He lauded Nanchang as a city of world heritage that is home to many of China’s ‘greatest’ sites such as Lushan Mountain

and Wuyuan Village; China’s greatest countryside attractions, The Star of Nanchang; China’s greatest Ferris wheel and the world’s second largest, as well as China’s greatest porcelain at Jingdezhen. He voiced confidence that Thai travelers will definitely enjoy the new destination, especially those from the east who will now have a convenient and low cost option to travel to China.

“We believe that tourism in the east and Pattaya is growing very rapidly and that U-Tapao Airport is absolutely ready to accommodate regular flights. These beliefs led us to creating our latest flight base and we chose the two Chinese cities of Nanchang and Nanning as its first routes. With plans to expand to other routes both domestic and international we have targeted acquiring 2 Airbus A320s for a fleet at U-Tapao” Mr. Tassapon said.

UNWTO เชื่อมั่นเมืองไทย UNWTO Believes in Thailand

คุณคาร์ลอส โวกเลอร์ รองเลขาธิการองค์การท่องเที่ยวโลก (UNWTO) เปิดเผยว่า การท่องเที่ยวไทยจะกลับมาเป็นปกติในช่วงไฮซีซั่น อย่างแน่นอน เพราะประเทศไทยมีแหล่งท่องเที่ยวที่ส�ำคัญสวยงามติดอันดับโลก สร้างความประทับใจแก่นักท่องเที่ยวมาเป็นระยะเวลานาน หลายปีแล้ว คุณเดวิด สโคว์ซิล ประธานสมาคมการเดินทางและท่องเที่ยวโลก กล่าวว่า ในสายตาของชาวต่างชาติมีความเข้าใจถึงเหตุการณ์ที่เกิดขึ้น รวมถึงประทับใจในความร่วมมือให้การช่วยเหลือทั้งของภาครัฐและเอกชน และยังคงมองเห็นประเทศไทยเป็นดินแดนที่น่าเดินทางมา ท่องเที่ยวอีกเช่นเดิม Mr. Carlos Vogeler, Director – Executive Secretary of Member Relations at the World Tourism Organization (UNWTO) revealed Thai tourism will definitely get back to normal during the high tourist season because Thailand has several major tourist attractions with the world class ranking in term of beauty that has impressed most tourists for many years.

Mr. David Scowsill, President & CEO, World Travel & Tourism Council (WTTC) said that foreigners understand the situation as well as impress with the collaboration from both government and private sectors and still consider Thailand as the best tourism land as usual.

Thai Hotels Association (THA) joined the press conference on the assisting situation for tourists who were the victims of the explosion in Ratchaprasong intersection, held at Ministry of Tourism and Sports on Tuesday 18 August 2015 as Mrs. Kobkarn Wattanavrangkul, Minister of Tourism and Sports presiding over the press conference to make the statement about the safety situation and tourist assisting scheme, while she also expressed her condolences to injured and dead persons as well as was willing the fully support to the tourists.

Thai Hotels Association (THA) in-associated with Tourism Authority of Thailand (TAT) and the Association of Thai Travel Agents (ATTA) arranged the 47th Thai Travel Industry Tournament (T.T.I.T.) on Tuesday 18 August 2015 at Bangkok Golf Club, Patumthani province to extend good relationship amidst 3 agencies which this time TAT hosted the tournament. In addition, ATTA was the winner of the tournament and got the trophy.

อย่ามองข้ามก�าลังซื้อ ทัวริสต์แดนภารตะ

Don’t Underestimate the Purchasing Power of the Bharat Tourists เหตุระเบิดใจกลางกรุงย่านราชประสงค์เมื่อ 17 สิงหาคมที่ผ่านมา น�าพาซึ่งความอกสั่นขวัญเสีย เพราะมีผู้เสียชีวิตจากเหตุการณ์นี้ถึง 20 ศพ และบาดเจ็บอีกกว่า 100 ราย นอกเหนือจากความเสียหายในชีวิตที่ไม่อาจประเมินค่าได้แล้ว ในเชิงผลกระทบทางเศรษฐกิจ การท่องเที่ยวแห่งประเทศไทย (ททท.) ประเมินว่าภาคการท่องเที่ยวไทยจะสูญเสียรายได้ในช่วง เดือนกันยายน - พฤศจิกายนนี้ประมาณ 6 - 7 หมื่นล้านบาท โดยเฉพาะจากนักท่องเทีย่ วตลาดเอเชียทีอ่ อ่ นไหวกับ สถานการณ์ คาดว่า จะชะลอการเดินทางพอสมควร ภาค เอกชนท่องเทีย่ ว ทัง้ ฟากฝัง่ ผูป้ ระกอบการโรงแรม บริษทั ทัวร์ สายการบิน และอืน่ ๆ ต่างพูดตรงกันว่าเหตุการณ์นสี้ ง่ ผล ต่อภาพลักษณ์และความเชือ่ มัน่ ด้านความปลอดภัยอย่างมาก อยากให้รฐั บาลเร่งกูศ้ รัทธาจากนักท่องเทีย่ วต่างชาติโดยด่วน ไม่เช่นนัน้ ในเดือนกันยายน - ตุลาคม ซึง่ เป็นช่วงทีน่ กั ท่องเทีย่ ว จะเริม่ จองแพ็คเกจท่องเทีย่ วช่วงไฮซีซนั่ อาจมีอนั ปรับแผนการ เดินทางเลือกไปเทีย่ วทีอ่ นื่ แทน ทุกคนต่างคาดหวังว่า ผลกระทบ จะเกิดขึน้ เพียงระยะสัน้ ราว 3 เดือนเท่านัน้

โดย ททท. ส�านักงานนิวเดลีและมุมไบ วางกลยุทธ์ไว้วา่ จะ ขยายสัดส่วนตลาดนักท่องเทีย่ วอินเดียกลุม่ ทีม่ กี า� ลังซือ้ สูง จาก สัดส่วน 25% ในปีทแี่ ล้ว เพิม่ เป็น 30% ในปีนี้ ล้อแนวโน้มการ เติบโตของเศรษฐกิจอินเดียทีค่ าดว่าปีนจี้ ะขยายตัวทีร่ ะดับ 7.5% นอกจากนี้ ผลวิจยั ของบริษทั โกทัค กรุป๊ ร่วมกับ เอินส์ท แอนด์ ยัง ได้ระบุถงึ ตัวเลขมหาเศรษฐีในอินเดีย ช่วงปี 2557 2558 ไว้วา่ จะมีมากกว่า 1 แสนครัวเรือน และมีแนวโน้มเพิม่ เป็น 3 แสนครัวเรือนในอีก 3 ข้างหน้า หรือคิดเป็นประมาณ 1% ของประชากรอินเดียทัง้ หมด ตัวเลขรายได้ของมหาเศรษฐี อินเดียเหล่านี้ อยูท่ ี่ 250 ล้านรูปี หรือประมาณ 130 ล้านบาท ต่อครอบครัว ขณะทีช่ นชัน้ กลางมีรายได้ประมาณ 3.4 แสน - 1.7 ล้านรูปี หรือประมาณ 1.8 แสนบาท - 8.69 แสนบาท

เพือ่ แนะน�าแหล่งท่องเทีย่ วส�าหรับกลุม่ ไฮเอนด์ โดยแหล่ง ท่องเทีย่ วทางทะเลที่ ททท. แนะน�าและโปรโมทเพิม่ เติมจาก ภูเก็ตและพัทยา คือ แหล่งท่องเทีย่ วในสุราษฎร์ธานี เช่น อุทยานแห่งชาติเขาสก เขือ่ นรัชชประภา รวมถึงเกาะต่างๆ ทัง้ เกาะสมุย เกาะพะงัน และเกาะเต่า

ตลาดนักท่องเทีย่ วอินเดียจะเป็นส่วนส�าคัญของกระแสนัก ท่องเทีย่ วจากตลาดเอเชีย ช่วยชดเชยรายได้จากนักท่องเทีย่ ว ตลาดยุโรปทีช่ ะลอการเติบโต จากปัจจัยลบปัญหาเศรษฐกิจ พร้อมจัดโรดโชว์ให้ขอ้ มูลแก่บริษทั ทัวร์ทจี่ ดั โปรแกรมท่องเทีย่ ว แก่ผขู้ บั ขีบ่ กิ๊ ไบค์ชาวอินเดีย ขณะที่ ‘ตลาดแต่งงาน’ ททท. อย่างไรก็ตาม แม้นกั ท่องเทีย่ วโซนเอเชียตะวันออก อย่างจีน ยังเพิม่ ดีกรีทา� ตลาดนีอ้ ย่างต่อเนือ่ ง ไทยต้องแข่งขันกับ 2 ประเทศ ฮ่องกง ไต้หวัน จะหวัน่ กลัว แต่ยงั มีนกั ท่องเทีย่ วจากอีกตลาด คูแ่ ข่งอย่างเมอริเชียสและศรีลงั กา เพือ่ ชิงการเป็นจุดหมาย หนึง่ ทีก่ ระแสการเดินทางมาไทยยังคงดีไม่มตี ก ตลาดทีว่ า่ นัน้ ปลายทางทีค่ แู่ ต่งงานชาวอินเดียชืน่ ชอบ โดยไทยสามารถรุก คือ อินเดีย เพราะไม่วา่ จะเกิดเหตุการณ์อะไรกับเมืองไทย ทัวริสต์ เมือ่ ความร้อนแรงทางเศรษฐกิจของแดนภารตะ หนุนให้กา� ลัง จับตลาดได้อยูห่ มัด จนได้รบั รางวัล ‘เดอะ เบสท์ เวดดิง้ เดสติ แดนภารตะไม่มหี วัน่ อยูแ่ ล้ว ซือ้ ของชาวอินเดียสูงขึน้ ส่งผลให้มอี งค์การส่งเสริมการท่องเทีย่ ว เนชัน่ ’ 4 ปีตอ่ เนือ่ ง จากนิตยสารแทรเวล แอนด์ เลเชอร์ ของ นับ 50 ประเทศ รุกเข้ามาตัง้ ส�านักงานเพือ่ ท�าการตลาดแย่งชิง อินเดีย และจากสถิตใิ นแต่ละปีจะมีคสู่ มรสจากอินเดียมาจัดพิธี โดยตลอดปี 2558 ททท. ตัง้ เป้าจ�านวนชาวอินเดียมาเทีย่ ว ฐานนักท่องเทีย่ วอินเดียกันยกใหญ่ แต่งงานในไทยมากกว่า 100 คู่ ค่าใช้จา่ ยต่องานไม่มากไม่มาย ไทย 1 ล้านคน เพิม่ ขึน้ 10% เมือ่ เทียบกับปีทแี่ ล้ว ความน่า เท่าไหร่ เฉลีย่ ไม่ตา�่ กว่า 10 ล้านบาทเท่านัน้ เอง ทีผ่ า่ นมาเคย สนใจของตลาดอินเดีย คือ เรือ่ งค่าใช้จา่ ยต่อวันทีค่ อ่ นข้างสูง อย่างไรก็ตาม ไทยยังครองต�าแหน่งเดสติเนชัน่ ทีไ่ ด้รบั ความ มีคแู่ ต่งงานระดับมหาเศรษฐีเข้ามาจัดในไทย ใช้จา่ ยสูงถึง 100 รายงานของกระทรวงการท่องเทีย่ วและกีฬา ระบุวา่ นักท่องเทีย่ ว นิยมสูงจากชาวอินเดีย แนวทางเพิม่ สัดส่วนนักท่องเทีย่ วกลุม่ ล้านบาท ส่งผลให้หลายๆ โรงแรมในภูเก็ต เกาะสมุย กระบี่ อินเดียใช้จา่ ยสูงเกือบ 6,000 บาทต่อวัน มาวินเป็นอันดับ 4 ก�าลังซือ้ สูงและระดับไฮเอนด์ของ ททท. ในปี 2559 รูปแบบ และหัวหิน ได้รบั ความสนใจจากคูแ่ ต่งงานชาวอินเดีย ต่อหน้า 10 รองจากนักท่องเทีย่ วจีน สิงคโปร์ และมาเลเซียเท่านัน้ การท�ากิจกรรมจะเจาะกลุม่ สังคมของผูอ้ าศัยคอนโดมิเนียมหรู 8 THAI HOTELS & TRAVEL | OCTOBER - NOVEMBER 2015

ระยะยาว ททท. ยังเตรียมเสนอ คุณกอบกาญจน์ วัฒนวรางกูร รัฐมนตรี ว่ าการกระทรวงการท่ องเที่ ยวและกี ฬ า ถึ ง แนวทางการปรับแก้ค�ำประกาศกระทรวงสาธารณสุข เกี่ยวกับหลักเกณฑ์ วิธีการ และเงื่อนไขในการโฆษณา สถานพยาบาลว่า จะสามารถหารือกับรัฐมนตรีกระทรวง สาธารณสุข ในการปรับแก้ค�ำประกาศได้มากน้อยเพียงใด เพื่อให้สามารถเพิ่มเนื้อหาโฆษณาหรือรูปแบบการโฆษณา ดึงดูดและสร้างการรับรู้ข้อมูลให้กับนักท่องเที่ยวเพิ่ม มากขึ้น ในลักษณะเดียวกับการโฆษณาทางการแพทย์ใน ประเทศเกาหลี ไต้หวัน ที่เจาะตลาดดูแลสุขภาพความงาม เป็นหลัก “ต้องยอมรับว่า ปัจจุบันกลุ่มสินค้าและบริการด้านสุขภาพ ของไทย เป็นที่รับรู้ในระดับนานาชาติมากขึ้นเรื่อยๆ คาดว่า แต่ละปีธุรกิจน่าจะมีรายได้และจ�ำนวนผู้ใช้บริการเติบโต เฉลี่ยปีละ 10% และเมื่อแยกตามประเภทแล้วมีหลาย บริการที่ได้รับความนิยม โดยเฉพาะสุขภาพเวชศาสตร์ชะลอ วัยและความงามที่เติบโตเฉลี่ยถึงปีละ 20% เป็นกลุ่มที่สร้าง รายได้ให้ภาคท่องเที่ยวสูง เพราะค่าใช้จ่ายเฉลี่ยต่อคน ต่อทริปมากกว่า 1.3 แสนบาทขึ้นไป เป็นค่าใช้จ่ายด้านการ รักษาราว 40% และท่องเที่ยวอีก 60% ทั้งอาหาร โรงแรม ค่าเดินทาง รวมถึงยังมีค่าใช้จ่ายของผู้ติดตามที่มากับคนไข้ ประมาณ 3 หมื่นบาทต่อคน พักพ�ำนักประมาณ 5 - 7 วัน ท�ำให้ปีนี้คาดว่ารายได้และจ�ำนวนนักท่องเที่ยวจะเติบโต 10% ของเป้าหมายรายได้นักท่องเที่ยวต่างชาติปีนี้ 1.4 ล้าน ล้านบาท จากปี 2557 มูลค่า 1.54 แสนล้านบาท จ�ำนวน นักท่องเที่ยว 3.3 ล้านคน” รองผู้ว่าการฯ ททท. ระบุว่า นักท่องเที่ยวนิยมเดินทาง มาใช้บริการ ส่วนใหญ่มาจาก จีนและกลุ่มตะวันออกกลาง รัสเซีย ญี่ปุ่น รวมถึงออสเตรเลีย เพราะด้วยราคาที่ สมเหตุสมผล การบริการที่ดี ประกอบกับไทยมีจุดแข็ง ของแหล่งท่องเที่ยวที่หลากหลาย เมื่อเทียบกับประเทศ คู่แข่งส�ำคัญ ทั้งไต้หวัน สิงคโปร์ เกาหลีใต้ รองรับนัก ท่องเที่ยวให้สามารถไปพักผ่อนระหว่างรอผลการตรวจ หรือพักฟื้นหลังจากรักษาแล้วเสร็จ

นอกจากนี้ ยังพบว่า กลุม่ นักท่องเทีย่ วจากประเทศสิงคโปร์ ฮ่องกง จะนิยมมาใช้บริการในช่วงวันหยุดสุดสัปดาห์ เช่น ท�ำเลเซอร์รกั ษาผิวหน้า, ฉีดโบท็อกซ์ โดยจะมีการใช้จา่ ย ประมาณ 2 - 3.5 หมืน่ บาท ส่วนข้อมูลการใช้บริการเชิง สุขภาพด้านอืน่ นัน้ พบว่าหากเป็นการท�ำศัลยกรรมพลาสติก จะอยูท่ ี่ 1 - 3 สัปดาห์ การรักษาด้านผิวหนัง 3 วัน การตรวจ เช็คสุขภาพประมาณ 3 วัน และการรักษาโรค 1 - 6 เดือน

Mrs. Wilaiwan Tawichsri, Deputy Governor in Tourism Product, Tourism Authority of Thailand (TAT) has taken this opportunity to earn some market share for Thai tourism industry by indicating besides the arrangement of Thailand Health & Wellness Tourism Showcase 2015 between 14 – 17 September by TAT, there were approximately 50 representative companies specially in charging of this market from the target countries such as China, Middle East countries, Russia, ASEAN countries and Japan, etc. showing up to setup the table top session with 36 Thai entrepreneurs as well as 25 presses to broadcast the news in order to show the capability of Thai medical service products for the world’s recognition and take up the group of health conscious tourists which tends to continually increase and is considered as the group with high capacity since it has already generated the direct incomes for approximately 500 million baht now.

TAT’s Deputy Governor indicated most tourists come from China and Middle East countries, Russia, Japan as well as Australia because of the reasonable cost, and good service, while Thailand has strength in the diversity of tourist attractions comparing to its competitors such as Taiwan, Singapore and South Korea that can take up the tourists during the waiting time for the medical examination result or rehabilitation after the completion of the medical treatment.

In the long run, TAT has already prepared to propose Minister of Tourism and Sports Kobkarn Wattanavrangkul to discuss with Minister of Public Health about the possibility to amend the context in the Notification of Ministry of Public Health regarding the rules, procedure and conditions for clinic advertising so that all hospitals and clinics can add more advertising content or format to attract the greater number of tourists similar to the medical advertisings in Korea and Taiwan that mainly penetrate into the Health & Wellness market.

“We must admit currently the group of Thai health & wellness products and services has continually gained the world’s recognition which is expected the business to continually grow in term of income generating and number of service users in average of 10% each year. And when dividing into the

service categories, there are several popular categories particularly for Anti-Aging and Beauty service that grows in average of 20% each year.

Actually, this group of wellness services is considered to generate a large amount of incomes for tourism sector because the average cost per person per trip is approximately 1.3 hundred thousand baht or more which is divided into the cost of treatment for approximately 40% and 60% for travel cost including food, accommodation, transportation costs as well as the expenses of the entourages for approximately 30,000 baht per person while they usually stay between 5 – 7 days per trip. Thus, this year is expected the incomes and number of tourists to grow by 10% of the 1.4 trillion baht income goal earning from the foreign tourists this year comparing to 2014 at 1.54 hundred billion baht of income generating and 3.3 million foreign tourists visiting.” said Mrs. Wilaiwan.

ส่วนเล็กแต่เป็นเรื่องใหญ่ที่ต้องให้ความสำาคัญ Kitchen in the Hotel; a Small Section to Pay Serious Attention

ครัวถือเป็นส่วนใช้งานที่ส�าคัญของภัตตาคารในโรงแรม เพราะเป็นพื้นที่ในการเตรียมอาหาร ปรุงอาหาร และเป็นส่วนเตรียม พืน้ ทีข่ องอาหารออกไปสูส่ ว่ นภัตตาคารต่อไป พืน้ ทีค่ รัวต้องมีการดูแลเอาใจใส่ เพราะเกีย่ วกับเรือ่ งความสะอาด สุขอนามัย ซึ่งเป็นเรื่องเกี่ยวกับปากท้องของลูกค้าหรือแขกที่เข้ามาใช้บริการ การออกแบบพื้นที่ครัวควรจะเป็นพื้นที่กว้างขวางพอ สมควร หากมีพื้นที่ 3 ส่วน จะใช้เป็นพื้นที่ครัว 1 ส่วน อีก 2 ส่วนจะเป็นพื้นที่ส่วนรับประทานอาหารในภัตตาคาร ครัวเปิด… สร้างความน่าสนใจในกิจกรรมการท�าอาหาร

ปัจจุบนั การออกแบบครัว จะมีการออกแบบเป็นลักษณะแบบ ครัวเปิดมากขึน้ โดยเฉพาะอย่างยิง่ กับครัวในภัตตาคารอาหาร ญีป่ นุ่ ซึง่ แตกต่างจากการออกแบบแบบครัวปิด ข้อดีของการ ออกแบบแบบครัวเปิด คือ ผูใ้ ช้บริการหรือลูกค้าสามารถเห็น กิจกรรมการประกอบอาหารได้อย่างใกล้ชดิ สร้างความเชือ่ มัน่ ในความสะอาดได้ดที เี ดียว แต่ขอ้ เสีย คือ เหมาะกับการประกอบ อาหารหรือปรุงอาหารแบบไม่หนักหรือแบบเบาๆ เพราะจะมี เรือ่ งกลิน่ ทีส่ ามารถเข้าไปรบกวนแก่ลกู ค้าหรือแขกได้ ตัวอย่าง ครัวเปิดทีอ่ อกแบบและสามารถประยุกต์ให้เป็นส่วนหนึง่ กับส่วน รับประทานอาหารในภัตตาคารทีม่ คี วามสวยงาม เช่น ครัวของ ศรีพนั วา ภูเก็ต ทีม่ กี ารจัดส่วนครัวปรุงอาหารแบบครัวเปิด ลักษณะการออกแบบครัวมาตรฐานทีส่ ามารถท�างานได้งา่ ย และประหยัดพืน้ ที่ คือ ครัวรูปตัวยู พืน้ ทีต่ รงกลางเป็นส่วนปรุง อาหารทีเ่ ป็นส่วนเตา หรือถ้าทีไ่ ม่พอก็นา� หัวเตาร้อนไว้ซกี หนึง่ อีกซีกเป็นส่วนเตรียมอาหาร จัดอาหาร ตูเ้ ย็น ตูเ้ ก็บของก็เรียง กันไปในลักษณะทีห่ นั มาหยิบฉวยได้สะดวก หากภัตตาคารบาง แห่งมีสไตล์อาหารหลายประเภท เช่น อาหารไทย จีน ก็ควรแยก ประเภทพืน้ ทีก่ ารใช้งานไม่ปะปนกัน ยิง่ หากเป็นครัวจีน พืน้ ที่ ส่วนเตาควรจะติดตัง้ รางระบายน�า้ และก๊อกน�า้ ใกล้ๆ กัน เพราะ อาหารจีนมีการล้างกระทะบ่อย

การจัดเตรียมพื้นที่ครัวที่ไม่ควรมองข้าม ควรมี หลักการออกแบบที่ไม่ซับซ้อน ดังต่อไปนี้

1. พืน้ ทีใ่ นการใช้งานของต�าแหน่งเตรียมอาหาร เตา อ่างล้าง และตูเ้ ย็นหรือตูแ้ ช่ ควรอยูใ่ กล้ๆ กัน แต่ไม่ cross circulation 2. พืน้ ทีส่ ญ ั จร ทีไ่ ม่ใช่พนื้ ทีก่ จิ กรรม ควรมีระยะกว้างพอ สมควร อย่างน้อยต่อการเดินสัญจร ประมาณ 1.8 – 2.0 เมตร เพือ่ ไม่ให้เกิดอุบตั เิ หตุ และขวางทางจากพืน้ ที่ การใช้งาน รวมถึงเป็นพืน้ ทีส่ ญ ั จรทีส่ ามารถเข็นรถเข็น ได้สะดวกด้วย 3. ต�าแหน่งปลัก๊ ไฟ ควรอยูใ่ นต�าแหน่งทีเ่ หมาะสมและห่างไกล กับพืน้ ทีส่ ว่ นเปียกพอสมควร ปลัก๊ ไฟส�าหรับเตาควร ติดตัง้ ให้สงู จากพืน้ อย่างน้อย 75 cm. ให้สงู จากพืน้ พอ สมควร เพือ่ สามารถล้างท�าความสะอาดพืน้ ได้งา่ ย ไม่ตอ้ ง ระมัดระวังกับต�าแหน่งปลัก๊ ไฟ และปลัก๊ ไฟส�าหรับเครือ่ ง ดูดควันควรติดตัง้ ให้สงู จากพืน้ อย่างน้อย 190 cm. ส่วนปลัก๊ ไฟส�าหรับเครือ่ งใช้ไฟฟ้าอืน่ ๆ ควรติดตัง้ ให้สงู จากพืน้ อย่างน้อย 120 cm.

4. จัดต�าแหน่งของตูเ้ ก็บของและภาชนะต่างๆ ให้เป็นสัดเป็น ส่วน อุปกรณ์ใดทีใ่ ช้รว่ มกันกับพืน้ ทีก่ จิ กรรม ก็ควรจัดวาง ให้อยูใ่ นต�าแหน่งใกล้กนั เช่น ตูเ้ ก็บเครือ่ งปรุง ควรอยูใ่ กล้ กับเตาประกอบอาหาร ตูเ้ ก็บจานชาม ควรอยูใ่ กล้กบั อ่าง ล้างจานชาม เป็นต้น 5. จัดต�าแหน่งของพืน้ ทีต่ า่ งๆ เรียบง่าย ไม่ตอ้ งยึกยัก ซับซ้อน เพราะจะท�าให้การท�าครัวเกิดความล่าช้า ซึง่ เป็นผลให้สญ ู เสียลูกค้าหรือแขกจากการบริการได้ 6. จัดเตรียมพืน้ ทีด่ า้ นหน้าประตูครัวให้กว้างพอสมควรเพราะ เป็นส่วนทีม่ กี ารสัญจรถี่ เพราะใช้ในการเสริฟ์ เข็นรถเข็น รวมถึงเป็นพืน้ ทีเ่ ข้าออกหลัก 7. เคาน์เตอร์ตา่ งๆ อ่างล้าง ควรสูงประมาณ 75 cm. จากพืน้ เพือ่ ให้ใช้งานได้พอดีกบั สัดส่วนของมนุษย์เอเชีย

แบบบ้านเรา แต่ถา้ เป็นพ่อครัวฝรัง่ อาจเพิม่ ความสูงอีก ประมาณ 10 - 15 cm. ก็ได้ ชัน้ ล่างสุดใต้โต๊ะให้อยูส่ งู จาก พืน้ ประมาณ 15 cm. ทีใ่ ห้เว้นไว้เพือ่ การท�าความสะอาด สามารถก้มใช้ไม้กวาดไปท�าความสะอาด มีชอ่ งว่าง พอสมควรทีส่ ามารถท�าความสะอาดได้งา่ ย ไม่ตอ้ งก้มลง ไปติดพืน้ มาก การออกแบบใช้วสั ดุปพู นื้ มีความส�าคัญเพราะกิจกรรม ทีเ่ กิดขึน้ มีการใช้ความคล่องตัว และมีการใช้งานถี่ พืน้ ต้องไม่ลนื่ สามารถท�าความสะอาดได้งา่ ย ลักษณะของ พืน้ ทีเ่ หมาะสม เช่น พืน้ กระเบือ้ งด้าน ไม่มนั พืน้ ปูทบั ด้วย โพลียรู เี ทน คอนกรีต เป็นต้น ปล่องดูดควัน มีความจ�าเป็น ยิง่ หากเป็นครัวไทย ครัวจีน เพราะกิจกรรมการปรุงอาหาร ค่อนข้างมีกลิน่ และควัน รบกวน พยายามเดินท่อให้ใกล้กบั มอเตอร์ให้มาก เพือ่ ให้ ก�าลังในการดูดควันมาก การระบายอากาศภายในครัว มีความส�าคัญมาก ให้ระยะ ความสูงจากพืน้ ถึงเพดานมีระยะทีส่ งู พอสมควร นอกจาก การระบายอากาศทีด่ จี ะสร้างภาวะไม่รอ้ นอบอ้าวให้กบั พ่อครัว แม่ครัว และลูกมือแล้ว ยังช่วยในเรือ่ งการลด กลิน่ อับ ซึง่ เกีย่ วกับสุขอนามัยและความสะอาดด้วย และไม่เป็นทีอ่ ยูข่ องสัตว์ทนี่ า� โรค เช่น แมลงสาบ หนู อีกด้วย ติดตัง้ หลอดไฟ ให้ความสว่างให้เพียงพอ และหมัน่ ท�าความสะอาด หลอดไฟ ดวงโคมด้วย เพราะเมือ่ ใช้งาน จะมีคราบไขมัน คราบเขม่าของการปรุงอาหารขึน้ ไปจับ ตามหลอดไฟ ดวงโคม ท�าให้ประสิทธิภาพด้อยลง รางระบายน�า้ ท�าให้มคี วามลาดเอียง ลงสูร่ อ่ งระบายน�า้ สามารถกวาดน�า้ ได้งา่ ย ควรออกแบบให้ตะแกรง ปิด – เปิด เพือ่ สามารถกวาดเศษอาหารได้ในแต่ละวัน รางระบายน�า้ ควรท�าไปตามแนวยาวของห้องครัว อาจจะเป็นด้านใดด้าน หนึง่ หรือทัง้ สองด้านของห้องครัวก็ได้

ผู้เขียน พยายามสรุปความส�าคัญของครัว ที่แม้จะเป็นส่วนเล็ก แต่ก็ไม่ควรมองข้ามนะคะ เพราะครัวหากออกแบบได้มาตรฐาน แล้ว เกิดความพอใจให้กับพนักงาน พ่อครัว ท�างานได้สะดวก สบาย เมื่อพนักงาน พ่อครัว มีความสุขก็จะท�าอาหารอย่างมี ความสุข ลูกค้าก็ได้รับบริการที่สะอาด ประทับใจ คนที่มีความ สุขยิ่งกว่าก็คงเป็นเจ้าของภัตตาคาร หรือเจ้าของโรงแรมใช่ ไหมคะ

Kitchen is considered as the major usable area of the restaurant situated in the hotel because it is the place to prepare and cook food as well as further send them off to the dining section.

Thus, kitchen area needs a special care in term of cleanliness and hygiene. The design of the kitchen should provide enough space which if the whole area of the restaurant is divided into 3 sections, the kitchen area will dominate one third of the whole area, while the other is left for the dining section.

The preparation of Kitchen Space should be based on the simplified design principle as follows

1. The usable area of the food preparing spot, stove, sink and refrigerator/freezer should be next from one to another, not in the cross circulation layout style.

2. The walk path separated from the activity area should have the moderate width to walk through for approximately 1.8 – 2.0 meters to avoid the accident and obstruct the activity area as well as allow the trolley being conveniently pushed through.

DECOR & FURNISHINGS 3. The electrical outlets should be placed in the suitable spots and moderate distance away from the wet area. The stove should be raised at least 75 cm above the floor to provide the floor cleaning convenience without minding for the spots of electrical outlets and plugs. For the cooker hood, it should be set at least 190 cm above the floor, while for the electrical outlets for other appliances, they should be placed at least 120 cm above the floor.

4. Properly place the storage cabinet and utensils, any tools used in activity area should be placed next from one to another i.e. seasoning storage cabinet should be placed next to the stove or dishes and bowls storage cabinet should be placed next to the cleaning sink, etc.

5. Simply set the layout of the kitchen space, it’s unnecessary to make the space too complicated because it will slow down the cooking process which may cause the restaurant to easily lose some customers.

6. Provide enough room at the kitchen’s front door because this door will be the main door for everyone to walk in/out all the times as well as the push trolley.

7. All counters and sinks should be approximately 75 cm in height above the floor to properly suit the height of Asian people. If the chef is a foreigner, the height can be added up for another 10 – 15 cm. The lowest shelf underneath any table should be approximately 15cm above the floor. The reason to leave the gap is for the cleaning advantage as it will make easy for the staff to clean the floor underneath the table without bending down too close to the floor.

8. The design for the flooring material is quite important because the activities taken place in the kitchen requires the quickness and high repetitious duty; therefore, the floor must be anti-slip material and can be easily cleaned. The proper flooring materials are such as matte tiled floor, Polyurethane coating floor, concrete, etc.

9. The cooker hood is necessary especially for Thai and Chinese kitchens because food cooking activity of these types of cuisines have a lot of distracting smell and smoke. The user should try to setup the pipe as close to the motor as possible in order to increase the smoke absorbing power.

10. Air ventilation inside the kitchen is very important.

The kitchen should provide the moderate height

from the floor to the ceiling since it will allow good air ventilation to cool down the kitchen and reduce the bad smell which this will involve with sanitation and cleanliness and keep the kitchen away from the animal vectors such as cockroach, rat, etc.

11. Install the light bulbs to provide enough illumination and regularly clean the light bulbs and lamps because the grease and soot stains from cooking may accumulate on the light bulbs and lamps to decrease the illumination efficiency.

12. The gutter drain should slope down to the main drain for easy water sweeping, while the gutter drain should be designed with an on/off mesh to daily sweep away the food scraps. In addition, the gutter drain should be setup along the kitchen’s length side as it can be either side or both sides of the kitchen.

Open Kitchen…Creates the Interestingness for Food Cooking Activity

The writer has tried to sum up the importance of the kitchen which everyone shouldn’t overlook because if the kitchen can be designed based on the indicated standard, it will allow the chefs and cooking assistances as well as staffs to conveniently work and make them happy, and when all the kitchen staffs are in the pleasant mood and environment, customers will receive the impressive and clean services which at the end, the most happiest person will actually be the owner of restaurant or hotel.

Currently, the kitchen design tends to be in the open kitchen style particularly for the kitchen in Japanese restaurant which will be different from the close kitchen design style. The advantage of the open kitchen design style is customers can closely observe food cooking activity which can easily establish the customer’s confident in term of cleanliness. However, the disadvantage of this style of kitchen to take consideration is it will only suit for some simplified cooking because it must be aware of the smell to distract the customers. The example of the open kitchen style that can beautifully be applied as the

เริ่มต้นกันที่ประโยชน์แรกเปลือกมะนาว นอกจากจะช่วย ดับกลิ่นคาวที่มือ ด้วยการเอามาถูที่นิ้ว หลังจากหั่นเนื้อสัตว์ หรือล้างจานแล้ว ยังมีประโยชน์ในการดับกลิ่นทั้งครัวได้ วิธีการนั้นแสนง่าย เพียงน�าเอาเปลือกมะนาวไปคั่ว ในกระทะด้วยไฟอ่อนๆ หรืออบในเตาไฟ ประมาณ 300 องศาฟาเรนไฮต์ นาน 4 - 5 นาที จากนั้นเปิดฝาเตาอบ ปล่อยให้กลิน่ หอมของมะนาวจากเตากระจายไปทัว่ ห้องครัว ท�าให้ห้องครัวกลับมามีกลิ่นหอมสดชื่นอีกครั้ง นอกจากนี้ ส�าหรับใครที่เครซี่กลิ่นมะนาว สามารถสกัด ‘น�้ามันหอมระเหย’ ใช้บ�าบัดโรคและอารมณ์ความรู้สึกได้ แต่อาจจะต้องใช้เปลือกมะนาวแบบสดๆ ชนิดปอกเปลือก เสร็จแล้วใช้เลยทันที หรือน�าไปแช่ในตู้เย็นเพื่อรักษาน�้ามัน ตรงเปลือกไม่ให้ระเหย จากนั้นน�าไปสกัดเอาตัวน�้ามันหอม ระเหย ไปผสมกับพวกสบู่หรือโลชั่นใช้ในโอกาสต่อไป หรือจะ น�าไปเป็นส่วนผสมของน�้าหอมตั้งไว้ในห้องพัก หรือห้องท�า สปาของโรงแรม เพื่อสร้างความรู้สึกผ่อนคลายให้กับลูกค้า อีกประโยชน์ที่ไม่ควรมองข้ามของเปลือกมะนาว คือ สามารถไล่ยุงและแมลงได้ แต่อาจจะต้องใช้ทั้งลูกเพื่อเพิ่ม ประสิทธิภาพ พร้อมผนึกก�าลังกับตะไคร้หอมและมะกรูด วิธีการท�านั้นไม่ยาก เริ่มจากการน�าตะไคร้หอมมาหั่นและ ต�า เพื่อให้ตัวน�้ามันหอมระเหยออกมาจากตัวใบ และคั้น น�้ามะนาวและมะกรูดเตรียมไว้ จากนั้นน�าตัวตะไคร้หอมที่ ต�าแล้วกับเปลือกมะนาวและเปลือกมะกรูดห่อด้วยผ้าขาว บางไปต้มในน�้าเดือด ขั้นตอนต่อมา คือ การเติมน�้ามะนาว และน�้ามะกรูดลงไปในหม้อ เพื่อเพิ่มความเป็นกรด ซึ่งเป็น คุณสมบัติส�าคัญในการไล่แมลง เมื่อต้มเสร็จแล้ว ก็น�าไป กรอกใส่ขวดสเปรย์ เพื่อน�าไปฉีดในจุดที่ต้องการ และสามารถ น�ามาฉีดที่ผิวหนังป้องกันไม่ให้ยุงและแมลงมากวนใจ

นอกเหนือ จากประโยชน์ ในเชิงกลิ่นแล้ว เปลือกมะนาว ยังสามารถขจัด พวกคราบสกปรก ต่างๆ ได้ เช่น คราบใน เตาไมโครเวฟ วิธีการ คือ เตรียมน�้าใส่ถ้วยที่สามารถ ใส่เข้าไปในไมโครเวฟได้ แล้ว หั่นมะนาว บีบน�้าลงไป แล้วใส่ เปลือกมะนาวลงไปในถ้วย จากนั้น น�าไปอุ่นในตัวไมโครเวฟ 2 นาที แล้ว ปล่อยให้ไมโครเวฟคลายอุณหภูมิความร้อน แล้วใช้ผา้ เช็ดคราบสกปรกออก นอกจากนี้ ยังสามารถน�าไปใช้ขัดเครื่องครัวเครื่อง เรือนสแตนเลสที่เริ่มหมอง ด้วยการน�าเปลือกมะนาว จิ้มเกลือป่นขัดถูตัวเครื่องครัวให้ทั่ว ก็จะช่วย เรียกความเงาวับกลับมาอีกครั้ง โดยไม่ต้องเสีย สตางค์ซื้อน�้ายาขัดเงาแม้แต่แดงเดียว ส่วนพวกถ้วยชากาแฟที่ใช้งานเป็นประจ�า สามารถน�ามาขจัด คราบชากาแฟได้ง่ายๆ ด้วยการน�าเปลือกมะนาวใส่ลงไปใน ถ้วย แล้วเทน�้าร้อน แช่ทิ้งไว้ราว 2 ชั่วโมง คราบชากาแฟก็จะ หายไปอย่างง่ายดาย โดยไม่ต้องเปลืองแรงขัดแรงล้างเช่นกัน

พ.ร.บ. การอ�านวยความสะดวกในการพิจารณา อนุญาตของทางราชการ พ.ศ. 2558 Licensing Facilitation Act B.E. 2558 (2015)

กฎหมายฉบับนี้ ได้มผี ลบังคับใช้แล้วตัง้ แต่เดือนสิงหาคม 2558 ยุทธการ รวมทั้งตามกฎหมายเกี่ยวกับการควบคุมยุทธภัณฑ์ และมีความส�าคัญกับสมาชิกสมาคมโรงแรมไทยค่อนข้างมาก และกฎหมายว่าด้วยโรงงานผลิตอาวุธของเอกชน จึงขอน�ามาเรียนให้ท่านสมาชิกทั้งหลายได้รับทราบว่าการท�า ธุรกิจต่อไปนีจ้ ะสะดวกขึน้ กรุณาให้ความส�าคัญกับเนือ้ หาด้วยครับ ดังนั้น โรงแรมขนาดใหญ่ที่ต้องท�า EIA หรือต้องท�า IEE ในกรณีโรงแรมชายทะเล ก็ยังต้องมีระยะเวลาการรอคอย สาระส�าคัญของกฎหมายฉบับนี้มีไม่มาก กล่าวคือ เช่นเดิมครับ 1. ผู้อนุญาตต้องจัดท�าคู่มือส�าหรับประชาชน ซึ่งอย่างน้อย ต้องประกอบด้วย ในส่วนของนายทะเบียนโรงแรมทราบว่า ขณะนี้การจัดท�าคู่มือ 1.1 หลักเกณฑ์ วิธีการ และเงื่อนไข (ถ้ามี) ในการยื่นค�าขอ เรียบร้อยแล้ว โดยมีระยะเวลาในการพิจารณาค�าขอให้เสร็จ 1.2 ขั้นตอนและระยะเวลาในการพิจารณาอนุญาต ภายใน 66 วัน ก็ถอื ว่าเป็นข่าวดีสา� หรับคนท�าธุรกิจโรงแรมครับ 1.3 รายการเอกสารหรือหลักฐานที่ผู้ขออนุญาตจะต้องยื่น มาพร้อมค�าขอ This act has just come into force in August 2015 1.4 จะมีการก�าหนดให้ยื่นค�าขอผ่านทางสื่ออิเล็กทรอนิกส์ and mattered so much to the members of Thai แทนการมายื่นค�าขอด้วยตนเองก็ได้ Hotels Association (THA). If the permission can’t be granted in time, authority must clarify in writing the ground of delay to the applicant every seven days until finish. In case of no clarification provided, it shall be deemed that the authority commits or omits the commission of an act which causes damages to other persons except provide that, the failure to do so, caused by Force Majeure.

However, this act doesn’t give much convenience for the large sized hotel operation as it shall not apply to: 1. The National Assembly and the Council of Ministers; 2. The court’s rules, procedure and judgment and the performance of duty of the official in accordance with civil procedure and the execution of, and deposit in lieu of the performance in, any civil case; 3. The execution under the criminal procedure; 4. The licensing under the law on natural resources and environment; 5. The licensing related to military strategic operation, including the law related to arms control and private armory.

Thus, the large sized hotel that is required to provide EIA or IEE in case of locating by the seashore still have the waiting time as usual.

In addition to the hotel registrar, from what I heard the licensing manual has already been finished which indicates the period of time for the granting of license within 66 days. This is such good news for hoteliers.

หลังผ่านเหตุการณ์วางระเบิดที่แยกราชประสงค์ไปได้ไม่นานนัก กล้องวงจรปิด ก็ได้กลายมาเป็นประเด็นที่ ผู้คนในสังคมหันมาสนใจและกล่าวถึงกันในวงกว้าง สาเหตุก็เพราะข้อมูลภาพที่ได้จากกล้องวงจรปิดนั้นไม่ ชัดเท่าที่ควร ท�าให้กระบวนการในการติดตามคนร้ายเป็นไปด้วยความล่าช้า ที่ส�าคัญ คือ ข้อมูลภาพได้ถูก น�าเสนอผ่านสื่อมวลชนไปสู่สายตาประชาชนทั่วประเทศ ท�าให้หน่วยงานที่รับผิดชอบโดยตรงถูกลดความ เชื่อมั่นไปโดยปริยาย เทคโนโลยีกล้องวงจรปิดนัน้ ได้มกี ารน�ามาใช้งานในบ้านเรามานานพอ สมควรแล้ว ซึง่ ผูใ้ ช้งานในยุคแรกๆ นัน้ ส่วนใหญ่จะเป็นกลุม่ ผูใ้ ช้งานทีเ่ ป็น องค์กร หน่วยงาน โรงแรม หรือห้างร้านต่างๆ หลายต่อหลายครัง้ ทีก่ ล้อง วงจรปิดได้เข้ามามีสว่ นส�าคัญในระบบรักษาความปลอดภัย ทัง้ ภาพจากกล้อง วงจรปิดยังเป็นหลักฐานส�าคัญช่วยคลีค่ ลายปัญหาทางกฎหมาย โดยเฉพาะ การน�ามาเป็นหลักฐานทีใ่ ช้ในชัน้ ศาลได้เป็นอย่างดีอกี ด้วย ปัจจุบนั เทคโนโลยีกล้องวงจรปิดก้าวหน้าไปมาก ภาพทีบ่ นั ทึกได้มคี ณ ุ ภาพสูง ขึน้ กอปรกับมีราคาทีถ่ กู ลงเรือ่ ยๆ ท�าให้กลุม่ ผูใ้ ช้งานตามบ้าน สามารถเลือก ซือ้ หามาติดตัง้ เองทีบ่ า้ นได้ และด้วยเหตุผลในเรือ่ งราคา ท�าให้ความต้องการ ในการใช้กล้องวงจรปิดมีมากขึน้ เรือ่ ยๆ จึงเกิดตัวแทนจ�าหน่ายสินค้าประเภท นีอ้ ยูม่ าก ท�าให้มกี ารแข่งขันกันสูง อีกทัง้ ยังเปิดช่องทางให้ผทู้ ตี่ อ้ งการติดตัง้ กล้องวงจรปิดสามารถสัง่ ซือ้ ได้โดยง่าย ซึง่ ไม่เพียงจะสามารถสัง่ ซือ้ จากทาง ร้านได้โดยตรงเท่านัน้ ผูท้ ตี่ อ้ งการติดตัง้ กล้องวงจรปิดยังสามารถสัง่ ซือ้ ออนไลน์ผา่ นเว็บไซต์ได้อกี ด้วย ส�าหรับผูใ้ ช้งานทีค่ นุ้ เคยในเทคโนโลยีนอี้ ยู่ แล้ว การตัดสินใจเลือกซือ้ และติดตัง้ กล้องวงจรปิดก็อาจจะไม่เป็นปัญหา เท่าใดนัก แต่สา� หรับผูใ้ ช้ทไี่ ม่คนุ้ เคยกับเทคโนโลยีกล้องวงจรปิดมาก่อนก็อาจ ต้องใช้เวลาค้นคว้าหาข้อมูลอยูพ่ อสมควร โดยทัว่ ไปแล้วกล้องวงจรปิดทีน่ ยิ มใช้กนั อยูใ่ นปัจจุบนั มี 2 ประเภทหลักๆ คือ กล้องวงจรปิดแบบอนาล็อกและกล้องวงจรปิดแบบไอพี 1. กล้องวงจรปิดแบบอนาล็อก (Analog) เป็นเทคโนโลยีกล้องวงจรปิด แบบเดิม ทีไ่ ด้รบั ความนิยมจากผูใ้ ช้งานตัง้ แต่ชว่ งเริม่ ต้นต่อเนือ่ งมาถึง ปัจจุบนั จนอาจจะเรียกได้วา่ ถึงขีดสุดของเทคโนโลยีกล้องวงจรปิดประเภทนี้ แล้ว ท�าให้ปญ ั หาและข้อผิดพลาดจากการใช้งานมีคอ่ นข้างน้อย และนัน่ ก็ เป็นจุดแข็งของกล้องวงจรปิดแบบอนาล็อกนัน่ เอง และไม่เพียงแต่การใช้งาน ทีม่ เี สถียรภาพเท่านัน้ กล้องวงจรปิดแบบอนาล็อกยังมีตน้ ทุนค่าใช้จา่ ยในการ ติดตัง้ ทีไ่ ม่สงู นัก เหมาะสมกับผูใ้ ช้งานทีอ่ ยูใ่ นกลุม่ องค์กรขนาดกลาง ทีต่ ดิ ตัง้ กล้องจ�านวนไม่มาก ทว่ากล้องวงจรปิดแบบอนาล็อกก็ยงั มีขอ้ จ�ากัดอยูพ่ อ สมควร โดยเฉพาะข้อจ�ากัดของระยะทางของสายส่งสัญญาณ อีกทัง้ ความ คมชัดของภาพก็ยงั ไม่ดนี กั เมือ่ เทียบกับภาพทีม่ าจากกล้องวงจรปิดแบบไอพี และทีส่ า� คัญ คือ ฟังก์ชนั่ การใช้งานร่วมกับระบบเน็ตเวิรก์ (LAN) ยังท�าได้ไม่ ค่อยดีนกั 2. กล้องวงจรปิดแบบไอพี (IP) เป็นระบบกล้องวงจรปิดสมัยใหม่ ทีส่ ามารถ ติดตัง้ ใช้งานในองค์กรทีม่ รี ะบบเน็ตเวิรก์ (LAN) ได้ทนั ทีโดยไม่ตอ้ งติดตัง้ สายส่งสัญญาณใหม่ แม้ราคาตัวกล้องจะสูงกว่ากล้องวงจรปิดแบบอนาล็อก อยูพ่ อสมควร แต่หากต้องการฟังก์ชนั่ การใช้งานทีท่ นั สมัยและสามารถ รองรับกับเทคโนโลยีใหม่ๆ ทีจ่ ะมากับอินเทอร์เน็ตในอนาคต เช่น Internet of Things (IoT) หรือรองรับ Application ทีใ่ ช้งานบนสมาร์ตโฟนและ แท็บเล็ตแล้ว ก็นบั ได้วา่ การติดตัง้ กล้องวงจรปิดแบบไอพีเป็นการลงทุนทีด่ จู ะ คุม้ ค่า และเนือ่ งจากเป็นการติดตัง้ บนระบบเน็ตเวิรก์ ผูใ้ ช้งานจึงสามารถเพิม่ จ�านวนกล้องวงจรปิดโดยง่าย ทัง้ นี้ ก็ยอ่ มขึน้ อยูก่ บั ขนาดของเน็ตเวิรก์ ด้วย เช่นกัน ส�าหรับสิง่ ทีน่ า่ สนใจ คือ ข้อมูลภาพทีไ่ ด้จากกล้องวงจรปิดแบบไอพี นัน้ มีคณ ุ ภาพและความคมชัดสูง ซึง่ ก็ถอื เป็นจุดเด่นของกล้องวงจรปิด ประเภทนี้ อย่างไรก็ตาม ในบางครัง้ หากมีการส่งข้อมูลภาพของกล้อง วงจรปิดแบบไอพีในปริมาณมากอาจจะท�าให้ระบบเน็ตเวิรก์ ช้าไปบ้าง ดังนัน้ ผูด้ แู ลระบบควรหมัน่ ตรวจสอบระบบเน็ตเวิรก์ ของตนอยูเ่ ป็นประจ�า โดย เฉพาะองค์กรทีม่ กี ารติดตัง้ กล้องวงจรปิดประเภทนีจ้ า� นวนมาก ในการเลือกซือ้ กล้องวงจรปิดมาใช้ในองค์กรนัน้ ก่อนสิง่ อืน่ ใด ผูซ้ อื้ ควรมีการ ส�ารวจพืน้ ทีท่ จี่ ะติดตัง้ กล้องวงจรปิดของตนเสียก่อน เพราะจะท�าให้ทราบ จ�านวนกล้องทีต่ อ้ งใช้จริง ซึง่ เป็นการประหยัดงบประมาณได้โดยตรง ทัง้ นี้ การเลือกซือ้ กล้องวงจรปิดนัน้ ผูซ้ อื้ จะต้องพิจารณาข้อมูลส�าคัญต่างๆ ดังต่อ ไปนี้ 1. ประสิทธิภาพของตัวกล้อง ไม่วา่ จะเป็นในเรือ่ งของความคมชัด ความ สว่าง (ขนาดรูรบั แสงของเลนส์) องศามุมมองของกล้อง ความสามารถใน การแพนกล้อง รวมไปถึงความคมชัดของภาพในเวลากลางคืน เป็นต้น

2. ความจุในการบันทึกข้อมูลภาพ ความสามารถในการบันทึกภาพเป็นสิง่ ส�าคัญ ผูใ้ ช้งานต้องตรวจสอบให้แน่ชดั ว่าหากไฟล์ภาพวิดโี อทีบ่ นั ทึกนัน้ มี ขนาดความละเอียดสูงสุดจะสามารถบันทึกได้นานเท่าใด และในอนาคต สามารถเพิม่ ขนาดความจุกล่องบันทึกข้อมูลภาพได้หรือไม่ 3. สามารถชมผ่านสมาร์ตโฟนและแท็บเล็ตได้ สามารถดูภาพจากกล้อง วงจรปิดทัง้ แบบ Live view และ Playback (ย้อนกลับไปดูภาพทีบ่ นั ทึกไว้) ผ่านอินเทอร์เน็ตได้ 4. ความทนทานของกล้องวงจรปิด โดยเฉพาะตัวกล้องทีต่ ดิ ตัง้ นอกอาคาร ผู้ ซือ้ ก็ควรจะเลือกสเปคของตัวกล้องทีก่ นั ความชืน้ ได้ดี และต้องไม่ลมื ทีจ่ ะมี Housing ส�าหรับป้องกันน�า้ ฝนอีกชัน้ 5. ผูข้ ายมีความเอาใจใส่ดแู ลลูกค้าหลังการขาย นอกจากการประกันสินค้า แล้ว หากผูข้ ายสามารถเดินทางไปแก้ไขปัญหานอกสถานทีใ่ ห้กบั ลูกค้าได้กจ็ ะ เป็นการดีอย่างมาก อย่างไรก็ตาม ในช่วงก่อนการตัดสินใจ ผูซ้ อื้ ควรให้เวลากับตัวเองในการ ศึกษาค้นคว้าข้อมูล ทัง้ นี้ เพือ่ ทีจ่ ะได้นา� มาเปรียบเทียบ เพือ่ ให้ได้กล้อง วงจรปิดทีม่ คี ณ ุ ภาพสูง และยังช่วยลดปัญหาจุกจิกทีอ่ าจจะเกิดขึน้ ได้อกี ด้วย

After the explosion at Ratchaprasong intersection, Closed-Circuit Television (CCTV) became the issue that people has paid attention and widely talked about at the moment. This was because the picture information obtained from CCTV wasn’t clear enough which made difficult to hunt down the criminal and more importantly, the picture information was broadcasted to the eyes of public across the country which directly discredited the related responsible agencies.

However, CCTV technology has been used in Thailand for quite sometimes which most users in the early era was the group of organizations, agencies, hotels or department stores. Many times CCTV had taken an important role in security system, while the picture from CCTV could be used to solve the legal issue particularly when used as the important evidence in the court.

Currently, CCTV has been further developed with more advance technology to feature the high quality recording picture with continual dropped down in price. This offers the great opportunity to the Home users to buy CCTV and setup at their own houses.

And with the price reduction, it increases the greater demand of CCTV and grows the number of CCTV distributors causing high competition in CCTV market as well as offers more channels to users who want to setup CCTV, to easily buy the products which the users will not only directly buy CCTV from the stores, but also the online website. For those users who get used to this technology, making decision to buy CCTV may not be any problem, but for the ones who have never used CCTV technology before, they may need to search for information for quite sometimes.

Normally, the most popular CCTV currently is divided into 2 types as Analog CCTV and IP CCTV.

1. Analog CCTV is the former CCTV technology that has been so popular from the beginning period up until now. It can be said that this technology has already reached its optimum performance which causes the least problem and error, and make it become the strength of Analog CCTV. Besides stabilized operation, Analog CCTV has moderate low cost of installation to suit the users in the group of middle sized organizations that requires moderate number of CCTVs. However, Analog CCTV still has some limitations particularly for the distance of signal feeding cable and picture sharpness quality compared to IP CCTV and more importantly is the less functional compatibility when uses with the LAN network system.

2. IP CCTV is the modern aged CCTV system that can be immediately setup and operated in the organization using the LAN network system without installing new signal feeding cables.

Even though the cost of this CCTV is higher than Analog CCTV, the users who require the modern aged functions and new technology support features that will come with internet in the future such as Internet of Things (IoT) or mobile application support, it seems to be worth an investment with IP CCTVs. And since it needs to be installed on network system, users can easily add the number of CCTVs depending on the size of the network.

The interesting features of IP CCTV are the high quality and sharpness of picture information which are considered as the strength of IP CCTV. However, if the transmission of IP CCTV’s picture information has a large volume, sometimes it may slow down the network. Thus, system administrators should regularly inspect their own network systems particularly for the organizations that use a large volume of IP CCTVs. In addition to the buying guide of CCTV for organization, first of all buyer should survey the area to setup CCTV because user will know the exact number of CCTVs required which will directly save the budget. Besides, user must consider other specifications of CCTV as follows 1. CCTV specification includes the sharpness, brightness (the size of lens aperture), CCTV degree perspective, panning capability as well as picture sharpness at night, etc.

2. Video File Storage Capacity is the important part which user needs to clearly check how long CCTV can record the video file when the picture quality is set at the highest resolution and whether it can be added the capacity of the video file storage device or not.
