ir araya geldiğimiz son sayıdan beri birçok gelişme ve önemli çalışmaya imza atma şansını yakaladık. Bu yıl ülkemiz ve derneğimiz için çok anlamlı bir çalışmaya imza atıyoruz. Mart ayında yapılan Olağan Genel Kurulumuz ile yeni Yönetim Kurulumuzu seçtik. Çok daha güçlü ve etkili bir kadro ile gelecek dönemde başarılarımızı artırarak yolumuza devam edeceğiz.

Ekim ayındaki fuarımızda bu yıl Başkan Yardımcısı olduğumuz Avrupa Franchise Federasyonu üyelerini ağarlayacak ve toplantıları İstanbul’da UFRAD ev sahipliğinde gerçekleştireceğiz. Bu gurur ile tüm üyelerimizi fuarımıza ve toplantılara katılmaya bekliyoruz.

This year, we will host to the members of the European Federation of Franchisees who we are vice president and held the meetings hosted by UFRAD in İstanbul, October at the fair. We look forward to participating of all our members’ to meetings and fair with this pride.

UFRAD Olağan Genel Kurul Toplantısının açılış konuşmasını UFRAD Genel Başkanı Dr. Mustafa AYDIN gerçekleştirdi. UFRAD Genel Başkanı Dr. Mustafa Aydın yaptığı konuşma ve sonrasındaki faaliyet sunumunda UFRAD’ın yoğun çalışmalarını, UFRAD üyeleri ile paylaştı.

MEMBERS OF UFRAD CAME TOGETHER the ufrad members IN TRADITIONAL IFTAR DINNER Geleneksel UFRAD İftar Yemeği, Bursa Kebap Evi ev sahipliğinde Vadi İstanbul AVM’de gerçekleşti. Yoğun katılımla gerçekleşen İftar Yemeğine, UFRAD Üyelerinin yanı sıra birçok marka temsilcisi de katıldı.

UFRAD Traditional Iftar Dinner was hosted by Bursa Kebap Evi in Vadi İstanbul AVM. In addition to UFRAD Members, many brand representatives attended to the Iftar Dinner, which was held with an intense participation.

Franchise Academy Education that is annually organized by UFRAD Franchising Association took place in İstanbul-Aydın University Beşiktaş campus between April 21 -29 with cooperation of İstanbul Aydın University and Franchise & More.

Work places and offices in prestigious shopping malls,meeting rooms and permanent secretaries all which carry with them a high expenses are no longer favoured by business owners and entrepreneurs who instead now prefer to obtain these requirements by virtual offices,ready to use offices and coworking offices to cut out high expenses.The general difference between the ready to use and renting an office is that all requirements and expenses are included in the rent.Resulting in companies not having to tie themselves to a long term contract and so relieving themselves of unnecessary expense.

964 yılında kurulan Marmaris Büfe 1964, tüketiciye daha kaliteli hizmet sunmak üzere yaptığı yatırımlarla hem müşteri hem de pazar ağını genişletiyor. Şirketin Yönetim Kurulu Başkanı Mustafa Sargın, franchise sistemine ilişkin sorularımızı cevaplandırdı. Sargın; başarılı bir franchise sisteminin şu özelliklere sahip olması gerektiğini söylüyor: “Öncelikle alt yapısı bitmiş olmalı. Alt yapısı tamamlandıktan sonra en az 10 ile 15 yıldan sonra franchise vermeye başlanmalıdır. Kendisine ait servis ağlarının mevcut olması gerekiyor. Mustafa Sargın said that when franchises were given their location should be on a shopping street, or a place where vehicles or traffic was intensive,near to a hospital or a university, a position with a high potential to effect business, he continued; ”It is important that premises have gardens or open space, the position of the location should first be decided upon and only then should the franchise be given”. Sargın also drew attention to the fact that inspection is very important, every franchise branch should be inspected at least once a month and if any unsuitable materials or any forbidden workers were found a disciplinary punishment must be given.

At this point the President of the Board Mustafa Sargın described the secret of success of Marmaris Büfe in the following manner” It is essential that the manager always be present and following business.It is important to ensure high quality and hygiene standards. Ensuring that the product offered uses correct ingrediants and forming their own licenced production units were also important factors. There must be at the head of the production unit a food engineer or a veteriner. Not using products from unlawful producers. Ensuring that whichever quality or brand of ingredient was used up until now the same be maintained. The prices on the Menu of all the franchisees and the tastes of the product must be the same. At least every month Marmaris Büfe 1964 sends its own inspection team to the franchise branches.

The most essential thing is that growth must be slow this is the message to the owners of companies who wish to be successful.

Mustafa Sargın gave the answer to the paradoks of rapid growth or slow growth, ”Without a doubt growth must be effected slowly.

We see that the brands which grow with great speed often within 3 to 5 years are no longer to be found in the market place.

RoseBerry Plus konseptini ise 60 metrekare üzeri alanlarda uyguluyoruz. Plus konseptinde AVM ve cadde lokasyonlarını hedefliyoruz. Yine aşırıya kaçmayan küçük maliyetler ile yüksek kar yapma şansı veriyoruz.

RoseBerry Coffee’s Plus konseptimizde Portatif konsepte ek olarak kahvaltı, dünya mutfağı, makarnalar, salatalar ek olarak yer alıyor. Maliyetimiz ise ortala metrekare başına 600 dolar ile bin dolar arasında değişmektedir. Girişimcilerimizden abartılı rakamlar istemiyoruz. Kendimiz kazanırken müşterilerimizin de kazanmasına çaba gösteriyoruz. 20 mağazaya ulaşıncaya kadar girişimcilerimizden franchising bedeli almayacağız. Buda şu an için önemli bir detay. Yatırımcıların bunu dikkate almaları gerektiğini düşünüyorum.

2013 we bought the rights to the name from Eshabil Culfa and founded our brand. From that date up until the present we at RoseBerry Coffee’s have worked our own shops with well trained quality team members, we have never deviated from the high quality of our product, we have been constantly up dating processes and quality management methods and bringing in new methods all so that we could serve customer requirements in the very best manner.

It was, from the moment we founded our company, our intention to offer franchises and we put into place the necessary requirments for that system. But first we believed that setting our own shops into action was the correct thing to do. The system was set up and the concept was totally completed and that was when we began to first offer franchises. So we started to offer franchises from the middle of 2015.

We have two different concepts: Portatif/Plus With Roseberry Portatif there is low investment,quick service and as its name suggests it needs only a 40-60sq.m.space while offering viable possibilities to the investor. The Portatif concept has in the main coffee;but its menu also has hot and cold beverages, frozen cheesecake and other varieties of cake and cold sandwiches... We have chosen the most practical and most up to date packaging for our customers so as to ensure our product has the freshness of its first day. With the RoseBerry Plus concept the space must be 60sq.m. and we also wish them to be positioned in a Shopping Center or in a busy thoroughfare. This concept also brings with it the opportunity of profit without an enormous investment.

With the RoseBerry Plus concept in addition to the items on the Portatif menus the Plus has breakfasts,world kitchen,macaroni and salads. The investment is approximately 600-1000 $ per sq.m. We do not ask for vast amounts from investors.We wish to ensure that both they and we will profit. Until we reach the number of 20 shops we shall not take a franchise fee from our investors. That in itself is a very important point one I believe investers should take into consideration.

MARS LOGISTICS 2018’DE YATIRIMLARINA DEVAM EDİYOR MARS LOGISTICS WILL CONTINUE ITS INVESTMENTS IN 2018 Türkiye ekonomisinde kilit öneme sahip lojistik sektörü 2017 yılını yüzde 5 büyüme ile tamamladı. Gelişimini sürdüren ve yeni pazarlar keşfeden sektörün, 2018 yılında da büyümesi bekleniyor Türkiye’nin lider lojistik firması Mars Logistics Genel Müdürü Ali Tulgar’ın yaptığı açıklamaya göre, lojistik sektörü yılı büyüyerek tamamladı. Alt yapı çalışmalarının devreye girmesi ve önemli bağlantılarda yapılacak değişiklikler sektörümüzü olumlu olarak etkileyecek” dedi.

One of the most prominent and important business sectors in Turkish Economy is the logistic sector.It completed 2017 with a growth of 5%. As the sector grows and new markets are discovered in 2018 it is expected to show increased growth. Presently we are in the first three biggest exporters in Bursa while in Turkey we are among the first 500. We have 45 years of experience in the sector both domestically and abroad”.

1965 yılında İstanbul’da doğdum. Küçük yaşta Londra’ya yerleşip eğitim ve öğretim hayatımı orada tamamladım. İlk iş hayatına Londra da kendi şirketimiz olan Garment Plus’ta pazarlama sorumlusu olarak atıldım. Akabinde firmamızın planlama, satın alma ve üretim departmanlarının sorumluluğunu da üstlendim. 2001 yılından bu yana da Türkiye’de faaliyet göstermekte olan GHS Grup şirketimizin yönetim kurulu başkanlığını yapmaktayım.

Will you please briefly introduce yourself?

I was born in Istanbul in 1965. At a young age I settled in London and was educated there.

My first step into business life was when I became the person responsible for marketing in London for our own company Garment Plus. This was followed by my taking responsibility for planning, buying and production departments for our company. From 2001 until now I have been Chairman of the Board for our group the GHS Group which is based in Turkey.

Bunun üzerine ürettiğimiz ürünleri başta İngiltere olmak üzere AB ülkelerine ihracatını gerçekleştirmeye başladık ve hala devam ediyoruz. Uzun yıllardır dünyaca ünlü pek çok marka için üretim yapmaktayız. Şuan Bursa’da ihracat anlamında ilk 3, Türkiye’de ise ilk 500 kuruluş arasında yer alıyoruz. Yurt içi ve yurt dışı olmak üzere sektörde 45 yıllık tecrübeye sahibiz. Sahip olduğumuz bu tecrübeyi güçlü bir kadro ile en iyi şekilde değerlendirip 2009 yılında kendi markamızı yaratma projesi ile NaraMaxx için ilk adımları attık. 1 yıl süren hazırlıklardan sonra 2010 yılında NaraMaxx’ı hayata geçirip mağazacılık sektörüne de yönelmiş olduk.

We decided that to develop our 2 London companies Garment Plus and Design House, and make them both permanent and competitive that we should make use of the important potential that Turkey has in textiles and effect our production in Turkey. From that point onwards we began to export the garments we produced mainly to England but also to Europe and this is what we continue to do. For many years we have been producing for many world wide known brands. Presently we are in the first three Bursa exporters while we are among the first 500 in Turkey. We have 45 years of experience both domestically and abroad. With this experience and the help of a strong team we decided to maximize its use and in 2009 we took the first steps to form our own brand, NaraMaxx, then after an additional years work NaraMaxx was founded and we directed ourselves towards the retail sector.

When and how did your company first begin to give franchises?

We have constantly tried to use the correct strategies and effect the necessary investments

as we move forward with our brand and I can definitely say that the point to which we have come makes us very proud. Each year we add 8 new consignee locations and open 3 new shops. Naturally as the number of shops increases so do our production figures. When we studied our vast production operations and the demands for it we decided to move forward more rapidly and so in the first months of 2017 we began to give Franchises.

How many branches and how many workers do you have?

Presently we have 17 concept shops,70 consignee sales points while at the same time with our online shop each season we show our new collection to our customers. We have 175 sales consultants who effect the required production/customer connections. If we look at the production division we have more than 1000 workers.

Which are the standards you search for in the people you have given or will give franchises to?

The primary requirements is that they be either entrepreneurs or investors. Experience in the business is very important. Additionally they must know the brand well and we need to believe that they will represent the brand in the best possible manner we also prefer them to be customer and problem solving focused. At the end of our meetings and the finalizing and agreement on all the contract clauses if the feasibility is seen to be positive then comes the mutual Franchise signing and we have begun to work together.

Kaç şubeniz ve çalışanınız var? Şuan 17 konsept mağazamızda, 70 konsinye satış noktalarında ve bayilerde aynı zamanda online mağazamızda her sezon koleksiyonumuzu müşterilerimiz ile buluşturuyoruz. Ürün ile müşteri arasında gerekli iletişimi sağlayan 175 satış danışmanımız mevcut. Üretim kısmına baktığımızda ise binin üzerinde çalışanımız bulunmakta.

The GHS Group has been professionally designer and producer for many famous brands.

We are stronger as we have worked in an international capacity for years which means that both our products and our manner of working are better than others in the field.

Because of the strength which NaraMaxx has entrepreneurs approach our company with much more trust. An additional important point is that we have respect for people and for surroundings and use only non harmful raw materials in our production which means we are one step ahead of other brands as we supply our customers’requirements this also is another reason that they prefer our company.

What kind of support do you give to your franchisees?

To those who take our franchise we give the brand name and our common data base together with all the required training and we also help in the provision of expert staff. At the same time we also offer them if wished the possibility of using the services of our own contracted architects which means they can effect better budgeting than they would from the general market as working with them eliminates most probable mistakes which would bring with them extra expense.An additional support is that we offer the entrepreneurs price advantages.

How do you check up on your franchisees?

Control of stock and sales and all shop actions can be easily controlled by our common data base,however we also effect periodic check ups.

Why should entrepreneurs take out franchises in this sector?

Primarily statistics show that entrepreneurs who set up a business under a franchise have much more chance of success than those who attempt to do it alone. For this reason many people use franchises. When we come to the question of why this sector, ready to wear and its retailing offers great opportunities for employment as it is always an ongoing sector.

Of course in order to be successful we need to correctly evaluate the advantages and to manage them well.

How do you evaluate the point that your sector has reached ın turkey?

Recently in Turkey many difficulties are being faced. The exchange rate rose rapidly which created problems in many sectors. If we take into account the world and our countrys political and economic movements it becomes obvious that the initiative must be taken to bring into force new conditions in the sector while changing many of the existing ones.

I myself believe that in the retail sector the shopping mall managers and the shop owners need to work in direct partnership with the brands. Which means a proactive system within which if all work together in the end it is best for everyone. I also believe that we need to be more focused on design and innovation. Our company despite being faced with so many difficulties views the situation positively. We never deviate from our dreams. Our motivation is in always having belief in the future.

Sektörün Türkiye’de son dönemde geldiği noktayı nasıl değerlendiriyorsunuz?

Son zamanlar Türkiye açısından çok zorlu geçiyor gerçekten. Döviz kurlarının hızla yükselmesi pek çok sektörü olumsuz etkiledi. Küresel dünyada ve ülkemizde yaşanmakta olan siyasi ve ekonomik hareketliliği dikkate alarak sektörde yeni koşullar oluşturmalı ve mevcut koşulların seyrini değiştirmek için inisiyatif kullanmalıyız. Şuna inanıyorum ki mağazacılık sektöründe AVM yöneticileri ve mağaza sahipleri, markalar ile birebir çalışıp partnership kurmaları gerekiyor. Yani proaktif bir çalışma içinde olup ortak bir şekilde hareket etmek herkesin yararına olacaktır. Bunun yanı sıra daha fazla tasarıma ve inovasyona odaklanmamız gerektiğini düşünüyorum. Biz her türlü olumsuzluğa rağmen genel anlamda çok daha umutluyuz. Hayallerimizden vazgeçmiyoruz. Bizi motive eden, her zaman geleceğe inancımız oldu.

Sizden franchisee alanların başarılı olması için nelere dikkat etmeleri gerekir?

Mağazacılık sektöründe başarı müşteri ile eşdeğer bir kavramdır. Müşteri ile doğru iletişimin sağlanması, ürünlerin ihtiyacı karşılayacak doğrultuda ve hızlı bir şekilde servis edilmesi gerekmektedir. Mağazadan mutlu bir şekilde ayrılan müşteri daimi bir müşteri potansiyelini oluşturur. Önümüzdeki dönem hedefleriniz nelerdir? Şuan Türkiye dışında Suudi Arabistan, Finlandiya, Kıbrıs, Kuveyt, Bosna, Azerbaycan ve İran’da her sezon koleksiyonumuzu müşterilerimizin beğenisine sunuyoruz. Hedefimiz kaliteden ödün vermeden üretimimizi daha çok fazlalaştırarak yurtiçi ve yurtdışı daha geniş pazarlara yayılıp marka bilinirliğini arttırmak.

What should those who take out franchises with your company do in order to be successful?

In the retail sector success equates with customer satisfaction. The correct customer relationship must be active, the merchandise must satisfy customer requirements and service must be rapid. When a contented customer leaves the shop it always means added customer potential.

Which are your goals for the upcoming period?

Presently in addition to Turkey we show our collections in Southern Arabia, Finland, Cyprus, Kuwait, Bosnia, Azerbaijan and Iran. Our goal is to increase the size of our production while never deviating from its good quality and to spread our market domestically and abroad so that our brand becomes more well known.

“PizzaLazza ilk şubesini 2014 yılında açtı. Temel hedefi, yeni tatlar geliştirmek ve bunları bizzat müşterilerinin yorumuna sunmaktı. Hızlı servis pizza sektöründe alışılmadık yeni ürünlerimiz müşterilerden de olumlu dönüşler aldı” diyen Kurucu Genel Müdür Hasan Akyüz sorularımızı yanıtladı.

Hasan Akyüz the Founder and General Manager of the brand, while answering our questions said “We opened the first branch of PizzaLazza in 2014. Our main objective was to develop new flavors and to offer them to customers in order to see their reactions. Customers responded very favorably to those flavors which were very different to the usual Quick Service Pizza sector”.

Sizi kısaca tanıyabilir miyiz?

Gurubumuzun yeni gıda markası Pizza Lazza’nın Kurucu Genel Müdürlüğü görevini 4 yıldır sürdürmekteyim. Daha önce farklı pozisyon ve alanlarda çalıştım. Planlama, üretim ve satış gibi. Turgut Aydın Holding’in tekstil sektöründeki markası Aydın Örme’nin de 2010 yılından beri Genel Müdürlüğü görevini sürdürmekteyim.

Will you please introduce yourself?

I have been the Founder and General Manager of Pizza Lazza the new brand of food within our Holding for the last four years. Prior to that I worked in various positions in other sectors such as Planning, production and sales. Turgut Aydın Holding has in the textile sector the brand Aydın Örme and from 2010 I was the General Manager for that.

A101, English Home gibi markalarıyla 7.500’ün üstünde satış noktasında on binlerce kişi istihdam eden; aynı zamanda Memorial Sağlık Grubu ve Aydın Örme gibi sektörlerinin lider kurumlarının sahibi Turgut Aydın Holding olarak hızlı servis restorancılık alanına girmeye yaklaşık 5 yıl önce karar verdik. PizzaLazza ilk şubesini 2014 yılında açtı. Temel hedefi, yeni tatlar geliştirmek ve bunları bizzat müşterilerinin yorumuna sunmaktı. Hızlı servis pizza sektöründe alışılmadık yeni ürünlerimiz müşterilerden de olumlu dönüşler aldı. Kapalı pide kültürü ile İtalyan kapalı pizzası calzone’yi harmanlayan ‘Lazza’ ve Amerikan sandviçlerini Türk damak tadı ile birleştirdiğimiz ‘Hogi’mizi geliştirdiğimiz ilk dönemin ardından şube sayımızı büyütmeye odaklandık. Bu alanda tüketicilere daha az seçenek sunan İstanbul Anadolu yakasında büyümek öncelikli hedefimizdi. İlk 2 yıl sadece Anadolu Yakası’nda şube açtık. Ardından Sakarya ve Kocaeli’nde şubeler açtıktan sonra İstanbul’un Avrupa yakasına geçtik. Bugün marka kimliği oturmuş, sunduğu kapalı pizza ve sandviçleri tüketicilerin beğenisini fazlasıyla kazanmış, hatta bu ürünleri sektörde yıllardır faaliyette olan zincirler tarafından da esinlenilen bir restoran zinciri olarak büyüyoruz.

Will you tell us of the founding and development of your company?

With our brands such as A101 and English Home we have more than 7500 sales points and offer employment to tens of thousands of people; at the same time we are also leaders in the Memorial Health Group in addition to Aydın Örme. Then about 5 years ago our Holding took the decision to enter the fast food restaurant sector.

We opened PizzaLazza in 2014.Our prime objective was to develop new tastes and to obtain the reaction of the customers to them. These tastes which were out of the ordinary in the Quick Service Pizza sector, were extremely well received by them. We had taken the closed pride culture and the Italian Pizza calzone and we produced Lazza and we used the American sandwich but joined it to tastes of the Turkish palate and in this manner developed our ‘Hogi’. After that first period our goal was to increase the number of our branches. In this sector there were fewer choices for the customer on the Anatolian side of Istanbul consequently that was the place we first decided to enlarge on and for two years we opened only on the Anatolian side. After that we opened branches in Sakarya and Kocaeli and then we came to the European side of Istanbul.

Today our brand name is well established, the closed pizza and our sandwiches are greatly enjoyed by all our customers and in fact we are enlarging and even being an inspiration to other long term held brands in the sector.

When did your company first begin to offer franchıses?

In actual fact our more than 7500 sales points of A101 and the English Home brands are all in our own shops. However in the fast food sector the franchise system is very important.

Only after we had set up all the necessary ground work systems and had become sure that our franchise candidates could easily adapt to them did we begin to give franchises.That was in 2018.

Bunu da sahibi olduğu şubelerin performansını yakından takip ederek, işine dört elle sarılarak, her gün şube performansını, çalışanlarının verimini, müşteri memnuniyetini gözlemleyen profesyonellikte kişilerle çalışmayı tercih ederek başarabilir.

Aslında franchise sahibi, her ne kadar Türkiye’nin en büyük perakende gruplarından birinin yeni bir markasının bir şubesini alıp ailemize katılıyor olsa da, bir girişimci olarak kendi işinin patronu ve tek sorumlusudur. Paket servis pizza sektörü aslen dinamizmini kaybetmişti. Yıllardır birkaç yabancı firma arasında sıkışmıştı. Biz yerli bir marka olarak önemli bir çıkış yaptık, hem yeni ürünler geliştirdik, hem de paket servis ağırlıklı bir iş kolunda olmamıza rağmen şubelerimizi samimi, sıcak, içinde vakit geçirmesi güzel şekilde tasarladık. Arkamızda da Türkiye’nin en büyük holdinglerinden biri olması, bu markanın geleceğine inanan daha çok girişimciyi bize çekmeye başladı.

Firmanızın bünyesinde franchise sistemiyle açılacak bir mağazanın ortalama bir maliyeti nedir?

Mutfak ekipmanları döviz kurlarından etkileniyor, bu doğrultuda anahtar teslim 100-120 metrekarelik bir şubemizin maliyeti yaklaşık 500 bin TL seviyelerinde.

Sizden franchise alanlara ne gibi destekler sağlıyorsunuz? Öncelikle holding olarak önemli bir satın alma gücümüz var, biz franchiseelerimizi şirketimizin, işimizin ortakları gibi görüyor ve onlara pizza malzemelerini sektörde alışılagelenden daha uygun fiyatlarla sunuyoruz. Lojistik, dağıtım operasyonumuzu da şubelerin ihtiyaçlarına göre organize ediyoruz.

Bunların üstüne franchise alana bu işi yönetebilmeleri için A’dan Z’ye tam bir eğitim sunuyor, işlerine hakim olabilmeleri için gıda kalite güvence, ürün hazırlama, bilgi sistemleri kullanımı, raporlama gibi konularda düzenli ve sürekli eğitimler sağlıyoruz. We have 33 branches and 392 personnel with which we offer to our customers the very best service.

Which are the standards you search for in the peopl to whom you give franchises?

The owner of the franchise must strive to ensure that every order and its service is of the highest quality and that customer satisfaction is ensured. This means that the owner of the franchise must be on the premises him/her self to view the performance, must have the business firmly in hand, must review the branch and the staff performance and be sure of customer satisfaction. It is usually preferable to be working with professional people.

In actual fact, the holder of the franchise when opening a new restaurant of our brand is entering the family of the biggest Turkish retail group, but it must never be forgotten that the entrepreneur is the boss of that business and consequently the responsible. We wish to work with people who are aware weekly how they can improve their results and focus on how they can use the logistic system we have given them to the best advantage.

Which do you believe are the reasons that investors choose to enter your company?

Actually the packet service pizza sector has lost its momentum. It has been closely held by a group of foreign brands. We, as a domestic brand have effected an important step, we have developed our own product and although we are in a sector of mainly quick service we have designed our branches so that they have a friendly welcoming atmosphere and are in fact places where people enjoy being. Additionally of course the fact that this is part of one of Turkey’s biggest Holding groups is another drawing factor to them.

What is the average price to open premises by the franchise system with your company?

The kitchen equipment price is of course affected by the currency fluctuations viewing this a branch of approximately 100-200 Sq. m. should be in the region of 500 thousand TL for ‘turn key’ delivery.

What kind of support do you give to your franchisees?

Primarily our being a holding brings with it a strong buying power. We see our franchisees as our family and we offer them ingredients for their pizzas at a much more viable price than is usual in the sector. We also organize logistics and deliveries according to the requirements of the branches.

Additionally to those who take a franchise we give a totally complete A to Z training so that they can manage their work, be sure of food quality, how to produce it, how to use our internet systems and how to report everything. The training is an on going factor. We analyze by district how the business can be improved there and we give a strong marketing support both from central and by district. Periodically we go over the branch performance with the franchisee and work out together how better results can be obtained.

How do you check up on your franchisees?

We constantly follow up carefully and try them out. The quality of the food, from the time of the order being sent to central to its being forwarded by courier is under constant inspection by our controllers, we have district managers who oversee the work of the TEMMUZ JULY 2018

branches and check every aspect of the branch actions. On many subjects we have personnel who while based at central are in constant contact with branches and checking how the franchise branches can be made even better. We also have people at central who constantly effect research on the branches to measure customer satisfaction.

Why should entrepreneurs take out a franchise in this sector?

When the new generation enters into employment their food and drink habits change, this is why the method of ordering food after work is increasing. Adults do not eat pizza only to fill themselves they really enjoy it and so they order and so they will continue to do. Pizza is something that both young children and young people meeting up together love, this food made with high quality cheese, vegetables and pieces of meat is filling but much more healthy than other fast food products as it does not include fried products a reason that this is and will continue to be the product of choice. These are the important facts that show that the packet service pizza sector will continue to enlarge in Turkey.

Tüm süreci titizlikte takip ediyoruz, denetliyoruz. Gıda kalite güvence denetçilerimiz sipariş alımından kuryenin paketi servise çıkarmasına kadar tüm süreci denetliyor. Operasyon bölge müdürlerimiz, şubenin tüm işleyişini, şube alanının yönetiminden sipariş yönetimine, satışlara kadar denetliyor. Pek çok faaliyet alanında merkez personelimiz hem merkeze bağlı, hem de franchise şubelerimizi sürekli mükemmelleştirme amaçlı denetimler yapıyor. Ayrıca merkezden müşteri memnuniyeti araştırmalarıyla da şubeleri denetliyoruz.

Girişimciler neden bu alanda franchise almalıdırlar?

Genç neslin iş hayatına girmesi ile yeme içme kültürü de farklılaşıyor. İş dönüşü yemek siparişi vermek yaygınlaşıyor. Yetişkinler pizzayı sadece doymak için değil, keyifle yemek için sipariş etmeye devam ediyor ve edecek. Ayrıca pizza hem çocukların çok sevdiği, hem gençlerin bir araya geldiklerinde yemek istedikleri, kaliteli peynir, sebzeler ve parça etlerle doyurucu ama kızartma malzemeler içermediğinden de fast-food denilen ürünlere göre daha çok tercih edilmeye devam edecek bir ürün grubu. Tüm bunlar Türkiye’de paket servis pizza sektöründe büyümenin devam edeceğinin en önemli göstergeleri.

Sektörün Türkiye’de son dönemde geldiği noktayı nasıl değerlendiriyorsunuz?

Rekabet farklı yemek çeşitleri ile artarken paket servis sektörü büyüyor. Ancak Türkiye’de gıda malzemelerinde maliyet, kalite, lojistik konusunda zorluklar yaşanıyor. Girişimciler doğru yerde, doğru restoran konsepti seçtiklerinden emin olmalı ve sabırla doğru hizmeti sunmaya devam etmeli. Sektöre çok fazla firma ve bireysel yatırımcı giriyor, ancak kalıcı olmak zor. Bizim en önemli tavsiyemiz, yatırımcıların güvenilir ve geleceğinden kuşku duyulmayan markalarla çalışmaları yönünde.

Sizden franchise alanların başarılı olması için nelere dikkat etmeleri gerekir?

En önemlisi şubeyi sahiplenip satış, kasa, mal kabulü, mutfak yönetimine hakim olmak...

Restorancılık, hazır bir malı alıp satmaktan farklıdır. Operasyonu takip edebilmek, malzemelerin lojistiğini kusursuz yönetebilmek, geç saatlere kadar hizmet verildiği için şube personelinin verimini doğru yönlendirmek başarıyı getirir. How do you evaluate the position that this sector in Turkey has now come to?

As the competition in the variety of foods increases so does packet service. However in Turkey the price, the quality and the logistics of ingredients are problems. Entrepreneurs must make sure that they have chosen the correct location and the correct restaurant concept and they must patiently continue to offer the correct service. There are many people who enter the sector but becoming permanent is difficult. Our most important advice to entrepreneurs is choose a trustworthy brand on which there are no fears for the future.

What should those who take franchises from you do in order to become successful?

Most important is the responsible person must be there and must be able to oversee sales, cash desk, receiving of products and the kitchen. A restaurant is different to buying ready goods and selling them. Success comes with closely following operations, being capable of managing logistics without any mistake and as service is given until the late hours the branch personnel must be managed so as to ensure use of their total potential this brings success. However never forget that customer satisfaction is the most important criteria of all in the restaurant sector.

Whıch are your goals for the near future?

We at Pizza Lazza intend to become in a short time the 2nd widest and strongest brand in the sector and in the middle and long term to obtain the success similar to that we have obtained with A101, to be the biggest Turkish restaurant chain. We can clearly see that the sector has need of a very strong domestic brand.

The founder general manager of the brand Murat Çimen answerıng our questions said “We opened our first branch in 2015 its function was in a sense a laboratory for food development,we wished to find out what what kind of different tasting hamburgers we could produce and then offer them to customers to learn their reaction to them”.

Sizi kısaca tanıyabilir miyiz?

1994’te Turgut Aydın Holding’in tekstil sektöründeki şirketi Aydın Örme’de kariyerime başladım. Üretim müdürlüğü, fabrika müdürlüğü, satış-pazarlama müdürlüğü gibi farklı görevlerin ardından 8 yıldır da şirketin genel müdürlüğünü sürdürüyorum. Grubun hızlı servis restorancılık alanında ki yatırımı olan Saloon Burger’de kurucu genel müdür olarak görev aldım ve halen de bu görevi yürütmekteyim.

Will you please briefly introduce yourself?

I began my career in 1994 at Aydın Örme this company works in the textile sector and is within the Holding Company of Turgut Aydın I worked in various positions, production manager, factory manager and sales and marketing manager after which I have been general manager of the company for 8 years.The group invested in the quick food sector and I took and remain in the position of founder general manager of the Saloon Burger brand.

Türkiye’nin en saygın holdinglerinden olan, bünyesinde Memorial Sağlık Grubu, A101, English Home, Aydın Örme gibi sektörünün öncüsü markaları taşıyan Turgut Aydın Holding olarak hızlı servis restorancılık alanına girmeye yaklaşık 5 yıl önce karar verdik.

2015 yılı ilkbaharında adeta bir Ürün Geliştirme Laboratuarı gibi konumladığımız ilk şubemizi açtık ve Türkiye’de ne gibi farklı hamburgerler yapabiliriz diyerek yeni lezzetler geliştirmeye, bunları bizzat müşterilerinin yorumuna sunmaya odaklandık. Sadece lezzet değil, restoran tasarımında da önemli bir fark yakaladık, o güne kadar gurme ve şık burgerciler bir tarafta, daha uygun fiyatlı fast-food burgerciler öte tarafta idi. Biz içerde oturması oldukça keyifli, eğlenceli, Türkiye’de çok sevilen kovboy ve Western kültürünü yansıtan rahat, neşeli bir restoran ortamında iyi burgerleri pahalıya değil erişilebilir fiyatlara sunduk. Böylece her yaş grubunun keyif aldığı bir deneyim oluşturduk. İstediğimiz konsepti yakalayınca da yeni şubeler açarak yaygınlaşma yoluna gittik, İstanbul Anadolu yakasında başlayıp ardından Avrupa yakasına geçtik.

Will you please tell us about the formation and development of the company?

The Turgut Aydın Holding Group is one of the most respected holdings in Turkey. It has under its auspices the Memorial Health Group, A101, English Home and Aydın Örme all leaders in their sectors. About 5 years ago we decided to enter the quick service food chain sector. In Spring of 2015 we opened our first branch it was in a sense a food laboratory, we wished to find out how many different types of hamburger with different flavors we could produce and then offer them to the customer and receive their feed back. It has not only been with the new tastes that we differ from others but also with the design of the restaurants we have also brought something totally different to other fast food chains. Up until then the sector had been divided, on the one hand gourmet and chic burgers and on the other hand cheaper fast food burgers. We made our restaurants into comfortable cheerful premises where people love to be and made the decorations there Western cowboy cultured, something that is much loved in Turkey. We offer good burgers and of a reachable price.In this manner we made our premises into an enjoyable experience where people of every age group can enjoy themselves. Once we

achieved the concept we had aimed for then we began to open many new branches. We first began on the Anatolian side of Istanbul and then we also came to the European side.

When did your company first begin to offer franchises?

The first time that out holding offers franchises is now with the restaurant sector. With our English Home and our A101 companies there are no franchises. We did not even feel we needed, because of our own strength, to offer in the restaurant sector in order to enlarge so first we put in place our own ground work and technological systems. This year we made the decision to offer franchise branches.

Biz, holding olarak franchise vermeye ilk defa restorancılık sektörüyle başlıyoruz. English Home ve A101 gibi şirketlerimizde franchise yok. Kendi güçlü kaynaklarımız sayesinde restoran sektöründe büyüyebilmek için bayilik vermek zorunda hissetmedik, önce bilgi sistemlerimizi, süreçlerimizi ve alt yapımızı oturttuk. Bu yıl ilk franchise şubelerimizi verme kararı aldık.

Kaç şubeniz ve çalışanınız var?

11 şubemizde 192 çalışanımız bulunmaktadır.

Franchise vereceğiniz kişilerde aradığınız standartlar nedir?

Bir hızlı servis restoranı yönetmek farklı beceriler gerektiriyor. Yoğun saatlerde müşterilere hızlı şekilde siparişlerini sunabilmek için saat düzeninde, aksamadan işleyen bir iç düzen kurulmalı. Burada mutfağın yönetimi ve personelin özen ve dikkatini sağlamak hem müşteri memnuniyeti hem de malzemeden fire vermemek için önemli. Şubesinin performansını iyi takip edebilecek, deneyimli restoran müdürleri ile çalışacak veya kendisi şubesini başarıyla yönetebilecek franchisee adayları arıyoruz. İşine sıkı sıkıya sarılan karakterde, buna ek olarak, finansal olarak da yeterliliği olan, bütçe ve yatırım planını doğru ele alan girişimcileri tercih ediyoruz. Müşteri memnuniyeti ve ürün standartlarını önceliği yapmaktan şaşmayacak adaylar önceliğimiz olacak.

Sizce girişimcilerin firmanızı tercih etme nedenleri nelerdir?

Dünya genelinde yaygın az sayıda yabancı burger zinciri Türkiye’de de oldukça baskın şekilde pazarı kontrol ediyordu. Yerli burger zincirleri ise gurme/lüks burger segmentinde oynamaya çalıştı, fakat başarılı olamadılar ve şube sayılarını azalttılar. Biz, burada boşluğu doğru tespit ettik; plastik, sentetik, “çabuk ye ve git” mimarisine sahip bir burgerci olmadık, aksine eğlenceli, keyifli, konsept ve dekorasyon olarak gurme restoran standartlarında ama fiyat olarak herkesin erişebileceği yerde olduk.

Lezzetlerimiz de fark yarattı, Aziz Dostum, Sheriff Burger gibi başlıca ürünlerimizin yanında özel mantar soslu soğan halkalı veya patlıcanlı pastırmalı gibi çok farklı ürünlerimiz de müşterinin beğenisini kazandı, biz de onların sadakatini kazandık. Müşteri sayımızdaki artış ve arkamızda Türkiye’nin en büyük holdinglerinden biri olması, bu markanın geleceğine inanan daha çok girişimciyi bize çekiyor.

Firmanızın bünyesinde franchise sistemiyle açılacak bir mağazanın ortalama bir maliyeti nedir?

Restoranın yeri, büyüklüğüne göre farklı bütçeler oluşmakta, AVM’lerdeki restoranlarımız metrekareye göre 1,25 ila 1,75 milyon TL; cadde restoranlarında da yine bina yapısı ve alanına göre 1,75 ila 3 milyon TL arasında maliyetler söz konusu.

How many branches and how many workers do you have?

We have 11 branches and 192 workers.

What are the standards you search for in candidate franchisees?

In order to manage a quick service restaurant one needs to have a different set of capacities.

So as to be able to offer the type of service necessary for the busiest hours it is essential to set up a faultlessly timed internal system. It is here that the management of the kitchen system as well as the staff must be effected with extreme attention and care in order to achieve customer satisfaction while at the same time being sure that ingredients are not being wasted.

We are looking for a persons who will manage the performance of the branch very well and who will employ an experienced restaurant manager or those franchisees who are capable of successfully effecting the management themselves. Naturally we wish them to have a character which grasps and holds on to hard work, in addition they need to have the necessary investment funds and to be entrepreneurs who will effect the budget and the investment plan in the correct manner. We favor candidates who will attach primary importance to customer satisfaction and a quality product.

Which do you believe are the reasons that entrepreneurs choose your company?

Throughout the world a few foreign burger brands were holding the total sector in their hands, they also had a similar control in Turkey. Domestic burger chains tried to play in the sector of luxury/gourmet burgers however they were unsuccessful and they had to decrease the number of their branches.It is here that we judged correctly the position where the space was; We did not become a plastic, synthetic, eat quickly and go kind of burger maker, on the contrary we made an amusing, enjoyable concept and decoration to the standard of gourmet restaurant but with prices which could be attained by all.

We made improvements to flavors and with our main dishes such as Dear Friend and Sheriff Burger at the side we put special mushroom sauce, onion rings or egg plant with pastırma all which gained the approval of the customers and made them regular visitors.The fact that the number of our customers is increasing and we have at our backs the strength of one of Turkeys biggest Holding companies are also strong factors which strengthens the belief in the future for entrepreneurs.

What is the average cost of opening premises under your company franchise system?

Location of the restaurant and its size are the factors involved here. A restaurant in a shopping mall depending on its sq.m. is 1.25 to 1,75 million TL while a street restaurant again according to the building and sq.m.is between 1.75 and 3 million TL.

What kind of support do you give to your franchisees?

As we are a holding we have very strong buying power. We see our franchisees as our partners and we are able to give them ingredients at more viable prices than those on the market. We organize logistics and deliveries according to the requirements of the branches.

In order that the franchisees are able to manage their business successfully we give them a complete A to Z training, security of food quality, preparation of product, on our know how systems, how to effect reports, the training is both orderly and ongoing. We help them to develop their business by effecting analytics in their region in fact we help them both from central and by district. Periodically we study the reports on the performance of the branch together with the franchisee and work out together how a stronger performance can be effected.

How do you check up on your franchisees?

We effect checks on every stage of the operation, in the kitchen food quality auditors, district operational managers and all the stages of actions in the branches from order receiving to order management and to the delivery all is checked. In addition the central has personnel who make research into customer satisfaction which is an additional check up on branches. mı, raporlama gibi konularda düzenli ve sürekli eğitimler sağlıyoruz. Satışlarını geliştirmesi için bölgesiyle ilgili analizlerle yardımcı oluyor, hem merkezi hem de bölgesel olarak iyi bir pazarlama desteği veriyoruz. Şubenin performansını belli aralıklarla birlikte gözden geçiriyor ve nasıl daha da güçlü sonuçlar elde edebiliriz, çalışıyoruz.

Franchiseelerinizi nasıl denetliyorsunuz?

Tüm süreçlerimizle ilgili denetimlerimiz var, gıda kalite güvence denetçilerimiz mutfak süreçlerini, operasyon bölge müdürlerimiz, şubenin tüm işleyişini, şube alanının yönetiminden sipariş yönetimine, satışlara kadar denetliyor. Ayrıca merkezden müşteri memnuniyeti araştırmalarıyla da şubeleri denetliyoruz.

Girişimciler neden bu alanda franchisee almalıdırlar?

Türkiye’nin nüfus yapısı, değişen alışkanlıklar, beklentiler gösteriyor ki hızlı servis restorancılık Türkiye’de büyümeye devam edecek. Hamburger, dünyada ve ülkemizde en popüler, en keyif veren yiyeceklerden biridir. Üstelik kalite standardı belli, hayvanın en lezzetli bölgesinden yapılan et ürünleri sunuluyor.

Bu alanda iki yabancı ve yüksek franchise bedelli burger markasına artık yerli ve farklı konsepte sahip bir zincir olarak iddialı bir rakip oluyoruz. Tüketiciler de yeni burger markalarını merak ediyor, herkes aynı yerden burger yemektense yeni farklı burgercileri denemek istiyor.

Yeni nesil hamburger zinciri olarak biz önümüzün açık olduğunu görüyoruz ve bu alanda alınacak franchisee’nin kazançlı olacağından eminiz.

Sektörün Türkiye’de son dönemde geldiği noktayı nasıl değerlendiriyorsunuz?

Gelinen seviyeyi oldukça başarılı buluyorum. Halkımızın dışarıda yeme içme alışkanlığının çok daha fazla artacağını düşünüyorum. Bu değişim sektörü daha ileri seviyeye taşıyacaktır.

Sizden franchisee alanların başarılı olması için nelere dikkat etmeleri gerekir?

Burger restoranlarında hız ve şubenin tüm operasyonunu takip edebilmek, malzemelerin lojistiğini ve şube personelinin verimini doğru yönlendirmek başarıyı getirir. Hızlı hareket edilmesine rağmen yanlış ürün, fire, atık miktarını azaltabilmek karlılığı arttırır. Şubeyi sahiplenip satış, kasa, mal kabulü, mutfak yönetimine hakim olmak önemli. Hızlı servis işinde sırada menüsünü bekleyen müşterilere doğru menüyü sunabilmek, personeli “müşteri memnuniyeti esastır” yaklaşımıyla yönetmek de kalıcı müşteriler elde etmeyi sağlar. Önümüzdeki dönem hedefleriniz nelerdir?

Büyük bir holdingin parçasıyız ve ‘Burger’ alanında yenilikçiliğin, farklılığın ne kadar ilgi çektiğini gördük, farklı ürünlerimiz, özel restoran konseptimiz, keyifli ortamımız ile tüm yaş gruplarına hitap eden restoranlarımızı Türkiye’de çok daha fazla noktaya yaymak istiyoruz.

Kaliteli ve farklı ürünleri bize has reçetelerle daha çok kişiye ulaştırmak için de franchisee sistemiyle büyümeye inanıyoruz.

Why should entrepreneurs take out a franchıse in this sector?

The formation of the Turkish population and habits which are changing, show that the restaurant sector in Turkey will continue to increase. Hamburger in the world and in our country is one of the most popular and enjoyed foods. The quality is also obvious as this food is made from the tastiest parts of the animal. Viewing the facts we can see that with our domestic burger brand and our different concept we now are strong chain competition to the foreign brands of burger and their high franchise fees. Customers are interested in this new brand and rather than always eating burger at the same place they much prefer to try a different one. We see that we have an open road in front of us as a new generation hamburger chain and we are sure that those who take out franchises will certainly profit.

How do you evaluate the position that the sector has come to in Turkey recently?

I find its position quite successful. I also believe that the number of people who wish to eat outside the home will increase and consequently the sector will be carried forward.

What do those who take a franchise from your company have to do ın order to be successful?

They need to carefully watch the speed of service, to be capable of overseeing the total branch operation, they need to correctly calculate the logistics of ingredients and they need to use the branch personnel in the most efficient manner these are the requisites for success. Even while effecting swift action not making the wrong order and being able to contain waste to a minimum means increased profit. It is essential that the sales, the cash desk, receipt of goods, the management of the kitchen are all correctly managed it is also important that the customers waiting for their order are given exactly what was chosen. The truth remains “customer satisfaction” must be the motivation in order to have faithful customers.

Which are your goals for the upcoming period?

We are a part of a very big holding and we can already see just how much our innovations in the burger sector are attracting attention. With our different products, our special restaurant concept, the enjoyable atmosphere which are to be found our brand is loved by people of every age and we wish to enlarge to many more positions throughout Turkey. With our high quality and different tastes made to our private recipes we wish to reach more customers and so we believe that the franchise system is the correct system to effect this growth with.

When the decision to offer a Franchise is made,the Franchisor is faced with a group

of design types.At this point the all important decision is should your concept be one which promotes itself or should it be one that while resembling others is still being appreciated, in other words one derived from those already on the market.When we look at today’s manner of working we see that not much differs from one to the other except the sign above the door,they are all selling more or less the same thing.

When we have arrived at this point our speed is important, should we work with the many Franchisees who make important decisions and intentions in a short time?

Should we enlarge aggressively with more expense and more risk? Or should we prefer a more conservative manner of enlarging -slowly with less risk?

It is not right to state that one or the other of these two possibilities is more or less correct or incorrect. In the decision of strategy often the financial situation and operational strength of the Franchisor together with the Franchisee approaches are decisive. However when the plans for enlargement and development are effected be they for Franchising or for your own branch openings the fact that swift enlargement brings with it a larger financial weight should be seriously evaluated.

Bir işletmenin büyüme ve gelişme planlamasında gerek işletmeleri kendiniz açın gerekse franchise verin hızlı büyümenin büyük mali yükleri beraberinde getireceğini bilmelisiniz.

The success of the Franchising system, just as in other work systems,means the kneading together of lots of hard work,knowledge,capacity, education,systems and control. The Franchisor needs to be well aware of which his own goals are and keeping these particular goals clearly in mind be especially careful while making strategic plans. Additionally whichever model is chosen the road plan must be made so that that goal can be reached in five years time.

The Franchisors must make a place in their budgets for the marketing of the Franchisees, must plan what and when timewise actions are to be taken and must manage that period well.If there are not enough means for the first five years of development then a plan for the timing of the period must be effected. Outside finance must be found and once again the strategic plans for enlargement must be evaluated.

The road to success for Franchising is successful Franchisees.If your first Franchisees are successful that means that you are on the right road.However if your first Franchisees are not successful it can be almost impossible to rectify the situation.

If we are to analize the methods, we see that the success to Franchising is not the sale of the Franchise. It is possible that Franchises are sold rapidly but then we need to ask ourselves the most important question of all if the Franchisees will abide by the main principles and will support the system in a truly satisfactory manner.

Franchising sisteminde başarı, diğer işlerde olduğu gibi çok çalışma, bilgi, beceri, eğitim, sistem ve kontrol yoğurarak oluşturulur. Franchisorlar kendilerine özgü amaçları belirlemeleri ve bu özel amaçları doğrultusundaki stratejilerini oluştururken çok dikkatli olmaları gerekir. Ve hangi model seçilirse seçilsin, amaçları belirlemede beş yıl içinde gelinmesi gereken seviyenin veya yolun planlanması da olmalıdır.

Franchisorler, franchisee pazarlama faaliyetleri için de bir bütçe oluşturmalı, kimleri ne zaman iş planına edeceğini belirlemeli ve bu süreci doğru yönetmelidir. Bu gelişme sürecindeki ilk beş yılını gerçekleştirmek için yeterli kaynaklara sahip değilse; amaca ulaşmak için belirlediği zaman çerçevesini geliştirmeli. Dış sermaye arayışına girmeli.

Büyümeyi hızlandırmak için belirlediği yapıyı tekrar yorumlamalıdır.

Franchising de başarının anahtarı başarılı Franchisee’lerdir. Eğer ilk francisee’leriniz başarılı olursa, doğru yoldasınız demektir. Ancak ilk franchisee’ler başarısız olursa, bunu tekrar düzeltmek hemen hemen imkânsızdır.

Yapılan uygulamaları analiz edersek, Franchising de başarı franchise satışı değildir.

1983 Kadıköy doğumluyum. Teknik lise bölümünden başlayarak bilgisayar yazılımları üzerine eğitim aldım. En son 2014 yılında Sakarya Üniversitesi Bilişim ve Bilgisayar mühendisliğinde yüksek lisansımı tamamladım. 2005 yılında, 2 ortak lise çağında kurduğumuz hayali gerçekleştirerek Atılım Yazılım’ın temellerini attık. Kurumsallaşma çalışmaları çerçevesinde 2013 yılında yeni bir organizasyon yapısı oluşturduk.

Bu yapının Pazarlama & Satış ayağını yürütmekteyim. Bayi kanalının geliştirilmesi ve yönetimi, pazarlama ve satış faaliyetleri ile aktif iş hayatıma devam ediyorum. Şirketinizin kuruluş ve gelişim süreci hakkında bilgi verir misiniz?

Will you please introduce yourself?

I was born in 1983 in Kadıköy. I began my education in computer software in the Technical Lise division. Last of all I completed my higher diploma in 2014 in Sakarya University Know How and Computer Engineering. In 2005, together with two partners we took the steps to setup what had been our dream ever since middle school.

Breakthrough Software. Within our structural work in 2013 we set up another organization. I am Manager of Merchandising and Sales in that division. I continue my active business life occupied with the strengthening of the branch structure and developing marketing and sales.

Will you tell us about the founding and development of your company?

Atılım Yazılım was founded in 2005 with the vision of ”With the software which we effect being leader in the sector in Turkey”. From our foundation day with CRM

applications we have effected all necessary software for restaurants, cafes and guest welcoming facilities and for retail for sectors such as beauty centers. With the knowledge and experience we have gained during the time in the sector we are able to meet all the requirements of our valuable customers.

With the software we have written and the services we have supplied we have added value to the economy of our country and we aim to become a company which is held up as exemplary in the sector. Viewing the potential for enlargement in this country and intending to add to it we have over the last few years focused much attention on software for Industry, so we have effected R-D and are continuing this in the Knowledge Valley.

Müşteri portföyümüz restoran, kafe, paket servis ve konuk ağırlama üzerine faaliyet gösteren firmalar başta olmak üzere perakende satış üzerine faaliyet gösteren tüm firmaları kapsamaktadır. Bu sektördeki bazı referanslarımız Pizza Taxi, XL Burger, Çikolata Dükkanı –Asuman, Cadde Katık, Haszade Kahvecisi, Baskqet Steakhouse, Kebap Diyarı, Şehr-i Adana Kebap, Atmosfer Fırın, Çikolata Diyarı gibi firmalardır. Türkiye genelinde hizmet verdiğimiz diğer sektörlerle birlikte 3 bin 500 civarında müşterimiz mevcuttur.

Firmanızın bayileri mevcut mu?

Kocaeli-Gebze merkezli olarak faaliyet göstermekteyiz. Ayrıca İzmir, Antalya, Ankara, Bursa gibi büyükşehirler başta olmak üzere 20’ye yakın şehirde bayilerimiz mevcuttur.

Will you tell us somethıng of your customer portfolio?

Restaurants, cafes, packet service and guest welcoming facilities are at the fore but we also work for all forms of retail, some of the references for those are P Taxi, XL Burger, Çikolata Dükkanı-Asuman, Cadde Katık, Haszade Kahvecisi, Baskqet Steakhouse, Kebap Diyarı,Şehri-i Adana Kebap, Atmosfer Fırın, and Çikolata Diyarı.

The service we have given to those mentioned in addition to other sectors means we have a total of approximately 3500 customers.

Are there branches of your firm?

Our central is in Kocaeli-Gebze. We have branches in Izmir, Antalya, Ankara and Bursa in addition to other large cities, we have near to 20 branches in total.

Why do entrepreneurs prefer your company?

As we have worked for long years in the sector we are the owners of excellent knowledge and experience. For the new entrepreneurs in the sector we can join all the new technologies together for them.

Which support do you give to franchises or brands?

To the companies which are managing branches we offer two different systems.

They can have online or off line. With the suitable foundations they can easily tie up different locations with their central, so that we can easily form a practical and speedy management system. For the branches which are working without direct attachment to the internet we can ensure they can constantly be in contact. For the branches with internet tie up we can immediately introduce a two way synchronization tie up.

Managers then thanks to the online and mobile reports can easily control turn over figures, costs, performance and incoming and out going expenses of branches in different locations.

software has many newly introduced applications, but at the head of these comes the fact that groundwork for new generation technology is in place. Because of that we can both control the branches and also effect contact via various platforms. The orders coming from Yemek Sepet and customer information can be automatically transferred to Aybit-POS’s. An additional innovation is the integration of owners own websites with mobile applications. Yemek Sepet integrated with its own web site gives the possibility of seeing all the orders on one single view.

Thanks to the tablet system, waiters can in seconds pass on orders to the kitchen where they appear on the kitchen module screen in this manner the tie up with the kitchen personnel is instantaneous.

With the courier following system packet service performances are evaluated as is the time taken, which packet is with which courier and at the end of the day a courier report all of which makes follow up easier for managers.

Cash desks inside the restaurant and payments made from packet service are integrated according to requirements of the Finance and Income Ministry and makes the payment system swift and practical.

How do you evaluate the position that the sector has now arrived at?

The food sector has always been one which enlarges.For those in this constantly enlarging sector it is often difficult for firms which remain in the same place to stay the course.As the sector enlarges they also are obliged to enlarge and develop the company.They can now only successfully effect this by means of the application of technology.

Sektörünüzün Türkiye’de son dönemde geldiği noktayı nasıl değerlendiriyorsunuz?

Gıda sektörü her zaman büyüyen bir sektör. Bu şekilde büyüyen bir sektörde hizmet veren firmaların da yerinde sayarak ayakta kalması çok daha zor. Sektör büyüdükçe kendilerini de büyütmek, geliştirmek zorundalar. Bunu da ancak teknoloji alt yapısı kullanarak başarabilirler.

Kurulum aşamamızda vizyon edindiğimiz “Ürettiğimiz sektörel yazılımlar ile Türkiye’de lider olmak” düşüncesiyle ürettiğimiz yazılımlarla müşteri memnuniyeti ve isteklerinin yanı sıra ülkemize ve toplumumuza olan duyarlılığımızla Türkiye’nin öncü firması olma yolunda ilerlemekteyiz. Önümüzdeki dönemde de yurtiçi başarılarımızın yanında vizyonumuzu bir adım daha öne götürerek yurtdışı satışlarımızı ve distribütörlüklerimizi arttırarak yaygın bir satış ve destek ağı oluşturmak hedeflerimiz arasındadır.

Are there any social projects which your company has effected?

We, in order to be useful to our country have the duty to bring out new technologies in order to use our resources in the best possible manner. In order that the next generations can live in better surroundings we, for each of our software customers plant a tree via the Tema foundation so that we can help the project of replanting and replacing trees in Turkey.

What are the goals that your company has for the near future?

We work under the vision we had when we founded the company “With the software that we write we wish to be leader of our sector”. It is of great importance to us that our customers be happy with the software we write for them and we wish them to know us as leader company. In the upcoming period we wish to continue the success we have obtained domestically and carry our vision and success even further to foreign sales, doing this by increasing the number of our distributors in order to form a wider network.

Lisans eğitimimi 1998 yılında İTÜ İşletme Mühendisliği bölümünde tamamladıktan sonra kariyerime bankacılıkla başladım. Edindiğim bankacılık deneyiminden sonra üretim işletmelerinde muhtelif pozisyonlarda ve pazarlama / iş geliştirme alanlarında görevler üstlendim. 2010 yılından itibaren, başta girişimcilik konulu olmak üzere, küçük ve orta ölçekli işletmelerin kârlılık kapasitelerini arttırabilmelerine yönelik çok sayıda eğitim, seminer ve danışmanlık hizmetleri verdim. 2015 yılının ortalarında Nova Rekabet Stratejileri Araştırma & İş Geliştirme & Danışmanlık firmasının kuruluşunu gerçekleştirdim.

I obtained my diploma in 1998 from the İTU Management division and then began my career in banking. After gaining experience in the banking sector I was in various positions in marketing and business development. From 2010 onwards, mainly directed at entrepreneurs,I have given consultancy and many conferances and educational talks on the manners of increasing business capacity in small or medium businesses. In mid 2015 I formed the company of Nova Rekabet Stratejileri Araştırma and İş Geliştirme and Danışmanlık.My specialist capacity is teaching companies how to give a better performances than their competitors,making a company more competitive based on innovation and branding strategies.In May 2015 I also brought out a book on my specialist subjects”Beklenmedik &Rekabet Üstünlüğü”(The Rules of Being Competitive).

I am one of the accredited educators of Deloitte-the International consultancy firm-and am also a member of the Agean Management and Consultancy Society.I also continue to write on’kobitek.com portal’ and in the Sanayi Gazetesi.

Will you give us ınformation on the founding and development of your company?

From 2011 to 2015 I effected freelance consultancy. Our company was formed in Izmir in the summer months of 2015 followed by, towards the end of 2017, our Istanbul representatives.

Presently on the one hand while with the Nova Rekabet Stratejileri we are consulting on a wide range of subjects, on the other hand with Nova Creatics we continue to focus on cafe/restaurant

Firmamızın merkezi İzmir’de olup İstanbul’da da ofisimiz bulunmaktadır. 2019 yılı içerisinde Ankara’da da temsilcilik açarak faaliyetlerde bulunmaya başlamayı planlamaktayız. Toplamda 6 kişilik bir çekirdek ekiple hizmet vermekteyiz. Bununla birlikte, inovasyon çalıştaylarımızda ve saha araştırmalarımızda proje bazlı destek de almaktayız.

Nova Creatica is a company which structures for cafe/ restaurants and supermarkets.Which means that in its final state it develops business,ensures a company comes out ahead of its competitors gives branding aid and educates and and offers consultancy, these are the fields of its activities.

We take particular care to study individually each company which works with us in order that we can offer them the correct kind of aid that is needed. On the other hand we do not believe that work only on customers or only on personnel is enough we believe that it should also cover all elements of human resources, which is what we effect. The primary things we offer are: designing customer studies, work on business development, education in increasing professional authority, the formation within the company of innovative recommendation systems and work on the belongings of the personnel so as to build a result giving company culture.

Will you tell us of your customer portfolio?

Nova Creatics is concentrated on 2 sectoral categories. The one being chain cafe/restaurants the other being chain supermarkets.

At the present time the Nova team can only function in Izmir and in Istanbul, however we have plans to open an Ankara office very shortly.

In this manner we shall be able to work in the Izmir and Istanbul districts where there are so many cafe/restaurants chains and supermarket chains which are giving franchises. These are the companies which make up our customer portfolio.

Does your company have branches? If yes how many any how many personnel?

Our central is in Izmir and we have an office in Istanbul. We plan to open a representative branch in Ankara in 2019. We have our 6 person main team, however we also take on the help of additional staff project by project for field research and innovation studies.

Which are the reasons that companıes choose your company?

First of all I should clarify: Our company does not offer normal standard service, on the contrary we offer services which are specially effected and suitable for each and every company with which we work.

Our professional experience is of a very high standard on subjects such as low cost and profitable competitive strategies, our approach to innovative practices and the setting into action of a new company culture. Are there any socıal projects which your company has taken part in? If yes which are they?

Presently at Nova Creatics we have one social project which is giving conferances and seminars free of charge at Universities and at Trade and Industry Chambers.

Sistemin faydasına yürekten inanıyorum, ülkemizde organize perakende altında ezilmekte olan perakendecilerin kurtuluşunu burada görüyorum. Nitekim franchise zincirler her sektörde hızla yayılıyor. Binlerce zincir, on binlerce işletme var. Önceleri büyük şehirlerden doğan iş fikirleri artık yurdun her köşesinden çıkıyor.

Bundan sonra yarış franchise veren ve kendi şubelerini açan zincirler arasında yaşanacak, kahraman bakkal giderek zorlanacak.

Yıllardır franchise konulu konuşma ve yazılarımda hep franchise sisteminin “doğru uygulandığında” sağlayacağı faydaları anlatırım. Bir yandan sistemi överken, diğer yandan yarattığı mağdurlara ve yanlış uygulandığında nelerin ters gidebileceğine örnekler veririm. Amaç tabi ki sistemi karalamak değil, yatırımcıları bilgilendirmek, doğru uygulanmasını teşvik etmek.

Ama piyasanın içindeyiz, aynı hataların hep tekrarlandığını görüyoruz. Sistemsiz büyüyenler yolda kalıyor, araştırmadan alanlar hayal kırıklığına uğruyor. Demek ki söylediklerimiz yerine ulaşamıyor, demek ki daha açık anlatmamız gerekiyor. İnsanlar ne alır, ne öder, neden aldanır, ona bakalım. ➤ “Ürün” satın alan, ister bir liralık simit alsın, ister bir milyonluk ev alsın, önce ürünün de-

the year 1990 onwards to the present I have worked in many different sectors with franchisee takers, franchise givers,consultants, training, selling and turn overs. I sincerely believe in the system of franchising and I see the solution to the squashing of the small retailers by large organized retailers in the use of franchising. In actual fact the number of franchise chains is raidly increasing in every sector. There are thousands of chains and tens of thousands working them. The new business ideas which first emanated from the big cities are now being brought forward in every corner of the country. From now onwards the competition will be between the franchisors and those chains which open their own branches and the heroic corner grocers will be under even more pressure. For years in my conferances and my writings on the franchise system I have stressed the rightness of the system providing its “correct appliance”. I have given many, many examples while praising the system but examples also of the victims when the system has been wrongly applied and things went wrong. My aim of course was not to blacken the image of the system instead to make franchisees more knowledgeable and to encourage its correct use. However we are in the market and we can see how many times the same mistakes are being made. Those who enlarge without a system fall by the wayside,while those who invest without sufficient research become disillusioned. This goes to show that our teachings are not going to the right place,again which means that we need to state it all even more clearly.

Let’s look at what people buy, how much they pay and why they are deceived. ➤”PRODUCT”the one who buys it, be it a 1TL simit or be it a 1 million house,first sees the object and only the pays the price. ONE CAN’T BE DECEIVED ➤”OPPORTUNITY” the one who buys, be it a one TL lotto ticket or be it a one million franchise,first pays, sees the value later, CAN BE DECEIVED. The one who buys the lotto ticket knows the risk being taken so isn’t upset if there is no result ,however the franchisee is making his life investment so cannot run the risk of losing.

When the Franchisor is turning over already working premises he is selling a “PRODUCT”, however when he is effecting a contract for the opening of franchise premise he is selling an ”OPPORTUNITY”. The roots of products and opportunities are totally different. The one selling a product prices it then waits for the customer. The one selling an opportunity shows a sample, encourages but does not give a guarantee. It is easy to evaluate a product,to estimate its future value even those who are not in that business can understand,however evaluating an opportunity is difficult its value and what profit it can bring in only people in that sector can understand.

It is here exactly that the root of the problem lies. The franchise chains are rapidly enlarging,people who have been unable to carry on their own businesses because of the market crisis see the opportunity of profitability and wish to take a franchise from a chain.In certain sectors some really strong chains are seeing a demand, but when there are even more franchisees many new chains appear in the market place. When there are franchisees who do not know a particular business then the number of sellers of false promises and unworkable concepts increases.

We at F&M evaluate the franchisor sector not by the criteria of product or investment but according to the criteria of ”INTENTION” and “CAPACITY” ➤ The franchisor if CORRECTLY INTENTIONED and CAPABLE sets up a system so that the

Franchise veren çalışan işletmeyi devrederken “ürün” satar, yeni açılacak işletme için anlaşma yaparken “fırsat” satar. Ürün ve fırsat satışı temelde farklıdır. Ürün satan değerini biçer, müşterisini bekler. Fırsat satan örnek gösterir, umut verir, garanti vermez. Ürünü incelemek kolaydır, değeri, yani ne kazandırdığı bellidir, işi bilmeyen de anlar. Fırsatı incelemek zordur, değerini, yani ne kazandıracağını ancak işi bilenler anlar.

Sorun tam da burada yatıyor. Franchise zincirleri hızla yayılıyor, farklı sektörlerden kriz mağdurları, kazanç fırsatı gibi gördükleri zincirlerden franchise almak istiyor. Belli sektörlerde az sayıda güçlü zincir rağbet görüyor, alıcı çoğalınca çok sayıda yeni zincir çıkıyor. İşi bilmeyen yatırımcılar olunca boş vaatlerle uyduruk konsept satanlar çoğalıyor. Bitmeyen kooperatifler, çaycılıktan bankerliğe geçenler, F&M olarak biz franchise verenleri sektör, ürün, yatırım gibi kriterlerle değil, “niyet” ve “kabiliyet” kriterine göre değerlendiriyoruz. ➤ Franchise veren iyi niyetli ve becerikliyse markanın sağlıklı büyümesi için sistem kuruyor, işi yapabilecek olana franchise veriyor, destekliyor, para kazandırıyor, zinciri sağlıklı büyütüyor. ➤ Franchise veren iyi niyetli ama beceriksizse, işletmecilikte kazandığı deneyimle markayı yönetmeye çalışıyor ama yetmiyor, sistem kuramıyor, konsepti özgün ve karlı olamıyor, gözü yüksekte olmayana franchise veriyor, yayılıyor ama güçlenemiyor. ➤ Franchise veren kötü niyetliyse hızlı para kazanmaya bakıyor, sistem kurmakla uğraşmıyor, konsepti süsleyip yatırımı şişiriyor, işi bilmeyenlere boş vaatlerle satıyor, alan kazanamıyor, bir süre sonra zincir dağılıyor.

Binlerce franchise zincir arasından doğru markayı seçmek için ne yapmalı, bakalım. ➤ Fiyatı araştırın. Franchise alıp yeni yer açmanın maliyeti bellidir ama kazancı tahmindir.

Yeni yer maliyetine göre, çalışan yer karına göre fiyatlanır. “Fırsat” değil “ürün” satın alın, çalışan yeri devralın, ne aldığınızı, yatırımınızın kaç yılda döneceğini bilin. Yeni yerin yatırımının örneğin 2 yılda çıkacağı “tahmin” ediliyor, çalışan yerin yatırımının 3 yılda çıkacağı “hesap” ediliyor olabilir. Hangisinin ucuz olduğunu görmek için siz yeninin fiyatını risk faktörünüzle çarpın. Çalışan yerin yatırımını kaç yılda çıkarması gerektiği, markanın gücüne bağlıdır, piyasasına bakın. ➤ Markayı araştırın. Franchise alacağınız markayı etraflıca inceleyin. Franchise alanlarla, sistemden ayrılanlarla, rakiplerle, tedarikçilerle konuşun. İşletmeyi gözlemleyin, müşterilerini tanıyın, niçin geldiklerini anlayın. Cironun, masrafın dağılımını, dalgalanmasını görün.

Kolay ulaşılan bilgilerle yetinmeyin, zor yoldan gidin. Broşürler tek yanlıdır, gazete haberleri eskidir, aktüel piyasa bilgilerine erişin. ➤ Sahibini araştırın. Zincirin kurucusunu, sahibini tanıyın, iş geçmişini inceleyin, niyetini ve kabiliyetini anlayın, sektörü bilenlere sorun, yorum alın, danışmanlık alın. ➤ Kendinizi araştırın. Düşündüğünüz işin kendinize uygun olup olmadığını anlayın. Kişilik özelliklerinizin, özel yaşamınızın, çalışma tarzınızın işe uygun olup olmadığını tartın. Franchise koçluğu alın, kendinize uygun markayı seçin.

Yatırımcıları ve sistemi korumak için çalışıyoruz. UFRAD tüzüğündeki “Dürüstlük ve Açıklık İlkeleri” yatırımcıları koruyor, ama üye sayısının on katı franchise veren var. UFRAD Franchise Akademisi araştırma yapmayı öğretiyor, ama öğrencisi sayısının yüz katı franchise alan var.

Franchise alacaklar iyi araştırma yapmalı. Herkes her işi yapamaz, her iş herkese para kazandırmaz. Araştırmanın kolay yolu yok, uğraşmak gerek, uğraşmayanın işi şansa bile kalmaz.

Her söylenene kolay inanan, doğruyu söyleyenleri dinlemez, duymak istediğini söyleyenleri bulur, kurduğu hayaller yıkılır. Araştırmadan girişen acemi yatırımcılar boş vaatlere kanıyor, hayalleri yıkılınca sistemi suçluyor. Ülkemiz için elzem olan franchise sistemi ve güçlü markalar bundan zarar görüyor.

Sadece bizde değil, franchise sisteminin yaygınlaştığı her ülkede benzer şeyler yaşanıyor.

ABD bu dönemi 1960 öncesinde yaşamış, önlemlerini almış. Avrupa ülkelerindeki dernekler federasyon kurmuş, ilkelerini koymuş. UFRAD ABD ve AB ilkelerini üyelerine uygulatıyor, ama yetersiz markaları üye almamaktan fazlasını yapamıyor. F&M aktüel piyasa bilgilerini veriyor, ama danışmayana ulaşamıyor. Franchise alacakların yapması gereken zahmet edip araştırmak. En azından pazardan domates seçen ev kadını gibi, çevirip bir de altına bakmak, ilk bakışta görünmeyeni de anlamak.

brand can enlarge in a healthy manner, gives franchises only to those who are capable of working the business,he supports them and helps them to make a profit. ➤ The franchisor if WELL INTENTIONED but INCAPABLE, is trying to manage franchisees by means of the experience he himself has gained but can’t do it, cannot set up a system, the concept is neither original nor profitable, is giving to franchisees who have not set their sights high enough,is enlarging but not strengthening. ➤ The franchisor if BADLY INTENTIONED looks only to profit quickly, doesn’t even attemot to setup a system, trims the concept so he can obtain a bigger investment,sells empty promises to those who don’t know the business, the franchisee can’t make a profit and the chain will soon split up.

So now let’s look how to choose the correct brand from amongst all the thousands of franchisors. ➤ EFFECT PRICE RESEARCH. The investment for taking a franchise and opening new premises is known however the profit can only be imagined.

The investment for the new premises is made according to the ones already working and the profit they are making. Don’t buy “Opportunity” buy “Product”, take on an already working franchise,know what you are buying and learn in how many years your investment will be returned.As an example, there is the theory that return of investment on new premises will be in two years,whereas the “calculation” for an already working franchise will take three years. In order to decide which is cheaper then multiply the price for the new by the risk factor.

How long return of capital investment on an already working franchise is,is dependent on the strength of the brand so look at the market place. ➤ RESEARCH THE BRAND. Study the brand from which you think of taking a franchise. Talk to the ones who have already taken franchises,who have left the chain, competitors, talk to suppliers.Look at the brands already in action premises,understand who the customer is and why they come there.Learn the turnover amounts and the spread of the expenses, estimate flunctuations. Do not be satified with easily obtained information try the more difficult methods. Existing brochures are biased, newspaper reports are out of date, try to reach knowledge fron the actual market place. ➤ RESEARCH THE OWNER OF THE BRAND Learn who was the founder of the chain,learn also the owner and his past business record, try to understand his intentions and his capacities, ask those who know the sector, listen to what they say, talk to a consultant.

•RESEARCH YOURSELF. Think wether or not the business you are thinking of is correct for you yourself.Weigh up your own characteristics,your private life, wether your work mode is correct for this business. Take lessons in Franchising and choose a brand which suits you yourself.

We work to protect entrepreneurs and the system. The UFRAD system is based on “Honest and Open Principles”. We work to protect the investors but even within members there are those who have given franchises 10 times. The UFRAD Franchise Akademisi teaches students to research but there are those who have taken 100 franchises. F&M gives franchise coaching but there are thousands who take out on their own.We are not the state, it is not our mission to reach everyone but we support all those who come to us. It is essential that those who take Franchises first effect serious research. Everyone can not work each and every business and every business does not bring a profit.There is no easy road to research, its essential to make a serious effort, for those who do not make this effort THERE IS NO CHANCE AT ALL. Those who easily believe everything that is said, who do not listen to those telling the truth, who find the ones who tell them what they wish to hear and then see their dreams ruined. The novice investor, who enters without any research is then taken in by empty promises which result in failure, but then he blames the system.In our country the true franchise system and the strong brands are also losing out.

It is not our country alone which has this problem as the franchise system has spread every country is having the same problem. The United States lived through this problem prior to 1960 and took preventive steps. European countries formed associations, federations and set out the principles.UFRAD, AMERICA and EUROPE put those principles into effect on their members but as there is a lack of brand members, cannot do more. F&M supply actual market know how but cannot reach the consultant.It is essential that the franchisee makes the effort to research. At least to take the trouble as housewives do, when they are buying tomatoes at the market to turn them over to study the other side rather than simply going for the first they see.
