CHRISTMAS CHILL at Links

I’m going to confess something: I come from a loving yet selfish family. We are all about us. That was, until the glue of our family was gone. My mother passed away 14 years ago and Christmas time changed. But it wasn’t for the better.

Nobody cared about Christmas as much; nobody was invested anymore because we lost our leader.

We asked ourselves,“Who is going to fill the Santa sacks?”

Most of us were over 30 by now.“Who is going to cook the roasts? Who is going to make the desserts we all love? Who is going to complain about a belly full of Christmas pudding and Pavlova while sleeping on the pool lounge? Who is going to make us feel completely welcome and loved, and believe in Christmas as it should be?”

We did soldier on in our own selfish and self-absorbed way, still a little bit lost in the ‘Who stole Christmas?’ millennium for a while.

These days I am much ol... I mean wiser (I’m still very young at heart — just ask the girls in the office), and Christmas has become about more than just my family (and by family, I mean immediate family, those who we share genetics with and grew up fighting with).

Now Christmas Day is a day in which I can put my hand forward to those I know and love who aren’t necessarily ‘family’, but are family to share the food, the laughter and the fun of just being together. And I encourage you to do the same. Reach out to friends, neighbours, older community members, even the postman (I wouldn’t invite my postie though as he is my dog’s arch nemesis and the dog would think I had a special Christmas lunch prepared for him — just kidding, he wouldn’t hurt anyone, but he has the postie fooled).

To me, it’s about the day, not the gifts. And it’s about making sure everyone is welcome and feels loved on Christmas day.

Maybe I am my mother after all!

This season appreciate your loved ones, your ‘family’ for the day, the joy and laughter, and then the quiet because everyone has passed out in a food coma!

with Anna Davies he season of giving is upon us, and while some relish the opportunity to find the most perfect gift to give, others seem to either not care, or not have any taste (I’m looking at you, office Secret Santa).

I know what you are thinking — it’s not the material gift, it’s the symbolism. Well sorry Mum, symbolism doesn’t get me my time and money back. But do you know what does? Re-gifting. It’s the social crime that pretty much everyone has committed, or at least thought about doing.

To be honest, it makes my Christmas a win-win: either I’ll get the gifts of my dreams, or, I’ll get a supply of emergency birthday, Christmas and housewarming presents for the year ahead. Join me on the dark side and find out how to get away with repurposing this Christmas.

Hide the truth at all costs The biggest risk of re-gifting is getting caught out by the person who originally gave you the gift. The first step to avoiding this is to keep all of your re-gifts accounted for in a safe place where nobody goes, like a creepy attic or basement.

Bonus points if you can get a carpet python or ghost to hide your dirty secret (how very Harry Potter). You should also keep a list of all the gifts you’ve hoarded and who gave them to you. Hide this list like your life depends on it, or otherwise face becoming a social pariah.

Of course, you can’t actually use it, but lord knows a tactfully angled selfie can hide a multitude of sins.

Personalise the lie So, you’ve hidden the re-gift in your chamber of secrets and kept up the charade of human decency for a few months. Congratulations! You’re just one step away from getting rid of this heinous item. Now you just need to pass on the cursed object to its next victim. The first rule here is to make sure the gift fits the occasion, because no, Sam didn’t want Santa socks for his 40th. Once you have found the perfect re-gift in your stash, it’s time to make it look like you actually put some thought into the gift. You could maybe buy some wrapping paper in their favourite colour or with something they like on it, or write a lovely handwritten note. All of these extra heartfelt touches are the perfect disguise for your black, cold, re-gifting heart.

Doing differently

Christmas looks different for each and every Gold Coast family, especially ones who have had a loss to their family in 2018 — Get it’s Kirstin Cuthbert hears from two mothers who are still finding happiness in their Christmas Days after a hard and challenging year

Willo Ford 37, Mudgeeraba, Founder of Parenting Reimagined Children: Dustin, 3 years and Monique, 11 months Why will you be doing Christmas different this year? This will be my first Christmas as a single mother.

What events happened that lead you to become a single parent? It was a series of many different events that lead to me becoming a single parent but in the end my decision came down to the reasoning that it is better to be a single mum than stay in a bad relationship, for myself and for my children.

What is the hardest part of being a single parent? So far, when both of my children are upset or sick and I cannot hug them both as effectively as I would

like to! My lap is only so big and it’s my two hands and two feet. I am sure it’s not as comforting as a whole human hugging them in entirety.

What will be the hardest part about Christmas this year? Not being able to share with another adult their joy and happiness, the decoration of the tree and the excitement of the season.

What will be the best part? Creating a decorated tree and being part of my children’s joy and excitement throughout the day.

What will Christmas day in your home look like? Wake up early, unwrap the presents from Santa and I in the morning in our pyjamas, make pancakes and eat them next to the Christmas tree. Then get ready to go to Nannie's house and celebrate the rest of the day with her and our extended family with good food, kids running around, wine, laughter and beautiful happiness by being with with loved ones.

What are your tips for other people in a similar situation to you this year?

Create traditions or keep doing a tradition which was done prior. I have a tradition to get a new bauble for the tree for each child to put on the tree each year and eat pancakes with deliriously delicious toppings! Creating these traditions gives them some solid things to look forward to and take part in. They will remember them forever and it will always be a special thing that they do with their parent at such a special time.

Amanda Howard 44, Author and Studio 10 regular Children: 18-year-old son and 11-year-old daughter Why will your Christmas be different this year? My husband, Steve, took his own life. On June 20 this year, my children and I returned home from school pick up. It was a Friday afternoon, and we had called him a few times but he didn’t answer. I called his office, who said he had left for the day. Panic stations kicked in. It was then that I spotted his wallet on the bed. I grabbed my keys and headed to the garage to see if his car was there. That was when I found him.

We had no warning, no history of depression or mental health issues. Nothing. One moment he was alive, the next he was gone.

I began screaming and my son came out, and sadly saw his father too. We thankfully stopped my daughter seeing him. She just stood on the front step and began crying, she knew instantly too that her Dad had died. I don’t really remember actually telling her.

What has life been like since? Life has been hell. It has been wave after wave of grief. My son dropped out of University, I dropped out of one of my Masters degrees (I was working on two), my daughter has been absent from school many times, basically we are struggling to function in this new life.

What has been the hardest thing? That life goes on around us when all we want to do is grieve. I don’t want the children to change, I want them to stay how he last saw them, but instead we have to get up every day, we have to cook and clean and go to work and school. The hardest of all are our children’s milestones. My daughter graduates from Year 6 in a few weeks, and he won’t be there for that.

The children though are doing okay, I have tried to keep their routines as normal as possible. We have times now where we sit and just check in, make sure any burdens are shared and talk about anything that is worrying us. My son has been an amazing strength and his maturity makes me so proud.

Has Christmas been an important day for you in the past? If you were to look up Christmas in the dictionary you will see a photo of me next to it. I adore Christmas, last year I had eleven Christmas trees of varying shapes and sizes throughout the house all decorated in a specific theme to match that area. Even Steve knew he couldn’t tame my enthusiasm. During one of Steve’s last conversations with a co-worker he actually spoke about how special I make Christmas, and how he never thought he could love it, but had learned to embrace my Christmas spirit and just go with it.

How will Christmas Day look this year?

Every year my routine is always the same, I get out of bed at around 5am, I put a few things in the oven to bake (I make a threecheese strata for breakfast every year), I set up the video camera and then wake up Steve so we can do any finishing touches (and make coffee) before we wake the children. I am like a child on Christmas, awake and raring to go by 3am! Usually by about 6am the children are waking up so we press record on the camera and record their faces seeing their presents.

Even at 18 and 11, we keep everything a secret and they come out to wonderful surprises under the tree. Their wide-eyed stares, their smiles, the love, the magic, every Christmas morning is a sight to behold and it is why I go those extra lengths to make it magical. This year, I will still be doing it all but I am doing it alone. I will also wake up early as usual but instead have a cry, let it out in the darkness so I am not crying when they wake up. We will talk about Steve and we will acknowledge that he is not there, but we will also try and have the happiness of the morning too.

I do a large formal lunch for my family — last year there were eleven of us, this year we are one down, but I will still set a place for Steve, which will be a new tradition that I will continue each year. My family support that and the children are happy to do that too.

Our main tree, the one that has the children’s presents under it, is being done differently this year. My daughter picked out the theme, so she feels an ownership to the new tree.

It also gives us a focus, that something is different and isn’t a reminder of our missing husband and father. The loss will remain, but knowing that he loved how I loved Christmas, I know that he will be there, in our hearts.

What tips do you have for people who may be in similar situations this Christmas?

On the practicality of the day, please ask for help; ask family and friends to help you if you decide to host, like I am, a family luncheon (as it is tradition in my family, and one I don’t want to stop). I know that in my grief, I am not really thinking straight most of the time, and burning the turkey could be a disaster just waiting to happen, so ask someone to be there to help with everything. This year the children are helping me as best they can, though they know I do have a compulsion about having my Christmas decorations just right, so they usually leave the trees up to me.

Family and friends are so important and you should have them around you during this time. Whether it is one person with you, or dozens, just remember that there is a lot of love around you. In the smiles of your children, the wafting scents from the oven, the endless piles of scrunched up wrapping paper, the silly bonbon hats and jokes.

Remember even in your grief, it is okay to smile too.

WORK LIFE Take a step into the life of Fabienne Costa, CEO and Creative Director of YCL Jewels

n Upper Coomera with her partner, greyhound, Atlas, and two cats, Spirit and Salem, lives Fabienne Costa. Four years ago she founded YCL Jewels after making jewellery as a hobby since she was a teenager. At 21, Fabienne was almost finished her Nursing degree when she decided to take a leap into focusing on the business full-time. Although it wasn’t the easiest decision for her, she didn’t want to sit around and always wonder, "What if?"

ABOUT YCL JEWELS… YCL Jewels makes pieces for the modern and mystic woman. Until a year ago, YCL’s team would hand make all of our pieces from our Gold Coast studio. After a lot of research and trips to investigate, a portion of our pieces are now made by craftsmen in India and Hong Kong, while still hand making some of the pieces in the studio. I believe in making pieces that are able to be worn everyday by our YCL women rather than saving them for a special occasion, and each piece is made to be layered with other pieces. I design each piece to align with the energy centres or ‘chakras’ of our bodies and want the wearer to feel empowered and strong each time she wears one of our treasures.

I’M RESPONSIBLE FOR… For the first few years of the business I was working by myself and like many small business owners that meant I was everything.

Over the past few years I’ve been lucky to grow our team and we now have three of us working in the studio as well as our marketing and PR directors working off site.

My responsibilities have changed a lot as a result of having a team around me. Day-today I still design all YCL collections, I liaise with our craftsmen overseas, manage our social media accounts, work with the team to hand make pieces that have been ordered, manage

our website, develop creative concepts for our collection photo shoots and campaigns, and so much more!

HOW MY DAY GOES… I like to get into the studio between 7:30am and 8am each day as I operate the best in the morning. I usually start replying to emails, meeting with our team to discuss anything we need to focus on that day, WIP meetings with our Styling Coordinator to continue our work on upcoming collections, photo shoots, designing etc., then as the CEO of the brand I spend a good portion of my day working on strategy and development with our marketing and PR team. I spend a whole day once a week making jewellery and I try to carve time twice weekly to focus on design and creative expression.

THE MOST REWARDING PART… Being able to create from my heart every day and also having the freedom to illustrate my life in dynamic colour.

SOMETHING SURPRISING… I only work four days a week. It is a luxury, definitely, but it is important to me to be able to create the ‘work life’ that works best for me.

WORST PART… Trusting the ebbs and flows of business because there are and will be many. It takes a great deal of patience!

IN MY SPARE TIME… After work I love to go home and relax in my sun-drenched front room, spend time with my animals and my partner, read or paint. I also have an Italian lesson once a week and I’m really enjoying learning the language.

On the weekends I love to eat out, go paddle boarding at Currumbin, spend time with friends and family and, of course, create.

HOW I FOUND BALANCE… I identified a working lifestyle that saw me thriving rather than feeling depleted or drained by my work. This is key as we all operate and function at different capacities. It also helps to dismantle any stereotypes and beliefs that you may place on yourself due to societal expectations or the expectations of others. And, make yourself a priority in this life and learn to be gentle on yourself.

Through combining these three core values, I am able to cultivate loving relationships in my life and I am also able to set boundaries with my work.

BREADCRUMBING Don’t be confused by the name ladies, we haven’t taken a trip back to the fairy tale world of Hansel and Gretel, although that is essentially what we’re talking about.

The infamous ‘breadcrumber’ will leave you a trail of sporadic Instagram likes and Facebook comments regularly enough to keep you interested, but not quite enough to make the relationship progress.

Every year sees weird and wonderful beauty trends sweep the globe like a virus, pushing boundaries further and further into unchartered territory.

With so many bizarre beauty trends rearing their ugly heads this year it begs the question; which beauty trends will 2017 be remembered for?

Will it be Kylie Jenner Lip Kits?

The queen of lip liner, mirror selfies and pregnancies for publicity took the world — namely impressionable millennials — by storm this year with her self-titled lip kits. A lip liner and liquid matte lipstick in the same colour? Revolutionary? Hardly.

But alas, it will be an icon of this decade.

Says a lot, doesn’t it?

Or perhaps barbed wire brows?

Remember when eye brow maintenance involved nothing more than a monthly wax, maybe a little pencil in the morning? No, neither do I. But 2017 saw eyebrows take on new heights. Just as we had recovered from ‘feathered brows’ the internet kindly introduced us to ‘barbed wire brows’. Spiky, gelled, dangerous brows with reckless rebellion and a bad attitude. These brows were James Dean on a bad day!

And what about faux freckles? Now don’t be mistaken, your cute, natural spattering of pal freckles did not make a come back this year. Oh no, this trend was all about the faux-freckle, because real was so 2016! Think big, obnoxious dots drawn all over your face like a three-year old who just found your expensive black eye liner and went to town on her face. Cute? No. But have fear ladies, because it gets worse. Far, far worse. This year could go down in history for the many — ahem, inventive — ways we applied our foundation, which included socks, hardboiled eggs, condoms and men’s testicles.

Yes, you read that right: men’s testicles.

Don’t believe me? Google it. Pretty nuts, right? (Maybe it’s too soon for that joke!)

And on that note, I wish you all a fabulous Christmas and New Year and look forward to seeing what weird, wonderful and frightful beauty trends 2018 brings!

Hard day in the office eing a Get it girl can be tough work, especially when we're on print deadline! That's why this month we decided to do a pampering session. But we didn’t have time to duck out to a beauty spa so we treated ourselves to a little luxury at our desks!

We used three products from James Cosmetics. We both used the 24k Gold and Collagen Lip Mask that ‘tightens the skin around your lips in under 30 minutes’.

Then for these eyes that have been looking at the computer screen for too long this week Leanne applied the 24K Gold and Collagen Crystal Eye Mask which ‘works to minimise lines and dark circles; leaving you refreshed after only 20-30 minutes’. Hayley opted for the Dead Sea Mineral and Active Recovery Eye Mask which ‘restores your under eye skin, reducing puffiness and leaving you hydrated’.

Here's what we thought of the treatments!

Hayley “I was excited to try these, as I have seen that celebrities like Emma Stone use them to prep for the red carpet, and if it’s good enough for Emma Stone, it’s good enough for me.

The eye masks applied easily and felt quite cool and refreshing on the skin.

The lip mask was a different story... it just slid straight off! After many awkward (and hilarious!) attempts to keep it in place, I succeeded. It turns out the trick is to not talk, not laugh and hardly breathe! Thirty minutes later, and many failed attempts at keeping the lip mask in place, my skin felt noticeably smoother. While I didn’t have Jay-Z style plumped lips, they did feel nice and soft! Would definitely recommend for a pamper day with your girlfriends!

Well, the silly season is upon us and it’s almost time to celebrate the 12 Days of Christmas. What to wear? Always a dilemma!

I want to look stylish but still be super comfortable. After all, there will be a lot of eating and drinking going on during the lead up to and when the man in the red suit arrives.

Our weather in QLD tends to lead to a very casual and relaxed Christmas Day, so ladies, be prepared to get very comfortable! My Christmas starts with friends and festive drinks on Christmas Eve with plenty of nibbles and bubbles to get me sorted for Christmas Day. And Christmas Day also starts with bubbles — I can feel my waist expanding as we speak!

I like to have three outfits sorted for this crazy, mad time of the year. These are for Christmas Eve, Christmas Day and Boxing Day. And let’s face it, I’ll use any excuse to buy a new frock! Here are some of the things I’ll be wearing this Christmas, I hope they inspire you too.

A relaxed maxi dress with some waist definition in pretty summer florals. Look for Palm Springs inspired prints, nothing too bold and overpowering. The cold shoulder cutout is perfect if you are not loving your arms but still want a breezy effect.

A magnificent kaftan. Nothing like a bit a boho chic to say festive and, who knows, you may get one for Christmas! These can be worn many ways, so have some fun with this.

Elastic waist. Yes, you heard me. Probably the most ingenious thing ever invented! Make sure these pants or skirts have a flat front and elastic in the back, team them up with an off-shoulder top or anything that is boho inspired. Jump on this trend and be comfortable for days!

Whether you are doing a traditional BBQ or hanging at the beach this Christmas Day, be fashionably prepared so you will look amazing, even after too much Christmas cheer! Pro tip: have a nana nap in the afternoon so you can wake up and do it all again.

reviving ancient civilization egend has it that Chinese arts and culture were gifts bestowed by the heavens. In ancient China, students and scholars would sit in meditation to calm their minds and inspire creativity. But in recent decades, these traditions have been all but completely lost. Today, where can you go to discover authentic Chinese arts and culture?

The answer is somewhere closer than you might think. In January, the world’s premier classical Chinese music and dance company, Shen Yun Performing Arts, returns to the Gold Coast. The show is a celebration of traditional Chinese culture as it was meant to be — a study in grace, wisdom, and virtues distilled from five millennia of civilization.

The journey to understanding today’s China begins 5000 years ago, with the reign of the legendary Yellow Emperor. He is credited with establishing a culture rooted in veneration for the ‘Heavenly Way’.

This idea of aligning oneself to a higher principle has permeated Chinese life for thousands of years since — from arranging furniture with Feng Shui to governing by Confucian ideals, following Buddhist and Taoist meditation disciplines to creating music and art that revere the divine.

These traditions have mostly disappeared today, wiped out by the Chinese Communist Party’s political campaigns. The Cultural Revolution of the 60s and 70s was especially devastating — artifacts, books, and temples were destroyed in an effort to wipe out the world’s most ancient culture. Millions were killed and Chinese culture never fully recovered.

Enter Shen Yun Performing Arts. In 2006, a group of elite Chinese artists came together and established Shen Yun in New York. Having found artistic freedom, they set out to bring a long-lost culture back to life.

Ever since, Shen Yun has performed in the world’s top venues, taking audiences to distant lands and times on an extraordinary journey across 5000 years of Chinese civilization.

At the core of a Shen Yun performance are classical Chinese dances, ethnic and folk dances, ancient legends, and modern tales of courage. Dance is accompanied by a one-of-a-kind orchestra, which combines both classical Western and Chinese instruments. Vocalists, bright costumes, and animated digital backdrops complete the Shen Yun experience, one that has been described as both enriching and inspiring.

When the silly season rolls around, many people are left wondering how to stick to their healthy eating without missing out on the fun. Rhian’s cookbook, The Healthy Mummy Christmas And Entertaining Cookbook has more than 150 healthy recipes like this absolutely mouth-watering cake! She says, “The festive season doesn’t signify the undoing of your hard work to lose weight.”

CHOCOLATE BERRY LAYER PREP TIME: 15MINS I MAKES: 16 SLICES INGREDIENTS For the cake • 2 ⅔ cups wholemeal self-raising flour • 1 cup coconut sugar • ¼ cup cocoa/cacao powder • 4 eggs • 1 ½ cups almond milk • 1 tsp vanilla extract • 1 tsp instant coffee granules • ¼ cup coconut oil, melted For the filling • 1 cup Greek yoghurt • 2 tsp honey • 1 cup mixed fresh berries and cherries of choice

Popsicles for wine lovers

This delish recipe is by Christine Ricketts, Cellar Director at Cellarmasters.

“Pinot Grigio Popsicles are the perfect way to stay cool this summer. The fresh, aromatic wine is the perfect wine for summer, and will give you a mouth-filling burst of crisp apple and pear fruit with zippy acidity — which is why it also works perfectly as a refreshing popsicle!”

• 10g dark chocolate DIRECTIONS

PINOT GRIGIO POPSICLES

Preheat oven to 180°C. Line two 22x22cm round cake tins with baking paper, set aside.

PREP 10 MIN | SERVES 6

In a large mixing bowl combine flour, sugar and cocoa/ cacao. Mix well. Add eggs, milk, vanilla, coffee and coconut oil. Using a hand mixer, beat the mixture for 20 seconds or until just combined and thick, scraping down the sides as needed. Do not over-mix batter or the cakes will be tough.

INGREDIENTS • 1 bottle of fresh Pinot Grigio, like Wordsmith Bed of Roses King Valley Pinot Grigio • 1 tablespoon caster sugar • 2 mangoes

Divide batter evenly between the two lined tins. Bake for 30-35 minutes or until a skewer inserted into the middle comes out clean. Remove and cool in tins for 10 minutes.

Remove from tins and transfer to wire racks to cool completely.

• 3 passionfruit DIRECTIONS Pour half the Pinot Grigio into a large jug and add the sugar.

Stir until completely dissolved. Add remaining wine and stir to combine. Set aside for a few minutes, until the liquid is clear again.

For the filling, combine yoghurt and honey, mix well.

Once cakes are completely cool, trim tops of cakes to make each even and flat. Spread half the yoghurt mix over the top of one cake. Add half the fresh mixed berries on top of the yoghurt.

Add half of your fruit into your popsicle moulds. Pour in enough Pinot Grigio mixture to fill each mould to about half full. Place in the freezer for 30 minutes or until partially frozen.

Carefully place remaining cake on top of the other to sandwich together. Spread remaining yoghurt on top of the cake and add remaining berries.

Insert a paddle-pop stick into the centre of each mould. Add the remaining fruit. Divide remaining Pinot Grigio mixture among moulds. Place in the freezer for 6 hours or until frozen.

GINGERBREAD DOUGHNUTS PREP 10 MIN | SERVES 7 INGREDIENTS • ⅓ cup + 1 tbsp arrowroot • 3 ½ tbsp coconut flour • ½ tsp baking soda (bicarb soda) • Dash of salt • 1 tsp ground ginger • Dash of cloves • Dash of cinnamon • ¼ cup milk (of choice) • 2 tbsp maple syrup or golden syrup (rice malt syrup can be substituted) • 2 tbsp oil • 1 tsp vanilla extract • 1 egg (or for vegan option substitute ¼ cup mashed banana or apple sauce) • ¼ cup of granulated sugar (coconut, maple, raw etc.)

MAKE THE GARLIC OIL: While the bread is baking, peel and crush the garlic. In a small bowl, mix the garlic with 2 tbsp of olive oil.

FESTIVE CROSTINI, TWO WAYS PREP 25 MIN | SERVES 6 INGREDIENTS • Dill • Goat cheese • Garlic • Olive oil • Chives • Heirloom cherry tomatoes • Smoked salmon • Feta cheese • Bake-at-home sourdough baguettes • Pinch of salt and pepper DIRECTIONS WARM THE BREAD: Preheat the oven to 220°C/200°C fan forced. Place the bake-at-home sourdough baguettes directly onto the wire

TOAST THE BREAD SLICES: Slice the warmed sourdough baguettes diagonally into 1cm thick slices. Brush half of the bread slices with the garlic oil. Place the bread slices onto the oven trays lined with baking paper and bake in the oven for 5 minutes, or until crunchy and golden.

MAKE THE FIRST TOPPING: Cut the heirloom cherry tomatoes into quarters. Finely chop the chives. In a medium bowl, toss the tomato and half of the chives with a drizzle of olive oil and balsamic vinegar. Season to taste with a pinch of salt and pepper. Lay the garlic oil bread slices on a flat surface and top each slice with a spoonful of the tomato and chive mixture. Crumble over the fetta.

MAKE THE SECOND TOPPING: Lay the remaining bread slices (without the garlic oil) on a flat surface. Spread over the dill goat cheese. Tear off small pieces of smoked salmon, place on top and sprinkle over the remaining chives.

SERVE UP: Divide the heirloom cherry tomato, fetta and chive crostini and the smoked salmon and dill goat cheese crostini between serving plates. Drizzle with olive oil just before serving.

DIRECTIONS Preheat the oven to 180°C. Grease a doughnut tin.

Mix the dry ingredients together in a mixing bowl. Add the wet ingredients and stir to combine.

Pour the mixture evenly into seven doughnuts.

A mini muffin tin or cake pop tin can be used instead but the cooking times will vary.

Bake for 15 minutes. While the doughnuts are baking, mix the sugar and ginger in a shallow bowl.

Once the doughnuts are cooked, immediately remove them from the tin and roll them in the ginger sugar. Serve the donuts warm or cold.

They can be served with tasty Gingerbread Men too.

Store the doughnuts in an airtight container for up to 3 days.

Classic with a twist Celebrity chef Anjum Anand (thespicetailor.com) has provided this twist on a Christmas Day classic.

"Family trips to Goa, India, are a bit of a regular event over the Christmas holidays, and one of the most special dishes to eat at Christmas is a small roasted piglet, marinated in Goan spices. It features an East-meets-West glaze and is decorated with flaked almonds instead of customary cloves — I find the crunch works really well and makes the ham feel special in its own way."

SPICED GLAZED HAM SERVES 8, CAN BE HALVED INGREDIENTS • 5 kg unsmoked, pre-soaked gammon joint (ideally with bone in) • 2 tsp ground black pepper • 8 fat cloves garlic, peeled • 30g ginger, peeled • 2 tsp cumin powder • 1 bay leaf • 2 tsp wine vinegar • 1 onion, sliced • 2 black cardamom pods (optional) For the Spiced Glaze • 100g jaggery or light muscovado sugar • ½ tsp cumin seeds, roasted and powdered powder • 1 ½ tsp garam masala • 2 tsp ginger paste • 2 small cloves garlic, crushed • 4 tsp Dijon mustard • 2-3 tsp Worcestershire sauce or until you have a thickish paste • ¼ tsp freshly ground black pepper • Handful of flaked almonds (optional), toasted DIRECTIONS Blend together the garlic, ginger, vinegar and powdered spices until smooth.

Place the gammon in a pot large enough to hold it comfortably. Add the spice blend, onion, bay leaf and black cardamom pods if using. Add enough water to cover the joint. Bring to a boil, cover and simmer gently for 20 minutes per 500g depending on your joint. In this case cook for 3 hours 20 minutes or until the internal temperature reaches 68°C. Spoon off any scum that forms and top up with water as necessary.

Meanwhile, stir together the ingredient for the glaze. It should be thick enough to hold its form but easily spreadable.

Lift out of the water and leave to cool for 15 minutes. Preheat the oven to 220°C. Slice the skin but not the fat off the joint using a sharp knife. Place in your roasting tin, add about ½” of the liquor in the bottom of the pan (you can use the rest in a curry, to cook rice in or in a soup).

Brush the glaze over the top and place in the oven. Bake for 20-30 minutes or until beautiful and golden, basting every now and again with the pan juices and baste again with the glaze every 8-10 minutes or so.

Sprinkle over the almonds and serve.

“This Watermelon Cake is one of my family’s favourites. It’s incredibly simple, requires very few ingredients and is allergy friendly too. For a dairy-free option, I suggest substituting the whipped cream with whipped coconut cream. Watermelon is packed with nutrition and is a rich source of potassium, vitamin C and phytonutrients including lycopene. It’s a powerful immune booster and a great source of hydration for busy little bodies constantly on the move.”

WATERMELON CAKE PREP TIME: 15MINS MAKES: 16 SLICES INGREDIENTS • 1 large seedless watermelon (7-9kg) • 1-2 cups (250-500ml) whipping cream (depends on the size of your watermelon) • ½ tsp vanilla extract or powder (optional) • Seasonal fresh fruit for topping

DIRECTIONS Remove the top and bottom from the watermelon as well as the rind from the middle section. You should be left with a cake-shaped piece of watermelon.

Pat the outside of the watermelon dry with paper towels. This is a very important step as it helps the whipped cream adhere to the watermelon.

In a large bowl, whip the cream until firm and creamy. Add vanilla extract or paste, if using, and whip to combine.

Frost the watermelon cake with the whipped cream and top with your favourite fruits and berries or serve without.

Serve immediately or store in the fridge for up to 3 days.

The thing is that the weight we gain during this time is rarely lost as the holiday period subsides, research has found. We say weight just ‘creeps’ on over the years, yet each Christmas we’re happy to gain a kilo or so and then we never lose it, that isn’t so much of a ‘creep’ now is it?

I for one believe that you should be able to enjoy yourself with the people close to you this season without destroying all the good work you have done to get to this point. There are two main things that cause people to come undone; overeating bad carbs and alcohol. These two become problematic because while you are consuming them, they will be the first things to burn (alcohol the

Make sure you get a highprotein, low-carb breakfast in (my favourite is a 1 egg + egg white and veg omelette with ham), have some low-carb snacks like Biltong or grilled prawns, and include a good serve of protein with your meals, like rump steak, fish or chicken with salad (low-carb dressing). Avoid starchy carbs, fruit, sugar, milk, bread etc.

2. Eat a good meal before you go. You will be less likely to overindulge in snacks, chocolates, hors d'oeuvres etc. that way.

And, you won't have to avoid them completely because you won’t eat too many.

3. Dance! Don't sit on your butt all night! Get up and boogie... burn off some of that alcohol!

4. What you do the next day matters. Get up, make yourself a coffee (black preferably) and go for a good long walk. If you are up for it, a swim will help you feel better too. Get some exercise and get to work burning off some of the 'bad' cabs and alcohol from the night before. Then for the rest of the day follow tip 1. It can also be helpful if you are not feeling the best to have some avocado and lots of good quality salt (unless you have blood pressure issues, in that case you need to be more cautious).

5. Remain accountable. If you have a person you need to see (like a Vision Personal Trainer) every week during the holidays you are less likely to blow out completely and won’t wait until January to start getting back into shape!

How to talk to someone about hearing loss Six tips for talking to loved ones about their hearing loss this Christmas with Principal Audiologist at Clarity Hearing Solutions Grant Collins here’s no doubt that hearing loss has ramifications on people other than just the person suffering from it. While wanting to talk to them about their hearing loss is natural, it can be quite a confrontational scenario.

During the Christmas season we are often surrounded by our family and loved ones, and tensions can rise due to hearing loss (missed punchlines or misheard comments leading to hurt feelings, constantly having to repeat yourself etc). It can be tempting to raise the issue there and then but when it comes to tackling hearing loss in other people, it pays to plan.

Choose the right time Christmas lunch is not the right time to tell someone you think they are deaf! Much better would be to choose a quiet moment after lunch or

any quiet moment when it’s more private and you have an opportunity to sit down and have a one-on-one discussion.

Assume they know Usually the sufferer will already know deep down that they have hearing loss. But they may not realise how it’s affecting the people around them.Talk to them about the things you have noticed — a louder TV or radio, missed points in a conversation, misheard words or sentences. Once they realise their loss is affecting other people and they are noticing it, they are more likely to want to seek treatment.

Be prepared Plan it. Have a cup of tea ready or something that you can use to break the tension a bit if it arises, and it might. Be prepared for them to go on the defensive. Be patient and compassionate, and listen to them while calmly discussing your observations.

Talk about the benefits While there are many negatives in leaving hearing loss untreated, it is often best to focus on the positives of treating hearing loss initially in these instances. And if you can personalise those benefits, even better.

They may be able to better hear their grandkids, a favourite TV show, the theatre or anything else they take joy in, or used to take joy in.

The duo shot to success when Alex became bored. Six months into a Commerce degree, Alex became bored so the boys launched HiSmile — home teeth-whitening kits — and the duo shot to success.The local boys share their journey and discuss how they signed an endorsement deal with reality TV star Kylie Jenner.

You were recently ranked 58th and 59th on the Young Rich List, did you think you would get to this place with your product?

It’s humbling to be recognised on the list, but also motivating to see how far we can go with HiSmile. We always knew we would get to this level and beyond with the company. From day one we treated this as a business, and not a hobby. Within the first six months of the business we knew. We could see the growth and success early on, but realised how many more ideas we had to take this to the next level.

How did the idea of HiSmile come about?

We were analysing a few different industries and after some discussion realised there was a clear lack of brand in the Oral Cosmetic space.

We saw the potential in the brand right from the start and realised that this industry has no limits. We put together a plan and focused solely on that vision.

Have you faced any hurdles?

It’s been a steady rise from day one, so no real hurdles in terms of selling the product.

The important thing for us is to never get too comfortable with what’s currently working. I think it’s important to be agile and embrace change, that’s what has allowed us to get to where we are right now.

INFLUENCER MARKETING Your product has been overwhelmingly successful with millennials, why do you think this is?

The Oral Cosmetic industry is a popular market, white and healthy teeth are something that everyone wants. The popularity amongst the millennials in particular is down to these factors: 1. The product: The convenience of our product compared to the rest of the market; 2. Branding: There was no brand people could attach themselves to and be passionate about in this space, that’s where we came in; and 3. Marketing: Working with the influencers that aligned with our brand and the content that we produced also aligned with our brand.

How did you get your product into the hands of one of the biggest celebrities and influencers in today’s society, Kylie Jenner? And what happened from there?

A lot of time and hard work! The main aim for us was to increase brand awareness globally. It achieved exactly that and as a result produced sales.

For those unaware of the power of influencer marketing, especially on social media, can you shed some light on it?

Influencer marketing is extremely powerful if utilised correctly. It’s about aligning 44

with the right people and getting your brand in front of your target market. The influencers are essentially messengers and ambassadors for your brand, if you’re able to simplify your message then you’ll really notice results with influencer marketing.

How do you decipher between a good influencer choice for your brand and a not so good one?

There’s a lot that goes into it for us. We have to look at their reach, audience, engagement, what type of content do they produce, etc. You have to do this on a dayto-day basis, reaching out and discussing opportunities with influencers. You’ll then start to get a better feeling for it and will be able to move and make decisions at speed.

Lastly, what do you guys love about the Gold Coast and what do you do when you're not working?

The Gold Coast is the perfect place for us! It gives you the opportunity to truly do what you want. We like that it’s not a big city where everything is operating at 100-miles an hour, instead you can decide how you want to operate rather than that being dictated by everything going on outside. In our down time we hang out with friends/family and keep active with sport and other fitness activities.

For an eight year old to be told she has word blindness and would never be able to read or write is a very disheartening thing, however, this isn’t a sad story that you’re about to hear

auren Clemett has dyslexia which causes her trouble making sense of words as she can't grasp the 'system' used to make-up words.

“I get the letters muddled up and there are about a dozen words I simply will never get right. I need to 'see' them in my mind before I can spell them,” Lauren explains.

While her school teacher telling her she was word blind sounds like an awful thing to say to a child, Lauren says he obviously knew her well.

“He knew if there was anything you told me I couldn't do, I was going to do everything to prove you wrong!”

He helped Lauren with a book of words to learn every night and a found book series she enjoyed, The Lion, The Witch & The Wardrobe.

According to her school report she still has, Lauren was reading 10-12 books a month — not bad for someone who was apparently blind to words!

After school she trained to become a graphic designer and got work in advertising agencies. It was only once she became a production manager, working in world-leading agencies, she discovered she had an ability to 'see' brands and remember their shape, colour and style, the same way she remembered words.

“It was easy for me to pick-up if the branding was incorrect. I discovered I could 'see' the flavour of the brand across all media and throughout marketing campaigns, instinctively knowing when something didn't feel right or fit with the brand.”

Lauren became a huge asset and a sought-after production and brand manager. With an advanced diploma in advertising management and her fascination with how the brain sees and reacts to brands (Neurobranding), she sought out to fill the gap between business owners and their understanding of their customers.

“No one is teaching entrepreneurs about consumer behaviour and why people buy. This really should be the first step, because no matter what new social media, app or channel is available, the human brain makes decision purchases the same way it did eons ago — using memory and emotion,” Lauren says.

“If a business doesn't understand how their prospect’s brain sees and reacts to their brand, it's going to be really difficult to get any 45

marketing to work. It's vital to understand that the brain 'sees' brands with emotion and uses memory to feel good about buying.”

With her passion for ‘seeing’ brands, Lauren has reached new heights in her career, recently being named as an Awardee of Merit for 2017 Gold Coast Women in Business Awards as well as winning a multitude of awards at the International Stevie Awards in New York City, including a gold award for Entrepreneur of the Year in the Advertising, Marketing and Public Relations category.

“The Stevies are like the ‘Oscars’ of business awards, so it was very exciting and a complete honour to be in a room of incredible entrepreneurs from all over the globe.”

As well as her thriving career, the successful businesswoman is also a mother, though it wasn’t an easy transition for her.

“I struggled to be a mother as I was a career woman working in high-stress environments with constant deadlines. It’s not something I came to naturally, in fact, I had post-natal depression which was thankfully picked up early by my naturopath,” she admits.

She was also thankful that her daughter didn’t get the triple threat of asthma, eczema and hay fever Lauren developed as a child, or the endometriosis she suffered with for many years.

“Fortunately, she has none of these challenges. She certainly is very creative, a real storyteller, with a goal to be a journalist, so perhaps the right genes have been passed on.”

With an inspiring woman like Lauren as her mother, we are sure they have been!

here was a time, not so long ago, when I was very unhappy at work. I felt ungrateful for having an attitude about it — I was respected, well paid, there was potential for progression, I had friends in the office and was working on an important national campaign. However, the energy around me was low and my days lacked purpose.

I felt powerless and constantly worried.

Regardless of the good points, I knew the sinking pit in my stomach told me the truth of the matter. I needed to either suck it up and get on without complaint, or to make a change.

As I came to this realisation, the business underwent a restructure and suddenly fresh opportunities emerged. I had my eye on one role that really suited my personality and skills. It felt like something I’d be passionate about.

I hesitated on applying though — word in the corridors was that the role was tagged for another colleague.

I held on to this for a good few weeks, while feeling disillusioned in my current position.

The more I thought about it, the more I wanted to put my hand up for the opportunity, but worried about competing with colleagues and how I would show up if I didn’t succeed. I had not been in this kind of spot before.

Somewhere along my life journey — early on, fortunately — I learnt to pursue the path of happiness. If I knew a situation was not right for me, I would make an often-uncomfortable December 2017

The situation was STRESSFUL, certainly, but it was more the stress you feel when taking a CHANCE on something that’s

worth trying for. short-term shift for the long-term good. Change is never easy and usually comes with associated risk, but I’ve always optimistically (possibly naively) just gone for it.

Armed with that attitude, I mustered the courage to speak to the manager hiring for the role, only to discover he had gone on leave that very day, for three weeks! ‘Maybe it’s a sign’, I thought, heading back to my desk feeling dejected.

About six weeks later, I heard a murmur that my colleague set to go for the job I was interested in, simply left — walked out one day, barely a goodbye was said. That was my sign.

I launched out of my chair, invisible superhero cape dramatically blazing behind me, and marched straight up to the hiring manager to arrange a meeting.

I was nervous about the chat, figuring I’d have to explain my situation and that he would judge me. For what, I know not. As it turned out, he was very supportive and helped me see that it was absolutely fine to want a change.

I officially took the risk and applied for the job. Only one trusted colleague was privy to my plans, and I had to negotiate a special time (and 50

reason) to get out of work to go and interview in the same building for two hours.

The situation was stressful, certainly, but it was more the stress you feel when taking a chance on something that’s worth trying for. As in, the very opposite of how I had been feeling.

That’s when I realised, proudly, that I’d taken back my power.

Applying for that job was quite terrifying. I potentially faced humiliation, regret and ongoing awkwardness. That said, none of these things came close to how powerless I would have felt if I had carried on with things as they were. By some happy miracle, I got the job, and my instinct had been right — it was perfect for me.

I tell you this story now, because we’re coming to the end of the year, when inevitably we reflect on areas of life where we may want a superhero to step in and save the future.

We’re often asked what super power we would choose, like invisibility or the ability to fly. I’m into this though: the power to make myself happy; the power to make my own decisions and the power to shape my own destiny. Muster a little determination and the willingness to see things differently, and you too — cape or not — can save your world.
