The Watermelon Citrullus Lanatus - Cucurbitaceae family The watermelon is an annual herbaceous plant of the same family as cucumber and melon. In Italy, it is sown in the late winterspring season, in warmer regions, and in late spring in regions with a cooler climate.

The fruiting period varies according to the place where it is grown.

The fruits are harvested by hand with great care, in order to avoid any damage to the skin and not to spoil its preservation.

Watermelons are very refreshing when eaten alone; they are naturally sweet but low in calories and rich in water. They can also be

added to colourful summer salads, granita and sorbets.

The watermelon rind is edible and can be pickled, as described in the original recipe that follows. Moreover, you can safely eat all parts of organic fruits, including the skin.

The watermelons you will find in the fresh produce section during the month of July are produced by two companies that belong to the “Le Terre di Ecor” project: the “Ferrandes” and the “Fattoria Di Vaira” farms.

Watermelon rind “giardiniera” recipe and photo by Lisa Casali from valorealimentare.it Ingredients 500 g watermelon rind, 600 ml apple cider vinegar, 400 ml water, 1 bay leaf, salt and pepper to taste.

Preparation Wash the watermelon rind carefully to remove any residual soil, and dice it.

In a saucepan, bring the vinegar to a boil along with the water, the bay leaf, the peppercorns and a tablespoon of sea salt.

As soon as the liquid starts to boil, plunge the watermelon rind cubes and simmer for about

15 minutes.

Turn off the heat, drain and let the rind cubes cool down. Place the rind cubes into sterilized jars.

Cover with the filtered cooking vinegar up to jar rim and close tight, arranging the jars in a pot, all well wrapped in a cloth and covered with water.

Let simmer for 30 minutes, then dry the jars and let them sit in your pantry for at least 30 days before consumption.

a full-throttle summer One of the most ancient beverages in the history of humankind, beer was seemingly invented simultaneously in different regions comprised between Egypt and Mesopotamia. During the middle Ages, the art of beer crafting was developed by the abbey’s monks, who then handed down theirs recipes and secrets to the present day.

On April 23rd 1516, the Bavarian Duke Wilhelm IV issued the Purity Edict – the Reinheitsgebot –, which established the ingredients a quality beer must never miss: water, barley malt and hops. Over time, Germany remained loyal to the ducal edict even after the EU loosened the rules on beer ingredients (e.g. corn and wheat) and sales, in 1992.

Beer comes from the alcoholic fermentation by yeast of the sugars derived from the starch contained in certain cereals, especially barley malt (obtained by germination and drying or roasting of barley).

The malts derived from different kinds of roasting determine the colour, the alcoholic grade and taste, and different varieties of hops create a very wide spectrum of flavours (and bitterness).

It is no accident that some beers taste almost sweet and citrusy, whereas others bitter and dry. Also crucial is the water, which transmits to the beer the characteristics of its territory of origin.

Depending on the colour, linked to the level of malt roasting, beers may be distinguished as lagers, red and dark. The distinction between cloudy and clear beers, however, depends on whether or not they are filtered. Based on the type of yeast, there can also be low or high fermentation beers. The first ones are also known as Lager and produced using yeasts of the family of Saccharomyces Uvarum at rather low processing temperatures (approx. 7-9 °C), the second ones, also known as Ale, is produced by adding Saccharomyces cerevisiae yeast to the wort. Ale yeast works well at high temperatures, between 12 and 23 °C.

craft beers In recent years, the phenomenon of non-industrial brewing has literally exploded. In parallel, the number of small breweries throughout the Italian peninsula has seen exponential growth. Increasingly aware of the quality of products, many are not content to sip any beer, anymore, and are constantly looking for the “perfect beer” for the different times of day. However, just like the world of wines, even the world of beers is characterized by great biodiversity, which is based on their different styles, ingredients and types.

Beyond the different possible variants, the characteristics of a craft beer are those of being high-fermented, unpasteurized and unfiltered. Typically, they have a quite peculiar aroma and are each a one-of-a-kind beer. Usually, they are also brewed in small amounts.
