Ingredients -

1/2 tsp freshly ground black pepper 1/4 tsp ground red pepper 1/2 tsp ground cumin 1 1/2 tsp salt 3/4 pound salmon fillet, skin removed and cut into 2-inch pieces 3/4 pound red snapper fillet, skin removed and cut into 2-inch pieces 3 tablespoons olive oil 1 medium onion, thinly sliced 1 red bell pepper, cut into 3/4-inch pieces 2 tsp fresh thyme leaves 2 garlic cloves, minced 1 can coconut milk 1 can petite diced tomatoes, undrained 1/4 cup chopped fresh cilantro leaves 1 tbls lime juice

Directions -

Combine black pepper, red pepper, cumin, and 3/4 teaspoon salt in a small bowl. Sprinkle salmon and snapper on both sides with spice mixture. Heat 1 1/2 tablespoons oil in a large nonstick skillet over high heat. Add fish, and cook 2 minutes or until browned.

Heat remaining 1 1/2 tablespoons oil in oven over medium-high heat. Add onion and next 4 ingredients; sauté 6 minutes or until vegetables soften.

Add coconut milk, tomatoes, and remaining 3/4 teaspoon salt; bring to a simmer. Add fish; cover and simmer 3 minutes or until fish is cooked. Gently stir in cilantro leaves and lime juice. Garnish, if desired.

A future without limitations

For the last five years, Fundashon Alton Paas has been raising awareness in our community regarding paraplegia and other neurological disorders. This concerns helping people with disabilities and helping companies recognize their potential.

The following achievements are just a few of the amazing highlights of Fundashon Alton Paas: Gym expansion. The gym of Fundashon Alton Paas has been expanded from one to three units with now 44 members.

Neuro Ex Certified. The facility of Fundashon Alton Paas, the Curaçao Neuro Physical Activity Training Center, also known as the AP Center, is the first facility in the Caribbean to be certified by Neuro Ex. Disabled parking permit. For years, Alton Paas tried to make the government and the community aware of the need for enforceable laws to facilitate parking for disabled people. Now, one can get a suitable permit sticker for handicapped parking spaces.

Rejection of SVB. Fundashon Alton Paas provides information on how to go about appealing the rejection of SVB on their blog.

Pump On Wheels. Pump On Wheels is a fitness session especially for individuals in wheelchairs organized on every 3rd Saturday of the month.

Curaçao Inclusion Report. In the Inclusion Report, findings, charts, and the conclusion of Fundashon Alton

Paas can be found including the accessibility standard of the Netherlands which was used to conduct their audit.

Caribbean Spinal Cord Injury Congress 2018 There were 120 people, including doctors and therapists, at the third congress concerning paraplegia in Curaçao, in collaboration with Revalidatie Centrum.

Principal Member of NASCIC, North American Spinal Cord Consortium Fundashon Alton Paas is now a member of NASCIC, an American association that supports collaborative efforts across the spinal cord injury community.

Mango-Sriracha Glazed Drumsticks

Ingredients

Directions

Preheat oven to 400˚F. In skillet combine juice, hot sauce, honey, ginger and garlic, bring to boil. Reduce heat to medium; simmer for 15 minutes or until thickened to light syrupy consistency. Let cool completely.

Toss drumsticks with glaze and salt; arrange on foil-lined baking sheet. Bake for 35 to 40 minutes or until golden brown and cooked through.

Toss half of the drumsticks with half of the chips until evenly coated. Repeat with remaining drumsticks and chips. Sprinkle with green onion.

MINIMALIST

Have you ever heard of “less is more”? Well, that is what being a minimalist is all about. Embracing a minimalist lifestyle can mean a healthier body, mind, and home — and getting rid of what you don't need. If you're a bit of a hoarder or maybe just really attached to some of your stuff (understandable), then minimalism may seem a little intimidating at first.

But it easy, it's also relieving and refreshing. Here are some easy ways to become a minimalist while still holding onto your favorite things

1. Make a list of things you don't need. If you haven't used an item in over a year, then it's

probably just taking up extra space. Take note of unnecessary items, and be willing to let some of them go.

2. Get rid of any duplicate items. How many pairs of basic jeans do you really need?

3. Put a stop to paperwork. Bank online, pay your bills online, and back up your data on iCloud or similar services.

4. Keep your home clutter-free.

5. Simplify mealtime. Don't over-buy food at the store, eat perishables before they go bad, and dispose of what has gone bad. Make smaller meal portions so that food doesn't go to waste, and make the most of leftovers when you do make too much.

6. Pack lightly. Apply the minimalist approach to your travels, and save major bag space by packing light.

7. Minimize your wardrobe. Being a minimalist doesn't mean lacking fashion sense, but stick to basic colors and pieces that will go with everything for a classic (and easy) style.
