Editor’s Note I Googled the word “Love.” I was a little scared of the results I’d get, being at work and all, hoping my boss would feel the love if something untoward popped up and set off alarm bells somewhere deep inside the recesses of the company. Would Big Brother believe that it was research? Probably not. Nothing beats a try but a fail, though. Anyway, I got 8.5 BILLION results in 0.18 seconds. (Can anyone tell me where all this stuff resides when it’s not on my computer? How does all that information fit in one place?) One of the top hits in my search was the Web site howstuffworks. com. “How Love Works,” it said. I refused to go there. That’s like knowing the real name of Watergate’s Deep Throat or that Carly Simon wrote You’re So Vain about someone other than Warren Beatty or Mick Jagger. Some things are better left unsaid. I guess I’m relieved that on the first page of results, the news was good. Glowing definitions that talked about magical feelings and such. There’s not enough magic in the world these days. You can have reality, I want the fairy tale. I want to think we’ll all live happily ever after. That’s why I love our Bridal Issue. Strictly speaking, it isn’t all bridal but it is all hopeful, as all romantics should be. Even if you’re already married, or not and don’t want to be, once or ever again, you’ll enjoy the pretty pictures of the Golden Isles and the talents of the local businesses that contributed to this issue. Cabin Bluff Opens Up For A Relaxing Retreat Cabin Bluff occupies nearly 24,000 acres along the Cumberland River in Camden County. Purchased by Howard Coffin in 1928 and operated jointly by Sea Island Company and Mead Westvaco for many years, this outdoor retreat served an exclusive clientele, primarily business gatherings that would reserve the entire facility. Today, Cabin Bluff is owned and operated by Mead Westvaco, which purchased Sea Island’s interest in the resort in 2010. While much of its business will continue to focus on business gatherings, Sales Manager Andy Ippensen says efforts are under way to make Cabin Bluff more accessible to couples, families and small groups of friends. In 2012, Cabin Bluff will be available to host weddings, Andy says. “We want to introduce Cabin Bluff to more families and social

groups, including weddings. We’re going to be working with Kelly Revels at The Vine, and Caroline Carter of Caroline Carter Events. “Cabin Bluff is a very active place where you can come and be energized by outdoor pursuits. It’s such a unique venue and will be a perfect fit for small, destination weddings. It also lends itself especially well to small group retreats and similar outings.” The main compound at Cabin Bluff comprises the Main Lodge and Dining Room, eight guest cabins, the Cabin Bluff Outfitters store, and a 1,700-square-foot conference center. There are 20 guest rooms, which can accommodate up to 40 people. The facilities, many of which were built in the 1930s, have a comfortable, rustic feel that reflects the retreat’s focus on the outdoors.

Each guest room has its own private bath, and offers amenities similar in quality to what you would find in any upscale hotel or inn. Meals are served family style, and are prepared to reflect simple, well designed Southern fare. The kitchen staff will gladly prepare fish or other game caught by guests. Recreational facilities include a lap pool and Jacuzzi overlooking the water, tennis, a bocce court and the Coolidge Lodge, which features the Cabin Bluff Pub and a large recreation room with pool tables, cards and other activities. Golfers will enjoy the links course, designed by Davis Love III. This unusual layout offers six holes, each of which offers three tee boxes, fairways and pin setups to accommodate an 18-hole round. There is a large outdoor cooking area, which is used for oyster roasts and other gatherings. It incorporates a number of picnic tables, swings and other amenities suited to informal social get-togethers. Hunting and fishing are signature pastimes, as they have been since the retreat’s earliest days. Cabin Bluff offers expert guides who are dedicated to helping novice and experienced hunters in pursuit of quail, deer, wild turkey, boar and other game as well as coastal and deep sea fishing. Guests who wish to hone their shooting skills can use Cabin Bluff’s 10-station sporting clays course, which is designed to mimic natural hunting conditions. There are several trails that wind through the retreat’s longleaf pine and live oak forests. These are ideal for quiet nature walks, bike rides or jogging. Cabin Bluff also offers day trips to nearby Cumberland Island where guests can explore the island’s natural and historic sites. “There is nowhere like this anywhere in the U.S.,” Andy says. “You can hunt, fish, play golf, shoot skeet, ride bikes, enjoy kayaking, take a nature tour and more – all in one location. We find that many guests are overwhelmed and don’t know what to do first.” Andy anticipates offering individual reservations beginning in the spring, with availability from April through September. Reservations will typically be made for three nights minimum, with allinclusive rates beginning at $450 per room per night. Rates include nightly accommodations, three daily meals, all beverages, nightly cocktail receptions, golf and sporting clays. Other activities are available on an a la carte basis. Fort Frederica Hosts History Once Again

Celebrate 276 years of Georgia history Feb. 18, during the 2012 Fort Frederica Living History Festival at Fort Frederica National Monument on St. Simons Island. The annual event celebrates the founding of Frederica in 1736 and provides an ideal opportunity for park visitors to actively participate in the history of the site and of colonial Georgia. Living history programs throughout the day will immerse visitors into the history of the town and the early 18th-century struggle for empire between Great Britain and Spain. Volunteers from throughout the region will help National Park Service staff bring the stories to life. From Castillo de San Marcos in St. Augustine, Florida Spanish soldiers will explain

their side of the story while they demonstrate firing a black powder cannon. Soldiers from Fort Frederica’s volunteer regiment will portray the 42nd Regiment of Foot and explain their role in determining the colony’s future. From Darien, Georgia Scottish Highlanders in all their kilted glory will demonstrate musket firing. Other volunteers from Fort Frederica’s growing volunteer program will provide hands-on programs and activities throughout the day. Special programs will focus on providing children with a variety of hands-on programs demonstrating colonial life. Among them will be musket drills, colonial children’s games, journal making and archaeol-

ogy programs. Participants who complete all the activities will be given the opportunity to “enlist” in the British or Spanish Army at the end of the day. “We welcome the community to come and experience the history in their own back yard,” says Park Superintendent Mary Beth Wester. “The festival is a great way to learn about Georgia’s early history and have fun while doing it.” Admission is free for the festival, which begins at 10:00 am and concludes at 4:00 pm. The Competition Will Be Hot At 12th Annual Taste Of Glynn

Anyone who has lived in or visited the Golden Isles for any length of time knows there is an abundance of talented chefs who specialize in every kind of cuisine, from the most laid-back traditional Southern fare to cutting-edge contemporary and international offerings. A Taste of Glynn, the annual fundraiser for Glynn Community Crisis Center’s Amity House and Hope House, is a celebration of our area’s culinary talent and a great way to enjoy samples of their best offerings in one location. The 2012 event – the 12th annual – takes place Sunday, March 25 at the King and Prince Beach and Golf Resort on St. Simons Island.

One Flew Over the Cuckoo’s Nest The Island Players present “One Flew Over the Cuckoo’s Nest” adapted by Dale Wasserman from the novel by Ken Kesey. Set in a mental institution, the poignant drama pits a charming rogue trying to avoid prison against the head nurse, who proves to be a fierce and formidable foe. Over time, the protagonist befriends his fellow patients and accomplishes what the medical establishment has been unable to achieve. His infractions, however, lead to a grave and irreversible conclusion. Performances are Jan. 6, 7, 8, 13, 14, 15, 20, 21 and 22 in the St. Simons Island Casino Theatre. New Year’s Day marks the return of “Island Treasures on Jekyll Island,” an annual program in which island visitors seek hidden treasures along Jekyll Island beach This year’s Music & Merlot Concert Series continues Jan. 14 with a performance by the Franklin Pond Quintet, a chamber music ensemble whose members also play in the Atlanta Symphony Orchestra. Each musician has individually performed with such well known organizations as the Boston Pops, Dallas Symphony Orchestra and the St. Louis Symphony. The quintet takes its name from the Franklin Pond Chamber Music Program, a highly regarded summer music program for serious young musicians. The quintet comprises two violins, cello, harp and viola. The performance will include works by Joseph Haydn, Dmitri Shostakovich and Antonín Dvorák. General admission tickets are $20 per person in advance, $25 the day of the performance. VIP tickets, including a pre-concert gourmet dinner served on the Morgan Center mezzanine, are $85 per person or $160 per couple. VIP tickets must be purchased by January 9.

The treasures are handmade glass floats, created by commissioned artists from across the country. Each is unique and stamped with the year of issue, making it a collector’s item for the lucky beachcomber who finds it. The Island Treasure floats recall glass fishing floats once used on the nets of commercial fishermen. Those floats occasionally broke loose from their nets and washed ashore where they were gathered and kept by beachcombers.

Dinner seating begins at 6:00 pm. General admission seating begins at 7:30 pm and the performance begins at 8:00 pm. Music & Merlot is presented by the Jekyll Island Authority, Jekyll Island Club Hotel, Jekyll Island Art Association and the Franklin Pond Chamber Music Program to benefit the Jekyll Island Foundation. Collecting glass fishing floats became a hobby in the 1950s but declined as commercial fishing switched from glass to plastic and Styrofoam floats. Today, these early glass floats are rare, highly sought and quite valuable. From January 1 through February 28, the Jekyll Island Authority recreates this hunt-and-find experience. Each day, “beach buddies” hide the Island Treasures along the shoreline for lucky visitors to find and keep. Those who find them can take their treasures to the Jekyll Island Visitor Information Center where they receive an artist bio and certificate of authenticity. The Center also offers a selection of Island Treasure floats and other color glass creations for sale. Bridging the Facts

The Run-down On An Icon By Amy Carter

Feb. 18 brings the 10th annual Southeast Georgia Health System Bridge Run to the lovely arching span of the Sidney Lanier Bridge. (Read more about it on Page 70 in our “Worth Knowing” profile of run organizer Susan Bates.) Because the bridge is arguably our most famous landmark, we thought we’d offer a refresher course on its finer details (and less finer past) for a fun run of our own down memory lane.

The current high-rise, fixed span Sidney Lanier Bridge replaced a marvel of 20th Century engineering (in that everyone marveled it still worked into the 21st Century). When it worked like it should, all was good. When it didn’t, motorists found themselves on an arduous trek around the compass just to get from one end of the county to another. The good news: The new bridge doesn’t break down. The bad news: We no longer have a good excuse for being tardy.

Free at last The first commercial ship to sail underneath the newly christened bridge on April 7, 2003, was a car carrier named Takamine. The ship was reflagged under U.S. laws later that year and renamed Freedom. She still sails the seas.

The U.S. Track and Field Association calls the Sidney Lanier Bridge Run “The Toughest 5K in Georgia” and here’s why: Just 300 feet of the entire 7,779-foot-length of the bridge is flat surface. Runners (and walkers) on the bridge climb from sea level to a height of almost 300 feet (equivalent to a three-story building) in the span of about a half-mile. Whew, makes my fingers sore just typing that.

The Big Read, the popular community-wide literary reading initiative that has engaged people in Coastal Georgia since 2007, returns for another round in early 2012 with a month of fun and varied activities and events focused on Dashiell Hammett’s entertaining and highly influential 1930 novel The Maltese Falcon. The Big Read 2012: Coastal Georgia Reads The Maltese Falcon kicks off on First Friday, Feb. 3 with a full schedule of discussion groups, films, lectures, performances, exhibits, school programs and more extending throughout the month. The kick-off at the Historic Ritz Theatre in Downtown Brunswick will feature a “detective” contest with clues planted throughout neighborhood businesses, the opening reception from 5 p.m. until 8 p.m. for an exhibit featuring the art of pulp fiction book covers of the 1930s and ‘40s and film noir posters of the period, and a free screening of the classic Hammett-based mystery-comedy The Thin Man (1934). The Big Read is presented once again by Golden Isles Arts and Humanities, the coordinating arts council for the City of Brunswick and Glynn County, in partnership with the Three Rivers Regional Library System and the College of Coastal Georgia, with additional participation from the school systems of Camden, Glynn and McIntosh counties, McIntosh Art Association and Arts Camden.

The Coastal Georgia partnership is one of only 76 communities nationwide chosen this year by the National Endowment for the Arts (NEA) for a program grant, thanks to the great success of previous installments of The Big Read locally, which have focused on such literary greats as Fahrenheit 451, To Kill a Mockingbird, the poems and stories of Edgar Allan Poe, and The Great Gatsby. The 2012 program will include discussions, performances, films, art exhibits, and school programs designed to get as many people in the community as possible reading, discussing, and thinking about The Maltese Falcon, one of the 30+ books on the NEA’s approved list. “By changing the type of book we focus on each time, we can appeal to a broad range of tastes and also inspire people, through new and fun events, to spend some time reading these great works,” says Heather Heath, executive director of Golden Isles Arts and Humanities. The Maltese Falcon is one of the best detective stories ever written. It’s also a brilliant literary work, as well as a thriller, a love story, and a dark, dry comedy. The only criticism possible about Hammett’s private-eye classic is that since it’s so much fun to read, it might be hard the first time through to realize just how deeply observed and morally serious it is. The Big Read was launched nationally in 2006 by the NEA, in partnership with the Institute of Museum and Library Services and Arts Midwest. Modeled on successful “one book, one community” programs, the Big Read was created to address the national decline in literary reading as documented in the NEA’s 2004 landmark survey “Reading at Risk: A Survey of Literary Reading in America.” The survey showed that less than half the American adult population now reads literature. Buffy the hummingbird comes back by Lydia Thompson

B

uffy is back! He left some time in April after spending the winter on Jekyll Island. While he was here, he created quite a stir. After all this was the second Buff-bellied Hummingbird to be photographed and recorded in the State of Georgia. The first Buff-bellied Hummingbird spent January and February 2010 on St. Simons Island. More than 150 people came from all over the country to see her. How do we know she was a she? There is a Hummingbird Study Group that trained teams of bird banders in the Southeastern United States. This group’s goal is to learn about these wintering hummingbirds like Buffy so they are ready to travel. Buff-bellied Hummingbirds are large hummingbirds measuring 4¾ inches from bill to tail. They live in Mexico and are common in the lower Rio Grande Valley of Texas. Being a hummingbird of course they are stunning. They are spangled green jewel with a cinnamon tail.

Wintering hummingbirds are not rare. We have had more than 10 different species of hummingbirds visit our state in the winter. Green-breasted Mango, Broad-billed Hummingbird, Magnificent Hummingbird and Buff-bellied Hummingbirds are among the most unique hummingbirds to visit the state. So leave one hummingbird feeder out. Don’t worry about the myth that our Ruby-throated Hummingbirds won’t migrate. Birds have an internal clock that tells them to leave, food or no food. If you see a hummingbird in the winter please report it to www.gahummer.org. This group is tracking hummingbirds in the state. You never know: You may have your very own Buffy. .

When someone casually mentioned that there was a Buff-belled Hummingbird on Jekyll in December 2010, we thought Buffy was back. A bander came over and set up a trap. It is a simple device, a cage with a trip-door and a hummingbird feeder inside. This Buffy seemed to know what the device was and was not having anything to do with it. Patience and observation is required for banding and the bander noticed that the bird was banded. There was speculation that this was the same hummingbird from St. Simons. However, this idea was quickly dismissed. On the very day the bander was on Jekyll trying to catch this hummingbird, Buffy One was recaptured in Slidell, La. She had made it through the summer but who was this Buffy Two?

The hosts of Buffy Two along with a group of guests started a project. They were getting up close pictures of the band to get the band numbers. The banders use bands from the United States Geological Service Bird-banding Lab in Laurel, Md. These numbered bands are recorded in a central storage area, so when the numbers were confirmed, the lab knew that this bird was a male. He was banded in September 2010 in Alabama. Get this – the bander who was trying to band him on Jekyll was the one who banded him in Alabama. Buffy was a smart bird. He was not going to fall for that trap twice. Now he is back. Will he stay the whole winter? Time will tell.

sk any local food service professional where they go out, when they go out, and chances are the answer will be, “Delaney’s.” In this relaxed, comfortable, intimate bistro which is not too formal— nor too casual—food and wine are the stars. They are both under the inspired direction of Chef Tom Delaney whose philosophy is pretty straightforward: “I cook what I like.” The Chef refers to his menu as “earthy stuff.” “We are at the beach,” he explains. You will find game, lamb, meat and fish all expertly prepared with traditional techniques and the freshest, best ingredients. Chef Tom Delaney’s classically-trained talents are brought out in his ability to combine foodstuffs—in one dish, or in a whole menu— creating a synergy where the results are far superior to the individual components. His beet salad for example is a concoction of arugula, roasted beets, crumbled French Chevre, walnuts, truffle oil and a touch of lemon, all working together to create an ethereal experience. Pairing is another Delaney specialty. “Some of the match-ups with the food and wine will blow you away,” he modestly proffered. “I

like wine—that is my inspiration.” The restaurant occasionally offers special pairing dinners—5 or 6 course dinners which “give me a chance to do off-menu things I know people will like,” he explained. A recent offering was chocolate soup (yes, chocolate soup) topped with hazelnut cream. Delaney’s is entering its 19th year on St. Simons. It began after he and his wife Leslie (both trained at Johnson & Wales) decided they had had enough of the isolation of the Greyfield Inn on Cumberland Island. Atlanta might have been a better market for their restaurant, but as Chef Tom explained, “We love the people here. We have great customers, and we get to know them!” Past clientele include Robert Redford, Dweezil Zappa, Morgan Freeman and Jimmy Carter. No one, however, overshadows the local regulars who return again and again to experience the best cuisine the Golden Isles has to offer.

New Year, New Plan by Mark anderson, PGA, brunswick country club

E

ach New Year most people make New Year’s resolutions. If you made a New Year’s resolution to play better golf, I recommend that you follow the plan that Jack Nicklaus used for years. Every year before Jack started his PGA Tour season he would visit with his long time teacher, Jack Grout, and go over his fundamentals. The fundamentals are grip, stance, ball position, posture and alignment. Jack Grout knew, as does every great teacher, that fundamentals are the key to a consistent and repeatable swing. The basics of golf are what separate those who succeed from those who don’t.

During the past six years, when I was in Atlanta, I had 20 junior golfers earn golf scholarships, with 10 of those going to Division I schools. I had some students who left me because they wanted me to teach them new stuff about the swing. I would tell them that their fundamentals were not consistent enough for them to really excel with new information. The students who did stay and really worked at the basics soon learned that they became much longer than their peers. When their swing did fall down under pressure, they found the answer to their problems in the fundamentals. The most likely culprits were bad grip or ball position or posture. The saying I heard most often in my building was, “It always comes down to fundamentals.” When you’re in proper position to start your swing you can then concentrate on making a good balanced swing to full finish. The last fundamental for my teaching method is balance. Balance is the part of the golf swing that most students and teachers don’t discuss. The truth is golf is a balance sport. The orbit of the club head is basically a circle. When you lose your balance the circle of the club head can move in or out, left or right, or up and down. This makes consistent contact very difficult. If you have good fundamentals then you should swing at a pace that allows you to hold your finish until the shot stops. If you wobble or have to step to keep from falling then you are swinging harder than you should in order to keep your balance. A good drill to use to determine how hard you should swing is to hit balls with your eyes closed. This teaches you to swing within your balance threshold and feel the wobbles in your balance. Next hit balls with your eyes open at the same speed and rhythm as you did when your eyes were closed. This is the speed and rhythm with which you should swing. So this New Year make a commitment to work with a PGA professional on your fundamentals and balance and you will soon play the best golf you have ever played.

It all started with a tattoo by amanda kirkland

I

t’s a new year and with every new year comes the opportunity to look over past mistakes and learn and grow from them. And as I’m sure most of these stories go, it all started with a tattoo.

When I was 19, I foolishly got a tattoo on my belly. I wonder why no one at the tattoo parlor said, “Hey, cute, young, semi-innocent, naïve girl, why are you tattooing your belly? Don’t you think that you may want to get pregnant one day, maybe even quite a few times, and that the tattoo will grow and distort with all of those pregnancies?” I guess that guy had the night off.

Now, however, the tattoo on Mommy’s belly was becoming a topic of conversation for the whole household. I dreaded any occasion where the children would be handed little rub-off tattoos because I knew that that evening there would be another conversation about how “Mom’s doesn’t rub off” and “Doesn’t it look funny.” It was time for me to correct that foolish mistake I had made so many years ago. I immediately began considering cosmetic surgery again. I visited a new surgeon determined to make that old mistake completely disappear. We decided on a procedure that would do just that. I scheduled my surgery and eagerly anticipated its arrival.

Fast-forward a mere eight or so years and two pregnancies. That tattoo was looking good. With each pregnancy, it would grow with the baby and me, and then reshape itself after the baby was born. Then the day came that I had dreaded since my first baby, Jonathon, was born. He was a few years old and very fascinated with the tattoo on Mom that wouldn’t rub off. I immediately started contemplating ways of getting the tattoo removed.

I was in and out of there in what seemed like 20 minutes. I hear it was really approximately four hours. I remember Josh coming in to help me get ready to go and the nurse rolling me out into the hallway. I saw a couple of nurses from my ob-gyn’s office and I yelled, “Hey ya’ll, look, I got it all done!” I completely blame the medication for that moment of impropriety.

I consulted a cosmetic surgeon about the cost and procedure associated with tattoo removal. As the surgeon was talking I was again flashing back to the night that I had paid $60 to have that tattoo put on my belly. Where was that guy who would have said, “And later on down the road, if you want to have it removed, it’s going to be a long process and cost you six times as much to have no guarantees at all that it will really ever be totally gone.” I left the surgeon’s office feeling a little disgruntled about my choices.

Sorry, ladies.

Fast-forward about six more years, two more pregnancies and one adoption. Thankfully, the adoption was easy on the tattoo.

oday, older adults stay active. They golf, swim, bike and run. But the body doesn’t always want to cooperate. Melvin Deese, M.D. “We know that across the board, skeletal and spine problems represent the majority of the reasons people spend time away from their families and from their jobs,” says J. The Plunge: Life on the Edge of madness by Bud Hearn

T

when he flung to the heavens his inexpressible frustration (just as his ashes were later hurled into space), “Why not? Why not? Why not? Yeah!”

he Sea Island Beach, January 1st, 9:00 AM, Windchill 25, Water Temp 45. The asylum doors open, and the escaping madness materializes as the day dawns in sunlit splendor. The crowd, approaching 100 nut cases, assembles in a tightly-huddled mass of nearly-nude bodies, hovering on the edge of the swirling and angry waters of the Atlantic. The scene comprises the collective commitments of the previous eve, a time when hasty but prodigal resolutions are made, bolstered by sufficient quantities of liquid spirits, machismo or plain dumb bravado. We, The Intrepid, are here to plunge perfectly healthy and unwilling bodies into the icy gray waters of the churning sea. This assault upon the sea is sheer madness, all for the ludicrous rewards of beach towels or cocktail boasting rights. Imagine such folly! The inmates strip down to the bare essentials, shiver uncontrollably in the howling frigid air with wind chills into the 20s. In spite of the lunacy of the scene, nothing but laughs, smiles and exuberant chatter are heard from the crowd that is giddy with excitement. They bear testimony to the fact that lunatics can be found anywhere, even on beaches. At precisely 9:00 AM, and in one accord, the herd in a unified frenzy commits itself to the

mercy of the crashing waves. Wild shouts of joy, or pain, or hallucinatory visions erupt. The spectators, clothed and still in their right minds, watch the chaos of The Plunge from a safe distance. It ends as quickly as it begins. The white bodies, reddened by the glacial sea, hastily retreat to the security of a towel, or cup of hot chocolate or, for some, to the comfort of Southern Comfort, which got them there in the first place. Sanity, in witness to this extreme absurdity, can only be heard uttering the shortest, unanswerable sentence in the language, “Why?” Freud, in his most lucid moment, marveled at this cosmic conundrum. The closest answer to this question is perhaps found in the last words of Timothy Leary,

The contemporary Age of Enlightenment has come to embrace a life on the edge of madness – the coexistence of lunacy with lucidness, madness with morality, and a wide gray sea of relative values. The previous year demonstrates the ugly failure of systems and philosophies, not to mention moral values. We are bludgeoned senseless by the madness of the media mob as it feasts on one dying corpse after another. To say “We’ve had enough,” is an understatement, and apparently more wasted words cast silently into the ethereal nether-world where echoes reverberate endlessly without response. Who can deny that culture as we know it today stands on the very edge of a watery chaos, teeming with ambivalence, fearful of the “what-ifs” that are cast ashore by turbulent waves. Who, but stark, raving fools, would take The Plunge into that swirling abyss? The words of the prophet, Dr. Thompson, come to mind: “It was the Law of the Sea, they said. Civilization ends at the waterline. Beyond that, we all enter the food chain, and not always right at the top.” Bud Hearn was born in Valdosta and grew up in Colquitt. Troy Bivens was smitten after visiting his uncle’s 600+ buffalo ranch in Minnesota. He nurtured that love affair all the way back to Georgia and the result is a new business venture called GeorgiaBuffalo, Inc., his own buffalo ranch located between Darien and Eulonia in McIntosh County. Troy purchased the land in 2004 and had plans for residential construction, but the economy tanked and he began to explore other options. “I wanted to do something with it. I thought about doing mud holes or building a zip-line park out here,” Troy says. Then the proverbial light bulb went on over his head and buffalo ranching was the result. Buffalo ranching is not new. Ted Turner of CNN fame began ranching buffalo years ago and has a successful chain of restaurants, Ted’s Montana Grill, that serve bison meat. “We went to his place in June. It was amazing. He has over 55,000 buffalo and there were over 1,300 in one area. It was like in the western days when all you could see was black,” Troy says with a smile. Bison, also known as buffalo, once roamed the endless prairies of the west in vast herds estimated to number between 30 million and 60 million strong in 1830. They were slaughtered for sport, hides and meat and to attempt to destroy the main food source of the Native Americans. “In 1900 there were 1,000 buffalo left in North America. Now there are about 550,000.” Troy says. That dramatic comeback is due to conservation efforts, zoo breeding and private ranches. Troy is also a card-carrying member of the National Bison Association –

the NBA for short – a non-profit association of producers, processors, marketers and bison enthusiasts. “It’s a good group. It’s an organization where I can call anybody up and ask a question. They aren’t a backstabbing company because everyone is willing to help you. This coming January there’s a big conference in Denver with the NBA so we’re all going up there,” Troy says. Buffalo are enormous in size and can weigh anywhere from 770 to 2,200 pounds. They are the epitome of resilience, able to survive the harshest winters or the hottest summers. “People think they can’t take the heat because of all the hair, but they take the heat better than a cow. It can be 50 below and it doesn’t bother ‘em. They can still eat because they can rut up the ground and find grass. They don’t eat as much in the winter time. They eat half as much as a cow,” Troy explains. Bulls turn their attention from mundane subjects like eating and drinking to thoughts of love during the summer months. With intense displays of courtship involving pawing the ground, snorting and bellowing, they hope to discourage rival males and woo females. In fact, recent scientific studies by UC Davis and Point Loma Nazarene University in San Diego on the correlation between the loudness of a mammal’s vocalizations and reproductive success came up with surprising results. They found that those bulls that bellowed the softest attracted the most females and sired the most calves. The “studs” with the loudest bellows saw the least amount of ac-


tion – exactly the opposite of what the researchers expected to find. Umm, guys, there might be an important lesson to be learned here from the buffalo. Troy began his herd with seven head from Virginia early this year. The number has grown to 35 now with additional stock acquired from North Carolina, Pennsylvania and, surprisingly, Jesup. A gentleman there contacted Bivens and informed him that he had some buffalo that he wanted to sell. Troy brought them all. Eventually he hopes to have about 250 head. “Right now we have 15 exposed cows out there. Exposed means they might be pregnant. They’re with a bull. Out west, they have their babies around April or June, but here in the south they have ‘em year ‘round.”

The superstar of the herd is the designated breeder bull, Get-R-Done. His physical size and other attributes make him the logical pick for breeder. “Out west you want to have a 15-to-1 ratio of bull to cows. But here in the south you can have a bigger ratio than that because they aren’t all in heat at the same time. So Get-R-Done can handle everybody here right now,” Troy says. I can’t be sure but I think I saw a smug look on Get-R-Done’s face when Troy made that comment. Sherry DiSimone, business and marketing manager for GeorgiaBuffalo,Inc, says Troy has a T-shirt in design that will feature Get-R-Done and all his girlfriends. “The girls here from Pennsylvania have been bred with a white buffalo, she says, pointing to some female buffalo. “We hope when they start dropping calves we might see a white one.”

Grilled Georgia Buffalo Bison Ribeyes with Sautéed Mushrooms Contributed by Sherry DiSimone Ingredients:

Troy has a contract with the man who sold them to him. “If I have two white ones, he gets one of ‘em. It’s probably 500,000-to-1 to get one. I heard some guy ended up with a white calf and a zoo offered him $250,000 for it. He didn’t sell it though.” You get the sense that Troy Bivens is a man who has found his calling. He looks on approvingly as his daughters roam the farm interacting with the buffalo and helping with the chores. “I did a remodeling job just a couple of months ago. That’s probably the last construction I’m gonna do. This is fun out here and there’s no pressure,” Troy says.

2 Georgia Buffalo Ribeye steaks 4 Tbsp. Extra-Virgin Olive Oil 1 Tbsp. of your favorite seasoning (garlic salt, Everglades, Montreal Steak seasoning. etc.) 1 large pkg. button or baby portabella mushrooms, quartered 2 Tbsp. butter 2 shallots, minced 2 Tbsp. garlic, minced Salt and pepper to taste Preparation: Rub 1/2-Tbsp. of olive oil onto both sides of the bison ribeye steaks. Sprinkle your favorite seasoning onto the meat.

Buffalo meat will be available locally by January and GeorgiaBuffalo has standing orders from local shops in Darien, Brunswick and St. Simons Island as well as markets in Richmond Hill and Savannah. “We’ve got a guy in Puerto Rico that has a big distribution warehouse that’s going to Europe and China and he’s wanting us to give him some meat, so that would be a big deal. If we get that we’ll have to outsource the meat for that.” Many people say buffalo meat is more flavorful and a little sweeter than beef. It has less fat and calories and more protein and iron than comparable portions of beef, pork, chicken and even some fish. Buffalo are raised naturally, too, without the use of hormones or growth additives.

Place a cast iron skillet or grill proof pan on your grill while the charcoal is on its way to the perfect grilling condition (when a white ash forms on top of the coals). Bison steaks grill best at low heat, no hotter than 325 degrees.

“We plan on being very involved in the community with the Blessing of the Fleet and a lot of other events locally here and trying to educate the people on buffalo,” says Sherry. “We want to do dinners and invite people to come over and teach them about the buffalo,” Troy adds. Public response has been very positive. Many people do double takes while driving by the ranch and end up pulling over and watching the animals in amazement.

Place seasoned bison ribeye steaks on the grill and cook first side for approximately 3 minutes. Flip bison steaks with a pair of tongs and cook for an additional 3 to 5 minutes, depending on the thickness of the steak. Allow the bison ribeye steak to rest for 10 minutes; this will lock in the juices.

A Web site, GeorgiaBuffalo.com, is in the works. It will include a nursery page with updates on births that add to the herd. Bivens is very optimistic about the future of his business venture. He sees education as the key to people becoming aware of buffalo and the benefits of buffalo meat. With his girls Amanda, 15, and Amira, 12, behind him and a very capable Sherry DiSimone in charge of business and marketing along with a strong and growing demand for buffalo meat, he has good reason to be hopeful.

Add butter and shallots to pan; brown about 2 minutes. Add garlic; brown for 2 minutes. Add mushrooms to sautéed shallots and garlic, stirring occasionally, brown for approximately 5 to 8 minutes. Season sauté with salt and pepper to taste. Remove from heat and keep warm.

Notes: • Use tongs to turn your steaks, not a fork, so as not to pierce the meat and allow the juices to escape from your steak. • Bison cooks faster than beef. Watch your cooking time. Steaks are best served as rare or medium-rare. Overcooking may result in a tough steak.

What’s Going On? Looks can be deceiving. Jennifer Page and Jason Tacbas photography By Brit tany Carpenter and Sarah Simmons A month out from her wedding Sept. 24, Jennifer Page Tacbas still hadn’t decided the all-important issues of food, location, flowers and favors. “I was one of the worst procrastinators,” she says. “Thank God, because it all changed.” On Aug. 2, in her office at the College of Coastal Georgia. A blinding headache – one that forced her to hold her head all day as she guided the student ID office toward the start of a momentous new dawn at the school – finally felled her in the late afternoon. She remembers closing the door to her office after feeling she would pass out, and waking up on the floor with concerned coworkers all around her. She doesn’t remember leaving the college that day or how she got to the emergency room at the Brunswick hospital just blocks away.

There was an MRI, a CT Scan and talk of a tumor on her brain. Jen suffered four seizures in 24 hours, one a grand mal that nearly killed her. Fiance Jason, a former emergency medical technician, had to inititate CPR “to help me back. Jason said I turned blue. He saved my life. He is a lifesaver for me in more than one meaning of that phrase.” As were Jason’s coworkers at the Federal Law Enforcement Training Center – who cooked and sold 350 Boston butts to help Jason and Jenn pay her medical bills. During a month that ought to have been fraught with wedding planning, Jason and Jen visited doctors and hospitals who scratched their heads in wonder as a diagnosis eluded them – no cancer, happily – but Jen’s tumor persisted. They


did a biopsy of the tumor, creating a 3-inch incision and removing a nickel-sized piece of Jen’s skull. When that was inconclusive, they wanted to operate again. But a miraculous thing happened – a presurgery MRI showed the mass in her brain had shrunk by itself. “We don’t have to operate,” the doctors said. “Go ahead and get married.” And so they did, on Sept. 24 as originally planned. It was a simple ceremony with a great last-minute reception at Zachary’s Restaurant, where the staff “treated me like royalty.” It was a simple ceremony and a memorable celebration of “in sickness and in health, being alive, being happy ... things you take for granted. It was supposed to be that way.” Although doctors still have not settled on a diagnosis, Jen is happy with her life as a newlywed with just one job, her passion, wedding photography. She’s in love with love and all the joy that goes with it. That’s not new. It’s an aspect of the job she always loved best. But whereas the vows of marriage were words said by others before, they are Jennifer Leigh Page Tacbas’s mantra: For better or worse, for richer for poorer, in sickness and in health.

I

f you haven’t noticed Susan Bates around town before now, you’re not getting out of the house often enough.

Between her work promoting health and wellness for the Southeast Georgia Health System and her efforts toward the betterment of the community and its inhabitants – witness her rallying of Southend Brunswick residents with the SoGlo (South of Gloucester) Neighborhood Watch-née-social club – she’s just about everywhere doing just about everything. The one thing she’s perhaps best known for, however, is planning the health system’s annual Sidney Lanier Bridge Run, now on its 10th go. (The math doesn’t look right when you consider that this is 2012 and the first run was held in 2003, the year construction of the bridge was completed. Count it out on your fingers, though. It actually works.)

The Southeast Georgia Health System’s 10th Annual Bridge Run will be Feb. 18 on and around the Sidney Lanier Bridge. A pre-race Pasta Party will be from 5 until 8 p.m. Feb. 17 at Coastal Kitchen. “I’ll run it this year,” she vows.

The first run was organized by the Golden Isles Track Club and organized in concert with the Brunswick-Golden Isles Chamber of Commerce. Five years later the health system, which has owned the No. 1 runner’s bib for the race since its inception, took over as primary sponsor. With everyone from city and county leaders to captains of industry to the U.S. Coast Guard to the Jekyll Island Authority and many others unnamed here now sitting on her planning committee, Susan can boast one of the most inclusive of all community events. Like the bridge that hosts it, the bridge run is a hallmark of the Golden Isles. “I think that regardless of where you live in this community, you can see (the bridge) and it’s yours. Everybody can claim it,” Susan says. Susan moved from Seattle to the Golden Isles when she was in the ninth grade. “We didn’t even know Georgia had a coast,” she laughs, but she knows it so well now that she remains even though many in her family have returned from whence they came. “My mother to this day still holds out hope that I’ll move to Seattle. I’ll be here until they find a cool place to scatter my ashes. Off that bridge, probably,” she laughs again, gesturing toward the Sidney Lanier Bridge during a leisurely morning spent chatting in its shadow. Oh yes, the bridge is one of the main reasons you should know and appreciate the work of Susan Bates. Not that she designed it or helped build it or anything like that. In fact, she wasn’t even able to run it last year because someone accidentally dropped a chair on her foot at the pre-race pasta party.

This race will usher in a new era of community unity, its primary planner predicts. Participation has risen from 11 teams initially to 54 teams last year. Runners and walkers hailing from 23 states and four countries registered to run the bridge last year. From “pie-inthe-sky” to very real possibilities, everyone wants in on the action with events linking Jekyll Island and Downtown Brunswick to the action, transforming the three-hour run into an all-day draw, if not a weekend-long celebration, falling as it does on Presidents Day Weekend every year. “I want to grow this event,” Susan says. Already, participation under the health system’s guidance has grown from 400 runners in 2008 to 2,200 last year. One of her biggest hurdles to greater growth, Susan readily admits, has been complaints about inaccuracies and slow reporting of runners’ times. This year, however, there will be a new timekeeper in town, one experienced in big races with thousands of runners – like the Gate River Run in Jacksonville. Using radio frequencies emitted by a sticker affixed to each runner’s bib, the results will be almost instantaneous, Susan says. “Technically, we should be able to start the awards presentation before everyone is off the bridge.” If that promise holds come Feb. 18, then the sky’s the limit for this event and this tireless cheerleader for all things Golden Isles. “This is my favorite event of the year for us as a health system, for me as a community member,” Susan says. “It makes me really, really proud to stand out here on this bridge with all these people.”

David Loehle weaves beauty into functional objects

T

he house is peaceful and quiet, much like the man who greets me at the door. David Loehle, a gifted artisan, stands surrounded by richly constructed wood furniture and beautiful ceramic pieces. “We operated a ceramic studio while I was a professor at the U.S. Military Academy at West Point,” he says. “The studio was stationed in the basement, housing several large kilns. It allowed individuals to hand-pour and hand-paint their own ceramics.” Woodworking, ceramics and fiber are all in David’s artistic repertoire, but it has been in working with the natural materials of the Golden Isles that he has found his special niche. Basket-weaving with local grasses is his current focus. A pool table is laden with baskets of all shapes and sizes. Each is simple yet elegant in its design, and fashioned entirely out of grasses from the marsh and maritime forest. Using the basic coil technique seen in basket-weaving throughout the centuries – a tradition dating back to antebellum days in both Coastal Georgia and South Carolina – David has crafted baskets for which the uses are endless. As he talks, David grabs a handful of grasses and an unfinished basket and sits weaving and cutting, meticulously and effortlessly bringing a basket closer to form. His craft is definitely a calming one as I am enthralled by the motion of his hands as he weaves in a rhythmic pattern. Davids describes his emersion into hand-made crafts as, at first, primarily functional. “Back in the day everybody owned a sewing machine. It was cheaper to make clothes and I made a lot of my wife’s and children’s clothing and household textile needs, including quilts.” David points to multiple pieces of furniture that he built. With a wave of the hand he directs my eyes to a state-of-the-art woodworking shed he built. “With a father whose trade was woodworking, it just came naturally. I could frame and used this skill to get jobs in high school and college

“While our family was growing I used this skill to build additions to our houses and construct anything needed.” David continues in the family trade by volunteering to help with the building of Habitat for Humanity houses. “Two-and-a-half years ago I took a basket-weaving class hosted by Glynn Art Association taught by Evelyn Grovener, a basket-weaver from Sapelo Island.” He excelled at the art form, so he felt empowered to begin gathering his supplies. David notes that this is a resourceful craft by nature, one that does not constitute buying commercial materials. “The heavier greenish grass is needlerush, and the brown center and accent coils are made from the needles of longleaf pine”, David explains. The coils are bound to each other with strips of the outer layers of saw palmetto stems. Some pieces are accented with sweetgum balls and parts of pine cones. The main coils of his baskets are made of bunchgrass found on the edges of the marsh. “The primary costs are time spent gathering grasses and weaving,” he says. David retired in 2002 after a successful career as the manager of the chemistry and biology laboratory operations at the U.S. Military Academy at West Point. He and his wife, Lucy, were lured South by a son and first grandchild who live in Jacksonville. They drove down this way a number of times before stopping to explore the Golden Isles. He recalled one Sunday drive around the Island. “The marshes were gleaming, the boats were white on the water, and the dark but welcoming canopies of oaks told us we had found what we were looking for.” David made his baskets as gifts at first, but when requests poured in to donate items for benefits such as silent auctions – which then led to gallery shows and commissions – he realized the business potential of his craft. David is the primary owner and designer for Barrier Island Baskets, where he sells his hand-crafted marshgrass baskets. Out & About The St. Simons Land Trust hosted its 12th annual fund-raising oyster roast under the oaks on historic Gascoigne Bluff, a new venue for a favorite tradition in the Golden Isles. Out & About The 6th Annual Golden Isles Festival of Trees benefitting the Elizabeth F. Correll Teen Center of the Boys and Girls Club of Southeast Georgia kicked off the holiday season the first weekend of December. The celebration started with a holiday luncheon at Halyards, followed by a fireside chat with local golf celebrities at the Frederica Boathouse and a Friday evening cocktail reception with the event’s signature auction of decorated trees and wreaths by local designers. God has a sense of humor. Why else would I, girly-girl that I am, have given birth to three boys. I’ve spent moments of sheer terror standing in the chair in the kitchen, shrinking from the frogs, lizards and other slimy creatures they brought home. I’ve spent countless spring hours shopping for three perfect pairs of khaki Easter pants. When my boys went to high school I longed to be one of the moms who spent the day (and sometimes entire weekends) shopping with her daughter for the perfect prom dress, shoes and accessories. As fate would have it, my son and I spent 10 minutes choosing, measuring and paying for a tuxedo. The big question of the day: Black or white? I love my boys, all three of them, but they will all tell you that, had my husband chosen to continue our quest to increase the population, we would have had babies until I finally had a baby girl. I accepted God’s humor and vowed to accept the challenge of raising all boys even though I knew nothing about reptiles, getting dirty or the difference between an inning and a quarter or an umpire and a referee. I learned to love these things and realized that in a house full

of men, I was the queen. It goes without saying that boys love their mommas. There really is such a thing as a “momma’s boy,” but we can’t keep them forever and eventually we start preparing them to one day become perfect Southern gentlemen and every girl’s dream for her future husband. A man with a sentimental, mushy, lovey-dovey side that surprises his dream girl with a card on the anniversary of their first kiss. (Oh yeah, girls, who’s your momma?) A man who will spend hours and hours shopping with you and never complain once that he’s bored or ready to go home. (OK girls, are you getting the picture?) This type of man has been molded into the perfect husband-to-be by none other than, you guessed it – the MOG, better known as the Motherof-the-Groom. I recently became a MOG and unfortunately, MOGs can sometimes be lost in all the pomp and circumstance that belongs to the bride and the MOB (Mother-of-the-Bride). Once again we are called upon to help our boys answer manhood’s most pressing question: Black or white? MOG doesn’t get to go to dozens of shops looking for the perfect wedding dress or choosing flowers, decorations and food. MOG isn’t even supposed to choose her dress until MOB chooses hers. Which makes no sense because every time I Googled “Motherof-the-Groom” I got a million or more sites that were trying to sell me the perfect dress! Wedding etiquette sites tell me to be happy I’m not burdened with the responsibilities of the bride’s family but, truth be told, I longed for those responsibilities, or at least a few of them. I begrudgingly lived up to my Southern belle standards and often had to simply sit down and shut up! And in the end, amidst all the dos and don’ts of wedding planning, one thing remains true: Two mothers watch their children become one. So brides, grooms, mothers-of-the-bride, fathers-of-the-bride, mothers- and fathers-of-the-groom, unite! Throw away the etiquette books, brides-to-be, and ask your future mother-in-law to join you and your mother as you plan for your day. Take the time to make her feel special and included. Just by simply including her you are laying the foundation for your relationship after the wedding. After all, you don’t want to start out on the wrong foot and wonder why your sweet adoring husband’s mother is now your monster-in-law, do you?
