunning carved wood and gold leaf altarpiece with a 400-year old image of the Virgin of Guadalupe. SAN GERVASIO CHURCH in the city center has imposing towers and architecture, cannons used in the Caste War are on display.

EK-BALAM. (Black Jaguar or Jaguar Star) (300 BC) Center of the kingdom of Tah (lord or owner), it dominated eastern Yucatan and even the coasts. Two concentric defensive walls with 5 entrances surround this CEREMONIAL CENTER. THE ACROPOLIS has stucco that has been preserved for centuries! Most amazing is the stucco mask of a monster on the main facade, with huge lips and fangs, and the figure of a king in royal garb on his thrown with his court. The tomb of the king “Ukit Kan Lel Tok” has shell and conch pendants, necklaces, a scepter and a knife. The structure is also full of passageways connecting the rooms, reminiscent of the secret tunnels of Medieval European castles.

MAYAPÁN. (estandarte o bandera de los mayas): última gran capital regional maya, ahí se concentraron las noblezas de la región. La protegía gran muralla, formada por enormes bloques de piedra. En el centro encuentra la PIRÁMIDE DE KUKULCÁN, imitación a menor escala de la de Chichén Itzá, en el Solsticio de Invierno, Kin (el sol) desciende sobre la escalinata en mágica mezcla de Luz y Sombra. OBSERVATORIO, con 2 estelas: una representa un guerrero y la otra, meses del año. Vestigios del Templo de los Guerreros e infinidad de otros. CENOTE CHUMUL, ahora seco, surtía de agua la ciudad. Edificios de la Nueva Evangelización, construidos bellos e imponentes, pues tenían que rivalizar con los magníficos Templos Mayas, ACANCEH, TECOH, construidos sobre basamento de pirámide; TEKIT asemeja museo, por las imágenes en nichos; MAMA con orgulloso campanario y atrio cerrado; CHUMAYEL origen del Chilam Balam, libro sagrado de los mayas y ejemplo de arquitectura hispana del Medioevo; TEABO con escudo franciscano en el frente y pequeño altar barroco. ¡Arquitectura religiosa hispana, con genio y trabajo maya!

MANÍ. (Pasó todo lo mejor): Fungió como exclusiva escuela para educar hijos de caciques y principales indígenas. La iglesia de San Miguel con elegante fachada, flanqueada por campanarios, conserva bellos retablos, El Mayor, San Antonio, La Asunción, la Virgen de la Luz, del siglo XVII. Su CAPILLA ABIERTA, primera en Yucatán, tiene dimensiones semejantes al templo. En este lugar, Fray Diego de Landa, cegado por su celo evangelizador, manda destruir y quemar valiosos códices mayas y estatuas; el mismo Fray Diego, aquí comienza a escribir el “Relato de las Cosas de Yucatán”, tratando de corregir su error. Abierto todos los días de 6 a 12 y de 5 a 7. Tanto en Maní, como en la vecina Ticul, paladeará exquisita comida yucateca.

CUZAMÁ (cenotes): (water of the swallows) At Hacienda Chunkanán, climb on a narrow gauge, horse-drawn railcar for one of the most unforgettable experiences of your life. While passing through henequen (sisal) plantations you will be transported back to the 19th Century with every click and clack of the rails. Then you jump back millions of years when visiting the CENOTES, or Dzonot (cavity with water), along the route. Vital freshwater sources sacred to the Maya, they were believed to be accesses to the underworld. CHELENTÚN, has easy access and a maximum depth of 18 m (60 ft). Take a swim in this beautiful covered pool roofed with stalactites. CHACSICNICHE (red ant tree), is difficult to enter and better for scuba diving.

BOLONCHOHOL (nine rat holes) has nine holes in its vault, and at certain hours the sun beams through them, painting the crystalline waters a vibrant turquoise blue. CONVENTS: These sacred buildings of the New Evangelism brought by the Spanish to Yucatan had to rival the magnificent Mayan Temples.

Those at ACANCEH and TECOH were built on a pyramid base, and in TEKIT the convent resembles a museum with images in niches. Other convents are located at MAMA, with a proud bell tower and a closed atrium, CHUMAYEL, an example of Medieval Spanish architecture and origin of the Mayan sacred book the Chilam Balam, and TEABO, which has a Franciscan shield in front and a small baroque altar. All are fine examples of Spanish religious architecture built with Mayan know-how and hard work!

MANÍ: (It is over – all the best) Dedicated to San Miguel, the church here functioned as an exclusive school for the children of Mayan chiefs and nobility. Its elegant facade, flanked by two bell towers, has beautiful 17th Century altarpieces dedicated to San Antonio, the Assumption, and the Virgin of Light. The OPEN CHAPEL was the first in Yucatan and was as large as the church itself. In front of this church is where Friar Diego de Landa, blinded by his evangelical zeal, had valuable Mayan codices and images destroyed and burned. Realizing his error, he later began writing his “Account of Things of Yucatan”. Open 6a to 12a and 5p to 7p. Both in Mani and nearby Ticul, the Yucatecan cuisine is exquisite.

Loltún

LABNÁ. (casa vieja): Además de hermosos aunque poco restaurados edificios como “El Palacio” y “El Mirador”, centre su atención en el mundialmente famoso “ARCO DE LABNÁ”: una fachada ornamentada con grecas y columnillas y otra con celosías y chozas mayas; la creación arquitectónica del “arco maya” o “arco falso”, toma magistralmente como inspiración y modelo las chozas mayas de paja.

Abierto de lunes a domingo.

XLAPAK. (pared vieja): Gema arquitectónica, Puuc es el PALACIO, cuya fachada de trazos muy geométricos, presume un tablero de mosaicos de piedras con grecas, impresionantes mascarones de Chaac adornan esquinas y aparentan desprenderse del techo. Abierto de lunes a domingo.

SAYIL (lugar de hormigas): Sus 3 áreas delimitaban la división socioeconómica y religiosa.

De sus edificios aún en restauración, destacan, El JUEGO DE PELOTA, EL MIRADOR del que rescataron bellísimas estelas en exhibición a la entrada y el PALACIO: tiene 3 pisos escalonados, cuyos 2 primeros sirven de base y terraza a los cerca de 70 cuartos superiores, en los que desarrollaron nuevos estilos de arquitectura. Abierto de lunes a domingo.

KABAH. (mano de artista): Sólo Uxmal la superaba. Sus construcciones levantan de plataformas artificiales. TEMPLO DEL SOL, destacando el Palacio “CODZ POP” (alfombra de palma enro-llada) cuya fachada presume mosaicos de piedra y mascarones de Chaac; el acceso a los cuartos ostenta peldaños, que no son más que mascarones de Chaac, cuya trompa tiene tallado de alfombra de palma ¡Imagínese qué lujo de escalera! Su decoración nos evoca el más puro estilo barroco.

“PUUC”. (hill or ridge) region. The ancient Maya in this region developed a distinct culture with an architecture highlighted by simple forms, long planes, ornamental columns and stone mosaics with an almost total absence of the human figure.

The rain god Chaac is almost an obsession, not surprising in this waterless region where harvests and drinking water, depended exclusively on rain water. Immerse yourself in nature and begin to understand the Puuc Maya.

LOLTÚN. (Stone flower) Caves. At the Nah-cab (bee hive) entrance a bas-relief of the “Warrior of Loltun” greets you as he emerges from the underworld. You will be amazed by the vault, stalactite and stalagmite formations, including the Cathedral, the Ear of Corn, the gigantic rocks forming the Canon, the Musical Columns that say “loltun” when hit, and the Haltuns, brimming with fresh water. Cave paintings of hands, animals and faces can also been seen. The cave served as refuge during the Caste War. Guided tours of the Loltun caves are available from Mon. to Sun. LABNÁ. (old house): Many of the structures here are partially restored, like the Palace and El Mirador. The center of attention, though, is the world-famous ARCH OF LABNA. One of its facades is decorated with Greek motifs and columns, while the other has latticework and Mayan huts.

its inspiration from palm-roofed Mayan huts. Open Mon. to Sun. XLAPAK. (old walls). A true Puuc gem, the PALACE has a very geometric facade with stone mosaics. Chaac masks at the corners seem to want to jump off the facade. Open Mon. to Sun. SAYIL. (place of ants). The site’s three areas marked socioeconomic and religious divisions.

Many of the structures are still under restoration, like the BALL COURT, and EL MIRADOR, from which beautiful stelae were rescued (on display at the entrance). The first two floors of the PALACE serve as terraces for the nearly 70 rooms on the floors above. New architectural styles were applied as successive floors were built. Open Mon. to Sun. KABAH. (artist’s hand) Kabah’s structures, like the TEMPLE OF THE SUN, were built on artificial platforms. The CODZ POP (rolled up palm mat) is pure Mayan baroque, with a facade of stone Chaac masks. Even the doors are Chaac masks, with his trunk serving as the step. What a luxury! At the end of the sac-be (white road) linking the site to Uxmal is the ARCH. Open Mon. to Sun. UXMAL. (built 3 times) Recognized as a World Heritage Site, Uxmal is one of the most important archaeological sites in Mexico and the world... The most pure gemstone of the PUCC art. El Juego de Pelota, deporte y culto, el “Palacio del Gobernador”, uno de los más bellos monumentos de América, en cuya rica y fina decoración se tallaron más de 20,000 piedras, majestuoso, de armónicas proporciones; figuras de Chaac, abrazadas por celosías que forman víboras de cascabel, símbolo solar; en la parte superior de la puerta un trono, el rey con magnífico penacho y mucho más. Sus ojos brillarán con su belleza. TEMPLO DE LAS TORTUGAS, símbolo de longevidad. TEMPLO DE LOS FALOS, no de carácter erótico, sino de fertilidad.

THE NUNNERY QUADRANGLE consists of 4 buildings around an immense central patio. Each structure has a different façade each decorated with latticework, images of Mayan huts with feather roofs, birds, monkeys, intertwined serpents and the omnipresent Chaac. These mosaics were stuccoed and painted with brilliant colors. One of the great monuments of ancient America is the harmoniously proportioned Governor’s Palace. The over 20,000 stones in its facade form a detailed decorative scenario with repeated Chaac figures enveloped in latticework rattle-snakes (a solar symbol). Seated on a throne above the main door is a king with a magnificent headdress. It is truly overwhelming. Other important structures are the TEMPLE OF TURTLES, a symbol of longevity, the TEMPLE OF PHALLI, more about fertility than eroticism, the GREAT PYRAMID, a prime spot for a site overview, EL PALOMAR, etc. etc. There’s no better way to end your visit than to see the spectacular Light and Sound show in the evenings, with seating right in the Nunnery Quadrangle.
