With Valentine’s Day just around the corner, and February being the month dedicated to the emotion, it’s pretty much mandatory to reflect on what it means to me. I know this girl and for the first time in 15 years, she finds herself single – and ready to mingle. When Gold Coaster Kathie McGow found herself sitting on the bathroom floor crying because of her weight, she knew she had to do something about it and, ultimately, change her life. She talks to Get it magazine’s Elizabeth Campbell Tell me about your life before you made the changes - (that is, lost weight and decided to run a marathon and conquer the world)! I pretty much didn’t have a life that was exciting; my kids and family had been my life. I had a great social life on the weekends and I was happy, although in the back of my mind I always had regrets that I let my weight and fitness go. I had talked myself into believing it was OK I was getting bigger as I was in my mid40s. But to be truly honest I was not happy. What was the straw that broke the camel’s back? One morning I hopped on the scales and they had almost reached the 80kg mark. I remember sitting on the floor in the bathroom and just crying. Why did you feel you needed to make changes? I was in my mid-40s and I knew the health risks of being overweight. I was secretly so jealous of all the fit, healthy-looking people getting out there and doing exciting things. I just wanted to be one of them. So what did you do first? I took the big step of walking into a gym and signing up for their 12-week challenge and made sure everyone in my universe new I was doing it to make me accountable. I went through my kitchen cupboard and fridge, and threw everything out that contained the word sugar, and replaced it with quinoa, broccoli,
What was your goal? I chose a marathon, as it was the one goal I had written on my bucket list that I thought would be the hardest to achieve. I booked and paid for it months in advance and at that stage I had not even run 5km. But this made me set a goal and commit. How do you feel now? I feel fit, fantastic, confident and so happy. I’ve conquered Tough Mudders, Pan Pacific Masters Games, Strongman events, Crossfit masters competitions and many running events. What support did you receive from your kids and husband? A m a z i n g support from them all. When you have your teenage and adult boys sharing your photos on

I had also found a new passion for running (at the beginning I was excited when I had run 1km on the treadmill) and Crossfit, and met a wonderful group of women in their mid-40s. How long did it take to get in shape? It took me five months to get down to my ideal weight of 60kg. February 2015

My hubby jumped on board too and lost 20kg, and has taken up running. He is 51 and is also going to be running his first half marathon this year. Why is life better now? I used to think I was too old, or had missed the mark to do all the great things I am doing 14
now. I love being an inspiration to the younger ones and enjoy getting in the pool with my grandkids instead of sitting on the edge. I like feeling comfy in nice clothes and I am proud of how I look instead of covering up in embarrassment. I feel alive and free. What’s your next challenge or goal? But simple up-dos are welcome. Although the general consensus is hair down, guys do want you to look like you care about yourself. So if our wonderful February, Valentine’s Day, not-such-great-hair weather is going to leave your locks a little too wild, a soft and simple up-do is definitely date worthy. MAKEUP Kissable lips - no red! The thought of kissing lips that they could end up wearing is something guys all want to stay well away from. Opt for a light stain and the trusty paw paw ointment or Chapstick on top it.
Guys do not want to see an overdone face, so don’t leave him wondering what you would look like without it. One of the guys I talked to, simply said:“That’s false advertising” The boys seem to like eyelashes - not the overthe-top sort, but an extra coat of mascara is a must and the natural-looking individual lashes are great. Most men couldn’t really pick if they are real or not. Smokey eyes are eye-catching but don’t overdo it. What is it about the paleo way that inspires and motivates you? What inspires and motivates me about living the paleo way is there is a huge amount of personal empowerment that comes from understanding that the food we eat can be our medicine. By thinking about what we put in our bodies with every forkful of food, we can ensure we function at peak capacity, giving ourselves the best possible chance of living long, healthy, disease-free lives. Why to do you endorse it? Living this way has helped me find my life’s purpose. As a chef with a 25-year career, I used to choose my ingredients based on how tasty it would make my dishes. Having always been very interested in health and wellness, I was still driven to find the very best quality ingredients, but now I am much more selective about the ingredients that I choose to cook with. When did you start living your life this way? As a kid growing up on the Gold Coast and as a surfer, I’ve always been connected with the ocean and had a deep respect for Mother Nature. As a chef who has personally cooked over a million dishes in my career, I’ve also developed a deep affinity and passion for delicious healthy food. But it was just over four years ago, when I met my amazing fiancee Nic that she re-awakened by passion for nutrition and I started walking a truly conscious path towards optimal health and wellness. Why? Did something happen? I went grain-free, wheat-free, dairy-free and sugar-free for three months and immediately noticed a huge increase in my energy levels and stamina. My digestion improved and I was able to focus better for longer periods. Over time, I became more confident and today I have boundless energy to focus on the goals I really want to achieve. nutrition backs up the potency adopting a paleo diet can have on your overall health and wellness. What is paleo exactly? The paleo way is about applying principles from the palaeolithic period, coupled with modern-day nutritional research, to seek out nutrient-dense foods that drive optimal physical and emotional health. Basically, we enjoy a delicious diet of 100 per cent grass-fed and finished meat and organ meats, pasture-raised poultry and game, free-range pork, wild-caught smaller species seafood with an emphasis on molluscs and bivalves, nuts, seeds, some seasonal fruits and lots of organic leafy greens, and brightly coloured vegetables with fermented vegetables included at each and every meal. We avoid grains, legumes, dairy products, non-organic produce and genetically modified and processed foods. Why does it work? It’s a way of returning to a far more natural way of eating and a way of using the foods you eat to drive optimal health and balance in your body. And by ditching refined carbohydrates and sugars and replacing them with moderate amounts of protein, good-quality fats (the kind that come from coconut oil, olive oil, avocados, nuts and seeds, and quality animal sources from land and sea) and lots of nutrient-dense vegetables, you’ll have energy to burn and can concentrate for long periods without experiencing the brain fogginess and blood sugar roller-coaster ride that comes with eating a diet full of refined carbs and sugars. Why is it so hotly debated? Because there are a lot of things about this way of life that challenge the status quo and to advocate for change and to get that change 18
we seek, there will always be a few ruffled feathers in the process. Some experts say that in avoiding dairy, grains and other mainstays of the modern diet, paleo followers may miss out on key nutrients…how can they get these otherwise? It is important to understand first and foremost that you are NOT missing out on key nutrients by ditching dairy and grains because you are replacing these processed foods with a much more natural diet that’s designed to balance both the body and mind. Instead by focusing on making sure the foods you eat drive optimal health and are as nutrient-dense as possible, you’ll instead consume lots of naturally raised highvalue proteins, such as grass-fed beef, organic eggs and fish, lots of organic vegetables and a small amount of fruit, such as avocados, and eggs and nuts and seeds – all of which help to drive the health of your body and mind. How can people integrate this type of lifestyle diet/choice into their live with ease? Putting your health first and walking the path towards achieving optimal wellness shouldn’t be viewed as a diet. It’s not a diet – it’s a choice you make every day and these consistent adjustments will lead to achieving that lifelong consistency. I encourage people not to think about what they eat as a “diet” or to believe they are following some strict regime.

Life can be a juggling act. Some do it better than others, but Alison Vidotto is a woman who makes it look easy
s the CEO of Vidotto Group and Push Leadership, and mother of six, Alison found time to pen a book on leadership and create an international charity. All in a day’s work? Alison says the key to her success is organisation and she’s an organised person. “I know how to prioritise and delegate. I am surrounded by a great team who I can delegate to when my plate is too full,” she says. An integral part of her team is her family. Close knit and focused on the same goal, the Vidotto family all work together. “We have always been a very close family. It was at my family’s request that I agreed to run Vidotto Group, they were all involved in the decision-making process. As the company grew, they were supportive but we needed more people,” she says. “It soon became apparent we needed more staff and they were perfect for the job. One by one they each left their own careers and joined the company.” Purpose is the linchpin in the workplace harmony that reverberates through their office. Alison says they all understand the “why”. “Together we have built a company that is based on a shared vision and purpose,” she says.“We respect each other and our strengths and weaknesses. We’re family but we all bring different strengths to the table. We value that.” Alison is also passionate about leadership and devotes a lot of her time teaching others how to self-lead. Her book 22 Leadership Fundamentals: The Door to Success says Push! is a memoir chronicling the leadership skills she found necessary to raise a close family, be a strong member of the community, build a successful business and run an international charity. “Leadership is all about empowering February 2015
others, not only in the workplace but in the wider community,” says Alison. “I believe to make a difference we have to look beyond our own vision and goals. To really make a difference and bring about change what you are doing has to be sustainable beyond what we do. That only becomes possible when

I want to help people untap their potential you empower others less fortunate so that they can take their place at the table.” Alison’s work with Australian Charity for the Children of Vietnam (ACCV) personifies all she teaches about leadership. “Our‘why’for ACCV is to reduce the number of young blind people living a life of oppression and isolation,” she says. “We want to inspire them to become empowered, educated, employed and independent; to take their rightful place as valued members of the community. “My work with ACCV has given me the privilege to work with some amazing young people who have lived in extreme poverty, isolation and oppression. When provided with opportunity and training they have stepped up not only taken control of their own lives 30
but empowered others coming behind them. They are fine examples of leadership.” Despite all the balls Alison has in the air, she powers on focused on her big goals. “I believe we are all capable of taking control of our lives and our businesses, we all have leadership potential sometimes it is just untapped. I want to help people untap their potential,” she said. “For ACCV, I have a short-term goal of establishing a program for young blind children. Currently we work with teens and young adults but there are so many young blind children who are not enjoying their young lives. “They are not learning, they are not being educated and they are not playing with other children. We want to change that.”
3 reasons not to enter a weight loss challenge Around this time of year lots of gyms and personal training centres start advertising their annual weight loss challenge. So many people committed to having a healthier year and have found themselves in February not much better off than December and still trying to work off the damage they did in the holiday season, not to mention the Australia Day drinking ntering a weight loss challenge can really mess you up! So many people enter these competitions and three months after it has finished, are in a worse position than when they started. At Vision we have been running two challenges a year for over 10 years, so we have seen plenty of people be successful and use a challenge as a launching pad to a healthier and fitter lifestyle… but we have also seen too many people do them for the wrong reasons and find themselves mentally, emotionally and physically messed up by winter. So here are the reasons to enter that have danger written all over them. If you are thinking of doing a challenge and these reasons have crossed your mind, it’s time to re-think the whole process. REASON # 1 - “I really want to win the prize”: Let’s face it, if you are just in it for the
prize, you aren’t really there for the right reasons at all. With so many people entering, you really have to do amazingly well to win the grand prize that attracted you in the first place. So far we have given away trips to New York to watch the tennis, Hawaii, Las Vegas and cash prizes. This year we are giving away $20,000 as well as local prizes. So the incentives are huge. What you must do while you have your eye on the money, is remember that the real prize is the person you become and the habits you develop along the way. And remember, when you rebound you don’t just go back to your start weight, you put on a little extra. I see so many people who try to starve themselves, train like crazy and drop 3kg a week only to put it all back on before July. I also see people
who invest time and effort in learning what foods help their metabolism, eat more of these good foods, develop good habits, maintain a sustainable exercise program and lose 3kg a week. The latter are always are more successful over the long term. a routine bomb check. I’ve never been to Bali before so it was confronting. But as we came to realise, it’s done in most places, and I must admit I felt safe everywhere we went. Our villa – it’s amazing We are staying in the Presidential Villa at Villa Seminyak Estate and Spa - and it is stunning. It’s like stepping into the pages of a travel magazine. It’s perfectly manicured and so tranquil. Our three-bedroom villa is spectacular. We each have our own rooms and bathrooms. Apart from the bedrooms, every other common area is open plan; with no walls. Even our bathrooms. The walls are high so no one can see in but you are still exposed to the elements. There’s something very liberating about that. We have our own pool and spa in our private villa and spent a lot of time lounging. Honestly,

we didn’t even have to leave and for the first 48 hours, we don’t. Breakfast is included and there’s also a day spa on site. A day in Ubud In true Eat Pray Love style we head up to Ubud for the day. The rice terraces are stunning. It’s raining, which makes it even more beautiful. Ubud is huge. I thought it would be a street like Hastings in Noosa, but it’s a big town. We stop at the Monkey Forest. There are monkeys everywhere; in the trees, on the statues and in the street. Then it is off to a coffee plantation to taste test some kobi luwak coffee – it’s the most expensive in the world. Essentially, it’s because civet cats forage around to find only the best beans, eat them, process them and then they are collected and ground into coffee. It’s delicious. hard-earned cash.We spend a couple of full days shopping in Seminyak – and I mean until 10pm at night stopping only for a quick food refuel and a sneaky cocktail. My highlight is getting a pair of leather boots and a leather jacket custom made. Eating out While we ate at local jaunts, we also splurged on some really momentous dining experiences; namely W Hotel and Potato Head. A main meal at a café is about $6 (chicken, veggies and rice), while at Potato Head, a higher-end establishment, we had a selection of entrées, a main and dessert, plus a few cocktails and it was about $70 each. Both Potato Head and W are right on the beach so it’s blissful watching the sun set over the ocean while we enjoyed a mojito. The highlight though was Starfish Bloo at W Hotel. We sampled duck, prawn laksa and pork belly in traditional herbs and spices and it was divine. Seminyak has many gorgeous places to eat – just head to Oberoi Street, it’s full of them.

Get a running kit: Make sure you have comfortable clothes and shoes that you like. When you look good, you feel good too.

Set a realistic training program: Make sure this is suitable for you, your fitness level and age. It’s not a one-sizefits-all approach. Run somewhere enjoyable: Train in an area you like, even if it means jumping in the car and driving for 20 minutes to get there. Run in the morning: Get it out of the way so you can get on with the rest of your day. Afternoon or evening training tends not to happen after a long and busy day. Lock in the same day for training: Have set days that you train; three to four times a week at the same time. Be prepared for wet or cold weather: Have a plan so you stick to your training. f Valentine and cupid wrote a book on love, I wonder how they would describe love. Love is the generally considered as the most experienced of all the emotions. It is the most written about, the most sung about and versed, the most speculated and can be the most exploited. For all the things that love may be, it is scarcely taught. But at large we are uneducated in love. We are in the most part conditioned to the experience of the perception of love within our families and social groups in our formative years. We do not formally learn about love in our general education curriculums. In practice, love issues often present as a factor in health problems, as do relationships that may be breaking down or relationships that are going through change. In practice, I use some simple tools to assist in what I describe as “conscious love”. To clarify; intent for love is a greatly varied thing. Conscious love has some structure. It has some rules. It has some idea of the outcome.
Stepping stones: These are the experiences of previous relationships with your parents and extended family, friends, teachers, employers and lovers. The wish list: If you could have the perfect picture, what would you wish for to be in it? How might your partner look, feel, taste or smell. Include anything. Gut feeling: That inner voice. Perception. That “sense” or “feeling”. Health: Good nutrition, healthy weight and regular exercise contribute to good

Your relationship with food impacts your decision to make healthy choices when it comes to planning and preparing your meals, says Ronsley Vaz. Here the personal chef and host of Australia’s number one food podcast Bond Appetit shares his top five tips for highly nutritious and nurturing meal planning and preparation
t isn’t a new concept that food fuels our lifestyle and our brains. In fact, on my show – Bond Appetit - every single successful person I have interviewed can trace back to the point when they first fixed their relationship with food. The food you eat is important to you functioning and performing at your absolute best. What you need to know about food first and foremost: The food you eat should be high in nutrients. Eating energy-dense and nutrientlow meals, like fast and processed foods, make you feel hungry quicker and do nothing to give you long-lasting energy. Your food should not make you feel uncomfortable or lethargic at any time of the day. If this happens, you need to re-evaluate what you ate. You should eat without distraction. Don’t eat in front of the television or computer. Pay attention to the food, think of it as daily meditation, three times a day. Make sure the food you eat is not beige in color. Beige food is processed and not natural. The more colourful your plate, the better it is going to be for you. Drink lots of water throughout the day. I believe a high-performing individual should consume at least 3-5 litres of water a day.

To achieve this, here are my top five tips: 1. Use the weekend: Plan your week ahead. Pick 3-4 main ingredients such as February 2015
You should eat without distraction. Don’t eat in front of the television or computer. Pay attention to the food, think of it as daily meditation, three times a day. chicken, mushrooms and salmon. Centre your week around these ingredients by looking up recipes that are quick and easy to prepare. Google is your friend. 2. Technology is also your friend: Yummly and Taste.com.au will provide you with enough resources to make your next meal an absolute treat. 3. Break your recipes down into preparation items: Do this ahead of time like the weekend or when you’re waiting for something to cook. These can be actions such as preparing a salad dressing, marinating some chicken or chopping up some veggies.
If you have leftover chicken, dressing and chopped veggies in the fridge, it will take you less than a minute to make a tasty salad. 4. Use a slow cooker: Make big batches of stews and soups. Switch it on in the morning and let it work for you throughout the day. Store the leftovers in takeaway containers in the freezer. Always have backups for those days when motivation is low. 5. Drink water: When you have missed meals and are really hungry, drink the largest glass of water you can find. Then decide on what you are going to eat. This is my ultimate top tip.

arine Parade in Southport, opposite the Broadwater Parklands, is home to the latest trend in Vietnamese eateries, the Pho Hung Vietnamese Restaurant. New owner/ manager Jenny Nguyen has transformed the former Saigon Palace into a modern and very successful venture judging by the crowded dining room. I called in to Pho Hung on a busy Friday night and when I say busy, I mean I was allocated one of the last unoccupied tables in the 120-plus-seat restaurant. The décor is Vietnamese themed with a mood-calming colour scheme and tasteful decorations. I was dining alone and after being ushered to a nice little table in the corner, I perused the menu. It was a large menu with a range of choices, comprising a mix of traditional rice paper rolls, Vietnamese coleslaws, noodle dishes and other delicacies. I have previously travelled throughout Vietnam and have a great respect for the traditional cookery methods. The menu had dishes from all over Vietnam, which was a real treat that I couldn’t wait to sample. Jenny suggested one of the entree specialties of beef wrapped in vine leaves ($10). She mentioned that this dish is hard to find in most restaurants due to the timeconsuming nature of the preparation.The four little parcels of minced beef come wrapped in vine leaf and are flash fried. Accompanied with a homemade mild chilli sauce, the dish is finished with crunchy onion and garlic. The second entrée I sampled was the

I have previously travelled throughout Vietnam and have a great respect for the traditional cookery methods. Two large skewers of premium chicken marinated in spices, oven roasted and drizzled with the house satay sauce. The sauce had toasted peanuts crushed through it, which provide a crunchy texture, and the slight hint of chilli provided a little kick, but by no means overpowered the dish. A trip to a Vietnamese eatery would not be complete without sampling some rice paper rolls. I was presented with two prawn rice paper rolls with sweet dipping sauce. The rolls were refreshing and serve as a palate cleanser between courses. The vermicelli noodle was mixed with Vietnamese mint, basil and layered with poached prawn. When I dine here again, I will be ordering the larger portion of four rolls ($12). I love food and I’m not shy in saying that. When I find a restaurant that I would happily suggest to friends and family, it has to have something special. Pho Hung ticks all the boxes. It’s not over the top, just good food and service in a restaurant that the whole family will enjoy - young or old. My last course was the Pho Nam, which
translates to beef brisket rice noodle soup, a staple in Vietnam. When I first tried Pho, it was from a stall in Hanoi prepared street side in an open-air market. It brought back some delicious memories. The waitperson dropped off the traditional condiments of lemon, chilli, bean shoots and Vietnamese basil to accompany it. The beef brisket is cooked in the broth and the flavour of the soup is slightly sweet. The rice noodles are entwined with the paperthin sliced beef, but are still able to be eaten with chopsticks. I added a dash of lemon and attempted to finish the whole bowl, but was defeated. The entrees had caught up with me, but fortunately there is always next time! Pho Hung is a BYO restaurant. Meals are available to dine in or take away. All menu items are clearly labelled with a chilli rating for the customer who searches for a spicy kick. Dietary needs are also well catered for. hen we are experiencing a particular country’s culture for the first time, our senses are being indulged to new sites, smells and acquaintances.The heightened awareness of eating and drinking different food and wine in the place of their origin makes the entire experience utterly memorable. To start we have to look at what we find on our tongue; the elements of salty, sweet, bitter and sour are all going to contribute to how we marry together food and wine. The weight of the food is the primary factor. Is the dish heavy or light? After this we can acknowledge and take into account the volume of the ingredients, cooking methods, accompaniments and sauces. Acidity is the biggest heavy hitter playing in the art of food and wine balance. The acidity in wine has the ability to highlight flavours and also to cut richness in dishes. Any dish that is oily, salty, fatty or rich will be refreshed by the accompaniment of acid in wine. Acidic dishes such as salads with low ph will also require an equally acidic wine to keep up with its dressing. Sweetness in wine is a great counterbalance to heat in food but can also highlight sweet aspects to a dish and can be a great contrast to salty foods. In Australia we have a heavy Asian influence in our “mod Oz” cuisine and this myriad flavours including sweet, sour, spicy and salty are more challenging to match wine with. When faced with this modern Australian dining dilemma, it seems that low-alcohol riesling or off-dry pinot gris with some residual sugar does the job very well. Juicy low-alcohol fruit-driven pinot and merlot, sweeter roses and fruity sparkling wines also fit the bill. Just remember,“sugar and spice makes everything nice”. Tannins react to proteins in a good way especially with red meat. Dishes that are high in proteins and fats will soften the harsh tannins in rich red wines such as shiraz, cabernet sauvignon, nebbiolo and sangiovese. Bitter foods that have harsh cookery methods, such as a barbecue, are going to be a great vehicle to drink your rich, high-alcohol, tannic Aussie red wine. Salt perception is exaggerated by
People who are passionate about food and wine often share experiences about their most memorable gastronomic moments. Regularly this involves a time when they were travelling and a classic marriage of food and wine tannin and alcohol is accentuated by salt so keep this in mind when delivering a higheralcohol tannic blockbuster red to your table, as this can end in disaster. Tannin reacts with the iodine in fish and makes everything taste metallic so be careful to choose lighter reds when matching red wine with seafood, but it definitely is not totally taboo to pair the two together. When looking to match red wine with fish and seafood look towards Iberian varietals that are lower in tannin and higher in refreshing acidity, pinot and red burgundy are great as to are lighter Italian reds and rose. Oaked wines are often harder to pair with food. Try to match the flavours of the wine’s characters, such as toast, caramel and smoke with similar cookery methods such as grilling, smoking and barbecue. If the wine is much more acidic than the dish you can add a little squeeze of lemon or vinegar to the food to balance it out. On the contrary, if your dish is more acidic than the wine you can then add some salt, soy or anchovies to the dish to balance the flavour of the food. When you are serving an aged cellared wine it is often helpful to add some extra acid to the food in order to compensate for the wine’s lack of acid due to its softening with its ageing in the bottle. When you dine out next ask your waiter or sommelier what they would recommend to drink with your food you have ordered as it takes dining out to a new dimension. You may be pleasantly surprised.

INGREDIENTS • 2 cups of mixed salad greens • 1/2 cup of rocket • 1/2 red pepper, chopped • 1/4 red onion, peeled and thinly sliced • 1/2 cup of soft goat’s fetta, crumbled • 1 avocado, skinned, deseeded and chopped • 1 mango, skinned, deseeded and chopped • 1/4 cup pine nuts, roasted • 2 tbsp coriander, chopped • Changing Habits Seaweed Salt to taste Optional add-ins: Shredded chicken or turkey, freshly cooked prawns, tuna or salmon. METHOD: Layer the salad ingredients in listed order or mix all ingredients together in a bowl and serve.
Baked Thai chicken INGREDIENTS • 10 organic chicken thigh fillets, diced • ½ cup rice flour • 2 tbsp butter • 2 large onions, finely chopped • 3cm piece of ginger, grated • 3 cloves garlic, peeled and crushed • 2 tablespoons green curry paste • 1½ cups coconut milk • ½ cup filtered water • 1 tbsp fish sauce • 2 tbsp brown sugar • 3 tbsp lime juice • Red chilli, chopped, to taste • ½ cup fresh coriander, chopped METHOD 1. Preheat oven to 180C (160C fan forced). 2. Blot chicken with paper towel and place into a paper bag with rice flour to coat. 3. In a large frying pan heat butter and brown chicken on all sides. 4. Add onions, ginger, garlic and curry paste and sauté until onions are translucent. 5. Remove from heat. Place in a deep baking dish and set aside. 6. In a sauce pan mix coconut milk, water, fish sauce, sugar and lime juice and heat through. 7. Pour over chicken and bake for 40 minutes (30 for fan forced). 8. Sprinkle with fresh coriander and serve with rice.
Avocado and chocolate mousse INGREDIENTS • 1 avocado • 1 small banana • 1/2 cup melted Changing Habits Coconut Oil • 1/4 cup Changing Habits Cacao Wafers • Very small pinch of Changing Habits Seaweed Salt • 2 tsp homemade vanilla essence • 2 tbsp maple syrup, honey or a few drops of stevia to taste METHOD 1. Grind cacao wafers in a blender until it forms a powder. 2. Combine with the remaining ingredients. 3. Blend until completely smooth and creamy. 4. Add a splash of water or coconut water to make a lighter mousse. 5. Spoon into a bowl and allow to set in the fridge.

ou know, those times when you’ve had a rubbish day at work, or a family member is being a little trying, or you really should have avoided Facebook ... the times when all we girls really need is for the man in our lives to say, “Wow yep, that’s awful, I totally agree!” Instead, they more often than not launch into a speech that comes across as a lecture and, to my original point, unsympathetic to our situation or needs. After spending the best part of 13 years with my man, I’ve finally come to realise that it’s not intentionally an uncaring response. In fact, it’s usually his way of trying to help or problemsolve the issue for me, which is sweet when you think about it. Only problem is, we can usually work out a solution ourselves and/or realise we simply have to manage whatever the challenge is. Really, we girls only want to hug it out, nothing more − no advice or input, just an agreeable (that is, sympathetic) ear. Sound familiar? I thought this behaviour was only a trait of Cooper’s, until my friend, Nicole, brought up the issue. In this instance, however, she praised her man, Iain, for “doing good” the night before. Following a particularly stressful day at work, he had apparently taken on board previous feedback (that is, from past disagreements on this very matter) and kindly shared in her pain rather than trying to counsel on a solution. We ooh’d and ahh’d about what a step forward it was (and Cooper feigned angst due to my lack of recognising his positive attempts at the same tactic) ... until Iain finally admitted − with a nervous laugh − that he implemented February 2015

the strategy because he had worked out “what was good for him”. This did instigate laughter and the popping open of another bubbly beverage, but it left me with the thought that as we grow older, we learn more and more about the wide and varying ways language differs between the sexes, whether that is communication be between lovers, family or friends. As we’ve all witnessed, lack of understanding in this arena can cause major communication (and relationship) breakdowns, which has of course kept countless psychiatrists, relationships experts and authors in business on a global scale. The sad thing is, usually each person in the scenario means well, but consideration beyond any annoyance or aggravation doesn’t ever manifest. Too often we tend to count the misunderstandings; or the issues and pet peeves which are usually merely a result of the initial misunderstandings! It’s easy to focus on these kinds of things when the chips are down, and trust me, I do know from experience. I think you’ll all agree that sometimes it’s easy to focus on the things that annoy us even when things aren’t going badly, although we’re quite possibly tired, over-worked, overwhelmed and have kids of all ages tugging at our limbs nagging to be fed. In the spirit of our special issue of “love” though, I’ll return to something else I’ve learned; or to borrow one of Oprah’s famous phrases, “something I do know for sure”; that is, it’s just as easy to count what’s good as it is any of the other stuff. And as Positive Psychology suggests, once this practice is entered into, it becomes a habit. Our partners and the men in our lives are 50
going to love this strategy because it indeed means they’re likely to be in the “good books” more often. In the end, it’s also about taking responsibly for our own thought patterns and happiness. If we’re thinking about the good things in life, we’re going to be feeling good, and spreading the love around incidentally. Win-win. Taking a lesson from my mate, Nicole, I’ve chosen to spotlight the good things and count Cooper’s positives, so to speak. And you know what? They’re plentiful! Of course I “know” this, but it’s helpful on many fronts to take stock every now and then. I’d be surprised if (even if the “he” in your life is in the proverbial “naughty corner” at this very minute) your list didn’t end up pleasingly substantial too (at least, I hope it does). Try it, either way; list all the beautiful gestures and sweet words, selfless acts and cute characteristics − you can’t help but feel the love thanks to this simplest of perception-shifting tricks. Even if you’re single, lob in on the love and make the list anyway, so you recognise him when you meet him! Finally, don’t forget about YOU either. The one thing the boys don’t realise (because thankfully, they’re not in our heads), is that even if we’re mad at them for being, say, unsympathetic, women tend to be harshest on ourselves. I propose taking two minutes out of your day this Valentine’s Day − and every day, for that matter − to count the ways you rock. Write it down, be unapologetic and proud, revel in the numerous ways that you are awesome. Wrapping up, a quote from James Oppenheim which recently found its way into my inbox: “The foolish man seeks happiness in the distance; the wise grows it under his feet”. Here’s to choosing love this month, and always.
