Did you ever wonder why February is the only month with 28 days? Or why the lengths of the months on the most widely used calendar in the world are so inconsistent? Apparently, it’s all down to Roman superstition. Prior to the Gregorian calendar, the one which we use nowadays, the Roman calendar consisted of 10 months rather than 12. That’s right, for a while, January and February didn’t even exist. To the Romans, who made their living by planting and harvesting, winter was a nameless and dateless slog. For part of the year, there was literally no system for keeping track of the days. In order to fully sync the calendar with the lunar year, Roman king Numa Pompilius added January and February. When introduced, January was given 29 days and put at the beginning of the calendar year. February was given 23 days and put at the end. Then, shortly after Rome’s founding, months were said to have begun when a new moon was first sighted. At some later time, month lengths were separated from lunations and again became fixed. At that time, February’s original length was extended by five days which gave it a total of 28. When Julius Caesar took power, he reconfigured the entire thing again and aligned the length of the year with the sun, so that each year would add up to 365 days. February, which by now was at the top of the calendar, kept its 28 days. A leap year occurs every four years to help synchronise the calendar year with the solar year, or the length of time it takes the earth to complete its orbit around the sun. Leap days are needed to keep our calendar aligned with the Earth's revolutions around the Sun. It takes the Earth approximately 365 days, 5 hours, 48 minutes and 45 seconds to circle once around the Sun. This is called a tropical year. Without an extra day on February 29 nearly every four years, we would lose almost six hours every year. After only 100 years, our calendar would be off by approximately 24 days. The next leap year is 2020, and now you know the science behind it all!

NATIONAL GEOGRAPHIC NAMES GALWAY AMONG WORLD'S BEST TRIPS FOR 2019 It seems west is best as Galway has been named among the 28 best trips to take next year by National Geographic Traveler, one of the best known travel magazines in the US. This is the second year in a row that an Irish city has featured, with Dublin's friendly, village vibe earning it a place on the 2018 list. Mexico City tops a list that ranges from cities like Dakar and Toronto to the wilds of Greenland and Mozambique's Gorongosa National Park. Registration is now open for GROW2CEO, a unique competition to find Irelands’ next young food entrepreneurs. A collaboration between Cully & Sully and GIY, it gives students and teenagers across Irish secondary schools everything they need to start growing some food and get a better understanding of what goes into the food they eat so they can make healthier choices in their own lives. The campaign involves four exciting challenges, which will take students on a fascinating journey where they will create their own food business and soup recipe while learning all about where food comes from. One of the highlights on Galway’s social calendar, this year’s National Breast Cancer Research Institute Valentine’s Ball will take place on Saturday 16 February in the Galmont Hotel & Spa. Man About Town

The Irish are regularly famed for our good humour, welcoming nature, and our ability to enjoy a tipple or two. But perhaps our often most forgotten virtue, is our most steadfast – our work ethic. We have built vast cities and glorious structures, and have birthed sons and daughters that never shy from the pursuit of greatness. Our very own Darren Kennedy is a perfect fit for that mould. A stylist, entrepreneur, writer, television presenter – and that’s just the tip of the iceberg! The Dublin native caught up with Rebecca Reilly and GALWAYnow to tell us about how he forged his lucrative career.

A

fter studying International Business and Languages, fluent in both French and Spanish, a young Darren took on the world fresh out of college. “I took a job with the IBEC Graduate Programme and worked with Tourism Ireland in Paris for a year. I had already studied a year in Bordeaux too,” he recalls. “I returned to Dublin at 22, became employee number 40 at Google, and from there I made the leap into broadcasting.” Having worked as a runner on Ireland AM throughout college, trying to get to grips with the business, Darren started a community radio show on his return from France. Kennedy’s Couch was an interview-based show where the budding media journalist interviewed someone famous (or semi-famous!) for 30 minutes each week. “After Kennedy’s Couch I moved behind the camera. It wasn’t long

before I was researching and producing on programmes like Show House and Operation Transformation as well as presenting and reporting on the Gerry Ryan show.” Darren’s name was slowly being forged, and his hard work was paying off. RISE AND GRIND Always yearning for the next enterprise, the budding stylist packed up and made a move to London, to the fashion world’s leading school, Central St. Martins. “I wanted to do something for myself. I have discovered over the years that the one thing I am good at is helping people to be their best selves, and that can take many guises. Once I finished in London I came back and set up my personal styling business. After launching a collection of menswear with luxury Irish brand Louis Copeland, which ran for six seasons, Darren got a taste for development and design.

“I always want to be moving forward,” he explains, with a yearning in his voice. “I love learning in a number of different places, and bringing that together under one roof. Launching a grooming range has been a goal of mine for the past few years.” Aided by experience working with prestigious skincare brands like La Mer and Khiel’s, Darren launched Kennedy & Co in November 2018. With five staple products comprising the range, its inception to its implementation has been a longer road than expected. “I was appproached a while back to do something like this in the UK and it just didn’t feel right. I thought, looking at my own roots, and where I am from, I wanted authenticity. I’m Irish, and I felt like the brand should be Irish. Ireland is green fields, it’s fresh air, and I feel like we should be harnessing that for our skincare. I had meetings with various people but it never FEBRUARY 2019

clicked. It never felt right. About a year ago I had a chance meeting with an old work colleague, who introduced me to her husband. We got to know each other, I told him what I wanted to do, and the rest is history.” GROOMED TO PERFECTION Created here in the west of Ireland, the style icon is involved in every facet of the range, his vision was incredibly distinct. “I know what I want, what I like and don’t like, what I think works and what I think is missing from the market,” explains Darren, with purpose. A creative, Darren was a driving force behind the package and design, as well as the promotional material. With his indispensable team of people, the future of Kennedy & Co is ablaze with promise. Already in over 400 outlets including Dunnes Stores and Sam McCauley’s, along with a loyal following building steadily in the USA, Canada, South America, the UK and Germany, Darren is hoping to expand the range in the near future. Currently offering a moisturiser with SPF, a caffeine-infused eye gel, a peat facial scrub, hair clay – which promotes hair growth – and a beard oil, he’s hoping to develop more products in the second trimester of 2019. “The industry is so fast moving, you have to be able to keep up. I’m just so delighted to be able to share these products now, and there’s more around the corner. Top line for me was that everything was 100% vegan-friendly as well as being sulphate and paraben-free. I’m looking forward to getting out there and connecting with the users, we have some in-store promotions coming up, keep an eye out for us in Galway!” GETTING INTO THE GROOVE Despite dedicating his all to his grooming range, the beauty guru has to ration some of his time to his latest project, RTÉ’s Dancing with the Stars. Dancing alongside celebs such as Peter Stringer and Holly Carpenter, Darren is certainly being kept on his toes with dance partner Karen Byrne. “We’re getting on like a house on fire! I’m absolutely delighted to be partnered with her. She is exactly what you see, very black and white. I’m the same. We share FEBRUARY 2019

so many similarities – particularly eating and talking! We have so much fun, and I have a great deal of respect for her.” With an intense training schedule, Darren was under no illusion that the task would be herculean. “People who have taken part before had given me an idea of what to expect, but you don’t realise until you’re in the thick of it. The training can be long, and sometimes incredibly frustrating,” he admits. “Often, I have to step away from it, as it can totally consume you. But I still really enjoy it.” Having been offered a spot in the competition not once, but twice now, Darren admits the timing was never right. “Obviously we had just launched Kennedy & Co, which is a big focus for me, and I thought – two birds, one stone – this is the time. I knew I could cull any unnecessary travel abroad, often I’m on a plane twice weekly. I just felt there had to be a bigger picture, I didn’t

want to be on telly for the sake of being on telly. Of course, there’s being up for the laugh too. It’s going to fly by, and I do want to do well and progress, but mainly I want to enjoy the experience.” THE FUTURE IS NOW With the year ahead brimming with business, Darren teases at a couple of projects, but is adamant that whatever he does take on, he will maintain an authenticity to himself. “Over the years I’ve learned not to take on anything I don’t enjoy. I don’t necessarily mean falling over laughing 24/7, but I need to gain fulfillment, and also to feel challenged. I am constantly learning, I find that so enjoyable and rewarding, whether it’s grooming or dancing. Experience has taught me who I really am. Whether it’s presenting a show, or designing a line, I just do my own thing, and stay true to me.”

FlyAway with me

To summarise the last seven days – 24 hours in coaches, six flights, four airports, three cities, two all-day business meetings, one Christmas catch-up with best friends, and a case of lost luggage (or not a case as it turns out!). Not exactly as memorable as the 12 Days of Christmas but the upside, peak levels of airport style watch for the month reached – result! Airport Style Watching, or ASW (much easier to type), is one of my absolute favourite things to do during the – let’s face it – pretty annoying bit between leaving your house or hotel and eventually getting to your destination. Why do I love ASW? Well, I think it stems from a genuine personal interest in people, fashion and style. For me, there’s nothing like an airport departure lounge to offer up every kind of variation on these three factors. I am a bit like Gregg Wallace in MasterChef – I have no technical qualifications in styling (like Gregg and cooking) but I’ll gleefully stand with the experts waiting on the beautiful dessert that is fashion. Although I’d be considered an extrovert, one of the things I enjoy most in life is to kick back, observe others around me and learn about style from them – the good and the bad. My own, some might say quirky, style is still evolving and I am learning more

about myself but, for me, airports provide some of the best real life inspiration. I mean, where else do you get the chance to observe your fellow global citizens making the same standard journey from check-in to boarding? Each person grappling with the same big security challenges. Shoes – on or off? Are tweezers a dangerous weapon? Will my underwired bra set up another public full body scan in my non-pedicured bare feet? And my personal favourite – did I leave a liquid at the bottom of my over-packed hand luggage somewhere underneath my underwear section? (Turns out I did! A major mistake, which can only be made on the outbound trip!). What I find differentiates them is those who flounce through with ‘style’. ASW can be done in every airport around the world but spoiler alert – my personal favourites are the European airports so you’ll hear me talking fondly about Italians and their

unrivalled ability to match puffer jackets with mahoosive dark sunglasses and managing to look supremely cool at the same time. And what about the French women and their styled ‘tousled’ hair and barely-there make-up look comprising a slick of black A 40-something eyeliner and a scarlet lip? PRINTS ON THE PROWL An abundance of animal prints prowled the streets this season and by the looks of the SS19 runways, Zara they’re not going anywhere anytime soon. Hallelujah for those of us who already have a wardrobe full of leopard print love.

LACE FOR DAYS Usually a fabric reserved for the winter months, lace is making an unanticipated foray into spring/summer. Victoria Beckham introduced us to work-appropriate shirts forged from the romantic material while Preen reminded us that ruffles are back for another round this season.

THE POWER SHOULDER The eighties proved a major source of reference this season with Emilia

Wickstead sending models down the runway in bold short suits (complete with supersized collars and shoulder pads), while Roksanda was more subtle in its approach with silky co-ords clinched in at the waist – very Pretty Woman. Either way, larger than life shoulders are back with a bang!

WORKWEAR CHIC The boiler suit is hung up in every high street store this season with bloggers going potty for Topshop’s denim number. If you haven’t invested yet then make sure to hurry, as the trend is only just getting started. Team your outfit with trainers to tackle the day and throw on kitten heels to dance the night away.

CLASHING STYLE Clashing your prints is the easiest way to nail one of the season’s most talked about styling techniques. The designers at Rixo are experts when it comes to juxtaposing animal spots with polka dots while Preen never fails to give lessons in Insta-worthy clashing.

SILK SCARVES Whether you decide to tackle two trends in one with a leopard print scarf, or fancy tying a silky number around your waist Burberry-style, an outfit is just not complete without this season’s biggest accessory. REAL RESOLUTIONS On the first day of January every year I make my list of over-exaggerated resolutions, which I inevitably break by the end of the month! So, instead of my usual ‘give up everything’ list, I am starting afresh this February with just one resolution for 2019 – to start a gratitude journal. This concept is new to me. The idea is to keep a journal beside your bed and at the end of each week, write five things you’ve experienced in the past week for which you are grateful for. It sounds to me like a good pick-me-up for those more ‘trying’ weeks! It would be a lovely family memory at the end of the year to reminisce on too.

A Day in the Life Domhnall O Donoghue ’

Actor, journalist and author Domhnall O’Donoghue is on the cusp of releasing his second novel – comedy caper, Colin and the Concubine.

M

y alarm doesn’t know whether it's coming or going because no two days are ever the same for me. Between the months of August and February, I film Ros na Rún, so I might have a call time for 8.30 in the morning or 8.30 in the evening! Either way, I aim to be out and about bright and early. When I was a young and budding actor, I quickly recognised the importance of having a daily routine – it really is the best way to ward off bad habits. ��For breakfast, I enjoy porridge with a banana and

sunflower seeds, washed down by a cup of coffee – without which I cannot function! Working on a soap can be challenging on your energy levels. There’s endless hanging about in the green room, which is then contrasted with intensive work on set. Your diet can play a huge part in how well, or badly, you deal with this erratic rhythm. To avoid slumps, I tend to focus on food that slowly releases energy throughout the day and limit my coffee intake to one in the morning, although that’s easier said than done! When I’m based in Connemara, one of my guilty pleasures is

seafood chowder. In fact, an Italian friend visited recently and she had never tasted chowder before. She is now attempting to introduce it to the restaurants in Venice! I love fashion but when I’m filming, I spend most of the day in my character’s costumes so, sometimes, I’m tempted to rock up to work sporting pyjamas and slippers! Fortunately, our brilliant costume department always ensures that we’re comfortable in all the different outfits. My character, Pádraig, is particularly spiffy and I’m constantly getting compliments for his extensive selection of tailored jackets and shirts. I’ve yet to learn to drive so when I’m in Spiddal, my evenings are often spent at home either learning lines or writing. I work as a travel journalist, so getting to visit destinations such as Jamaica, Istanbul and Iceland is one of the greatest blessings in my life. An actor experiences numerous ‘quiet times’ so it’s important to have additional strings to your bow. I’m on the verge of releasing my second book, Colin and the Concubine, a comedy about a sibling rivalry set against the backdrop of a fictional brothel in 1990s Navan – my hometown. Some of the other plot points revolve around the Calorgas Housewife of the Year competition, the Eurovision Song Contest and a quirky Finnish tradition called the Wife Carrying Competition. The concubine, Azra, was inspired by my experience living next door to a brothel in Dublin so basically, what I saw and what I heard! I always wonder what happened to those ladies... Wherever they are, I do hope they’re safe. FEBRUARY 2019

“All I ever wanted to do was hairdressing. I have been plaiting and braiding hair since I was six years old! Hairdressing is in my blood so it was something I was always going to pursue, and I’m so glad I did. I started an apprenticeship in Zeba Hairdressing when I was 16. I qualified at the Aidan Fitzgerald Academy in Blackrock when I was 19 and two years later, I was working as a salon manager. I work really closely with my team every day. We offer a very creative energy in a relaxed environment and last year we enjoyed huge success adding many new awards and accolades to the salon. My days are really busy but I wouldn’t have it any other way. My morning generally starts with the kids – getting them up, ready and off to school before heading into the salon for appointments with my clients or education time with my apprentices. While I really enjoy the days I spend working as a guest artist in the Wella studio in Dublin, I love nothing more than a good day in the salon. Making someone look and feel good by creating a full makeover is one of the joys of the job. I have been in London twice already this year at a global colour launch and

guest artist day with the Wella passionistas. We also made time to squeeze in a shoot to capture some fresh new looks for spring. I will be heading back to London soon to work with our global creative director at London Fashion Week which is really exciting. I am also working on a very exciting global project for Wella but it’s all top secret for now. Watch this space! Opening the doors of Sarah Mason Professional was the best thing I ever did in my career. If you want something enough, keep going until you get there. It’s February which means the shops are heaving with heart-shaped balloons, loved-up teddy bears and overpriced single red roses. Yes, Valentine’s Day is upon us once more – a holiday which always fails to instill much of a sense of romance in me, not least because its patron saint died after a rather nasty beheading and the fact that it has its own massacre named after it.

W

ith six children it’s hardly surprising that romance doesn’t play a massive part in my life at present, and I’ll take someone vacuuming the living room over a dozen red roses any day. But according to the experts, even a normal amount of children is likely to play havoc with your relationship, with romance being the first thing to go out the window once you become parents. From sleepless nights to childcare issues, having children can create problems you hadn’t even considered when there were just two of you. Nothing kills a passionate moment quicker than a small child appearing at your bedside demanding a drink of water, and those lazy, loved-up Saturday mornings we used to enjoy before becoming parents have descended into panicked, ninja-like ordeals, ears pricked for the inevitable footsteps on the other side of the door. As much as I love DH, he’s not the most romantic person so romance was compromised before the children even arrived. Raised in a rather austere household where feelings were supressed and unnecessary spending frowned upon, he’s never been great at expressing his affections and his gift-giving skills are almost non-existent. To be fair he’s gotten slightly better over the years, but not FEBRUARY 2019

much. His idea of a romantic gesture is a bunch of flowers and a box of chocolates from Aldi. To him, it’s only the thought that counts and the less he spends the more chuffed he is with himself. Occasionally he gets promotional items from suppliers at work, and more than once he has arrived home looking rather pleased with himself before presenting me with a baseball cap with a tower crane company’s logo on it or an XXL t-shirt from a concrete supplier, as if he were presenting me with diamonds. (Note: please don’t pity me dear reader, I more than compensate for his miserly ways with some very effective self-gifting!) The experts say time alone together is vital for keeping your relationship healthy, but this too

can be difficult to organise and I recall commenting, while on the way to the hospital for the birth of child number four, how nice it was for us to be alone for once. The irony of this remark was not lost on either of us. The other problem with finding time for each other is that once you have kids, even if you can afford a babysitter, chances are you are so knackered by the end of the day, finding the energy for each other is a challenge. On the rare occasion that we’ve managed to make it out to dinner, the conversation of whether to go on to a bar or nightclub afterwards inevitably morphs into the unanimous decision that a night cap in front of the telly sounds preferable. Yeah, rock ‘n’ roll we ain’t! So, is there any hope for this romantically doomed couple? Will we ever inject passion back into the relationship? I’m hopeful that we can, although it might take a few more years of bedsharing and general knackeredness before that happens. Like everything in life, this is just a stage and one day we’ll look back on it with fondness and nostalgia. Until that time comes you can keep your chocolates and balloons and posh dinners out. Nothing says ‘I love you’ quite like the sound of the vacuum running downstairs while enjoying an uninterrupted bubble bath alone, and right now I’ll gladly settle for that.

When did eating get so complicated? The first couple of months of a new year is always a time when people look to lose weight. Whether it’s to burn off the excess calories that were consumed over the festive period, or to ensure that you have a plan for a fitter and healthier year, it is the perfect time to focus on your health and diet.

ourishment is what helps our bodies grow and be healthy, but it has the potential to be more than that. This is where the Latin origin of the word gives us a helpful nudge: nourishment means to feed and cherish. That’s right. When we eat as goddess women, we’re also feeding our souls – eating is an act of cherishing who we are. If you haven’t had much cherishing in your life, it’s the sweet, loving affection you have for yourself, something we’re bringing back as part of our goddess transformation. Why wouldn’t we want this to be one of our divine truths? And yet, when we look at the relationship women have with food these days, many of us have gotten out of whack with this simple formula. Big time. Staying thin and looking like a supermodel or actress has become an obsession in Western society. In pursuit of this ideal, many women choose to go from diet to diet, keeping up with the latest craze. We have a whole subculture of women who subsist only on salads. Many of us aren’t enjoying food anymore, and if we do, we often feel guilty about it later. Some women are so stringent in the ‘food is bad’ mentality, they shame the people around them for eating, even going so far as to limit their daughters’ food intake or insist they diet to live up to this super-thin ‘ideal’ of womanhood. Is it any wonder a staggering number of women around the world have eating disorders? Women are starving their goddess bodies, compulsively eating, or inducing violent vomiting after

teasing our bodies with the nourishment it needs to be healthy. Then there’s the flip side of our issues with food. What are we to make of the soaring obesity rates? The World Health Organization (WHO) Obesity and Overweight Fact Sheet from 2016 says there are close to two billion adults over 18 years of age who are overweight. Six hundred million of those are obese; this is out of a world population of around eight billion. That’s almost 8%... Diabetes has become an epidemic around the world, with the highest incidence in the United States, India and China. But heart issues and other health problems related to over-consumption are also becoming a factor—as well as all the pills people are taking to tackle these problems. How do women fit into the mix? Some of us handle stress and emotion through binge eating, which may lead to wild swings in our weight. Our personal stories can turn the foods we like most into treats—rewards for good behaviour—or vices we

hate ourselves for indulging in. This relationship often trickles down to our children: many parents use food as a carrot or a stick: “Sweetie, if you go potty, Mommy will give you a snack,” or “You won’t get dessert if you don’t finish your vegetables.” But our problems with food aren’t just linked to body weight, are they? People appear to be suffering from food allergies at a higher level than ever recorded. We see gluten-free and dairy-free products overtaking natural products like bread and milk, staples to our ancestors. Then we’ve got what I’ll call system-level issues about food. Scientists, the medical community, and the food industry are constantly telling us what’s healthy or not healthy for us to consume – and the information is often confusing, conflicting and changeable. When in the hell did eating get so complicated? Maybe it’s always been this complicated... If you’re reading this, you want to have a new relationship with food. Maybe it’s something you’ve struggled with all of your life. Maybe it’s something that’s just popped up out of nowhere. Rosewater is one of my favourite flavours as it’s delicately fragrant, so do buy a bottle or two for your store cupboard. Whenever I am roasting rhubarb I add a few dashes of rosewater, but it’s also delicious added to whipped cream, sponge cakes, raspberries and strawberries – the list is endless. These galettes are so easy to make. Once you have prepared the pastry, it really is only a matter of spooning the rhubarb in the centre and popping them in the oven. At other times of the year you can substitute whatever fruits are in season, such as apples or peaches. Last Easter I made one large version of the galette and it looked amazing on the table. FOR THE FILLING 600g rhubarb, trimmed and cut into 2.5cm pieces on the diagonal 80g golden caster sugar 2 tbsp rosewater FOR THE PASTRY 180g plain flour, plus extra for dusting 140g unsalted butter, chilled and cubed 1 tbsp golden caster sugar 2 tbsp cold water FOR GLAZING 1 egg 1 tbsp milk 1 tbsp brown sugar

FOR THE PISTACHIO ROSEWATER MASCARPONE 80g pistachio nuts, chopped 120g mascarpone cheese 1 tbsp rosewater For the filling, place the rhubarb in a bowl with the caster sugar and toss well to coat the rhubarb. Then transfer the rhubarb to a sieve or colander set over a bowl and leave for a couple of hours to release any excess moisture. To make the pastry, place the flour, butter and sugar in a food processor and pulse until you have a bread crumb consistency. Transfer the mixture to a large bowl and drizzle over the cold water. Gently mix with your hands until a dough forms. Turn the dough out onto a lightly floured work surface and knead it together, pressing to incorporate any dry bits of flour. Flatten the dough into a disc about 2.5cm thick, wrap in cling film and chill in the fridge for at least an hour. Preheat the oven to 180°C/gas mark 4. Line a baking tray with baking paper. Tip the rhubarb into a bowl, add the rosewater and toss to combine. In a small bowl, beat the egg and milk for glazing together. Set both aside while you roll out the pastry. Remove the pastry disc from the fridge, unwrap and cut it into four equal pieces. Roll out one piece of dough on a lightly floured work surface into a 13cm round. Spoon a quarter of the rhubarb filling into the centre of the pastry round, leaving a 2.5cm border. Brush the border with the egg wash and fold the edges of the dough up and over the rhubarb, overlapping slightly. Brush the border with the egg FEBRUARY 2019

FOOD wash and sprinkle with a little of the brown sugar. Repeat the process to make the other galettes and transfer them to the lined baking tray. Bake for 35–40 minutes until the pastry is golden brown. For the mascarpone, mix the pistachios, mascarpone and rosewater together in a small bowl and serve alongside the warm baked galettes.

WILD GARLIC TAGLIATELLE WITH GOAT’S CHEESE, COURGETTES AND TOASTED ALMONDS Serves 4 I love making this dish during the spring because it’s so light and fragrant. During the remainder of the year, I simply replace the wild garlic with other fresh herbs that are in season, such as basil, mint or oregano. I sometimes add grilled Dublin Bay prawns (langoustines), or chicken to this dish for a weekday one-course supper.

2 tbsp olive oil 4 courgettes, cut into ribbons using a vegetable peeler 500g fresh tagliatelle 4 tbsp chopped wild garlic leaves 200g soft goat’s cheese 100g blanched almonds, toasted and chopped 50g Parmesan cheese, shaved sea salt and freshly ground black pepper Place a griddle pan or frying pan over a medium-high heat and add 1 tablespoon of the olive oil. Add the courgette ribbons to the pan and cook for 2 minutes on each side. Season with salt and pepper. Meanwhile, bring a large saucepan of salted water to the boil over a high heat. Stir in the fresh pasta and cook for 3 minutes. Drain the cooked pasta and return to the pan, then add the remaining tablespoon of olive oil and gently toss to coat. Stir the wild garlic, grilled courgette ribbons, soft goat’s cheese and almonds into the pasta, and season with salt and pepper. Serve the tagliatelle on a warmed platter or individual plates, with the Parmesan shavings sprinkled on top.

ROAST BUTTERFLIED LAMB WITH SALSA VERDE Serves 8 Butterflied and boned is the fastest and easiest way to roast a joint of lamb, and if you aren’t great at FEBRUARY 2019

carving a joint, you will really love the fact that this roast requires slicing rather than carving. If you would prefer a classic mint sauce to the salsa verde, it’s also so simple to make. Whisk together 25g chopped mint, a teaspoon of caster sugar, a tablespoon of hot water and two tablespoons of white wine vinegar and leave to stand for 20 minutes for the flavours to infuse.

3 tbsp olive oil 2 tbsp red wine vinegar 3 garlic cloves, finely sliced 2 tbsp finely chopped rosemary leaves 1.5kg boned and butterflied leg of lamb sea salt and freshly ground black pepper FOR THE SALSA VERDE 1 tbsp white wine vinegar 4 basil sprigs, chopped 2 flat leaf parsley sprigs, chopped 2 garlic cloves, crushed 2 anchovy fillets, chopped 2 tbsp capers 200ml extra virgin olive oil

Preheat the oven to 220°C/gas mark 7. For the marinade, add the olive oil, red wine vinegar, garlic and rosemary to a small bowl, season with salt and pepper and mix together well. Place the lamb, skin-side up, in a roasting tin and pour over the marinade. Using clean hands, rub the marinade into the lamb and leave to sit for 30 minutes. This allows the flavours to be absorbed into the lamb and also gives the meat time to come to room temperature before roasting. When the 30 minutes are up, roast the marinated lamb for 40 minutes. While the lamb is roasting, add all the ingredients for the salsa verde to a bowl and mix together well. Remove the roasted lamb from the oven, cover with a loose tent of foil and leave to rest for 15 minutes. Thinly slice the roasted lamb onto a warmed platter and spoon the salsa verde down the centre of the lamb. Serve and enjoy!

Emma Gannon (who recently profiled in Forbes 30 Under 30 List) is the author of the fabulous work and wellbeing book, Multi Hyphen Method, as well as the creator of a brilliant series of podcasts called Ctrl Alt Delete. We asked Emma about her wellbeing story, which includes forgiving herself for silly mistakes and getting enough sleep. Define good wellbeing for you? Wellbeing to me means simply looking after myself. Anything from forgiving myself for silly mistakes, being kind to myself, getting enough sleep, making work decisions that prioritise my happiness, date nights with my boyfriend, planning downtime into my week, having a night in by myself to have a hot bath or eating nourishing food.

What’s the one real wellbeing thing you do each day – the fail safe that is in your wellbeing tool kit? For me it is taking time to read something at least once a day that is not on a computer screen. Even if it’s 10 minutes reading my book in my favourite armchair or on my bed. I find having a few minutes with a book switches a gear in my brain and makes me less frantic.

Describe a day of good wellbeing? A day of wellbeing on a work day will consist of getting up at a time that feels good for my mind and body. One of the nicest things about working for myself is I don’t need to push myself to wake up ridiculously early if I don’t want to. I will have a nourishing breakfast, get lots of work done at my desk and then go for an afternoon walk to clear my head and pick up a coffee or something yummy for lunch. I will have a nice dinner with my boyfriend (no phones, television or distractions), then curl up watching a good film with snacks. On a weekend, I love reading the weekend papers in bed and seeing friends or family in the afternoon. Going for a walk, eating nice food or a Sunday roast with a glass of red wine.

Who inspires you the most? Sorry if this makes you sick in your mouth, but my boyfriend Paul really inspires me. He’s good at switching off and being present in the moment.

I am obsessed with Sally Rooney’s fiction at the moment, especially ‘Normal People.’

Favourite food tip? I find that taking time to cook is part of what makes dinner time relaxing for me. Being alone with my thoughts for an hour cooking or listening to a podcast is just as important when it comes to wellbeing, as well as eating whatever I am making. What’s your wellbeing challenge? I check my phone right before I go to bed, which I want to stop doing. But I don’t charge my phone by my bed anymore, so in the mornings I make sure I have a few moments to myself before checking it again. I once heard Ariana Huffington say that a huge percentage of Americans sleep with their phone in their bed or under their pillow and it really put me off having it near me while I sleep!

What books do you recommend to feel good? I am obsessed with Sally Rooney’s fiction at the moment (especially Normal People), you get so lost in the world of the characters, she really zooms in on relationships and subtle aspects of human nature. In terms of self help, I loved Unsubscribe by Jocelyn K. Glei. It’s very practical and not very long — it’s all about how to be more mindful when managing your inbox. What tech rules do you have ? I don’t really have any strict ones,

but I delete apps off my phone when I’m holiday or put an out of office on that says I’m away. I used to include a message saying ‘if it’s urgent, text me’, but now I just make sure it’s clear I won’t be responding at all.

PMS

It’s not all in your head... Premenstrual Syndrome (PMS) is a tricky subject. It has been linked to over 150 different symptoms. For some the personality changes associated with this time of the month can be very severe.

I

ndeed, women commonly describe a ‘Jekyll and Hyde’ personality change, in which they literally become a different person pre-menstrually and often feel like they are going to lose it if anybody upsets them or gets in their way. For many PMS is widely accepted as unavoidable. The crux of the issue being that society holds a common misconception that all women become moody and tetchy during their ‘time of the month’. Historically labelled ‘the curse’ of womanhood, the actual truth is that PMS is not inevitable. No longer a mystery, premenstrual syndrome is now clearly understood as merely a symptom of hormonal and neurotransmitter imbalance and nothing more. An imbalance that can and should be corrected through a healthy diet, supplements and a healthy lifestyle. RECOGNISE THE SYMPTOMS OF PMS: Mood swings Irritability Anxiety and tension Bloating Breast tenderness and swelling Water retention The symptoms of PMS are varied and can, in fact, include any physical or emotional symptom experienced in the two-week lead-up to a period. It is estimated that 85% of women display at least one symptom during their monthly cycles. For many these

will be mild and unlikely to interfere with their daily routine or better judgement. Yet approximately 8–20% of women experience symptoms that meet the clinical definition of PMS and an even smaller number have a more severe form of the syndrome called premenstrual dysphoric disorder (PMDD). The good news is that just because you’re a woman doesn’t mean you have to live with these symptoms. Research now indicates that the suffering related to menstrual cycles is unnecessary and can be attenuated by addressing bad habits, improving your dietary intake, reducing exposure to environmental toxins and buffering stress. The most crucial dietary change you can make is to keep your blood sugar levels steady – the higher your sugar intake (and caffeine), the more severe your symptoms are likely to be. Excess caffeine, sugar and refined carbohydrates, which are all pretty devoid of nutrients, can exacerbate symptoms. They cause the release of adrenaline which blocks the uptake of the hormone progesterone in the second half of your cycle. If you suffer from PMS, my advice is to cut out sugar and caffeine completely if you can. Caffeine and xanthine containing beverages such as cola, tea and chocolate are linked to breast tenderness. They are also central nervous system stimulants which can leave you feeling jittery and anxious.

Too much bread and starchy foods which are often craved before a period, may make bloating worse and cause the IBS-like symptoms that are often experienced. Eliminating them completely may seem challenging, but the impact of this small change can be powerful. Many women in my clinic have seen a significant difference, really quickly in just one or two cycles. Alcohol is an added problem which initially may feel like it is helping with anxiety but in the long run it makes it worse. Another small but compelling step is to make sure you eat every three hours and have high protein snacks between meals. This also prevents your blood sugar levels from dropping and the subsequent release of adrenaline. The approach I use in clinic focuses as much on what to include in your diet, as it does on cutting out the usual suspects. •A key strategy to buffer your body against the hormonal swings associated with PMS is to eat plenty of fresh fruit and vegetables, whole grain cereals, beans, peas, lentils nuts and seeds. Include greens – the darker green the better – as they are rich in magnesium which we refer to as ‘nature’s tranquiliser’. •Small daily portions of high fibre wholegrains like brown rice and oats can be very supportive as they provide fuel for your gut bacteria. Research shows that certain beneficial bacteria act as a cleaver in the gut, breaking down hormones for excretion. Whilst the fibre keeps you regular and helps your body to get rid of excess oestrogen, if high oestrogen levels are a problem. •It is also helpful to include lots of essential fats from oily fish, nuts and seeds. The brain is 70% fat so without enough good fat all the nice brain 'chemicals' like serotonin can't be utilised and symptoms of depression and anxiety are more likely. •One week before your expected menstrual period, bump up your water intake. This helps flush out excess hormones and supports liver detoxification. Whilst omitting salt, red meat and processed food during this time can also FEBRUARY 2019

help to curb bloating and water retention. • Choosing a good quality dietary supplement can also be supportive. Medical research indicates certain nutrients such as vitamin B6, chromium and magnesium can be hugely beneficial when it comes to reducing PMS symptoms. Vitamin B6 plays a vital part in synthesising certain neurotransmitters that control mood and behaviour. Chromium is especially important in controlling food cravings and it can be helpful for women who get a pre-menstrual increase in appetite. Magnesium is classed as 'nature's tranquilliser' and is, therefore, vital in managing symptoms that relate to anxiety, tension or irritability. • Addressing lifestyle factors is also key. High stress whether it be work or relationship can fuel the PMS particularly if the main symptoms are depression, anxiety and irritability. Lack of exercise is also a factor, as without it we don't produce the feel good endorphins. Exercise increases oxygen in the blood, which helps with nutrient absorption and efficient elimination of toxins from the body. It also helps to keep stress levels more stable. Stress management techniques are also known to be effective such as incorporating meditation and yoga type routines to relax the body and mind. Whilst there are many positive steps you can take to support your hormonal balance, PMS is a syndrome with many causes and the problem may not have one solution that fits every woman. It may be best to experiment with cleaning up your diet, addressing stress and practising exercise, whilst supporting yourself with appropriate supplementation. It is also important to visit your medical care provider to rule out an underlying medical condition that may be causing symptoms, such as abnormal thyroid function, endometriosis, or a genuine psychological condition such as clinical depression. Sound nutrition has a key role to play in supporting your hormone balance, so if in doubt reach out and seek guidance from an experienced nutritionist. Learning to rebalance your hormones can be truly liberating, as you kiss those dreaded monthly blues goodbye.

y 2021 there will be 800,000 people over the age of 65 in Ireland. While we celebrate an increase in our life expectancy, we must also acknowledge the challenges it brings with the likelihood of multiple health conditions. Very often, through no fault of their own, older people and their families find themselves in a personal crisis due to unexpected ill health and can no longer live independently at home, but do not need acute hospital care either. Now might be the time to start the conversation with ageing relatives as to their needs and wishes and the range of options which are now available in both rural and urban communities. It is important to be aware of the support networks available and how to access professional advice on the options and solutions available in your local community in order to plan for the future and put your mind at ease. Garden inspiration for Galway’s green fingers A funny one, February. Not funny-ha-ha or even funny-peculiar, but funny-unpredictable, funny in a spring is coming, wait no it isn’t, let’s wreck their heads for the laugh one more time, kind of way. Many people hate this month, but I don’t. I suppose it’s because I’m a morning person, and for me, February is the morning of the year. BY ANNE BYRNE, ANNEBYRNEGARDENDESIGN.COM

utside, what is there to see? Probably not much, unless you know where to look. But if you do, there’s more than you might think. Trees are still bare, but somehow they look different now – not sad and desolate, but cleaner, buds stretching outwards, expectant. Somehow, the earth is cleaner too. The dead brown leaves of last year have been swept away by winter gales, and although very little is visibly growing, there’s a sense – sometimes you can feel it almost humming in the air – that things are getting underway, gearing up, getting ready – like a morning. Weatherwise, it’s probably still atrocious, although, since last year’s winter lasted about a FEBRUARY 2019

decade, I am hoping against hope that this year it gives up early and skulks off in good time. It could go either way though. I’ve known February days of gentle sunshine, when moss glowed emerald green in the hazel coppice and the catkins seemed to glitter in the light and you thought, yes, it’s coming, spring is approaching, we’re nearly there. Then on the other 27 days, normal service is resumed. The little February flowers are clever – they know they’re going to get blasted so they stay small. The crocuses even stay closed, unless the sun tempts them to open the petals wider, so the early airborne bees can feed on the precious pollen. The early narcissi are all titchy, with names like ‘min-

now’ giving a clue to their tiny size, staying close to the ground so they’re still standing even after winter, now almost beaten, loses its temper once again and comes back for one more attack. Last February, the most terrible thing happened to our family, and this month, one year on, we are all still shell shocked, still walking wounded, and still struggling to get our heads around our terrible loss. Sometimes, this month it feels like nature is slapping you in the face, attacking you almost, with sleet, hailstones and freezing cold. But on gentler days, there can be a whisper of spring, of warmer days, of brighter things, of healing. Nothing is guaranteed – but all things pass, and we can hope.

From rough luxe to 70’s revival, 2019 is set to be a year full of colour and textures. Award-winning interior blogger, Stacey Sheppard, author of The Design Sheppard, shares her top interior trends for 2019.

1. ROUGH LUXE Industrial décor continues to be popular amongst interior enthusiasts, but it can be difficult to integrate this style into domestic settings. Through the incorporation of luxurious finishes and accessories, warmth and elegance can be brought into an industrialinspired space. Rough luxe is where refined luxury meets rough industrial finishes. Expect to see warm metallics like copper, brass and gold, paired with exposed brick, concrete and rough timber finishes.

2. COLOURFUL KITCHENS The use of bold colours in kitchen settings is set to soar in 2019. With kitchens in deep navy blues accompanied by statement metallic splash backs in handaged copper or gold leaf adding FEBRUARY 2019

drama to kitchens settings, we are done playing it safe in the kitchen and we are seeing some really bold statement colours coming through. Punch up your cabinets with bright blues and reds, or ground a large space with a soothing grey or green. If blue and white seems too coastal for you, go for navy. The richer tone is grounding in a kitchen, and it looks amazing with brass hardware.

3. 70’S REVIVAL With the arrival of fringing on home accessories, bold colours and patterns, it’s time to welcome the return of the experimental glamour of the 1970’s! Colour wise, we will see a strong focus on rich, earthy tones like mustard yellow, ochre, olive green, chocolate, caramel, cream and camel, such as Dulux’s

4. THE NEW NEUTRALS When it comes to neutral colours in interior settings, a variety of palettes have come and gone over the years, from the very dated magnolia to the more recently beloved grey. However, it’s now the turn of the new neutrals. Think tea rose, lavender, mint, lilac and pale peach shades. Pastel colours in a more muted shade are ‘in’ in a big way and are perfect for those who are looking to create bright, open spaces. This ice-cream colour palette is given a more sophisticated feel thanks to the grey undertones that permeate these colours.

5. NATURAL SELECTION Materials such as wood, rattan, seagrass, wicker, cork, bamboo and terracotta naturally provide warmth and texture to spaces. When paired with a palm print tile, expect to be immersed in a tropical paradise. The colours that feature in this trend are also very natural so lots of muted earthy tones and especially lots of dark green. This trend also features lots of plants and foliage, as well as botanical prints on wallpaper, tiles and fabrics. Focus on imperfect finishes along with artisan and tactile accessories that perfectly encapsulate nature at its best.
