Around Ohio, breweries are discovering that a little friendly competition is as appealing to visitors as the beer itself. by Leslie Basalla-McCafferty
There’s nothing like strolling into a brewery, settling on a barstool and relaxing with a beer. But why stop there when a trip to the brewpub could become a spirited round of competition? Whether you favor bar games played with a glass in hand or prefer getting physical with outdoor sports, visit these breweries to take on your companions for bragging rights.
At Wandering Monsters in Anderson Township near Cincinnati, duckpin bowling — a miniaturized version of the sport with a grapefruit-sized ball and pins suspended on strings — was always part of the vision. To owner Jason Brewer, it’s been vital to his brewery’s success.
“Where we live,” Brewer explains, “there’s a lot of stuff to do for adults, and a lot of stuff to do for kids, but not a lot of stuff to do together.”
Among established brewpubs like Barley’s Brewing Company in Columbus, adding fresh options and offering space for gatherings keeps guests coming back. Brewcadia, its upstairs “barcade” featuring 40 taps and classic video games, excites both bar-goers and event organizers.
Breweries seeking more advanced electronic entertainment are turning to golf simulators: augmented reality machines that let
guests swing through legendary links just a chip shot away from the bar. Newark’s Trek Brewing Company dedicates a separate barroom to three virtual golf bays, while Sixth Sense Brewing Company in Jackson features a bay in its game room.
Rather get out on the green? 4KD Crick Brewing is part of The Compound Defiance, a complex nestled amid Eagle Rock Golf Club’s 18 holes. Duffers can sip a house-brewed beer on the fairways or after their rounds in the taproom or the clubhouse’s restaurant.
Situated on 8 acres, DankHouse Brewing Company in Newark has embraced another kind of golf with Hazy Greens, its nine-hole disc golf course. But, as owner Josh Lange explains, the course wasn’t part of the original business plan: it was a way to activate a neglected part of their property.
“It was an overgrown, wooded area with downed trees everywhere,” Lange says. “It always looked like an overwhelming project.” Artist Kris Yaceczko, who contributed graphics to the taproom, suggested disc golf and a star attraction was born.
“We’ve got people who play in all kinds of weather,” Lange says. “People know that even if we’re not open, if the gate’s open, they’re free to come play from 8 in the morning until gates close in the evening.”
Likewise, when Michael and Jennifer Farmer opened Mt. Vernon’s Happy Street Brü Werks, they didn’t expect to run an axe-throwing arena. But when Summit Axe Throwing — a tenant in their 12,000-square-foot building — announced plans to close, Jennifer jumped at the chance.
“I approached them and said, ‘It goes so well with the brewery, I’d like it to stay intact,’” Farmer explains. She extended the brewery’s liquor license to cover the entire property and plans to expand into an event and entertainment venue, offering her community new avenues for enjoyment.
MAD Brewing in Medina already occupies an entertainment compound. It’s one of several attractions within Foundry Social, where food, drink and games pair with High Voltage Indoor Karting. Channel your inner Speed Racer and work up a thirst zipping around the indoor go-kart track. Just be responsible: drive, then drink.
Not active enough for you? Book sand volleyball or pickleball courts at Fifty West Brewing in Cincinnati for group fun or to compete in league play. If you’d rather be a spectator than a sportsman, rent a cabana to lounge and observe the action.
Whatever level of exertion you choose, find the right Ohio brewery and it’s game on.
Chef Chris Olexa leads the kitchen at Nocterra Brewing Co. Audubon, bringing his extensive experience from Cleveland and Boston to Columbus.
by Kevin J. Gray
1 pint Terra Cova Baltic porter
½ cup brown sugar
~1 cup water, as needed
1 cup aquafaba (chickpea water)
⅛ teaspoon cream of tartar
½ tablespoon vanilla bean paste
1 quart berry coulis
30 ounces berry jam
Dark chocolate shavings, for serving
1 Combine Terra Cova Baltic porter and brown sugar in a pot. Simmer to reduce by half.
2 Once reduced, add water in a 1:1 ratio to the reduced syrup and put it on a roiling simmer until reduced by half again.
3 While the sauce reduces, whip the aquafaba into soft peaks.
4 Once the sauce is reduced, slowly add sauce, cream of tartar and vanilla bean paste to the aquafaba. Continue to whip.
5 Once peaks are whipped to the desired consistency, gently fold berry coulis into the whipped aquafaba.
6 Portion 2 oz. berry jam into the base of small ramekins or other serving vessels. Layer whipped aquafaba onto the jam. Top with dark chocolate shavings to serve.
serves a party of 15–18
With a career that spans beer-forward restaurants and brewery kitchens, Olexa combines his passion for beer with inclusive cooking that accommodates most dietary needs at Nocterra Brewing Co. Audubon. When using beer in recipes, Olexa explains, “I think about how the beer will pair with what I’m doing, what I can do to change its final form for desserts and how I can utilize it in dressings or other processes.”
Reduce beer into syrup: For this technique, choose beers with fruit flavors. Olexa reduces Nocterra’s California Swell Line, a blackberry and raspberry gose, to create a syrup perfect for drizzling over angel cake French toast.
Experiment boldly: Don’t shy away from unexpected combinations. One of Olexa’s most successful creations blends reduced dark lager with demerara sugar and aquafaba (liquid from canned chickpeas) to make a mousse. This unconventional dessert has become popular at events and accommodates most dietary restrictions. Follow the recipe to try it for yourself. 1 2 3 4 5
Beer mignonette for oysters: Sours shine in this application. Mix beers from the Proxima barrel-aged sour series with shallots and quality vinegar to create a distinctive mignonette sauce for oysters on the half shell.
Bake brownies with beer: Baking with beer isn’t new, but move beyond traditional beer bread by incorporating beer into desserts. Choose a dark stout to replace water in brownie recipes, pairing it with cocoa powder for added depth and complexity.
Craft beer mustard: While beer cheese is common at breweries, beer mustard offers another delicious option for pretzel dipping. Olexa combines Rip Stop hazy IPA with whole grain mustard and brown sugar to create a “funky, less tart but citrusy mustard.”
Ohio military veterans have built breweries on the foundation of honor, duty and discipline. by Jon Sicotte
Mike Aurand doesn’t have time to brew much anymore. That job mostly falls to his partner Aaron Weidner at The UrbanWoody Brewery in Fostoria. But that doesn’t stop Aurand, who shows up after long days serving in the Army Reserve’s Active Guard and Reserve program to clean fermenters, keg beer and stay involved in daily operations. It’s a grueling but familiar schedule.
“I’m still full-time military, so it’s 24/7,” Aurand says. His schedule mirrors a lifestyle he’s followed since enlisting in 1986. He served for 12 years, took a short break, then returned to active duty. He’ll officially retire in 2027. Until then, he’s dedicated to balancing his roles, something that resonates with other veteran brewery employees across Ohio.
Chris Harris, owner/brewer for Black Frog Brewery in Toledo, served in the Army for a decade before working at the Social Security Administration for 17 years.
“It started out as a hobby, something to do after I got off work,” Harris says. “But it turned into something more.” Black Frog’s second location is now open in Cleveland’s MidTown Collaboration Center. “Patience, a can-do spirit, never giving up: those are all values from the military that translate perfectly,” Harris shares.
In Massillon, Michael Malinowski, owner of Paradigm Shift Brewery, credits his military service for exposing him to world-class beer. Stationed in Germany during his Army stint in the 1980s, he fell in love with European beer culture and later began recreating the lagers he admired.
Dale Mabry, co-founder of Dalton Union Winery & Brewery in Marysville, took a winding path from the Marine Corps to fermentation. A tech career paid the bills, but winemaking at home with his wife Tonya became a shared passion, and they opened the winery in 2015. When larger groups began visiting, the couple realized some visitors were just spectating; they needed to offer beer as well. The brewery addition came in 2018.
All of these vets say their time in uniform fundamentally shaped how they operate. The structure, discipline and adaptability required in the military naturally extend into the world of brewing, where sanitation, precision and troubleshooting on the fly are daily necessities.
“Brewery business is very process oriented,” Mabry says. “That’s a big carryover from the Marine Corps. You couldn’t just say ‘I’ve never done that before’ as an excuse. You figured it out. That same problem-solving applies here.”
Aurand, who owns The UrbanWoody Brewery and The HoneyBee Winery with his wife Tiffani, echoes that sentiment, citing structure, leadership and accountability as guiding values at the brewery. “We don’t cut corners, we don’t make excuses and we don’t forget where we came from,” he says. “At our core, we’re about loyalty to our craft, our crew and our community.”
That loyalty shows up in unique ways. Paradigm Shift brews a beer for Veterans Day using Veterans Blend hops. “A group of vet-owned breweries go up to Yakima, Washington, to blend hops together every year,” Malinowski explains. “I named the beer after my old unit … General Custer’s old unit. The beer is called Garryowen, the unit’s motto.”
Dalton Union celebrates the Marine Corps’ birthday every Nov. 10 with a ceremony and free meal for Marines and family. The event has become a lifeline for local vets seeking connection.
“We’ve had Marines come who were kind of floundering,” Mabry says. “Some told us that just being around other Marines again saved their life. It’s probably the most meaningful thing we do every year.” Dalton Union also brews a beer called Three Deuce Five in honor of 3rd Battalion, 25th Marines, a Marine Corps unit that took heavy losses in Iraq. Sales benefit Eyes of Freedom, an organization supporting veterans struggling with mental health.
Despite the camaraderie and community they find in beer, all four veterans noted a surprising lack of formal support for veteran-owned businesses. There are few tax incentives, loan programs or well-organized Ohio-based networks to help veterans with the transition from military service to small business ownership. Still, none reported major challenges entering the industry. Instead, they’ve found a welcoming brewing community — one where Harris says “everyone is friendly and willing to help.”

Beer is famously made from four simple ingredients: water, malt, hops and yeast. Yet from those fundamental components, brewers craft a staggering variety of beer styles, each with its own color, flavor and aroma.
“The spectrum is vast,” says Pete Steffes of Derive Brewing in Columbus. “It’s incredible how using just those four ingredients, you can drastically change the flavor of beer.” By adjusting water chemistry, adding specialty malts, blending various hop varieties and pitching specific yeast strains, brewers can zero in on practically any flavor profile.
But why stop there? When it comes to flavoring beer, there are myriad techniques and additions that brewers can rely on, from aging in wood to adding adjuncts like cocoa, fruit or spices.
“Wood has been almost a given for such a long time because beer used to be aged in wooden casks before the innovation of stainless-

by Douglas Trattner
steel fermenters,” Steffes says. As a food scientist, he likes to work backward when formulating a new recipe, starting with a desired result then charting a course to get there.
“You have an end product in mind, and you know what levers you can pull on to get to that point,” he explains. For example, to create Derive’s popular Thunderkiss Morning Froth — which blends elements like bourbon-soaked coffee beans, Mexican vanilla and cinnamon — Steffes needs to pull more than a few levers to keep things from going sideways.
“Coffee is a very acidic product, so you have to know that you’re going to get a drop in pH,” he continues. “There are oils that come from the coffee beans, so head retention is going to be affected. And Mexican vanilla has acidic fruit, so you try to elevate the inherent sweetness of the beer itself.”
In 2016, lagering tunnels were discovered deep beneath Over-theRhine in Cincinnati. Dating back to the mid-1800s, portions of the old Linck Brewery had been virtually untouched for 150 years, including an ancient wooden fermenter.
“The nice thing with yeast is that it can live up to an inch deep in wood,” explains Bret Kollmann Baker of Urban Artifact. “We took samples from where preserved yeast might still be and, lo and behold, we found brewing yeast: the Missing Linck Yeast.”
That particular strain of saccharomyces cerevisiae, aka brewer’s yeast, was revived in 2019 to brew a golden ale with notes of honey and black peppercorn — the dawn of a new day for the very old yeast.
Now, the first Saturday in June is reserved for the Missing Linck Festival, when brewers are invited to brew their own beers using that immortal yeast. Last year, 16 breweries participated including West Side Brewing, Bocce Brewing Company and Fifty West Brewing Company.
Time-honored techniques have a place, too. The classic Oktoberfest at Great Lakes Brewing Company, for instance, uses decoction mashing, where a portion of mash is extracted, boiled separately to develop rich, malty flavors and color, then reintroduced to the main batch.
Noble Beast Brewing Co.’s 2024 Great American Beer Festival gold medal-winning Eau Rouge Flemish red ale is a Solera-style brew, made using a fractional blending and aging process to develop mature notes of ripe raspberry, tart cherry, vanilla and oak.
When it comes to the wide world of beer flavors, it’s easy to feel like a kid in a candy store. Shelves are lined with cans and bottles starring supplemental adjuncts like bourbon, pickles, oysters, breakfast foods and, yes, even candy.
“We’ve been doing this from the beginning,” John Haggerty says of Warped Wing Brewing’s annual collaboration with Esther Price Candies. Each year, the brewery selects a candy from the 100-yearold Dayton confectionary to build a beer around. Last year’s was Sweetheart Peppermint Porter, a rich and creamy creation evoking melt-in-your-mouth dark chocolate mints.
Masthead Brewing Co. uses spicy adjuncts like fresh hot peppers to give a potent kick to its Jalapeno IPA, a 2024 World Beer Cup silver medalist. But the sky is the limit, really: brewers have been known to amp up recipes with everything from sweet syrups and fruits to earthy botanicals, herbs and spices to coffee, donuts and cereal.
