Crack Into a Sweet New Way to Love Ontario Eggs

ULTIMATE SKILLET COOKIE

SERVINGS: 12 • PREP TIME: 20 MINUTES • COOK TIME: 25 MINUTES

Ingredients
  • 3 cups (750 ml) all-purpose flour

  • 2 tsp (10 ml) cream of tartar

  • 1½ tsp (7 ml) ground cinnamon

  • 1 tsp (5 ml) baking soda

  • 1⅓ cup (325 ml) granulated sugar

  • 1 cup (250 ml) salted butter, cut into cubes

  • 2 eggs

  • 2 tsp (10 ml) vanilla

  • ½ cup (125 ml) chopped, good-quality dark chocolate

  • ½ cup (125 ml) chopped pecans

  • ½ cup (125 ml) chopped chocolate peanut butter cups, about 5

  • 8 soft caramels, chopped

  • 1 tbsp (15 ml) cinnamon-sugar

  • Flaked salt to taste

  • Vanilla ice cream for serving

Directions
  1. Preheat oven to 350°F (180°C).

  2. In a large bowl, whisk together flour, cream of tartar, cinnamon and baking soda until well mixed.

  3. Melt butter in a 12-inch castiron skillet over medium heat until butter is just melted.

  4. Remove from heat and stir in sugar. Stir in one egg at a time until emulsified. Stir in vanilla.

  5. Add the flour mixture to the skillet and stir until wellmixed. Stir in dark chocolate, pecans, peanut butter cups, and caramels. Sprinkle with cinnamon sugar.

  6. Bake for 20 to 25 minutes, or until the edge is golden brown and the centre of the cookie is set. Let cool in the pan for 15 minutes.

  7. Sprinkle with flaked salt to taste. Cut into wedges and serve warm with ice cream.
