erfen Sie bei Ihrem nächsten Besuch im Hotel Post mal einen Blick auf den Rechnungsbeleg.

Dort steht: „Keep Smiling“ – ein sehr guter Rat! Dieses kleine Markenzeichen ist ein Vermächtnis von Karl Ivarsson, obwohl er das Haus schon vor langer Zeit verlassen hat. Sein Pachtvertrag für das Hotel Post lief 2001 aus, doch es schloss sich noch eine weitere Tür, als er im Frühjahr 2014 im Spital Brig verstarb. Sein Vermächtnis bleibt jedoch erhalten, und zwar nicht nur in einem Lächeln. Hier in Zermatt geht die Party immer weiter. Und es ist nicht vermessen zu behaupten, dass Karl Ivarsson sie begonnen hat.

Viele unserer Leser kannten Karl Ivarsson persönlich und viele kennen auch die ganze Geschichte des Pöstli. Dennoch fanden wir, es sei an der Zeit, diese Geschichte noch einmal zu erzählen und den Mann zu würdigen, der das alles ermöglicht hat. Es war uns eine Ehre, mit Ursula Waeny, seiner langjährigen Gefährtin in all dem Saus und Braus, und Lesley Dawkins, die viele Jahre lang zu seinem außergewöhnlichen Team gehörte, in Erinnerungen zu schwelgen. Für seine Mitarbeiter war er schlicht „The Boss“.

Die Familie Ivarsson, Karl, seine Frau und die sechs Kinder, verschlug es 1957 nach Zermatt. Der Legende nach sah er das heruntergekommene Gebäude und dachte, ein Hotel zu führen könnte Spaß machen. Damals diente das 1875 erbaute Haus

ake a glance at the scrap of paper that adds up your bill next time you’re in the Hotel Post. It tells you to “Keep Smiling” – what great advice!

This little trademark is a legacy of Karl Ivarsson, although he has long since left the establishment. His lease to manage the Hotel Post was up in 2001 but another door was closed when he died in Brig hospital in Spring 2014. His legacy, however, lives on in many ways more than a smile. Yes, here in Zermatt the party does go on. And Karl Ivarsson, it’s a fair claim, started it.

Many of our readers knew Karl Ivarsson personally; many will know the story of the Pöstli in full. However, we felt that it’s a good time to re-tell the tale and celebrate the man who made it happen. We were honoured to sit down to reminisce with Ursula Waeny, his long life partner in fun and frivolity, as well as Lesley Dawkins, for many years a member of his extraordinary staff. They all called him “The Boss”.

The Ivarsson family, Karl, his wife and six children, rocked up in Zermatt in 1957. The story goes that he saw the derelict building and thought that running a hotel would be fun.

At the time, the house, dating from 1875, was a crumbling summer holiday hotel for a girls’ school and needed extensive renovation. Not only was an inventive refurbishment necessary to bring any style at all to the place, there were highly www.zermatttimes.com

als verfallende Sommerferienherberge für eine Mädchenschule und bedurfte einer umfangreichen Sanierung. Doch es waren nicht nur kreative Renovierungsarbeiten erforderlich, es mussten auch ganz praktische Maßnahmen getroffen werden, wie die Halbierung der Bettenzahl von 80 auf 40 und die Installation von Badezimmern, wo es bisher nur Nachttöpfe gegeben hatte.

Ein Jahr später bot die Eröffnungsfeier einen ersten Vorgeschmack auf das, was noch kommen sollte. Beim Betreten des Hauses wurden die Gäste von einer lebendigen Kuh begrüßt.

Oder was dachten Sie, wie es zu dem Namen Brown Cow kam?

Zur damaligen Zeit war der einzige Ort zum Ausgehen der Walliserhof, wo man zur Musik einer dreiköpfigen Kapelle mit Quetschkommode tanzen konnte. Das „Village“ im Hotel Post, das als gehobenes Restaurant begann, wandelte sich alsbald zur ersten Diskothek im Ort. Später ging es im „Broken Ski Club” in einem Kohlenkeller, der nur über eine Rutsche zu erreichen war, zu den Klängen einer Wurlitzer hoch her. Zermatt sollte nie mehr so sein wie zuvor.

Und dann ist da noch die Geschichte des Pink.

Das Pink war ursprünglich ein elegantes Bistro mit einem Pianisten, der die Gäste unterhielt, und einer einzigartigen Tapete, die von Barbara Hulanicki, der Gründerin des Londoner Modehauses Biba, entworfen worden war. Sie kam eines verschneiten Nachmittags im Jahr 1968 nach Zermatt und lief mit einer Gefolgschaft skandalös knapp gekleideter Mädchen die Bahnhofstrasse hinauf. Da das Live-Konzept zunehmend an Bedeutung gewann, zog das Restaurant schließlich nach oben auf die erste Etage ins Village um, wo es, wie Ursula es ausdrückt, „beschloss, zur Spaghetti Factory zu werden“. Damit stand dem Pink der untere Bereich im Winter für Live-Bands zur Verfügung.

Der Boss war eng mit Claude Nobbs, dem Gründer des Montreux Jazz Festivals, befreundet und konnte so die Stars der Musikwelt über das Rhonetal direkt in die Alpen hinaufbefördern.

A year later, the opening party was a sign of things to come.

Guests were greeted as they entered the building by a live cow – where did you think the name Brown Cow originated?

At the time, the only nightlife in town was to be found at the Walliserhof where you could dance to a 3-piece band with a squeeze box. The “Village” at The Post, which began as a sophisticated restaurant, soon morphed into the first discotheque in town. Then the “Broken Ski Club” in a coal cellar accessed by hurtling down a slide started to buzz to tunes from a Wurlitzer. Zermatt would never be the same again.

Then there’s the story of the Pink.

The Pink started out as an elegant bistro with a pianist to entertain diners and iconic wallpaper designed by Barbara Hulanicki, the founder of Biba. She arrived one snowy afternoon in 1968 with a troupe of scandalously minidressed girls walking up the Bahnhofstrasse. The live music concept grew, so the restaurant went upstairs to the first floor in the Village and, in Ursula’s words, “it decided to be the Spaghetti Factory”. This left downstairs in the Pink for live bands throughout the winter. The Boss had become firm friends with Claude Nobbs, founder of the Montreux Jazz Festival and so developed a conduit that sucked stars of the music industry up the Rhône valley to the Alps.

Zermatt has never been especially star struck. Famous musicians could hang out and be themselves at the Pöstli.

They came for the party. As Ursula pointed out, they came in spite of (or maybe because of) Zermatt’s inaccessibility.

Zermatt hat sich noch nie viel aus Stars gemacht und so konnten berühmte Musiker hier im Pöstli einfach nur entspannen und sie selbst sein. Sie kamen zum Feiern her und, wie Ursula bemerkte, kamen sie trotz (oder gerade wegen) der schlechten Erreichbarkeit Zermatts.

Es ist immer schwer, Menschen an einen Ort zu locken, der nicht leicht zu erreichen ist. Nette Hotels, aber nichts Besonderes.

Doch sie fanden tatsächlich – diesen verrückten Ort müssen wir uns ansehen.

Lesley war damals für die Organisation des Skisports rund um Zermatt zuständig: Was die Anbindung und ähnliches anbelangt, konnte es mit den anderen Urlaubsorten nicht mithalten. Also musste man die Leute mit etwas anderem ködern. Und das war dieses verrückte Hotel.

Dem 1930 als Sohn norwegischer Eltern in Seattle geborenen Karl Ivarsson wurde der Abenteuergeist quasi in die Wiege gelegt. Er hätte auch ein bequemes Leben mit seiner Frau am Lake Washington führen können, doch stattdessen verschlug es ihn in die Schweizer Alpen. In Montreux hatte er den Weinbau erlernt und die Kontakte zur Musikbranche geknüpft, von denen das Zermatter Nachtleben später profitieren sollte.

Das Hotel Post war nicht nur DER Partymittelpunkt. Es war auch über 40 Jahre lang ein rentables Unternehmen. Das erfordert eine solide Finanzplanung und ein Auge fürs Detail (das zum Beispiel jede kaputte Glühbirne bemerkt), aber auch fleißige, gut eingewiesene Mitarbeiter (wobei Lesley grinsend hinzufügt: „Manche von uns hätte man einweisen sollen!“).

Am besten lassen wir es einige Leute, die für den Boss gearbeitet haben, mit eigenen Worten beschreiben: Alle wollten im Hotel Post arbeiten. Er bezeichnete uns nie als Angestellte. Er sagte immer: „Wir arbeiten zusammen, jeder leistet seinen Beitrag und gemeinsam packen wir‘s.“ Man fühlte sich wertgeschätzt. Er nahm genau wahr, was jeder leistete. Wenn man fix und fertig war, kam er rüber und gab dem Team eine Runde aus. Da dachte man – okay, wir packen das.

Lesley added the organization of the skiing round Zermatt at the time: It was way behind other resorts in terms of linking together and that stuff. So you had to have something else to draw people. And that was this wacky hotel.

Born in Seattle in 1930 of Norwegian parents, the young Karl Ivarsson was blessed with a spirit of adventure.

A comfortable married life on the shores of Lake Washington could have been an option, but instead he wound up in the Swiss Alps, via Montreux where he learnt to grow wine and made the music industry connections from which Zermatt nightlife was to benefit.

The Post was not simply party central. It was a profitable business for over forty years. This requires sound financial planning and attention to detail (like always noticing when a light bulb went out). It also requires hard-working, committed staff (though as Lesley says, with a grin, “some of us should have been committed!”).

Let’s ask some people who worked for The Boss explain it in their own words: Everybody wanted to work in the Post. He would never call us employees. He always said – we collaborate together, we take what we’ve got and we make it work...You felt appreciated. He was so aware of what you were doing. If you were on your last legs he’ d come over and buy the staff a drink. It made you think – oh come on, we can do it.

He had a very good way to treat people. He did get sometimes cross and would tell you straight away, but then that was it. You certainly didn’t want to be shouted at by him. You wanted always to be in his good books, everybody wanted to please him.

Everyone felt proud to work for him. Because of what he created, you felt so proud to be part of that thing.

The first thing he told me when I first worked there. He said, look, if you make any mistakes it’s not a problem. We’re not selling correct everything. We’re selling ambiance. We’re selling atmosphere. www.zermatttimes.com

Er behandelte die Leute gut. Manchmal ärgerte ihn etwas. Dann sagte er es einem auf den Kopf zu und damit hatte sich‘s. Man wollte definitiv keine Standpauke von ihm bekommen. Man wollte bei ihm gut angeschrieben sein, jeder wollte ihn zufriedenstellen.

Alle waren stolz darauf, für ihn zu arbeiten.

Angesichts dessen, was er erschaffen hatte, war man unheimlich stolz, daran beteiligt zu sein.

Das erste, was er zu mir sagte, als ich hier anfing – er sagte: „Wenn du mal was falsch machst, ist das kein Problem. Wir verkaufen hier nicht die totale Perfektion.

Wir verkaufen Stimmung. Wir verkaufen Atmosphäre.

Viele seiner Mitarbeiter sind in Zermatt geblieben und arbeiten nun in anderen Betrieben oder haben eigene eröffnet. Es gibt eine ganze Generation von Zermattern, die in ihrer Jugend das Hotel Post unsicher gemacht hat. Viele von ihnen besitzen und betreiben nun selbst Hotels, Bars und Restaurants, in denen der Spaß nie zu kurz kommt.

Ursula glaubt, dass das ein ganz wesentlicher Teil von Karl Ivarssons Vermächtnis ist.

Einige Jahrzehnte später, in einem neuen Jahrhundert, hat Zermatt eine pulsierende LiveMusikszene, die alljährlich mit dem Unplugged Festival ihren Höhepunkt findet. Das Nachtleben ist üppig und vielfältig. Zermatt wird nie ganz einfach zu erreichen sein, doch das macht auch seinen Zauber aus. Vielleicht ist das Bergstädtchen schon immer, auch vor Ankunft der ganzen Touristen, ein Hort des Spaßes und der Freude gewesen, selbst während der langen, dunklen Winter. Es musste nur erst ein Karl Ivarsson kommen, um es herauszukitzeln, und all die Charaktere (von denen es hier ein paar ganz spezielle gibt!) hervorzulocken, die diese Kombination aus kindlichem Spaß und erwachsener Eleganz zu schätzen wissen. Also geht die Party weiter.

Eines wollte ich noch wissen: Das Pink mit seiner exquisiten Tapete und dem ganzen Bling-Bling (lange bevor der Begriff überhaupt erfunden wurde) – wie passte der Elefant da hinein?

Der damals noch graue Elefant kam 1979, nachdem der Boss ihn vor irgendeinem Antiquitätenladen erblickt hatte. Er behauptete, es wäre ein Geschenk für Ursula, für ihre geliebte Dickhäutersammlung.

So eine Sammlung hatte ich natürlich gar nicht, aber von da an bekam ich ständig Elefanten geschenkt!

Der Elefant feierte einfach mit und wurde sogar zum 50. Geburtstag des Bosses per Helikopter zum Schwarzsee gebracht. Schon bald war er überall als der Pink Elephant bekannt. Mir kam dabei die rosarote Brille in den Sinn, doch Ursula erklärte mir, dass die Amerikaner, wenn sie mehr als einen über den Durst getrunken haben, sprichwörtlich „rosa Elefanten“ sehen. Also wurde er pink angemalt.

Many of this staff have stayed in Zermatt and now work in other establishments or manage their own.

There is also a generation of Zermatters who grew up carousing at the Hotel Post. Many now own and run hotels, bars and restaurants infused with a spirit of fun. This, Ursula believes, is an important part of the Karl Ivarsson legacy.

Move on a few decades and into another century.

Zermatt has a vibrant live music scene that culminates each year with the Unplugged Festival.

Nightlife is rich and varied. Zermatt will always be a little tricky to get to but this is part of its magic.

Perhaps the mountain town has always harboured a bit of a party somewhere, before all the tourists arrived, even in the depths its long, dark winters. It needed a Karl Ivarsson to bring it out, to nurture it and the characters (and there are some characters!) who would embrace that union of childlike joy and grown-up sophistication. So the Party does go on.

There was one more thing I wanted to know. You have the Pink, with its elegantly blingtastic wallpaper before bling was invented. Where did the elephant fit (?) into the set-up?

The elephant, then grey, arrived in 1979 after The Boss spotted it outside a random antique shop. He claimed it was a gift for Ursula, to add to her beloved collection of pachyderms.

Which I didn’t have, of course, but from then on everyone bought me elephants!

The elephant joined the party, even helicoptered to Schwarzsee for The Boss’ 50th birthday, and soon became known as the Pink Elephant. I’m thinking rose tinted spectacles, but Ursula explains that, in America, spotting a Pink Elephant is a synonym for being more than somewhat tipsy. So it was painted pink.

enn die mit einer weichen Decke aus Neuschnee überzogenen Hänge Sie auf die andere Seite des Zauns locken wollen. Wenn sich Ihr umtriebiges Gehirn nach der friedvollen Stille der Berge statt dem Rattern des Sessellifts sehnt.

Wenn Sie schon einige Jahre an Pistenerfahrung gesammelt haben, der Kunstschnee auf der präparierten Piste Sie irgendwie langweilt und selbst die Buckelpisten ihren Reiz verloren haben. Oder es gar keine Buckelpisten gibt. Oder Sie die Buckelpisten noch nie mochten.

Dann ist es an der Zeit, sofern die Bedingungen es zulassen, sich hinaus in die Wildnis zu wagen.

Die erste Hürde ist natürlich, dorthin zu kommen.

Dafür wurden Lifte erfunden. Dank Skiliften und Pistenraupen sind die Pisten einfacher und sicherer geworden, doch aus dem Abenteuer Skifahren ist inzwischen eine durchorganisierte Aktivität für

jedermann geworden. Der Aufstieg ist schnell geschafft, wir erreichen einen Gipfel nach dem anderen und lassen unseren Blick über die weite Landschaft schweifen, die einst einzig und allein den waschechten Bergsteigern vorbehalten war. Doch es ist eine sterile Welt, die im Kontrast zu der schroffen Pracht der Wildnis steht.

Das Hinterland, das sich abseits der Ferienorte erstreckt, ist nur schwer zu erreichen. Das ist auch gut so, denn sonst wäre die Wildnis bald keine Wildnis mehr.

Zunächst einmal müssen optimale Bedingungen herrschen. Einen Powdertag kann man nicht einfach im Voraus buchen und selbst wenn dicke Flocken gefallen sind, kann es gut sein, dass es einfach zu gefährlich ist. Wo Tiefschnee und Lawinen lauern, ist Geduld nicht nur eine Tugend – sie kann einem auch das Leben retten.

Dann braucht man ein gutes Maß an Können und Fitness, damit man nicht für sich und andere zur Zermatt Times

hen new snow has left silky descents that beckon from the other side of the fence. When your busy brain craves the deep peace of mountain silence rather than the clank of the chair lift.

When you’ve clocked up a few years on the slopes and today the artificial snow on the groomed piste seems a tad bland and even moguls have lost their allure. Or there aren’t any moguls. Or you just don’t like moguls.

Then, assuming conditions are smiling, it’s time to venture back beyond, out into the wilderness.

The first issue is, of course, getting there. That’s why lifts were invented. Ski lifts and piste bashers have made the slopes easier and safer, but the adventure that was skiing has been replaced by a more urbanised activity. We can travel high quickly, reach summits and stretch our eyes across a vast landscape which would

previously have been the private domain of the proper mountaineer. But it is a sanitised world that contrasts to the edgy magnificence of wilderness.

It’s difficult to reach the hinterland that lies beyond the resort, and that’s a good thing or wilderness wouldn’t be wilderness for long.

Firstly, conditions have to be perfect. A powder day is not something you can book with your diary and even after a fall of heavy flakes, the chances are that it is just too dangerous. In this world of deep snow and avalanches, patience is not only a virtue, it can be a life saver.

Next on the list is a robust level of skill and fitness to stop you being a liability to yourself and to others. Then there’s the specialist equipment and the biggest piece of equipment is, of course, the helicopter.

Flight certainly makes the backcountry accessible.

Wie vielen unter unseren Lesern bewusst sein wird, wird die Zunahme des Heliskiings kontrovers diskutiert. Als Argumente werden der Umweltschutz und das Recht wilder Tiere, in Frieden zu leben und von den Verwüstungen, die Menschen allzu oft in der Landschaft hinterlassen, verschont zu werden, angeführt. Es stimmt, dass es in unserer geschundenen, ausgebeuteten Welt Orte geben muss, die unberührt bleiben. Das betrifft unsere Wälder und Seen mindestens ebenso sehr wie das Hochgebirge, insbesondere wenn man bedenkt, welch Artenreichtum an Tieren und Pflanzen sich im Schutz der Bäume und im klaren Wasser tummelt. In der kargen Schneelandschaft der Hochgebirgsgipfel halten es im Winter hingegen nur wenige Lebewesen aus.

Darüber hinaus dürfen wir nicht vergessen, dass allein die Bereitschaft und das Vermögen einiger Kunden, für Erlebnisflüge zu zahlen, einen enormen Beitrag zur Finanzierung eines Rettungsdienstes wie Air Zermatt leistet. Eines Tages sind Sie vielleicht dankbar, dass ein Pilot auf den Touristenrundflügen durchs Gebirge so viele Stunden an Erfahrung gesammelt hat und über eine so hoch entwickelte Ausrüstung verfügt, die Sie rasend schnell ins nächste Krankenhaus bringt.

Die Anzahl der Heliskiläufer wird durch die Kosten begrenzt. Es ist teuer und liegt damit für viele von uns, die den Lockruf der Wildnis vernehmen, gänzlich außerhalb des Möglichen. Welche Optionen haben wir dann? Wir geben etwas Geld für Ausrüstung aus, die weniger ambitioniert ist als ein Hubschrauber, aber eine echte Investition ist. Tourenbindungen und -felle in Kombination mit einer gewissen körperlichen Anstrengung können uns die Wildnis in all ihrer unberührten Schönheit schon ein gutes Stück näherbringen. Aber...

Das Gebiet um Zermatt ist voller Gletscher und Felsen. Das bedeutet, dass sich unter einem verlockend makellosen Schneefeld plötzlich Gletscherspalten auftun können, die Sie in ihrem eisigen Schlund verschlucken. Unter der weichen Neuschneedecke verbergen sich vielleicht Felsen, die Ihren Ski festhalten, Sie zu Fall bringen und Ihnen dabei die Knochen brechen. Sich in die Wildnis hinauszuwagen ist sicher nicht jedermanns Sache. Ohne größte Vorsicht und umfangreiches Wissen, das man sich nach und nach in den Bergen aneignet, geht es nicht. Kurse, die von Organisationen wie z. B. der ISTA (siehe S.36) angeboten werden, können entscheidend sein.

As many of our readers will be aware, the expansion of heli-skiing has become controversial. Environmental preservation and the right of wild creatures to live in peace, untroubled by the ravages that human beings too often wreak on the landscape, are hotly debated. It is true that some wild places in our bruised and battered world need to be left undisturbed. This concerns our forests and lakes as much as the high mountains, perhaps even more so when you consider the abundance of flora and fauna that thrive in the shade of the trees or in clean water. The snowy desert of high mountain peaks doesn’t support much life throughout the winter.

Furthermore, we have to remember that the very existence of a group of customers able and willing to pay for recreational flights is a massive factor in financing a rescue operation like Air Zermatt. One day, you might find yourself grateful for the hours of experience the pilot has accumulated by flying passengers around the mountains, and for the sophisticated equipment at his disposal that can whisk you away to medical care.

But the numbers of people who heli-ski is controlled by money. It’s expensive, well beyond the range of options for many of us drawn by the tantalising call of the wilderness. So what do we do? We spend some money on equipment that is less ambitious than a helicopter, and it’s an investment. Touring bindings and skins, accompanied by some physical effort, can help open up the wilderness in all its raw beauty. But...

Zermatt is glacial and it is rocky. That means a temptingly pristine snow field might conceal crevasses that suddenly open wide and swallow you into their icy depths. That soft blanket of fresh snow might hide rocks that will grab your ski, trip you up and smash you as you fall. Braving the wilderness will never be everyone’s mug of glühwein. Extreme care, combined with a headful of knowledge that derives from time in the mountains, is essential. The courses provided by an organisation like ISTA (see p.36) can be crucial.

Even for the knowledgeable, hiring a qualified mountain guide enhances the whole experience. Not only on the safety level, which is paramount, but your guide has a subtle compilation of useful knowledge stored beneath that hood. He or she will be able to identify where the sun has hit by the time you have reached the high point of your slog up the mountain. If there is an option between a descent that is still an icy layer of windswept crud or one that has been softened to sugary loveliness, going with a mountain guide improves the chances you will be skiing the better option.

Janet now lives and works in London but escapes to the wild places as often as she can. She brings a new dimension to images of alpine expeditions by capturing them with water colours and oils. The dynamic of the medium, the intensity of feeling that paint brings to a subject, makes her work mesmerising to anyone who loves the mountains. So we illustrated this piece with some of her pictures. We think you will enjoy them.

Janet’s art captures the adventure and the sheer joy of heading out into the wild on skis. She says: “I think of it as those sounds of the soft scuffle of snow, the hissing the snow as we swish the tails of our ski through the trees, the sound and steam clouds coming from my companions breathing in the cold early morning air as we ascend on skins. And of course the primal sight of the sky thick with stars, undiminished by any ambient light from towns or cities… One has to swing the doors wide and go for the experience”.

parklife Während die ältere Generation langsam die Stöcke an den Nagel hängt, vergnügt sich eine neue Generation von Skifahrern und Snowboardern gemeinsam im selben Gelände auf denselben Bergen. Einst trafen auf diesem Spielfeld zwei Gruppen aufeinander, de-ren Mode, Stil, Einstellung und Charakter kaum unterschiedlicher hätten sein können. Heute verschwimmen die Grenzen immer mehr. Früher hielten viele Snowboarding bloß für einen Trend, der vorübergehen würde, doch inzwischen ist es von den Pisten der Welt, von den Alpen bis nach Australien, nicht mehr wegzudenken.

In den Funparks, die einst alleiniges Terrain der Snowboarder waren, tummeln sich in-zwischen auch Skifahrer. Auf ihren Twintips stehen die Skifahrer den Boardern in der Halfpipe in nichts nach. Mithilfe breiter Powder-Ski fahren sie auch abseits der Piste Sei-te an Seite mit ihren Kumpels auf den Brettern.

Zusammen haben sie eine ganz neue Kultur in den Resorts geschaffen – Beanies, weite Jacken und Hosen, Musik, die ihrer Generation eine Stimme gibt, und sogar eine eigene Sprache. Eine krasse Truppe, der jeder Teenager gerne angehören würde.

Ich habe Zermatts angesagtesten einheimischen FreestyleOlympioniken Yannic Lerjen getroffen, um etwas mehr über die Pipe-und-Park-Kultur hier in Zermatt zu erfahren.

Was ist das Geheimnis Ihres Erfolgs? „Mein Motto ist ‚Niemals aufgeben‘.“ Yannic ist Jahrgang 1990 und begann seine Karriere beim World Cup 2011. Bei den Olympischen Spielen in Sotschi wurde er 14. und bei der Weltmeisterschaft in Calgary 2014 belegte er den 4. Platz. Letztes Jahr holte Yannic die Bronzemedaille bei 26

der Weltmeisterschaft im österreichischen Kreischberg. Für den Winter 2016 wurde er zu den X-Games in Aspen eingeladen – eine große Ehre!

Wenn Yannic nicht gerade bei Wettkämpfen antritt, hängt er mit seinen Kumpels im Gravity Park ab und trainiert seine Tricks oder hilft beim Shapen der Halfpipe. „Beim Skifahren kann ich Zeit mit meinen Freunden verbringen.“ Der „Park Slang“ oben im Gravity Park, den die dort abhängende Freestyle-Clique erfunden hat, ist entfernt mit dem Zermatter Dialekt verwandt.

parklife As the older generation hang up their poles, a new wave of skiers and boarders are enjoying the same terrain on the same mountains. Skiing and boarding originally brought two very different types of fashion, style, attitude and personality to the same arena. Now their boundaries are blurred. Snowboarding was once thought of as nothing more than a passing fad but has dug its edge deep into the pistes of the world, from Austria to Australia.

The park, once thought of as exclusive snowboard territory, has become home to skiers too. The skiers are on their twin tips in the pipe, going big alongside boarders. With the aid of fat powder skis, they are riding shoulder to shoulder with their buddies on boards in the backcountry.

Together they have created a brand new culture in resorts – beanies, baggy jackets and pants, music that expresses their own generation and even their own language. A narly crew that every teenager wants to be a part of.

I met Zermatt’s hottest home bred Freestyle Olympian, Yannic Lerjen, to find out a little more about the pipe and park culture here in Zermatt.

What is the secret to your success?

‘My motto is ‘Never give up’ Born in 1990, Yannic began his career in the 2011 World Cup. He ranked 14th at the Olympics in Sochi and took 4th place at the World Championships in Calgary in 2014. Last year Yannic picked up the bronze medal at the World Championships in Kreischberg, Austria. This Winter 2016, he has been invited to the xgames in Aspen. A great honour!

When Yannic is not at a comp he is hanging with his buddies at the Gravity park, practising his tricks and helping to shape the half pipe.

New Chair Lift – Hirli

New Return Piste – Howette

The Hörnli T-bar has been dragging skiers up the icy slopes at the foot of the Matterhorn since 1962. This year it’s replaced with a 6-seater, high-speed chair lift. Some might mourn snow fields being made accessible to a wider public than before. However, it is a beautiful area that really boosts the options for adventurous skiers in all sorts of snow conditions. Given that the chairlift starts from well below the old drag, that calorie burning march up the path after lunch at Stafelalp can be swapped for a comfortable ride.

A piste has been created. The new descent to the valley on the Sunnegga side takes a pretty path through the woods from the end of National. Towards the bottom, a sharp bend and then a short but goose-pimply steep and probably slippery drop will deliver you onto the path. Within a couple of minutes you are at the lifts by Cervo, still on your feet if you are lucky. We recommend caution.

Neuer Sessellift – Hirli Seit 1962 hat der T-Bügellift am Hörnli die Skifahrer die eisigen Hänge am Fusse des Matterhorns hinaufgezogen. Dieses Jahr wurde er durch einen Highspeed-Sechsersessellift ausgetauscht. Einige werden bedauern, dass damit die Schneefelder nun einer noch breiteren Masse zugänglich werden. Es ist jedoch ein wunderschönes Areal, das gerade abenteuerlustigen Skifahrern neue Möglichkeiten bei verschiedensten Schneebedingungen eröffnet. Da der Sessellift weit unterhalb der alten Strecke startet, können Sie nach dem Mittagessen auf der Stafelalp nun statt des kalorienverbrennenden Fußmarsches ganz bequem nach oben fahren.

Neue Rückfahrtspiste – Howette Es wurde eine neue Piste gebaut. Die neue Talabfahrt auf der Sunnegga-Seite führt vom Ende der National auf einer hübschen Strecke durch den Wald. Am unteren Ende gelangen Sie über eine scharfe Kurve, einen kurzen, aber Gänsehaut erzeugenden Abhang und ein möglicherweise etwas rutschiges Gefälle auf den Weg. In nur wenigen Minuten gelangen Sie so zu den Liften am Cervo – mit ein bisschen Glück sogar auf beiden Beinen.

Wir raten zur Vorsicht.

On the face of it, a great step forward this winter. Log on while stomping through the Furi station, for example, and a welcome page will pop up with the Bergbahnen Interactive Panorama map, weather forecasts and access to your own Facebook page. Linger a little longer as gondolas clank past, enter your email address, wait for it to process, and you are rewarded with unlimited access to the Internet. Or get on that gondola, and do what you’re here for. Ski not surf.

If you are skiing with your children or your beginner mate, we would highly recommend buying the ‘Wolli Pass’.

The unlimited use of the four lifts it encompasses are second to none for progressing a beginner from Nought to Red run.

It’s on the sunny side, you can avoid any steep bits, no tricky drags or poma lifts. Stop for lunch at some of the most sensational restaurants in Zermatt and choose to end the day up at Blue Lounge on the beautiful terrace, from where those with weary legs can download in the lift all the way to town.

WLAN an den Liftstationen Es klingt erst mal nach einem grossen Fortschritt in diesem Winter. Man loggt sich etwa beim Durchqueren der Station Furi ein und schon erscheint eine Startseite mit der interaktiven Bergbahnen-Panoramakarte, der Wettervorhersage und einem Link zur eigenen FacebookSeite. Während die Gondeln vorbeirattern, gibt man seine E-Mail-Adresse ein, wartet auf die Bestätigung und schon wird man mit unbegrenztem Internetzugang belohnt.

Oder man steigt einfach in die Gondel und macht das, wofür man hergekommen ist. Skifahren, nicht surfen.

Superb value too, an all day pass is only 53,- CHF. Compare this to 49,-CHF for a simple return from Zermatt to Blauherd only.

It’s a steal so ask for it by name at the counter. ‘Wolli Pass’.

The Riedstrasse remains Dual Purpose – for now It looked as though the new Howette piste would be the only return route to the valley on the Sunnegga side.

Riedstrasse would not be open to skiers, closing off the whole lower Tuftern descent. We are delighted to celebrate the ruling that demands the Riedstrasse remain dual purpose, vehicles and skiers. How one piste would have been enough for all the home going skiers at the end of the day was a mystery, apart from the challenges of its precipitous descent. Furthermore, we’re thrilled that Othmar’s and the Champagne Bar will be able to remain open.

Riedstrasse bleibt doppelt nutzbar – vorerst Es schien so, als würde die neue Howette-Piste die einzige Rückführung ins Tal auf der Sunnegga-Seite sein. Die Riedstrasse sollte nicht für Skifahrer freigegeben werden, wodurch die gesamte untere Tuftern-Piste unzugänglich gewesen wäre. Mit Freude begrüssen wir nun den Beschluss, dass die Riedstrasse auch weiterhin doppelt nutzbar bleiben soll, also für Fahrzeuge und Skifahrer. Uns war schleierhaft, wie eine einzige Piste für alle am Ende des Tages heimkehrenden Skifahrer hätte ausreichen sollen, mal ganz abgesehen von den Tücken dieser steilen Abfahrt. Darüber hinaus freuen wir uns, dass Othmar‘s Skihütte und die Champagner Bar weiterhin geöffnet bleiben können.

Wolli Pass Wenn Sie mit Ihren Kindern oder einem unerfahrenen Freund Ski fahren, empfehlen wir Ihnen den „Wolli-Pass“.

Restaurant ALPHITTA Alphitta has been a firm favourite among Zermatt regulars during the 40 years it’s been run by Freddy and his father Tony Aufdenblatten. This winter it’s in new hands. After breathing life into the old Schwarzsee, Tanja and Dave move over to Alphitta.

Im Gebirge ist Victor Cortez sofort an seiner Kameraausrüstung auf dem Rücken zu erkennen.

Wenn ich mich auf einen Schneetag vorbereite, muss ich unbedingt die Kamera einpacken, sonst fühle ich mich nackt; die CanonKamera, Zoom 70–200 mm, 2,8 ist ein Muss und ein 12- oder 14 mm-Weitwinkelobjektiv gehört zu meinen Favoriten.

Als Victor vor 26 Jahren zum ersten Mal nach Zermatt kam, hatte er quasi noch nie einen Berg gesehen.

Als ich in Zermatt ankam und das Matterhorn sah... Wow! Es war überwältigend. So was hatte ich noch nie zuvor gesehen.

Eine Woche später arbeitete ich als Fotograf und machte für eine Firma namens Glacier Photo Erinnerungsbilder von Touristen.

Damals war Victor bereits ein versierter, erfahrener Fotograf.

Er erinnert sich noch, wie damals in Uruguay, in Montevideo, wo er als Sohn portugiesischer Eltern zur Welt gekommen war, sein Vater immer alle wichtigen Momente im Leben der Familie mit seiner guten alten Canon festhielt. In der ganzen Familie gab es diese Begeisterung für die Fotografie, die Victor schließlich zu seinem Beruf machte.

Einige Jahre später studierte er also diese Kunstform am ArCo – dem Centro de Arte e Comunicação Visual – in Lissabon.

Die Entwicklung von Schwarz-Weiß-Aufnahmen wurde zu meiner Leidenschaft. Der Kodak TRIX-Pan 400 war mein bevorzugter Film – leicht zu handhaben und sehr vielseitig.

Selbst im Militärdienst widmete er sich seiner Lieblingsbeschäftigung. Victor Cortez wurde Militärfotograf und arbeitete anschließend in den portugiesischen Fotoarchiven, wo er Abzüge von hunderten Daguerreotypien vom Ende des 19. Jahrhunderts anfertigte. Langsam verstehe ich, was Victors Bilder so besonders macht – durch die hochtechnische Herangehensweise erhalten sie ihre Substanz.

Victor ist in den verschiedensten Genres bewandert, doch an diesen Beispielen aus seinem Portfolio lässt sich gut erkennen, dass Zermatt ihm eine einmalige Gelegenheit bot, die Wintersport-Fotografie in schwindelerregende Höhen zu treiben.

Zermatt spielt im Alpinsport eine ganz besondere Rolle, es ist ein echtes Paradies für Fotografen. Die Gelegenheit, einige der besten Skifahrer und Snowboarder der Welt kennenzulernen und mit ihnen zu fahren, eröffnet einem auch die besten Chancen auf fantastische Aufnahmen.

Seit Victors Anfängen hat sich die Fotografie sowohl aus technischer Sicht als auch als Gewerbe erheblich gewandelt.

Mit dem Wandel von Silberhalogenid zu Pixeln ist die Fotografie immer beliebter, einfacher und preiswerter geworden. Heute kann man fast ohne irgendwelche Kosten Tausende Fotos machen... Doch ein noch größerer Sprung als die Fortschritte in der Fotografie selbst sind die Möglichkeiten, die Fotografen heute haben, um ihre Arbeiten zu präsentieren und ein breiteres Publikum zu erreichen.

Victor Cortez is instantly recognisable in the mountains by the camera equipment attached to his back.

When I’m getting ready for a snow day I have to take my camera otherwise I feel naked; Canon camera, zoom 70-200 mm, 2,8 is a must and a wide angle lens 14 mm or 12 mm are amongst my favourites.

Even his military service was devoted to the occupation he loved. Victor Cortez became a military photographer, and then went on to work in the Portuguese photo archives, printing hundreds of daguerreotypes from the late XIX century. I start to understand what makes Victor’s pictures stand out – there is a highly technical background that gives them substance.

When Victor first came to Zermatt, 26 years ago, he had barely before seen a mountain.

Victor is skilled in a range of genres, but the opportunity that Zermatt provided to take snow sports photography to dizzy heights can be seen in these examples of his portfolio.

When I arrived in Zermatt and saw the Matterhorn…

Wow! I was overwhelmed. I had never seen anything like it.

One week later I was working as a photographer taking souvenir photos of tourists for a company called Glacier Photo.

Zermatt is a mythical town on the alpine sports scene, a real paradise for a photographer. The chance to meet and ski with the best skiers and snowboarders in the world gives you the best chance to nail some great shots.

At this stage, Victor was already a highly trained and well experienced photographer. Back in Montevideo, Uruguay, where he was born of Portuguese parents, he remembers his father capturing every important moment in the family’s life with his trusty old Canon. Photography was a family enthusiasm that Victor carried through to a profession.

Since Victor started out, photography has changed dramatically, both technically and as a commercial enterprise.

So a few years later, we find Victor studying the art-form formally at ArCo – Centro de Arte e Comunicação Visual – in Lisbon.

From silver halide to pixels, photography has become more popular, easier and cheaper, you can literally shoot thousands of photos, at almost no cost… The way photographers can now show their work and reach a broader audience is actually a bigger leap than the advances in photography itself.

Black and white developing became a passion, Kodak TRIX-Pan 400 was the film of choice, easy to handle and very versatile.

Auch Zermatt hat sich weiterentwickelt und verändert.

Aus Victors Sicht hat sich die allgemeine Qualität des Urlaubsorts verbessert, mit neuen, besseren und schnelleren Liften, während jedoch sein Wesen im Kern gleich geblieben ist. Er hat aber einen Vorschlag, wie Zermatt seinen Status als Reiseziel von Weltrang noch ausbauen könnte: Wenn ich an diesem fast schon perfekten Ort einen Wunsch frei hätte, könnte ich mir vorstellen, dass ein Hochleistungssportzentrum dem schönen Örtchen Zermatt eine noch strahlendere Zukunft eröffnen könnte.

Spektakuläre Gebirgspanoramen sind sicherlich ein Garant für schöne Bilder, doch entscheidend ist vor allem die Interaktion zwischen dem Fahrer und dem Fotografen.

In der Wintersport-Fotografie machen letztlich die Modelle die ganze Arbeit. Nach all den Jahren bin ich vielen Leuten zu Dank verpflichtet. Remo Schneider für die vielen Tage, an denen er die besten Fotokulissen aufgespürt hat und für die vielen tollen Powdertage, die wir zusammen hatten; Samuel Anthamatten für sein Naturtalent und seinem Bruder Martin Anthamatten; Victoria Kreuzer, Glenn Parsons, Dario Faronato, Sam Allen – das sind die wahren Helden.

Zermatt, also, has developed and changed. In Victor’s view, the overall quality of the resort has increased with new, better and faster lifts, while its core characteristics are preserved. He has one suggestion that he believes would contribute to its status as a world-class resort.

Given the chance of having one wish granted, in an already perfect place, I think a high performance sports center would provide the opportunity for an even greater future for the beautiful town of Zermatt.

Spectacular mountain views are certainly a key to making beautiful pictures, but it’s the interaction between the rider and the photographer that is crucial.

In snow sports photography, the models make all the hard work.

I have a lot of people to thank over the years. Remo Schneider for the days scouting for the best photo locations and for all the fun powder days we spent together; Samuel Anthamatten for his natural talent and his brother Martin Anthamatten; Victoria Kreuzer, Glenn Parsons, Dario Faronato, Sam Allen – they are the real heroes.

ein Gefühl dieser Welt lässt sich mit der Freude vergleichen, wenn man wie schwerelos einen abgelegenen Berghang durch einen halben Meter frischen, lockeren Pulverschnee hinabgleitet. Doch es lohnt sich nicht, dafür zu sterben.

Vorsichtig ausgedrückt ist es ziemlich unachtsam, sich mit Freunden von der Piste zu entfernen und dabei zwar die komplette Sicherheitsausrüstung mitzunehmen, aber keine Ahnung von den lauernden Gefahren zu haben. Damit gefährden Sie sich und Ihre Freunde. Die Hänge abseits der Pisten werden nicht von pistenfahrzeugen präpariert, und gerade bei schlechter Sicht sind Abhän-ge und Felsvorsprünge für ungeübte Augen nur schwer zu erkennen. Doch die größte Gefahr geht von Lawinen aus.

Die ISTA (International Snow Training Academy) ist eine Organisation von Bergprofis, die ein weltweites Standardausbildungsprogramm entwickelt haben, in dem Schneebegeisterte lernen, wie sie Spaß haben, ohne sich in unnötige Gefahr zu begeben.

o sensation on earth can match the gravity-free joy of floating down a remote mountainside in half a metre of light, fresh powder. But it’s not worth dying for.

WILLY BOGNER Born in Munich and heir to the Bogner clothing dynasty started by his father, Willy Bogner Jr skied for Germany in the Winter Olympics in Squaw Valley.

Then, in 1967, he decided to concentrate his efforts on film-making. His work behind the lens produced stunning results, as witnessed by many Bond films.

Willy Bogner Jr., gebürtiger Münchner und Erbe der von seinem Vater gegründeten Bogner-Modedynastie.

Bei den Olympischen Winterspielen in Squaw Valley führte er für Deutschland als Skirennfahrer.

1967 beschloss er dann, sich auf seine Arbeit als Filmemacher zu konzentrieren. Seine Tätigkeit hinter der Kamera lieferte beeindruckende Bilder, wie die Bond-Filme.

Als Willy Bogner Senior 1977 verstarb, kehrte Willy Junior nach München zurück, um die Leitung der Modemarke Bogner, die er von seinem Vater geerbt hatte, zu übernehmen.

EDDIE JORDAN

Eddie Jordan is a former racing driver, team owner and entrepreneur. He is known for his energetic joie de vivre. Eddie retired from racing in 1980 and founded Jordan Grand Prix, the colourful Formula One constructor, which operated from 1991 to 2005. He is currently the lead analyst for Formula One coverage on the BBC. In March 2012, he received an honorary OBE for services to charity and motor racing.

Eddie visits Zermatt every Winter and here is what he says about it.

“After a busy season in F1 my first break is in Zermatt for the premiere neige which has provided some of the best ski days I have. We always come with a large group of friends and it gets better each year.”

Lanfranco “Frankie” Dettori, is a giant of horseracing, dwarfed only by his celebrity status and personality.

When Dettori won all seven races on a single day at Ascot in 1996 it left the bookies in tears and the lucky few very rich indeed!

He loves to come skiing in Zermatt with his wife Catherine and their five children.

Here is what he says: “I come to Zermatt every year and for me the combination of Cervinia and Zermatt is unbeatable.

My children love the boarding on the Zermatt slopes and I love all of the restaurants plus the aprés ski is unbeatable. I travel the world every week and Zermatt is right up there!”

MIKE RUTHERFORD

Mike Rutherford is a rock phenomenon. Aged 15 he was a founder member of the band Genesis.

Mike wrote many of their songs, including “Follow You Follow Me” and “Land of Confusion”.

Mike + the Mechanics, the band Rutherford set up as a “bit of fun”, has sold more than 10 million records.

Their best-loved song, The Living Years, expresses his regrets after his father’s death.

Mike and his family regularly visit Zermatt. Here is what he has to say about it: “We have really enjoyed our skiing for years and Zermatt ticks all the boxes. It has a great variety of runs, stunning scenery, wonderful food and rocking night life. My wife and I particularly enjoy the live music in Gees.”

PAUL BETTANY

Paul Bettany is an English actor whose secondary characters often steal the scene. He has appeared in a huge variety of films, including A Beautiful Mind. Perhaps his most famous role was in the film adaptation of Dan Brown’s best-selling novel The Da Vinci Code. Bettany played an Opus Dei monk named Silas.

Here is what he has to say about Zermatt: “There are many things that are great about Zermatt: the extraordinary restaurants, skiing under the majestic Matterhorn, the romance of skiing over the border to Italy for lunch. However, for me, the very best thing about Zermatt is Donald Scott, whose knowledge of the terrain is seemingly only challenged by his knowledge of every wine list at every restaurant on the mountain. The man knows how to live and has taught me much about it.”

Wer Zermatt besucht, sollte schon mal seinen Gürtel lockern. In diesem Ort werden gutes Essen und Wein mindestens genauso ernst genommen wie das Skifahren – es regnet förmlich Michelin-Sterne und Gault-Millau-Punkte. Zermatt ist ein Paradies für Feinschmecker.

enüs, bei denen einem das Wasser im Munde zusammenläuft, köstliche Gerichte aus den frischesten Zutaten... Moment mal! Was ist mit dem ganzen köstlichen Fisch und den Meeresfrüchten? Frischer Fisch ist inmitten der Alpen, so weit weg vom Meer, eher ungewöhnlich, doch in Zermatt bekommt man ihn überall.

Austern mit einem Cüpli Champagner im Elsie‘s, Thunfischtartar im Findlerhof, das von dem Koch in Ihrem Chalet perfekt gegarte Lachsfilet... Wie frisch kann denn das alles sein?

Wir wissen, dass die großartigen Fische und Meeresfrüchte, die in Othmar’s Skihütte auf den Tisch kommen, jeden Sommer aus den kalten Gewässern Alaskas geholt und dann persönlich nach Zermatt gebracht werden. Doch was ist mit dem ganzen Rest? Die Auswahl, die Qualität, die Menge an frischem Fisch nimmt stetig zu. Da muss doch irgendwas dahinterstecken. Das stimmt – und Adam Steadman ist nicht unwesentlich daran beteiligt.

Adam ist Skilehrer in Zermatt und stammt aus einer Londoner Fischhändlerfamilie. Nicht einfach irgendwelche Fischhändler – ihnen gehört das Chamberlain and Thelwell am Billingsgate Market, sie beliefern Häuser

wie das Savoy und die Hyde Park Oriental Hotels und sind wahre Meister ihres Fachs.

Es ist ein echtes Familienunternehmen, das einst von Adams Großvater Les gegründet wurde. Adams Vater und Onkel, Ray und Geoff, stiegen mit ein und arbeiten noch immer im Unternehmen, genau wie sein Bruder und sein Cousin. Adams Umzug nach Zermatt mag wie eine Flucht erscheinen, doch nun ist er wieder ins Fischgeschäft eingestiegen und verkauft als Großhändler an Hotels, Chalets und Restaurants. Also haben wir ihn aufgesucht, um mal hinter die Kulissen dieses faszinierenden Geschäfts zu blicken.

Am Anfang steht die Geschichte von Les Steadman, eines Alchemisten, der Fisch in Gold verwandelt hat. In seiner Familie hatte es Tradition, auf dem Fischmarkt Billingsgate zu arbeiten, und so sollte 1955 auch der 15-jährige Les hier anfangen.

Seine Mutter lieh ihm das Geld für den Bus, um von Dagenham zum Markt zu fahren, wo er bei einem Aalverkäufer aushalf. Mit 18 Jahren war er der jüngste Fisch-Porter des gesamten Marktes. 1972 wagte Les, der inzwischen Vater von vier Kindern war, den ungewöhnlichen Schritt vom Lastenträger zum Händler.

Innerhalb von nur sechs Monaten hatte ein dreiwöchiger Probelauf zu einer leitenden Position geführt. Danach eröffnete der geschäftstüchtige Fischliebhaber seinen

outhwatering menus, delicious dishes put together with the freshest of ingredients. Hang on a moment! What about all that luscious fish and seafood? Surely fresh fish is a bit of an anomaly in the middle of the Alps far from the sea, but in Zermatt it is everywhere. Oysters with a cüpli of champagne in Elsie’s, tuna tartar at Findlerhof, that fillet of salmon perfectly cooked by the chef in your chalet. So how fresh can it be?

We know about the spectacular seafood served at Othmar’s, pulled out of the cold Alaskan waters each summer and brought back personally to Zermatt.

But what about the rest of it? The options, the quality, the abundance of fresh fish is growing. Something must be happening. It is – and a lot of it is down to Adam Steadman.

Adam is a Zermatt ski instructor who comes from a family of London fishmongers. Not just any old fishmongers – they own Chamberlain and Thelwell of Billingsgate Market, supply the likes of the Savoy and Hyde Park Oriental Hotels, and are absolute masters of their trade. It is a real family business, set up by Adam’s grandfather Les. Adam’s father and uncle, Jeff and Ray, joined and still work in the business, as do his brother and cousin.

Adam might have escaped when he settled in Zermatt but now he is back in the business of fish, selling wholesale to hotels, chalets and restaurants. So we tracked him down to learn a bit of background to a fascinating business.

Firstly, there’s the story of Les Steadman, an alchemist who turned fish to gold.

It was a family tradition to work at Billingsgate Market. In 1955, it was time for the 15 year old Les to start.

His mum lent him the bus fair to travel from Dagenham up to the market where he helped on an eel stand. By 18, he was the market’s youngest porter. In 1972, now the father of four children, Les made the unusual move from porter to salesman. Within six months a three-week trial had become a directorship. After this, the entrepreneurial fish-lover opened his own stall on Roman Road in the East End, the first bashful step in what would become a business empire with a £12 million turnover.

The market moved out to Poplar, in the Docklands area of London, in 1980 and Les took a huge risk. He bought the old Billingsgate trader, Chamberlain and Thelwell, for £2,000. Now it’s one of Billingsgate’s most successful companies, supplying high quality products to top restaurants. In 2001 Les bought a property in Leadenhall Market, back in the

Es überrascht also nicht, dass Adam Steadman über die besten Kontakte zur Fischwelt verfügt. Die in Zermatt bestehende Nachfrage nach besten Produkten für die anspruchsvollen Gäste und die Grundsätze, die das Unternehmen seiner Familie leiten, passen einfach hervorragend zusammen. „Unser gesamtes Unternehmen basiert auf Qualität, von Anfang bis Ende, von den eingekauften Produkten bis hin zur Auslieferung.“ Chamberlain and Thelwell pflegt seit Generationen enge Beziehungen zu Fischern in ganz Großbritannien. Adam betont, dass ihnen die Nachhaltigkeit ihrer Produkte ein wichtiges Anliegen ist. So werden nicht nur die Umwelt und die Fischbestände geschont, die in der nachhaltigen 58

City. He turned it into a high class destination restaurant, also called Chamberlain’s and specialising, of course, in fresh fish.

Even then, he was still getting up at 3am every morning to get to the market.

So, not surprisingly, Adam Steadman’s contacts in the fish world are second to none. There is a great synergy between Zermatt’s demand for the highest quality products to serve its discerning visitors and the precepts that guide his family business.

“Our whole business is based on quality from start to finish, from the products we source to the final delivery at your door.”

Chamberlain and Thelwell have close relationships with generations of local fisherman in the UK. Adam stresses that they are a big supporter of sustainable products. Not only does this keep the environment and fish stocks healthy but the methods used in sustainable fishing produce the best quality.

From creel caught langoustine and hand dived scallops from Scotland to line caught sea bass and mackerel from the south coast of the UK, all of their fish can be traced, from where it was caught and from which boat.

Sustainability is, of course, a hot topic. There’s no love lost between the trawler/dredger community and the smallboat fishermen who dive or use baited creels (bottom-laid pots that sit on the seabed to catch crab, prawn and lobster) for shellfish.

These low-impact methods cause no damage to the seabed and a limited catch secures the future of this glorious seafood within the catchment area. But the small-boat fishermen fear for the damage to their livelihood by the impact of the trawlers and tales of www.zermatttimes.com

Fischerei angewandten Methoden liefern auch die beste Qualität. Von mit Körben gefangenem Kaisergranat und handgefischten Jakobsmuscheln aus Schottland bis hin zu geangelten Wolfsbarschen und Makrelen von der englischen Südküste – bei jedem Fisch lässt sich zurückverfolgen, wo er von welchem Boot gefangen wurde.

Nachhaltigkeit ist natürlich ein heißes Eisen. Es herrscht dicke Luft zwischen den Vertretern der Schleppnetzfischerei und den handwerklichen Fischern, die nach Muscheln tauchen oder Krabben, Garnelen und Hummer mit beköderten Fangkörben, die auf dem Meeresgrund ausgelegt werden, fangen. Diese schonenden Methoden lassen den Meeresboden unversehrt und Fangbeschränkungen sichern die Zukunft der wunderbaren Fische und Meeresfrüchte in den Fanggebieten. Doch die kleinen Fischer fürchten, dass durch die Auswirkungen der Schleppnetze ihr Lebensunterhalt in Gefahr ist, und so hört man immer wieder von Sabotageakten.

Adam ist der Meinung, dass bestimmte Fischarten auch mit Schleppnetzen gefangen werden können, er sagt jedoch ausdrücklich, dass das Unternehmen nachhaltige Methoden unterstützt und nur Fisch von registrierten Booten in festgelegten Bereichen kauft.

Der Chefkoch des Restaurants Chamberlain‘s fügt hinzu: „Ich denke, dass Beifang das größere Problem ist. Dass Fisch gefangen und dann ins Wasser zurückgeworfen wird und dort verendet. Für www.zermatttimes.com

die Fischer ist das ein heikles Thema, denn der Platz auf ihren Booten ist begrenzt.“ Lösen lässt sich das Problem mit Tagesbooten, die den Fisch direkt an Land und zum Markt bringen, statt tagelang auf See zu bleiben, wo auch noch die so wertvolle Frische verloren geht. Da Chamberlain‘s so stark auf Qualität setzt, bevorzugen sie bei all ihren Zulieferern diese Methode. Adam sagt: „Wir arbeiten mit vielen Unternehmen entlang der britischen Küsten zusammen, mit einigen sogar schon seit über 30 Jahren.

Wir arbeiten mit Firmen, die nur 4 oder 5 Mitarbeiter beschäftigen, und mit Firmen, die über mehr als 15 Boote verfügen. Die gefangenen Fische werden nach Art und Größe sortiert, damit die Skipper immer wissen, welchen und wie viel Fisch sie an Bord haben. Diese Angaben zum Fang werden an den Hafen übermittelt, von wo aus uns telefonisch mitgeteilt wird, welche Arten zu welchem Preis erhältlich sind. Der Großteil des Fangs eines Bootes ist bereits verkauft, noch bevor es wieder im Hafen angelegt hat.

Sobald der Fisch an Land eintrifft, wird er auf seine Qualität geprüft, auf Eis gelegt, in Kisten gepackt und nach Billingsgate geschickt.“ Durch die direkte Verbindung zu den Fischern über Adam erfahren wir in Zermatt immer ganz genau, was in der jeweiligen Woche in die Berge gebracht werden sollte.

Adam ruft die Köche im Ort an, beispielsweise Jean Marc vom Snowboat, die dann ihr Menü zusammenstellen und den besten, frischesten Fisch auf die Tageskarte setzen können.

sabotage abound. Adam believes that trawling for certain fish is acceptable, but is clear that the company thoroughly supports sustainable practices, and only buys from regulated boats within designated areas. The head chef at Chamberlain’s restaurant adds – “I think by catches are a bigger issue. The fact that fish is being caught and then thrown back in the water where it dies. It’s a tricky issue with fishermen as they have a limited amount of storage on their boats.”

Using day-boats relieves the issue as they bring the fish straight back to market instead of staying for days out at sea with time to lose that precious freshness. Chamberlain’s drive for quality means this is the preferred method in all their suppliers. Adam says: “We have been working with many companies from around the British coast, some of them for over 30 years. We work

with companies that have only 4 or 5 people working for them to some with over 15 boats.

When the fish are caught they are graded out into species and size so the skippers know what and how much fish they have on their boats. The details of the catch will be called through to the port which in turn will call us to discuss what species they have and the price. Most of the boat’s catch is sold before it has even tied its lines off in the harbour.

As soon as the fish hits dry land it is quality checked, iced and boxed up and on its way to Billingsgate.”

With Zermatt’s direct link to the fishermen through Adam, we get to hear exactly what is going to be best to bring up to the mountains on any given week. Adam calls local chefs, such as Jean Marc at the Snowboat, who can then design the menu and put the best, the freshest fish up on the specials board.

Selection of events this summer...

Sinead Savage A professional singer from Northern Ireland. She discovered her love of singing in the church choir and decided to pursue a career in music. She has worked with many artists as a backing vocalist including The Velvet Underground’s John Cale. In 2012 she came to Zermatt for the first time and has returned every winter since. She can be found singing her heart out at restaurant Fluhalp every lunchtime from Wednesday to Sunday.

Wayne Readhead Lived in Cyprus the past 12 years, but also plays his keyboards in Bermuda and the UK. His first winter in Zermatt was 20 years ago and he has made music here most years since. Zermatt career began in Papperla pub doing aprés ski and at some point since played pretty much everywhere with every other regular Zermatt musician. This season you can catch him in the evenings in Gees. Interesting fact, he has only been up to the Klein Matterhorn once in all these years!

Ben Watling Plays in Zermatt for the winter season. This accomplished young musician has many guises – trombonist, trumpeter, guitarist as well as singer. In fact, he is a one man band bringing all his instruments together using a live loop pedal. Ben can rap too and regularly lets it loose in Gees. On Tuesday nights, find him at the Open Mic session at the Cablecar bar.

Paul Cross A 25 year old multi-instrumental musician from England, started music at the age of seven and has been all over the world playing in bands. He is now settled in Zermatt and you can find him daily at restaurant Alphitta on Riffelalp, later in the afternoon in the Papperla Pub for aprés ski and back there again for late night gigs with his band Good Noise Inc and some rock’n roll mayhem!

Gary Fenna Originally from Southampton, UK, Gary has been in Zermatt now for more years than we can remember for what he describes as “a spot of Singing, Drumming, Guitaring, Kazooing and Curry Making”. You can catch him regularly at Gees Bar where he throws together the live music every night. Gary was once seen on English TV performing an aptly entitled ditty... “Gonna put a bar in my ol’ car and drive myself to drink”...

MUSICIANS Spencer Chaplin Born and raised in Corsier, Switzerland, and surrounded by the enduring legacy of his grandfather, actor Charlie Chaplin, the 27-year-old guitarist and singer is no stranger to the arts. Inspired by Rock and Roll and Blues Music, Spencer has toured all across Switzerland and performed at a diverse range of venues including London’s prestigious Marquee Club and the Montreux Jazz Festival. This Winter you can catch him most evenings in Gees.

Phil Holbird Phil first came to Zermatt for one season back in 2003 to play guitar for the Scenit Group, aka the Hennu Stall Band. 12 years later, having played in almost every venue in town with the band, with the Murphy Brothers at Fluhalp, with Dave Murphy at Schwarzsee, and having helped to start the now legendary Rock and Roll Sundays in the Schnee, he’s back again. As last year, he’ll be at the Cervo most afternoons between 3-6.

Mitch Lewis Over his 30 year career, Mitch has played with a long list of musicians, including Peter Noone (Hermans Hermits), Mamas and the Papas, and Jon Lord (Deep Purple). As well as performing, he also arranges and records backing music for films. A musical chameleon, Mitch’s talents range across guitars, drums, bass and lap steel. He lives in Toronto but rocks up in Zermatt each February. On sunny days, go and hear him on the terrace at the Blue Lounge at Blauherd.

Phil Glutz More commonly know as “Phil Sax”, Phil is a freelance alto sax player with Aussie roots but now based permanently in Zermatt. His experience in knowing how much or little to play, together with the ability to improvise solos over all styles of music, gives him a standing invite to most gigs around Zermatt. You might find him on stage at a mountain restaurant during the day, après ski bar in the afternoon, or late jamming with the DJ in the Cuckoo Club.

John Dalzell John is a singer-songwriter who came to professional music comparatively late in life. His parents’ love of music was in his veins, but attempts to learn to play an instrument bore no fruit. Then, in the bars and clubs of Manchester, he came to singing. Over the next years his skills at song and performance developed, he joined a band and quit the day job. He is a trained chef and this year joins the kitchen at Gees, from where it’s a skip and a jump to the stage and the microphone when the music starts at 10pm.

Lektion gelernt – wer auch auf der Piste funkeln will, sollte den echten Schmuck zu Hause lassen und falschen anlegen. Das schont die Nerven – und das Portemonnaie – wenn etwas verloren oder kaputtgeht oder geklaut wird.“ Falsche Diamanten sind beliebter denn je und werden auch von Personen getragen, von denen man es absolut nicht erwarten würde. Wer hätte denn gedacht, dass die Herzogin von Cambridge 2012 zu den Feierlichkeiten zum diamantenen Thronjubiläum der Queen Ohrringe mit nachgemachten Perlen und Diamanten von Heavenly Necklaces tragen würde? Oder dass ein anderes Mitglied der Royal Family auf Reisen ausschließlich Repliken von HN mitnimmt? „Früher reisten die angesehenen Familien ausschließlich mit Kopien der echten Stücke, die sie auf der Bank lagerten, und daran hat sich bis heute nichts geändert“, so Belinda weiter. „Guter nachgemachter Schmuck ist eine absolut akzeptable Alternative – oder Ergänzung – zu Ihren echten Stücken.“ „Das ist genau wie mit Topshop und Prada – mit dem nötigen Kleingeld kann jeder gut aussehen, aber um günstige Teile mit Designermode zu kombinieren, braucht man Stil und ein sicheres Händchen. Wer clever ist, schummelt ganz ungeniert!“, sagt Belinda. „Auf Reisen muss man sich so keine Gedanken mehr machen, dass alles versichert und immer gut weggeschlossen ist – man kann den Schmuck einfach auf dem Nachttisch liegen lassen.“ Wir sollten hinzufügen, dass Belinda sich ganz gut auf den Pisten auskennt. In 2015 hat sie Donald Scott geheiratet, der ein langjähriger Bewohner Zermatts, Miteigentümer des LuxusSkireiseunternehmens Mountain Exposure und sowohl auf als auch abseits der Piste ein meisterlicher Skifahrer ist. So says Belinda Hadden who heads Heavenly Necklaces, a company that, ironically, sells the finest fake diamond jewellery to royalty and celebrities all over the world.

‘In my case, it was all because of a kid who was ‘skating’ on the Hörnli t-bar. He let go of the bar at the top and it flew smack into my head, taking a rather beautiful gold earring with it. I never saw it again! Lesson learned; leave the real stuff at home and wear fakes if you really want to sparkle on the slopes. That way it won’t break your heart – or the bank – if it’s lost, broken or stolen.’

Faux diamond jewellery has never been so popular, and is worn by the most surprising people. Who’d have thought that The Duchess of Cambridge would wear Heavenly Necklaces’ fake pearl and diamond earrings to the Queen’s Diamond Jubilee Celebrations in 2012? Angeline’s Everest Challenge

Im April 2015 sah Angeline Davies, wie Zerstörung und Leid über Nepal hereinbrachen. Sie war gerade dort, als bei dem Erdbeben rund um Gorkha mehr als 9.000 Menschen starben, mehr als 23.000 verletzt wurden und viele weitere ihre Häuser verloren und Hunger litten. Angeline ist kaufmännische Leiterin der Zermatter ChaletVermietung Elysian und das Erlebte brachte sie auf die Idee, ein Projekt ins Leben zu rufen, um die Menschen, die sie in Nepal kennengelernt hatte, direkt mit Geld- und Sachspenden zu unterstützen. Um Geld zu sammeln und um auf die Situation aufmerksam zu machen, setzte sie sich im Sommer das Ziel, mehrere Berge zu erklimmen, deren Höhe zusammengenommen die 8.848 m des Mount Everest ergibt. Doch das Leid in Nepal geht weiter und so bleibt auch Angeline am Ball. In diesem Winter will sie die 8.848 m auf Skiern bewältigen. Die meisten der Gipfel befinden sich rings um Zermatt. In April 2105, Angeline Davies saw devastation and tragedy rip through the fabric of Nepal. She was there as the Gorkha earthquake killed more than 9,000 people, injured more than 23,000 and left many more homeless and hungry.

Angeline is the Commercial Director of Zermatt’s Elysian chalet company and her experience drove her to embark on a project that would send money and supplies directly to people she met in Nepal. This winter she plans to ski tour up 8,848m.
