Por mi edad, he sido testigo en primera persona de una gran parte del crecimiento turístico de la Costa del Sol, además de que nací y me crié en Marbella.

Tras los últimos acontecimientos (atropello de varios viandantes y fuga de un vehículo de alta gama sembrando el pánico entre Puerto Banús y Marbella, por parte de dos turistas), ha salido a la palestra, la calidad del turismo que tenemos, ya que se considera que los visitantes que estamos recibiendo de un tiempo acá son de poca calidad, razón no les falta, no es raro ver a pleno día y en un enclave tan emblemático y distinguido como Puerto Banús, hordas de turistas descamisados y con un alto índice de alcohol en sangre, que es el mejor caldo de cultivo de grescas y alboroto.

Desde los medios y las redes sociales se ha culpado de esta situación a un sin fin de colectivos, políticos, fuerzas del orden, comerciantes, etc. Y aquí es donde viene mi reflexión. ¿Cómo pasa un destino de calidad a no serlo? Creo que para apostar por un destino sólido y que se consolide como de calidad, todos y cada uno de los que estamos de una manera u otra, involucrados en esta industria, deberíamos meternos la mano en el pecho y pensar que podríamos haberlo hecho mejor para no llegar a esta situación.

En mi opinión se ha creado en la Costa del Sol, una infraestructura muy potente y con muchos servicios para una población, tan voluble, que se puede triplicar en ciertas épocas del año. Si a esto le unimos la crisis que hemos sufrido en los últimos años, mi pregunta es, ¿cómo se sostiene todo este tinglado cuando no hay visitantes?

Aquí hay dos alternativas, o mantenerse firmes como William Wallace (Bravehart) y aguantar el chaparrón sin perder un ápice de calidad o bien abaratar costes y servicios y por tanto devaluar el producto.

Cuando la situación se hizo complicada por culpa de la crisis algunos establecimientos optaron por seguir adelante a cualquier precio, nunca mejor dicho, e intentaron captar los máximos clientes aunque pagaran poco, primaba la supervivencia. El turismo de despedidas de soltero/as por ejemplo, ya son parte del paisaje (mucho volumen pero poco ingreso), en vez de ir a buscar al turista de calidad, como por ejemplo el golfista que tarda más en llegar pero es más fiel y de mayor poder adquisitivo.

Es comprensible que cuando la situación es crítica se tomen medidas desesperadas, pero cuando la situación mejora hay que apechugar con ello, que ya está bien de culpar siempre al empedrado…

Gonzalo Gross Gonzalo Gross se formó en la dirección de campos de golf, actividad que desarrolló en diferentes campos de golf de La Costa del Sol durante 5 años. Después de este periodo Gonzalo dirige actualmente Gross Dentistas, la clínica dental que fundó su padre, el Dr. José Luis Gross Alesanco, hace 45 años en Málaga.

La filosofía de Gross Dentistas, más allá de la preocupación por la salud dental, siempre ha estado pegada a la responsabilidad social, la solidaridad y el apoyo al deporte, muy especialmente al golf. En esta entrevista Gonzalo Gross, nos cuenta la gran relación de la clínica y de su familia con el golf.

——— Háblanos un poco de la historia de Gross Dentistas Mi padre fundó Gross Dentistas en Málaga hace 45 años. Hace 13 años se unió a la clínica mi hermano mayor, seguido de mi hermana hace 8 años y yo hace 5. Es una clínica muy personal y extremadamente familiar en la que trabajamos todas las especialidades de la Odontología. Mi padre y fundador, el Dr. Jose Luis Gross Alesanco es odontólogo especialista en restauración dental, mi hermano Jose Luis Gross de Bethencourt es el especialista en implantología y técnica All-on-4 y mi hermana la Dra. Concha Gross es odontóloga especializada en ortodoncia invisible. Además contamos con un formidable equipo humano que constituye el alma de la clínica, en la que se trabaja día a día para que nuestros pacientes sonrían por dentro y por fuera. ¿Cómo le presentarías, Gross Dentistas y su filosofía a alguien que no os conozca?

En Gross Dentistas trabajamos en familia y queremos hacer sentir a nuestros pacientes parte de ella. Más allá de nuestra preocupación por la salud dental, queremos que los más desfavorecidos tengan acceso a ella y los atendemos desinteresadamente a través de las diversas ONG con las que colaboramos; Los Ángeles Malagueños de la Noche, que cada semana nos traen una persona sin recursos; o con La Sonrisa de un Niño, a través de la cual llegan cada verano a Málaga 20 familias a las cuales atendemos sin coste adicional. También nos gusta participar, siempre que tenemos ocasión, en numerosas causas solidarias, porque es otra manera de hacer sonreír a quien más lo necesita. Así hemos aportado nuestro granito de arena en forma de donación económica a la Casa Ronald McDonald de Málaga, Verberrett, la James Milner Foundation, Justalegria, etc.

Por otra parte, también amamos el deporte y el espíritu de superación, razón por la que apoyamos distintas disciplinas: fútbol base, pádel, golf… Aportamos material deportivo, patrocinamos diversas actividades en este ámbito y regalamos entradas para cada partido del Club de Baloncesto Unicaja.

Los Gross tenéis una amplia trayectoria como deportistas, ¿cómo se integra esa filosofía en vuestro modelo empresarial?

Pues como te decía somos muy deportistas, sobre todo el golf que ha sido el de-

porte familiar. Mis inicios los recuerdo, recogiéndome mi padre de la guardería, con 3 ó 4 años, para dar clases a mediodía en El Candado. De los 5 hermanos, 3 de ellos han llegado a Hcp 0 siendo, mi hermano Jose Luis, nuestro implantólogo, el único que dio el salto a profesional.

Ahora, mi padre y hermano son los que más se escapan al mediodía a pegar unas bolas o jugar unos hoyitos mientras que los 2 hermanos pequeños nos quedamos al frente de la nave.

El golf es un deporte que creo que vincula a toda la familia, ¿cómo crees que ayuda esto en las relaciones familiares y al entorno laboral?

La verdad es que nos llevamos muy bien y nos encanta cuando mi hermano Jose Luis, el profesional de golf, nos avisa con tiempo para que cerremos agendas para formar parte de su equipo para algún Pro Am. ¿Tenéis muchos pacientes golfistas?

Cientos de ellos, mi padre lleva toda la vida jugando al golf en Málaga y es un deporte en el que te relacionas mucho con tus compañeros de partida. A raíz de esto, compramos todos los años un abono corporativo que nos da la posibilidad durante todo el año de reservar una salida para 4 jugadores con Buggy incluido en el increíble Chaparral Golf. Esto hace que nuestros pacientes sigan enganchados a nosotros ya que de vez en cuando se dan el lujo de jugar en este campazo por cortesía de sus dentistas. ¿Cómo ves el futuro de este deporte con el ritmo de vida que llevamos actualmente y cuales crees que pueden ser las soluciones?

Bonita pregunta. Yo creo que el golf es un deporte fantástico pues te saca de casa o de la oficina y te hace desconectar y sentirte libre. Creo que, si se tiene oportunidad, lo ideal es practicarlo en familia, salvando el caso de mi madre que nunca toco un palo.

———— Tell us something about the history of Gross Dental Care.

My father founded Gross Dental Care in Málaga 45 years ago. 13 years ago my oldest brother joined the clinic, my sister followed 8 years ago and so did I 5 years ago. It is a very personal and extremely familiar clinic where all specialties of dentistry are treated. My father and founder, Dr. José Luis Gross Alesanco is a dentist specialized in dental restoration; my brother Jose Luis Gross de Bethencourt is a specialist in dental implantology and All-on-4 technique and my sister Dr. Concha Gross is a dentist specialized in invisible orthodontic treatments. Besides, we have an excellent team that is the heart and soul of the clinic; they work daily so that our patients can smile inside and out.

Gonzalo Gross worked in golf course management and he developed his career in different golf courses on the Costa del Sol for five years.

After this period, Gonzalo is currently running Gross Dental Care, the dental clinic founded by his father, Dr. José Luis Gross Alesanco, 45 years ago in Málaga.

The working philosophy of Gross Dental Care goes further than just being concerned about your dental health; it has always been related to social responsibility, solidarity and sport support, especially golf. In this interview Gonzalo Gross tells us about the relationship between this clinic, his family and golf.

How would you introduce, Gross Dental Care and their working philosophy to those you do not know you?

At Gross Dental Care we work with our family and we want our patients to feel part of it. Apart from our concern for dental care, we want to provide this service to underprivileged people so we do so in different NGOs that we work for altruistically such as “The Night Angels of Málaga” that every week brings a person to the clinic without means or “A Child’s Smile” through which 20 families come every summer to be treated with no additional cost.

We also like to take part in different charity programs whenever we can as it is a way of helping those in need. Thus, we have contributed with funding to projects like Ronald McDonald House in Málaga, Verberrett, the James Milner foundation, Justalegría, etc.

On the other hand, we also love sport and self-improvement so we support different sports: base football, paddle tennis, golf… We provide sport equipment, we sponsor different activities and we give free entrances to see matches of Unicaja Basketball Club.

The Gross family has a long career as sport players, how do you integrate this work philosophy in your business project?

Well, as I told you we are very athletic and golf has always been the family’s sport. I remember my father collecting me from nursery school when I was 3 or 4 and taking me to afternoon lessons in

El Candado. Out of my 5 brothers and sisters, 3 of them have been Hcp 0 and my brother José Luis, our implantologist, is the only one who has become a professional player.

Now, my father and my brother slip away to enjoy a few shots and play while my two small brothers stay in charge of the business.

I think golf is the sport that binds all the family together, how do you think it helps the family relationships and the working environment?

The truth is that we get on very well and we are delighted to be part of a team whenever our brother José Luis, asks us to set a date to play a Pro Am. Do you have any golf players as patients?

Hundreds of them, my father has been playing golf in Málaga all his life and this is a sport where you develop relationships.

As a result, every year we buy a corporative pass holder that enables us to book an outing for 4 players Buggy included in the incredible golf course El Chaparral. This helps our patients to continue with us as from time to time they can treat themselves to a game of golf in this great golf course paid by their dentists.

How do you see the future of this sport considering our lifestyle at present and how do you think this can be solved?

Good question. I think golf is a fantastic sport to take you out of your house or office and get away and feel free. I think you should play it with you family if you get the chance; except in the case of my mother, who has never taken a club. ✪

THE SA N R O Q U E C LU B Lidia Muñoz es Directora de Marketing de The San Roque Club. Lleva trabajando en el sector turístico desde hace 15 años, comenzando su carrera en el sector hotelero y acabando en el del golf. En esta entrevista nos habla de su trayectoria profesional, de su visión del marketing y la promoción de los campos de golf y de los planes de futuro para The San Roque Club.

———— Háblanos un poco de tu formación y de tu trayectoria Estudié Turismo en la Universidad de Málaga y una vez finalizados mis estudios comencé a trabajar en el departamento de Reservas del Hotel Coral Beach en Puerto Banús (Cadena Occidental Hoteles). Al ser un hotel que cerraba en invierno aprovechaba para perfeccionar el inglés, por lo que me fui a Londres para 3 meses pero me quede 3 años. Fue en aquellos años en Reino Unido cuando me di cuenta de la importancia que para ellos tenía la formación de los empleados. Toda mi experiencia laboral se ha desarrollado en resorts de 5 estrellas como la Cala Resort, Rio Real Golf, Fairplay Golf & Spa Resort y Villaitana Golf. Creo que esto me ha hecho crecer a nivel profesional en las diferentes maneras de trabajar en cada lugar.

La formación es muy importante, pero ¿crees que las empresas valoran a día de hoy que sus empleados pidan formación?

Sinceramente creo lo valoran a la hora de contratar, todas las empresas quieren al mejor. Sin embargo creo que todavía nos falta la cultura de ver que la formación de un empleado es una inversión y no un gasto. Yo tengo suerte ya que la propiedad en San Roque Club me ha apoyado desde el primer momento en todo lo que he querido hacer.

La formación también depende un poco de las inquietudes de cada empleado. En mi caso siempre he compaginado bastante bien mi trabajo con los estudios debido a mi forma de ser. Soy una persona muy curiosa y me gusta aprender y mejorar tanto a nivel personal como profesional, es fundamental para poder mantenerme dentro del mercado que avanza de una manera muy rápida.

En estos momentos soy socia de Club Manager Association of Europe. He realizado ya 3 cursos y he obtenido el Diploma CMDI (CMAE) pero aún me queda un curso más para poder presentarme y obtener el título Americano CCM. En resumen

mucho sacrificio personal pero merece la pena.

El mundo comercial tuvo que re-inventarse a raíz de la crisis con nuevos canales de comercialización, ¿cómo crees que afectó esta circunstancia al marketing y la promoción en el sector turístico?

Pues imagínate la entrada de repente, en el 2009, de Facebook, twitter, LinkdIn. Al prinicipio invertía mucho tiempo como usuario por falta de conocimiento, pero hoy en día es una herramienta más en nuestro día a día.

Aunque en los campos de golf la figura de un Community Manager no está presente como en los hoteles, si es cierto, que des-

de hace varios años ya existen empresas que ofrecen ese servicio, por lo que coordinarlo con todo el trabajo que lleva la comercialización es más fácil. Aún así, creo que mis compañeros del sector coincidirán en que hemos tenido que re inventarnos nosotros también. La actitud y la mentalidad a la hora de vender hoy, no es la misma que hace 7 años. Los que nos dedicamos a esto tenemos que estar en un contiguo y constante aprendizaje para poder estar a la altura del mercado que varía la

tendencia cada 6 meses. ¿Prefieres la Tour operación o Marketing online?

En estos momentos ambos son indispensables y no se puede prescindir de ninguno de los dos. Sí que es cierto que el marketing online es cada vez más fuerte, las nuevas generaciones lo hacen todo a través del móvil.

En San Roque Club la tour operación es muy activa los meses de temporada alta pero en temporada baja juego con los torneos privados que me aseguran un numero cerrado de jugadores. Con el yield managment, he creado una estructura de precios por porcentaje y franjas horarias, por

lo que tenemos el mismo precio durante toda la semana, sin distinción de fines de semana. Esto ha hecho que la producción sea más lineal. ¿Cómo se está preparando San Roque Club para implementar las nuevas tecnologías?

En Andalucía somos el primer club en instalar el Yield Managment de Imaster golf online. Tal y como te he comentado es fundamental para nosotros poder estar a la al-

tura de las exigencias del mercado en un club con tanto prestigio como San Roque; Aparte ya estamos gestionado todo para que en un par de meses finalice la instalación de los torneos online. Ofreceremos este servicio tanto a los torneos privados y cerrados que realizamos en el club como a los torneos públicos, en los cuales el jugador se apuntará a través de la web y realizará el pago del mismo. El jugador solamente tendrá que recoger su welcome pack y su tarjeta de recorrido evitando colas. ¿Cuáles son tus planes de promoción de cara al futuro?

Tenemos que aprovechar las nuevas opor-

tunidades que nos ofrece el mercado con destinos como Turquía y Marruecos. De cara al 2018, podemos decir que estamos de suerte, puesto que Portugal ha aumentado sus precios y eso creo que nos beneficiará. Los Tour operadores no están contentos con esa subida por lo que ya están mirando hacia otros destinos entre ellos La Costa del Sol. Si sabemos aprovechar esta oportunidad podremos afianzar aún más el destino de La Costa del sol.

do nuestros mercados más fieles y contratando ya para el 2018 con otros destinos con los que nunca se había comercializado. Nos espera un año de mucho trabajo, debemos simplificar y segmentar, no es necesario asistir a todas las ferias, workshops o torneos, solamente a los más relevantes para nuestro producto.

Dos campos con características muy diferentes, The San Roque Club, tiene socios y también es “pay and play”, ¿cómo se compagina la comercialización?

Son dos campos muy diferentes a la hora de comercializar. El campo Old realmente no necesita comercialización, es un campo muy conocido en España y fuera de ella y nuestros socios tienen el mayor número de salidas, dejando para el visitante dos horas al día para poder disfrutar del campo.

El campo New, es un campo comercial que realmente no se ha dado a conocer, muchas personas no sabían que The San Roque Club lo forman dos campos. Me parece que la mejor manera de comercializarse es a través de la tour operación pero sobre todo haciendo torneos privados. Esto afianza clientes locales y de ambas provincias (Málaga y Cádiz) y gracias a los torneos y al “boca a boca” estamos logrando que se conozca. El campo New es un campo más técnico de diseño americano con bastante bunkers, muy divertido para aquellos jugadores de hándicap bajo. Le recomiendo a todo el mundo que venga a conocerlo.

Eres consciente de que eres una de las pocas mujeres que ostentan un cargo decisivo en un campo de golf, ¿cómo lo llevas y cómo ves el papel de la mujer en un mundo de hombres como es el golf?

Te acostumbras realmente, pero las mujeres en el sector del golf no lo tenemos fácil. No hay que irse muy lejos, en el 2012, pleno siglo XXI, Augusta permitió que las mujeres se hicieran socias del club. Todavía existen torneos en los que los hombres no quieren jugar con las mujeres y si son poquitas (8 ó 12) el organizador te dice: ponlas por hándicap en las últimas partidas entre ellas. Ver esto aún es una pena.

Es una pena que no se valore a la mujer en este sector. Existen cada día más mujeres bien preparadas y formadas a las que respeto y admiro. Espero algún día ver una Presidenta en la Federación Andaluza de Golf, estoy convencidísima que también lo haría muy bien!

Lidia MuĂąoz is the Marking Manager of San Roque Club. She has been working in the tourism industry for 15 years; she started her professional career in the hotel industry and she is currently working in the field of golf. In this interview she tells us about her professional career, her views of marketing, the promotion of golf courses and the future plans for The San Roque Club.

———— Tell us something about your education and your professional career.

I studied Tourism at the University of Malaga and after I finished my degree I started working in the Reservations Department at the Coral Beach Hotel in Puerto Banús (Occidental Hotels Chain). As this hotel closed in winter, I used the time to improve my English. I went to London for three months but I ended up staying three years. It was then when I was in the United Kingdom that I saw how important staff training is in that country. My entire professional career has taken place in five star resorts like la Cala Resort, Rio Real Golf, Fairplay Golf & Spa Resort and Villaitana Golf. All this experience has helped me grow professionally as I have learnt different ways of working in different places.

Training is very important but do you think companies appreciate that workers demand training nowadays?

I honestly think that they value this when it comes to hiring people. Companies want to hire the best. However, I think we still have a long way to go in order to consider training as an investment and not as an expense.

I have been very lucky that San Roque Club has supported me from the beginning in everything I have intended to do.

Training also depends on the inquisitiveness of each employee. In my case I have always balanced my work and my studies as part of my personality. I am a very inquisitive person and I like learning and improving both professionally and personally. It is vital to position yourself in a market that is changing very fast.

Currently, I am a member of the Club Manager Association of Europe. I have been studying for three years and I have obtained the CMDI Diploma (CMAE) but I still have one more year of studies to be able to sit the exam and get the American Diploma CCM. To sum up, it is a personal sacrifice but it is worth it.

The marketing field had to re-invent itself after the economic crisis and open new commercialization channels. How do you think this affected marketing and promotion in the tourism industry?

Well, you can imagine the impact of Facebook, Twitter and LinkedIn when they first appeared all of a sudden in 2009. At the beginning, since I did not know much about it I used to spend a lot of time on these social network sites as a user but now it is just another tool in our everyday life.

Regarding 2018, we must say that we have been very fortunate as Portugal has raised its prices and this will benefit us. Tour operators are not happy with this price raise so they are considering other destinations such as the Costa del Sol. Although the figure of Community Manager in golf courses is not as common as in hotels, there are already companies that offer this service and coordinating this with the commercialization is much easier. Even so, I think my colleges in this field would agree with me that we have also had to reinvent ourselves.

The attitude and philosophy for selling nowadays is not the same as seven years ago. In this field we have to be constantly learning new things in order to be up to a market that changes its tendency every six months.

Do you prefer Tour operation or Marketing online?

Right now, they are both essential and you cannot manage with just one.

Undoubtedly, marketing online is growing more and more, new generations use their mobile phones to do everything.

At San Roque Club tour operation is very active during the high season. However, during the low season private tournaments provide a set number of players.

Yield management has created a price structure considering percentages and time slots, so we have the same price all week without changes at the weekend.

This has provided a more linear production.

How is San Roque Club preparing itself to implement new technology in the company?

In Andalucía we are the first club to have Yield Management of Imaster golf online.

As I mentioned before, it is very important to be up to the market requirements in such an important club. In the next few 18 | GC#23

months we are just about to finish implementing online tournaments. We will offer this service to both private tournaments set and carried out at the club as well as to public tournaments where the player can register and pay on the web.

The player will only have to collect a welcome pack and the itinerary card without having to queue.

What are your promotion plans for the future?

We have to benefit from the new opportunities that the market offers with destinations such as Turkey and Morocco.

Regarding 2018, we must say that we have been very fortunate as Portugal has raised its prices and this will benefit us.

Tour operators are not happy with this price raise so they are considering other destinations such as the Costa del Sol. If we take advantage of this opportunity we will be able to strengthen even more the Costa del Sol as a tourist destination.

At the San Roque Club we are taking care of our most loyal markets and in 2018 we are already hiring new destinations that we have not commercialized before. We have a lot of work next year, we have to simplify and diversify; we do not have to attend all the trade fairs, workshops and tournaments, just the most relevant ones for our product.

There are two golf courses which are very different. The San Roque Club has members and it is also “pay and play”. How do you combine commercialization?

They are two different golf courses to commercialize. The Old Course does not need commercialization. It is well-known in Spain and abroad. Our members have the highest number of exits and there are only two hours a day available for visitors to enjoy the course.

The New Course is a golf course unknown to most people. They do not know that there are two golf courses at the San Roque Club. I think the best way to commercialize it is with tour operation and private tournaments. This consolidates local customers from both provinces (Malaga and Cádiz) and thanks to tournaments and by word of mouth we are beginning to be known. The New Course is a more technical course. It is American design with many bunkers and it is good fun for low handicap players. I recommend players to come and see it.

Are you aware of the fact that you are one of the few women who have an important position in a golf course?

How do you feel about it? How do you see women’s role in a man’s world like golf?

You get used to it but being a woman in the golf industry is not an easy task. Not long ago, in 2012, in the 21st Century, Augusta allowed women to become club members. There are still tournaments where men do not want to play with women and if there are only a few (8 or 12), the organizer says: “organize them according to handicap and let them play the last games amongst themselves”. This is such a shame!

It is a pity that women are not valued in this industry. Each day there are more qualified and trained women that I respect and admire. I hope one day there is a Woman President of the Golf Federation of Andalusia; I am truly convinced she would do it exceptionally well! ✪

SERGIO GARCÍA El viejo dicho de que un Major no comienza hasta los últimos nueve hoyos, nunca fue más evidente que en los últimos Masters de Augusta. Los aficionados vieron cómo por fin, Sergio García se deshacía de esa serie interminable de desilusiones por haber estado muy cerca del éxito y ganaba su primer grande, el Master de Augusta. Ahora, la pregunta es si Augusta ha sido sólo un momento dulce del castellonense que con el tiempo se convertirá en un logro más de una carrera notable, o algo más profundo que hará de él un jugador que pasará a los anales de la historia del golf como uno de los más grandes. Si es esta última, García cumplirá con el destino que parecía claro desde su primer Masters en el año 1999, ser el heredero de la dinastía de Seve y de Olazábal.

Al Club de Campo del Mediterráneo, su club de toda la vida, Sergio García, llegaba como flamante ganador del Masters de Augusta para comparecer ante los medios.

Estamos a buen nivel.

Nunca se sabe lo que va a ocurrir pero tengo confianza en seguir haciendo cosas buenas; me veo con capacidad para seguir mejorando.

Todo el mundo sabe lo que mucho significa para mí el Open Británico y me gustaría ganarlo.

Sí, me siento con posibilidades de ganar más de un Grande.

———— ¿Cuáles han sido sus sensaciones desde el torneo?

Fue muy bonito. Este recibimiento en mi club es increíble. Esta chaqueta verde es un poquito de todos, del club, de los socios, de mi familia y mi equipo, y de toda la gente que me conoce. Ha sido muy bonito y hay que disfrutarlo porque esto es un poco de todos.

Fueron tres días muy intensos.

¿Compartirá taquilla en el vestuario de campeones de Augusta con José Mari Olazábal?

Esperemos que sí, que nos pongan juntos, pero no lo sabré hasta que llegue allí el año que viene.

¿Qué es lo que más valora de este éxito?

Me vienen muchas cosas y muchas personas a la mente. Mi familia, mi novia, la familia…, todos los que me han estado apoyando estos años. Me siento muy orgulloso de haber hecho realidad un sueño, ¡y encima en Augusta que lo hace aún más bonito! Es un premio al trabajo, a la consistencia, a la perseverancia y a no dejar de creer. Siempre he creído que llegaría a conseguirlo. Cuando gané me vinieron tantos flashes y tan seguidos en tan poco tiempo; sentí euforia, rabia, alegría, emoción… Lo celebré como lo sentí.

¿Cómo fue la noche de la victoria?

Suponemos que movidita Algo dormimos, pero no mucho. Había mucho que hacer en el campo. Acabamos de jugar a las siete y hasta las once y media no nos fuimos del Augusta National, entre ceremonias, entrevistas, la cena con los socios… Al llegar a la casa que teníamos alquilada tuvimos una pequeña fiestecilla con la prensa española. No nos fuimos a dormir hasta las 4 ó las 5. Fue una noche bonita y muy intensa. Tampoco dormimos mucho en Nueva York, tuve que hacer muchas entrevistas desde muy temprano.

¿Qué ha cambiado desde 2012, cuando dijo que no era lo suficientemente bueno para ganar un Grande?

Sinceramente, no muchas cosas. La semana del Masters ya comenté que estaba trabajando en aceptar las cosas, en ser más paciente, en cómo tomar los momentos buenos y malos de la mejor manera. Lo de 2012 me cogió en un momento complicado, un sábado que salía con posibilidades, no jugué bien, no era la primera vez, me frustré y luego… ya sabéis que yo suelo decir lo que siento. Pero aquello fue sólo un momento de gran frustración,

porque después, en el siguiente torneo, fui con todas las de la ley. Tras aquel Masters he hecho muchas cosas buenas, he ganado torneos. ¿Cree que esta victoria en Augusta ayudará al desarrollo del golf en España?

Si esto no ayuda, no sé qué hay que hacer. Sabemos que el golf en España es, entre otras cosas, un gran reclamo de turismo y hay que seguir luchando porque cada vez hay más competencia de otros países. Ojalá que los políticos ayuden y la Federación ayude también. ¿Qué piensa de que este año no haya Open de España?

Es desafortunado que este año no se juegue. Nosotros seguimos apoyando y lo vamos a hacer con el Andalucía Valderrama Masters. Pero no es una pregunta para mí, es para la Federación, que es la propietaria del Open de España. ¿Cuál cree que fue el momento clave para su victoria en el Masters?

Para mí fue importante no volverme loco en el hoyo 12 y querer ser más agresivo de lo que tocaba, porque si me vuelvo loco y me voy al agua, ahí sí que se acababa el torneo. Después, en el 13, los dos hicimos

par, pero tal y como se dio el hoyo y los problemas que tuve, creo que más bien yo hice medio birdie y Justin medio bogey. Yo sabía que me quedaban hoyos para hacer cosas buenas y dar buenos golpes. Creo que en ese momento Justin Rose también vio que no me escapaba. ¿Cuál es su relación con Justin Rose?

Somos muy buenos amigos, hemos pasado mucho tiempo juntos y compartido buenos y malos momentos. Jugar juntos, probablemente nos ayudó a los dos.

Fuimos celebrando los buenos golpes; él me dio con el putter en el 15, luego yo le di una palmadita en la espalda. Si hubiésemos jugado a cara de perro me habría sentido mal, prefiero ser como soy y actuar como actúo. Lo bonito es ganar jugando un poco mejor que el otro. Cuando gané me dijo: “si hay alguien que merecía esta victoria ese eras tú”. Si no te llevases bien con tus compañeros, no te dirían eso. ¿Se están cumpliendo sus sueños de cuando era niño?

Cuando era pequeño a lo mejor estaba en el putting-green y sí que pensaba a ver si gano esto, lo otro, o que tenía un putt para ganar el British, el Masters… Son sueños de chavalines. Pero luego las cosas se dan como se dan, nada es fácil, todo el mundo

practica duro y nadie te regala nada. No todos pueden ganar. Ya dije en su día que estaba muy orgulloso de mi carrera por la consistencia: he estado 19 temporadas entre los quince o veinte primeros del mundo. Este dato a veces se mira un poco por encima, quizá no se valora, pero yo siempre lo valoré antes de ganar el Masters, y sé que los profesionales de golf lo valoraban también.

Hizo usted el saque de honor en el clásico y conocida es su afición al fútbol, ¿qué sintió?

Fue un partido bonito. Los dos equipos estaban algo tocados por la Champions. La ovación que me dieron fue lo que más me gustó, me emocioné. Me he llevado muchas y buenas ovaciones en muchos torneos, en la Ryder Cup, en el British, en Augusta, pero entrar a un estadio como el Bernabéu y que 90.000 personas coreen tu nombre… Se me pusieron los pelos de punta. Fue muy emocionante. Le doy mil gracias al Real Madrid por darme esa oportunidad y por hacerme socio de honor, porque somos muy poquitos.

Esa nueva actitud, ¿en qué momento se da el punto de inflexión?

No es una nueva actitud. La he tenido igual muchas veces, aunque es verdad que

a lo mejor en los Grandes estaba más inquieto. Esta semana en Augusta fue muy importante la mentalidad. ¿Cómo ha sido el trabajo previo al Masters?

En Dubái ya fue muy bien. Aquella victoria contra Henrik Stenson me dio mucha confianza. Después, la semana antes del Masters, estuve trabajando en Austin con mi padre y me dijo que me veía muy bien, que creía que iba a hacer algo importante en Augusta. La combinación del entrenamiento y mentalidad fue perfecta. ¿Se siente capaz de ganar más Grandes?

Estamos a buen nivel. Nunca se sabe lo que va a ocurrir pero tengo confianza en seguir haciendo cosas buenas; me veo con capacidad para seguir mejorando. Todo el mundo sabe lo que mucho significa para mí el Open Británico y me gustaría ganarlo. Sí, me siento con posibilidades de ganar más de un Grande. ¿Le pasó por la cabeza en el play-off, el fantasma de Carnoustie?

No, por una razón muy sencilla. Allí hice bogey en el último hoyo y entonces la sensación es de haberlo dejado escapar un poco, pero en Augusta estaba jugando muy bien y tenía la sensación de haber

hecho todo lo que podía hacer; fui al playoff pensando: estoy bien, feliz, tranquillo, jugando de maravilla. Mi novia me chocó los cinco y dijo: “vamos, que es tuyo”.

Mi madre me dio un beso y dijo: “vamos, que puedes”. Salí a jugar el play-off con la mentalidad de hacer un birdie. ¿Ha supuesto una motivación extra para usted la irrupción de Jon Rahm?

Me llevo muy bien con Jon, con Rafa y estoy orgulloso de los españoles que compiten en el Tour, y si lo hacen mejor que yo, mejor. Que Jon haya sido el cuarto español en ganar en el PGA Tour es un orgullo, todo lo bueno que haga un español me enorgullece, no voy a estar celoso ni me va a picar. Lo más importante es que Jon siga jugando bien, que Rafa recupere su nivel de los últimos años, fue bonito ver que Gonzalo ha tenido una buena semana, o Larrazábal… Cuando Pablo me ganó aquel desempate en Alemania, lógicamente yo quería haberlo ganado, pero estaba encantado de que ganara un español. ¿Qué influencia cree que ha tenido a nivel deportivo su relación con su novia, Angela Akins?

Ella me ha ayudado muchísimo. No es la única. Todo mi equipo, mi familia, su familia, ellos desde hace menos tiempo. Soy el mismo Sergio de siempre. Tengo un Masters y a lo mejor de confianza estoy mejor que hace un tiempo, pero no he cambiado nada. ¿Se ha quitado un peso de encima con esta victoria?

A ver, sí, algo de presión me he quitado.

Siempre dije que no necesitaba ganar un Grande para ser feliz, aunque ayuda, no voy a mentir. ¿Cómo ve el futuro del golf español?

Jon está jugando muy bien, le están saliendo las cosas y es importante para coger confianza. Rafa espero que repunte al nivel de estos últimos años. Hay varios jugadores: Nacho Elvira lleva un año sólido, Pablo parece que está haciendo bue-

nas cosas, a ver si Gonzalo coge más confianza. Si podemos ir doce españoles a la Ryder Cup, ¡mejor!. ¿Cómo será el menú de la Cena de campeones el martes de Augusta 2018?

Tenía pensado el menú antes de este año pero no os voy a decir en qué consiste, aunque será muy español. ¿Estará la Chaqueta verde de campeón

en su boda?

La chaqueta va a viajar bastante con nosotros, es un orgullo llevarla. En algún momento aparecerá en nuestra boda, pero no me voy a casar con ella puesta.

Cuéntenos algo que le apetezca mucho Tengo ganas de ponerme en el tee del uno del The Players y que me presenten como ganador del torneo y también del Masters.

The old saying that a Major does not start until you reach the last nine holes was never as evident as it was in the last Masters of Augusta. At last, golf fans saw how Sergio García after endless disappointments when being so close to succeeding managed to win his first major, the Master of Augusta. Now the question is if Augusta has just been a sweet moment in Sergio’s life that in time will become one more achievement in a notable professional career

or something deeper than that which will make him go down in golf history as one of the greatest players. If this is the case, García will have achieved what he clearly seemed to be destined for since his first Masters in 1999, to be the heir of the Seve Ballesteros and Olazábal’s dynasty.

———— How did you feel after the tournament?

It was really good. This reception at my club is incredible. The green jacket belongs to all of you, the club, the members, my family, my team and everyone who knows me. It has been a beautiful moment and we must enjoy it; this belongs to all of us.

Will you share a locker with José Mari Olazábal in the changing rooms for the champions of Augusta?

I hope so. I hope we are together but I will not know until I get there next year.

What was the night of the victory like? I suppose it was a bit hectic.

We slept a bit but not much. There was a lot to be done on the golf course. We finished playing at seven o’clock and we did not leave the Augusta National until half past eleven; there were ceremonies, interviews, dinner with members…When we arrived at our rented house we had a small party with the Spanish press. We did not go to sleep until 4 or 5 in the morning. It was a beautiful and intense night.

We did not sleep much in New York either. I had many interviews starting early in the morning. They were three very intense days.

What is the most important thing about winning this tournament?

Many things and people come to my mind; my family, my girlfriend, all those who have supported me all these years. I feel very proud to have been able to make this dream come true. And on top of it, in Augusta, it is even more special! It is a reward to my work, my persistence, my determination and my ability to continue believing. I always knew I could do it.

When I won, many things came to my mind as flashes just in a few seconds; I felt euphoria, anger, joy, deep emotion…

I celebrated it just how I felt it.

What has changed since 2012 when they said you were not good enough to win a major?

To be honest, not many things have changed. The week of the Masters as I said, I was learning to accept things, to be more patient, to take the good and bad moments the best possible way. What happened in 2012 came at the wrong time. One Saturday I went to the golf course feeling I stood a change; I did not play well, it was not the first time and I got frustrated and then… You all know I 36 | GC#23

usually say how I feel. That was only a moment of frustration because at the next tournament I played correctly. After that Masters I played well, I have won tournaments.

Do you think your victory at Augusta will help the development of golf in Spain?

If this does not help I do not know what needs to be done. We know that golf in Spain apart from other things is a touristic attraction and we have to continue working as there is an increasing competition from other countries. I hope politicians do something about it as well as the Golf Federation.

What do you think of not having a Spanish Open this year?

It is unfortunate that it is not played this year. We continue supporting golf and we do so with Andalucía Valderrama Masters.

This is not a question for me but a question for the Golf Federation who is the owner of the Spanish Open.

What was for you the key moment for your victory at the Masters?

It was important for me to react well at hole 12 and not behave more aggressively than I was supposed to. If I had gone crazy and go into the water, this would have been the end of the tournament for me. Later, in hole 13, we both did par.

However, considering the problems I had with this hole I think I did half a birdie and Justin did half a bogey. I knew I still had holes to do good things and have good shots. I think Justin Rose also realized that I was not running away.

What kind of relationship do you have with Justin Rose?

We are very good friends. We have spent a long time together and we have shared good and bad moments. Playing together helped both of us. We celebrated the good shots; he hit me gently with the putter in hole 15 and later I patted him on his back. If we had played against each other I would have felt bad because I like being the way I am and acting the way I act. The beauty of it all is playing a bit better than your opponent. When I won he said “If somebody deserved this victory, it would be you”. If you did not get on well with your colleagues, they would not say something like that.

Are your childhood dreams coming

true?

When I was a child I was at the putting-green and I thought about winning this or that. I also believed I had the putt for winning the British, the Masters…

These were childhood dreams. Later, things are the way they are. Nothing is easy and not everybody can win. I have already mentioned that I am proud of my professional career because I have always been very determined. I have been within the world top fifteen or twenty players for 19 seasons. This is not always appreciated but it has always been important for me before winning the Masters and I know it is also important for other professional golf players.

You had a guest appearance at the football derby and your passion for football is well-known. How did you feel?

It was a very good match. Both teams were affected by the Champion League

I have a good playing level. You never know what can happen but I believe I can continue doing big things; I feel I can continue improving.

Everybody knows what the British Open means to me and I would like to win it. Yes, I do feel I stand a good chance of winning more than one major.

matches. I was really moved when the crowd went wild. I have been cheered before in many tournaments, at the Ryder Cup, the British, the Augusta, but going into a football ground like the Bernabeu and having 90,000 people calling your name… It gave me goose bumps. It was moving. I thank the Real Madrid for giving me that opportunity and making me an honorary member; there are only a few of us.

When did this change of attitude take place?

It is not a new attitude. I have acted the same way many times, although it is true that I was a bit nervous when playing the majors. However, a change of mentality was very important this week in Augusta.

What has the Masters’ previous work been like?

In Dubai it went really well. Beating Herik Stenson made me feel more confident.

After that, the week before the Masters, I worked with my father in Austin and he said to me that I was doing very well and that he believed I was going to do something important in Augusta. The combination of training and change of mentality was perfect.

Are you confident to win more majors?

I have a good playing level. You never know what can happen but I believe I can continue doing big things; I feel I can continue improving. Everybody knows what the British Open means to me and I would like to win it. Yes, I do feel I stand a good chance of winning more than one major.

Did the ghost of Carnoustie cross your mind at the play-off?

No, it didn’t, for one simple reason.

There, I did a bogey in the last hole and then the feeling I had was that I had let

it go. In Augusta I was playing very well and I had the feeling that I had done everything I could. I went to the playoff thinking: I’m feeling fine, happy and calm, I am playing wonderfully. My girlfriend gave me five and said: “Come on, it’s yours”. My mother kissed me and said “Yes, you can”. I went to play the play-off with the idea of doing a birdie.

Having Jon Rahm come on the scene is an extra motivation for you?

I get on very well with Jon, with Rafa and I feel very proud of the Spanish sportsmen who are competing in the Tour. The better they are, the happier I feel. I am really proud that Jon is the fourth Spanish golf player to win the PGA Tour. All good things achieved by Spanish players make me feel proud. I am not going to get jealous. The most important is that Jon continuous playing well, that Rafa regains the level he has had recently; it was good to see that Gonzalo had a good week and GC#23 | 37

Larrazábal… When Pablo won that tiebreak in Germany, obviously, I would have liked to win it but I was delighted that it was a Spanish player.

How do you think your relationship with your girlfriend Angela Akins has affected you on a sport level?

She has helped me a lot. She is not the only one. All my team, my family, her family who has not been there so long, have helped me. She has done her bit and has helped me very much. Nevertheless, it is me who strikes the ball. It is always important to have someone who loves you and supports you in the good and the bad.

How has your professional success changed you?

I am the same old Sergio. I have a Masters and I feel more confident. I feel better than before but nothing has changed.

Has a big weight lifted from your shoulders with this victory?

Well, pressure has eased. I have always said that I did not need to win a major to be happy, although it helps.

How do you see the future of Spanish golf?

Jon is playing very well, things are turning out for him and it is important to feel confident. I hope Rafa recovers. There are some players: Nacho Elvira has had a productive year, Pablo seems to be doing good things and I hope Gonzalo gains confidence. If twelve players can go to the Ryder Cup it would be great.

What will the menu at the Champion dinner be like on Tuesday in Augusta 2018?

I had already thought about the menu before this year but I am not going to tell you about it. I can only say I will be very Spanish.

Will your Champion Green Jacket be at your wedding?

My jacket is going to travel a lot with us and I will be very proud to wear it. It will be at our wedding but I am not going to get married in it.

Entrevista con el Director Deportivo de Miguel Angel Jiménez Golf Academy

Juan Jiménez Toda una vida dedicada al golf

Miguel Angel Jiménez, inició en 2013 su proyecto más personal, Miguel Ángel Jiménez Golf Academy. Con un objetivo claro, la escuela debía ser una referencia para todo aquel que quisiera aprender o elevar su nivel en el golf y con las instalaciones apropiadas, la escuela consta de un campo de golf de 9 hoyos, pares 3, diseño del propio Miguel Ángel, un campo de prácticas de hierba natural, zona de approach, zona de putting green, zona de bunker, un aula de formación y una sala de tecnología. Cuatro años más tarde la escuela ha recorrido un largo y fructuoso camino pasando de 22 a 194 abonados y habiendo creado una red estable de patrocinadores. Consciente de que el éxito es una mezcla de trabajo y conocimiento, Miguel Ángel quiso rodearse de profesionales, uno ellos es su hermano mayor Juan Jiménez, “El Pecas”.

—————— ¿Cómo empieza un niño de Churriana en el golf?

Pues empiezo a los 11 años a raíz de que algunos amigos empiezan a ir a la escuela que había en el Parador de Málaga. La escuela te enseñaba a jugar al golf pero también las materias académicas, así convencí a mis padres. Si no, nunca me hubieran dejado ir. Era muy divertido, éramos 40 ó 50 niños de los que han salido grandes profesionales como Jose Luis Mangas, Salvador Balbuena, Francisco Navarro o Juan de los Rios.

Así empecé como caddy, luego como caddy jugador, etc., hasta que a los 24 años me hice profesional. Mi vida como profesional del golf se ha desarrollado en Torrequebrada, desde su apertura hasta prácticamente el año 2016. Desde entonces estoy exclusivamente en la Miguel Ángel Jiménez Golf Academy.

A pesar de hacer todo lo que te he comentado, cuando cumplí los 50, quise sacarme la espinita y me saqué la tarjeta del Tour Senior. Estuve un año jugando pero la verdad es que mi juego se resentía por la irregularidad.

¿Cómo se forja vuestra relación en el golf?

Miguel Ángel toma la decisión de dedicarse al golf y se viene conmigo a Torrequebrada, por entonces tendría 14 ó 15 años. A partir de ahí empieza a entrenar en los ratos que tenía libres en la academia de Torrequebrada. Siempre ha sido muy constante y trabajador, hasta tal punto que en una ocasión entrenó tanto que se agrietaron las manos y le sangraban. Tuve que prohibirle coger un palo durante un mes.

Siempre estaba preguntando, pero lo que te puedo decir es que una parte importante del aprendizaje del golf es la imitación.

Así que, no te digo yo que no se fijara en mí, pero Miguel Ángel tiene demasiado talento. ¿Cuál ha sido tu vinculación con la escuela de Miguel Ángel?

Desde el principio Miguel Ángel quiso que yo estuviera en el proyecto poniendo mi granito de arena como Director deportivo. Ahora después de estos cuatro años en la Escuela, creo que me merezco bajar un poco el ritmo, así que pretendo dar sólo clases por la mañana y poder dedicar el resto del día a jugar alguna partida, a la playa y a la familia.

Seguro que hay miles de anécdotas para contar…

He recorrido medio mundo con Miguel.

He hecho de caddy en torneos como, el British o el Master, pero hay una anécdota a la que nos referimos con frecuencia.

Cuando se jugó el Open de España en Torrequebrada en el 79, Miguel Ángel recogía las bolas en el campo y le comentó a sus amigos que en 5 años estaría jugando el Open de España. Y lo cumplió.

Miguel Angel Jiménez started his most personal project in 2013, the Miguel Ángel Jiménez Golf Academy. He started this project with a clear objective; the school would be a reference point for all those who wanted to learn or improve their level of golf and it would have the appropriate facilities. The school has a 9-hole golf course, 3 par, designed by Miguel Ángel himself, a natural grass training area, an approach area, a putting green area, a bunker area, a training room and an IT room. Four years later the school has followed a long and productive road going from 22 to 194 pass holders creating a stable sponsors network. Miguel Ángel was aware of the fact that success is a mixture of work and knowledge and that is the reason he wanted to work with the best professionals and one of them is his older brother Juan Jiménez, known as “Freckles”.

———— How does a small boy from Churriana start playing golf?

I started when I was 11 as some of my friends went to the golf school that used to be in the Parador of Málaga. The school used to teach golf as well as other subjects and that is how I managed to convince my parents; otherwise, they would have never let me go. It was good fun. We were 40 or 50 children and some of the best professionals such as José Luis Mangas, Salvador Balbuela, Francisco Navarro and Juan de los Rios were in this group.

This way, I started as a caddy, then I became a caddy player and so on until I was 24 when I became a professional player. My life as a professional golf player has taken place in Torrequebrada, since it opened until almost 2016. Since then, I work in the Miguel Ángel Jiménez Golf Academy exclusively.

Despite all this, when I was 50 I wanted to find out what it was like and I took out a Senior Tour card. I played for a year although this affected my game as I played inconsistently.

How did you develop your golf relationship?

Miguel Ángel took the decision to work as a golf player and came to work with me in Torrequebrada, he was 14 or 15.

From then on he started training at the academy in Torrequebrada in his free time. He has always been very conscientious and hard-working to the point that once after training very hard, his hands were chapped and bleeding. I had to forbid him from playing for a month. He was always asking questions; however, in my opinion a very important aspect of playing golf is based on imitating. So, I don’t know if he just watched me but I know he has great talent.

What is your connection with Miguel Ángel School?

Since the beginning Miguel Ángel wanted me to be in the project and contribute as Sport Manager. Now after these four years at the School I think I deserve to slow down, so I just want to teach in the morning and play a game, go to the beach or spend time with my family for the rest of the day.

Surely, there must be thousands of anecdotes you can tell us…

I have travelled a lot with Miguel. I have been a caddy in tournaments like the British or the Master. However, there 50 | GC#23

is an anecdote that I often refer to.

When the Open of Spain was played at Torrequebrada in 1979, Miguel Ángel used to pick up the golf balls in the golf course, and he said to his friends that in five years he would be playing in the Spanish Open and he did. ✪

Comienzos difíciles e ilegales.

———— Los orígenes del golf son realmente difíciles de establecer. En la historia del hombre, han existido muchos juegos en los cuales se golpeaba una bola con algún tipo de palo de distintas longitudes y formas. Los Romanos, hace unos dos mil años, jugaban a un juego llamado Páganica en el cual, se golpeaba una bola de un diámetro de entre 12 y 18 cm hecha de cuero y rellena de plumas. Este juego se practicaba en el pagum, un campo de hierba corta.

Existió un juego practicado en Francia

llamado Jeu de mail, el cual, involucraba también el golpeo de una bola con un palo parecido a los utilizados en el cricket que podría haberse desarrollado a partir del juego Romano. El Chole, juego BelgaFrancés, era jugado por equipos de tres jugadores, los cuales compartían la misma bola. El Kolven, de origen Holandés, era practicado sobre hielo y consistía en desplazar una bola, mediante un palo curvo en su extremo, hasta golpear una estaca clavada en el hielo. El vencedor era aquel capaz de conseguir el objetivo en el menor número de golpes.

Como vemos, los origines son realmente

difíciles de concretar, pero hay algo de lo que sí que tenemos constancia escrita a través de el Acta del Parlamento Escocés del 6 de Marzo de 1457 y firmada por el Rey James II de Escocia donde podemos leer “And touchand ye futebaw and ye golf We ordane tit to be punyst be ye barons unlaw. And if he tak it not to be tain be ye kings officars” “Y concerniendo al Futbol y Golf, ordenamos que (todos aquellos sorprendidos jugando a estos juegos) sean castigados por los barones locales y si ellos fallan, por los oficiales del Rey” Este documento nos marca, lo que hoy

está considerado como, el inicio de la Historia del Juego del golf y el comienzo de un periodo de tiempo del cual nos ha llegado escasa información gráfica pero del que ha sobrevivido una cantidad de documentación importante que nos permite explorar los difíciles comienzos que tuvo este juego que tanto amamos.

Durante toda la segunda mitad del siglo XV el juego fue prohibido por los Reyes Escoceses James II, después por James III y más tarde por James IV prácticamente en los mismos términos. ¿Por qué? La razón es bastante simple.

Durante más de 200 años, las relaciones

entre Inglaterra y Escocia estuvieron marcadas por continuos conflictos bélicos que nunca tenían un claro vencedor. El poderío Inglés era contrarrestado por el orgullo y patriotismo Escocés sin que de ninguno de estos conflictos saliera un vencedor. Los esfuerzos de los Reyes por mantener a sus ejércitos (básicamente toda la población masculina) con un mínimo de destreza en la utilización del arco (el arma más barata y común del momento), forzaron la instauración de estas actas y con ellas las prohibiciones de la práctica de los juegos más comunes del momento, el futbol y el golf.

Para alcanzar este objetivo, el Rey obligó a

colocar en las proximidades de las Iglesias y los mercados dianas, donde toda la población masculina debería de lanzar y mínimo de seis flechas. En las actas se recogía incluso una multa para aquellos sorprendidos practicando estos ¨juegos inútiles¨, como eran descritos por el clero, y el total alcanzado era utilizado para premiar con cerveza, a aquellos que participaban en las prácticas de tiro.

El final de este interminable conflicto fue el tratado de Glasgow, Tratado de la Paz Perpetua, firmado en 1501 por Inglaterra y Escocia propiciado por el matrimonio de James IV con Margaret Tudor, hija de

Henry VII. El final de las hostilidades permitió que el juego, practicado habitualmente por el Rey, fuese creciendo gracias a su expansión por el Este de Escocia debido a la popularidad que alcanzó entre las clases altas gracias a la práctica habitual por parte de los miembros de la corte del rey en Edimburgo. Una de las mayores aficionadas y practicante habitual era su madre Margarita de Dinamarca.

Durante mi investigación encontré tres documentos que corroboran la afición del Rey por el Golf. Hay constancia de que James IV pasó el mes de Febrero de 1503 en Edimburgo y el día 3 del mismo,

el Tesorero Mayor del Reino recoge en una de sus actas el gasto de tres Coronas Francesas para ¨jugar al golf con el Conde de Bothwell¨, lo cual, podría sugerir la perdida de una apuesta por parte del monarca. Sus gastos en golf no eran ocasionales y para probarlo, en la colección se incluyen dos documentos posteriores de 1506 que muestran también la compra de palos y bolas por parte del Rey, esta vez, en Saint Andrews. Son muy interesantes ya que nos muestran el precio comparativo de los palos y las bolas. Mientras que cada palo costó 1 shilling, por la misma cantidad adquirió tres bolas.

Como podemos ver, los inicios del juego contaron con una oposición importante, pero una vez superado este periodo, comenzaremos a descubrir material documental de cómo el juego fue ganando en adeptos, como se extendió por todo el territorio y como se comenzó a fabricar material para su práctica. Comenzamos este viaje a través de la Historia mediante documentación encontrada en los Archivos del Parlamento Escocés, La Biblioteca Nacional de Escocia y Los Archivos de la Ciudad de Edimburgo sin cuyo apoyo, esta colección nunca hubiera visto la luz.

Difficult and illegal beginnings ——— The origins of golf are really difficult to ascertain. In the history of mankind there have been many games in which a ball was struck by some kind of stick of different lengths and shapes. The Romans, around two thousand years ago, played a game called Páganica in which a ball of about 12-15 cm diameter and made of leather and filled with feathers was hit. This game was played in the pagum, a short grass field.

In France there was a game called Jeu de mail, in which a ball was also hit with a stick similar to the ones used in cricket and which is thought to have derived from the Roman game. Chole, a BelgianFrench game, was played by three-player teams which shared the same ball.

Kolven, of Dutch origin, was practiced on ice and it consisted of moving a ball by using a stick curved on its end in order to hit a stake stuck in the ice. The winner was the one who reached the objective with the smallest number of strokes.

As we see, it is very difficult to establish the origins of golf. However, we have written records from the Act of the Scottish Parliament on 6th March 1457 and signed by the King James II of Scotland where we can read “And touchand ye futebaw and ye golf We ordane tit to be punyst be ye barons unlaw. And if he tak it

not to be tain be ye kings officars” “And concerning Football and Golf, we order that (all those found playing these games) shall be punished by local barons and if they do not do so by the King’s officers”.

This document shows what is now considered as the beginnings of the History of the game of Golf and the beginning of a period of time where there is little graphic information but very important documents have remained and allow us to explore the difficult beginnings of this game that we love so much.

During the second half of the 15th century, the game was banned by the Scottish Kings James II, then James III and later James IV in the same terms.

Why? The reason is very simple. For more than 200 years, the relationship between England and Scotland was marked by continuous wars where no one was clearly victorious. English power was resisted with Scottish pride and patriotism and thus, these conflicts were never solved.

The efforts of Kings to maintain their armies (most of the male population) in the art of archery practice (the cheapest and most common weapon) forced the establishment of these acts and thus, the banning of the most common games at the time, football and golf.

The end of this never ending conflict was the Treaty of Glasgow, Treaty of Perpetual Peace that was signed by England and Scotland in 1501 favoured by the marriage of James IV to Margaret Tudor, Henry VII’s daughter. The end of hostilities allowed golf to be played as the King himself played golf regularly and it spread throughout the east of Scotland. It was a very popular game amongst the high classes as it was played by members of the king’s court in Edinburgh. Margaret of Edinburgh was one of the biggest golf enthusiasts and a regular player.

During my research I found three documents that confirm the King’s fondness of golf. There are records indicating that James IV spent a month in February 1503 in Edinburgh and on the third day, the Treasurer of the Kingdom records in one of his acts that he allowed the use of three French Crowns “to play golf with the Earl of Bothwell”. This might mean that the King may have lost a bet. Golf expenses were not rare and it is proved in two documents dated after 1506 included in the collection that indicate that the King purchased clubs and balls at Saint Andrews. These are very interesting records because they also compare the price of clubs and balls; whereas clubs cost 1 shilling, with this money three balls were purchased.

As we can see, the game found opposition in its beginnings. However, after this period we have discovered documents that indicate how golf was spread all throughout the territory and equipment started to be made. We began this journey through History with documents found in the Scottish Parliament Archives, the National Library of Scotland and the City of Edinburgh Archives, without their help and support this collection would have never come to light. ✪

———— Háblenos sobre su trayectoria hasta el momento.

Empecé con 19 años en Alemania, mis ganas de conocer mundo me llevaron a un restaurante francés en Francfurt. Allí, casualidades de la vida, conocí al Director de la escuela de hostelería de Girona, que me introdujo en el mundo de las Estrellas Michelin. De vuelta a España, empecé a trabajar en el Raco de Can Fabes, con 3 Estrellas Michelin. El impacto en la forma de trabajar fue tal, que me quede pren-

dado de la profesionalidad y calidad.

Después de estar 2 años en el Raco de Can Fabes tuve la posibilidad de trabajar en Inglaterra en un Relais Chateau en Nothingam con 1 Estrella Michelin. A mi vuelta trabajé en el restaurante Drolma (1 estrella Michelin) y en el hotel Majestic, para volver al Raco de Can Fabes como 2º Maitre a las órdenes del chef Santi Santamaria, un referente dentro la gastronomía Catalana y Mundial. Años más tarde empecé en el mundo de los hoteles.

Primero en el Neri como F&B Manager donde conseguimos entrar en la guía Relais Chateaux y en el hotel OHLA de 5 Estrellas, con un restaurante de 1 Estrella Michelin a cargo del chef Xavier Franco.

Antes de llegar a La Cala Resort, mi último trabajo fue la apertura de un hotel de 5 estrellas en Barcelona, The Serras.

Allí, tuve la oportunidad de experimentar la apertura de hotel, sensación por otro lado fantástica y llena de situaciones nuevas para mí. Actualmente llevo 2 años en La Cala Resort, el último de ellos, como Bar & Restaurant Manager del Resort.

¿Cuáles son específicamente las funciones de un Bevarage Manager?

Asegurar que los servicios que presta el departamento de F&B sean acordes con la calidad de nuestro hotel, que los procedimientos por los que se rige nuestro servicio se cumplan y conseguir que todo los componentes del grupo de sala sean los mejores. ¿Qué cualidades cree que debe tener un buen Maitre?

Sobre todo ser resolutivo, cercano con el cliente y tener conocimientos para resolver cualquier situación. La empatía con todos los que te rodean y sobre todo, creerse el proyecto y hacer creer a los demás que el trabajo bien hecho es una satisfacción al final del día. También concienciar a tus colaboradores de que la satisfacción del cliente es nuestro objetivo.

¿Cómo cree que está valorada la figura del Maitre hoy en día?

Tras 20 años en este oficio y después de ver diferentes tipos de trabajo, mi impresión es que la figura del Maitre hoy en día es una posición muy valorada por los que conocen el oficio. Por suerte, gracias a los grandes chefs que ha tenido España en los últimos años, nuestro oficio a tenido un impacto mediático importantísimo y los Maitres nos hemos beneficiado de este hecho. Sí que es verdad que la figura del Maitre en países como Inglaterra esta mejor valorada aunque en España tenemos la gran suerte de estar a la cabeza en la formación y así poder estar a la altura de las expectativas que tiene el cliente cuando viene a sitios donde la calidad son las bases del éxito, como nuestro Hotel.

Los clientes buscan amabilidad, una sonrisa y que les traten como si fuesen especiales para sentirse como en casa y que les reconozcan. Si además son clientes habituales el hecho de tener memoria y saber sus gustos, cuáles son sus preferencias, cual es el trato que más les gusta, en definitiva ser reconocidos. Hay una gran frase que dice que los clientes tienen más hambre de ser reconocidos que de comerse un entrecot ( Domenech Biosca), creo que eso define muy bien lo que aprecia un comensal.

La Cala Resort acoge a una gran variedad deportistas, golfistas, ciclistas, futbolistas, runners, etc. ¿cómo se satisfacen desde el punto de vista gastronómico las necesidades de cada cliente en las diferentes disciplinas deportivas?

En nuestra carta hemos introducido recientemente unos platos de cocina saludable que están funcionando bien ya que en los últimos años la tendencia a comer sano se esta extendiendo. La gente quiere comer sano con productos de primera calidad y en eso está trabajando nuestro chef Iván Alvarez. ¿Y en cuanto a las diferentes nacionalidades que acoge La Cala?

Flexibilidad y conocer las particularidades de cada cliente, creo que son las claves.

Dependiendo de una nacionalidad u otra podemos variar nuestra manera de interactuar pero al final no se clasifica por nacionalidades, creo que se diferencia más por tipos de clientes. Podemos ver mucho de un cliente en los primeros 2 minutos de conversación, sus preguntas, sus gestos, etc., son cosas que nos ayudan para po-

der hacernos una idea de la clase de cliente que es y lo que puede satisfacerle más.

Nos han comentado que las celebraciones de eventos en La Cala son espectaculares, ¿podría contar por qué?

En gran parte es por el marco donde estamos situados. Creo que la gente se mueve mucho por energías y la energía que transmite este Resort es muy positiva. El entorno es importante pero después nosotros tenemos que reafirmar estas sensaciones.

La flexibilidad con la cual realizamos los servicios es exquisita y el objetivo es que cada celebración en La Cala perdure en la memoria de nuestros clientes. La calidad del producto, los servicios que damos, el cuidar los detalles. Yo siempre digo que los pequeños detalles son los que hacen grandes a los Hoteles.

A lo largo de su trayectoria seguro que tiene varias anécdotas en el trabajo,¿ podría contarnos alguna? ¡Muchísimas!. Me acuerdo de una de las primeras bodas que hice aquí, era de unos Señores de Texas y la novia vino a la ceremonia montada en un caballo blanco, sencillamente espectacular. Recuerdo otra en la que tuve que hacer de maestro de ceremonias en irlandés y presentar a la novia y al novio como si fuesen amigos míos.

Tener que indicar a la novia que tenía que hacer en cada momento porque ella estaba tan nerviosa que no sabía cómo reaccionar, invitados queriendo que formáramos parte de sus videos, gente que nos ofrecían sus casas para irnos de vacaciones. Bueno, en fin, cosas típicas en un día donde la felicidad brota en cada momento mágico. Y muchas otras que quedarán en la intimidad de los involucrados en ellas.

————— Let’s talk about your professional career.

I started when I was 19 in Germany and my eagerness to travel the world took me to a French restaurant in Frankfurt.

There, by pure chance, I met the Manager of the Hotel School in Girona who brought me into the world of Michelin Stars. When I came back to Spain I started working in Raco de Can Fabes which has 3 Michelin Stars. I was extremely affected by the professionalism and quality of the work carried out there. After 2 years in Raco de Can Fabes I had the opportunity to work in England in a Relais Chateau in Nottingham with 1 Michelin Star. When I came back I worked in Drolma Restaurant (1 Michelin Star) and at the Majestic Hotel and I came back to Raco de Can Fabes as 2nd Maître D’ and I worked with the chef Santi Santamaria, a reference in Catalan and world gastronomy. Years later I started working in hotels. First, I worked in Nery as F&B Manager where we managed to be part of

the Relais Chateaux guide and in OHLA 5 star Hotel with a 1 Michelin Star restaurant managed by the chef Xavier Franco. Before I came to La Cala Resort, my last job was opening a 5 star hotel in Barcelona, The Serras. There I had the opportunity of opening a hotel, a fantastic experience full of new challenges for me. Currently, I have been working at La Cala Resort for two years, the last one as Bar & Restaurant Manager of the Resort.

What are your responsibilities as Bar & Restaurant Manager?

I have to make sure that the services of the F&B department meet the quality standards of the hotel, that the service procedures are fulfilled and that all the members of the service team are the best; apart from communicating with the members of staff to solve any problems and teach working methods to give the best service. In my opinion, it is very important to make everyone feel part of a challenging project and that both, cus-

tomers and members of staff are satisfied with La Cala Resort.

How do you see the position of Maître D’ nowadays?

After 20 years of service and after having seen different kinds of work I think the position of Maitre D’ is more valued by professionals nowadays. Luckily, thanks to great chefs in Spain in recent years, our job has had a very important media impact and Maître D’s have benefitted from that fact. It is true that in other countries like Britain our job is more valued; however in Spain we are in the lead of training so we can meet customer expectations when they visit places such as our Hotel where quality is the key to our success.

What skills does a good Maître D’ need?

Mainly, you need to be decisive, close to customers and have the knowledge to solve any type of situation. You also need to empathize with those around you and GC#23 | 85

most of all, believe in the project and make others believe that good work is satisfying at the end of the day. You have to make your team members aware that customer satisfaction is our main objective.

In your opinion what do customers appreciate the most?

Customers look for kindness, a smile and to be treated as if they were special, to feel at home and feel recognized. And if they are regular customers, it is important to have a good memory so we can anticipate their likes, know their preferences, how they like to be treated; in conclusion, to be recognized. There is a saying that says that customers are hungrier to be recognized than to eat an entrecote steak (Domenech Biosca). I think this defines customers very well.

What about the different nationalities at La Cala?

Flexibility and knowing the individual features of each customer are the keys.

Depending on the nationality we can vary they way we relate to them; however, we do not classify them according to nationalities but according to the type of customer. We can gather a lot of information from a customer in the first 2 minutes of conversation, their questions, their gestures, etc. These are things that help us to know what kind of customer they are and satisfy their needs.

La Cala Resort takes a wide variety of sport players, golfers, cyclists, football players, runners, etc. How do you satisfy the gastronomic needs of each of these customers who play different sports?

It is mostly because of the place where we are located. People are affected by different kinds of energy and the energy flowing at this Resort is very positive. The set-

ting is very important but then we have to confirm these feelings. Flexibility is exquisite here and our main of objective with each event is that it remains in the memories of our customers. I always say that small details make a great Hotel.

I’m sure there must have been many anecdotes during your long career, can you tell us some?

Yes, many!! I remember one of the first weddings that took place here. It was a family from Texas and the bride came to the ceremony on a white horse. It was truly amazing! I remember another one where I acted as master of ceremony in Irish Gaelic and I had to introduce the bride and the groom as if they were friends of mine. I had to tell the bride what to do because she was too nervous, guests wanted us to be part of their videos and others who offered their houses for our holidays. Well, in short, typical things of a day where happiness exudes in each magic moment; and many others that will remain in the privacy of those involved.

IVÁN ÁLVAREZ Executive Chef de La Cala Resort ———— Cuéntenos cuál ha sido su trayectoria profesional hasta el momento.

Llevo como profesional de la Hostelería más de 15 años, diez de ellos liderando equipos nacionales e internacionales. Mis primeros años en esta profesión fueron de intenso aprendizaje, buscando sitios interesantes para poder completar mi formación como cocinero. Durante esta etapa entré en contacto con muy buenos Jefes de Cocina, Cruz Mari exjefe de cocina de Rekondo, Felix Altolaguirre exjefe de cocina del mítico Club 31 en Madrid o Remi Tulove exjefe de cocina del Rizt de Paris entre otros. Estas personas son las que me abrieron las puertas a restaurantes como Arzak (3 Estrellas Michelin), Jockey Madrid (Considerado uno de los mejores restaurantes de Europa hasta el 2000 y con 1 Estrella Michelín), Urepel en Donosti con 1 Estrella Michelín o Larumbe en Madrid.

Mi espíritu emprendedor me llevó a abrir un restaurante que se convirtió en referente gastronómico en Madrid y consiguió ser restaurante revelación finalista en su primer año de apertura.

Siguiendo mi entusiasmo, mis ganas de mejorar y buscando realizar nuevos retos pronto avancé hacia nuevos proyectos.

Tras trabajar un tiempo haciendo I+D para locales emblemáticos en Madrid como el restaurante del hotel Wellington y viajé a Copenague para compartir experiencias en diferentes restaurantes con los mejores Chefs Daneses, como Bo Bech y Rasmus Gronbech, dos auténticos virtuosos.

En los últimos años he trabajado en hoteles de cinco estrellas con un alto estándar

de calidad desempeñando las funciones de Jefe de Cocina y asesor. Mi recorrido en hoteles comienza en Cáceres, convirtiéndome pronto en la imagen de esta compañía y realizando las aperturas de Granada, Sevilla y por último Lisboa.

Mi trabajo anterior a La Cala Resort fue la consultoría y puesta en marcha de una nueva etapa para el restaurante del hotel Marqués de Caro en Valencia, realizando la implantación y desarrollo de sistema de trabajo con productos ecológicos y de proximidad.

Has trabajado en establecimientos hoteleros, ¿es muy diferente la visión de un restaurante dentro de un resort de golf?

Sí claro. En La Cala Resort hemos conseguido cambiar esta tendencia en los últimos años, tenemos un cliente que es el que llega a jugar al golf y aunque algunos de ellos se hospedan en el hotel, teniendo una oferta lo suficientemente atractiva tanto en la calidad de nuestros productos como en la efectividad de nuestro servicio, hacemos que el cliente se quede después de jugar al golf con nosotros y consuma en nuestros restaurantes.

Es usted desde el 2014 el Chef Ejecutivo de La Cala Resort, ¿Cuáles son sus funciones dentro de la restauración del resort?

Desde mi perspectiva cualquier cosa relacionada con comida es responsabilidad mía, con lo que la función más importante es saber lo que ocurre en todas y cada una de las áreas de este departamento.

“Nuestros estándares de calidad no han parado de crecer en los últimos años con lo que me atrevo a decir que nuestro producto, la comida que servimos en nuestros restaurantes, está por encima de la media. Por no mencionar la intensa búsqueda de materia prima que hemos desarrollado conjuntamente a nuestra actualización de la oferta gastronómica.”

Puedes encontrarme por la cocina horneando pan, montando el buffet para los futbolistas, liderando un servicio en el hotel o en la casa Club para agilizarlo, realizando pruebas de menú de bodas o en el pase de algún evento. A partir de aquí es de donde saco la información para llevar a cabo la parte ejecutiva de mis funciones, utilizando la información que recojo para crear protocolos de trabajo en las distintas unidades y tipos de servicios. Encontrar sinergias entre las distintas cocinas, decidir si los cambios en una carta han sido acertados, pues según el restaurante funcionan unos tipos de preparaciones u otros, saber si el orden de la cocina es efectivo después de hacer los cambios en las cartas, son algunas de mis funciones.

En el caso del hotel, llegamos a la conclusión de eran necesarias varias Roner en cada partida para poder sacar el servicio adelante de manera fluida o por ejemplo en el caso del Club House tras los últimos cambios de carta, entendimos que era vital disponer de más unidades de frío dentro de la cocina para poder reducir el tiempo de espera del cliente y aumentar la productividad del equipo de cocina durante las horas de mayor demanda. También tengo la función de crear la estrategia gastronómica y la interna, que es la que nos asegura el éxito de la anterior y que definiría como la creación de pequeños hitos por los que tenemos que ir pasando para conseguir el éxito. Otra función que me parece interesante es la de ser capaz de trasmitir al equipo la visión de la estrategia para conseguir que estemos todos alineados con un propósito común, conseguir que los dos confluyan. Podría seguir enumerando funciones pero son muchas y muy desconocidas para el gran público. ¿Cómo es la cocina que hace aquí en La

Cala Resort?

Es una cocina actual, tenemos platos internacionales, platos vegetarianos muy interesantes y disponemos de Finger Food para consumir en la piscina.

Cuéntanos, ¿cuál es el plato estrella del restaurante?

Tenemos pescados salvajes como la corvina que acompañamos con un puré de una raíz de una flor similar a los girasoles en forma y color y que se llama Tupinambo.

Lo acabamos con una picad de aceitunas verdes, tomate cassé y lima. Con esto te puedes hacer una idea de lo que puedes degustar en el restaurante del hotel. ¿Qué cree que diferencia a La Cala Resort del resto de oferta gastronómica similar?

Nuestros estándares de calidad no han parado de crecer en los últimos años con lo que me atrevo a decir que nuestro producto, la comida que servimos en nuestros restaurantes, está por encima de la media. Por no mencionar la intensa búsqueda de materia prima que hemos desarrollado conjuntamente a nuestra actualización de la oferta gastronómica.

También es digno de mención el hecho de que controlamos en un porcentaje muy alto los sabores que ofrecemos puesto que las elaboraciones las realizamos en casa, tanto las cocciones de los ingredientes como las salsas de todos nuestros menús.

La restauración tiene, como no podía ser menos, mucho peso dentro de un resort como La Cala, con varios restaurantes y bares. ¿Cuáles son las especificaciones de cada uno?

La Cala Resort tiene una clientela muy variada. Además de las distintas disciplinas deportivas que se practican en el resort, también hay que tener en cuenta las diferentes nacionalidades y la cultura gastronómica de cada una de ellas. ¿Cómo se encuentra el equilibrio para satisfacer a todos y cada uno de estos comensales?

No hay un secreto, pero si aceptas que no puedes gustar a todos y que sólo hay que tratar de entender al cliente para que la siguiente ocasión pueda disfrutar de su comida, entonces, estás cerca de conseguirlo. Nosotros no perseguimos lucirnos como artistas si no dar el mejor servicio posible y si ello implica modificar algún

plato o cambiar alguna salsa o ingrediente, si está en nuestra mano, lo hacemos.

En la mayoría de las ocasiones son las diferencias culturales las que propician estas situaciones. Hay personas que están acostumbradas a comer especiado, otros a hacerlo muy plain, siempre encontramos una manera de hacerlo. Más de una vez he aparecido en la cocina junto con algún cliente para explicarle como cocinamos algún plato determinado plato.

A lo largo de su trayectoria seguro que tiene varias anécdotas en el trabajo,¿ podría contarnos alguna?

Durante mi estancia en Dinamarca trabajando con los Chefs de Novo Nordisk en Hvidore, uno de los sitios más exclusivos de Europa, para el servicio de la noche cocinábamos 7 chefs para un número de 5 a 25 clientes, elaborando menús diferentes todos los días. Preparábamos un plato cada dos chefs dependiendo del menú o incluso uno por cada cocinero. En varias ocasiones tuve la suerte de preparar menús “sin límite de precio”, literalmente podías incluir en el menú el ingrediente que quisieras y cuando me lo comunicaron la primera vez para que hiciera mis pedidos con suficiente antelación, pensé que estaban bromeando como hacían habitualmente y no pedí nada fuera de lo habitual.

Mi sorpresa fue cuando el día del evento, teníamos cantidades ingentes de caviar, de trufa blanca, cangrejo spider japonés vivo, Halibut pescado el mismo día en Islandia por esquimales abriendo un hueco en el hielo y traído en helicóptero para la cena. ¡Así se las gastan lo nórdicos!

———— Tell us about your professional career up to now.

I have been working in the Hotel Industry professionally for more than 15 years, ten of these years leading national and international teams. My first years were devoted to learning and looking for interesting places where I could continue my training as a chef. During this period I met very good Executive Chefs like Cruz Mari, ex Executive Chef in Rekondo, Felix Altolaguirre, ex Executive Chef at the legendary Club 31 in Madrid and Remi Tulove, ex Executive Chef at the

Ritz in Paris to name but a few. These people opened for me the doors of restaurants such as Arzak (3 Michelin Stars), Jockey Madrid (considered one of the best restaurants in Europe until 2000 and 1 Michelin Star), Urepel in Donosti with 1 Michelin Star and Larumbe in Madrid.

My enterprising spirit made me open a restaurant that became a gastronomic reference in Madrid and managed to be the finalist revelation restaurant after just one year since it opened.

With enthusiasm and eagerness to improve and take on new challenges I continued to develop new projects. After working in R&D for legendary restaurants in Madrid such as the restaurant at the Wellington Hotel, I travelled to Denmark to share working experiences in different restaurants with the best Danish Chefs, Bo Bech and Ramus Gronbech, who are talented genius.

I have been working in high quality standard five star hotels as Executive Chef and Kitchen consultant these last years.

My work experience in hotels started in Cáceres and soon I became the company image and I opened the hotels in Granada, Seville and finally, Lisbon.

My previous job before I came to La Cala Resort was as a consultant and starting a new stage of the restaurant in the hotel Marqués de Caro in Valencia. I developed and established a working system based on organic and proximity products.

You have worked in hotel restaurants; do you have a different vision of a restaurant in a golf resort?

Yes, of course. At La Cala Resort we have managed to change this tendency in the last years. We have customers who come to play golf and others who stay at our hotel; we have an attractive offer both in product quality and effective service so that customers come to our restaurants after having played golf.

You have been Executive Chef at La Cala Resort since 2014, what are your duties in the restaurant business at the resort?

In my opinion, anything related to food is my responsibility. My main duty is knowing what is going on in each of the areas of this department.You can find me in the kitchen baking bread, arranging the buffet for the football players, leading the service at the hotel, helping out at the Club House, tasting wedding menus or attending an event. It is here that I compile all the information needed to carry out my executive duties, using this information to create working protocols in the different units and types of service. Some of my duties include finding synergies between the different cuisines and deciding if the changes in the menus are right since some things work better in one restaurant and not in others and knowing if the kitchen order is effective enough after having made these changes.

In the case of the hotel, we concluded that we needed several Roner1 units for each lot in order to make service flow.

However, in the case of the Club House and after the last changes in the menu, we considered the need of cold units as

vital for the kitchen in order to reduce customer waiting time and increase kitchen productivity in times of high demand.

My duties also include creating a gastronomic and internal strategy to achieve the mentioned tasks successfully. I would define this as milestones that I have to become in order to achieve success. Other duties that I particularly find interesting is communicating my team my strategic vision so as to line together in a common objective and that the two flow together. I could number many other duties that are unknown to the general public.

What is the cuisine like here at La Cala Resort?

It is contemporary cuisine, we have international dishes, very interesting vegetarian dishes and we also have Finger Food to be eaten by the pool.

Tell us, what is the star dish at the restaurant?

We have wild fish such as White Sea bass with purée made of a flower root that looks like sunflowers and which is similar in shape and colour called Tupinambo.

We serve it with chopped green olives, tomato cassé and lime. This gives you an idea of what is served at our hotel restaurant.

What differentiates La Cala Resort from similar gastronomic possibilities?

Our quality standards have continued growing in recent years and I can even say that so have our products; the food served at our restaurant is above average; 90 | GC#23

apart from having fervently searched for new products that have been developed alongside with our updated gastronomic offer.

It is worth mentioning that we control the number of tastes offered as they are all homemade; both the cooked ingredients and the sauces in all our menus.

Undoubtedly, the restaurant business is very important in a resort like La Cala, where there are several restaurants and bars.

What are they like?

La Cala Resort has a varied clientele.

Apart from the different sports played at the resort, we have to consider the different nationalities and gastronomic culture of each of them.

How do you find a balance to satisfy each of your customers?

There is no secret in this. You must accept that you cannot please all of them and that you have to try to understand each customer so that they can enjoy the food next time; then you are on the right track. We do not want to show off as artists but give the best possible service; if this means changing a dish or an ingredient or a sauce, we will do so if we can.

There are people who are used to eating spicy food, others who eat plain food, and we always find a way to do it. A few times I have come into the kitchen with a customer to show him/her how we cook a certain dish.

You must have many working anecdotes compiled during your long

working career, can you tell us some?

When I was working in Denmark with the Chefs from Novo Nordisk in Hvifore, one of the most exclusive places in Europe, 7 chefs used to cook for 5 to 25 customers at the dinner service; and we used to cook different menus every day. On the day of the event I was very surprised to see that we had huge amounts of caviar, white truffle, Japanese spider crab alive or Halibut fished that same day by Eskimos who had cracked the ice in Island and that have been brought by helicopter. ——— César, ¿qué tal estás? Antes que nada nos gustaría conocer tu relación profesional con el mundo del vino? ¿Cómo comenzaste en esto, cómo te formaste y sigues formándote?

No tengo antecedentes familiares relacionados con el vino y en principio mi vocación se inclinaba mas por la biología, pero el azar me llevo a empezar mi formación

universitaria en agronomía y es aquí donde se despertó mi interés por el apasionante mundo del vino. Complete mis estudios de agrónomo con los de enología, y al finalizar ambos es cuando me llega la oportunidad de aprender en serio al poder pasar en los primeros años de desarrollo profesional por algunas bodegas de prestigio mundial. Después de esto empiezo mi actividad como asesor que me lleva a acumular experiencia en numerosos proyectos en 5 países.

Sabemos que haces tus vinos y que además, asesoras a diferentes bodegas.

Cuéntanos un poco en qué consiste tu trabajo…

Mi trabajo es básicamente poner a disposición de las bodegas mi experiencia, adaptándome a las necesidades de cada proyecto, hay clientes que solo necesitan ayuda a la hora de hacer las mezclas finales “coupages” y otras, sin embargo, necesitan de consejo a la largo de todo el proceso, desde la viña a la botella.

Lo fundamental en mi trabajo es poder ver la realidad de la bodega desde una perspectiva externa no condicionada por lo local o tradicional y poder aportar soluciones que conduzcan a la calidad y la eficacia de los proyectos. ¿Qué balance haces del vino en España y su presencia a nivel internacional?

España además de poseer la mayor superficie de viñedo del mundo, es un país fascinante por su diversidad y calidad enológica, pero el reconocimiento de nuestros vinos en el mundo, aunque ha mejorado mucho, sigue siendo la asignatura pendiente. Tenemos una calidad/precio insuperable, variedades propias y nobles, tradición, grandes elaboradores pero sin embargo nos ha faltado la experiencia comercial que han tenido nuestros competidores en el pasado. Ellos ya vendían un producto reconocido cuando España se dedicaba a la exportación de granel. ¿Qué podrías decirnos acerca de Magallanes, tu buque insignia?

El proyecto Magallanes se inició hace ahora 12 años pensando en hacer un vino al nivel de los grandes de este país desde la perspectiva vitícola, para tal fin contábamos con una serie de viñedos únicos por su calidad, arraigados en suelos óptimos de mas de 80 años y en zonas altas de la ribera del Duero a mas de 900 metros de altitud.

La bodega se dotó con los mejores medios y se diseñó un protocolo enológico respetuoso, sencillo, casi minimalista que nos ayudara a sacar lo mejor de esa uva concentrada preservando la finura. Así hemos continuado durante las últimas once añadas, sin desfallecer en nuestra exigencia y cuando la naturaleza no nos conce-

SANTI de la posibilidad de llegar a la excelencia tomando la decisión de no comercializar la añada como ha sucedido en los años 2008 y 2013.

¿Y sobre Cienfuegos?

Si Magallanes interpreta el guión de los grandes vinos tintos, Cienfuegos es una hoja en blanco, una ruta nunca explorada.

Una mezcla de variedades inédita, nunca antes pensada. Un blanco fermentado en barrica en el que prima la frescura, la fruta y la mineralidad, huyendo del vino pesado y difícil de beber. Un vino que envejece muy bien, alguna de nuestras añadas alcanza su punto óptimo a los 5 años y cuando esto ocurre proporcionan una complejidad y un placer único.

Como elaborador, Cienfuegos es un vino muy atractivo que invita al juego, a la prueba, a la búsqueda en la elaboración o crianza y que mantiene despierta la siempre inquieta mente del enólogo.

¿Qué opinas del marketing digital y el mercado del vino? ¿Estás involucrado en este sentido?

Me parece fundamental, en los últimos 20 años ha cambiado de manera vertiginosa casi darnos cuenta nuestra relación con el comercio y el acceso a la información por parte del consumidor. En el vino en concreto aunque el consejo de la tienda minorista aun tiene mucha importancia, la

información digital ha sustituido mayoritariamente a la tradicional.

En mi caso en concreto, es sin duda una de mis asignaturas pendientes, pero soy consciente de la capital importancia que ya tiene.

¿Qué aconsejarías a todos los amantes del vino que sienten interés por formar parte de este mundo? ¿Cómo podrían comenzar a formarse en cuanto a catas, enología, etc…?

Denis Dubourdie decía que “el vino es una recreación de la vida, una comunión con la naturaleza, un viaje por paisajes, culturas y personajes en el que siempre ayuda tener a un maestro que nos guie en el descubrimiento”.

Yo creo que para amar y disfrutar el vino hay que tener una disposición para disfrutar de la belleza en general, hay que acercarse a él de manera sencilla, huyendo del protocolo y las complicaciones y compartiéndolo con los demás. Siempre hay un vino sencillo para los placeres del día a día, un vino para compartir con los que quieres, un vino para admirar con los amantes del vino…

La formación y el conocimiento son importantes únicamente porque nos ayudan a tener un mayor disfrute.

Cada vez más, se está imponiendo el enoturismo como tendencia turística

experimentando un incremento considerable… ¿Cuál dirías que es el principal motivo?

El enoturismo no es exactamente un turismo de expertos o grandes conocedores ya que estos solo suponen un 18% de la cifra global, es el resultado de la simbiosis entre la gastronomía, los paisajes, el patrimonio y el estilo de vida de una zona. La sociedad actual, en su mayoría urbana vive rápido pero añora para su tiempo de ocio el modo de vida mediterráneo muy vinculado al vino y a sus paisajes.

Para las bodegas supone una oportunidad única de crear un vínculo emocional con el consumidor. Este negocio sin duda crecerá de manera exponencial los próximos años si con la demanda crecen las infraestructuras tanto en las bodegas como en el entorno de las zonas productoras.

No hay en la costa española y no sé si lo hay en el mundo, un club de playa con estas características que no sea parte de un resort de lujo. Se podrá disfrutar de una oferta tan variada, podrás ir con tus amigos a disfrutar de un día completo en la playa, disfrutando de la piscina con los mejores DJ's y la mejor música y gente di-

vertida, luego podrás almorzar en TANGO Beach, o bien te podemos servir la comida en las camas balinesas, luego podrás ir a ver delfines haciendo un tour en jet-ski, probar el flyboard o hacerte las mejores selfies desde un parasailing, y posteriormente acabar el día bailando en el beach club, todo sin salir del recinto. Por cierto, contamos con un parking privado, que es muy importante.

During the summer we will have the best DJ’s now, exclusive performances, themed parties, etc. We have our water sport centre on the beach where you can hire jet skis, parasailing, fly boards and many other water attractions. Is it going to be a very exclusive place? What kind of customers are you expecting to attract?

EL OJO QUE TODO LO VE

—————— Me cuenta un amigo que, aprovechando el puente, ha participado en un torneo patrocinado por una conocida empresa donde, lejos de disfrutar de una mañana de golf junto al Mediterráneo, tuvo que dedicarse a vigilar a sus compañeros de partida que andaban afanados en conseguir, a fuerza de descontarse golpes, el bonito viaje para dos con que se obsequiaba al campeón. Y es que desde que los premios de los torneos sociales han pasado de la típica placa a los bonos de viaje a lugares supuestamente paradisíacos, además de otros jugosos premios, los domingos por la mañana los tramposos afloran en los clubes como los caracoles tras la lluvia.

Lo cierto es que al paso que vamos no será extraño que dentro de poco las llamadas “máquinas de la verdad”, convivan con las de la limpieza en el cuarto de palos. Parece ser que el artilugio que el malogrado Julián Lago intentó popularizar -ahora elevado a la categoría de notario de algunos programas más interesados en ahondar en las miserias humanas que en el esclarecimiento de alguna verdadse empieza a hacer necesario con tanto fullero como puebla los torneos amateurs.

De hecho, no hace mucho tiempo, tres jugadores que aseguraban haber consegui-

do sendos hoyos en uno y en el mismo par 3 de su club californiano, fueron sometidos al polígrafo con el fin de desenmascarar al mentiroso. Sin embargo, ninguno de los tres amigos había mentido y consiguieron superar con éxito la prueba.

De lo que no estoy tan seguro es de que lo lograsen los buscadores de premios que cada fin de semana intentan adueñarse a fuerza de tarjetas imposibles de los premios más valorados librando, a golpe de goma de borrar, una injusta y fratricida lucha contra sus consocios.

Lo peor de todo es que esa escena empieza a resultar tristemente familiar. Sin embargo, y para ser sincero, no puedo reprimir mi admiración por los ganadores. ¡Qué deportividad la de estos jugadores que, entregando tarjetas con las que ganarse sobradamente la vida en el mundo profesional, renuncian a engordar sus cuentas bancarias y permanecen fieles al espíritu del estatuto del jugador aficionado! Y todo por un palo de dudosa factura, incapaces de manejar con mediana destreza.

Pero volviendo al asunto de la maquinaria para descubrir tramposos, y que ahora incluso el fútbol ha sucumbido al video-arbitraje, llega el momento de que el ‘gran hermano’ visite el golf. Lo cierto, es

que esto que hasta ahora parecía descabellado en un deporte que se vanagloria de su autorregulación, ya es una realidad que sobrevuela nuestras cabezas y que incluso los más altos estamentos nacionales empiezan a interesarse por el sistema.

Por ahora, los drones sólo vigilan que no se realicen trampas para conseguir los coches con los que se premia a quien emboque de un sólo golpe ofreciendo garantías notariales a las aseguradoras. Pero quién sabe si en breve no nos encontraremos con pilotos especialistas en Reglas de Golf que vigilan desde el cielo lo que ocurre sobre la hierba. Se sorprenderían si vieran las imágenes que recoge el dron en sus pasadas sobre esos torneos.

Mientras llega ese momento, sólo me queda invocar a los afectados por esos tahures de medio pelo a rebelarse contra ellos para que no permitan tanto desmán. Que exijan al comité de competición que separe a esa pareja de ‘virtuosos’ que, semana tras semana, les roba la cartera impunemente. Recuerden, que el ladrón necesita quien le ampare la fechoría y que cuando su marcador no sea el amigo con el que se reparte el botín dominical, sus malas prácticas quedarán al descubierto. Al fin y al cabo, la grandeza de este deporte es que pone a cada cual en su sitio. ✪
