2012 has been a really important year for our association and sector. As a result of the state supports legislation studies that we conducted with the Ministry of Economy, the newly announced “Foreign Currency Earning Service Supports” will greatly contribute to our international efforts. We hope that all Franchise brands benefit from these supports and our brands reach to the positions that they deserve in the global markets.

Another pleasing news is that gastronomy sector was taken into the scope of Turquality. Thanks to this comprehensive support and grant program, franchise brands in the food sector broadened their horizons and more traditional Turkish food products are opened to the foreign markets day by day and they gain acceptance and recognition everyday. We also provide support to UFRAD members and the whole sector with these developments and follow the developments with pleasure.

Without doubt, the most exciting event of 2012 will be the 36th World Franchise Council Meeting that will be hosted by UFRAD on the 12-15 September 2012 with the Presidency of UFRAD. In these meetings and the fair that will be simultaneously, Presidents of Franchise Associations of 45 countries, hundreds of brands and thousands of investors will come to Turkey and we want to see all Franchise brands in these events.

UFRAD Franchising Association which considers all brands as a part of our family invites all the franchise brands to our family. With our belief in that we will achieve great success together, we wish success to all of our esteemed friends operating in our sector.

AUTHORITIES OF MALAYSIAN MINISTRY OF ECONOMY PAID A VISIT TO UFRAD Malezya hükümetinin, ülkeye dünya markalarını çekmek ve ekonomiyi canlandırmak amacı ile başlattığı kapsamlı çalışma sonucunda yetkililer, Türk markaları hakkında bilgi almak üzere UFRAD Franchising Derneği’ni ziyaret etti.

As a result of comprehensive study launched by the Malaysian government to draw the attention of world brands to the country and to enliven the economy, the authorities paid a visit to UFRAD Franchising Association to receive information about the Turkish brand.

Ekonomi Bakanlığı yetkilileri, dünya markalarını ülkelerine çekmek ve ekonomiyi canlandırmak için yaptıkları çalışmalar kapsamında UFRAD’ı ziyaret ederek bilgi aldı. Malezyalı yatırımcıların Türk markalarına güvendiğini ve ilgi gösterdiğini söyleyen yetkililer, Malezya pazarına girmek isteyen markaların devlet tarafından destekleneceğini ve birçok kolaylık sağlanacağını iletti. UFRAD Yönetim Kurulu Üyesi Gürkan Donat ile görüşen yetkililer, UFRAD üyeleri ve Türk franchise markaları hakkında detaylı bilgi aldı. Kendilerini 13-16 Eylül 2012 tarihinde düzenlenecek Bayim Olur Musun? Franchising Fuarına davet eden Gürkan Donat, fuarda bu markaları daha yakından tanıma ve konseptlerini değerlendirme fırsatı bulacaklarını belirtti. ç

authorities of Malaysian Ministry of Economy received information by visiting UFRAD within the scope of efforts directed at drawing the attention of world brands to the country and enliving the economy. Stating that Malaysian investors trust in Turkish brands and are interested in them, the Malaysian authorities expressed that brands wanting to take place in the Malaysian market will be supported by the state and facilities will be provided to them. Authorities met with Gürkan Donat, a member of the Executive Board of UFRAD, and received detailed information about UFRAD members and Turkish franchising brands. Inviting them to “Be my franchise?” Franchising Fair to be held in 13-16 September 2012, Gürkan Donat stated that they will find the opportunity of recognising the brands closely and evaluating their concepts in this fair. ç

UFRAD ÜYELERİ, KOSGEB YETKİLİSİNDEN DESTEKLER HAKKINDA BİLGİ ALDI UFRAD MEMBERS RECEIVED INFORMATION ABOUT SUPPORTS FROM THE AUTHORITIES OF KOSGEB UFRAD Haziran ayı Yuvarlak Masa toplantısının konusu ‘Markalarımıza KOSGEB Destekleri’ üzerineydi. Yuvarlak masa toplantısında Boğaziçi Hizmet Müdürü Dr. Serhat Öztürk, KOSGEB destekleri hakkında katılımcılara detaylı bilgi verdi.

The issue discussed in the Round Table Meeting held in June by UFRAD was “Supports of KOSGEB to our brands”. In the round table meeting, Boğaziçi Service Director Dr.Serhat Öztürk informed the participants about KOSGEB supports.

Toplantıya konuşmacı olarak katılan KOSGEB Boğaziçi Hizmet Müdürü Dr. Serhat Öztürk, KOSGEB tarafından sağlanan birçok destek hakkında bilgi verdi. UFRAD Üyeleri, sektör temsilcileri ve Türk markalarının katıldığı toplantıda, KOSGEB’in birçok alan ve sahada verdiği hibe ve kredi destekleri ele alındı. UFRAD’s June Round Table meeting held in Point Hotel Taksim on 19th June 2012, supports of KOSGEB to our brands were discussed. Boğaziçi Service Director Dr.Serhat Öztürk who participated in the meeting as speaker informed the participants about a number of supports given by KOSGEB. In the meeting that UFRAD members, sector representatives and Turkish brands attended, grant and credit supports provided by KOSGEB in many areas and fields were addressed. Many of the brand representatives attending the meeting requested that long and

Toplantı öncesi ise Alize Mühendislik yetkilileri tarafından bacasız davlumbazlar, havalandırma fanları, hava temizleme cihazları hakkında katılımcılara detaylı bilgi verildi.

Toplantı sonunda Dr. Öztürk ve Alize Mühendislik yetkilisi Cüneyt Tecer’e Dr. Aydın teşekkür plaketi verdi. Dr. Aydın KOSGEB ile devam eden yakın ilişkilerinin güçlenerek büyümesi dilediklerini belirterek toplantıyı sonlandırdı. ç

Prior to the meeting, participants were informed about flueless füme extractors,ventilation fans and air cleaning devices by the authorities of Alize Engineering in detail. At the end of the meeting, Dr.Aydın gave plaquets of participation to Dr.Öztürk and the authority of Alize Engineering Cüneyt Tecer. UFRAD FRANCHISE ÖDÜLLERİNDE, SİMİT SARAYI, 2011 YILI FRANCHISE MARKASI SEÇİLDİ

SİMİT SARAYI WAS CHOSEN AS THE BRAND OF 2011 IN UFRAD’S FRANCHISE AWARDS 2011 yılından itibaren uygulanmaya başlayan UFRAD Yılın Franchise Markası ödülüne Simit Sarayı layık görüldü. Her yıl düzenli olarak gerçekleştirilecek olan Yılın Markası Ödülüne franchise veren bütün markalar başvurabiliyor.

Simit Sarayı was granted with UFRAD’s Franchise Brand of the Year Award started to be given in 2011. All brands that award franchise can apply to the Brand of the Year Award that will be held every year.

Yaklaşık bir senedir devam eden yoğun çalışmalar sonucunda UFRAD Franchise Ödülü sahibini buldu. Toplanan istatistiki verilerin değerlendirilmesi sonucunda, ödüle başvuru yapan UFRAD üyeleri arasında, Simit Sarayı 2011 Yılı Franchise Markası ödülüne layık görüldü. 19 Haziran günü Point Hotel Taksim’de yapılan törende ödülü Simit Sarayı adına Operasyon ve Franchise Direktörü Gül Bozbıyık aldı. As a result of intense works continuing for about one year, UFRAD Franchise Award found its owner. Among UFRAD members applying to the award, Simit Sarayı won 2011 Franchise Brand Award as a result of evaluation of the statistical data.

In the ceremony held on 19th June 2012, the Director of Franchise and Operation Gül Bozbıyık received the award on behalf of Simit Sarayı. While the chairman of the executive board of Simit Sarayı could not participate in the award ceremony due to an overseas journey, Gül Bozbıyık expressed that they feel honour and happiness to receive that award and stated that their aim is to become an international Turkish brand. Presenting the award to Gül Bozbıyık, UFRAD President Dr.Mustafa Aydın stated that they were proud of Simit Sarayı and wished that the firm pioneering many brands will continue its way by expanding its business. å FAST FOOD’A MALTIZ YORUMU MALTIZ’S VERSION OF FAST FOOD Asırlık lezzet birikiminin başarılı uygulayıcılarından Cızbız Köfte, yeni bir yatırım modelini sundu. Trakya Bölgesi’nin en fazla bilinen lezzet noktalarından Maltız’ı bünyesine katan firma, uygulamaya koyduğu yeni yatırım modeliyle girişimcilere cazip fırsatlar sunuyor. Cızbız Köfte Yönetim Kurulu Başkanı Ali Tatlıdil sorularımızı yanıtladı.

Incorporating Maltız which is one of the most popular service points of the Thrace Region into, the firm provides attractive opportunities to enterpreneurs with its new investment model. Ali Tatlıdil, Chairman of the Executive Board of Cızbız Köfte, answered our questions.

Kısaca Maltız Köfte’yi tanıyabilir miyiz?

Maltız Restoran olarak 1970’li yıllarda kurulmuş, Marmara ve Trakya Bölgelerinde bilinirliği hayli yüksek, eski bir işletme. Bölgesinde çok kuvvetli. Bundan birkaç yıl önce köfte işine girdi. Kurumsal anlamda ciddi yatırım yapmış bir marka. Yaklaşık dört ay önce markayı, tesisleri, mağazaları, kısaca mevcut yapının tamamını devralmış bulunuyoruz.

Can we recognize Maltız Köfte in brief?

Maltız Restaurant is an old and rather popular entreprise of Marmara and Thrace Regions and it was established in 1970s. It is very strong in its region. It engaged in the business of meatball several years ago. It made significant institutional investments. About four months ago, we took over the brand, plants, stores, in brief the whole structure.

Yeni yatırım modelinizle ilgili bilgi verebilir misiniz?

Yıllar öncesine dayanan bir corner dükkan projemiz vardı. Maltız markasıyla bu modeli uygulamaya başladık. Yeni sistem, gerek AVM gerek sokak dükkanları ortamında 30-40 metrekarelik küçük dükkanlarda ve ekmek arası servis ile hizmet veren bir yatırım modeli. Bu doğrultuda ilk noktayı İstanbul Yenibosna’da E-5 kenarında hizmete açtık.

Neden böyle bir yatırım modeli düşündünüz?

Can you inform us about your new investment model?

I had a corner store project for years. We started to implement this project with the brand of Maltız. The new system is an investment model offering sandwich products at small stores covering an area of 30-40 square meters located at both shopping centers and streets. In this direction, we opened the first service point by E-5 in Yenibosna, İstanbul.

Başta AVM kiraları olmak üzere girdi maliyetlerinin çok yüksek olması sebebiyle böyle bir modele karar verdik. Yatırım maliyetlerini minimize edecek bir işletme modeli geliştirdik. Piyasada bugün bir dükkan için 400-500 bin lira yatırım maliyeti gerekiyor. Uygulamaya başladığımız model ile yatırım maliyetini aşağı çekerek, az personel ile hızlı servis imkanı sunarak düşük metrekare, düşük kira, az eleman ve genel girdi maliyetlerinin küçültülmesiyle küçük cirolardan kar elde etme hedef noktamız.

Why did you think of such an investment model?

We decided on such a model as input costs and shopping center rents, in particular, are too high. We developed an enterprise model minimising the investment costs. Today, in the market, a store requires an investment cost of 400-500 thousand TL. Our target is to yield considerable amount of profits from limited turnovers by minimising the general input costs at small stores of a low rent and with less personnel.

Yatırımcılarımızdan marka bedeli almıyoruz. Ciro bedeli almıyoruz. Sadece yüzde 1 gibi cüzi bir reklam katkı bedeli alıyoruz. Yani, yatırımcıya cazip imkan sunmak adına biz üzerimize düşen vazifeyi yapma gayesindeyiz. Neredeyse, sadece marka/isim bedeli maliyeti kadar bir yatırım tutarıyla girişimci dükkan açma imkanı bulacak. Ürün çeşidi olarak hangi lezzetler tüketiciye sunulacak?

Serbest satış olmakla birlikte menü seçeneklerimiz de mevcut. Tabi ana ürünümüz ekmek arası köfte. Bunun yanında, sade, kaşarlı, acılı, ev tipi –ki yeni bir üründür- köfte, hamburger, ıslak hamburger, tost ve soğuk sandviçler, birkaç çeşit salata, tatlı ve içecek çeşitleriyle vitrine çıktık.

Ekmek arası köfteyi ön plana çıkarırken hedefleriniz nelerdir?

Caddede olmakla birlikte AVM’lerde de yer alabilecek bir yatırım tipi.

AVM içerisinde 20-25 metrekare alanlarda uygulayabileceğimiz bir yatırım. Küresel fast food zincirlerinin uyguladığı sistemi ekmek arası köfte modunda uyguluyoruz. Geçmiş birikimimizin önümüzü aydınlatmasıyla sektöre yeni bir kavram kazandıracağımıza inanıyorum. Sonuçta tüketilen ekmek arası köfte ama sunuşu farklı. Ürünlerimizin kalitesi ve sunumuyla bu alanda standartları belirleyeceğiz.

What are your supports to the enterpreneur candidates?

We do not charge a brand fee to the enterpreneurs. We do not also charge a turnover fee. We only receive an advertisement contribution fee amounting to 1 %. In other words, we aim at doing our share to offer an attractive opportunity to enterpreneur. Enterpreneurs will be able to open a store almost in exchange for a cost of brand/royalty fee.

Which dishes will be offered to customers in your product range?

Although there is a free sale, we have other menu options. Of course, our main product is sandwich meatball. Besides, we offer plain, cheesy, spicy –which is a new product- meatball, hamburger, wet hamburger, toast and cold sandwich, several salads, deserts and drink alternatives.

What are your targets in featuring the sandwich meatball?

It is an investment type that can be founded in both streets and shopping centers. It can be implemented in an area of 20-25 square meters within shopping centers. We apply the system of global fast food chains in sandwich meatballs. We believe in that we will introduce a new concept to the sector. It is the sandwich meatball that is consumed but its presentation is different. We will determine the standards in this field with the quality and presentation of our products.

Çıtır Usta, 2003’de Türkiye’deki ilk şubesini Galeria’da açtı. İstikrarlı büyüme sergileyerek, ilk dört yıllında 10 şubeye ulaştık. 2007 yılından bu yana franchise veriyoruz. Bugün 42 noktada faaliyet gösteriyoruz. 245 kişiye kurumsal çatı altında, bin 100 den fazla kişiye de franchise sistemi ile istihdam sağlıyoruz. Bandırma ve Edirne bölgesinden gelen özel kesim etlerin kullanıldığı markamız, et konusunda uzmanlığıyla öne çıkıyor.

Can you inform us about your firm? Çıtır Usta opened its first branch in Turkey in 2003 in Galeria shopping center.

With a stable growth, we reached to 10 branches in the first 4 years. We have been awarding franchise since 2007. Now, we operate in 42 points. We employ 245 people under our institution and more than 1.100 people with our franchise system. Specially produced meats coming from Bandırma and Edirne regions are used in our brand which outstands with its expertise in terms of meat.

Konseptiniz hakkında bilgi verir misiniz? Şubelerimizin hizmet ve dekorasyon konumlandırması alakart sistemine yönelik. Müşterilerimize 60 çeşit lezzet sunuyoruz. Franchise için “paket servis”, “fast-food” ve “alakart”tan oluşan üç ayrı girişim modelimiz bulunuyor. Franchise vereceğimiz şubeyi yatırımcılara “anahtar teslim” olarak devrediyoruz. Çıtır Usta’da şubeler açılmadan önce mutlaka çevre analizleri yapılır. Bölgenin sosyo-ekonomik yapısı incelenerek, doğru lokasyon olup olmadığı detaylandırılır. Ayrıca hizmet kalitesini yükseltmek şubelerde çalışacak personele sektörün dinamiklerini öğrenecek bir dizi eğitimi Çıtır Usta Eğitim Akademisi ile veriyoruz. Can you give information about your concept?

We have a “à la carte” system in terms of service and decoration in our branches.

We offer 60 different tastes to our customers. However, for franchises, we have three different models including “package service”, “fast-food” and “à la carte”. We give turn-key branches to our franchisees. We absolutely conduct environment analyses before opening a branch. We decide on whether it is the right place by examining the socio-economical structure of the region. Besides, we provide a series of trainings with Çıtır Usta Training Academy to teach the dynamics of the sector to the personnel working the branches in order to elevate the service quality. We support each dealership of Çıtır Usta with trained and qualified personnel having the same equipments as their international collegues and through our web-based softwares technically.

Yurt içinde kaç şubeye ulaştınız? Çıtır Usta 2007 yılından bu yana franchise veriyor. İlk olarak Zonguldak’ta başlayan sistem ardından; İstanbul, Bursa, Edirne, Zonguldak, Adapazarı, Keşan, Çerkezköy, İzmir’den sonra Samsun ve Mardin’e yayıldı. Şu an 42 noktada hizmet veriyoruz.

How many branches do you have in Turkey? Çıtır Usta has been awarding franchise since 2007.

We opened the first branch in Zonguldak and then expanded to İstanbul, Bursa, Edirne, Zonguldak, Adapazarı, Keşan, Çerkezköy, İzmir, Samsun and Mardin. Currently, we offer service in 42 points.

Franchise şartlarınız hakkında bilgi verir misiniz? Çıtır Usta şubelerini bölge ihtiyaçlarına göre 50-60 metrekare Corner, 100 – 150 metrekare mağaza olarak konumlandırıyoruz. Sisteme giriş bedelimiz 50 bin dolar. Şartlar ne olursa olsun yatırımcımızın para kazanması gerekli.

Dolayısı ile “garantisi bizden işletmesi sizden” sisteminin tek bir ayrıntısı var o da inanmadığımız şube noktalarına ve başarılı olacağına inanmadığımız kişilere şartlar ne olursa olsun bayilik vermemek. Biz yatırımcımızla tüm bu maliyetlere girmeden evvel bir araya gelerek önce karşılıklı olarak birbirimizi tanıyoruz ve karşılıklı ne isteyebileceğimizi belirliyoruz. İşbirliği bu tanışmanın ardından gelişiyor.

What are your conditions for franchising?

We position the Cıtır Usta branches as Corner in the areas of 50-60 square meters and as store in the areas of 100-150 square meters on the basis of regional requirements. Our entrance fee is 50 thousand dollars. No matter what are the conditions, the investor should earn money. Thus, there is only one detail of our system “We guarantee, you operate”. We do not give dealership to people in whom we do not have trust or we do not open branches in places in which we believe to bring success. Before undertaking all these costs, we come together with the investor and recognise each other and determine mutually what we look for. Cooperation comes after this introduction.

Büyüme planlarınızdan bahseder misiniz?

Amacımız Türkiye’de bir takım şeyleri değiştirmek esasında. Üretim bandımızı dünya standartlarında hizmet veriyor ve Çıtır Usta’yı Çıtır Usta yapan lezzetleri, her şubemizde aynı tatta sunuyor. Ülkemizde de kanayan yara olan kalifiye eleman sorununu, Çıtır Usta Eğitim Akademisinde, Aydın Üniversitesi ile beraber aştık. Arge laboratuvarı ve çağrı merkezi ile hizmet verdiği sektörde daima farklılık yaratmayı hedef olarak gören Çıtır Usta’nın büyümesi de kaçınılmaz mutlu bir grafik şeklinde gelişiyor. Türkiye genelinde ise önümüzdeki beş yıl içinde 100 şubesi alakart restoran, 100 şubesi de “corner konsepti” ile hizmete devam edecek bir Türk markası yapmaktır.

What are your future plans?

Our aim is actually to change something in Turkey. Our production band is at the international standards and we offer our tastes in all branches at the same quality. We overcame the problem of qualified personnel of our country with our Çıtır Usta Training Academy in cooperation with Aydın University. Aiming at always outstanding in its sector with the R&D laboratory and call center, Çıtır Usta sees growth as an inevitable and pleasing outcome for its brand. Our priority is Anatolian side of Istanbul. Throughout Turkey, we aim at becoming a Turkish brand giving service with 100 “à la carte” restaurants and 100 branches operating in the corner concept within the coming five years.

Franchising sisteminin geliştiği ve çok uzun geçmişe ve çeşitli yaşanmışlara dayanan Amerika’da 1960 yılında kurulan IFA ( Ulusal Franchise Derneği) Üyelerinin Franchising sistemin Franchise alanının detaylı olarak bilgilendirme esasına dayanan, derneğimiz UFRAD’ tın da açıklık ilkeleri olarak adlandırdığı uyum çalışmalarını şart koşmuştur.

Yani her Franchise veren Franchise alana, firma geçmişi hakkında detaylı bilgiyi (yöneticileri de dahil olmak üzere yaşadıkları itilafları ve varsa iflas geçmişi) vermekle yükümlüdür. Bunlara ilaveten; sistemleri ile ilgili her türlü bilgiyi bulundukları sektördeki pazarın tanıtımını, yapılacak olan ilk yatırım maliyetlerini, ödenecek tüm bedellerin neler ve ne kadar olacağına dair bilgiyi, franchise alanlarına açıkça bildirmekle yükümlüdürler.

Founded in 1960 in USA, National Franchise Association, who is helping Franchising improve greatly with its long history and experience stipulated harmonization studies, also called ‘principles of accuracy’ by our association UFRAD depending on the principle of detailed informing of its members, Franchising system and Franchisees. It means that any Franchisor is supposed to inform the Franchisee about the history of firm (inclusive of administrators, agreements and bankruptcy). Additionally, the franchisor is supposed to give the franchisee about any kind of information relative to the system, the advertisement of the market in the related sector, the first investment costs, which and how much the payments will be.

Yine satın alma sınırlamalarını, kimden ve nasıl alacağını, varsa finansman paketinin koşullarını, verecekleri tüm operasyonel ve teknik destekleri, varsa bölge sınırlamalarını veya kotaları ile ilgili bilgileri, marka patent ve kullanım haklarını, bizzat çalışma zorunluluğu olup olmadığını, yapılan anlaşmanın detaylarını (iptal edilme koşulları devir şartları ve uzatma koşullarını vb), mevcut işletme sayılarını yeni açılacak olan veya kapatılacak olan işletmeleri ile ilgili bilgileri, şirket bilançoları ve vergileri hakkında bilgilendirmeyi ve yapılacak olan anlaşma ile ilgili incelenmek üzere örnek anlaşma metnini ve tüm bilgiler ile ilgili alındı belgesinin Franchisee verilmesini şart koşarlar. Bu sayede yatırım yapacak olan Franchisee nin herhangi bir sürpriz ile karşılaşmamasını sağlamış olurlar.

Avrupa’da ise, Franchising sisteminin hızla benimsenmeye başladığı 1972 yılında kurulan EFF ( Avrupa Franchise Federasyonu) ile Franchise Sisteminin Düzenlenmesine yönelik uygulama zorunluluklarını üye ülkelerde net olarak hayata geçirilmesini sağlamıştır.

EFF tarafından konulan ve ülke dernekleri tarafından geliştirilen ilkeler, Franchising sisteminin daha doğru uygulanabilmesi için yönlendirici olarak kabul görmüştür. Genel olarak baktığımızda yukarıda bahsettiğimiz gibi bu kurallar Franchisig Sisteminin düzenlenebilmesi için

IFA stipulates purchase restrictions, the way of how and whom it will be purchased, the conditions of financing package if available, all the operational and technical support they will ever give, the information about regional restrictions or quota if available, brand patent and rights of usage, whether there is any obligation of working personally, the details of the agreement made (conditions of cancellation, turnover conditions and renewal conditions etc.), the number of business available, the information about the closing and opening business, giving information about the firm’s balance sheet and taxes, the sample agreement text to analyze and giving certificate receipt to Franchisee. These will eliminate the unexpected situations for Franchisee that will make the investment.

On the one hand, founded in 1972 in Europe, European Franchise Federation helped the application obligations regarding Collaboration of Franchise System in member countries. The rules set up by EFF and improved by association of the member countries has been accepted as directing in order to apply the Franchise system more accurately. Generally, the rules as we stated above, are applied to Franchising relations to collaborate the Franchising System.

training both technically and operationally, brand and right of usage, the liabilities of Franchisee, in the experiences during the relationship, in addition to good will, warning, extension of time, negotiating, doing the advertisement in an early, clear and objective way and refunding the prepayments. Also, they stipulate the sensitivity over the rules of being long term, comprehensive, clear, written, and for the sake of everyone that are supposed to be defined in the agreement.

Franchise ilişkilerine uygulanır. Bunlar Franchise verenin yükümlülükleri, Operasyonel ve teknik olarak vereceği destek, vereceği eğitimleri, marka ve kullanım koşullarını, Franchise alanın yükümlülükleri, ilişki süresinde yaşanan olaylarda, iyi niyet, ikaz etme uyarma, süre tanıma, müzakere etme gibi konuların yanında, tanıtımların tam doğru tarafsız ve önceden yapılması, ön ödemelerin mahsup ve iade edilme imkânlarını içerir. Ayrıca yapılan anlaşmada bulunması istenilen özellikleri ise herkesin yararına, yazılı, net, kapsamlı ve uzun süreli olması ilkesi üzerinde hassasiyetle durulmasını şart koşarlar.

Franchise zincirleri, yüksek standartlarını korumak için kendi iç denetimlerini uygularlar. Yasaların getirdiği zorlamalar, genelde markanın korunması için konulan kurallardan hafif kalır. Ayrıca markalarının yasa dışılık kusuruyla lekelenmesi riskini göze almazlar. Franchise firmaları yasalara uyar, sektörlerine örnek olurlar.

UFRAD ülkemizde Franchising sisteminin gelişmesine dünya standartları ile aynı çizgide uyarlanabilmesi yönelik öncülüğünü sürdürmenin yanında bölge ülkelerini de bu yönde yönlendirerek ve eğiterek sistemin ülkemiz sınırları dışında bize ticari alanları açacak pazarlarda da öncülük yapmaktadır. Bu coğrafyadaki ülkelerde ve tüm dünyada daha güçlü markalarımızın bu pazarlara açılabilmelerini de sağlamaya yönelik açıklık ve dürüstlük ilkelerini kabul eden üyelerinin sistemlerini, gelişen koşullara uyarlayabilmeleri için, 2009 yılında tüzüğüne eklediği Sistem Değerlendirme uygulamasına başlamıştır.

Bu uygulamadan geçen üyelerine bir kez daha sistemlerini uzman değerlendirme uzmanları ile birlikte gözden geçirme imkânı sunmuştur.

Yapmış olduğumuz bu uygulama ile yukarıda açıkça ve detaylı olarak dile getirdiğimiz konularda üyelerinin sistemlerini bu arada varsa eksikliklerini bir kez daha tamamlamaya yönelik katkılar sağlamıştır. Bu uygulamada markalarımızdan almış olduğumuz teşekkür ve beğeniler Derneğimizin ne kadar doğru yolda adımlar attığımızın bir göstergesi olmuştur. 3 yılda bir tekrarlanacak bu değerlendirmeler üyelerimizin sistemlerini gizlilik ilkeleri içerisinde başka bir uzman göz ile incelenip markalarına değer katma yolunda önemli kriterleri tekrar yenileme imkânına sahip olmaktadırlar. Değerlendirmeden geçmemiş üyelerimizin de bir an önce kendilerini ve sistemlerinin değerlendirmesinin kendilerine sağlayacağı yararları görebilmeleri dileği derneğimize başvurularını beklemekteyiz.

UFRAD started System Evaluation application in 2009 for the members who accepts the clarity and honesty principles regarding extension to the other markets in national and international platforms. UFRAD provides an opportunity with the successful members to revise the system by the help of an expert. Via this application, UFRAD has been helping the members complete their systems in the topics stated detailed and clearly above the appreciation we get from our members with this application has been a sign of our association’s success through this way. This evaluation process that will be repeated every 3 years, allow the firms to update their systems and obtain the chance of revise their criteria by the help of an expert. We wish that our members who have not pass the system yet could see the advantages to use the system. We are waiting for their application…

SOROBANWORLD abaküs eğitim programları ve eğitim araç gereçleri üretiminde dünya devi olan Tomoe Soroban Co. ile işbirliği içerisinde olan ve Türkiye’de aritmetik eğitiminde lider bir kuruluştur. Abaküs eğitimi konusunda 90 yıllık geçmişi olan Tomoe Soroban Co. dünyada 50’nin üzerinde ülkeye eğitim araç gereçleri sağlamaktadır.

Türkiye’de Abaküs Temelli Beyin Geliştirme Revizyon Programını Tomoe Soroban Co. ve SOROBANWORLD eğitim yazarları ve eğitici kadrosu birlikte oluşturmuşlardır.

Aslında SOROBANWORLD fikri ilk olarak Dr. Mehmet Engin Uysal’ın önerisiyle başladı. Üç ortak mental aritmetiğin çocuklar üzerindeki etkisinden şaşırtıcı derecede etkilenmiştik. Can you inform us about the establishment and development process of your firm?

SOROBANWORLD, which is an abacus-based brain development program, was established as a brand of Verda Education Consultancy Services in 2011. SOROBANWORLD is a leading institution in the arithmetic training of Turkey in cooperation with Tomoe Soroban Co. That is a world’s giant in the production of abacus training programs and training equipments. Having an experience of 90 years in the abacus training, Tomoe Soroban Co. Supplies training equipments to more than 50 countries in the world. Abacus-Based Brain Development Revision Program was developed by Tomoe Soroban Co. and SOROBANWORLD training authors and training cadre altogether in Turkey.

In fact, SOROBANWORLD concept was firstly introduced by Dr.Mehmet Engin Uysal. We, three partners, were deeply influenced by the impact of mental arithmetic on the children. After deciding to work on this opinion, we canalized our advertisement company completely into this work and established a R&D team. This team containing 26 personnel consists of product development, software, design, production and production departments. We also launched talks with Tomoe Soroban Co. in Japan in the period of project development. During this period,

Yapılacak olan standart yapılarla ilgili olarak ekibimiz ciddi bir konsept çalışması hazırladı. Bu konsept çalışması dahilinde model olarak hazırlanan yapı, çocuklarla birlikte düşünerek, onların dünyasına uygun hale getirildi. Aslında SOROBANWORLD’ü çocuklar biçimlendirdi dersek daha doğru olacak. İlk logo ve karakter çalışmalarımız yapılırken Türkiye’nin önemli çocuk kitapları çizeri Ercan Dinçer’le beraber 10 ayrı karakter oluşturmuştuk ve inanın diğer karakterler arasında aslında en seçilemez görünen W-Soroban karakteri çocukların %98’inin tercihi oldu. Ve Sorofamily olarak 11 ayrı karakterle bir aile oluşturduk. Bu karakterlerin hepsine senarist arkadaşımız Tunç Zilelioğlu sayesinde yaşam öyküleri ve kişilik özellikler kazandırıldı. Çok ciddi bir çalışma yürüten ekibimiz sayesinde 28 yayın yazımını ve basımını gerçekleştirdik. Tasarım ekibimizin çalışmalarıyla kitaplarımız ve sitelerimiz hayat buldu.

Dr.Mehmet completed the Certification and Master Consultancy programs and concluded the cooperation agreement with Tomoe Soroban Co. Our team prepared a serious concept study concerning the standard structures. The structure prepared as model within the scope of this concept study was thought with children and made appropriate for them. It would be more correct to say that SOROBANWORLD was shaped by children. We created 10 separate characters with Ercan Dinçer who is one of the leading children book illustrators of Turkey during our first logo and character studies and W-Soroban character was selected jointly by 98 % of the children. We created a 11-member family called as Sorofamily. All of these characters were acquired life stories and personality characteristics by our scenarist friend Tunç Zilelioğlu. We created and published 28 publications with our team. Our books and sites were animated thanks to the efforts of our design team.

When and how did your firm start to give Franchises?

We launched our franchising system about four months ago. Following the first SOROBANWORLD Mental Arithmetic center, we decided that this system should not be limited to only one region and we have to reach to more children. Thus, new SOROBANWORLD Authority Centers were started to be established.

Firmamız ilk franchise hareketine yaklaşık dört ay önce başladı. Kaç şubeniz ve çalışanınız var? Şu an Türkiye de 64 franchise anlaşması yaptık ve bunlardan 41 Yetkili Merkezimiz aktif olarak çalışmakta. Ortalama Türkiye’de her üç günde bir yer kuruyoruz.

Ayrıca Azerbaycan, Özbekistan, Kazakistan ve Kuzey Kıbrıs Ülke Temsilcilikleri ile ilgili görüşmelerimiz devam etmekte.

Türkiye’de Mental Aritmetik Dünyası içinde çocuklara özel bir dünya hazırlayarak, aynı konsepti her yerde uygulayan, bir bütünlük içerisinde sunan tek yapı olması bir ayrıcalıktır. How many branches and personnel do you have?

Currently, we have 64 franchising agreements in Turkey and 41 Authority Centers of them are actively operating. On average, we establish a new center every three days in Turkey. Besides, our negotiations with the representatives of Azerbaijan, Uzbekistan, Kazakistan and Northern Cyprus.

In your opinions, why do enterpreneurs choose you?

First of all, Mental Arithmetic is a Japan origin system and we carry out this business together. It is really important to be the only business having the Japan Certification Program in Turkey. Another advantage of us is that we optimized this system by mixing it with the Turkish education-training system. We are the only institution that prepared a separate world for children in the Mental Arithmetic World in Turkey, implemented the same concept everywhere and provided this system in an integrated structure. The most important factor is our publications and materials. Our publications and materials exceeded 150 items and SOROBANWORLD which is also the only firm having a R & D team strives at improving itself with its 26 employees. While children can only pass to the multiplication process at the 2nd year, in SOROBANWORLD, children start to learn the multiplication process at the 4th month.

What is the average cost of a store to be opened in your franchising system?

Mental Aritmetik ülkemizde çok yeni bir sektör ve her yeni gün piyasaya yeni firmalar eklenmekte. Biz bir işi düzgün ve profesyonel olarak yapanların sürekliliğine inanıyoruz.

Ne yazık ki taklit her sektörde olduğu gibi bu sektörde de kendisini göstermiş durumda. Ancak girişimciler ve alıcılar eskisi gibi değil artık. Konuyla gerçekten ilgilenen kişiler araştırıyor, inceliyor ve doğrusunu buluyor. Bu konuyla ilgili olarak çok bilinçli yaklaşımlar alıyoruz ve bu durum mental aritmeğin daha uzun yıllar ülkemizde varlık göstereceği anlamını taşıyor.

Sizden franchisee alanların başarılı olması için nelere dikkat etmeleri gerekir?

Hepimiz kendimizi güvende hissetmek isteriz. Öncelikli olarak güven veren bir firma ile çalışmalarını öneririm elbette. Sonra Franchise almak istediklerinde genel merkezleri değil, yetki merkezlerini aramalılar. Çünkü en doğru cevaplar oradan gelecektir. Bizim sektörümüzde en önemli parça yayın ve materyallerdir. Bu da atlanmaması gereken önemli bir konu.

Önümüzdeki dönem hedefleriniz nelerdir?

Eylül hedefi 100 şube olan bir yapıyız, ancak ince eleyip sık dokuyoruz. Gerek taleplerle gerek kişilerle ilgili olarak lokal araştırmalar yapıyoruz. Önümüzde Franchise Fuarı var ve orada hazırladığımız yeni bir projeyi tanıtacağız. Ancak asıl hedefimiz bir dünya markası olmak ve buna inanabilirsiniz... Dört ayda 64 şubenin kurulacağına kim inanırdı ki... Bunu kısa zaman sonra Türkiye platformunda, açacağımız yeni sistematiğimizle göstermeyi hedefliyoruz.

What are your supports to your franchisees?

We have to state that SOROBANWORLD is establishing a boutique structure. This structure consists of six-persons three classes and a reception area. Our firm produces all products required by this structure. For electronics and seats, we have contracted firms. Turnkey system is another advantage. What is more important is that we do not charge firms for the cost of any brochures, posters or leaflets.

Activity programs are supported and cost free seminar programs are organized. We do not charge authority centers with an advertisement cost.

Why should enterpreneurs buy franchise in this field?

First of all, education is pleasant job. Providing new skills and information to people makes you happy. However, in terms of finance, it is a rather new sector and open to consumption. It is a sector in demand with low investment costs.

Besides, its profit margins are satisfying.

How do you evaluate the current position of the sector in Turkey?

Mental arithmetic is a relatively new sector and new firms enter in this sector every day. We believe in the continuity of those firms making their business properly and professionally.

Unfortunately, imitation has emerged in this sector as in the other sectors. However, enterpreneurs and consumers are not as before. Those really interested in the business conduct serious inquiries and find the right one. We observe considerably conscious approaches in this respect and this situation means that the mental arithmetic will survive in our country for many years.

To which points should your franchisees pay attention to be successful?

We all want to feel safe ourselves. Of course, I firstly recommend to them to work with a reassuring firm. Then, if they want to take a franchise, they should call the authority centers instead of the head offices. They will provide the most correct answers to their questions.

The most important element of our sector is the publications and materials. This is an important point that should not be skipped.

What are your targets for the forthcoming period?

Our target for September is to reach to 100 branches but we are too fussy. We conduct local investigations about both demands and people. The Franchising Fair is coming and we will introduce a new project in this fair. Our main target is to become a global brand and you can believe in this. Who would believe in that 64 branches could be opened only in 4 months! We aim at showing this with our new system that we will open in the platform of Turkey in a relatively short time.

How many branches and personnel do you have?

Throughout Turkey, we have 120 branches and we employ about 600 thousand people in these branches. In the head office, we have 50 employees.

What are the characteristics that you look for in the franchisee canditates?

We do not only expect financial invesment from the investor. The investor should pay attention to the business in person, should be loyal to the business, should be eager to success and open to the innovations. Besides, the investor should protect our image and can prepare different projects at different locations under the brand of Sultanahmet Köftecisi and should attach importance to order and discipline. These are important for us.

What is the average cost of a store to be opened with the franchising system under your firm?

We demand 100 thousand dollars from investors as franchise admission fee. In addition, there is an investment cost varying between 140 thousand tl and 250 thousand tl for a store covering 100-125 square meters. We prefer stores of 100 square meters and above in the shopping centers, stores of 100-200 square meters in the streets where human and car traffics are intense and stores covering an area of 100-250 square meters in the road restaurants.

How do you inspect your franchises?

Our francises are inspected periodically by our professional operation group found under our firm and the food engineer leading this group.

When did your firm start to award franchise?

Sultanahmet Köftecisi is the first meatball firm awarding franchise in Turkey.

What are the supports that you provide to your franchisees?

With the signing of franchise agreement, we provide such supports to our franchisees as business hand manual, inspection support, collective product purchase support and operational support.

Besides, we have a training program directed at the franchisees lasting for eight weeks. With this training, we ensure our investors to be informed about the quality level and stability of our products as well as the restaurant management.

What are your targets for the forthcoming period?

One of our targets for the forthcoming period is to open to the foreign countries. By opening branches in the countries where Turks live intensely in particular, we want to introduce the taste and quality of our meatballs to the world. To this end, we continue our efforts constantly.

Fast Food 90’larda başladı 1970 ve 80’lerde sürekli krizlerle boğuşan, kişi başına milli geliri 2000 doların altında kalan Türkiye’de sokaklarda az çeşitlilikte, basit ekipmanla yapılan, basit ambalajda sunulan ürünler satılırdı.

Tablada simit, kol sepetinde lahmacun, camlı seyyar arabada sandviç, tabakta kağıt üzerinde tavuklu pilav, elde yenilen poğaça simit, bir parça kağıtla sunulan halka tatlısı gibi ürünler, yanı açık Volkswagen minibüste pişirilip ekmek arasında sunulan köfte, tost makinesinde basılan tost, salçalı suda gün boyu kaynayan sosis, alışılmış görüntülerdi. 1990’larda yaygınlaşmaya başlayan yabancı fast food zincirleri sokakta beslenme kültürünü kökten değiştirdi.

Endüstriyel mutfak üreticileri çoğaldı, fiyatlar düştü. Önceleri büyük otel ve restoranlarda bulunan paslanmaz mutfak malzemeleri, modern ve güçlü ekipmanlar büfelere kadar girdi. Yabancı fast food zincirleri her alanda tedarikçileri geliştirdi, kağıt bardak, kolonyalı mendil, poşette tuz, kağıda sarılı şeker, sandviç ekmeği, ambalaj kağıdı, sevkiyat kutusu, tek kullanımlık soslar, sevkiyat çantası, motor bagajı, kaldırım kukası, baskılı folyo, neon tabela, led ışıklı yazı, seyyar POS cihazı gibi birçok ürün ve ekipman her yerde ucuza bulunur oldu.

Yerliler önce taklit etti, sonra öne geçti Bu dönüşüm sürecinde kebap, köfte, lahmacun, pilav, tencere yemekleri gibi yerli ürünlerin sunumu, hamburger, pizza gibi yabancı ürünler karşısında zayıf kalıyordu. Tüketici önce dünya markalarına hücum etti. McDonald’s Taksim’de açıldığında ciroda dünya rekoru kırdı. Pizza Hut Taksim’de kapıda hostes karşıladı sıra bekletti. Wimpy Kütahya’da müşteri masaya oturdu, garson ürünü kasa fişiyle birlikte getirdi. Yerli fast food zincirleri bu dönemde yabancıları taklit ettiler. Mudurnu Fried Chicken, Donerchi gibi yabancı isimler tescil edildi, pomfrit menülerin vazgeçilmezi oldu, spagetti, tagliatelle gibi makarnalar, cheesecake, tiramisu gibi tatlılar, espresso, cappuccino gibi kahveler menülere girdi.

2000’li yıllarda yerli konseptler yabancıları taklit etmeyi bıraktı, kendi kimlikleriyle rekabete başladılar. Mado, Edo Maraş usulü dondurmayla, Özsüt, Bolulu Hasan Usta, Tombak sütlü tatlılarla yaygınlaştılar. Edirne’nin yaprak ciğeri, İzmir’in kumrusu, Mersin’in Tan-

Fast Food emerged in 90s At 1970s and 1980s, products produced with simple equipments and presented in simple packages were sold in the streets of Turkey in which people were struggling with crises and per capita income was below 2000 dollars. Turkish bagels in the tray, lahmacun in the arm baskets, sandwiches in mobile cars, rice with chicken, pastries eaten at hand, meatball sandwiches cooked in Volkswagen minibüs and served, toasts, sausage constantly boiling in sauce were ordinary images. Foreign fast food chains becoming popular in 1990s changed profoundly the food culture of streets. Endustrial chicken producers increased and prices fell down. Stainless chicken equipments and modern and strong equipments became accessible even in buffets.

Foreign fast food chains improved suppliers in all fields. Many products and equipments including paper cups, refreshing towels, packaged sugars, sandwich bread, package paper, delivery box, disposable sauces, delivery bags, motor baggage, printed foil, neon plates and mobile POS devices are found everywhere at low cost.

Local firms firstly imitated and then got ahead During this transformation process, traditional dishes including kebab, meatball, lahmacun, rice remained weak against the foreign-origion products such hamburger and pizza. Firstly, consumers rushed to the world brands. When McDonald’s was opened in Taksim, it broke the world record in turnover. In Pizza Hut Taksim, hostess waited at the door and customers lined up at the door. In Whimpy Kütahya, customers sat on the table and waiter brought the product with invoice. Local fast food chains imitated the foreign brands in this period. Foreign names such as Mudurnu Fried Chicken and Donerchi were patented and pomfrit became an indispensable part of menus.

Pastas like spagetti, tagliatelle, deserts like cheesecake and tiramisu and coffees like espresso and cappuccino were included in menus.

In 2000s, local concepts quitted imitating the foreign brands, started to compete with their own identities. Mado, Özsüt and Tombak became popular with traditional tastes. Local and traditional dishes from many cities including İzmir, Antep, Mersin, İstanbul became the

tunisi, Akhisar’ın köftesi, Bursa’nın İskender’i, Antep’in lahmacunu, Urfa’nın çiğ köftesi, Samsun’un pidesi, İstanbul’un simidi gibi ürünler birçok zincir restoranın temelini oluşturdu. Ortaklar’ın çöp şişi, Erzurum’un cağ kebabı, Akçakoca’nın ızgara köftesi gibi ürünler henüz zincirleşmedi ama eninde sonunda işini bilen bir girişimci çıkacak, bu değerleri kullanacak. Yerli konseptler başlarda geleneksel tarzlarında ısrarcı olsalar da, sonuçta müşteri istekleri ve rekabet doğrultusunda yerli zincirlerde modern bir tarz gelişti. Büyümenin ve yurt dışına açılmanın temelinde de bu dönüşüm yatıyor.

Döner üstün bir üründür Restoranlar modern bir tarz geliştirirken, büfelerin böyle bir imkanı yoktu. Döner değişim sürecinde büfelerin kurtarıcısı oldu. Başka hiçbir üründe olmayan, vitrine çıkarılan dik duruşu, ateşli görünüşü diğer güzel ciro getirdi. Sade anavatanında değil, başta Avrupa olmak üzere tüm dünyada döner bu güce sahip olduğunu gösterdi. Almanya’da hamburger, sosis gibi klasik ürünleri geçerek en çok tercih edilen fast food ürünü oldu. Bir anlamda 19. Yüzyılın ikinci yarısında Bursa’da icat edilen döneri, gastronomi 20. Yüzyılın sonunda keşfetti diyebiliriz. Döner gerek Türkiye’de, gerekse dünyada bundan sonra çok hızlı gelişecek. Döner Avrupa’da gyros, Amerika’da gyro, Rusya’da shawarma adıyla satılıyor. Avrupa’da küçük atölyelerde üretilen dönerin büfelere dağıtılması işi halen Türk girişimcilerin elinde büyüyor. Ama kısa süre içinde Türkiye’deki veya Avrupa’daki Türk girişimciler döneri Amerikan işletme ve sunum teknikleriyle zincirleştirmezse, Amerikan girişimciler hamburgeri, pizzayı, tacoyu alıp kullandıkları gibi, döneri de alıp dünya pazarına hakim olacaklar.

Döner ucuzlamak zorunda Döner klasik olarak dana etinden, yaprak ve kıyma karışımıyla yapılıyor. Ankara’lılar sırf yaprak etten, Karadenizliler kuzu etinden, Afyon’lular sucuktan, Bodrum’lular sebze ekleyerek yapıyor.

Even though new concepts insisted on traditional tastes at the beginning, at the end, a modern style was adopted in the local chains in line with customer demands and competition. This transformation lies at the heart of growing and opening to abroad.

Doner is a superior product While restaurants were developing a modern style, buffets did not have such an opportunity. Doner saved the buffets in the period of transformation. Its appealing appearance in the window brought a considerable income. It also proved its strength throughout the world and in Europe in particular beside to its home country. In Germany, it passed such dishes as hamburger and sausage and became the most popular fast food product.

To some extent, we can say that gastronomy discovered doner, which was invented in Bursa at the second half of 19th century, only at the 20th century. However, it will grow rapidly both in Turkey and in the world from now on. It is sold as gyros in Europe, as gyro in the America and as shawarma in Russia. In Europe, doner produced in small ateliers are still distributed by Turkish enterpreneurs to buffets. However, if Turkish enterpreneurs in Turkey and Europe do not enrich doner with American style business and presentation techniques, American enterpreneurs will take doner to the world market as they use hamburger, pizza and taco.

Doner has to cheapen Classically, doner is made out of veal and minced meat. But, in different regions, it can be cooked differently. For example, residents of Bodrum add vegetables to doner or people live in Black Sea cook it out of lamb and residents of Afyon cook with fermented sausage.

In Germany, it is cooked in pita with green salad. Each region has a different taste but doner cooked with quality meat and served with hot pita and lavash appeals to the taste of everbody.

Seri üretim tekniklerini kullanarak İskender’in fiyatını 10 TL’nin altına indiren HD, Baydöner müthiş cirolar sağlıyor, yüzlerce şube açıyor. İskender Efendi’nin torunu geleneksel usulde hazırladığı ürüne hak ettiği fiyatı isteyince dükkan kapatıyor.

The only problem of doner in Turkey is that meat is expensive.

When the porsion of product is expensive, its consumption does not become popular. Such restaurants as HD and Baydöner which reduce the price of İskender to 10 TLs thanks to serial production makes great turnovers and open hundreds of branches but when the grandchildren of İskender Efendi request the normal price for their product prepared in traditional style, they close the restaurant.

Her ne kadar klasik tarifin dışına çıksa da, tavuk eti, dönerin bu eksiğini kapatacak gibi görünüyor. Tavuk göğüs etli döner düşük fiyatı ile büfelerde ucuzluğun sembolü oldu. Sebzeli tavuk döner giderek seviliyor ve yayılıyor. Tavuk kalça kıymadan yapılan İskender aslını aratmıyor. Tavuk but kullanan dönerci hızla yaygınlaşıyor. Eti marine ederek, taze lavaş veya pideye sararak, içine patates, salata koyarak, bir şekilde tavuk etinin tadını dönere uydurmak mümkün olmalı. Kırmızı etin fiyatı yapısal olarak pahalı kalmayı sürdürecek. Tavuk etini dönerde iyi kullanmayı beceren bu yarışı kazanacak, zincir marka olacak. Ucuzluğun para kazandırdığı ortamda kalitesiz ürünlerin ortamı bozmaması için devletin ciddi kontroller yapması gerekiyor. Halk sağlığının korunması için salam sosiste uygulanan denetimin dönerde de uygulanması şart. Döner Türkiye’yi dünyada temsil eden önemli bir marka olduğu için, ülkemizde ne olduğu belirsiz şeylerin döner diye satılmasının önüne geçilmeli.

Vegetable chicken doner is becoming more and more popular. İskender made out of minced chicken is almost the same with actual İskender. Doner restaurants using chicken legs are spreading. There must be some ways to adapt the taste of chicken to doner. The price of red meat will remain high. Those who manage to use chicken in doner production will win this competition and establish restaurant chains. In an environment where cheapness brings money, the state should make constant controls. Inspections carried out for salami and fermented sausage should also be carried out for doner to protect the public health. As Doner is an important brand representing Turkey in the world, the sale of unknown and unreliable products as doner should be prevented in our country.

Türkiye’nin genç nüfus yapısına sahip olduğu dikkate alındığında, bu stratejik önem daha da değer kazanıyor. Sağlıklı beslenmenin temel taşlarından biri olan hayvansal protein ihtiyacını karşılamada, kanatlı eti, ekonomik olması nedeniyle de dikkate değer bir konuma sahip. Başka bir anlatımla, piliç eti “sağlığa yararlı” olduğu kadar; başka bazı protein kaynaklarına göre, “düşük maliyetli” de olduğu için, doğru beslenmede önemli ve stratejik bir besin kaynağı. Türkiye’nin genç nüfus yapısına sahip olduğu dikkate alındığında bu stratejik önem daha da değer kazanıyor. Tüm bu veriler üst üste konduğunda, Türkiye’de tavuk tüketimin artması gerektiği açıktır.

Chicken is “ good for health” and it is an important and strategic nutrient in the correct nutrition as it is cost effective in comparison to some other protein sources. Considering the young population of Turkey, this strategic importance becomes even more valuable. Poultry meat has a considerable role in meeting the animal protein need which is one of the main components of a healthy diet as it is cost-effective. In other words, chicken is an important and strategic nutrient in a correct diet since it is cost-effective in addition to being good for health. Sizi kısaca tanıyabilir miyiz?

Ben Zafer Kılıç, 1980 Kocaeli doğumluyum. Ticaret hayatım henüz 13 yaşındayken, sahibi olduğumuz Kılıç İnşaat Şirketinde başladı. Başarı sırrının azim, kararlılık, istikrar ve inançtan geçtiğine inanıyorum. Ortaklarım olan Yavuz Dinç ve Emin Engin Kızılgün ile birlikte 2009 yılında Kümes Mini Restoran San. Tic. Ltd. Şti’yi kurduk. Ortağımız Yavuz Bey’in uzun yıllardır edindiği restoran işletmeciliği deneyimi, sağlam adımlarla yürümemize imkan vermektedir.

My name is Zafer KILIÇ. I was born in 1980 in Kocaeli. My commercial life started at the age of 13 at our Kılıç Construction Company. I believe that success is brought by determination, stability and belief. In 2009, I established Kümes Mini Restaurant San.Tic. Ltd.Şti. with my partners Yavuz Dinç and Emin Engin Kızılgün.

Our adventure as Kümes in the domestic market started in 2009 with our participation in the fair “Be my dealer?”. Our aim was to take the dealership of a “national firm” in the food sector. Our experiences

and observations in the fair and considerably high royalty fees urged us to create our own brand in this sector in which we actually have a significant amount of experience. Thus, we created our brand which is the first and only firm in its concept to be opened with 100 % Turkish capital. We opened our first branch. Currently, we serve with 3 corporate and 5 franchise branches. As the family of Kümes, we are aware of the necessity to establish a strong infrastructure to obtain a strong position in the market. We conducted infrastructure studies at every field. We established a strong software and hardware network with which we can follow all operational and financial issues, purchasing processes, stock follow, sale transactions and all activities related to the cost and profitability. We obtained professional equipments to optimize taste and quality. All of our branches use the best machines of the world. After we took our R&D activities to a certain level, we put such issues as packaging, hygiene and decoration on our agenda. At the end of all these efforts, we became a leading and profiting company.

How many branches do you have right now and where?

We serve in 3 cities with 8 branches in total including Adapazarı, Pendik, İzmit, Gebze Mustafa Paşa, Çayırova, Dilovası, Darıca and Gebze Hacı Halil.

Kümes inspects the restaurants of its franchisees periodically with its professional team and constantly carries out improvement studies. Besides, we provide objective feedbacks from the viewpoint of customers with its hidden customer studies.

What is the average cost of an enterprise to be opened as your franchise?

Esablishment cost of an enterprise on a area of 100 square meter with the capacity of 35-40 clients is 100.000-120.000 USD. Why should enterpreneurs choose your firm?

Türkiye’de tavuk restoranları sayı olarak; döner, kebap, hamburger ve pizzadan sonra beşinci sırada bulunuyor. Son yapılan araştırmalar tavuk restoranlarının hızla üst sıralara çıkacağı yolunda veriler veriyor. Önümüzdeki dönem hedeflerinizle ilgili bilgi alabilir miyiz?

What should entrepreneurs do to be successful?

They should deal with their business in person, they should know their business very well and they should motivate their team members constantly with a hardworking mood. Thus, we encourage our franchisees to attach importance to the abovementioned factors to be successful.

Why should entreprenuers choose receiving franchise in this field?

The most important factor is the gap in the market. When you look at the market, there are 20 or 3 foreign firms and they mainly serve at certain central places as well as shopping centers. As a 100 % Turkish firm, we produce more delicious and Turkish food at the quality and service standards of the foreign firms and we prefer presenting these food to our people at more accessible places.

Another significant point is that chicken is healthier and more cost-effective than other products rich in protein. Fast-food sector caught attention as a market which was not affected by the global crisis. We witnessed an increase in the turnover and profit in the fast-food chains during financial crises. We all know that an investment made in food always returns.

Can you inform us about your innovations in this field?

The most important innovation we brought to this sector is our product concept.

1- We made Turkish doner, which has been known for years, a quality and standard product. We serve 100 % chicken in the sandwich bread produced specially for our firm with special sauces.

2- At the same time, we make our well-known food roast chicken at the best machines of the world.

3- There are also other fried and roasted products. Fried crispy chicken leg, wings and breast are also cooked at the best machines of the world and served.

Thus, we serve chicken meat to our customers at its most delicious form under this three categories.

What do you think about the future of your sector?

Foreign firms started to take part in the Turkish sector with great targets. Thus, we try hard to strengthen our position in the market with necessary studies and investments. Chicken restaurants rank fifth in Turkey in number following doner restaurants, kebab restaurants, hamburger and pizza restaurants. Latest researches show that it is probable for chicken restaurants to rise in this list.

Can you give information about your targets in the near future?

We will reach to 20 branches in 2012. By continuing expanding at this pace, we want to become a distinguished brand with our delicious products in the Turkish market, our service quality and standards, our personnel satisfied with the working conditions and our Franchisees satisfied with their business and profits.

Az önce belirttiğimiz 2 yıllık AR-GE sürecinden sonra, Tavuk Dünyası konseptinin lansmanını Ocak 2012 itibari ile gerçekleştirdik ve alışveriş merkezleri ile görüşmeye başladık. Yaptığımız çalışmalar sonucunda Şubat 2012 itibari franchise vermeye başladık.

Franchise sistemini ise markamızın gelişimi için en iyi yöntem olarak gördüğümüz için seçtik. Çünkü franchise sistemi işini geliştirmek ve yeni iş kurmak isteyen girişimcileri bir araya getiren ve markanın gelişmesini sağlayan ve her tarafın haklarını en iyi şekilde koruyan bir sistem.

Yatırımcı adaylarında aradığınız kriterler neler?

Tavuk Dünyası restoranı açmak isteyen yatırımcı adaylarında aradığımız en büyük kriter, franchise sistemini bilmesi ve özümsemesi, markamıza sahip çıkması ve markamızın büyümesine bizim kadar özen göstermesidir.

Denetlemeleri nasıl gerçekleştiriyorsunuz? Öncelikle franchise görüşmelerinden başlamak üzere yatırımcılarımıza sistemimizi ve beklentilerimizi çok iyi bir şekilde anlatıyoruz.

Böylelikle yatırımcılarımız, yatırımlarının başarılı olabilmesi için gerekli şartları ve kontrol sistemlerini çok iyi öğreniyorlar. Franchise sisteminin ve yatırımın başarılı olabilmesinin, sisteme tam olarak uymak olduğu bilincine varan yatırımcılarımız, öncelikle sistemin kontrol noktalarını çok iyi uyguluyorlar ve böylece bizim operasyon/ denetim bölümlerine çok fazla iş bırakmıyorlar. Bizde yaptığımız rutin ve gizli denetimler ile sistemi düzenli kontrol ediyoruz.

How many branches do you have and where do you servet to customers?

Yaylada Mall /Maltepe, Tepe Nautilus Mall / Kadıköy, Buyaka Mall /Ümraniye, Optimum Mall/Ankara, Perlavista Mall /Beylikdüzü, Otimum Mall /İzmir are the points where we serve. Our restaurants at Cevahir Mall/Şişli and Akbatı Mall /Esenyurt will also start to operate in a short time.

When did you start awarding franchise? Why did you choose the franchising system?

After the abovementioned R&D process lasting for 2 years, we launched the concept of Tavuk Dünyası in January 2012 and started to negotiate with shopping centers. As a result, we started to award franchise in February 2012. We chose the franchising system as we thought it as the best method for the development of our brand. The franchising system develops the business, gathers enterpreneurs wanting to establish a new business and ensures the development of the brand. It also protects the rights of all parties.

What are the criteria that you look for in the investor candidates?

The most important criterium that we look for in the investor candidates wanting to open a Tavuk Dünyası restaurant is that they should know and internalize the franchising system, adopt our brand and attach importance to the growth of our brand as much as us.

How do you inspect your franchises?

First of all, in the franchising meetings, we explain our system and expectations to our investors in detail. Thus, our investors learn the conditions and control systems necessary for their investments to be successful very well. Being aware of the fact that success of the franchise system and investment depends on a complete adherence to the system, our investors primarily implement the control points of the system properly and thus, our operation/inspection team does not have too muck work. We also control the system regularly with our routine and hidden inspections.

But, our most important inspection source is the feedbacks from our customers.

What is the average cost of a franchise to be opened under your firm?

The cost of a restaurant to be opened in a shopping center with the franchising system varies between 220 thousand TL and 300 thousand TL. Why do enterpreneurs choose your firm?

Günümüzde ekonomik koşullarında ki gelişme ve yeme içme sektöründeki değişim ve gelişmeler göz önünde bulundurulduğunda, sektörümüz gelecek vaat eden sektörler arasındadır. Ama burada anlatmak istediğim sadece sektörün gelişmesi değil, kişilerin aynı zamanda sağlıklı yiyeceklere yönelmesi ve sağlıklı yiyecekler tüketme isteğindeki bilinç ve gelişimdir. Bizde Tavuk Dünyası olarak sağlıklı ürünler sunduğumuz için, gelişmemizin daha hızlı olacağına inanmaktayız. Önümüzdeki dönem hedeflerinizle ilgili bilgi alabilir miyiz? What are the points that enterpreneurs should pay attention to be successful?

First of all, investors should know the franchising system very well and trust in the firm awarding the franchise. Thus, they can command their investment and know what should be done to be successful. One of the most important factors in the restaurant and service sectors is that the enterpreneur should control the investment and deal with it.

Why should enterpreneurs buy franchise in this field?

Food and restaurant services sector is a rapidly growing sector whose demand is increasing day by day. In this sector, enterpreneurs can assure the success of their investments with the franchises from successful firms without taking risk.

Can you mention of the innovations that you bring to this field?

Our sauce chicken products presented in our Tavuk Dünyası concept are marinated with our special sauces for at least 12 hours and stored at + 4 degree without shocking and delivered.

These products are cooked in pan in front of the customers once they place their offers and then served.

What do you think about the future of this field?

Considering the developments of recent economic conditions and the change and developments in the refreshments sector, our sector is among the promising sectors. What I want to emphasize here is not only the development of the sector. In addition, people will direct to healthier food products and they will develop a consciousness to consume healthy food products. And we, as Tavuk Dünyası, believe in that our growth will be more rapid since we present healthy products.

Can you inform us about your targets for the forthcoming period?

First of all, we improve ourselves everyday to present healthy and good products and services to our customers and attach a great importance to the R&D activities and the feedbacks that we receive from our clients. With this consciousness, we try hard to increase our service points and open new restaurants.

Our target for the first quarter of 2013 is 20 in terms of the number of restaurants. To this end, our efforts continue rapidly and constantly. Meanwhile, we want to extend our sincere thanks to our suppliers, investors and shopping center administrations for their supports.

How many branches do you have and where?

BBQ Chicken opened its first branch in February 2010 in Turkey. We became one of the most popular chicken brands by opening the branches of Taksim, Göktürk, Kozyatağı, Dikilitaş, Feneryolu and Maslak subsequently. It targets at growing in Turkey with strong steps.

When did you start awarding franchise? Why did you choose the franchising system?

We started to give franchise in May, 2012 and opened its first franchise out of İstanbul in Samsum LOVELET shopping center.

It is away from the fast food market but it still uses the same system.

BBQ Chicken has a unique chicken menü with dishes fried in olive oil and prepared with special sauces. It is unique in both Turkey and the world. Our products are marinated with special sauces and reached to the branches daily. No frozen meat product is used.

After the order is placed, they are fried in 100 % püre olive oil and served.

In BBQ Chicken, all kinds of chicken appealing to the taste of everybody are available: Original Luxury Chicken, Fried Drumsticks, Hot Fried Chicken, Chicken Schnitzel Cutlet, Golden Strips, Classico and BB Wings for those who love fried chicken, Teri-Q Gold Wings, Chilli Chicken, Lemon Chicken, Honey Garlic Chicken for those who love sauced chicken and Original Barbeque Chicken, Grilled Wings, Grilled Classico and BBQ Grilled Drumstick for those who love grilled chicken.

Why do investors choose your firm?

We see that chicken is consumed ever increasingly in our country and it seems that this increase will continue. Thus, we can say that we have just started as a chicken restaurant. With the popularity of package service from houses or workplaces due to urbanisation and workload, consumption has even more increased.

What are the criteria that you look for in the investors?

We think that franchise is a serious partnership. Our principle is “profit gains profit”. In an environment where our business partner earns, as the main firm, we also earn and we are aware of this fact.

What is the average cost of an enterprise to be opened within your firm with the franchising system?

We hold meetings with the candidate investors and try to understand and recognize each other in these meetings. We think that such a process is healthy and solid. Önümüzdeki dönem hedefleriniz nelerdir?

Planlarımız temkinli olarak büyümeyi sürdürme üstüne kurulmuştur. Bunun için tüm lojistik ve üretim süreçleri kendi bünyemizde yapılmaktadır. Kontrol edilebilir bir büyümenin sürekliliği sağladığını düşünüyoruz. Hedefimiz çok hızlı büyümek değil doğru şekilde büyümektir. Franchise sistemimizde tüm Türkiye’de operasyonu yürütebilir yapılanma mevcuttur. Bunu da Samsun operasyonu ile görebiliyoruz.

Health and taste are the most important factors for us in this business. We do not compensate the quality and taste.

Consistency with the standards is a must. We expect our partners to take care of the business. We want them to implement the plans delivered by the South Korea completely.

The given model includes important information to increase the profit and growth of the business.

What are your targets for the forthcoming period?

We essentially plan to continue our growth carefully. Thus, we carry out all logistics and production processes within our firm.

We think that a controllable growth maintains stability. We do not aim at growing rapidly but growing correctly. Our franchise system provides a structuring that can be implemented easily throughout Turkey. Samsun operation is a model of this fact.

Okulu açalı çok kısa bir zaman oldu. Bu nedenle hedeflerime ulaştığımı söyleyemem. Ancak işimin büyüme hızı bu konuda bana umut veriyor.

Eğer bu hızla kayıt almaya devam edersem bana belirtilen tarihten çok daha kısa bir süre içerisinde başa baş noktaya ulaşacağımı düşünüyorum. Tabi ki hedefler bitmez, ilk hedefimi önümüzdeki 2 ay içerisinde ulaşır ulaşmaz merkez ile bir araya gelip yeni hedefler belirleyeceğiz.

My name is Özge Erden. I graduated from International Relations.

After graduation, I worked in the banking finance sectors for 6 years.

Meanwhile, I received a postgraduate education on Executive MBA. Currently, I am running the franchise of ESLI English Academy.

When did you receive the Franchise of ESLI Academy?

We hired our place in February. After that, I started to deal with design, decoration and modifications in consistency with the standards of Esli Academy. We opened our school at the 1st week of May. Why did you choose a franchise in this field?

We always meet people of all age groups who need English education at almost every field. There is a large group that you can serve. What is important is to have products that will answer different needs. It is also important to satisfy people with your education quality and to have a place in their minds. Apart from being an investment whose return is immediate, I decided to take a franchise in this field due to the moral satisfaction of the education sector. I also take part in the sector willingly and with pleasure.

What were the criteria of the main firm?

An excellent command of English was the most important criterium. A undergraduate diploma and at least 2 years of experience were compulsory.

In addition, being an enterprising and reliable person with sufficient investment and business capital was one of the conditions of ESLI Academy. Standards of the education institution and consultancy offices are followed by ESLI Academy itself. Besides, foreign academic coordinators and educators are provided by ESLI Academy. This is an important point.

Why did you choose the franchising system?

I choose this system mainly due to the fact that I can receive support from the main firm in terms of know-how, academic coordination, national marketing and PR. As a person unfamiliar with the management of an English course, I am happy to engage in this business with such a support and I earn Money from now on.

Did you achieve your targets that you set at the beginning?

It has been a relatively short time since the opening of the school.

Thus, I can not say that I have achieved my targets. However, expanding pace of my business shows promise. If I continue enrolling new students at this pace, I believe that I will come to a good position in a shorter time than I expected. Of course, targets are endless. Karafırın requested the investor to undertake the business, protect the quality and the existing customer portfolio and keep the quality at the same level and to have a sufficient capital. The issues in which Karafırın supports us are decoration, store location, product promotion and personnel training.
