The ancient origins of the French classic potato gratin may be found in France. The French verb "gratter," which meaning to scrape or grate, is where the term "au gratin" originates. The recipe calls for topping the potatoes with grated cheese before baking, which results in a wonderfully cheesy and crunchy crust.

Although its exact roots are unknown, potatoes au gratin is said to have gained popularity in the Dauphiné area of southeast France, which is renowned for its gratin dishes. In the 16th century, potatoes were brought to Europe by Spanish adventurers returning from the New World.

Potatoes au gratin is a classic meal that has been adapted by several countries and cultures, each of which uses its own regional ingredients and cooking methods. However, most recipes follow the same basic formula of layering thinly sliced potatoes, seasoning, cream or milk, and baking until soft and golden with a cheesy topping.
