HalleluYah Farms, owned by Amy and Sean Ollice, is an organic, regenerative farm that has been serving Hawkins County and the surrounding areas for nearly three years.
The farm is known for its natural farming practices while producing high quality, chemical-free food. Amy and Sean said that they had a calling from God to farm as a way to help feed others.
The couple began with small scale homesteading in their backyard. Amy said, “That’s when my chicken addiction began and Sean’s love for growing things, creating fertile soil with
compost and studying soil microbes really began. It blossomed into a farm in 2022 when we moved to Rogersville and had a market garden, chickens and opened a farm store.”
The Ollice’s pasture-raised chickens, small flock of sheep, hives of honey bees, and vegetable garden are the heart of HalleluYah Farms. Their goods are showcased at their newly opened store at Three Bulls Farm on Beech Creek Road in Bulls Gap.
The store also offers a wide variety of products sourced from other local farmers, bakers, and makers who share their
commitment to natural and organic practices. During the off season for crops, organic food is ordered to maintain the store’s integrity by continuing to offer chemical-free produce.
The couple’s dedication to their farm is reflected in their methods, which follow regenerative principles, such as rotating animals on pasture to enrich the soil and enhance the environment.
They never use artificial chemicals or pesticides, and all pests are handled through natural means like beneficial bacteria, essential oils, and manual removal. This commitment to sustainability extends beyond farming practices into the products they offer in their store, ensuring customers have access to wholesome, clean food and goods.
The farm store is filled with locally raised meats, including chicken, grass-fed beef, lamb, and pork, as well as Wagyu beef raised on site at Three Bulls Farm. All of the animals are raised without vaccinations, hormones, or antibiotics and are fed nonGMO, soy-free feed.
The farm store also offers a variety of organic produce, honey, eggs, lard, tallow, and raw milk (for pet consumption per Tennessee state law). In addition, they carry handmade goods like sourdough baked goods, granola, kombucha, naturally fermented sauerkraut, fire cider, and personal care products such as goat milk soap and skin healing salves.
Amy and Sean strive to enable the store to become a one-stop shop for locals seeking healthy, organic foods. They believe in supporting small local farms and businesses to strengthen the community. Their goal is to encourage the growth of small farms, provide an alternative to industrial food systems, and support a model of farming that prioritizes soil health, biodiversity, and natural methods.

Before their farm store, buying local food required visits to multiple locations, burning way too much fuel and time.” Sarah Hayden also loves shopping at the farm store. She said, “My husband, Bill and I frequent HalleluYah Farms weekly! We are sticklers for clean meat and organic produce and they deliver. We get our beef, chicken, and lamb from them occasionally and eggs and milk every week. We also love the sourdough, salves, bath products, and kitchen spice blends! They really have everything and are wonderful people to boot. I love that they do not compromise and

As HalleluYah Farms looks toward the future, they hope to expand their services further, connect with more local farms, and continue to provide an accessible marketplace for small farmers to sell their goods. Their long-term goal is to help build a sustainable, local food system and support growth of small, family-owned farms that can help secure the community’s food supply and health for years to come.
As HalleluYah Farms continues to expand, Amy and Sean are always looking for additional farmers and makers to join their efforts. While they don’t yet employ staff, the farm is supported by a network of contributors from across the region.

Mooresburg is a community along Highway 11W between Rogersville and Bean Station. The internet proclaims that Mooreburg is “an unincorporated town in Hawkins County, Tennessee” and that it is “a census designated place.” The population was 903 in 2022. It may be a small community but it has a rich history and citizens who love living there.
Mooresburg is named for Major Hugh Moore, one of the early settlers. He came to the area from North Carolina in the early 1800s. His brothers John and Ewell, also came with him. Later other Moore family members settled here. Another brother,
Cleon, and sisters Sally and Elizabeth as well as their mother Elizabeth Gallahue Moore soon joined them. Moore purchased several thousand acres and is credited with laying out the lots of the community.
Other early settlers were Creeds, Etters, Pettys and Rogers. Mooresburg was a busy place in the beginning. Hugh Moore opened a store, and subsequently became Mooresburg’s first postmaster in 1814. His brother Cleon ran the nearby Red Bridge Tavern, on the banks of the Holston River. There were also two racetracks nearby.
Another prominent resident was William Cocke, who owned Mulberry Grove plantation. Cocke was a veteran of the

American Revolution and the War of 1812. He was a lawyer and served in the legislatures of Virginia, North Carolina, Franklin, Transylvania, the Territory South of the River Ohio, Tennessee and Mississippi. He was a member of the Tennessee Constitutional Convention and was one on the state’s first senators. Cocke County is named for William Cocke.
John Creed Moore was born in Mooresburg in 1824. He was the son of Cleon Moore. He was a graduate of West Point and rose to the rank of Brigadier General in the Confederate Army during the Civil War. He spent his civilian career as a school teacher in Texas, until he passed away in 1910. He is buried in Osage, Texas.
Another famous Mooresburg resident was race driver Scott Bloomquist. He moved to Mooresburg, bringing his race shop with him. He was known as one of the best dirt-track drivers in the sport. During his long career he had over 600 wins and nine national championships. He passed away in 2024.
Early on, Mooresburg was settled for its fertile farmland and its proximity to the Holston River. The Red Bridge Tavern was located on the river. Plantations and smaller farms utilized the rich soil of the area.
Mooresburg was known for its mineral springs. Mooresburg Springs was discovered by James Shields and Caleb Witt. A resort was developed and it operated from the 1850s to the 1940s. The resort included a large hotel and several privately-owned cabins. Galbraith Springs was another spa in the Mooresburg area. The Joseph Galbraith family were the original operators of the resort. It was considered more upscale than Mooresburg Springs. It featured a sprawling three-story hotel and featured a large dance pavilion and a bowing alley. Both Mooresburg Springs and Galbraith Springs offered luxury lodging, meals, recreation and of course, mineral water.
Another family, the Summers, owned a mineral spring and shipped water throughout the country.
Beginning in the mid-1800s, Mooresburg had several marble quarries. The Wrights, Stamps and Kerber families were the owners of the quarries. In its heyday, about 300 men worked in the marble industry in Mooresburg. Teams of mules hauled the marble to Whitesburg where it was loaded onto trains and sent all over the country. Mooresburg marble was used in the U.S. capitol building and the Tennessee capitol building.
Mooresburg Academy was chartered in 1878. Mooresburg had a high school until the late 1940s, when the students were bused to Rogersville. Today Mooresburg Elementary School is the only school in the community.
Mooresburg has changed over the years due to several events. The mineral spring business slowly phased out.
When a planned railroad through the area chose a different route, it doomed the marble industry.
In the 1940s, Cherokee Lake was formed, and several big landowners moved away. Many businesses and churches closed.
Many of the older, historic homes were lost.
The community saw more change in the 1970s when the Highway 11W 4-lane was built.
Mooresburg today
Today Mooresburg is a community of long-time residents and transplants from all over the country. There are two gas stations, a Dollar General, a new medical clinic, a restaurant and a wholesale food business. There are several churches in the community. Mooresburg Elementary School serves the area. While there are many multi-generational families still living in Mooresburg, the residents have one thing in common; they want to be here!

Not many people get to find their talents early in life, and even fewer get to pursue those talents their entire life. Such is the case for George Taylor.
George explained, “I doodled and sketched since I was little.”
Today, George is one of the Rogersville area’s best-known artists. He does many paintings of cars, but paints portraits, rural scenes and just about any other subject imaginable. He added “I’ll paint anything.”
George is a Rogersville native. His early years were spent in “a little brown house on Rogers Street near Crockett Creek. The family moved to an apartment and he remembers “my sister was born right over Crockett Creek in that apartment.” He spent some of his early years at his Papaw Wallace’s home in the Persia community. He remembers going out to Jack Drain’s store. George said “There were all kinds of guns on the wall, and a big rattlesnake hide. It was like a museum. Outside he had a menagerie, withraccoons, ‘possums, a buffalo, a moose and zebras.
The family moved around a lot. George’s father was a truck driver and they lived in Kentucky and Ohio. One of George’s memories from the road with his father were the country music stars they sometimes saw on the highways. “George said “I remember seeing Porter Wagoner and Waylon Jennings.”
George said “I always felt that Rogersville was home. I wanted to come home!”
‘Crazy George’
George signs many of his works as “Crazy George”. The name came about when he was a teenager. George remembered “I was always goofing around in high school. I was goofing around on the chairlift during a field trip to Gatlinburg. A girl said “you’re crazy, George.” Everybody, including the teachers, started calling me “Crazy George.”
He added “later, when I got into pinstriping and art, I used the “Crazy George” name.”
Art
George had an interest in drawing and sketching at a very young age. He always enjoyed art but was slow in developing his talent.
He said “I’ve wondered what my art would have been if I had been encouraged.” Some encouragement did come from two ladies that he worked with as a young man. He recalled “I went to the first Heritage Days. I walked around looking at different peoples’ art. I called some of the artists, but none of then were giving lessons. Then I called Jim Caswell and he said “come on down.”
Caswell had a huge influence on George’s artwork. George remembered “I went to Caswell’s and he was working on a truck. I thought “this might work!” Caswell didn’t give traditional lessons, he let me watch him paint.” One unique technique that George uses came directly from Caswell; “Jim is left-handed, so I learned to paint left-handed.
George reflected “I tell people that my two best teachers are trial and error; you never know what you can do until you try it.”
The artist today
Crazy George has remained active as an artist since his youth. He has painted a variety of subjects, including people, animals and barns, but he said “cars are my big deal.” George has owned many classic cars and in also an expert model car builder. He has painted countless pictures of classic cars for their owners. He added “If someone askes “what did you do with your life?” I’d say art and model cars are my life.”
His paintings have touched many peoples’ lives. He likes to share this story: “I painted a picture of a little old man wearing overhauls and carrying some flowers. I based it on a photograph in National Geographic Magazine. I took it and other pictures to the Tazewell flea market. Two young girls saw the picture and asked where I got the idea for it. I told them and one of the girls said “that’s my papaw.” She asked the price, I told her $40.00. She came back later crying and said she only had $15.00. I sold it to her and her smile touched my heart. Since then, that’s been my pay, seeing how much people like my pictures.”
Another story involves a painting of the of the Kyle house in Rogersville. George remembered “a local lawyer bought it as a gift for a lawyer friend in Washington, D.C.”
George also returned to the Heritage Days art show. He recalled “It was the first art show I entered and I won 1st place. I entered the Heritage Days show for several years.”
George’s talent has grown and evolved over his lifetime. One
thing that stands out in George’s painting is the attention to detail. He said “I’m a detail freak.” The paintings of cars sometimes have reflections in the wheels or chrome. The shadows and lighting on all subjects are perfect.
Final thoughts
George clearly loves his artwork. Health issues, including a back injury couldn’t keep him from his art. He added “I once painted 14 hours straight. A picture is nothing more than an illusion, you try to make it 3D.
Today George makes his home in the St. Clair community. He is commissioned to paint pictures of many cars in the local classic car community. His story is summed up by his philosophy; I’ll paint anything. Art is my life!”

Coach Latosha Jackson is in her fourth season as the head basketball coach at Rogersville City School. It is her first coaching job.
So far, her record is 98-12 , with back-to-back state championships, a state runners-up trophy, and consecutive unbeaten seasons. Her accomplishments are well-known, but the road to RCS has been an interesting trip.
Born Latosha Rectenwald in Huntington, West Virginia, she lived in Princeton, West Virginia until she was nine. Her family moved to Morristown where she attended East High School. Although she proved to be an excellent all-around, versatile athlete, her favorite sport was softball. She started playing softball at 11 years old. She was on the 2008 team that went to the Little League World Series. Latosha remembered “We finished fourth in the world. I played basketball, softball and volleyball all four years of high school. Softball was my favorite.” She suffered an injury in volleyball her senior year and missed the basketball season, but returned for softball.

We were just happy to go to state. We won our first game and went to the championship. We led the whole game against Englewood, but I called an inbound play that the team wasn’t comfortable with and we turned the ball over on a five-second call, and wound up losing. We finished 24-3 and were state runners-up.”

Latosha continued her career at Walters State Community College in Morristown. She recalls “We won the region and went to the national tournament in Utah. I have a ring from that tournament.” She then played two years of softball at East Tennessee State University. She earned a dental hygienist degree and worked in that field for five years. She decided “I realized it wasn’t for me.” She returned to school and earned a Masters of Education degree from Tusculum University.
Four years ago, Latosha saw a posting for a physical education teacher at Rogersville City School. She recalled “My passion was to be a coach, in any of the three sports; softball, volleyball or basketball. The offered me the PE job and asked if I wanted to be the girls’ basketball coach.” She added “I won’t let it go for the next 25 years!”
Latosha has enjoyed remarkable success as a coach. She remembered “In my first years, the team got off to a rocky start. We just couldn’t beat Newport Grammar. We didn’t win a game in the sectional tournament.”
Success blossomed in her second year as coach; “We were not expected to beat Newport. We were 1-1 with them in the regular season. They beat us in the regional tournament, but we played them again in the sectional. This time we double-teamed their best player, Kenady Deal turned it on in the last five minutes and the game went into overtime. In overtime, we took over and won.
In her third season, Latosha said the team motto was “One Goal”; and that goal was to win the state tournament. Latosha explained “We returned three starters and Molli Stuffle transferred in. We entered a Christmas tournament to face some tougher competition, bigger schools than us. Sevier County won the AAA championship and we (RCS, an “A” division school), beat them twice.” At the state tournament, we drew Homestead, which was a great team. We beat them and then won the state championship, finishing 28-0.”
In the 2024-25 season the Lady Warriors have continued to dominate all competition. Latosha said their motto is “run it back.” She explained “We returned three starters from the state championship team. They have the most desire for the game, they dive for any loose ball. I don’t have to tell them anything, they know what to do. We’re aggressive, smart and one pass ahead.” They rolled through the regular season unbeaten. They won the regional and sectional tournaments. They went to the state tournament and dominated. They were never challenged in their two games, winning their second consecutive state championship.
Latasha reflected on the second championship season; “This year’s state tournament was a bit different, I have 6 players that I am losing, so with that all in the back of our minds, this state tournament was bittersweet. I have Kenady & Rylee who have started every single game for 3 seasons straight, Moll, who has started every game for 2 seasons and Karlie, who added this year and was a big piece of our puzzle is also leaving. These girls and I have become close, they love playing basketball at RCS, they have accomplished more than anyone in the history of RCS and when I took them out of the championship game with 1 minute to go to be state champions, everyone was in tears. From the sidelines, why should we be upset, why should we all be crying, because something special was broken that day, a team that is every coach’s dream. We were 33-0 this season, 28-0 last season 61-0 playing teams in all divisions A, AA, AAA. It was an unforgettable season that I will never forget!
Latosha knows her current team is special; “I’m sad to see this class go. They’ve been with me three years. They are my dream team. I may never coach another team like this in my career.” She added “we’ve broken every single school record; some had stood for 30 years.” She credits assistant coach Kelsey Trent; “we started
together and have stayed together.”
Her family is a very important part of Latosha’s life. She lives in Morristown with her husband Rafeal and her sons Riley (2 years old) and Jax (10 months old). She recalled “during my first season, I had our first little boy just as the season was over. Last year I was 36 weeks pregnant at the state tournament!”
Latosha’s passion for coaching is the first thing people notice about her on the court. She explained “I love coaching kids that have the same passion for the game.”
Latosha reflected on her short, phenomenal time as a coach; “My memories revolve around sports. I have so many memories. I got the chance to play on successful teams and I want the kids that play for me to experience that as well.”

In the heart of every home, there’s usually that one thing can bring family and friends together, and for Paige Hammond’s home, it’s baking. In 2020 Paige decided to turn her love of baking and decorating into a thriving business, Beautifully Baked.
When she decided to share her talent with others, she had no prior experience running a business, but she was determined to follow her calling to create beautiful and meaningful eatable works of art.
At 29 years old, Paige took a leap of faith and started her business with the support of her family and friends. She credits much of her success to them, especially her husband, Zachary, and her dear friend, Madi. Madi works with the online marketing including setting up the business’s social media account. Social media is a great way to grow a business and Beautifully Baked’s account has not disappointed. Other than word of mouth, social media is where much of Paige’s business originates. Zachary’s unwavering support makes all the difference as she grows her business while maintaining an abundant family life. Being a full-time mother of small children is a feat within itself but adding your own business to the mix, the support of your husband is vital to the balancing act. As a mother, wife, homemaker, and baker, Paige is proud of the life she’s built.
Though Paige’s business began in the humble surroundings of her home kitchen, the personal touch and care she pours into every order has helped her business grow quickly. She began by offering a range of delicious baked goods: custom cakes, cookies, pies, cake pops, and even oldfashioned candy. The candy became a unique touch for clients seeking something extra special. Despite Beautifully Baked’s success, Paige still manages her business part-time, making sure to prioritize her role as a full-time mother and a loving wife.
whimsical details made it a personal favorite and highlighted Paige’s love for turning every creation into something truly memorable. Not only did her sister love the presentation of the cake and treat table, she was overwhelmed by the delicious taste of everything prepared by Paige. As always, her big sister knocked it out of the park.
One of Paige’s favorite undertakings was crafting a stunning Candy Wonderland cake and treat table for her sister’s 10th birthday. The vibrant colors and
Paige’s absolute favorite treats to bake and decorate are engagement and wedding cakes. She loves the elegance and excitement that comes with creating unique, one-of-akind cakes. She finds great joy in making couples’ dreams come true through her designs.
Through Beautifully Baked, Paige has found a way to give back to her community by offering free samples and donating extra treats to local businesses and neighbors. She also participates in local markets to showcase her creations and build relationships with her community. The support she receives has been a driving force behind her business, with local shops offering her space to set up and share her talents.
Paige is deeply grateful for every customer, seeing each order as a reflection of trust and a chance to make someone’s celebration even more special. Looking ahead, she dreams of expanding her business further. She plans to grow as her children start school and is excited to take on more orders and responsibilities. Paige is determined to continue delivering custom designs that bring life and joy to every event. Her dedication to customer satisfaction and her genuine love for the art of baking ensures that Beautifully Baked will continue to thrive in Hawkins County for years to come.

Bronson and Erika Coffey are the proud owners of Onyx Salon & Barber Co., a vibrant, creative, and inviting space in Rogersville.
At just 24 years old, Erika, who had been working in the beauty industry since 2017, saw an opportunity to create a welcoming environment that would celebrate individuality and creativity. When Erika pitched the idea to Bronson, he was eager to dig right in to help make Erika’s vision a reality.
The inspiration for Onyx came from Erika’s desire to establish a salon where clients could feel comfortable regardless of their background, appearance, or style. She wanted a space where both clients and stylists could freely express their creativity and where the education and development of the beauty community could thrive. In October 2021 the couple fulfilled Erika’s vision with the opening of Onyx.
Services offered at their establishment are diverse, catering
to a wide range of beauty needs. Haircuts, coloring, hair extensions, lashes, nails, and traditional barber services such as beard shaping and straight razor shaves are available to clients. Erika is a licensed cosmetologist with specialized training in hair extensions, while her husband, Bronson, is a licensed master barber known for his artistry, including “hair tattoos” and traditional cuts. Onyx is not just a salon and barber shop; it also hosts educational events aimed at continuing the growth of fellow stylists.
I am forever grateful for all of the support we’ve been given. Our friends & family- especially my dad, Jimmy Davis. He never fails to believe in me and encourages me to follow my heart and think unconventionally. My younger brother, Landon Davis, is our go to guy. From doing inventory checks, to cleaning, to running errands, he’s always a really big help behind the scenes when we need him.
When Bronson and Erika opened Onyx, they faced challenges finding the right space. But after a year of searching for a larger space to expand their growing business, they stumbled upon their current building—a place filled with character. Once a mill and feed store for local farmers, the historic location is perfect for Onyx with its old charm with its exposed brick walls and high ceilings.

Erika’s journey to Onyx wasn’t her first entrepreneurial venture.
Before opening Onyx, she worked as a booth rental stylist, which gave her some experience running her own brand. Onyx, however, marked the beginning of her largest business endeavor. In addition, Erika is in the process of finalizing the Onyx Hair Extension Co., a brand dedicated to high-quality hair extensions, which is expected to launch this year.
Onyx gives back, sponsoring local student sports and theater clubs, and organizing events to support causes like the Cherokee High School Fishing Team, which raised $1,220 in 2023.
Onyx has also collaborated with Hometown Heroes to offer free haircuts to veterans, and has hosted events like Curls + Cocktails, a hands-on class that teaches clients how to style their hair at home like the salon professionals. Onyx is an independent artist salon, where each stylist rents their own space and operates their business within the salon. The talented team also includes Christin Forgety, a licensed cosmetologist specializing in hair coloring, extensions, and cuts; Chloe Weems, a licensed cosmetologist offering hair coloring, cuts, and nails; and Brittany Anderson, a licensed cosmetologist offering nail and lash services.
