What do you love, and where can it be found on the GC? Bars, rainforest walks, ice-cream...? This month, graphic designer and avid supporter of the cycling to work movement, Helen Da Cunha, shares active options for increased fitness 7 of the best outdoor workouts on the GC

Exercising is essential to me. If I stay sedentary for too long, my inner light begins to dull. I prefer to workout outdoors, where I can connect with the elements, see people, places and things. I am self motivated, spontaneous, but time poor. Most of my workouts are done on the fly and I usually go solo… and when I do them, I go hard! Cycling (from Coolangatta to The Spit or anywhere in between) Cycle along the esplanades – check what the wind is doing – you don’t want to be against the wind on your return! Ride on the road or the ocean ways. Get a speedometer and keep your pace at 28kphr or more for buns and thighs of steel. Beach running with a twist (Burleigh to North Burleigh and back) Jog barefoot in the shallows. This is ideal when the tide is low and the sand is firm. Run in your bikinis/shorts, as you will get splashed. The foamy water will cushion your feet. ‘Death by Cardio’ time challenge, North Burleigh Start at the bottom of Brakes Crescent and run up/down 5x, on the fifth ascent go over the hill to the back stairs, run up/down the stairs 5x, on the fifth ascent go via the goat-track to the beach stairs, go down and up 5x, on the fifth return, jog back over to North Burleigh side to the base of the grass hill, now run up the grass hill 5x. Time yourself so you can beat the clock next time! Tallebudgera to North Burleigh circuit Park the car at Tallebudgera, head north over the bridge and into Burleigh National Park. Pass the point at Burleigh Heads, head all the way to North Burleigh along the esplanade. If you feel like a pit stop, take the stairs down to Piccolos. Then head back the same way you came. Approx. 7km return. Bilinga to Snapper Rocks oceanway circuit This one is a fun workout with kiddies. They can ride the scooter or bike while you run alongside them. I like to stop along the way to do pushups and tricep dips on the bench seats, or wall sits on the side of the surf club. Nike Training Club phone app at home, in the gym or under a shady tree You will need smart phone, headphones, a mat and some hand weights. This app is free and amazing. It gives you plenty of workouts ranging from 15 – 45 minutes, beginners to advanced. It tells you what to do and when to do it. With video instructions to help technique. It will leave you feeling sweaty, sore and satisfied. Laps in the pool (my favourite pools are Palm Beach/Currumbin and Bond Uni) We are so lucky to have such clean and relatively cheap facilities on the Gold Coast. I’m an average swimmer and only have the patience to swim for about 45 minutes. I try to do about 30 x50m laps (1.5kms). Example: 10 x50m swim, 10 x50m kickboard, 10 x50m swim. Ride your bike to the pool as warm up/down.

Silvie Paladino On Thursday 31 October, The Arts Centre Gold Coast and Matt Ward Entertainment present an evening with Silvie Paladino.

ilvie’s remarkable vocal range enables her to sing a vast repertoire including jazz, contemporary, musical theatre and light opera. She is well-known to audiences through her stage and screen appearances. Her first theatrical role was Eponine in the Australasian tour of Les Miserables. She was then invited to perform the same role on the West End in the London production. In 1997, Silvie returned to London and performed the role of Fantine in Les Miserables for a successful two-year season. Breast Cancer affects one in nine women and one in 125 men in Australia. Almost everyone we know these days has been affected by it in some way or another. Margaret Berndt of Mirra Boutique at Paradise Point admits her passion is most definitely fashion. Mum-of-five, Rayna Bond, is a true fighter – she donned a good attitude, conquered cancer, and came out the other side shining. A very bubbly Rayna shares her story with Katia Iervasi. Buckle up and prepare to be inspired veryone who’s had cancer has a story. They can pinpoint the moment they knew something was wrong, the second doctors confirmed that gut feeling. They can tell you how the big C snaked its way into their lives. They can describe the rollercoaster of challenges and triumphs, and if they’re lucky, the ecstasy they felt when they got that batch of clear results. For Queensland mum Rayna Bond, it all started back in 1999. As she was getting dressed one day, she felt glands coming up under her armpits. “It wasn’t bad, just uncomfortable, so I went to my GP and said,‘what’s the go?’” He didn’t have the answers, so he sent her to get a mammogram. It came back with nothing, so Rayna trotted off to the specialist. He told Rayna to come back in six months time, and sent her on her way. That was in March. In April, Rayna found an egg-sized lump in her breast. That was the moment where life as she knew it changed forever. “I went back to the specialist, and he diagnosed me with breast cancer.” Not only did Rayna have breast cancer, but she

had one of most aggressive forms of the disease. She had been proactive, she had no family history, and oh – she was just 34 years old. The most incredible thing? She had five young children running around at home, and she took care of them throughout the whole ordeal. But Rayna’s not someone who pats herself on the back. She laughs off the idea that she’s an inspiration – a superwoman, even. In fact, she says her kids pulled her through the darkest times, and made the light ones even brighter. “I did it with a lot of help from my family. My parents were always around, my husband’s fabulous – without them I would not have been able to go on.” “But we did – you have no choice!” Chatting to Rayna, you get the feeling she’s brutally honest, the kind of woman who likes to lay everything out on the table. That’s exactly what she did when it came to telling her children. Forget sugar-coating and throwing around the c-word like contraband – she said it like it was. The problem was, they were a little too informed about cancer. “It was a very difficult thing to tell my kids. When you have children at school, they go to life education classes. They get told not to smoke or drink, because you’ll get cancer and die. I had to explain breast cancer wasn’t like that.” Though she’s got a tough shell, Rayna didn’t tell her kids until after the first surgery. Unorthodox, maybe, but her approach worked. “I just said I was going to hospital, and they accepted it. When I got home I told them I had breast cancer.This approach works well for some families. I think it depends on the age of the kids. My youngest was six, my eldest 15.” Cancer’s like an obstacle course: it throws hurdles at you relentlessly. So after Rayna ticked her kids off 18

her ‘to do’ list, she had to get treatment. Once again, Rayna was a model patient. Being so young, she had more energy than most ladies sucking lollipops beside her in the chemo room. Rayna’s plan was draining: partial mastectomy, followed by four rounds of chemo and five weeks of daily radiation. By the time Rayna finished treatment, it was September 1999. Her life had been shaken and stirred, and just when she thought she was in the clear, she started getting a lump in the scar tissue. The next March, she was back in surgery. The doctors found nothing. That’s when cancer threw her another – epically cruel – curve ball. “The following November, I was diagnosed with cancer again. I had my breast removed in December.” That was Christmas 2000. Fast forward seven healthy years, and breast cancer reared its head again. Many sufferers think their diagnosis is unfair. Rayna was no exception. So when she lost her hair, she refused to wear a hat. “I wasn’t doing it to put it in people’s faces; I did it because of the simple fact that this is what a lot of people go through. People do stare at you like you’re an alien. That’s why most ladies cover up – they want to try and blend in so people don’t point and stare.” Though she was a cancer sufferer, Rayna was – and always will be – a mum first. So when her hair started falling out, she wasn’t worried about herself – she cared about her kids. And the bullies in the playground. She went back to her fail-safe approach: telling them how it is. “When I came home after my mastectomy and had all these drainage bags and clips in my chest, I took my shirt off in front of my kids and said, take a look. This is what life is like.” No BS in the Bond household. Ask cancer sufferers and they’ll tell you:

the hardest thing is getting past the low points. The times when you feel like sinking, the times you’ll never forget. For Rayna, there was one incident that sticks like superglue. It was the school holidays, and she was planning to meet her family at Wet’n’Wild after radiation. Her job was to bring fish and chips for the hordes. She stopped at the local shop and walked into one of the most humiliating situations of her life. “I had very short hair. I didn’t wear a hat because it wasn’t my fault that I had cancer. The fella said to me:‘people like you should be in Kings Cross.’” He was referring to the notorious nightlife spot in Sydney. Rayna was gobsmacked. “I said to him, ‘you really should ask before you jump to conclusions. Yes it’s chemotherapy, and you’re an ass!’” The man was stunned into silence. Then she got the hell out of there. Mind over matter. Rayna is a stellar example of what can happen when you decide to wake up in a good mood on Mondays. It’s clichéd, sure, but a good attitude is everything. And breast cancer was the best teacher she ever had. “My philosophy in life, and this is what I learnt from having breast cancer, is that you

have to find the positive in everything. If you can’t find a positive, you can’t get over whatever you’re experiencing.” As a cancer veteran, Rayna has turned her experience into something meaningful. “Cancer has made me find my voice. If I can help one person going through this, it’s all worth it.” One thing’s for sure – she’s helped a whole lot of people. After smashing cancer the third time around, Rayna teamed up with the Cancer Council to start a support group on the Gold Coast. It’s called C-Vivor. “It’s an activities group – not the kind where you sit down and pour your heart out.” Doctors talk about new surgeries, chefs talk about new dishes. What do cancer survivors chat about? Anything from ‘chemo brain’ to shopping and the kids. “We have women with different cancers, but it’s the same feeling for all of us.” Amongst the craziness of cancer, it’s nice to be with people who just get it. The Cancer Council has been rolling out the program. You can walk with Rayna, or do laughing yoga. She’s started something amazing. What’s also amazing is the advice Rayna dishes up to ladies going through cancer. “Don’t be too hard on yourself. If you don’t feel well, you don’t feel well. If you need to cry, you need to cry. Just be a little selfish.” And Rayna’s current diagnosis? She’s high on life.

Nothing beats wearing something that you have created yourself − and think of all the money saved! This month we have a great DIY project for you, thanks to Geneva from A Pair & A Spare.

DIY ALEXANDER WANG INSPIRED GLADIATOR SANDALS YOU NEED > • At least 5 yards *approx. 5 metres of leather (or faux leather) trim (try to match the material and width of the straps of your flats as much as possible) • Harp scissors • Flats (I used these from H&M) • E6000 glue *Industrial strength • 6 press stud buttons • A multi hole punch tool • Optional: some pvc or wire to stiffen the main gladiator spine

HOW TO

1. Start by deciding how many strips you want to go around your legs. I went with three to keep it simple and almost geometric looking. Then measure your calf in the places you want to put the strips. 2. Cut the leather into pieces. I did three pairs matching the different widths of my leg and one pair of long strips to go vertically down the front of my leg and connect to the flat. 3. The top long piece is for the front of the leg while the other pieces are for around the leg. 4. I then glued the long strip onto the front of the flat. I took it all the way down to the edge so the materials matched up.

5. This is how it will look.

6. Glue on the horizontal straps.

7. Let them dry overnight.

8. Measuring around your leg to work out where the stud button should go at the back, make a hole with the hole punch.

9. Insert the screw on the underside and attach the stud top on the right side.

10. Finally, make a hole in the other side so you can attach the strap by pushing it on and off the stud button.

Voila! All done!

Michelle Lacey discovers why Australian 20 cent coins and Winnie the Pooh both have the lovely Canadian city of Winnipeg in common ... and shares a few reasons why you should visit

innipeg isn’t your typical Canadian city. It doesn’t have the glorious snow-capped mountains like Vancouver, no world-renowned stampede like Calgary and forget the fast-flowing rivers and waterfalls like Niagara Falls. But what I did manage to discover during my three-week stay was the city’s Royal Canadian Mint. This is where Winnipeg produces coins for more than 75 countries around the world. Who would have thought? Since 2006, ‘The Mint’ has produced New Zealand’s coins. Back in 1981, the Mint also did a small stint producing Australia’s 5 cent and 20 cent coins. During a tour of the coin factory, it was clear Winnipeg was home to the Mint due to its convenient centralised location in the middle of Canada (Manitoba) and because it was only a few hours north of the American border. Every day the factory’s high-speed circulation presses produced 20 million coins, which was 750 coins per second. It was incredible to see tonnes and tonnes of glimmering silver and gold coins being cooled, melted, stamped and polished before being transported by either trucks, trains, planes or ships. The Mint produces all of Canada’s coins and has grown dramatically since it was first established in 1976. Now the plant produces coins for almost half of the world’s

It was interesting to note that many coins were sent to their selected countries as ‘blanks’, meaning the country would have their own specialised ‘coin presses’ to stamp each coin before it was distributed to the banks. We were told this helped reduce any October 2013

security risks or theft during transportation. This also gave the country more control over their money, as they could decide how much to inject into their economy. However Winnipeg isn’t the only Canadian city to produce coins. There’s also a Royal Canadian Mint in Ottawa, Canada’s capital city. This was where the country’s first silver 50 cent piece was struck in 1908, 32

marking a mile stone for the young nation of Canada. Winnipeg is a growing city, with a population of more than 760,000 people. It has many highlights like the iconic Assiniboine and Red rivers. Near the heart of the city you can see where the two rivers meet. This is known as ‘The Forks’ and is a popular tourist area with hundreds of market and food stalls, restaurants and

live entertainment. It the perfect place to find tradition Canadian Indian artworks and souvenirs. Back in the late 1800’s early 1900’s the rivers were the area’s main route of transport, with dozens of canoes carrying all sorts of products and produce through the city. Winnipeg was and still is considered to be one of the Manitoba’s busiest hubs. During the spring months in April and May the city experiences major flooding from the rivers’ melting ice. It’s a familiar sight to see hundreds of homeowners sandbagging the front of their riverfront properties. There is a lot of snow and ice to melt, considering winters can get as cold as minus 40 degrees celsius. Another ‘must see’ is watching the city’s ice hockey team, the ‘Winnipeg Jets’, play at the downtown MTS Centre. This impressive $133 million arena opened in 2004 and can seat more than 15,000 ice hockey fanatics. Good luck trying to watch a game though, as the city’s die-hard fans have booked out seats, with a five year waiting list. But you never know a few spare tickets are often available. I also recommend visiting the city’s oldest and most loved parks, Assiniboine Park. Here you’ll find the Winnipeg Zoo, English gardens, conservatory, nice restaurants and also the famous Pavilion Gallery Museum. Be sure to go inside, as the gallery holds one of the world’s most-love characters – Winnie the Pooh. The permanent exhibit houses a signed original copy of the book and the only known painting of Winnie the Pooh by illustrator Ernest H. Shepard. It’s a delightful exhibit and will bring back many childhood memories of the loved story book character. After all Winnipeg was full of its own unique surprises. It may not be on the top of everyone’s list when they travel to Canada. However, I’m sure many people will be pleasantly surprised as it has everything a big city could ask for, great shopping, nice restaurants, museums, art galleries, serene rivers, a zoo and also one of Canada’s largest coin production plants − and that’s what all the other cities don’t have. 33

1 Work out your natural rhythm and manage time around it. Are you a ‘morning person’, or is before bed the ideal time to ponder content and write? 2 Eliminate distractions. That is, get offline to write. If the Internet is on, it’s too easy to get distracted by web surfing, Facebook and emails. 3 The challenge of time. No-one ever has enough time and the Internet certainly never sleeps. Quit worrying that maybe ‘now’ isn’t the right time or that you’ll never be able to get it all done. Just do it! Invest 15-minutes a day on blog-related tasks and you’ll make progress slowly but surely. 4 Not an expert? Don’t sweat it. As branding expert and author, Bernadette Jiwa, said to us at the conference, “People don’t buy what you do, they buy how it makes them feel”. 7 Don’t imitate how others write; write like you speak − it’s ok to develop your own voice. You want to attract people who ‘get’ you, right? 8 Buy a domain straight up if you are intent on giving blogging a real go. A domain name might be yourname.com or a key-word rich URL that relates to your content, such as iloveshoes.com or streetfashionlove.com. While you can set up a free blog account with a service provider like Blogger.com, if you want to be (semi)professional, best to arrange your custom domain from the get-go. 9 Additionally, your space should be a professional reflection of you. There are various content management systems you may utilise for a website, including WordPress (most 34

popular) and Joomla. Through these you can choose to manipulate various ‘themes’ with your own content, or you might initially choose to hire a designer to add that extra touch of class. 10 Practice, practice, practice. Blog regularly (at least once a week) − it’s the best way to hone skills and engage an audience. And remember the rule of thumb regarding content creation is to develop material that inspires, instructs and/or entertains. Darren Rowse, entrepreneur and passionate blogger behind ProBlogger.net, addressed the 450-strong group during this, the fourth and largest Australasian ProBlogger gathering. He urged aspiring pro-bloggers to consider three questions: 1. What is the worst that can happen [if you put yourself out there as a blogger]? 2. What would you do if that happened? 3. Professional photographer and Nikon School trainer, Richard Bulley, shares eight top tips for helping anyone achieve truly memorable shots when travelling locally or abroad 1 Re-charge: Don’t forget to charge your camera every night after use. It sounds basic but it’s often a mistake we all tend to make. It doesn’t hurt either to have a spare battery on hand, to avoid missing that spectacular moment! 2 Back up: There is nothing more disappointing than losing great images due to card or hard drive failure. Always transfer your images to a laptop or smart device. Alternatively, you could take advantage of an instant photo sharing function (like the one many of Nikon’s cameras offer) so you can wirelessly transfer images to an app on your smart device to back up and share with your network. 3 Protect: Weatherproof your camera with a purposebuilt cover or bag. Plastic shower caps from hotel rooms are great to get you out of a pinch. Alternatively, if you are to be travelling in drizzly terrain, opt for using an all-weather point-andshoot that is waterproof and/or shock-proof or freeze-proof. 4 It doesn’t have to be flash: If you’re a DSLR shooter, when taking a shot in low light, before opting for the flash

SNAPhappy try increasing the ISO. Or, for point-and-shoot cameras, play with the scene modes so the camera selects the best settings for the type of photo you want to take. If it’s an overcast day, try to go without using your flash, and rather, just work with your settings and the natural light for a far better picture. 5 Picture perfect setting: When shooting landscapes try creating some depth to the image by including a foreground subject such as rocks on the shoreline or a cool sculpture. 6 Versatile lenses: Photography is all about capturing light, and it is the lens that is the gateway to achieving photographic perfection. If you prefer to only carry one lens, make sure it is versatile for wide or long shots. For beginner DSLR shooters the 18-200mm and the 18-300mm lenses are great. Alternatively, if you prefer a compact camera, seek one out like the Nikon Coolpix P520 that offers a large 42 x zoom. 7 Pack light: Pre-plan your trip. Forbes columnist, best-selling author and Sunrise regular, Margie Warwell, spares a few minutes to share her best tips for getting on productively with your day rocrastination is something that most of us can relate to − whether it’s a deadline, a New Year’s resolution or a to-do list. In fact, a recent study of over 24,000 globally, found 95 per cent of people occasionally procrastinated and 25 per cent are chronic procrastinators. This is five times the rate compared with a similar survey from the 1970s! The psychologist who lead the study attributes this to the changing nature of the workplace: the more flexible that jobs become, the more opportunities to avoid unpleasant tasks. Many workers now typically spend a quarter of the day procrastinating and students a third of the day! Apparently, men are more likely than women to be chronic procrastinators, particularly young men. Margie Warrell (margiewarrell.com) knows a thing or two about procrastination, having stepped out of her comfort zone many times since her childhood growing up one of seven children on a farm in rural Australia. Her latest book Stop Playing Safe aims to help others be more courageous in their work and career and has become a best-selling business book in both the USA and Australia. On procrastination she says, “I think it’s something everyone does from time to time. Sometimes it’s mundane stuff like filing taxes. But more often it’s the bigger stuff. Like ending a relationship that’s dragging us down, beginning the process

of pursuing a more rewarding career path, getting back into shape, or to pursuing a long held dream.” MARGIE’S 7 WAYS YOU CAN STOP PROCRASTINATING NOW 1 Write down your goal and how you will feel when you achieve it: Try to imagine the emotions you will feel once you have achieved it. 2 Set a deadline: A goal without a deadline can be put off indefinitely. ‘Someday’ is not a day of the week. 3 Write down how you will feel a year from now if you continue to procrastinate. Get really present to the cost of continued inaction. Remember, if nothing changes, nothing changes! 4 Break the goal into small pieces: If the whole seems too big to tackle, break it into manageable bite-size pieces. 5 Set up a reward system: An afternoon cleaning out your office or signing up to a fitness program maybe worth dinner out. 6 Create accountability: Enlist a support team, an accountability partner or just a plain old ‘nag-buddy’. 7 Take the first step forward today: Yes, do something as soon as you can (before you come up with another excuse). She lists Ian and Dave among her favourite long-termers. “Both those guys are absolute devotees of Pilates, and both are fabulous to teach.” While she trains the glitterati, she also helps ‘ordinary’ people do extraordinary things. Case in point: her 77-year old client who just trekked Nepal, and said she owes it all to Pilates! Her foray into Pilates wasn’t a typical one. After touring with a show in the 80s, she injured her ankle and started Pilates to rehabilitate it. Fast forward a few decades, and she credits the practice with changing her body and mind. And she looks the part – she’s one of those women that glows from the inside out. “I really appreciate how much Pilates helps me work on better posture and ways to defy the pull of gravity.” She says Pilates is the perfect way to counteract the Western lifestyle. “Keeping upright is a battle for everyone these days. As a society, we are engaged in a lot of sedentary activities – sitting in front of computers, TVs and in cars – so we need to put effort into addressing the negative effects.” She has a point. Most of us sit down far too much. But what are we supposed to do, quit our jobs so we can exercise more? Of course not – it’s all about moving your body and making healthier choices. No points for guessing what can help you do both. While most people turn to Pilates to tighten their body and tone up, Sally says there are benefits people may be surprised to hear about. “Pilates is ideal for a range of issues like joint care and stability, muscular strengthening, bone density, good posture, mental clarity, digestion and energy.” Every great teacher has a signature style, and Sally is no exception. She subscribes to the idea that you’re nothing without your staff, and that a little motivation goes a long way. “Surround yourself with good people and encourage them to be their best.” She also says it’s important to focus on your strengths, and delegate your weaknesses.“Don’t try to be all things to everyone. Do what you do well, and 38

A mentor is a trusted teacher and advisor, who supports and encourages you on a learning journey. A mentor gives you a sounding board and an example to follow.” Now, Sally has come full circle, and mentors a special bunch of people herself. Devilishlygood Chris Mcleay revisits an old favourite on the Gold Coast, but discovers the Draculas team certainly has a few fabulous new tricks up their sleeves...

rom the moment I entered the unhallowed grounds of Draculas, I knew I was in for one hell of a night. As the undead wandered the line torturing the eager patrons waiting to enter the haunted house, anticipation began to build as the line crept forward. Following the brief description of the night’s ghoulish antics in the Coffin Kart, we were ushered into the reception area and greeted with a frosty glass of champagne and fresh severed finger canapés (not real fingers!). Crisp spring rolls, brie and strawberry, seafood torpedoes and avocado crisps were all on offer. The nibbles helped settle my nerves as we board the ghost train on our way to the Cabaret Theatre. As we took our seats on the front row of the balcony, centre stage, our very own vampire nurse administered our first course. The entrée was a buttery tart filled with spicy chorizo, leeks, chickpeas and ricotta, finished with vine tomatoes and wild rocket. The combination of sautéed leeks and chorizo mixed with chickpeas were a delightful mix of well-balanced flavours. As the vampires surrounded us our orders were October 2013

taken, with one of the biggest decisions being what to drink. The cocktail menu was extensive and looked tempting, but I decided on a few Heinekens. I would have loved to have my beer in a Draculas Yard Glass, but my partner insisted my souvenir bag was full enough! The main meal was a pleasant choice of five options. I chose the Moroccan style slow braised lamb shank accompanied with saffron-infused rice pilaf, and was presented with an oversized shank with the meat falling off the bone and the subtle flavours of the Moroccan seasoning shining through. My partner went for the Pork Belly coated lightly with an Asian inspired sauce and served with creamed potato gratin. I’m glad she isn’t a big eater as she offered to share her meal with me. The pork was succulent, juicy and had the crisp crackle that makes the crunch sound as you bite into it. The other main course options were the Moist Chicken Breast roasted to perfection with preserved lemon and fresh thyme, fused with a streaky bacon and finished with a warm marsala jus or the delicate Coriander and Coconut Crusted Snapper Fillet, baked with fennel and a kiss of kaffir lime beurre blanc foam. The vegetarian option was the alluring Vegetarian Koftas, draped in authentic korma sauce, set on a soft pillow of saffron infused rice pilaf, caressed by soft-minted yoghurt. As the food was being enjoyed by the 40

almost 500 strong crowd, the undead band began to play. Miss Creant, Tex Claghorn and Spine Deadrock offered an interesting take on the latest music and had the crowd singing along. As the remainder of the plates were smoothly removed by the undead wait staff, dessert was on its way. The seductively creamy Bacio was served with a sensual combination of roasted hazelnuts and Frangelico liqueur, all sinfully layered in a heavenly chocolate coffin. The coffin didn’t last long after I opened the lid with my spoon and consumed the contents. Once again I ushered my way onto my partner’s plate, I was getting full; but there is always room for chocolate. The main event ‘Sin and Tonic’ started with a bang. It was a mix of aerial acrobats and mindblowing tricks, clever anecdotal acting and was just a pleasure to watch. The Berlin-inspired burlesque show was sensual, funny and always had the audience guessing. ‘Sin & Tonic’ is decidedly humorous and dark at the same time. A delicate balance of costuming and talented performers made the show as enjoyable as the food. A trip to Draculas is a guarantee of a fantastic night. I won’t give too much more away about the show; it must be seen to be truly appreciated!

SPICED LAMB LOIN CHOPS

With Pear & Walnut Salad (SERVES 4)

INGREDIENTS • • • • • •

8 x 100g lamb loin chops 60ml (¼ cup) of olive oil 1 tablespoon of sumac 1 teaspoon of ground cardamom 2 cloves of garlic, crushed Natural yoghurt, to serve

Ingredients - Pear & Walnut Salad • • • • • •

1 lemon, zested and juiced 1 tablespoon of honey 60ml (1/4 cup) of extra virgin olive oil 2 small green pears, halved, cored and thinly sliced 1 bunch of watercress 70g (2/3 cup) of roasted walnuts

METHOD To marinate the lamb, place the oil, spices and garlic in a large bowl and whisk to combine. Add the lamb, season to taste and toss well to coat. Marinate for 15 minutes. To make the pear and walnut salad, whisk the lemon zest and juice with honey and oil in a large bowl. Add the remaining ingredients, season to taste and toss well to combine. Preheat a lightly greased barbecue or grill pan to high. Cook the lamb loin chops on each side for one and a half minutes or until cooked to your liking. Rest, covered loosely with foil, for five minutes before serving. To serve, divide the lamb with pear and walnut salad among four plates. Serve with natural yoghurt on the side.

MIDDLE EASTERN LAMB MEATBALLS ServeS 6-8

INGREDIENTS • 500g of lamb mince • 2 tablespoons of Middle Eastern spice mix • 1 small red onion, finely chopped • 2 tablespoons of tomato paste • 2 cloves of garlic • 1 egg • 35g (1/3 cup) of packaged breadcrumbs • 80ml (1/3 cup) of olive oil • Hummus and toothpicks, to serve METHOD Place all the ingredients, except the oil, in a large bowl and season to taste. Using your hands mix to combine and roll heaped tablespoons of lamb mixture into balls. Heat half of the oil in a large frying pan over medium-high heat. Cook half of the balls, turning frequently, for six and a half minutes or until browned and cooked through. Drain on paper towel.

MARINATED BUTTERFLIED BONELESS LAMB SHOULDER

in Lemon and Parsley

Wipe out the pan with kitchen paper and repeat with remaining oil and meatballs. Serve with hummus and toothpicks.

Ingredients • 1.5kg of boneless butterflied lamb shoulder, fat trimmed, skin on, scored • 125ml extra virgin olive oil • 3 cloves garlic, crushed • 1 preserved lemon, finely chopped • 1 cup loosely packed flat-leaf parsley, roughly chopped • Lemon wedges, sour cream and flat bread, to serve Ingredients – Tomato and Cucumber salad • 60ml (1/4 cup) of olive oil • 2 tablespoons of balsamic vinegar • 1 teaspoons of ground cumin • 1 x 400g punnet of baby heirloom tomatoes, halved • 2 large Lebanese cucumbers, cut into 1cm pieces • 1 small red onion, thinly sliced • 2 tablespoons finely chopped oregano Method To marinate the lamb, place the oil, garlic, lemon and parsley in a large bowl. Add the lamb and toss to coat. Season to taste. Marinate for 15 minutes. Preheat a lightly greased barbecue to high heat. Cook the lamb, skin side down, for 10 minutes. Turn and cook for a further 5 minutes. Reduce the heat to medium-low, cover with the barbecue hood and cook for a further 12 minutes or until cooked to your liking. Transfer to a large platter and rest, covered loosely with foil, for 10 minutes before carving, to serve. Meanwhile, to make the tomato and cucumber salad, place the oil, vinegar and cumin in a large bowl and whisk to combine. Add the remaining ingredients and toss to combine then season to taste. To serve, place the salad in a large bowl. Carve the lamb and place on a large flat platter in the centre of the table. Serve with lemon wedges, sour cream and flat bread, on the side. 43

IN THE THICK OF THE Sarah Blinco meets Sarah Schofield, a woman in a surprising position at the forefront of the GC600 action What does your role in the race involve? My role for the V8 Supercars races is to sit in the passenger seat of the Pedders STP Safety Car as the communicator/observer. I speak to the Race Director, Tim Schenken, when the Safety Car is deployed during a race and help the Safety Car driver, Jason Routley, identify cars and debris on the circuit. I also operate the amber and green lights in the car. How did you get into this job? I was initially employed at V8 Supercars through contacts I made while completing work experience. I started in the events department of the company and after two and a half years, moved into the motorsport department, where I currently work. I have been working for V8 Supercars for over five and a half years. What’s the craziest moment you’ve experienced as part of this gig so far? The first time I was in the role of communicator/observer in the Safety Car was in Abu Dhabi in 2011. At the event, we didn’t use our regular safety car driver, instead, a local driver from Bahrain and we encountered an odd incident where cars pitting during the safety car period actually came out of the pits ahead of the safety car itself. When I saw that happening in front of me, I wasn’t quite sure what to do and what needed to happen, but we got ahead of the cars and they sorted themselves out. There was also an incident in Adelaide when we lost radio communication with the Race Director while we were out on the circuit, and didn’t know when to come back into the pits so the race could restart. Luckily we have backup plans in place and we received communication to come back in. What’s the coolest part about your job? I am lucky enough to travel to all of the V8 Supercars events on the calendar and enjoy being in the safety car when it’s out on the circuit during a race. This year we have introduced double-file restarts for the start of the second half of a 60/60 race, so it’s cool to be able to set the field before they take off and restart the race. What’s the biggest responsibility you have riding on your shoulders? Apart from the pressures of the safety car communicator/observer role, I am also the category manager for the Dunlop Series. This year with the introduction of COTF, there has been increased numbers in the Dunlop Series and it’s my job to oversee their activity at a race meeting and keep them as happy as I can. What about being a woman do you think makes you great at your job? Traits such as being organised and having 50

attention to detail help me perform well in my role, but those traits are not necessarily solely found in women. I’d like to think that I am fair, approachable and reasonable and those qualities enable me to be good at my job. Having a sense of humour is also a must. What’s something interesting you’ve learned about the industry through your job that might surprise others? There’s more than meets the eye. Our events that take place over three days take many months to plan. There is significant freight movements involvement for an event such as the Armor All Gold Coast 600. And our rules and penalties that may sometimes appear confusing are all set for reasons and after much debate. Also, I was interested to learn that if the start lights for a race don’t work or fail, they are replaced by the national flag! What other GC600 events are you most looking forward to? I’m looking forward to the Race of the Stars at Pimpama’s Xtreme Karting Facility on Saturday 19 October and the V8 Superfest Parade on Sunday 20 October. Thousands of people are expected to line the streets of Surfers Paradise for the major street parade. It’s a free community event, so it should be a fantastic spectacle and atmosphere.

Brad Carr is somewhat of a quiet achiever around the Coast, but employees dobbed him in to appear in this month’s column because he’s not only an inspiring young entrepreneur, but a great boss too Give us a quick rundown on your three businesses, Ry.com. au, Kitchenware Superstore and Recreate Yourself Salon? After leaving school I started a web development agency which specialised in building sites for SMEs. During that time I personally became very interested in the emerging e-commerce space. An opportunity came along in 2005 and I teamed up with my business partner to open an online haircare and beauty store. My focus then shifted from building sites for other companies to focusing on developing and building my own businesses. The salon gives us insider knowledge on consumer trends, a great little retail space as well as professional advice which we then pass on to our Ry.com. au customers. Several years later I launched the Kitchenware shop and e-commerce store; not only due to a slight gap in the market but also to see if we actually knew what we were doing or if we had just previously been lucky with the launch of Ry. Would you call yourself an entrepreneur? I don’t go around calling myself one, but I guess it is the best way to describe what I do. I get satisfaction when I see an idea come to fruition. The most rewarding highlight in my career so far is proving wrong all the people that said, “No one will buy shampoo online”. In the early days I came up against a lot of hurdles and people telling me it wasn’t possible. I now know when everyone tells you you’re crazy then you are probably onto a good thing and should go even harder on it. What does it take to get a business moving forward from ‘concept’ to ‘profit’? I think a lot of people have ideas, to be honest that’s the easy part, taking it from an idea into a profitable company is the tough bit. One piece of advice I would give is don’t ever look for that one single game-changing idea or break, instead understand that success is made up of doing 100 small things all at once and doing them well. Too many people forget that or get distracted from it − stay focused, keep your idea simple and never forget the ‘why’ behind what you are doing. You manage and have created both an online business and physical business with a store-front – what are the attributes and downfalls of each? Multi-channel retail is a model I have taken on for both Ry and Kitchenware Superstore, there are pros and cons of online and instore but in the end it’s all retail. Times have changed from a push to a pull model in retail. Customers know what they want, they know how much they want to pay and they want to choose how they would like to buy it (online, mobile, in store). If you want to succeed today you need to give customers flexibility and appeal to everyone’s needs. Your staff have dobbed you in for this piece so they obviously like you – what traits do you possess that make you a good manager, do you think?

Leading MAN When I started the company we had only one staff member so my focus was on building the company, hands-on, every day. With over 20 staff now, my time is mostly spent on strategy and leadership, this however is much more exciting as I have 20 people around me all coming up with innovative ideas that inspire growth. The backbone behind that is our company culture, one of our core values is to ‘dream like children’. I want all my staff to have the mindset that nothing is impossible and their ideas and input are heard every day. As a medium sized business, this is the biggest asset we have against other larger companies who tend to move a lot slower. When you’re not working, where might we find you on the GC? 20 kilometres off-shore or up at the race track. Fishing and motorsport are my passions. In three words, what does the Gold Coast mean to you? Lifestyle, relaxation, home This year you’re most looking forward to.... ? The launch of my next venture, a new company which is still under wraps so it’s all hush hush.
