One Pot Tomato Soup

There is nothing more comforting than a warm bowl of soup on a cold winter’s day! This tomato soup recipe is a family favorite—both delicious and nutritious. What’s even better? Ingredients
• 2 teaspoons of olive oil • 1 cup of diced yellow onion • 1 clove of garlic, minced • 1 teaspoon of dried basil • 1 (28-ounce) can of whole peeled tomatoes • 1 (6-ounce) can of tomato paste • 1 (14.5-ounce) can of diced tomatoes • 1 cup of vegetable broth • 1 (14-ounce) can of coconut milk • ¾ teaspoon of sea salt • ¾ teaspoon of black pepper • 1 tablespoon of maple syrup
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened.
Add the garlic and dried basil. 2. Add the tomatoes and their juices, tomato paste, diced tomatoes, vegetable broth, coconut milk, salt, pepper, and maple syrup.
Cover the pot and bring to a simmer. Let cook for 15-20 minutes. 3. Turn off the heat and let the soup cool. Then, puree in a blender. 4. Transfer the soup back to the pot and bring soup back to a simmer over medium heat until warmed. Simmer uncovered until desired consistency is reached. 5. Serve with homemade croutons or pair with a grilled cheese!
