What’s the one thing you know for sure? It is a question Oprah asks all her interviewees and it got me thinking − what do I know for sure? Thankfully, a number of things. One, when I don’t go with my gut, things either go wrong or reach an inevitable conclusion more slowly than I’d prefer. Women in particular utilise this intuition, and ladies let me hear you, isn’t it right nine times out of ten? I trust my instincts ever more as I mature, and worry less about whether I’m being rash or judgmental. It’s liberating to realise I know for sure what the “answer” is, and if it doesn’t feel right for me, it’s not. I also know for sure that regardless of time and distance, there are beautiful people out there who love me for me, whether I feel like I’m having a “fat day” or I am having a “blonde moment”. They see the real me either way. How comforting. I know for sure it is impossible to have 5000 friends, despite what Facebook indicates. It is true that if we can count who is special to us on our fingers, we are blessed. And a stark reminder in light of the horrific Ukrainian air disaster − so far away yet taking a number of local lives − regularly tell your loved ones they are important to you. We all know for sure that you never know what tomorrow will bring. We’ve added a pet page to the mag this month, and because of this I had the opportunity to write about something else special to me, my dog, who reminds me I know for sure we are all capable of giving and receiving love unconditionally. It may seem simple, but look around and I’m certain, unfortunately, you’ll realise you know someone who has lost sight of this − makes you appreciate the sentiment, right? Finally, I know for sure that as author, Eckhart Tolle, once shared, if you only have one prayer in life, make it gratitude. Just try it. Applying gratitude to any situation makes it better, and further, tends to have a ripple effect. I don’t live with my head in the clouds and know first-hand it is often easier said than done to be happy, positive and grateful, but I know life gets better when I try. Your turn now. Peta Yalg meets the local mum who has single-handedly launched an innovative roadsafety initiative for kids that you’ll definitely be interested to know about... ands in the air, baby on the hip and barking orders in all directions, Nikki Burton knows all too well what being the ‘crazy parent’ in the car park feels like. Four children with drop-offs at pre, primary and secondary school – that is three car parks of chaos that Nikki faced five days a week, not to mention pick-ups, play dates, sporting games…the whole time knowing that her children were not one hundred per cent safe from the dangers of the road. Nikki worried about the gap in the education on road safety for children. She saw the evidence every morning with children jumping out of the road-side of the car close to direct traffic and others playing far too near to the road. “At the time, there wasn’t really anything in place [in terms of educating the child],” explains Nikki. So, she decided to do something about it by implementing a change in the way we look at road safety for children; focusing on educating the children, instead of parents. She says, “Children are the key to education.” The outcome of her epiphany was the development of the Safe Spot sticker and magnet program for kids, which provides a tangible way of understanding car and road safety. The program is a first of its kind in Australia, offering children visible cues that they can see, touch and learn from. Nikki says the Safe Spot program helps create autonomy and independence, and she believes that children actually need to educate their parents, not the other way around. “Parents need a huge wake-up call.” Nikki noticed what we’ve all no doubt

Raising asafer generation witnessed at one point or another − school car parks are often madness, with many stressed out parents driving one hand on the wheel, while talking into the phone, beeping at each other and letting their children get out of the car on the road side, instead of the much safer passenger side. “Some parents aren’t listening to road rules, they are breaking laws and allowing their social and working lives to step in front of the safety of their children,” says Nikki. She believes that schools can help to educate children and give them the courage to tell their parents how they feel. Many parents may not even realise how their behaviour is observed by their kids, and Nikki insists that by giving children the courage to speak up and let their parents know that they feel scared or unsafe, many parents would most likely be shocked. Her 12

premise is, that if a child turned to their parent and told them that the way they speed to school scares them, it’s going to hit home a lot harder than the speed limit sign that you fly past on Monday morning when late for work. Nikki wants to create a safer generation. She adds, “As an educator I am passionate about giving children, parents and families knowledge, information, skills and resources to assist them in living a happy, safe life. Twenty-five years ago, Broadbeach was quite a different place. The ‘80s were in full swing, as were the shoulder pads and perms. Tourists flocked to the seaside village, more and more skyscrapers were going up, the Gold Coast Chargers rugby league club was only a year deep into its lifespan, Johnny Diesel played Seagulls, Hinze Dam wall was raised and the Gold Coast Show was first held at Parklands Showgrounds. Life in general was a lot quieter. That’s the word from long-time locals Maria and Paul Ierna. The owners of Mario’s Italian Restaurant, in Broadbeach, who celebrate 25 years in business this year, have seen many trends come and go and various changes in the beachside suburb, which is also celebrating a milestone…80 years young. “The biggest changes have been with the developments and high-rises that have been built around the centre, the Convention Centre and now the arrival of the light rail. The Broadbeach Mall has also changed since we first arrived,” Paul said. “The area was much quieter back then, with more families and holiday homes. It was still a holiday place with people visiting from all around Australia and the world, but the pilots’ strike started not very long after we opened [Mario’s], which had an enormous effect on business at the time.” As Broadbeach was hitting its prime, developments were going up left right and centre, one in particular that was to become the centre of the suburb. Back in the day, the development of the area was led by the construction of Lennons Broadbeach Hotel in 1955. The site is still iconic and is now where The Oasis Shopping Centre sits; the jewel in the crown of the Coast.

As for the next chapter in the book of Broadbeach, Broadbeach Councillor (Division 10) Paul Taylor says there’s only blue skies ahead. “Broadbeach is a fabulous place and it has a fantastic future,” he says. “There’s a billion dollars in development planned or already under way, the police have security under control and we have the best surf club in the world. The casino and Pacific Fair are also getting done up and The Oasis is in a magnificent position. It is a modern and dynamic suburb and the future can only be bright with all of that happening.”

Step back in time Broadbeach turns 80 this year and with a rich and colourful history, the Gold Coast and Hinterland Historical Society president John Burns, who has lived on the Coast since 1954 gives the lowdown on the major milestones that have helped shape Broadbeach.

Fast facts •

Broadbeach was a sand mining mecca pre-1950s where the local dunes were mined by the Australian Oil Exploration and based opposite Cronulla Avenue, and later by Southport Minerals (Mineral Deposits). The road between the convention centre and Peerless Avenue was the only coast road between Southport and Burleigh and was covered by water from flooding and sand blows before it was raised prior to 1954. Internationally famous etcher Vincent Sheldon (1895-1945) set up his studio in Broadbeach. The studio is now housed at the grounds of Gold Coast and Hinterland Historical Society.

Growing up on the Gold Coast, John remembers: • • • • •

The wooden bridge at TE Peters Drive (formerly Mudgeeraba Road) over Dunlop Drain. Lennon’s Broadbeach Hotel and the big, bare, sand patch. The building of the flat roof two storey units, mostly south of Lennons, some still stand there today. Broadbeach Island Caravan Park, where Jupiter’s Casino is now. The start of Miami Keys Agent Alfred Grant, land from 395 pound per lot 22 perches. 15

A look at the historical timeline 1934 - Settlement of the suburb. Before settlement much of Broadbeach and south of the suburb was owned by the Cockerill family. Descendants are still around today. 1934-1938 – The town of Broadbeach started to take shape and was bounded by First Avenue down the Pacific Highway (as it was known then) to Rosewood Avenue, Surf Parade, Chelsea Avenue, and back up Old Burleigh Road. INTERESTING FACT: There were only 100 blocks of land available and many were perpetual leasehold land (that is, land owned by the Crown). They were sold from 55 pounds per block. Owners had option to free hold in the 1960s – this was one of the major milestones for the suburb. Land on the beach side of Old Burleigh Road was not subdivided. 1944 – The Broadbeach Progress Association formed and then disbanded 1948 when the Broadbeach Development Association began. 1955 – Lennon’s Hotel was built on the sand drift that was to become the major part of Broadbeach. It was the suburb’s hub and still is today. 1963 – An Aboriginal burial ground was discovered. Between 1965-68 the remains of 150 people were moved under the watch of Laila Haglund. Those remains were believed to be from the last 1000 years, with the latest being after European settlement. 1966 – The suburb was soaring to new heights with the opening of Broadbeach Primary School with 70 students. 1979 – Broadbeach was a comprehensive shopping destination with Pacific Fair and Jupiter’s Casino just across Dunlop Drain, which was formally known as Little Tallebudgera Creek. 1986 – Stage one of the $100 million redevelopment of Lennon’s Hotel began. 1989 – Oasis Shopping Centre and hotel complex opened its doors and is still the centre of Broadbeach. The rest, as they say, is history. August 2014

REAL LIFE with Sarah Blinco

Imagine being flown to exotic and amazing locations around the world tasked with the job of showcasing such destinations on Instagram. Meet Lauren Bath − she’s the Gold Coaster and Australia’s first ‘professional Instagrammer’ who is paid to do this very thing! Sarah Blinco caught up with this lovely local recently to talk about her enviable gig What does it mean to be a ‘professional Instagrammer’? It means I make my income through using Instagram as a marketing platform. My career began when I decided to combine my loves of travel, photography and social media to try and forge a new job in destination marketing. Since early 2013 (when I first started) to now I have branched out into project management, Instagram consultancy, workshops and speaking and social content photography. I continue to look at ways to add value to myself and for my clients. In a ‘past life’ you were a chef on the GC – when did you get into Instagram in the first place? It’s a funny story because I originally got into Instagram through reading a blog post about what fun it is. I had no background in social media or photography with just a small personal Facebook page at that point. [August 2011] I discovered that I loved mobile photography in my first few months on the platform amassing 5000 followers shooting on my iPhone4. I then upgraded to a DSLR, my first being a Nikon D7000 in November 2011. When did you first get noticed by tourism and other corporate organisations? I was actually ‘discovered’ by Tourism Australia who were beginning their own Instagram journey and looking for great content. As I was shooting exclusively on the Gold Coast I had gorgeous shots of the beach and Hinterland every day and they asked me to start tagging #seeaustralia to feature my work. Funnily enough I started out with a lot more followers than TA but their strong social strategy saw them overtake me this year. They still owe me a case of beer! My first ‘pro’ gig would be Hamilton Island’s Ultimate Instameet in October 2012. I call this a pro gig because it was my first travel offer and the first interest in me as a digital influencer.This was not a paid job but all of my expenses were covered and I had the trip of a lifetime. Going back to work was hard after that! My first paid job came several months later when Tourism Western Australia invited me to visit for the August 2014

Margaret River Surfing Pro and I very tentatively asked for a small fee which they happily paid. It’s hard to say when the penny dropped because there were a lot of times along the way where I had an indescribable feeling that Instagram would do big things. Certainly after Hamilton Island and a little later, Canberra’s Human Brochure, I had an inkling there were possibilities. In late 2012 I had bits and pieces of interest and had an overwhelming feeling that I needed to quit my job. Keep in mind that I have worked since I was 14 and have been raised to work hard, buy a house and be responsible. Quitting my job was a massive decision that I didn’t take lightly. I gave my notice on January 2 2013 after a particularly horrendous New Years Eve. Literally the day that I talked to my boss I went to the staff room for my break and found three massive opportunities sitting in my mailbox. I looked back recently to see what they were and they were the offer to stock my images in a beach art gallery, Tourism Australia wanting to hire me to shoot the Magic Millions and a PR firm wanting to fly me to Melbourne for the Australian tennis open! For others interested in moving into a 18

more professional realm on a social media platform like Instagram, do you have advice? There isn’t an easy answer. I was lucky in that everything I did was for the love of it without any thought of future gain. If I were to go back and look at my journey I know that I worked hard on my photography, built a great community early, was insanely engaged with the platform and other users and listened carefully to all advice offered. I believe in adding value to myself and have increased my value by learning as much as I can about Destination Marketing, KPI’s (Key Performance Indicators), Media Value, ROI’s (Return on Investment) and the analytics needed by DMOs to justify spending on social media. I have continued to grow as a photographer and now shoot on the best full frame camera on the market, the Nikon D800. The key is LOVE! I work very hard at what I do, there’s no weekends or ‘off switch’ with social media. I did have a mentor of sorts, although I’m not sure if he knows it.Jesse Desjardins from Tourism Australia gave me very valuable advice that still resonates with me today. I also believe that Jesse and his co-worker, Chloe Davis, were responsible for some of my earlier opportunities.


What are the coolest assignments you’ve had over the past year? This is a really tough question to answer as I have so many amazing clients and I genuinely love all travel and every destination. For that reason it’s hard to pick a favorite! I can say that seeing snow for the first time in Canada was amazing! I never realised that I love winter sports and tried my hand at dog-sledding, skiing, ice-skating and snow shoeing in Quebec and Alberta. I loved the snow so much that I plan to travel to the Snowy Mountains in New South Wales this year to see what Australian winter has to offer. My home state is Queensland so I have enjoyed exploring my own backyard with campaigns taking me from the very tip of Queensland to the country and everywhere in between. Tasmania and I have a very special relationship as I find the landscapes there incredible. The Northern Territory blows me away every time, and a recent trip to Arnhem Land saw me as the first digital influencer to visit the region. I had the pleasure of spending a whole week in Australia’s South West in WA in February, and had my first trip to South Australia. The Grampians in Victoria has welcomed me twice and I’ve seen the red crabs in Christmas Island. See! Too hard to pick! In the past year I have swum with turtles in the Whitsundays, manta rays in Fiji and dolphins in Bunbury. I’ve travelled the sky in every size

plane and helicopter known to man including a tiger moth bi-plane. I’ve jumped out of a plane for work twice! I’ve seen Tasmanian Devils in the wild and sailed the Solway Lass. Every experience is unique and wonderful. What have you learned over the past few years and through your career change about following your heart and taking risks? You hear and read all of these catch phrases and inspirational quotes and you never really take them seriously but here is what I have learned … l Jump and the Universe will catch you! l When one door closes another one opens. l The future belongs to those who believe in the beauty of their dreams. If I hadn’t have followed my heart and trusted my gut I would still be in the kitchen. But good things don’t come easily. I didn’t just take a massive risk but I worked very hard to get to where I am. I don’t consider myself just a digital influencer or Instagrammer anymore. I am pioneering the way for social through visual media in Australia, creating a new industry of instagram influencers and educating others along the way. When you’re not working, where would we find you hanging out on the GC? When I’m between jobs I practically live at my local coffee shop, Lark at Main Beach. It opens early and has phenomenal coffee. Do you offer photography mentoring? 19

I do offer lessons and mentoring but time is always my enemy. I love to teach beginner DSLR photography and social strategy to local Instagrammers when I have time. Use the square! Some people choose not to use the square crop and lose half of the already small space available. I love square images and always recommend using Instagram as it was meant to be used.

Make sure you edit. Use Snapseed, it’s free. You don’t have to do a lot, in fact it’s better if you don’t, but a straighten and a touch of saturation goes a long way.

ow good are you at recognising your own potential and allowing yourself to shine? Do you understand what you are good at and the positive impact you are able to have? I’m here to challenge any limiting belief you may hold about your own potential. We are all capable of achieving amazing things when we choose to believe it is possible, and yet so many of us choose not to. Look around you and observe the extraordinary talents people possess and the heights we are capable of achieving when we choose to trust ourselves and do the things we are great at. If while reading this you’re thinking ‘but there’s nothing particularly special about me’, reflect more deeply. Choose to see the things you do well and the benefit of the approaches you take. If you step outside of yourself and observe closely the difference you make in the world you will start to see your own greatness. Reaching the peaks of what you are capable of will take recognising your strengths and applying them, which means allowing other people to see you. The emotions that hold a lot of people back from standing in their spotlight are many and complex. Among the most common I observe is a fear of being judged or ridiculed. Another is the belief that if we make a mistake we have failed. Fear of failure, particularly in in front of other people makes some of us afraid to stand out in the first place. However, we only truly fail when we give up on what is important to us or miss the opportunity to learn from our experiences. August 2014

Four important steps you can take to ensure you stand in your spotlight and showcase what is great about you are: 1. Choose to thrive Deciding to thrive is a critical first step toward making that happen. To be the best possible version of yourself and achieve everything you are capable of you first need to want to. Then you need to be willing to do what it takes to get there. Reflect on how much happier and fulfilled your life would be if you had the courage to do the things you really want to, unconstrained by limiting belief or fear. Be passionate about making your dreams come true and strive to overcome any barriers standing in your way, including being afraid to stand in your spotlight. 2. Be grateful for your talents Rather than denying and hiding what you are great at, choose to recognise your talents and be thankful. Allow yourself to be completely honest about the ways you are able to contribute, make a difference and positively influence the world around you. Respect your unique gifts and choose to fully leverage their benefit to create a thriving life. 3. Recognise and conquer your fears Understand how fear is holding you back from pursing the things that matter most to you. What role are you allowing fear to play in dictating the decisions you make about the career or life directions you choose to take? How is fear influencing the decisions you make about pushing the boundaries of your 30

comfort zone and striving for your best? While striving to thrive is essential the fear and anxiety that comes with perfectionism is devastating. Realise that you are not perfect and few people expect you to be. Choose to hold reasonable expectations of yourself and expect the same from others. When you do come across the inevitable ‘nay sayer’ or critic choose to ignore their views. What unreasonable and unkind people think should never stand in your way of thriving. Give things a go knowing its OK to fail, all we need to do is get back up and try again. 4. Be proud of yourself Choose to be proud of who you are and willing to showcase what you are capable of. Recognise that being proud isn’t the same as being arrogant or conceited. It’s not only OK to love and respect yourself, it’s essential. Don’t be afraid that people will perceive you as having an inflated self-opinion just because you choose to step forward and give things a go.

How to avoid mental health issues in the

corporate world Shortness of breath or recurring cough Hypersensitivity to noise and light Excessive or deficient appetite Irregular or variable bowel motions Over concern for minor issues Anxiety that jumps out of nowhere and attaches itself to the moment These are the more frequently experienced signs; the list though, is potentially endless. Any one of these symptoms can compromise day to day functioning, but when we see a combination of any of these symptoms, should they be severe enough or ongoing, the situation would be considered as “at risk”. Should you consider yourself in this situation, it is advisable to make an appointment to review your situation. There are as many variables to the problems leading to mental health issues as there are treatments. It may be as simple as changing habits and routines or having a dietary and exercise regime. For example Vit B6, D, Zinc and Iron are a common deficiency in the corporate world. In more complex cases assessing vitamin, mineral and amino acid status, general health status including gut, thyroid and adrenal health plus hormone balance will often be required. The more severe the symptoms are, the more important it is to explore other aspects of your physical and mental health. In the majority of cases, there are precedents and underlying issues. Experienced overview and treatment are essential in preventing progression to less desirable health issues. Make an appointment to have your “at risk” factor assessed and prevent the landslide to mental health issues. l l l l l l

Propping up on coffee and other stimulants becomes common practice. Often this leaves little in reserve for family and social time. Corporate type professions are very often office bound. Frequently office bound means not only high pressure and deadlines, but also exposure to poor natural light and artificial climate control. That said, the office can also be a positive workplace as many individuals thrive in such environments. Why is it then that many don’t fare so well? There is no singular answer, and it is most often multiple factors which potentially cause more complex health issues. Most commonly recognised factors are lack of natural light, fresh air, exercise and personal space. Hydration and dietary habits are a large factor also. And, there are invisible factors such as electromagnetic

radiation, negative ion generation, ultra high frequencies and other transients and incidentals such as out gassing. Currently mental health is the industry focus. Mental health issues are however very often the end result of a growing multiple of factors or the progressive effect of ongoing exposure without resolve. LIFECOACH with Sarah Blinco hree minutes and fifty-two seconds. That’s how long Savage Garden’s I Want You played for, and I could easily spin it on repeat, singing and dancing along. In fact, I could listen to the whole album of songs following I Want You, thoroughly immersed in every wonderfully melodic moment. That was less than ten years ago. While I will always adore my Savage Garden albums − unapologetically so − if I’m listening any one of those songs now (and this goes for any song at all, really), it is doubtful that I would not be checking email, replying to a text, scrolling through Twitter or hash-tagging on Instagram by the time the second chorus rolls around. Can you relate? I bet you can, and I’d go as far as to say that with the exception of those who stringently practice meditation and mindfulness each and every day, the rest of us have lost the ability to sit still, focus and appreciate. Michelle Loch, director and founder of UnLoched Potential (unloched.com), is a certified professional business coach and is an expert in the neuroscience of leadership. She explains,“There is

Michelle answers, “The depth of colour in the world! Without time to fully appreciate ‘anything’ we skim on the surface of ‘everything’. We take in less, retain less, appreciate less and therefore miss out on enjoying the wonderfulness of any moment or situation. It’s like when we get to the end of the day and we’ve done so much, yet feel like we have achieved so little. It’s like dipping your toe in the ocean and not getting to appreciate the joy of immersing your whole self for an invigorating swim. It’s like listening to your 9 year old tell you about your day, and when he pauses, expecting a response from you, you realise you have no idea what he was saying − that one is from personal experience. We are missing out on the joy of the full experience of life. Allowing ourselves to be distracted takes a toll on the brain’s ability to make decisions, understand, memorise, recall and inhibit our non-productive behaviours, like stopping ourselves from eating the whole bar of chocolate!” While a lot of us realise we are very distracted these days, and dare I say, it is completely ‘normal’ for anyone under 25 to think “this” is what “life is”, most don’t understand why such behaviours are bad for our health. Michelle explains, “Our brain is wired to seek reward and avoid threat. In particular it responds very quickly to the detection of a ‘threat’. When our brains evolved,

that threat might have been a saber-toothed tiger. In our modern world, that threat is usually social in nature, the ringing of the phone, the beep of the incoming message, the lure of checking Facebook. When our brain detects an ‘error’ in our environment or is concerned about possible negative outcomes (has anyone ‘liked’ my last post yet?) our limbic system (driven by our need for survival) jumps into action and instructs the brain to pay attention − NOW! A signal to our central nervous system says, ‘get ready, something is happening that you need to be prepared for’, and the fight/flight system does its job. That job is to release ‘stress’ hormones into the blood stream and a number of changes occur − your heart rate goes up (to increase oxygen in your blood) , your blood thickens (in case you are injured), your digestive system shuts down (you don’t want to waste precious energy digesting food when you are dealing with danger), and your brain moves to reaction mode (and can make rash or inappropriate decisions). We need this, because this process is what allows us to jump out of the way of an oncoming car without thinking about it − it’s a non-conscious activity over which we have no control. The downside is that the constant nature of these responses means the presence of the stress hormones in our body is constant and even at a low level, they are destructive over the long term. Cortisol in the long term decreases the ability of the brain to learn and memorise, it inhibits the neuroplasticity of the brain (its ability to adapt and grow), it causes bone demineralisation, increases weight, causes inflammation and reduces immunity.The list goes

It increases the wear and tear of your body.” It’s not too late to make a change though. “You can brain train, and train to manage your fight/flight system using a tool like MyCalmBeat (take a look at unloched.com for more details).You can also work on getting externally focused with a structure. Set yourself three goals to achieve for the day − and don’t waiver. Be mindful and check in on yourself regularly −’Is what I am doing right now helping me to achieve those three things’; ‘Do I really need to check Facebook?’‘Can I let that call go to the voicemail and check them all later?’ When we multi-task, that is, switch attention, we use up vital brain energy and for every two minute distraction it takes us around 24 minutes to get back to the original focus − such a waste of time. Schedule your Facebook, phone messages and TV time and mindfully devote your full attention to them. Turning off the ones you don’t want at that particular moment is the best strategy, as hearing the ‘ding’ is irresistible to our brain − it’s survival drive says,‘I’d better check that out in case...’.” Aside from structuring your day and tasks more carefully, specifically practising ‘mindfulness’

may be just the trick too (and it’s not as hard as you may think). Michelle says, “Mindfulness is your ability to hold your attention in the present moment, without judgment. Being able to objectively observe and assess what is going on in the moment without emotional or judgmental filters. Simply practise focusing on your breathing for a whole five minutes without letting your thoughts wander, or practice washing up mindfully − challenge yourself − can you hold your attention fully on doing the washing up without allowing distractions. Or my favourite, take 10 minutes to eat a piece of chocolate and hold your attention fully on the process. Close your eyes and start by just feeling it in your hand, then take time to smell it and breathe it in, then start to eat it, savour the taste. It doesn’t matter what you do, it’s about your ability to hold your attention in one place. There are plenty of free mindfulness apps available if you want to get a head start.” Are you ready to try to focus with me then? I don’t know about you, but I think I’ll start by putting my phone on silent and giving that chocolate exercise a go − thanks for that Michelle!

Sarah Blinco considers 7 lessons we can all learn from man’s (or woman’s) best friend about what’s actually important arry the dog is nearly thirteen. He is an Aussie blue cattle dog who hails from a farm outside Moree in NSW − of all places! Cooper and I had been looking for a bluey to love, but the only puppies being advertised in town were running amuck on properties miles from our base. At the time we were radio presenters, and one morning I decided to ask on air if anyone nearby had pups who needed a furever home. Sure enough, a call came straight through! After work we drove all the way to the other side of town − a whole ten minutes away, and selected from the dusty pack a shy six week old blue, who remained nameless for three weeks until we finally decided he was definitely a “Harry”. Aside from actually learning about dogs because I’m interested in their psychology and welfare (and all dog owners should be properly educated, I believe), I’ve learned from dogs too. Harry is a constant source of love and hilarity; a being able to make me grin even when I’m down or grumpy. His bright smile and wagging tail remind me of some of the significant lessons I’ve learned over the years from our furry four-legged friends about what really matters in life. 1. Get outside and moving − it can fix all manner of woes. Rarely is anything ever that bad that a good walk can’t fix. It’s important to get out of your head, get the blood flowing and do your thinking/problem solving/reflection in a fresh (smelling) environment. 2. Be mindful; live in the moment. Dogs live in the moment. They don’t dwell on the past or worry about the future. Dogs embrace the now, and we should too. 3. Change your mindset − anything can be viewed as an adventure. I’ve never been one

What my dog has taught me for exercise, however, watching Harry on a walk, I realise getting out and being active can indeed be a wondrous adventure, if you choose to look at it that way. Similarly, mundane tasks are an opportunity to be excited. My dog (like yours, I’m sure) doesn’t care where we’re going in the car. Even if we’re just headed to the shops, there’s pleasure to be had on any journey, whether you’re aware of the final destination or not. Just enjoy the ride. 4. Cherish and be grateful for the little things and moments. Pats on the head, hugs, belly rubs, praise, a biscuit, wandering around outside in the garden − there’s beauty and happiness to be found in every moment, if you’re open to it. 5. Be a loyal friend, and don’t judge.What’s always happy to see you, never complains or holds a grudge, offers licks (kisses) of love at just that right moment, and will follow you to the ends of the earth? A dog. Imagine if all humans behaved like that.

6. Love is the answer. As with humans, there are so many dogs who have been reared in an aggressive environment where insecurities are fostered. But, it’s been proven countless times that a loving home can turn this around. Dogs can overcome fear through love, and humans can too. Give love and receive it freely, unconditionally and often − before you know it, life will be worth wagging your tail about. 7. Make time for play. Taking time for play is not only about the benefits of moving your body, it’s about spending time with those you love in a relaxed environment. Play − or a break from the routine grind − keeps us sparkling in mind, body and spirit.Watching my dog play reminds me that we too can embrace the “don’t worry, be happy” attitude, and who doesn’t want a little more of that in their lives! you realise how much you have been overeating the wrong foods. Secondly, just move! What was the best piece of advice one of the staff at Vision gave to you that’s stuck with you? Accountability. Spanish The unstoppable he popularity of Spanish cuisine and wine has slowly been on the rise ever since a man named Frank Camorra started a little tapas bar in Melbourne called Mo Vida. Back in 2004 when I first visited this institution, never did I think the popularity of Spanish wine and food would continue to rise as it has until today. The Spaniards have been producing wine for over 3000 years so their distinct emphasis has always been made on the indigenous grapes that have been aligned with particular parts of the country. Hot summers and cold winters help to make the wines retain freshness through their naturally high acidity. Spanish wines like other old world wine producing countries as a general rule have less overt fruit characters making them the ideal pairing for many food flavours. The Gold Coast has had a recent Spanish explosion with great little tapas bars and restaurants popping up all over the place with great offerings of Sherrys and wines to match best with these dramatic flavours. Winter Sangria is a great elixir to the few colder nights we may experience over the next few months and a fantastic way to satiate a crowd at the beginning of your party.

Winter Sangria — Recipe — • 2 oranges, 1 apple, 1 lemon, sliced and diced. • ¼ cup Brandy, ¼ cup castor sugar, 750mls of light – medium red wine (Tempranillo perfect) • 2 quills cinnamon and 2 star anise. • Bring slowly to the boil and simmer for half an hour. Serve warm in solid glass or mugs with sliced citrus apple garnish.

Bacon and Broccoli Tortilla SERVES 4 Superfood: Broccoli INGREDIENTS • 400 g broccoli, cut into small florets • 1/3 cup extra virgin olive oil • 3 medium potatoes, peeled and cubed • 2 medium onions, halved and finely sliced • 3 rashers bacon, rind removed and chopped • 2 cloves garlic, finely chopped • 8 eggs • ½ teaspoon paprika • 2 tablespoons chopped flat-leaf parsley • salt and freshly ground black pepper METHOD Bring a medium-sized saucepan of salted water to the boil over high heat. Toss in the broccoli and cook for three to four minutes, until just tender Drain and place into a bowl of iced water to stop the cooking process. Heat oil in a medium-sized non-stick frying pan and cook the potatoes on medium heat, turning often until tender and golden. Using a slotted spoon, remove the potatoes from the pan and transfer to another dish. Remove most of the oil from the pan and set aside in case you need more when cooking the other ingredients. Heat the oil that is left in the pan until hot, add the onion and cook until soft, add the bacon and continue cooking until the onions and bacon are slightly browned. Stir in the garlic and cook for about one minute. Return the potatoes to the pan and combine with the onion and bacon. Arrange the well-drained broccoli over the top. Whisk the eggs with the paprika and parsley, season with salt and pepper then pour over the vegetables. Swirl the pan to evenly distribute the eggs and cook over a gentle heat until the egg is set. Place the pan under a preheated medium–hot grill and finish cooking the tortilla until golden and completely set on the top. Using a spatula, loosen the tortilla from the side of the pan and carefully slide onto a serving dish. Cut into thick wedges.. Serve the tortilla hot or at room temperature. Note: this tortilla is great to take to picnics as it can be eaten cold. August 2014

SERVES 6 Superfood: Quinoa

INGREDIENTS • 2 tablespoons extra virgin olive oil • 1 large onion, finely chopped • 1 lb/500 g ground/minced beef • 1 tablespoon cumin seeds • 2 cloves garlic, finely chopped • 1 large fresh tomato, grated • 1¼ cup quinoa, rinsed and drained • 2 cups water • Salt and freshly ground black pepper • Handful chopped flat-leaf parsley • 6 medium-large red or green bell peppers/capsicums

Little Amaranth cakes with Cranberries and Orange Makes 12 Superfood: Amaranth INGREDIENTS • 125 g almond meal • 1 cup pure icing sugar, sifted • ½ cup amaranth flour • ½ teaspoon baking powder • 125 g dried cranberries • 2 teaspoons orange zest • 2 tablespoons orange juice • 125 g unsalted butter, melted and cooled • ½teaspoon vanilla extract • 4 large eggwhites

METHOD Heat oil in a large frying pan and sauté the onion until soft and golden. Add the beef, stir well and cook until lightly browned all over. Stir in the cumin seeds and garlic and cook for about one to two minutes until fragrant. Add the tomato, quinoa, water and season with salt and pepper, bring to the boil, reduce the heat, cover and simmer for about ten minutes or until all the water is absorbed. Stir the pan every now and then during the cooking time. Remove from the heat and stir through the parsley. In the meantime, prepare the peppers. Preheat the oven to 200°C. Cut the peppers in half lengthways then carefully remove all the seeds and membrane from inside. Alternatively, you can cut a slice off the top of the bell peppers from the stalk end to make a lid then carefully remove all the seeds and membrane from inside. Fill the peppers with the meat filling and place into a baking dish. Cover with their lid, if you have cut the bell peppers that way, drizzle with extra virgin and season with salt and pepper. Bake for about 20–30 minutes until the peppers are slightly charred and cooked. Decorate with chopped parsley, just before serving.

Orange icing • ½ cup icing sugar • 1 tablespoon orange juice METHOD Preheat the oven to 170°C. Grease 12 ovenproof tea cups or a 12–cup muffin tin with paper cases. Place the almond meal, icing sugar, amaranth flour and baking powder into a bowl and use a whisk to mix well, breaking up any lumps of mixture that may have formed. Mix in the cranberries and orange zest then lightly stir in the orange juice, butter and vanilla. Beat the eggwhites until foamy and soft peaks form then gently fold into the mixture. Spoon the mixture evenly into the prepared tea cups or muffin tins. Bake for about 20 minutes until golden brown and cooked when tested with a metal skewer. Remove from the oven and cool completely before drizzling with the orange icing. To make the icing: mix the icing sugar with as much of the orange juice needed to make a slightly thick but runny consistency. 43

H Taurus April 20 – May 21 Venus moves through Cancer and into Leo, half way through the month. While she is in Cancer, she helps you to get off your own case and start to love and accept yourself exactly as you are. She is therapeutic. As she moves into Leo, so you get to walk forth with fresh understanding.

H Aquarius Jan 21 – Feb 19 As the Sun and a variety of his planetary cohorts, make their way through Leo, it may seem like the world has gotten lost in the land of self-interest. Your commitment to being aware of others, need not be diminished just because the world appears to be going in the opposite direction. H Pisces Febr 19 – March 20 The Sun and Jupiter are in Leo. Though Leo is a fire sign, which is opposite to your element of water, both are naturally expansive. You aren’t going to be burnt by this transit. You are more likely to be inspired. The bliss you seek is more likely to come, if you value yourself highly.

H Gemini May 21 – June 21 Mercury travels wide and far this month, as Mercury is wont to do. Wherever Mercury goes, you follow. He begins in Leo, where he fires you up with a powerful sense of self and possibility. Then, he moves into Virgo, inviting you to put your ideas into practise. Accept the challenge. H Cancer June 21 – July 22 Largely, life leaves you to ponder and assimilate events that have passed. As you do this, so you move from an important reflective solitude, into the orbit of close friends. As you begin to feel your own sense of balance and equanimity, so the challenge of relating gets interesting again.

goddess transformation?

ome closer and I’ll tell you. True goddess transformation doesn’t begin with gloss and glamour. It starts with your most prized asset – your beautiful brain. If you are rolling along in 2014 with a plan to make changes to your life, then success starts with having the right mindset. Why our grey matter matters Do you ever wonder why you can’t achieve certain goals? Do you carry around self limiting beliefs about what you can achieve? Have you ever stopped to take note of your thoughts? A significant part of the problem when it comes to achieving our goals is that we don’t realise the power and importance of the mind. Did you know that we have 65,000 thoughts a day and 85 per cent of these thoughts are negative? These negative thought patterns prevent us from having the right mindset, and having the right mindset is of great importance if you want to realise your goals. The 3 P’s to change With the right mindset almost anything is possible. This means you have to not only be able to see yourself as already having achieved your goal, but you have to be able to feel it and believe it. If you can’t see, feel or believe that you can achieve your goal, then achieving your goal is August 2014

near impossible. To achieve, you must first believe… but if you don’t believe, then how can you shift your thinking? It’s easy, all you have to do is pretend and practice, until you perfect it. The three ‘P’s to change. You have the ability and the resources you need to achieve anything you want – you just have to open your mind a little, imagine and visualise. Let’s say your goal was to improve your health and fitness. Imagine having it right now. What would you feel like if you were fit and healthy? What feelings are going through you? Close your eyes and visualise it. Try to really feel it. Give that feeling a word and write it down. While still visualising that you are fit and fabulous right now, what would that look like for you? What is around you, what can you hear, what do you see? Give your picture a word or a sentence. Finally, consider your beliefs. What are your beliefs around your goal? Do you believe that you can achieve your health goals? Ask yourself the question out loud and see how you respond. If you have a negative response, that’s okay, you can change it. Pretend that that belief does not exist.Think of another belief you could focus on instead. Take some time and write it down. If you are having a little trouble with your belief, write the opposite to your belief, and use 50

that to focus on. Remember, it has to feel right with you, so word it in a way that feels right. Now you have a list of words or sentences that you will use to create a statement or affirmation.Write a statement using the feelings, environment and beliefs that you came up with during the visualisation exercise. Let’s say, for example, you came up with the following: l I feel energised and joyful. l I hear laughter. I see my loved ones smiling as we all are happy and healthy. l Being fit and healthy allows me to achieve so much more in life. Now, using the words and sentences that you came up with, write your statement using positive language. For example: “I am fit and healthy – I look fabulous. People are commenting on the inner glow I have. I am excited by life and proud of what I have achieved. I feel such joy that I have more energy to share with my loved ones and they don’t have to worry about my health anymore”. The next ‘p’ stands for practice. Once you have your statement using your key words, practice as often as possible, every day and night. Read your statement over and over, and really connect with the emotions, the feelings of having it now, in your hands, in your experience.
