Sarah Snell DOES IT ALL BULLS GAP’S

Honor student, part of the Homecoming court, and one of the few female football players in the state

Bulls Gap eighth-grader Sarah Snell is an outstanding young lady. She is a good student (“As and Bs”), has a sweet smile and laugh, and has been in the homecoming court at her school. Sarah is also a great athlete, competing in basketball, softball and cheerleading.

Bulls Gap Bulldog football player Sarah Snell, one of the few girls playing football in Tennessee, and one of even fewer who plays at a position other than kicker.
Bulldog player Sarah Snell missed this game as a player, since she was in the homecoming court. She did serve her team as water girl after halftime.

One thing that makes her unique is that she has also played on the varsity Bulldog football team the last two seasons. She not only played, but played very well! A defensive back, Sarah intercepted three passes in her eighth-grade season.

Sarah, 14, lives in Bulls Gap with her parents Clint and Elizabeth, and two younger sisters, Emma (10), and Lydia (7).

Clint explained, “We are from Virginia. We moved to Straw Plains, but we wanted a hobby farm where we could have chickens, goats and a garden.” Elizabeth added “Sarah was 11 and in the sixth grade.” Clint said “Sarah played basketball and cheered in Virginia.” She also played travel softball.

“When I played basketball and softball in Virginia, I had coaches, Heather and Tevon Maddox, who coached me to be aggressive,” Sarah said. “I cheered in the sixth grade and decided I wanted to give football a try. I played for two years!”

“It shocked some of the boys when she came back for a second year,” said Clint.

Elizabeth said, “Clint played football, basketball and baseball in high school, but she got her determination from me!”

Sarah went to the boys’ state basketball tournament as a cheerleader.

The choice to play football was well thought out. Sarah remembered “I think I just wanted to be out there, to inspire people. You can do things if you work at it, have conditioning.”

Clint added “I talked to her, I told her once we start something, we don’t quit. All the boys accepted her as if she was one of them. I heard the parents’ chatter. They all said good things about Sarah playing.”

“The boys on the team treated her like a little sister,” Elizabeth added.

Sarah said, “my teammates supported me; my parents supported me. I even got an email from a girl who said I inspired her!” Clint said, “Sometimes she got pancaked, but she got right back up!”

Elizabeth noted that other teams were surprised at how well she played.

Bulls Gap coach Shawn Bond commented: I have had the privilege of coaching Sarah in both football and basketball over the past three years. The first thing that comes to mind when it comes to Sarah is effort. Sarah always gives a great effort in

everything she does. It makes it easy and enjoyable to coach a kid who works as hard as she does. Sarah is very kindhearted and displays good leadership qualities with her younger teammates. I look forward to seeing what she accomplishes in the future!”

Sarah’s time at Bulls Gap School has been story of accomplishments. In addition to good grades and athletics, she is president of the Fellowship of Christian Athletes, Student Council vice-president and participates in band.

Some of Sarah’s favorite football memories include:

“My first ever interception against North Greene. I saw the ball coming and got it in my hands. It was a pick-six, but was called back for a block-in-the-back penalty.”

“In the Cosby game, I had an interception on a two-point conversion. That game went into triple overtime.”

“In a junior varsity game against South Greene, I got to play offense. I stiff-armed a defender and ran for a touchdown!”

Clint said “At the last football game, emotions really hit her.” Sarah added “I wish I could go back and do it all again.”

Sarah has carried herself with grace and class, which has been stressed by her parents.

Clint explained, “We try to stress to her that student-athletes are held to a higher standard, more eyes are on you. We’ve always been more concerned about school than sports.”

Sarah has definitely changed the football scene at Bulls Gap. Clint said “Principal Southern jokes that she can’t holler ‘let’s go boys’ anymore.”

Sarah added, “the coaches say “let’s get in the huddle, boys…. and Sarah!”

Playing in high school?

Will Sarah continue her football career in high school?

She said, “I’m thinking about it. I’d really like to. I love football, I have a passion for it. I know it takes a lot of conditioning. If I can’t play, I’d like to help the team any way I can.”

Clint added, “when I saw tears after the last game, I knew the next question would be about playing in high school. We told her that she could try out, but there’s chance you might not make it, but always stay determined.”

In spite of all that she has accomplished, Sarah remains wellgrounded.

She said “I wouldn’t be able to do all these things without God, my family and supporters. The Lord is always with you!”

Sarah Snell will be remembered as one of the great athletes in the history of Bulls Gap.
Giving a new meaning to ‘getting beat by a girl,’ Sarah Snell snags an interception as a football player for the Bulldogs. She had a pick-six in one game but it was negated by a penalty.

The Davidson Farm A FAMILY TRADITION SINCE 1902

Nestled between the pristine hills of East Tennessee sits a farm and store that has been well-known for nearly 125 years.

The farm’s rich heritage began in 1902, when The Looney Farm was owned by Billy Davidson’s great grandfather, W.S. Looney. That same year, Mr. Looney opened the family’s first farm store. At that time, products were purchased through a barter and trade system. The store sustained and operated for thirty years until the Great Depression hit the nation.

As the farm was handed down through the generations, its name changed to The Davidson Farm. The land was farmed, but the store remained closed until the early 2000s, when the father and son duo of Bill and Billy Davidson renovated the iconic building and opened it back up for business.

Billy and his wife Debbie raised crops on the land, and became well-known for their farm raised sweet corn, green beans, and some of the sweetest strawberries in Hawkins County. Each year after most crops were harvested, it was time for their large pumpkin patch to begin producing its bounty for autumn. For many years, The Davidson Farm, store, and its Pumpkin Valley pumpkin patch in Carters Valley were a big hit with both children

and adults. The couple continued to farm and run the store until COVID hit the US in 2020.

The sixth-generation family farm is now run by a young farmer

couple, Gavin and Katie Thacker. The couple moved back to Hawkins County in 2023 to run the family business for Katie’s parents, Billy and Debbie Davidson. Young farmers are hard to find these days, as the Tennessee average farmer’s age is nearly 59 years old.

Gavin (28) and Katie (29) are among a very small percentage of young farmers in the state. They said, “While we are still learning and growing every day, we have received an incredible amount of support from our community. It has been encouraging to see how much people care about local agriculture and about keeping farms like ours going. We truly feel that our community believes in what we are doing, and they want us here.”

With the help of family and friends, the young farmers got Pumpkin Valley back up and running during the first year after they began their adventure tending to the farm. The field was full of pumpkins of all sizes, with the smaller pumpkins being the school children’s favorite. The children love painting the pumpkins while enjoying the outdoors. One favorite tradition at Pumpkin Valley is allowing teachers to participate in a drawing to win free paint pumpkins for their class. The pumpkins are hand delivered to the winning class by Gavin and Katie. Delivering the pumpkins and seeing the children’s faces light up is one of their favorite days of the season.

The last weekend of September is opening day for Pumpkin Valley. They host school groups throughout the week and are open to the public on the weekends. With pumpkins comes spooky season. Join in the fun of the haunted corn maze and help support local first responders and future farmers. Stanley

Valley Fire Department and Volunteer High School’s Agriculture Department members fill the maze with haunts and howls. Each department receives 50 percent of all corn maze proceeds on the nights they participate.

During October, a free movie night at the pumpkin patch is just one more way to have fun with family and friends on the farm. Vendors and food trucks are also welcomed to set up on the farm during the Pumpkin Valley festivities. Gavin and Katie support their fellow small business owners by not charging the vendors a fee to set up.

Now for more exciting news, the Thackers are reopening the

farm store once again! Renovations to the store building are winding down, and the couple are hard at work putting the finishing touches to the shelves and breathing life back into the space. They are excited to carry on the family tradition by offering farm raised produce.

“All items will come from a farm local to our region or from our connecting states, North Carolina, Kentucky, and Virginia. We will always be open and transparent about our product’s origin,” Katie said.

Much of the store’s fresh produce will be grown by Gavin on Davidson Farm. Among other items to fill the shelves will be various locally made canned goods, including jams and jellies. Local honey, fresh chicken eggs, Kombucha, baked goods, goat milk soaps, beef tallow products, and pet treats will also line the shelves. Their freezers will be stocked with Davidson Farm and other locally farm raised beef, pork, and chicken. They also hope to offer lamb, duck eggs, quail eggs, and raw dairy including raw goat’s milk for pet consumption.

“Our goal is to support Hawkins County and surrounding county farmers and makers by providing a place to grow, sell, and connect with the community,” said Katie.

One day, the couple hopes to be able to have other employees, but for now Gavin, Katie, their nephew Liam, and Katie’s mom, Debbie will be the people to great you when you visit. The store’s ‘Grand Reopening’ is planned for this spring.

Future plans for The Davidson Farm are focused on offering pick-your-own berries and flowers. The flower field will be a special place, as it will be dedicated and planted in memory of

Katie’s brother, Will. “Will passed in 2024 and we miss him dearly. We often wish he was here to celebrate all of the accomplishments we’ve achieved so far. The flower field will honor his memory as we share something beautiful with our community,” she said.

Last year, the couple needed some help after Gavin’s shoulder surgery, so they made a post on Facebook asking for help pulling weeds in the pumpkin patch. The response was incredible, as nearly 40 people showed up and volunteered their time to help. Katie humbly responded, “We have been incredibly blessed by the support of our community. Not only did all of those people come to the farm to help, we also received generous donations that helped cover labor costs we were also facing at that time. A dear friend who owns Damn Yankee Cattle Company even donated ground beef and supplies so we could feed the volunteers! Moments like that truly show how much our community believes in what we are doing and wants to see us succeed.”

Gavin and Katie added, “We want to build a lasting legacy for our children and grandchildren while supporting local farmers and small business owners who produce their own goods. We also hope to create a welcoming place where people in the community can gather, fellowship, and connect. Above all, we strive to keep God at the center of everything we do, and use this land as a way to serve others and honor Him.”

Join Gavin and Katie as they grow their business while preserving and protecting the farmland so it can continue to serve their family and community for generations to come. Also, be sure to follow The Davidson Farm on Facebook for information on store opening and events on the farm.

Artist A LIFETIME AS A

Rouja Green grew up under Communist oppression, but found her way to freedom here

Rouja Green moved to the Rogersville area in 2020. She was born in Bulgaria. She has spent her life in the arts, as an artist, an educator and administrator. Her journey to East Tennessee has taken many twists and turns. Her spirituality has helped her every step of the way.

Early Life

“I was born in Bulgaria; we lived many places in Bulgaria,” she said. “My dad was a photographer and mom was a journalist. All their friends were artists, musicians, and photographers. All my family were artists.

“I was exposed to art at a very early age. It is a very organic process for me. I just grew up with art. Art was a normal part of life. It was almost like I was born with a paintbrush in my hand!”

Rouja remembered, “A preschool teacher said my art was good. I started art lessons at seven, and I’ve never stopped learning.”

To get into a specialized art high school, she had to take a series of three exams. She made it, with the highest exam scores for that year. The high school program was for five years. It included drawing, painting, sculpting in clay and wood, wood carving and furniture-making. There were also classes in anatomy, art history, interior design, and perspective. Her graduation project was a seven-foot wooden sculpture.

She took private lessons for a year after graduation, then studied in college at Veliko Tarnovo. There were two more exams to be passed, and Rouja scored in the top twenty, so her studies continued at no cost. She studied sculpting, drawing and printmaking for the first two years. The last three years had an

emphasis on painting. Rouja graduated with a masters degree of fine arts with an emphasis on painting.

While Rouja earned opportunity for a great education (she also speaks six languages), there was another side to her youth in Bulgaria.

“When I was growing up, Bulgaria was under a Communist regime,” she recalled. “We were not allowed to go to church or have a Bible. We had a ‘young atheists’ club at school. They told us there is no God. I came to the conclusion that there is a God. I had a lot of questions.”

By the time Rouja got to high school, the Communist regime had failed, and people had freedom of religion again.

“We had Bible study at school. I started believing and walking with God,” she said.

Bibles still weren’t easy to come by. Rouja remembered looking through hundreds of books in antique store until she found a Bible, which she still has today.

She added, “God has saved my life many times, I’m blessed to be alive.”

In New York

“I was in New York after grad school. I had no intentions of staying. I had one backpack of clothes and $60 when I got there,” Rouja recalled.

Local artist Rouja Green, a Bulgarian-American who came to the US in the 1990s and eventually settled in Rogersville, with some of her work at the Local Artists Gallery.

She came to New York to work as a counselor at a YMCA camp. She decided to learn English and travel. She worked at a Rotary Club camp in New Hampshire for two months. She visited aunts and uncles in New York and decided to stay.

She studied for almost two years at the Art Students League of New York. She studied “mostly painting with awesome professors.” She began working as a mural artist for Mode Works in Manhattan. Her workplace was “just a couple of blocks from ground zero. I witnessed 9/11. I walked home to Queens after the attack.”

Her workplace closed down and she moved to the west coast.

In California

Rouja moved to California and spent 18 years there.

“I spent 15 years as the Executive Manager of the European School of Music and Art in Rancho Palos Verdes,” she said. “It had been a music school and I got to create the art program. I ran the school and was an art teacher. I also organized art exhibitions and music recitals.”

She grew tired of the pace of the city. She recalled, “We were dreaming of having a quaint little house in the mountains; to have land for a garden. We wanted a peaceful, quiet and green place. I wanted to focus on faith and nature.”

The move to Tennessee

“We had never heard of Rogersville,” Rouja explained. “We were

looking for country property, something serene and peaceful. We found a place at Hickory Cove, thirty acres, with a creek, ponds and forest.”

She added, “We are in the middle of nowhere. It’s quiet and peaceful. Everyone should live close to nature, closer to God! It’s inspiring!”

At Tusculum

Rouja became Director of the Center for the Arts at Tusculum University in Greeneville. She was in charge of the art program, including visual arts, performance arts and creative writing. She planned, advertised and organized music and art events. She recalled, “I loved promoting the arts, I’m very passionate about promoting the arts in East Tennessee!” She added that her time at Tusculum was “the highlight of my career.”

Rouja stayed in her position at Tusculum for almost three years.

“My career in art was threefold,” she said. “I was first an artist, second a teacher, and third an administrator. I wanted to pursue my career as an artist.”

Rouja today

Rouja said, “today I’m prioritizing my own art. God has given me certain gifts, I have to be a good steward of my gifts. The purpose of my art and my life is to give glory to God!”

Her work now in “mostly paintings and some 3D works.” Since leaving Tusculum, she has been in nine new exhibits and

produced 16 new paintings. She joined the Local Artist Gallery in Rogersville. She has works for sale there. She is teaching classes on Thursdays at the Gallery, adding “I’m available for commercial painting and portraits. I’m also available for workshops.”

Rouja’s faith is a constant theme with the art she creates. She has had a fantastic career that has taken many twists and turns. She said “God has blessed me with everything I’ve been through!”

Farm MCCRACKEN

Healthy eats and treats for pets

A sideline business expanded after it caught the attention of the state Department of Agriculture

Keith McCracken and his family began making gluten-free pet treats more than ten years ago. Their first set of Great Pyrenees puppies were allergic to gluten, so they began experimenting making treats for their dogs.

The treats were such a hit that the McCrackens decided to begin making them so other dogs could enjoy a homemade healthy treat. Keith said, “We feel like the Lord led us to make it into a business.”

Keith also owns a snack food company, two farms, and sells grass-fed beef and other farm products. Having experience in the food industry, they were already working

with the Tennessee Department of Agriculture when folks at the Department encouraged them to expand their farm products. Farm dog nutrition had already piqued the family’s interest, so they decided that was how they would expand.

The treat business quickly became a family venture. Keith’s wife writes the Farm blog and takes care of the paperwork, while Keith is joined by other family members and one employee in the farm kitchen producing and packaging the treats. Not only do they bake treats that are gluten-free, they also design them into 18 different shapes. The treats also come in 11 different flavors, with peanut butter being their signature flavor. Keith and his crew also make pet-friendly birthday cakes, paw butter, and paw wax. The paw products are made primarily with 100 percent grass-fed beef tallow.

A typical day in the pet treat business includes entering data into numerous Excel spreadsheets, completing inventory counts, marketing, email communications, managing the farm kitchen, preparing and adhering to baking schedules, delivering treats and other products, ordering baking and packaging supplies, cleanup and more.

Their treats, handmade bandannas, and other pet products are displayed and sold in stores and groomer locations across the area and into North Carolina. They are also sold online and shipped

Farm

Surgoinsville, Tennessee, is a place of immense beauty, and The Haven Farm located just off of Highway 11W is the perfect place to become enthralled by its charm. Don’t let the highway entrance hinder your decision to visit; you will be happily surprised once you are on the property. It is a quiet, humbling, and relaxing spot that you will want to visit time and time again.

Chris and Ashley Singleton and their sons, Gage and Holden admired the land years before they decided to purchase the 23acre farm. They have never regretted their purchase and knew exactly what they wanted to do with the property. They love it so much that they couldn’t keep it just for themselves; they had to share it with others.

With Chris’ experience of working with the community as

the owner of Singleton Collision and Singleton Automotive, and Ashley’s years of sculpting young minds as a teacher in Hawkins County, the pair were destined for the journey they have embarked upon with The Haven Farm.

The first thing that they did was give a name to the farm. They

decided that the perfect name would be after the little girl that they were never able to have, Haven. They soon decided to offer The Haven Farm as a rental space, and built a tiny house full of charm and outdoor space to enjoy. They named their house Eloheh, which is a Cherokee Indian word for harmony, wholeness, abundance, and peace. Eloheh is a one-bed, one-bath retreat for up to two people. It is the perfect spot to celebrate an anniversary, birthday, or just have a romantic getaway. If some alone time is what you are looking for, look no more; you can enjoy being onewith-nature as you recharge to face the everyday challenges of life.

Eloheh has been hosting visitors for nearly three years. People drive as far as six hours on a regular basis, and others travel from all across the United States and Canada come just to spend time at

The Haven Farm.

The beauty of East Tennessee surpasses many landscapes in the country. One couple even came to celebrate their anniversary of many years. The couple wrote, “A very special place that we will never forget. Our son and daughter-in-law reserved it for our 62nd anniversary.” Another guest said, “You have a lovely tiny home! It will hold a special place in our hearts since we got engaged on this trip. Thank you for letting us stay!”

A guest that has visited many places said, “We travel the world and I have to say, this was an amazing stay! You both (Chris and Ashley) have been amazing to us. Can’t wait until we come back next year!”

for a stunning photo location. Chris and Ashley have made big plans that are already under way. Designs have been completed on a tree house and a stone cottage to be added to the property. The cottage will house up to four guests while the tree house will be available for larger groups.

Their plans certainly do not stop there; a chapel and pavilion are already under construction, with hopes of their completion this summer. The Singletons are also all about preserving local history. The chapel is being built with 100 year-old, hand-hewn beams that will be transformed into hammered beam trusses. The chapel will be like no other around, full of history and charm. Just imagine adorning the already special space with regal wedding gowns, gorgeous flowers, eclectic groom’s attire, and unique decorations.

They also acquired a historic barn that was owned for many years by a well-known family from Surgoinsville, the Miller

family. The barn will be reclaimed, and used to turn the pavilion into an all-season venue barn. They expect completion of that renovation to be completed no later than 2027.

The Singleton family gives back to the community that has richly blessed them by offering their farm as the venue for hosting organized benefits for local law enforcement, first responders, military, and veterans groups. They humbly said, “Surgoinsville is such a great small community, and we feel like the area has really helped us succeed with the farm and Airbnb. We can’t wait for what’s in store in the future!”

For more information, read the many 5-star reviews, or to reserve the tiny house, visit Tiny Home in Surgoinsville at Airbnb. com. Join the farm’s Facebook page at The Haven to keep up with the venue and ongoing construction, in order to hold your event or special day.

Chris and Ashley Singleton own and operate The Haven Farm in Surgoinsville, along with the rental “getaway” house Eloheh and an upcoming chapel, pavilion, tree house, and stone cottage planned for the property.
