Her research interests include Kangaroo Care, mother-infant separation, development of children, patient safety and telehealth. She is versatile in many areas of nursing and has been an advisor to numerous research projects.
Student evaluations have consistently been positive, with students describing her as very helpful in reviewing content, well-spoken, prepared and supportive. Chiu has been active in both the graduate and undergraduate curriculum committees. While serving as chair of the Admissions and Progression Committee, she facilitated realistic admission criteria for direct admissions to the undergraduate program and those with a college degree seeking nursing as a second career.

She excels in the use of technology and assists faculty and students whenever a problem arises. She works tirelessly, and it is not uncommon for her to change her personal plans to correct a problem for faculty or a student.
In addition to her teaching role, she has received grants from the Institute for Teaching and Learning at The University of Akron to foster social and emotional skills in preschoolers, as well as children residing in a homeless shelter, through the use of technology.
