Farm-to-Table Business Booming Consumers’ appetites for local foods are growing, and restaurants have taken notice. Today, many local businesses, including farms and restaurants, have mutually exclusive relationships that make it possible for local residents to enjoy nutritious, locally produced meals. According to the market research firm Packaged Facts, local foods generated $11.7 billion in sales in 2014 and will climb to $20.2 billion by 2019. Farm-to-table remains a growing trend that benefits farmers, restaurateurs and consumers. This is evidenced by the rising number of farmers markets cropping up in neighborhoods all across the country, as well as the niche offerings by regional food purveyors. The U.S. Department of Agriculture says that, in the last 20 years, the number of farmers markets has grown by more than 350 percent. Many consumers are now choosing “local� for dining at home and when dining out, and this is making a major impact on the nation’s food systems. Foodies as well as industry experts predict that the local foods movement is a permanent and mainstream trend. In 2014, the National Restaurant Association found the desire for local foods dominated its “Top Food Trends.� The most in-demands foods include locally sourced meats and seafood as well as locally sourced produce. Consumers also are interested in farm/estate-branded foods. Some restaurants are even producing “hyper-local� food, or herbs & produce grown right on the property. As the demand for local foods has evolved, so has the term “local foods.� “Local� can be a wide-ranging term that refers to foods produced in a particular town, state or even region. The 2008 Farm Act defines a “locally or regionally produced agricultural food product� as one that is marketed less than 400 miles from its origin. However, a few states have established more stringent rules that indicate “local� constitutes food produced within the borders of a state or within a small perimeter of the state. The growing preference for locally produced foods is great news for the farmers and small food producers that have long fought for footing among the mega-importers. According to the trade publication Produce Business, even though “local� does not place limits on the size of the farm, the growing desire among consumers to go local is benefitting many small and midsized farms, as consumers are increasingly buying foods grown closer to where they live. In addition to meats, fruits and vegetables, consumers can find many locally made items that expand the potential for farm-to-table. These include, but are not limited to, artisanal cheeses, wines, beer, baked goods, milk and other dairy, and honey. Local, sustainable foods are in demand, helping not only local restaurants and merchants, but also the small and medium farms that service these establishments.

MU SPECIALISTS GET RETRAINED TO TEACH HOT NEW FARM TOPICS I was re-schooled on animal science last week. MU Extension livestock specialists came to MU for InService Education, or ISE. That put me in a bind as farm management specialist came for those two days. I’m often caught when two vital sessions go at the same time. I chose animals and thanked fate agronomists weren’t here also. They get schooled in crop seasons. Area livestock specialists face challenges helping farmers deal with hot topics. Now, top news includes death losses from high-nitrate hay. That devastates herd owners losing half their herds. Two years of drought caused toxic high-nitrate forage to be stored. That can be stemmy baled hay or deadly silage from drought corn or sorghums. Lab tests for nitrate heads off disaster. Deaths are spotty. But, stories last summer told how spotty rains fell and droughts occurred. Not all farms got the same rain, or lack of it. Animal doctors from MU Vet School came to teach. Anyone who's heard Dr. Tim Evans, doctor death, speak knows no one nodded off. Dave Patterson keeps improving science of inseminating heifers. He now teaches split-time AI. That improves Fixed-Time Artificial Insemination. Also, they dive
deep in genetic testing of all herd females. DNA gives precise EPDs or Expected Progeny Differences. Keynote speaker Tom Brink of Top Dollar Angus bragged on MU specialists who help Missourians lead the way to quality beef. He sees impact of Show-MeSelect protocols on cattle breeding across the USA. We know SMS heifers with better genetics changes terminal carcass traits, such as marbling. That makes more USDA Prime beef, which fetches premium prices at packing plants. More quality beef changed consumer meat purchases. They buy more beef. With Timed AI, even small beef herds use top genetics. Small herd owners buy semen straws from top bulls in their breed, even if they can’t buy top bulls for a few cows. Precision breeding allows small farms to build their own niche markets. As I heard deep science of DNA, I wondered what farm management agents heard across campus. Stories in the Wall Street Journal raise concerns about farmers. Lenders worry about dropping repayment rates from borrowers. Then Scott Brown, MU livestock economist, came to share his outlook. He spoke more on changing consumer
tastes in meat. Beef is gaining. But, if small producers don’t change, will there be a market for their low-grade beef? In his talk, Tom Brink said USDA Select grade beef supplies are disappearing, crowded out by high Prime and Choice grades. If small producers don’t switch to quality beef, they’ll produce Select. This topic brought animated conversation. Will herd owner who can’t sell a semi-trailer load of uniform quality calves survive? Will beef become consolidated like big pork and poultry. That should create talk at farmer’s coffee tables at local cafes. Switching to the Show-MeSelect protocols changed many small herds by bringing more profits. MU SMS teaches more than genetics. It’s whole-herd management. Pre-breeding exams add as much to profits as genetics. ISE coffee talk grew animated. Questions flew on livestock future. Can counties voting health ordinances blocking animal farms survive? Agriculture remains No. 1 industry in Missouri. Can rural counties support jobs if agriculture is cut. Talk of tariffs and busted export deals raised more questions. Where do we sell meat we produce, and gear up to make? In a rural recession can farm families whack present family-living expenses? I am Linda Crooks, and I love Trenton!
I want to be your next mayor. I was born and raised in Trenton and am a 1967 graduate of Trenton High School and a 1969 graduate of Trenton Junior College/North Central Missouri College. My father was Johnny Crooks, a former Trenton City Councilman. My mother was Pauline Crooks Vaughn and my step-father was Merle Vaughn, who was an auctioneer and also worked for the Rock Island Railroad. Henry Crooks, who owned Crooks Grocery on Pleasant Plain, was also a relative of mine.
After a 44-year career in teaching, I have returned to my hometown to live and work. I have purchased a building at 1000 Tinsman in downtown Trenton that I am renovating to house a new business. I am also volunteering and a member of several organizations including Holiday Hoops, Trenton Downtown Improvement Association, Trenton Area Chamber of Commerce and the NCMC Foundation.
I am excited about the future of Trenton, and I want to help keep it moving forward. I am professional, passionate, and a team-builder.
