Sean Chambers, who perfected his culinary skills in Europe, is about to take to new heights, literally – bringing his experience to the upmarket restaurant atop the RACV Royal Pines Resort hotel. ecently appointed Chef De Cuisine at the award-winning Videre restaurant, Sean has held senior positions in a number of upscale properties in Australia complemented by international experience gained in France, Belgium and the UK. Sean says he is excited about working in Videre’s prestigious open-plan kitchen. “One of the things that attracted me to the role was the kitchen – not only is it stateof-the-art but the open plan promotes great interaction with clients. I am in my element when talking to people about food, which is my passion in life. I aim to give the panoramic views some competition with my cooking but I think I have quite a challenge on my hands,” he said. The chef’s table at Videre allows diners to enjoy their meals as a complete dining experience with a unique insight into kitchen operations. How long have you been operating as Paul & Paul Salon on the Gold Coast? Three years. How did you get started in the industry? I won a scholarship to Wynne-Hoelscher Academy Hairdressing in Brisbane. What is it you love most about the industry? I truly love what I do, whether it’s tressing the locks of my clients or creating something more avant-garde for a photo shoot or runway show. I found my passion when I started hairdressing. The hairdressing industry is so much more than ‘just haircuts and colours’ down at your local salon. It’s a career path that can open you up to so many amazing opportunities. My clients are often surprised and excited to learn about how we as hairdressers get to work on amazing events such as fashion week, and get to meet and work with celebrities and fashion magazines. What’s the best part of any given day? There are some clients that you really form connections with. As hairdressers we often look on our clients as friends, so to me the best part of any given day is being able catch up with these friends and give them the best hair service possible. Around As Kylie celebrates 25 years of music-making mania, Sarah Blinco takes a look at how we now consume popular music and how drastically times have changed since 1987

id you know Kylie Minogue has two categories in Wikipedia? One for her albums catalogue and one for her singles. In other words, she has so many accolades and releases to her name she requires more than one Wiki entry! Love or loathe her (and seriously, how could you loathe Kylie?) there’s no denying she has successfully reinvented herself more times than we can count - and has gone to number one following each transformation. Kylie’s brand new release, The Abbey Road Sessions, hits record stores (on and offline) this month. The album features 16 tracks, all radically reworked, spanning Kylie’s incredible career. The album was recorded in London’s legendary Abbey Road Studios with Kylie’s band and a full orchestra. Nick Cave re-recorded his vocal on the famous duet, Where The Wild Roses Grow, especially for the album. Other highlights include a wonderfully poignant Better The Devil You Know, Confide In Me, a sultry On A Night Like This, a joyous All The Lovers, the beautiful Finer Feelings and a version of The Locomotion which swaggers with true 1950’s panache. Who remembers I Should Be So Lucky? Yep, I know you do - and stop groaning because I know you loved it! Walk past any given primary school and you’ll notice little girls still doing the same thing as we did back in ‘87 - making up dances to whatever the cutest new pop song is. In grade four that was ‘our song’. The other was Locomotion... and of course, the pop songs kept coming from Kylie. Cheesy or not, these tracks then played on cassette (until the tape wound out and died in the Walkman - sob!) defined our colourful Gen X / Y culture. As the 90s rolled around, fashion sense evolved, as did our music listening experience. Kylie sung about ‘stepping back in time’ as November 2012

we proudly gathered an extensive library of ‘futuristic’ compact discs that each boasted on average 17 tracks of high quality audio (compared with tapes, anyway). I have to credit my brother for always being the ever savvy computer aficionado in our family. He had us surfing the internet when many others were still denying its existence, and he taught me all about mp3s and fantastic options like Napster. Evidently that file-sharing story didn’t have a happy ending, however it paved the way for more legitimate forms of music sharing and consumption, effectively transforming into the

Now, our kids are paid pocket money to rip all our old CDs onto the computer so we may once again enjoy our collections from ‘the good old days’. I’ve always been a fan of music, but lately have wondered how the majority ‘find’ new music? We used to have a simple stream of new tracks fed to us - through Rage on the ABC on Saturday mornings, or via a choice of one, maybe two commercial radio stations per city. Now I spend more time in front of a computer than anything else, and admittedly don’t listen

to nearly as much radio as I used to. Occasionally I’m exposed to new music that tickles my fancy via YouTube, Channel V on a Friday night over a few glasses of bubbles, new music e-news direct from the UK, or a new favourite site, Spotify.com. While there are heaps of music streaming sites out there, Spotify is one that caught my attention due to vast numbers of Facebook friends appearing as users of the service. Much to my delight, it’s taken the hassle out of ‘finding’ music that I might like. There are top 40 singles and albums charts to listen to, cool new international ‘holiday lists’ that might be of interest (where would you like to go today - Ibiza, Italy, California, Turkey or perhaps Amsterdam?); and as I write this I’m listening to a fantastic collection of Buddha Bar world-music favourites that some kind soul has compiled into a public playlist. While it could make me feel old realising that ‘my Kylie’ of a childhood long gone is celebrating 25 years of entertaining millions of fans the world over, I’m simply impressed and amazed at how our technological evolution has come about (in a comparatively short amount of time). Consumption of entertainment is convenient, not to mention crystal clear now. I’ll always feel affectionately towards my Bangles Different Light tape, and my (dusty) CD soundtrack collection gathered across the 90s, but I think I’ll nip into iTunes to score the digital version of Kylie’s new offering. After all, it would be a shame to not ‘own her’ on all musical mediums. If only I was a DJ so I could add some vinyl to the collection as well. How do you consume music now? Renee Bisley is a popular local photographer, well-known in special event circles for her elegant, stylish portraits and heartwarming family photos. She takes 10-minutes to fill us in on her colourful life and even shares a few ‘happy-snap’ tips. Where are you from? I was born and grew up in Townsville, North Queensland. When did you move to the Gold Coast? I moved to the Gold Coast eight years ago to start working on a number of publications while developing my own folio and establishing my business. I’ve always had a connection with the Gold Coast, the wonderful people, lifestyle and of course the endless opportunities. Tell us a bit about your ‘day job’? I shoot many sessions in my studio, but I also get to travel to location shoots and fashion shows. Every shoot is followed by post production editing on the computer before presenting to the client. I wouldn’t call it a ‘job’, I enjoy it too much! When did you discover you loved photography? I studied art as well as ‘art in design’ as high school subjects where I majored in photography.This meant I spent most of my day (as well as my lunch breaks) in the darkroom. I shot on black and white film, developed my own film and have printed on an enlarger since 1993. I then studied photography at James

Cook University and spent another two years shooting film and working on both colour and black and white enlargers in the dark room. I have seen the many changes in our industry from film to digital. What’s one simple photography tip you would pass on to aspiring photographers? Every shoot I design with my client I study what style we are going for so we get all the details right. I even research posing and location ideas for the subject based on the brief. Tip: Make your photos unique, be creative and push the thought process. Nothing is more satisfying when I take an amazing photo that even as the photographer, I sit there for a long time in awe of it, just staring at it. What type of photography do you specialise in? Since I was a child I wanted to be either a fashion designer or a fashion photographer, I love being drawn into an amazing image and when you bring it all together with mood, lighting, style and models it is an incredible feeling that you and your team created an image that is there to be ‘desired’. Favourite destination you’ve ever photographed at? My first month on the Gold Coast and I was booked to cover Gold Coast Fashion Week at the same time as Lexmark Indy for a fashion magazine - all on the same week. I photographed fashion shows, Indy races up close in the chicane, I got to attend Indy cocktail parties at Palazzo Versace and product launch parties. It was a great introduction to the Gold Coast and I got to meet so many 15

amazing people I still keep in contact with to this day. Do you have any secret skills outside of photography? After studying photography I moved to Brisbane in 1999 to study graphic design for two years at the Advertising Academy - Institute for Design. This is about the time when photography turned digital so I was professionally trained in Photoshop. I am a Photoshop perfectionist and I love working on my images and bringing them to life. What are you most looking forward to for the coming year? I am so excited to be working on some amazing projects with a lot of very talented people. I have also started a quarterly competition offering upcoming designers the opportunity to get a break to help their business out establishing themselves within a very tough market. When you’re not working where would we find you hanging out? I love spending time with my husband and children at the beach or hiking in the hills around Mount Nathan. The kids love it! But there is nothing like my fave, coffee, and a wander through vintage markets. I am an avid collector of anything vintage, retro or crystal. Otherwise you will find me at the gym a few times a week working out, eating well and smiling more. Sarah Blinco investigates why that little voice inside our heads can be so harsh, and how we’re best to keep it at bay

find my inner critic is at her most harsh in summer, especially when I’ve had a big day at work. I’m hot, tired and have to get dressed for an after-work event. As my clothes stick (often unflatteringly) to me, I gaze unhappily back in the mirror thinking that I look like a wreck - nothing like all the gorgeous, sleek, confident women who will no doubt be out in force at the event/party/ get-together I’m heading off to. Phrases like, ‘you look dreadful’, ‘your skin looks hideous’, ‘those arms look like jelly’ or ‘that tummy really needs to GO’ zoom through my mind, complete with an evil, snarky little tone. If I was to speak to anyone else the way I talk to myself sometimes, I’d probably receive a swift slap. Why do we converse with ourselves in a way we would never dare to address others? We use words that are hurtful, critical and harsh. Further to this, we love our family and friends, warts and all, so why don’t we love ourselves in the same way? Our inner critic is ever-present, and while sometimes she (or he) is more pleasant than others, that negative inner voice can mean the difference between a great, or really bad day (or week). One thing is for certain, regardless of whether or not we generally speak nicely to others, all of us have an inner critic that likes to make itself heard. Is it a reflection of low self esteem, or November 2012

a universal ‘normal’ behaviour - and what’s the difference between a negative inner critic and a looming depressive state of mind? Gold Coast-based Mags Bell, speaker, author, founder and director of Creating Powerful Results, has been coaching and mentoring for over twenty years. She frequently addresses this topic in seminars and workshops, and says we all need to

The brain can only function on positive or negative at any one time, and the only way to distract the negative is to bring the positive on be aware that a negative mindset can very quickly spiral into difficult-to-manage emotions. “I call the ‘inner critic’ your ‘distracter voice’ because it distracts you from living your life and fulfilling your true potential... Usually an inner critic spurs from other people, sometimes from childhood - teachers, parents, all sorts, and certain negatives stick for some reason. I’ve also come from a background of

pharmaceuticals sales and management as well as corporate work in the UK, and from my experience I need to understand the ‘how’s’.” Continuing, she explains, “Bruce Lipton’s Biology of Belief talks about how our body is like a big Petri dish, and what we put in - not just food or nutrition, but everything, actually can bring us all sorts of trouble and all sorts of good. Negative thought patterns is one of the elements of ‘trouble’ that can be brought in and cultivated.” Mags goes on to say that it’s when we start believing the negative, often incessant inner critic, that our ‘down feelings’ can then lead to depression. “Our distracted voice, or inner critic, is very judgemental, and quite happy to distract you from the focus on the positive of what you’re doing. Your inner critic’s judgements very often stem from fear - of not being good enough, not being able to do something well and so on, but the good news is you can switch that off. The brain can only function on positive or negative at any one time, and the only way to distract the negative is to bring the positive on.” How do we switch from negative to turn it into a positive though? Evidently it’s all well and good to tell the negative to “bugger off”, as Mags laughs in her delightful Scottish accent, but inevitably it can sneak

back in to once again distract us from getting on with being great. It’s at this point Mags explains to me her very insightful and evidently exceptionally successful principle of the ‘Four Rs’. Conquering your inner critic with the four Rs: recognise, reward, rephrase, repeat Recognise Mags explains that like with any negative behaviour known to humankind, if we don’t recognise what is there, it will run riot. Recognising when you’re thinking critically about yourself is the first step to changing your mindset. Reward Catching yourself (recognition) is really important, but rather than beating yourself up for being harsh on yourself (eg. “I’m always so awful about myself - oh there I go again, I can’t seem to stop feeling bad...”), you need to congratulate yourself for picking up on the negative thought pattern. Mags says, “It’s like a bit of a game you play with your subconscious - so turn it around - I might say, ‘ha, you thought you had me, I’ve found you, caught you, well done Mags!’ Celebrate and congratulate yourself.” Rephrase Whether you’re speaking aloud or inside your head, practice rephrasing in the positive.“For example, my partner and I have been living in Australia now for around four November 2012

years. Occasionally we would be speaking to others, and sometimes we might refer to Scotland as ‘back home’, but we picked each other up on it - Australia’s our home now, so we rephrase in the positive, ‘what I meant to say was back in Scotland...’; Start your phrases again with, ‘what I meant to say’ - it’s all good practice in changing your mindset to a positive train of thought,” says Mags. Repeat Mags insists it is important to repeat this process and incorporate into everyday life. “Negative thinking is habitual and you have to break the habit - internally and outwardly. Then it can become a positive habit.” Silence your inner critic with these tactics and as an added bonus, you’ll discover you can conquer many other fears and challenges in personal and professional arenas. Mags offers one final tip - “I’ve got years of experience working with people and helping to silence the ‘distracter voice’ and one thing I find really helps is if you have someone to hold you accountable - a partner, friend, mentor, coach - someone who can help identify and point out [in a constructive way] negative comments or evidence of unproductive thought processes, and assist you to rephrase into a positive mindset, ultimately rewiring the brain to think positively more often than not.” 19

In looking in the mirror there is actually a noticeable tightening in my thighs and after each session my bottom feels firm, like I’ve ridden a bike for ten kilometres without the hard work of actually doing it. D Day – after my twelfth session: I was excited to be re-measured and to see the results. I have actually lost a total of 12.9 centimetres! I was booked in for the Body Recharge Spring Special, which included two hours of pure relaxation. After being shown to my room and explained the treatments I was going to have done and by whom, I was able to take in the beautiful ambience of the large spa room. Clean and modern with an oriental feel, I changed into a luxurious robe and was escorted to the wet room for the first part of my pamper package‌ Calming meditation music seeped through the sound system as Caroline weaved her magic giving me a full body exfoliation with a dry body brush whilst enjoying the stimulating and relaxing pressure of the vichy shower. Seven shower heads raining 38 degree water onto my body was beyond amazing , all while benefitting from the sauna environment it created in the room. After 20 minutes, the worries of the world had already started to melt away. I was then relocated back to my spa room and greeted by Janene for my 45 minute full body massage. Cloaked in large white soft towels, I felt comfortable and at ease with the friendly staff and a number of times nearly fell asleep. I felt like a Queen being pampered and my skin has never felt so soft. To complete the experience I was treated to a hair treatment and blowdry. As I left the salon, I had never felt so relaxed but invigorated at the same time; and my hair was left silky, smooth with a subtle bounce - a bounce that had even returned to my step as I went back to tackle the rest of my day, this time with a zen-like smile on my face. Now I travel across theworld, speaking to thousands of people. When I found a voice from my experience my life changed. I became an example of what was possible for other people.

Ten years on from the Bali bombings, Carren Smith is sharing with the world how she discovered purpose and is taking advantage of every minute she has left. In 2002 Carren Smith travelled to Bali with her two best friends. Their trip was actually planned to commemorate the one year anniversary of her partner’s suicide. No one was aware that Carren’s intent was to also take her own life in Bali. Tragically, the events of 12 October unfolded and Carren’s two supportive friends were the ones who ended up losing their lives. It’s a story so gut-wrenchingly sad that it’s almost unbelievable, yet, it happened to one of our own. It’s difficult to fathom how someone could, after all this, drag themselves out of the depths of despair. Carren’s not November 2012

only recovered from years of depression, anxiety and guilt but she’s now a successful motivation and business coach, and newly published author of the commemorative memoir, Soul Survivor. Carren says the swing from despair to hope was a long time in the making - six years in fact. “I honestly didn’t see I had a future. I couldn’t see that there was any light left in my life. I felt that I was going to have to wait until I died and the best I had to hope for was an early death. About six years ago I started getting some rude awakenings though. When you’re in depression and someone is dwelling on

that sadness all the time, the ripple effect it has on family and friends is profound. You become really hard work for everyone. It’s tiring for family and friends. I felt I owed it to them to be someone more than I was being, and I felt I needed to pull myself out of the doldrums and find a life that really matters. It didn’t happen overnight but did happen. It was a long process of healing, confronting demons and seeing that while I was here I might as well make my life worth living. I found it difficult to find anything to make my life worth living other than being a vehicle that paid homage to my friends who had died - to pay respect to them by living and by showing humanity what’s possible while we are alive. That’s what makes my life worth living. Now I travel across the world, speaking to thousands of people. When I found a voice from my experience my life changed. Carren is now CEO of her own company, Quantum Leadership Group, which among other endeavours, presents fascinating and powerful seminars, ‘Speakers Fast Trak’ and ‘Mindset Makeover’. Prior to the tragic events of eleven years ago, Carren held a prestigious role at a recruitment company in Sydney, but while ‘leadership’ was key to many of the tasks she undertook in this job, she maintains that back then, she wasn’t very good at it. “I wasn’t a speaker or trainer. I have since spent a lot of money investing in myself to do what I do really well. I travelled to the States for training because I couldn’t find anyone here to help me refine the skills I knew I needed to pursue my new goals. Everyone has an inspirational life and message but there’s nobody out there teaching people how to turn their experience into a really powerful message for others to hear, which I feel is the meaning and essence of life! I’ve trained and brought what I’ve learned back to Australia to share. Speakers Fast Trak, for example, is about teaching entrepreneurs to find their voice,

passion and message - then to spruik it from the rooftops!” Evidently Carren’s experiences have helped to shape her into a powerful, truthful presenter, and admittedly, just chatting to her for this story was inspiring. Plenty of her international clients and online followers agree too. Some success stories include one of Australia’s top bloggers who, following attending a Speakers Fast Trak series turned her small online hobby site into a thousanddollar-a-week money spinner that now supports her family (when previously hubby had been the bread-winner). Another couple who had written a book that wasn’t getting anywhere but who really wanted to make a difference in schools with some new sporting initiatives attended the seminars. They’ve now written their fourth book, are distributed in all major Queensland schools and are about to launch into a workshop series online that’s going to be streamed globally. Exciting stuff, but Carren also points out that it’s not just ‘million dollar success stories’ that count: “Many people just need inspiration and tools to take the next step in their lives - 60 per cent of people I see develop more confidence and clarity in a public forum when previously it would scare the hell out of them. Those achievements are so valuable to them, and rewarding for me,” Carren explains.

In recent years Carren’s directed her energy towards helping others find their own strengths and passions, but it’s been within the past year she’s been able to help herself come to terms with the events of 2001/02 - mostly due to finishing her book, Soul Survivor. She says, “I started writing it eight years ago. It was a very painful journey, I was in a painful place. It’s only really been finished in last twelve months. It’s taken twelve months because I was so busy, but also revisiting the graphic events and emotions of when I started writing it - it took time to process. Ten years on though,

As 50,000 visitors chase the sun to Tropical North Queensland this month, Sarah Blinco explores other delightful reasons to visit our northern counterparts in Cairns veryone has heard of Cairns. It’s just a little bit famous because of ... what was it again? Oh that’s right, the Great Barrier Reef! Did you know that this month more than 50,000 visitors will chase the sun to Cairns to see a rare solar eclipse (eclipse2012.org.au)? The last total solar eclipse in Cairns was in 710 AD with the next not expected for another 225 years. Astronomers and umbraphiles (eclipse chasers) are among those making the trip from Asia, Europe, the Americas and around Australia, for this rarely-seen natural phenomenon. A week-long music festival is scheduled, as well as eclipse parties and viewing events. Four chartered aircraft will arrive from Japan, cruise liners offering eclipse viewing will be stationed off the coast from Port Douglas, reef vessels will make an early start to give passengers a view from the water, and some will take to the skies in hot air balloons for the ultimate bird’s-eye view. Joining the crowds will even be a few lucky winners from America who scored a trip to Far North Queensland via a DVD promotion on the Twilight: Eclipse release. Pretty exciting! A total eclipse of the sun occurs every 18 months or so, however the best viewing

locations are often in remote or sparsely populated regions of the earth. Beginning at 5:45am on November 14 in Darwin, the solar eclipse shadow will sweep across the Gulf of Carpenteria and Cape York, before the central line crosses directly over Oak Beach at Port Douglas, the Great Barrier Reef and Coral Sea at 7:40am – the very best vantage points in the world! As the moon moves across the face of the sun temperatures will fall, and in a path around 200 kilometres wide, the darkness of night will briefly return with totality occurring between 6:37am and 6:39am. If you’re going to be up north for this unique event, make sure you protect your eyes eclipse viewing safety glasses are available to buy online for around $5; however if you’re considering visiting Cairns at any other time, there are of course plenty of options - under the sun and in the dark - to keep you thoroughly entertained. things to do The city is a playground for those who want adventure, romance, delicious dining options or just a bit of R&R. If you’re keen for a bit of culture then Cairns offers several options in the form of JUTE Theatre (located in town, you’ll catch quality, locally produced theatre), TANKS Arts Centre (nestled in a rainforest enclave close to the city, often featuring live music and chic clientele), and the worldrenowned Tjapukai Aboriginal Cultural Park. PERFECT PARTY It’s that time of year again - parties, formals, festivals, crazy work and family get-togethers. What makes a truly fabulous, outrageous do though? Sarah Blinco sought stories from a couple of cool local experts just in time for the silly season. e’ve all seen a fabulous party on television, or more likely, YouTube. I’m talking the likes of P Diddy’s famous White Party, Elton John’s extravagant Grammys bash and well, anything at the Playboy Mansion! Extravagant, outrageous, fabulous - where the champagne is flowing (usually from some kind of fancy apparatus), theming decadent and guests nothing short of glamorous. Thinking back, I’ve been lucky enough to attend some pretty amazing parties right here on the Gold Coast. One memory that sparkles in my mind is that of Williams Talent’s Big Band Night a few years back - a 40s style swing themed bonanza held at the Gold Coast Convention Centre. What made it special were a few key elements - costumes, clever theme, brilliant music, cool celebrity guests, an auction raising money for a worthy cause, a red carpet that made everyone feel like a star, flowing food and champagne. One lovely local who knows how to throw an outrageous party is Rebecca Gordon, director of PR Bazaar and The November 2012

Press Release Shop, and former Public Relations and Communications Manager of Jupiters Hotel and Casino, Dreamworld and WhiteWater World - all locations where she’s helped to facilitate some truly outrageous affairs. Hosted by Sonia Kruger, 800 guests watched burlesque artists perform aerial trapeze, fan and fire dancing while a sexy, Dita Von Teese style performance featuring a beautiful girl bathing in an oversized martini glass stole the show. Guests rocked the night away with performances from Lisa Hunt and Jimmy Barnes.” Popular local event planner come owner of Love Notes, Broni McDonald, has worked on some spectacular local endeavours too, including a lavish Paradise Kids Charity affair themed ‘winter wonderland’ that featured special guest Jessica Watson and her boat Ella. Broni says, “the event was held at Gold Coast City Marina with a large private marquee which had snowflakes cascading down from the ceiling, tall white willow table arrangements, lots of white cotton resembling snow around the room with ice blue special effect lighting, it was magical.”

ON THE PARK, BROADBEACH

tepping in for my dining experience at Lauxes on a Thursday night, I was greeted by a chandelier-filled space oozing style and sophistication as the musician of the night sang softly while he played the grand piano. Seated in a cream leather booth that overlooked the park, I started the night with a pear flavoured cider, perfect for those warmer nights leading into summer. Akira, the head chef, has been with Lauxes with five years and is looking forward to the release of the new menu on 1 December, introducing more of an Asian feel. I was lucky enough to be able to be experiencing a degustation from the new menu featuring the mouthwatering pork belly cooked in Masterstock with Japanese scallop ceviche and red cabbage saver crawt, as well as the Sugar cured oven roasted quail with Hibiscus infused watermelon and cress salad. Beautifully presented with generous portions, the mixtures of flavours were light and complementary with the garnishing playing a big part in the delightful texture and taste. For main I had the robust eye fillet with a duck ragout, sautĂŠed spinach with shiraz jus and potato galette, perfect portion sizing; whilst my dinner date had the herb and parmesan crusted lamb rack with grilled polenta, spiced aubergine caviar with cognac mustard and horseradish jus. enjoying each others, the mains were rich in essence, without leaving you feeling full or heavy. Even eating all our entrees and main, there was still plenty of room for dessert. I couldn’t go past the enticing caramelised banana tartlet, which tasted even better than it looked (served with vanilla bean ice cream with roasted almonds and a round toffee shard). The staff were attentive without hovering, and catered to my minor dietary requirements (mushroom allergy) without any problems making fabulous alternative recommendations. < Shark Bite

INGREDIENTS • 60 ml Kinkynero Dark Rum (asmliquor.com) • 90 ml orange juice • 15 ml lime juice • 15 ml grenadine METHOD Pour the grenadine into the glass, then blend the Kinkynero rum, orange juice and lime juice together and pour carefully over the grenadine. Do not stir before serving. Garnish: Orange rind and slices of apple Glass: tall glass

> Pina Colada INGREDIENTS • 60 ml Kinkylux White Rum (asmliquor.com) • 120 ml pineapple juice • 30 ml cream • 30 ml coconut cream METHOD Blend all the ingredients with a handful of crushed ice and serve in a tall glass. Garnish with a pineapple wedge.

< Perrier Blood Orange Americano INGREDIENTS • 40 ml Campari • 20 ml Antico Rosso vermouth • 20 ml Monin Blood Orange syrup • 120 ml Perrier • 2 lemon slices • Orange twist

METHOD In a mixing glass add Campari, vermouth 42 and Monin Blood

Orange syrup. Cover with ice and stir to chill. In a tall pilsner glass, pour 20ml of cocktail mix. Add a slice of lemon in order to seal in the drink, and then pour over 60ml of cold Perrier. Place another lemon slice over the Perrier and pour 60ml of cocktail and repeat the process with the chilled Perrier. As a finish ad twists of orange peels and leave it in the Perrier.

< Flemington Fling by Schweppes INGREDIENTS • 45 ml vodka • Juice of half a lime (25 ml) • 90 ml Schweppes Agrum Blood Orange • Mint METHOD Strip 5 mint leaves and leave

a sprig for the garnish. Clap the leaves between your hands to release the aroma of the mint. Place the mint leaves in the glass, add vodka and fresh lime. Fill the glass to the top with ice. Top up with Schweppes Agrum Blood Orange and mix thoroughly. Garnish with a lime wedge and a mint sprig.

> Barossa Calling INGREDIENTS • 40 ml dry gin • 20 ml dry pale apera • 20 ml lemon juice • 10 ml sugar syrup • 2 dash orange bitters • Orange for garnish

Glass: Martini or coupette Garnish: Orange twist METHOD Build all ingredients in shaker and shake with ice, once chilled double strain into a martini or coupette glass and garnish with an orange twist.

< Apera Cobbler INGREDIENTS • 2 lemon wedges • 2 lime wedges • 2 orange wedges • 2 strawberries • 60 ml pale dry apera Glassware: High ball Garnish: Mint sprig 43

METHOD Add all the fruit to the glass and muddle gently with a bar spoon to release juices. Build apera over fruit adding crushed ice. Stir over ice to mix ingredients and achieve required dilution.

HAYLEYBATEUP The Gold Coast’s very own champion ironwoman, Hayley Bateup, takes time out to chat to Sarah Blinco about what’s ahead for 2013, and her new role as official ambassador of James Frizelle’s Gold Coast Volkswagen What are some of the roles you’ve been tasked with as part of your ambassador title with Gold Coast Volkswagen? Going to certain Gold Coast events and promotions... This local opportunity is a great fit - I’m born and bred on the Gold Coast and wouldn’t want to work with any other automotive company! What’s your favourite drive in Queensland? I love to drive to Byron from the Gold Coast. I like going anywhere down south for coffee, the shops, or a surf. Sixteen years on the professional circuit amazing! How do you cope with injury and subsequent treatment - that is, your recent shoulder issues and reconstruction? The last few years of having a problem shoulder have been really hard, especially at the start when we had no idea what was wrong with it. I was trying every treatment under the sun. Nothing was working or showing up... then I had surgery but it didn’t get back to

where I thought it would. I couldn’t handle the load I’d normally do. I had trouble keeping the muscle in the shoulder and had constant nerve pain. Last season was basically a write-off for me and I thought this might be it. It was really disappointing to think I had to finish my career off on a negative note. After this season in April though, the surgeon went back in and found it was full of scar tissue, which was removed and everything was relieved after that! Straight away I felt like it was fixed. I didn’t have nerve pain in my arm anymore, and now the muscle is back to the same size as my other shoulder. Some things it’s even stronger than the side that wasn’t injured... I did the Kelloggs trial, won that - it’s nice to feel like I can do a race without pain. If I do well this season I think it will be one of my best after coming back following a year of hell. You were the first athlete ever to win Coolangatta Gold (toughest and hardest race to finish on the ironwoman calendar) three times, and we note from your website you aim to win five - what do you think has

made you such a tough competitor? I’m one of those people who likes to win in everything I do, even if it’s a race across the street - I give it my all. I have an inner drive to succeed and know what it feels like when you win one of those races. I’m always chasing for that. What advice do you give to kids wanting to follow in your footsteps? Get out there, have fun and enjoy it. Ours is a very skill-based sport. Training is important but get out there on your board, practice, have fun, make mistakes, face fears and enjoy it so you’re in it for the long term. You’re an adept businesswomen as well as ironwoman - what lessons have you learned in sport that you apply to business? Sport and business are the same.You want to be the best, doing everything right. You want to be a good person, hard working. All those kinds of things you do in training - being organised, on time, reliable - they cross over into business as well... I did the hard yards over the last ten years, working on my profile, doing the right things by others, sourcing and keeping sponsors, and it’s paid off with my personal training business that I run with my partner. What are some of your top health/fitness tips for us, coming into summer? The best thing is to get up in the morning before work so you’re not thinking about it all day. Get a session done even if you’ve only got half an hour. Try interval running - like one minute hard and one minute easy, and repeat. That way you’re getting the heart rate up and down. Plus with body weight exercises, write out a little session and follow it daily. It’s our party issue - what’s the coolest party you’ve ever been to? The Jupiters pool parties are awesome! Very cool, cocktails, water fun - I went to four of them last season and can’t wait for this season. What are you most looking forward to over the coming year? Racing well.I want to finish off the next couple of years and would love to go for three more seasons. If I can’t I would love to have at least one more season to overcome the last bad season. I feel like it’s going to happen this year though.
