My father, Graham Perkins wrote this poem a long time ago, but I feel it reflects the things that I now have come to understand. What are the misconceptions people have about staying sun safe? When my first shipment of parasols arrived, I was very excited to take one in to show it off to my colleagues. The overwhelming response was, ‘It’s very nice but you wouldn’t catch me using an umbrella in summer!’ I knew we had a challenge on our hands to change this. Tell us about a highlight moment in your career so far? I still get a kick out of seeing a stranger using our parasol when they are out enjoying themselves. We get such wonderful feedback from people who say, ‘Your parasol has changed my life!’ That makes all the hard work worthwhile.

Bringing style, innovation and heart to sun protection, Sunbella founder Jillian Intini speaks to Holly Bartter about her career evolution and staying inspired to do what she loves. How has your personal story shaped your business today?

If I hadn’t witnessed firsthand the results of sun damage, I wouldn’t have realised that people like myself were avoiding sun protection for the sake of their appearance. As an operating theatre nurse and outdoor person, I was aware that I had to change my own habits. Ten years on, my daughter and I have a thriving sun protection business, Sunbella (sunbella.com.au) that combines fun in the sun with glamourous fashion. GET IT Festive Edition 2020

What is a favorite quote that has served you well across your life and career? My favorite quote is, ‘Anything that is worthwhile requires a bit of effort!’ Designing and manufacturing parasols and sun style wraps are also the perfect example of the reward you get if you put in the effort. What trends do you see on the horizon for sun protection, and what’s next for Sunbella? Sun protection is becoming part of an everyday routine for most people and not just an afterthought. We want to provide attractive sun protection and have now introduced UPF 50+ sun-style wraps and gloves to our range of parasols. It has been difficult to find a lightweight luxury fabric that meets our requirements, so we are working on solving that problem. What are your go-to beach accessories as the weather heats up? I like to pack light when going to the beach, and I don’t leave home without my parasol! I’m also loving my sun style wrap because not only does it protect my shoulders from the sun it keeps me cool if I dampen it. Also, my Wotnot sunscreen (because it has no harmful chemicals in it), a lightweight towel and my sunnies and that’s it for me.

hristmas is a time of joy, laughter, and champagne cocktails.

It’s a time when the peace and goodwill of all mankind warms the very cockles of our hearts. I’m filled with a warm glow just thinking about the season. Unfortunately, there are only 452 things that need to be done – by me – so that everyone else can have a fabulous festive season! I have been married for 22 years. In that time, I have bought literally ALL of the presents for my in laws and associated family. I’m not sure how or why this became my job? But, by osmosis, it seems that remembering that my sister-in-law likes Thermomix cookbooks and my father-in- law will read absolutely anything written by Wayne Bennett has become 100% my responsibility.

There is also a special joy in watching your own children open their beautifully wrapped (by me) presents (such shiny excitement); and knowing that your husband has absolutely no idea what the thoughtful and considered gift actually is!

Don’t even get me started on the food. I love cooking, and I love putting on the whole Christmas palaver (and maybe pavlova), but this does not change the fact that it takes a lot of effort and planning. Luckily, any annoyance I may feel is inversely proportional to the number of Christmas cocktails I’ve imbibed. So, here is my message to all the capable, thoughtful, and caring women out there who feel completely overwhelmed and slightly exhausted by the thought of the approaching festivities: this year, DELEGATE. Realise that you are also due a break and that if you keep doing all the work, people will keep expecting it of you. (I need this tattooed on my forehead). Give yourself the gift of making at least some of the 452 jobs someone else’s responsibility. I am making a list and checking it twice – then handing it on to other people.

Sarah Blinco with a unique perspective on 2020 – a year that’s taken a little bit out of all of us, but one that’s reminded us that it’s our humanity that is what’s really important How far away are you right now, from the plans you set for yourself in January 2020? I do hope you’ve managed to get by alright. Me? I’m quite literally a world away from mine.

This time last year I was into my sixth year as a happy expat in the UK. My home and life were in London, and by now I’d have settled visa status. My partner Cooper and I had hit our stride professionally, vlogging at youtube.com/travellivelearn and thrilled to be inspiring others through our travel stories. As we twirled into 2020 our world was full of promise and possibilities. However, as we all recall, whispers of something dire began to emerge early on.

The morning of 10 March I rolled over to check the time on my phone. It was 6am, with a side of Twitter blowing up. Italy had gone into total COVID-19 lockdown – the first country outside of China to shut up shop without warning. Problem was, we’d flown into Sicily (southern Italy) two days earlier. Now we couldn’t get out. Cooper and I spent all day and thousands of dollars booking one flight after another that continued to be cancelled just as we’d purchased seats. We’re still waiting for refunds. Late that fateful day, a travel-savvy friend in England, Andy, who had been advising us on ‘escape routes’ urged us to book an EasyJet flight to Eindhoven in the Netherlands. Andy predicted that unlike the rest of Europe, the Netherlands would help people who had been stranded, by letting them in to take connecting flights.

We waited for two days feeling sick in the pit of our stomachs. All ferries ceased operating. Airport departure boards simply read: CANCELLED, CANCELLED, CANCELLED. Our (not the best) neighbourhood in Catania was dead

quiet; people were paranoid and scared. At that stage though, Aussie friends didn’t really get what the big deal was. It was all too absurd and distant to believe. Until of course, as March unfolded, one country after another shut their doors. On our end, we anxiously waited at the airport for the last flight out of Catania into the heart of Europe, where we could transit to London. Passengers silently crowded into seats; fearful we’d jinx the plane’s departure. When we landed in Eindhoven everyone on board cheered! Unfortunately, that wasn’t the end of it. In England, the panic began – supermarket shelves were empty, and all of a sudden, so were our usually bustling streets. The pressure was mounting for us to leave the UK and return to Australia; now the urgency intensified by my dad’s rapidly deteriorating health. So, abruptly and without a chance to say goodbye or pack up our lives – after two more cancelled international flights – we found ourselves at an apocalyptically deserted Heathrow Airport, dejectedly boarding a Qatar flight bound for Brisbane. Adding insult to injury, we were ‘welcomed home’ by the army and


escorted to a small, airless room where we were held for 14 days. If it wasn’t for the care of family and friends on the Gold Coast who took turns dropping off care packages, we wouldn’t have had any fresh food during that time either. Two days in, I noticed the federal government Tweeting about how we should all be taking care of our mental health at this time. Were they talking to all Australians? There is a very good and very real reason why the Red Cross is still facilitating calls to people in Queensland quarantine hotels every day. Not long after we were freed, my dad died. Prostate cancer – what a nasty, nasty devil it is. He’d always been the one to take care of us, but a lot of what he was taking care of turned out to be unfinished. My brother was just one of many millions who saw his work dry up due to sudden pandemic restrictions; now, both out of work and down on our luck, we teamed up to fumble through the thorny thatch of admin, drama and trauma that can follow a catastrophic life event like this. I remember staring helplessly at my UK visa as it expired on 15 July, wondering how on earth it had all come to this? I felt displaced, purposeless, and depressed. Where do you start when you have nothing to start with? For me, I found it is quite simply gratitude: for my supporters and for those who continue to check in. It’s

during times like this that you really notice the compassion and humanity in others – some longtime friends, and some surprising newcomers who show up in life at the exact right time. I also found gratitude for my own resilience, and I finally figured out the actual meaning of self-care – prioritising movement as medicine and quieting the mind; being kind to myself and taking time out if I need it. I reached out to a career coach too, who helped me reclaim confidence lost this past year. Asking for help was the smart thing to do. My year was dark, but it’s definitely brighter now. I feel quietly certain that I’ve acquired a newly appointed angel – interesting things keep happening, including unexpected opportunities showing up, for which I am – once again – most grateful. Still, like you quite possibly, I’m entering 2021 with some trepidation. Many jobs, businesses and industries are shattered as long as Australia is shut off from the world. The truth is, COVID-19 lives on, regardless of whether you for one are untouched by global troubles, or not. Keep in mind someone very near to you may be hurting. ‘Uncertainty’ is a universal sentiment now – that’s not how we’d usually feel about the fresh promise of a new year. While it’s difficult to calculate the loss we may see and feel in the world after the shock of 2020, I do know for sure that some things can never be taken away. Let’s talk in terms of ‘giving’, because it’s Christmas after all – those things would be our ability to show compassion, to give

kindness and to connect with others who need our light. In the spirit of the season, be open minded and keep acting on what’s actually important. Those people, those actions, are what I hold most dear after this year. As for me, I can’t honestly say to you I can see yet that it’s ‘all happened for a reason’. But I am here now, and I am embracing new things in my life. I hope that by sharing my story, I might inspire you, no matter where you are, to do that too.

Portuguese Roast Chicken SERVES: 4

Method Preheat the oven to 180°C. Pat the skin of the chicken dry with paper towel. To make the stuffing, combine the stuffing mix, cranberries and salt in a bowl. Gradually add about 3 tablespoons of water – just enough to make the mixture wet and firm. Toss through the butter. Now stuff the chicken cavity alternately with the stuffing and the lemon wedges. Tie the legs together using kitchen string, then place in a roasting tin. To make the marinade, mix all the ingredients in a bowl. If you have sensitive skin, use kitchen gloves for the next step as the chilli can burn. Gently pull the chicken skin away from the flesh (take care not to tear it) and ease the butter cubes and some of the marinade evenly under the skin. Spread the remaining marinade over the top and bottom of the chicken and season with salt and pepper. Cover the chicken with foil and pop into the oven for 1 hour or until the chicken is cooked through and the juices run clear when a knife is inserted into the thickest part of the chicken. Take the chicken out of the oven and let it rest for at least 30 minutes if you can. This will allow all of the juices to run back into the chicken, leaving the flesh soft and succulent. Increase the oven temperature to 220°C. Remove the foil from the chicken and pop it back in the oven for 20 minutes to crisp up the skin and give it some colour. Serve with my best ever roast spuds.

Ingredients 1 x 1.5 kg chicken ½ lemon, cut into thin wedges 100 g butter, cut into cubes sea salt and freshly ground black pepper Best Ever Roast Spuds (see page 138 of Confidence in the Kitchen), to serve STUFFING 100 g (1 cup) store-bought chicken stuffing mix (or coarse breadcrumbs mixed with 1 teaspoon dried mixed herbs) handful of dried cranberries pinch of sea salt 50 g butter, cut into cubes MARINADE 2 tablespoons dried oregano finely grated zest of 1 lemon 2 tablespoons brown sugar 4 garlic cloves, crushed 1 tablespoon store-bought chilli paste or chilli sambal GET IT Festive Edition 2020

Salt and Pepper Fish SERVES: 4

Method To make the seasoned flour, combine all the ingredients in a shallow bowl. Add the fish and toss to coat, shaking off any excess flour. Heat the oil in a large frying pan over medium heat. You will know the oil is ready if you put the end of a wooden spoon into the oil and bubbles start to appear. Shallow-fry the fish for 3–4 minutes each side or until lovely and golden. Remove with a slotted spoon and drain on a plate lined with paper towel. To make the dressing, heat the olive oil in a small frying pan over medium heat. Add the spring onion, chilli and ginger and gently cook for 2 minutes or until warmed through. Place the salt and pepper fish on a serving plate. Drizzle over the oyster sauce and the dressing, sprinkle over a little more salt and serve immediately.

Ingredients 1 kg skinless firm white fish fillets, cut into 3–4 cm pieces (see tip) 125 ml (1⁄2 cup) vegetable oil 3 tablespoons oyster sauce, to serve SEASONED FLOUR 90 g (3⁄4 cup) plain flour 1 teaspoon sea salt 2 1⁄2 teaspoons freshly ground black pepper DRESSING 1 teaspoon olive oil 2 spring onions, thinly sliced 2 long red chillies, deseeded, thinly sliced 2.5 cm piece of ginger, julienned

Brandied Oranges with Whipped Cream SERVES: 10 Ingredients 410 g caster sugar 1 cinnamon stick 10 oranges 4 tablespoons brandy 2 ½ tablespoons orange liqueur (such as Cointreau) whipped cream or coconut yoghurt, to serve

Method Place the sugar and cinnamon stick in a small saucepan, add 300 ml of water and stir over low heat until the sugar has dissolved. Increase the heat and boil for 2 minutes, then remove from the heat and allow to cool slightly. Remove the cinnamon stick. While the sugar syrup is cooling, get on with prepping your citrus. Peel the oranges, making sure you remove all the white pith (that stuff can really mess with the taste!) and thinly slice crossways. You can cut the oranges into segments if you like, but crossways is quicker and easier if this is your first crack. If there are any pips, remove them carefully. Transfer to a serving bowl. Pour the brandy, orange liqueur and sugar syrup over the prepared oranges and leave to sit for at least 30 minutes, although you can actually leave this overnight. Serve at room temperature with a generous dollop of whipped cream or coconut yoghurt.


Chaja Mess SERVES: 10-12

Ingredients 300 ml thickened cream, lightly whipped 2 store-bought sponge cakes, broken into large pieces (see tip) 400 g can dulce de leche 200 g salted roasted peanuts, chopped 2 x 400 g cans mango cheeks or slices (or use the cheeks from 2 large mangoes when in season) 4 large meringues (store bought are fine) freeze-dried raspberry powder, to serve (optional; see tip)

Method We are going to be constructing this dessert a bit like an Eton mess. You’ll need a large wooden board to assemble it on and a nice big serving spoon. Scoop up a heap of fluffy whipped cream and dollop it on your serving board. Place a few more dollops on the board, then get the back of your spoon and spread the cream out with some big firm whacks! Save the rest of the cream for later on. Arrange the pieces of sponge on top of the cream, then dollop on spoonfuls of dulce de leche, creating little caramel pockets. Scatter over the peanuts for some salt and crunch, then delicately lay the mango cheeks over the top. Top with dollops of the remaining cream, then crumble the meringues over to add some beautiful sweet crunch. For a lovely finishing touch, you can sprinkle a little freeze-dried raspberry powder over the top. Take to the table and serve. This is one of those desserts that will be remembered and recreated for years to come!

TIP: I often bake some of the sponge pieces in a 180°C oven for 10–15 minutes to give them a golden colour and a bit of firmness. When assembling this dessert, I find it looks better if you break the sponge into large portions instead of crumbling it into little pieces on the plate. Freeze-dried raspberry powder is available from gourmet food stores and some health food stores. 25

It’s important to take care of ourselves, mind, body and soul – so don’t forget to show some love to your finances too with these simple steps to money mastery.

Stay on track Relying on your memory can let you down (and you’re much more likely to downplay bigger impulse purchases that way), so keeping a diary will help keep you better manage and track your finances. The CommBank BillSense app, for example, is the perfect tool to support you day to day if you prefer to track on the move.

Slow and steady Having savings is great, but new clothes and meals out are great too! Strike a balance with your savings by putting away realistic amounts of money each week. Be in the know Create a habit of checking your bank balance twice a week. Habits are formed best when you do them at the same time of day (e.g. 7pm).
