Our host and co-owner of Hyll, Paul Baker, regaled us with stories of his life, making everyone feel instantly at home. The real stars of the evening, though, were acclaimed author Jim O’Sullivan and Toti Gifford, founder of the legendary Giffords Circus, who led us through fascinating discussions of theatre, history and imagination. The three-course tasting menu, crafted exclusively for the event by Head Chef Mark Coleman, was nothing short of superb - paired beautifully with wine, each dish felt like a work of art. Post-dinner, the thoughtful talks from Jim and Toti sparked meaningful conversations, and guests naturally drifted into the cosy lounges. Some explored the vinyl collection supplied by Truck Records, others curled up in the drawing room with a book from Borzoi, or tucked into a complimentary copy of Jim’s latest novel, One Life, A Thousand Souls. This launch event was a resounding success, and we can’t wait for the next Supper Club. As part of our three-day birthday odyssey in the Cotswolds, we knew we needed a stay that would be as unforgettable as the trip itself. Hyll in Charingworth, nestled just outside Chipping Campden, turned out to be the perfect escape.

This 17th-century manor house, set amid 60 acres of rolling meadows and woodland, feels like a sanctuary, offering everything we could ever want: warmth, character, and a sense of calm that truly elevated our expectations. Escape to Hyll: Where every detail is designed for bliss And as if the surroundings weren’t enough to make it unforgettable, we were lucky enough to be invited to join Hyll’s Supper Club - a chance to enjoy incredible food, delightful conversation, and the most engaging company. Sharing a meal with 11 other likeminded diners, many of whom were also in the publishing world, created the perfect setting for making memories that would last far beyond the evening. The warmth of Hyll: A place to feel truly at home From the moment we set foot on the property, Hyll felt less like a hotel and more like staying in the home of incredibly stylish friends. It’s clear that every inch of this manor, from its Cotswold stone walls to its hand-finished plasterwork, is a labour of love. The atmosphere is effortlessly chic, yet warm and inviting, with no pretence, just genuine hospitality. The staff greeted us like old friends, and that made us feel more like guests at a private estate rather than visitors at a hotel. The owner, Paul Baker, was a true highlight of our stay. Paul, a former bakery mogul whose brioche brand gained international recognition, has seamlessly transferred his passion for quality into every aspect of Hyll. Throughout the evening, he was the perfect host, sharing fascinating stories from his past business ventures and the journey he and his wife, Lisa, a writer and producer, and the business partners, took to open this stunning property. The evening felt more like a gathering of friends than a formal dinner, and Paul made sure every single guest felt like they were at the heart of the experience.

The Supper Club: A feast for the senses The Supper Club at Hyll is nothing short of magical. We sat down with eleven other guests, all of whom shared a similar creative spirit and an eagerness to connect - and what followed was an unforgettable evening of culinary delights and spirited conversation. The food was, quite simply, out of this world each course was a carefully crafted masterpiece that celebrated the very best of local and British produce with a modern, effortless touch. Every bite was better than the last, and the atmosphere made the experience even more special. It wasn’t just about the food (though it was exceptional!); it was about the people we shared it with, the conversations we had, and the connection that formed almost immediately.

Paul, ever the storyteller, regaled us with tales from his bakery days, all while ensuring that everyone felt included and at ease. It wasn’t just a dinner - it was an experience, a conversation, and stories shared among friends. After the main course, we retreated to one of the hotel’s cosy snugs -complete with record player and a sweet selection of vinyl - to continue the evening. The sense of warmth and camaraderie carried through, and the feeling of being so welcome stayed with us well into the night. We’ve even made plans to meet up with some of the wonderful people we met there - it truly was that kind of evening. We walked away with new friends, fantastic memories, and a full belly, feeling thoroughly pampered. 12

Hyll: The perfect escape Aside from the incredible supper experience, Hyll itself is the epitome of relaxation. The hotel’s sixty acres of meadow, woods, and rolling hills are the perfect setting for a digital detox. We found ourselves wandering the grounds, walking slowly and soaking in the beauty of the landscape, which, quite frankly, felt like something out of a fairytale. There’s no rush here. You can leave your phone behind and embrace the slower pace of life, allowing yourself to fully unwind.

A stay we’ll never forget Our stay at Hyll was, without a doubt, one of the most memorable parts of our birthday adventure. It wasn’t just a hotel experience - it was an experience in itself, almost spiritual. It was in a word, special. Between the fabulous food, the exceptional company, the relaxed vibe, and the stunning surroundings, Hyll made us feel like we were part of something with synchronicity at its soul. We left feeling completely rejuvenated, with a full heart (and stomach) and new friends to look forward to seeing again.

The rooms are a retreat in themselves. Our room, decorated in earthy tones with touches of Cotswold charm, was beyond dreamy. The Naturalmat bed was so comfortable, it made getting up in the morning almost impossible. And the linens? To die for. Soft, luxurious, and impeccably chosen. The hotel is also wonderfully dog-friendly, which added to its charm.

If you’re looking for the perfect blend of luxury, comfort, and warmth - a place where you can truly unwind and disconnect from the world - we can’t recommend Hyll enough. Breakfast the next morning was a feast, showcasing locally sourced produce, and it was clear that Hyll is all about quality. Every little detail is thought through, from the Verden toiletries to the curated book selections (thanks to their partnership with a local bookshop). The Borzoi Books in-room reading menu is a lovely touch, and it’s clear that the owners truly want guests to feel like they’re in their home - a place to relax, read, and unwind.

From the moment we arrived at The Georgian, we knew we were in for something special. Officially rated 5-star guest accommodation by Visit Wales, The Georgian is an effortlessly elegant boutique property nestled between Swansea city centre and the beautiful Swansea Marina.

A STYLISH & SERENE 5-STAR EXPERIENCE

With a dozen individually designed bedrooms and a stunning barlounge space, it’s a rare gem for the city - not only perfect for overnight stays but also available for exclusive hire, making it an ideal setting for celebrations such as engagements, weddings, or milestone birthdays. We stayed in the Intreped room (yes, it’s spelt that way – all the rooms are named after ships), and what a treat it was. The first thing that caught our eye was the two grand windows overlooking the stately Morgans Hotel across the way. Light streamed in, giving the room a warm, welcoming glow that immediately made us feel at home.

Everything we needed for a comfortable stay was at our fingertips: a quality coffee machine, kettle, biscuits, and a generous supply of tea, coffee and hot chocolate. But what truly surprised and delighted us was the slice of chocolate cake with fresh strawberries waiting for us – a small indulgence that perfectly set the tone for our visit.

The centrepiece of the room was undoubtedly the king-size half-poster bed, dressed in luxurious linens, plush Welsh throws and cushions, and standing so tall that a step was thoughtfully provided on the “ladies’ side” - a charming touch that spoke volumes about the attention to detail here. It reminded us of one of our favourite rooms, Number 13, at The Portobello Hotel in Notting Hill.

And then came the bathroom, which felt more like a private spa. Finished with rich green tiles in the shower, striking black and white tiling on the floor, and a double-headed shower so both of us could freshen up at once without compromise, it was pure luxury. Fluffy robes and towels, plus an array of Molton Brown toiletries, rounded off what we can only describe as a perfect pamper session. 15

Though The Georgian itself doesn’t house a restaurant, guests are invited to enjoy breakfast at the neighbouring Morgans Hotel, a short stroll away. After a deeply restful night’s sleep (the kind you only get in properly quiet, wellappointed rooms), we headed over and were warmly greeted by Chris, who was professional, efficient, and very charming. The breakfast offering was impressive, but we couldn’t resist the traditional Welsh breakfast, which came piping hot with all the trimmings (the Black Pudding was outstanding), and was every bit as delicious as we’d hoped. The location couldn’t have been more ideal for our plans. We had travelled to Swansea to catch up with an old friend, and the property’s position, just a short walk from the Swansea Building Society Arena and close to both the city centre and marina - meant we were never far from a coffee, a stroll, or a scenic view. We particularly enjoyed our stop at The Observatory Café, an offbeat, quirky little spot that oozes character and creativity - it’s now firmly on our must-visit list for any future trips - a real Swansea gem.

As for the staff at The Georgian, they were the icing on the cake. Genuinely warm and welcoming, they made us feel like long-lost friends rather than first-time guests. It’s easy to say that great customer service is important, but it’s rare to find such a consistently high standard of hospitality. From helpful tips about the area to restaurant recommendations (we particularly appreciated their insight into local favourites), they went above and beyond. Molly, in particular, stood out – her passion for the property and her easy, attentive manner left a lasting impression. One final thought, for those considering booking The Georgian for a special occasion, the bar-lounge space is absolutely gorgeous and lends itself beautifully to private events. We couldn’t help but imagine how wonderful it would be to host a wedding celebration or engagement party here, with all twelve bedrooms booked out so guests could stay under one roof. It’s a unique offering in Swansea and one that sets The Georgian apart.

With free parking available just across the road (at the time of writing), beautiful design, top-notch facilities, and a location that makes exploring Swansea and the wider Gower Peninsula a breeze, The Georgian Swansea is a true five-star experience. Things to see and do In Swansea, you can explore cultural sites like the Dylan Thomas Centre and the National Waterfront Museum, visit the Glynn Vivian Art Gallery, and shop at the large Swansea Indoor Market (we really like the market – very authentic and very Swansea). For outdoor activities, walk or cycle along the Mumbles promenade, and for scenic beauty, head to the nearby Gower Peninsula for beaches, walking trails, and castles like Oystermouth Castle. Culture and history Dylan Thomas Centre Learn about the life and legacy of the famous Welsh poet. National Waterfront Museum Discover the maritime and industrial history of Wales. Glynn Vivian Art Gallery View a collection of art in the city’s premier art gallery. Swansea Market Experience one of the largest indoor markets in Wales for local produce and goods. Outdoors and recreation Gower Peninsula Swansea is the gateway to the Gower: cycle, walk, or explore beaches, castles (Oystermouth, Loughor, Weobley), and there are some great golf courses in the area. Spent many a happy weekend during my childhood exploring Three Cliffs Bay, Oxwich and Port Eynon. It’s magical. Mumbles Promenade Take a walk along the famous promenade, which is also popular for dog walking. From Morgans Hotel you can actually walk all the way to Mumbles. Perfect for you those that love to keep active. Plantasia Visit this tropical haven located within the city. Food and drink Joe’s Ice Cream Stop at this iconic local parlour for a treat. They have tons of flavours and a visit to their Mumbles shop is a must. The Swansea Observatory A real gem - we loved it’s quirky décor. Great coffee and, allegedly, their brunch is excellent.

The Double Red Duke isn’t new money trying to impress - it’s old soul, deeply rooted in the Oxfordshire countryside, with history etched into its beams.

Dating back to the 18th century, this former coaching inn has lived many lives, but its current incarnation might be its finest yet. Reimagined by Country Creatures, the Duke now balances heritage with contemporary confidence: roaring fires, honest materials, serious food, and nineteen beautifully designed bedrooms that turn a great pub into a destination stay.

This is the kind of place that understands where it’s come from and uses that knowledge to do everything better. Walking through the door felt like stepping into a pub that knows exactly what it is and doesn’t need to shout about it. Confident, self-assured, quietly electric. Then came Claire. Not the rehearsed, corporate version of hospitality - no stiff smiles or scripted pleasantries - but the real thing. Funny, warm, sharp, full of personality. The kind of welcome that instantly tells you: relax, you’re in good hands now. And oh, were we ever. 18

Dinner that stops you mid-sentence Let’s not dress this up politely. This was some of the best food we’ve ever eaten. Not “best pub food.” Not “best in the area.” Just, best. We started strong and never looked back: Beef tartare Clean, confident, deeply beefy. Beef dripping toast A masterclass in restraint and indulgence living side by side. 15-month parmesan Nutty, crystalline perfection. Rabbit and bacon rillette with damson purée and sourdough A dish that whispers countryside and shouts technique. Then came the main event... A thing of beauty. A statement. A 1kg Hereford Mount Grace Farm porterhouse, with a 900g rib, cooked exactly as beef dreams of being cooked. Deep crust, blushing interior, unapologetically magnificent. Red wine and port sauce alongside, triple-cooked chips that shattered on impact, BBQ hispi cabbage with miso butter that deserved its own round of applause. This wasn’t a meal. It was a moment. Dessert? Naturally... Crème brûlée Glassy and perfect. Sticky toffee pudding with vanilla ice cream Rich without being cloying, the kind of pudding that makes you close your eyes for a second and smile. A bottle of the house red - full-bodied, generous, and utterly at home with that steak - tied it all together like a good story told by someone who knows where it’s going.

And presiding over this feast was Max. Not just a waiter - our guide, officiant, a custodian of good taste. He knew the food, understood the wine, and delivered it all with charisma and genuine enthusiasm. A character in the very best sense of the word, and a real credit to the Duke. Accolades, earned not claimed The Double Red Duke wears its accolades lightly, but they’re there for a reason: Michelin recognition, serious foodworld respect, and a reputation that stretches far beyond the village. This isn’t hype - it’s consistency, quality, and a refusal to cut corners. A room you won’t want to leave Upstairs, our double room awaited - and what a room it was. Elegant, indulgent, and designed for lingering. The standout? A freestanding bath right in the bedroom, the kind that demands candles, wine, and zero urgency. There was also a separate shower room, cavernous enough to host a small village meeting. Frankly, you could fit fifteen people in that shower - and Walk With Me Tim would absolutely lose his mind over it. This wasn’t just somewhere to sleep. It was somewhere to be. Breakfast, rewritten... Morning arrived gently, and breakfast followed suit - though “breakfast” hardly does it justice. Thoughtful, beautifully cooked, and every bit as impressive as dinner. Proper coffee. Exceptional ingredients. Plates that made you slow down and actually enjoy the start of the day instead of rushing through it. It felt considered. Loved. Serious. 20

Calligraphy, community, and creativity Then something unexpected - and wonderful. A calligraphy class, hosted onsite, and proof that The Double Red Duke isn’t just about eating and drinking well - it’s about living well. Pens scratched, laughter flowed, concentration mixed with camaraderie. Every participant walked away not only with new skills but with that rare feeling of having genuinely enjoyed themselves. It was fun, absorbing, and brilliantly curated. And this is just one of many events they host - from creative workshops to food-led experiences - turning the pub into a living, breathing cultural space rather than just a destination. Until next time... We didn’t manage to visit their sister pub, The Mason’s Arms - real life called, appointments beckoned - but that just gives us an excuse to return. COMFORT FOOD IN STYLE. BUDGET-LUXE DONE RIGHT

Think bold interiors, big flavours and the kind of laid-back luxe that makes even a one-night stopover feel like a mini break. From the outside, it’s sleek, modern and instantly inviting - but it’s inside where Mollie’s really comes into its own. Step into reception and you’re greeted by a vibrant lounge-bar space that’s as trendy as any city-centre hangout. We parked ourselves in one of the cosy corners to feed our sixweek-old (the team happily provided a cot in our room) while I enjoyed a cold beer from the well-stocked bar. A surprisingly relaxing start to the stay, all things considered. The rooms? Bright, modern and practically perfect. Ours was a spacious, on-trend double with a big, comfy bed and thoughtful extras that set Mollie’s apart: free chocolates on arrival, a choice of bottled cocktails (we were VIP guests – Old Fashioned for me, naturally), and hair tools that’ll make any guest feel well looked after. GHDs and Dyson dryers aren’t what you’d expect at a roadside motel - but then, Mollie’s has never followed the rules.

One small gripe: the coldest setting on the shower could have doubled as lava – more scorchio than soothing. But aside from that, everything ran smoothly, and even baby Luca settled in nicely for his first night away from home (miraculous!). Of course, a stay at Mollie’s isn’t complete without a trip to the diner, which delivers American comfort food with style and swagger. Starters like hot honey cheese croquettes and loaded nachos kicked things off with serious flavour, followed by the indulgent New Yorker burger and a standout Chicken ‘n’ Waffle plate - crisp buttermilk fried chicken, smoky bacon and lashings of maple. For dessert, the lemon meringue pie and banana cream pie were ridiculously good - rich, nostalgic, and utterly unshareable. Drinks-wise, the diner pulls no punches. Our order? A salted caramel shake with a hit of bourbon, a strawberry shake with all the toppings, and a classic Old Fashioned that more than hit the spot. The whole atmosphere is buzzing – lively, welcoming, and stylish without trying too hard. 24

Come morning, we took full advantage of the self-serve tea and coffee station (essential when you’re parenting a newborn), then hit the diner once again for a breakfast worth getting up for. Eggs Benedict made with Burford Browns – always a sign of quality – and French toast that was thick, fluffy and gloriously drenched in maple syrup. Parking? Loads of it, all free. Location? Spot-on for exploring Bristol or heading down to the South West. Overall vibe? That rare mix of cool and comfortable, where families, couples and solo travellers all feel equally at home.

Would we come back? 100%. We’re already plotting our return - ideally with a babysitter in tow so we can make the most of the cocktails. Mollie’s Bristol nails the formula: design-forward, great value, and full of personality. How to get there Mollie’s Bristol is located just off junction 17 of the M5, making it a great stopover en-route to Devon and Cornwall or a fun base for exploring Bristol and the surrounding countryside. With breathtaking scenery, pandas, and some of the weirdest yet most amazing food she’s ever tried, it’s safe to say the trip left a lasting impression. We caught up with Debra to hear all about her adventure. What inspired your trip to China? When the opportunity arose to experience China, I jumped at it. I’d never been to that part of the world before, and it felt like the perfect chance to explore somewhere completely new. Was it your first time visiting, or have you been before? As I mentioned earlier, it was my first time in China, so I was genuinely excited to experience all the amazing things it had in store. How long did you stay, and which cities or regions did you visit? I spent 10 nights in total, including travel time, and visited both Chongqing and Shanghai - though it still didn’t feel long enough! There’s so much more to discover in this incredible country, and I’d definitely love to return and explore further. Was your trip spontaneous or well-researched? The trip was inspired by Wendy Wu Tours’ exciting new destination in China - Chongqing. The Wendy Wu team organised everything for us, from the itinerary to the meals, so all I had to do was arrive and enjoy the experience they had planned.

How were the logistics - flights, visas, transport? Because I was travelling with Wendy Wu, all the logistics were taken care of including visas and transfers throughout the entire tour - which made the leadup completely stress-free. Our direct flight with China Air into Chengdu was also very comfortable. What stood out most to you- and why? Chongqing completely stole my heart. From the dazzling city lights and riverside atmosphere to the ancient art, vibrant culture, and lively chaos - not to mention the countless steps and unforgettable experiences - the city truly takes your breath away. Favourite experiences? It has to be the pandas - total cuteness overload! Visiting Chongqing Zoo was an absolute dream, and these furry friends were simply unforgettable. But I also won’t forget seeing a train pass through the 7th floor of a building or cruising along the Yangtze River while enjoying a spectacular drone show truly unforgettable moments! Oh, and our visit to the famous hot springs was surreal, especially getting to bathe in springs infused with coffee or wine an experience unlike any other. Did you do anything adventurous? We had an adventurous day exploring the UNESCO World Heritage site of the Three Natural Bridges and trekking through Wulong National Park, where Transformers: Age of Extinction was filmed. Lots of steps, but absolutely worth every one! 44

What did you think of the Chinese culture and people? I was absolutely fascinated by Chinese culture - the rich history, vibrant traditions, and unique blend of ancient and modern life left a lasting impression. The people were incredibly warm, welcoming, and proud to share their heritage, which made the experience even more special. Did you interact with locals? Yes! The locals were incredibly warm and welcoming, clearly proud to share their hometown with us. In the ancient town of Tongnan, many even wanted to take photos with us, which we were more than happy to oblige. What stood out food-wise? Has to be the famous Hot Pot. It’s such a fun and interactive way to eat, with fresh ingredients cooked right at the table in a bubbling, flavourful broth. The variety of flavours and spices was incredible, and it truly gave me a taste of authentic Chinese cuisine.

Any memorable customs or quirks? What really stood out was how locals proudly shared their food and insisted we try it -such a warm and personal way to connect. I also loved the quirky everyday moments, like watching a train pass through the 7th floor of a building in Chongqing or wandering through the bustling local markets alive with energy and unique street foods. These little customs and quirks truly brought the culture to life. Most unforgettable moment? There were so many unforgettable moments that I’ll treasure forever, but one that truly stands out is our visit to see the incredible ‘Chongqing 1949’. It’s one of the most powerful performances I’ve ever witnessed, telling the story of China’s 1949 liberation. The show was emotional, breathtaking, and completely unlike anything I’ve ever experienced.

Any funny travel stories? Four women flagging down a local taxi in a strange city at night - what could possibly go wrong? Our driver didn’t speak a word of English, we swerved across two lanes at speed, and even nearly brushed a wall in a tunnel! Somehow, despite all the chaos, we managed to stay surprisingly calm-ish! What did you take away from this trip? China is an incredible country. I honestly didn’t know what to expect, but it exceeded every one of my expectations. I’d absolutely love to return and explore even more. Would you recommend it? Absolutely! I felt completely safe, the people were incredibly welcoming, and the natural beauty, city lights, food, and experiences were simply unforgettable. I truly fell in love with the country. With rooms from just £59.50, Mollie’s has perfected the art of the budget-luxe escape. Perfectly positioned for a jaunt through the Cotswolds or a spree in Oxford city, it’s a playful pitstop that feels more boutique hotel than bargain motel.

Step inside and the vibe is instant: hip, vibrant and immaculately kept. We half-expected a stripped-back student digs type of stay but were immediately proven wrong. Our double room ticked every box - and then some. Think Hypnos mattresses so comfy you sink in without resurfacing, powerful rainfall showers (special praise too for the Cowshed products – really loved those), climate control, and even Dyson hairdryers and GHD straighteners. Yes, really. These are touches you’d expect in a five-star city hotel, not a roadside stay that costs less than a family night out at the cinema. Admittedly, the one quirk was nipping into the hallway for hot water via a wall faucet. An oddity that’s more charming than inconvenient - slip on your pyjamas - certainly no big deal. Everything else ran effortlessly: hot, powerful showers; plump pillows, and spotless, well-thought-out spaces. 50

But Mollie’s isn’t just about the rooms. Central to the whole experience is the diner - a retro-meets-modern homage to the classic American pitstop. Initially, we hadn’t planned to eat there, but after a long day’s shopping detour through Cheltenham and Oxford, our appetites made the decision for us. And thank goodness. My steak and eggs (rare, naturally) were cooked to perfection, while my husband’s double cheeseburger with bacon could hold its own against any award-winner. Add in good old apple pie and ice cream, dangerously good cocktails, and warm, personable staff (Sabrina and Keira) who happily chatted with us, and suddenly the diner felt like the beating heart of Mollie’s. The atmosphere, much like the interiors, is stylish without being stuffy: neon signage, cosy booths, and a crowd-pleasing menu that runs from fried chicken and nachos to pancakes and fries. It’s comfort food done with confidence, and the vibe is every bit as Instagram-ready as the menu is belly-filling.

What makes Mollie’s Oxford really shine, though, is how much you can fit around your stay. We managed to cram in shopping trips to both Cheltenham and Oxford city before dinner, then, on the journey home, squeezed in a sunny September jaunt through Stratford-upon-Avon and Leamington Spa. In Stratford, we sipped sangria by the river before hitting Domino Style, a boutique I’ve long followed on Instagram, where owner Abbie herself helped me curate a couple of irresistible finds. Then it was on to Leamington Spa for a visit to the store’s sister branch for another purchase (I know, I seriously need help!).

How to get there Mollie’s Oxfordshire is on the A420 at Buckland, a 20-minute drive from the centre of Oxford where there is a mainline station served by Great Western Railway (GWR) trains. There are plenty of free parking spaces plus EV charging points. The nearest airport is London Heathrow International (61 miles). Don’t want to drive? The S6 bus service from Buckland to Oxford city centre takes roughly 30 minutes and runs every half hour from a handy bus stop just across the road (check with reception for details).

By the time we rolled back, we couldn’t believe how much we’d packed into an overnight escape. Mollie’s had delivered exactly what it promises: a smart, stylish, greatvalue base that makes the in-between moments every bit as memorable as the destination itself. Budgetluxe? Absolutely. But more than that, Mollie’s is a mood which I would thoroughly recommend.

Yet places like Hickory’s Smokehouse Cardiff prove a simple truth: when a restaurant gets the fundamentals right - food, service, atmosphere - people don’t stop coming.

HICKORY’S SMOKEHOUSE CARDIFF WHY GETTING THE BASICS RIGHT STILL MATTERS

’This was our second visit, having first dined here shortly after opening. Returning can be risky; expectations are higher, the honeymoon period long gone. But if anything, Hickory’s felt more assured this time. More settled. Like a team that has found its rhythm and is quietly enjoying the work. We brought our son with us - someone who loves food and works in the industry. He’s a tough audience and an excellent barometer. If a restaurant misses a beat, he’ll spot it instantly. If it gets it right, he’ll say so. Hickory’s passed the test twice. A Welcome That Sets the Tone From the outset, the atmosphere was warm, busy, and confident. Beth, who greeted us on arrival, struck exactly the right note - friendly, attentive, and genuinely engaged. She checked in throughout the meal without hovering, making sure everything was exactly as it should be.

Ash, another member of the team, was equally impressive. When one of the venue’s signature drinks didn’t quite suit our tastes, it was replaced without fuss, and the alternative was delivered perfectly. It wasn’t about showing off cocktail skills - it was about listening. That matters.

We were seated in a booth overlooking the open kitchen, which added an extra layer to the experience. Watching the brigade work was a pleasure: focused, coordinated, and precise. This is a team that knows its craft and executes it calmly, even at pace. Food With Confidence and Generosity

Later, we were also looked after by Brooke, newer to the team but already an absolute natural: warm, thoughtful, and a real asset to the restaurant. Atmosphere That Invites You to Stay Hickory’s is a place where everyone feels at home. Families, couples, groups of friends - it all works. The vibe is relaxed and inclusive, with no sense of pretence. You dress how you like. You order what you want. You settle in.

The meal began with Hickory’s signature popcorn and a small sample of their brisket strips - a clever introduction. Tender, smoky, deeply flavoured. A clear signal of what was to follow.

Starters delivered in full: n South Louisiana Gumbo with smoked pulled chicken, pork, jalapeño sausage, rice and black beans - rich, hearty, and full of depth. n Hot-Honey Fried Chicken Tacos, exactly as promised: juicy fried chicken, green tomatillo salsa, coriander and pickled red onions, with just the right balance of heat and sweetness. Then came the main event. The Cattleman’s Choice, inspired by Cowtown, USA, is designed for sharing - and it doesn’t hold back. Blackened rump steak, cowboy-buttered sirloin, and an 8-hour smoked beef rib glazed in Tennessee gravy, served with mac ’n’ cheese, skin-on fries, pickles and house slaw. Bold, indulgent, and cooked with confidence. A side of Poutine-style Dirty Tater Tots was impossible to resist and proved to be a highlight in its own right. Portions are generous - unapologetically so. Even hungry, we couldn’t finish everything and were more than happy to take the rest home. Dessert, Even When You Don’t Need It We claimed we were full. We weren’t fooling anyone. Dessert arrived in the form of The Cookie Creation - three chocolate chip cookies, sauce and Hickory’s Fro-Go ice cream alongside a serving of their Fro-Go on its own. Indulgent, playful, and entirely in keeping with the rest of the menu.

Drinks were equally well judged: a glass of wine, a vodka tonic, and one of Hickory’s signature grape sodas complemented the food perfectly. Details That Don’t Go Unnoticed What truly elevates Hickory’s Smokehouse Cardiff is the attention to detail. The service is consistently strong, the atmosphere thoughtfully managed, and even the practicalities - like spotless, beautifully maintained restrooms are clearly taken seriously. These things matter. They’re often overlooked, but they’re what turn a good meal into a great experience.

Final Verdict Two visits in, Hickory’s Smokehouse Cardiff has proven itself not just popular, but reliable - and that’s far more impressive. This is a restaurant that understands its audience, respects its ingredients, and values the people walking through its doors. In a challenging climate for hospitality, Hickory’s is doing exactly what it should be doing: delivering honest food, genuine service, and an experience that makes you want to come back. We will. From the moment we arrived, the ocean breeze carried the mellow strains of live music, while signature cocktails shimmered in hand-cut glasses. Every sip and every bite of the locally inspired cuisine spoke of the hotel’s deep connection to its surroundings: fresh, vibrant, and utterly indulgent. The St Brides team couldn’t have been warmer or more welcoming, guiding guests through the freshly refurbished bedrooms and the jewel in the crown - the spa. With light-filled interiors echoing the nautical theme, the new rooms feel crisp, airy, and effortlessly stylish, perfectly in tune with the panoramic coastal backdrop. But it’s the spa where the wow factor truly resides.

Step inside, and the world slows to a serene hush. This is no ordinary retreat; it’s a sanctuary of calm where body and soul fall back into balance.
