SPICY MEXICAN PIZZA

250g Pizza Dough (1 portion of your favourite pizza dough)

1. Preheat the oven to 250°C.

3 Tbsp Tomato Pizza Sauce 1 Cup Grated Mozzarella 1⁄2 Cup Spicy Chorizo 1⁄4 Cup Sliced Jalapenos 1⁄3 Cup Charred Corn 1⁄3 Cup Frenchmaid Tomato Salsa Frenchmaid Creamy Aioli Frenchmaid Chipotle Salsa

2. Roll out the pizza dough into a 30 to 35cm disc.

3. Spoon the pizza sauce over the pizza base and sprinkle the cheese.

4. Evenly spread chorizo, jalapenos, and corn over the cheese.

5. Bake until the base is crispy.

6. Slice the pizza and add dollops of Frenchmaid Tomato Salsa on top.

7. Mix 3 parts of Frenchmaid Creamy Aioli to 1 part of Frenchmaid Chipotle Salsa and swirl it over the pizza.

VEGAN DOUBLE CHOCOLATE MUFFIN

INGREDIENTS

METHOD

280g Flour

Preheat the oven to 170°C. Grease or line a 12 hole muffin tin. Into a bowl mix to combine flour, baking powder, sugar and cocoa. Add chopped chocolate, Frenchmaid Plant-Based Mayonnaise and either almond or soy milk. Stir until the mixture is combined, do not overmix. Spoon the mixture into prepared muffin tin.

240g White sugar 3 tsp Baking powder 3 tbsp Cocoa powder 170g Frenchmaid Plant-Based Mayonnaise 250ml Almond or Soy milk 100g Vegan dark chocolate 7 0%, chopped 100g Raspberries (optional)

Bake for 20-25 minutes, or until muffins spring back when lightly touched or until skewer inserted in centre comes out clean.

Place on wire rack to cool. Makes 12 medium muffins.

SALMON AND AVOCADO SUSHI ROLLS

INGREDIENTS

METHOD

1 1/2 cups rice, uncooked

1. Cook sushi rice. Sprinkle Seasoned Rice Vinegar over hot cooked rice. While mixing the rice and vinegar, cool rice quickly by fanning at the same time over the rice to make Sushi rice. Mix vinegar into rice in slicing motions.

Make enough sushi rice to make 3 salmon and avocado rolls.

Fresh salmon, sushi grade, sliced approximately 1/2 square by 3-1/2 long 1 avocado, sliced thinly lengthwise 3 sheets dried seaweed 3 Tbsp seasoned rice vinegar 1 Tbsp Frenchmaid Smokey Chilli Mayonnaise 1 sheet of plastic wrap Frenchmaid Toasted Sesame Dressing

2. Spread a sheet of plastic wrap, large enough to line a seaweed sheet, or using a sushi mat, and lay the dried seaweed.

3. Brush lighlty Frenchmaid Smokey Chilli Mayonnaise on the seaweed and spread the sushi rice thinly.

4. Lay each salmon slice and avocado slice on top of the rice. Start rolling the seaweed into a log shape using plastic wrap as a guide to shape a firm rolled sushi.

5. Separate the plastic wrap from the sushi roll.

Slice the finished salmon avocado roll into five to six slices with a sharp knife and serve with Frenchmaid Toasted Sesame Dressing.
