2027 SPRING

EDITORIAL The most interesting stories often begin with a closer look. At the things we think we know, the things we are only just discovering, and the things that may not be around forever. This spring and summer, we start outside. Outdoor culture continues to reshape how we dress, travel, and spend our time. Gravel roads offer a different way to experience a landscape, while a single day on foot can still take us somewhere unexpected. And new materials are changing what performance clothing can do. From there, gestalten explores a world in motion. We enter Lisbon homes that reveal a disappearing domestic culture and encounter a new generation of designers redefining what makes an object worth collecting. We visit listening bars where listening to music becomes a shared ritual, follow makers bringing traditional skills into new contexts, and meet architects designing not simply on the land, but in response to it. Alongside what is emerging, we revisit enduring icons—from the Porsche 911 and Ford Bronco to the work of Stig Lindberg—to understand not only how they became part of our culture, but why they continue to evolve with it. Process matters, too: what happens when time, knowledge, material, and experimentation come together. It can be found in a slowly fermented pizza dough, in centuries-old Japanese techniques that continue to evolve, or in design that treats accident and imperfection as possibilities rather than mistakes. At Little Gestalten, curiosity gets to run a little wild. Children meet a skateboarding grandmother and a house that simply refuses to stop growing. They head into the mountains to discover what there is to see, hear, smell, taste, and forage, and turn yesterday’s trash into something entirely new. These are books about curiosity, imagination, and seeing the world differently. Across the season, new ideas meet old knowledge, familiar objects take on new meanings, and traditions find their way into unexpected places. That is where things get interesting. The best discoveries, after all, are the ones we didn’t know we were looking for. Iris Hempelmann Editorial Director, gestalten

Playful, timeless, and instantly recognizable, Stig Lindberg’s designs still embody the warmth and optimism of Scandinavian modernism. From iconic ceramics and textiles to illustration and everyday objects, Stig L. celebrates the remarkable breadth of his work. Rare archival material, interiors, and new photography reveal why his designs feel as fresh—and as desirable—today as they did decades ago.

Modern Life, Then and Now

The Gallery / Shapes

Where Eras Meet.

In the 1950s and 60s, Scandinavian design was shaped by a close relationship between function and beauty. Objects and interiors responded to the practicalities of modern life, but usefulness was rarely the only consideration. How something looked, felt, and contributed to everyday life mattered too. When Colorado was introduced at H55 in 1955, its simple geometric forms were enlivened by strong colors that could be combined in playful ways. Other services Lindberg presented at the exhibition reflected a broader shift in ideas about modern everyday life. The home was becoming simpler and more flexible: tableware could consist of fewer pieces, take up less space, and individual objects could serve multiple purposes. Lindberg was designing not only how modern life might look, but how it might be lived. Unckel House, designed by architect Adam Backström and completed in 1968, grew out of a similar idea of the modern home. More than half a century later, Emma Unckel and her family live within the same architecture, surrounded by design from both then and now. The Unckels had been actively looking for a house from this period, drawn to the clean lines and generous proportions of postwar Scandinavian architecture. But for Emma, the appeal of Scandinavian design has never been about the pale, restrained minimalism it is sometimes reduced to. She is drawn to something more expressive: intelligent,

functional design that leaves room for beauty, color, playfulness, and the unexpected. It is a quality she recognizes both in the house and in Lindberg’s work: function provides the foundation, but never determines the whole expression. The original floor plan reveals just how closely the house was organized around the life of its first owners. Designed partly for entertaining, it had sliding doors to separate different spaces and a laundry room beside the kitchen specifically for table linens. What is now the kitchen was originally divided into three rooms. Function is embedded throughout the architecture, but never at the expense of how the house looks and feels. The large open fireplace is perhaps the clearest example: a striking centerpiece of the living space, it is also built to be used from two sides, serving both the interior and the terrace outside. Here, function and aesthetics are not treated as separate concerns, but as part of the same idea. This thinking can also be seen in Lindberg’s Coq series, introduced in 1966. Made in ovenproof stoneware, the pieces were designed to go directly from oven to table, functioning as both cookware and serving dishes. Function was not separate from expression; it became part of it. When the Unckels began making changes, they wanted to preserve this distinctly 1960s character without turning the house into a period piece. Their approach was to modernize what had once been a modern house. The three rooms were opened up to create a kitchen suited to contemporary family life, while

From New York City apartments to tropical bungalows, rural cottages in the Northeast, Topanga cabin hideaways, converted surf vans, and eclectic beach houses of various architectural styles on coasts all over the world—this is where our favorite people in the creative surf community call home.

Surfing is a way of life that’s dominated by the tides as much as by day and night. And every surfer has their own retreat: a place to crash and relax away from the water or the daily grind. Individuals create these spaces to meet their needs—whether it’s a weekend bolt-hole beside the sea, a permanent base in the city, or something in between. Surf Shacks dips beneath the surface of these abodes and into the lives of their inhabitants: from a surfing legend with a mid-century modern bungalow in California and a board builder who resides in a converted bus, to a Japanese yoga instructor with a hideaway in the woods and a magazine founder who has settled in a 1920s home atop a cliff near Bondi Beach. Through personal anecdotes, in-depth interviews, and color-drenched photography this spirited compilation reveals not only the eclectic characters dedicated to both creativity and the cult of surfing but fresh forms of on-shore existence—as crafted by those who live and breathe the sea. The most inspiring contemporary houses begin not with the building, but with the place. Ground Rules gathers exceptional homes from around the world shaped by landscape, climate, materials, and local culture. From dramatic coastlines to remote terrain, these are houses conceived as part of their surroundings rather than imposed upon them— beautifully photographed and full of ideas for a more responsive way of living.

Casa Alférez • Ludwig Godefroy Architecture, Mexico

NOT HIDDEN IN THE FOREST, BUT SHAPED BY IT

Rather than disappearing into the landscape, Casa Alférez asserts a powerful presence whose form emerges from the site's slope, trees, humidity, and light. From a distance, Casa Alférez seems almost indifferent to its environment, but upon closer inspection, it becomes clear that every design choice originates in the surrounding forest. The pale concrete cube rises up among the tree trunks, its solidity and permanence softened by openings and projecting elements that suggest movement; the effect is to shift its presence from bunker to sculpture. Faced with a steep, damp, and densely wooded site in Mexico, architect Ludwig Godefroy chose not to reshape the terrain through extensive earthworks. Instead, he concentrated the entire program on a 30 × 30 ft (9 × 9 m) plot, elevating it to overcome the slope and protect the house from humidity. As a result, the 1,600 ft2 (150 m²) loft captures sunlight through the tree canopy while retaining its compact footprint on the sloping site. Although initially perceived as an autonomous object, the house gradually proves to be a direct response to the conditions of the forest. This strategy continues inside. The openings privilege fragments of pine trunks, sky, and shifting

light over conventional panoramic views. The ground floor, practically windowless, reinforces the feeling of refuge, while the upper spaces gradually open toward the forest canopy. At the center, a triple-height volume draws natural light from above, allowing changing weather and the movement of the sun to become part of the daily spatial experience. Throughout the day, light reveals the texture of the exposed concrete, making it one of the house’s most distinctive architectural elements. Exposed concrete defines the exterior as well as the interior, where its raw texture is balanced by wood flooring. The material extends beyond the structural framework to become furniture, shelving, tables, and beds, allowing the interior to feel carved from the same material rather than assembled from separate elements. The distinction between architecture and interior becomes deliberately blurred, giving the house a remarkable spatial consistency. Instead of blending into the landscape, Casa Alférez finds its place through response rather than resemblance. A rooftop terrace reaches into the tree canopy, the elevated living spaces follow the light, and the compact plan allows the house to adapt to the steep site without extensive reshaping of the natural terrain. The building belongs not because it imitates its surroundings, but because its form emerges from the conditions of the place.

The creation of a remarkable house is never just about the finished building. Surf House follows the design and construction of an extraordinary coastal home from the first sketches to its completion, revealing the ideas, challenges, and craftsmanship behind every decision. Richly illustrated with drawings, models, construction photography, and finished interiors, it offers a rare behind-the-scenes look at contemporary residential architecture in the making.

1.

At the heart of this tale about a serene, sophisticated family getaway in Santa Cruz, California, there’s a tree. Actually, a kind of tree—the Monterey cypress, a species native to the state’s central and northern coast. First, and most obviously, there’s the lovely specimen that presides over the home’s clifftop site, hovering above a stretch of world-class surf breaks and scenic beaches. And then there are the various cypresses that were marshaled into service by Feldman Architecture and AD100 firm Commune Design to construct the exterior and interior of the house. The story of how that wood was handled—from the way it was harvested to the myriad details of its fabrication—speaks to a profound reverence, shared by the homeowners and designers alike, for the rare beauty of the California landscape and its spiritual resonance. “Monterey cypress is about as local and native as it gets. In terms of materiality and vibe, the wood set the tone for the entire project,” says Jonathan Feldman, founder of the San Francisco-based architecture firm commissioned to create a weekend retreat for a Silicon Valley couple with two young daughters and long-standing ties to Santa Cruz, where the husband was raised and learned to surf. “The idea was to design something understated yet strong and refined, something that felt authentically of the land,” Feldman continues.

110

111

126

To that end, the cypress timbers were salvaged from naturally fallen trees by renowned California wood whisperer Evan Shively of Arborica, who collaborated closely with Feldman, his fellow partner in charge Christopher Kurrle, and Commune principal Roman Alonso. “Evan had a vision for using the wood holistically, from the really rough stuff to the really polished stuff, so we tried to minimize waste in every way possible. It became a very elaborate exercise in analytics, which dictated the module of the exterior and the size of the slats we used,” Kurrle explains. “Evan is truly a poet of wood,” he adds emphatically.

2.

The Australian water gum is adapted to coastal areas of the east coast of Australia and tolerates seasonal flooding. While the coastal area of Santa Cruz has a dry, summer climate, the soils are perched over sandstone where water moves through the soils throughout the year. The water gum is well adapted to this condition and thrives in the warm sun and coastal winds.

1. The board room opens onto an interior courtyard.

The composition of dwarf pittosporum, Cape rush, ground-covering manzanita, and silvery succulents is a riff on a Japanese coastal-plant palette, with mounding shrubs, wispy grasses, and coastal ground covers with contrasting foliage and seasonal flowering California poppies. The refined palette is distilled down to the fewest varieties to give the most potent visual effect.

The story of a house shaped by vision, landscape, and craft.

127

The honey-hued cypress utilized on the exterior was left untreated, allowing it to silver over time, while the color of the clear-coated interior wood will continue to intensify and warm as the years pass. “Respect for natural materials and finishes is a through line of this project,” Alonso notes. “There are soapstone counters, brass fixtures, and copper elements that will all change in appearance, especially in the salt air. They underscore the fact that this is living architecture, design with a soul, and it will grow and evolve.”

2. The kitchen, which extends out to the deck for alfresco cooking, has a Wolf range, Vola fixtures, soapstone counters, and BDDW stools.

Conceptually, the overarching conceit adopted by the design team was, in Alonso’s words, “a professor who surfs—something free-spirited yet intellectual, casual but fully considered.” Following that brief, a surf hut, outfitted with board storage and a wet bar for entertaining, balances the garage volume along the residence’s street-facing frontage. An interior courtyard separates those twin structures from the main house, which has guest quarters, a family room, and an open sweep of living, dining, and kitchen spaces looking out to the ocean on the first floor, with the master suite and children’s bedroom perched like a crow’s nest on the level above. “There’s a sense of decompression when you walk onto the property. You can feel your blood pressure drop. That’s followed by a swell of

Brazil Living

AN EXPLORATION OF ESSENCE

THE COLLECTOR’S OBSESSION EXPLAINED

THE RESIDENCES AND INTERIORS OF NEW TROPICALISM

The most compelling spaces and objects often leave room for us to notice more. The Art of Less profiles 20 contemporary artists, designers, and architects who use restraint to heighten our awareness of form, material, and space. Organized around five elements, it explores minimalism as both a way of seeing and a way of making.

Mid-century modern remains a fixture in contemporary interiors, its clean lines and playful forms still carrying the optimism of the postwar years. Yet designs once intended for everyday life have become coveted collectibles. Mid-Century Now explores why these objects still hold such appeal—and what our fascination with them says about the way we want to live today.

In Brazil, the boundary between indoors and out is often beautifully blurred. Brazil Living explores contemporary homes across the country, from urban apartments and seaside houses to rural retreats. Through their use of space and materials, these projects show how architects and residents are adapting Brazil’s modernist legacy to different landscapes and ways of life.

Pierre Chapo would listen to wood before working it. This French designer and cabinetmaker built solid, sincere, and genuine furniture with an almost archaic simplicity. He used no veneers, no coverings, and no materials that pretended to be something else. At a time when plastic and high-tech characterized cutting-edge design, this contrary stance was both courageous and honest. Chapo studied architecture in Paris and traveled extensively before deciding to work with his hands. His encounter with the American studio furniture movement and George Nakashima’s work strengthened his conviction that furniture can be a place of truth, if you let it. In the early 1960s, he settled in Gordes, a French village in Provence, where he set up his studio—away from the Parisian design circles and ideally suited to work that demanded introversion and silence. Chapo’s furniture was made almost exclusively from solid elm, a wood of extraordinary grain and character that he highlighted instead of toning down. His joints were made with wooden pegs, without metal fasteners and glue. The structure of each piece is almost always visible and part of its form. His S7 Chair, T21 Table, and his shelving systems all follow the same principles: clear geometry, honest material, a heaviness that anchors rather than crushes. There is great demand for Chapo’s work today, not out of a sense of nostalgia but because his pieces are an argument for quality that can be felt just be seeing it.

Alvar Aalto replaced the abstract view of humanity in classical Modernism with a practical one, and by doing so, he changed the way we think about architecture, furniture, and the relationship between body and space. Alvar Aalto is often read as a countermodel to the dogmatism of classical Modernism, and rightly so. While Le Corbusier and Mies van der Rohe conceived of an abstract and universal human being as the standard, Aalto was interested in real humans and their actual needs. He replaced tubular steel with wood not out of sentimental attachment to tradition but out of his belief in its function: metal was cold while wood was warm; the curve belonged to the body, the right angle to abstraction. This approach was developed in two of his early buildings that are considered among his most important works. The Paimio Sanatorium (1929–33) gave rise to the chair of the same name, which was designed as part of a therapeutic environment, with flexible birch plywood instead of a metal frame, because the body needs warmth. For the Viipuri Library (1927–35), which he set up along with his wife Aino Marsio, he created Stool 60, the first stackable three-legged stool made of bent wood, which is still being produced today by Artek, the company that Aalto cofounded in 1935. Not only are Aalto’s objects still being produced today but are also being discussed, restored, and recontextualized. Their survival is no coincidence but the result of a design philosophy that pursued permanence.

Recovering a modernist house through material expression

HENRYTIMI

This material-led renovation reveals the original language of a modernist house from the 1950s, reconnecting the home and its garden with the surrounding neighborhood.

Mid-century modern design is not just a style that you can purchase—it is a way of life. The collectors whose living spaces are the focus of this chapter

H U M A I TÁ , R I O D E JA N E I RO

are united by the belief that good design is timeless and enriches their lives. Their homes illustrate how form and function come together without competing with each other—whether in São Paulo, Paris, the Mantiqueira Mountains, or Helsingør. What unites them goes far beyond a style; above all, it is a mindset. A piece is chosen not because it is rare or valuable, but because it speaks a language that can be understood. Whether it be Alvar Aalto’s Tea Trolley, Hans Wegner’s Cigar Sofa, or Jean Prouvé’s Antony Chair, the effect produced by these objects differ with every interior, but they always make an impact—even when only their placement and viewing angle are Marche, Italy

changed. And the fact that mid-century modern design is still so exciting today is probably due to precisely

this diversity and its interplay with the present.

THE NEW CANADIAN CABIN

ARCHITECTURE FOR PEOPLE AND PLANET

Paulo Mendes da Rocha saw architecture as a way to shape public life. Through selected projects, this monograph explores how the Brazilian architect brought bold structural ideas together with a deep sense of social responsibility. Drawings, photographs, and insights into his creative process reveal the thinking behind a body of work that continues to speak to questions of sustainability and civic life.

The Canadian cabin has long been imagined as a simple escape into the wilderness. Northern Exposure looks beyond that familiar image to explore what the cabin has become: a place shaped as much by the desire to leave the city behind as by the practical demands of building in remote landscapes. Across diverse projects, the book reveals a contemporary take on the Canadian sublime.

Architecture today carries new responsibilities—to the climate, communities, and future generations. Build Up explores what it means to build with purpose. Drawing on Michael Green Architecture, it examines how design decisions shape long-term impact. Mass timber appears not as a trend but as enduring practice

Lowrider Origins

Beyond the Cars

This Harley-Davidson Road King was purchased by Josephine Trevino for her husband, Robert Trevino, who, with his son Robert Jr., began the three-year process of crafting it into the vicla (the term for a custom lowrider motorcycle) “La Charra.” In the tradition of many modern viclas, modifications included the extensive engraving and plating of numerous metal elements like the frame, headlight bezels, swing arms, forks, wheels, and engine. “La Charra” won Lowrider’s Lowrider Motorcycle of the Year award in both 2022 and 2023.

Porsche 911 The Making of a Cultural Myth

Editors: gestalten & Mikey Snelgar Features: Full color, hardcover, 240 pages, 21 × 26 cm 8 ¼ × 10 ¼ inches

For more than six decades, the Porsche 911 has been far more than a sports car. Its unmistakable silhouette, continuous technical evolution, and presence across motorsport, design, and popular culture have made it a global icon. This book tells the story of the 911 through the models, people, and moments that shaped its myth—and reveals why it continues to set the standard today.

1974 1989

 The models: the 911 Turbo (front), 911 Coupe (back), and 911 Carrera Targa (right) lined up in 1976.

THE G MODEL TRIAL BY FIRE

The early 1970s marked a period of managerial rejuvenation for Porsche. Engine wizard Dr. Ernst Fuhrmann became the first CEO of Porsche AG after the company reorganized into a public limited corporation in 1972, while the Porsche family took a step back from operational control. Father-son infighting prompted Butzi’s departure, and the 911 designer left to found Porsche Design in 1972.

76

Fortunately, his successor was already waiting in the wings. Anatole “Tony” Lapine—a Latvian-born automotive designer— first apprenticed in Detroit, then entered General Motors’ advanced body engineering department from 1952. In 1965, he returned to Germany to head Opel’s Research Center before joining Porsche to run their styling department—Style Porsche—from April 15th, 1969. Although already a decade old, the platform laid out by the F-Series clearly possessed potential for further development. The 911 was in good hands; Lapine personally styled the accordion bumpers and impact surfaces of 1974’s incoming G-Series, opting to leave the rest of the shell largely untouched. Compared to the chrome-trimmed elegance of the F-Series, the G-Series had gained a more muscular stance, with its prominent bumpers jutting outwards to add 144 mm to the car’s length. This wasn’t Lapine merely exerting his influence as the new design head-honcho; the 911 was metamorphosing to adapt to its biggest market, the United States, which already accounted for half of 911 sales 1974 – 1989

Few cars have captivated generations quite like the Porsche 911.

FROM WORKHORSE TO CULTURAL OBJECT: THE LAND ROVER AS DESIGN ICON

CARS AND CULTURE OF THE ’80S AND ’90S

RESTOMODS AND ICONIC AUTOMOBILES REIMAGINED

Few vehicles have traveled as far in the cultural imagination as the Land Rover. Once a utilitarian workhorse, it is now a revered design icon. LAND explores this evolution through bespoke restorations and conceptual reworks worldwide, examining how function becomes form and a tool becomes creative intent.

Sharp angles, low profiles, and a taste for excess: cars of the 1980s and ’90s were designed to make an impression. Created in collaboration with the Petersen Automotive Museum, this book revisits an era of wedge shaped silhouettes and turbocharged ambition. Archival photographs and commentary capture the designs and ideas that made speed a statement of style.

What if a classic car could drive as well as it looks? Restomods preserve the character of vintage models while reworking their mechanics and performance for today. Drive Different explores the craft behind these one of a kind builds and the people who create them, capturing the appeal of a car that feels both familiar and entirely new.

1983 Ford Probe IV

Top Speed N/A Horsepower 122

The Probe IV achieved its aerodynamic efficiency with features like wheel shrouds, covered headlights, concealed windshield wipers, and a streamlined nose with no cooling apertures. The radiator and air-conditioning condenser are housed in the rear of the car, with air-intake vents behind the rear wheel-well openings. It also has a front air dam that automatically lowers while driving to control airflow under the vehicle. These and other elements combined to give the functional concept an incredibly low drag coefficient of 0.15, which Ford advertised as roughly the same as an F-16 fighter jet.

rriving in 1978 and breaking speed records in 1980, the William Towns–designed Aston Martin Bulldog was a wedge-shaped concept car like no other, yet for nearly half a century it remained hidden away from the public eye. That is, until 2020, when Richard Gauntlett—son of Victor Gauntlett, who acted as Executive Chairman of Aston Martin between 1981 and 1991 and pulled the company back from the financial brink—partnered with its new owner, Phillip Sarofim, to fully restore this legendary concept car. Their end goal? To finally hit the 200-mph (322-km / h) top speed the Bulldog had always promised to achieve. We caught up with Richard to understand the backstory behind this groundbreaking machine. “It’s a true underdog story. What you have here is what some people

isi Ezerioha is somewhat of a celebrity in the Los Angeles tuning scene. He first gained notoriety for his ballistic-tuned Hondas—which include a 1,000-horsepower Odyssey minivan—and more recently for his unhinged Porsches, but the story of how he first entered the tuning scene is even more fascinating. Born into a family of scientists in Nigeria, Bisi had a mechanical obsession from a young age. While most parents would deter youngsters from taking apart bits of technology, his geologist father and biochemist mother encouraged it, on the condition that he would reassemble everything afterward. As he matured, this curiosity developed into an affinity for the sciences, with Bisi skipping grades and even

consider to be the world’s first hypercar,” Richard explains. “I think that’s a really interesting idea, because how does one define a hypercar? In basic terms, it seems to be when supercars jump a percentage higher in performance and technology than anything else available. This car did 192 mph [309 km / h], in-period, at the MIRA test track in Nuneaton in 1980—with two people on board.” That—192 mph (309 km / h)—is truly an astonishing figure, especially when you take into account the performance of other supercars at the time. Richard is quick to agree. “Now, I think that’s pretty interesting, because you could say, ‘Countach, what Countach?’ At the time, you had journalists getting 170, maybe 180 mph out of the Countach. Let’s say that it was 170—in percentage terms (bearing in mind we know how much more force

passing his A-Level exams at just 14. With his parents’ permission, he then headed to the United States to study engineering in college. His parents were unable to accompany him, but his father got in touch with some old friends living in what he remembered, after a visit in the 1960s, as a lovely small city outside of Los Angeles. As it turned out, by the time Bisi touched down at L. A. International Airport in 1989, Compton was grappling with the effects of a shrinking tax base, municipal neglect, high crime rates, and the permeation of street gangs. His strategy was to take what he learned studying engineering by day and apply it within the illegal street racing culture that thrived by night. “That’s how I got the nickname ‘Bisimoto,’ from street-racing,” he tells us. “Unlike today,

GRAND TRAIN TRAVELS

LIFE AND CULTURE BEYOND THE METROPOLIS

TRADITIONAL SPAS AND NATURAL BATHING CULTURE

There is a particular pleasure in watching the landscape unfold from a train window. Velvet Rails follows selected long-distance routes, exploring how design, comfort, and hospitality shape the journey. Through the trains and the places they connect, it invites us to slow down and enjoy the time spent in between.

Moving away from familiar cityscapes and clichés, this book drifts through Japan’s smaller towns and rural regions. It follows the rhythm of seasons, festivals, workshops, and homes shaped by everyday life. What emerges is an open portrait of rural Japan—an ongoing approach to places in transition, marked by daily routines, quiet creativity, and enduring persistence.

Rooted in centuries-old traditions, Japan’s onsens and ryokans are living expressions of harmony where nature, design, and spirit converge. Onsen and Ryokan of Japan reveals their architectural elegance, cultural depth, and rituals, exploring how these retreats balance heritage with modernity and contemplative living.

Unkompress opened in Kreuzberg in 2023, founded by Kevin Rodriguez as a small space for shared listening, music and drinks. Japanese listening rooms was one reference, but the concept was shaped into something more informal and open to Berlin’s ever evolving mix of scenes and communities. The room is deliberately designed in a ope floor lay out supporting the listening experience - wooden tables sit around an open floor, facing a vinyl play back system built around Klipschhorn speakers and tube amplification, and Berlins very own Resor Electronics analogue rotary mixer. The usual division between bartender and customer is reduced, making the space feel closer to being hosted in someone’s home. Music ranges from jazz, soul and funk to ambient, Balearic, dub and electronic music. Often a whole album, or an entire side, is allowed to play rather than being quickly mixed into the next record. Sunday sessions take this further, creating time for people to sit together and hear an album from beginning to end.

Spiritland opened in King’s Cross in 2016 with the idea that music should shape the room rather than simply sit in the background. Founder Paul Noble drew on the culture of Japanese listening bars, adapting the idea for London with a broader musical programme and a more open, social setting. The space moves between café, restaurant, bar and listening room throughout the day. At its centre is a bespoke Living Voice sound system, designed as part of the interior rather than added afterwards. The speakers have a strong physical presence, but the room does not feel like a club. Another unique element of the Spiritland set up is a custom Isonoe mixer made from solid brass, where every touch leaves a lasting imprint as part of the story. Programming ranges from jazz, soul and funk to electronic music, folk and pop. There are guest selectors, album listening sessions, album launches, label talks and broadcasts, alongside the regular daily programme. Spiritland helped establish hi-fi listening as part of London’s hospitality culture, striking the balance between intentional listening and high clarity playbacks and hospitality.

PORTRAITS OF THE MODERN GENTLEPERSON

MALE MAKEUP AND IDENTITY THROUGH TIME

KARIM RASHID & THE JOY OF DESIGN

What does it mean to be a dandy today? Continuing the journey begun in I Am Dandy and We Are Dandy, They Are Dandy meets people who make style their own. Carefully composed portraits place them in their homes, studios, and public spaces, while in-depth stories explore the lives behind the looks. Together, they reveal dandyism as a way of living that continues to evolve.

As masculinity is redefined and the male beauty market surges, Warpaint reflects on appearance as both conformity and resistance. With imagery and incisive commentary by Josh Sims, the book reframes makeup as ritual, rebellion, and belonging.

For Karim Rashid, design is an act of optimism. His fluid forms and saturated colors bring a sense of possibility to everyday objects, while his belief in beauty for everyone continues to drive his work. Through the ideas behind his≈designs, this book explores an expressive, human approach to making things—and why it resonates today.

akeup has always been as subject to fashion trends as clothing, most notably for women, of course. A brief survey of the 20th century, the early decades of which saw the wearing of makeup by women go mainstream for the first time, shows how different styles were dominant at different times: from the blush and pencillined eyebrows of the 1920s to the red-lipsticked pin-up style of the 1940s; from the winged “cat eyes” of the 1950s to the long lashes and heavy mascara of the 1960s; from the back-to-the-earth naturalism of the 1970s to the color explosion of the 1980s; and so on. These broad fashions would pass most men by. Indeed, if men had a route into makeup through fashion, it invariably existed not through the prevailing culture but through the underground—subcultures described as alternative precisely because they cut against convention, provoking tut-tuts and raised eyebrows. But it wasn’t just their penchant for the experimental or avant-garde that set these subcultures apart. In being focused around certain venues—from coffee houses in mid-18th-century London (sometimes called “penny universities” for providing men from various walks of life the chance to meet) to club nights in run-down parts of the city (where low rents reduced barriers to launching such events), from grimy gigs to the swanky bars of any late 20th-century metropolis—these subcultures created safe spaces in which those

Visible Defiance Makeup and Queer Resistance

T

he perception of makeup on men as “homosexual,” “perverted,” or “fetishist” has long been a pervasive trope. From its association with ineffectiveness, weakness, even psychopathy and evil, effeminacy in men has a history of being demonized as the antithesis to normal. “Boys were right in assuming that they were being condemned for their effeminacy,” as Quentin Crisp wrote in his memoir The Naked Civil Servant (1968), noting how gay men were targeted by the police and courts for the way they seemed. But the wearing of makeup also provided an opportunity: members of the gay and trans communities could paint their faces not simply as a means of facial decoration but as an expression of identity, protest, and resistance. Much as women today might choose to break enforced beauty standards by choosing not to wear makeup—again, something often regarded as somehow unconventional—so, historically, could the queer community kick against the system by wearing it. Take the situation in New York in the years preceding the Stonewall riots of 1969, a series of spontaneous demonstrations against a police raid that took place that year at the Stonewall Inn, a gay bar in Greenwich Village, and a seminal moment in the gay rights movement in the United States and beyond. Akin to the molly-houses of 18th-century England, where queer people gathered covertly, often exploring clothing and makeup ascribed to another gender, certain cafés in 1930s and ’40s New York became magnets for queer New Yorkers who enjoyed wearing makeup and / or dressing up as the opposite gender—many proudly wearing the label of drag king or drag queen. A number of these early drag artists, including the iconic gay-rights activist Sylvia Rivera, would later identify as transgender and are widely seen as pioneers of the modern trans rights movement. These taboo-bursting spaces were celebrated by many for their creativity, inclusivity, and free-spiritedness, and some grew so popular they turned into tourist attractions of sorts. But such openness was increasingly suppressed. Through the 1960s, the police began to enforce a New York law dating back to the 1840s (introduced then without makeup in mind) that made it illegal, with some exceptions, for anyone to go “masked or in any manner disguised by unusual or unnatural attire or facial alteration.” Police guidelines also targeted those wearing clothes not “appropriate to their sex.” In short, to be non–gender conforming in dress or makeup was to risk the attention of the authorities. But that also meant that the wearing of makeup by gay and gender-non-conforming individuals became—as it long had been, but now more emphatically—for some a means to recognize each other and create relatively safe sanctuaries in which to congregate. It was, in part, through the wearing of makeup that bouncers

How British footwear brand Dr. Martens came to be is a tale of international collaboration in a ravaged postwar Europe. The story begins in 1945, when a German army doctor named Klaus Märtens hurt his ankle skiing, right at the close of the Second World War. Due to his injury, Märtens found his standard-issue army boots too uncomfortable to wear during recovery. This led him to create an air-cushioned boot sole that delivered both stability and comfort. In the weeks that followed, Märtens developed a boot prototype with whatever materials he could find, using a salvaged cobbler’s last (a foot-shaped form) to mold the shoes and truck-tire scraps for cushioning. Two years later, Märtens teamed up with his college friend Herbert Funck to produce a commercial version using discarded rubber shaped by molds. The comfortable boot slowly took off in Germany, and by 1959 they had enough money in the coffers to start marketing their boots abroad. Cue the British connection. In Northamptonshire, the English “shoe belt,” the Griggs family operated a footwear factory in the small town of Wollaston, making sturdy work boots. Bill Griggs, the third generation of the family to run the business, spotted an ad for the German boots in a magazine. Griggs reached out, and the two companies struck an exclusive licensing deal to produce the boots together. Griggs made a few changes to the German boot, including an altered heel, a bulbous but simple upper, a distinctive, yellow welt stitch, a grooved sole edge, and a unique sole pattern. The debut eight-hole boot (style 1460) dropped on April 1, 1960, and the world-famous Dr. Martens boot was born. Before partnering with Märtens, the Griggs family produced rugged, steel-toe-cap boots built for hard industrial labor. Märtens and Funck, on the other hand, had gone in a different direction, prioritizing comfort: their sole system was all about making the experience for the wearer more enjoyable. When Dr. Martens combined these two elements, the result was a dependable safety boot that was also pleasant to wear— perfect for postal workers or any other profession that kept you on your feet all day. At one point, Dr. Martens even supplied the British postal office, Royal Mail, with shoes and boots as part of its official uniform. Over the years, the boots have built a loyal following that extends well beyond mail routes and industrial shop floors. Early fans came from Britain’s underground scenes, where the boots became part of an antiestablishment uniform. Ska-loving skinheads, punks, rockers, and goths all embraced the attitude and energy of Dr. Martens and made them their own. Bands like The Who, The Sex Pistols, The Clash, and Madness wore them on stage, and so did the fans watching from the pit. Today, Dr. Martens’s London HQ is located in Camden Town, the spiritual home of punk, which feels like a full-circle moment. But equally important, postal workers all over the world are still making their rounds in their Docs—less for their association with punk and more because of their comfortable workwear credentials.

trousers, boxy polos, tees declaring “Golf Student in Session” or “Emotional Support Golfer.” Humor becomes its honesty. “If you feel great about the way you look and feel, you’ve already won—no matter your score,” Huynh says. Beneath the wit lies reverence: tailored cuts, nostalgic palettes, and subtle nods to school uniforms and tournament formality. Each collection—Summer School, Emotionally Attached, Reading the Room—is like an informal lesson in self-expression. Its insignia, the ± symbol, distills the philosophy: “It’s about what you give and take from the game,” he explains. “If someone teaches you, pass it on. Be the best ambassador you can. We’re all students.” Students Golf has become part of golf’s broader cultural awakening—a signal that the game now belongs to more than the elite few. Its following spans fashion insiders and weekend players alike, drawn to its invitation to embrace imperfection. Huynh’s story mirrors theirs: a rediscovery of calm, one swing at a time. Because here, no one graduates. Every round is a new lesson, every mistake a study in grace. Students Golf isn’t about mastery—it’s about motion, resilience, and the stubborn act of coming back for more.

Golf is a strange teacher—calm when you arrive, tense the moment you start to swing. Beneath the manicured surfaces lives a kind of chaos: frustration, obsession, humiliation. That tension is where Michael Huynh found himself—and where Students Golf was born. Huynh came to golf via streetwear rather than country clubs. Years earlier, he had built Publish, a label that helped define a decade of menswear. Then came burnout. His body gave in under pressure, and a doctor prescribed something unexpected: golf. At first, he laughed. “Golf? Who the heck wants to chase a white ball for five hours?” But one swing changed everything. The rhythm, the silence, the discipline—it became therapy. “Golf saved my life,” he says. “It taught me to control my emotions. The game doesn’t care where you come from—we’re all playing the same game.” From that recovery came a vow: if he ever designed again, it would be for joy, not ego. Students Golf became his second act—a reminder that golf, like life, is a humbling journey. “No matter how good you are, you’re still learning—about the game, your body, your temperament,” he reflects. “As you age, your game changes, too. We’re always adapting.” The brand’s visual language turns the traditional uniform on its head: cropped

Advertising borrowed its visual grammar from art. Ornamental Conifer is borrowing it back. British artist Nicolai Sclater, known as Ornamental Conifer, has built an unmistakable visual language across cars, motorcycles, objects, clothing, and spaces. At its heart is the hand-painted word: witty, optimistic, and unmistakably human. From automotive culture to fashion and design, this first monograph celebrates a practice that moves freely between art, craft, typography, and contemporary culture.

Typography, optimism, and the art of reclaiming the language of advertising.

Rough edges, handmade textures, and deliberate imperfections have become one of the defining aesthetics of contemporary graphic design. But where did this visual language come from? Drawing on two decades of work by Monster Children and creative director Campbell Milligan, Misprint traces the rise of an influential graphic culture shaped by experimentation, intuition, and the courage to embrace mistakes. A compelling visual history of design beyond perfection.

Not the flashy intentional rebellion, the silent, accidental kind. The happy accident. The ink that bleeds just past the edge. The letter that sits a fraction too low. The scanner that caught paint or a fingerprint. Those tiny misfires remind us that something real passed through human hands on its way to the page.

A studio set-up in Sydney. 2012

It honours design that preserves the distortion in the line, that leans into the happy chaos of letterpress, Letraset, photocopy, and hand-drawn type. Who understand that a slight misregister or an uneven pencil ine isn’t a flaw, it’s character. It’s evidence that a living person stoo d at a press or a drawing board and let the material speak back.

Misprint isn’t about rejecting technology. It’s about refusing to let it sterilise the soul of the work. In a world flooded with artificial perfection, the analogue mistake has become radical again. It reconnects us to the messy, unpredictable of making. So let the pages smudge. Let the colours slip. In an era of flawless vectors and infinite undos, joy we’ve built a design culture that fears imperfection. Let the imperfections shout. They’re not errors. They’re the signature of someEverything is nudged, aligned, colour-corrected one who cared enough to let it be human. to within a point. The result is technically perfect and emotionally flat. It looks like no one was ever there. But the best design still carries breath. It has temperature. It feels made, not generated.

GREAT NORTHERN BEAN

KIDNEY BEAN

Simmered in rustic stews or baked under a dark red crust, this medium-sized legume brings subtle creaminess to tables across continents.

APPEARANCE Pale white to light ivory, medium-sized, and slightly oval. TASTE AND TEXTURE Mild, neutral flavor with a creamy texture that holds its shape well during cooking.

Simmering alongside a smoked ham hock, onions, carrots, and thyme, great northern beans form the soul of classic American ham and bean soup. They lend firm substance to white bean chicken chili brightened with lime and fresh cilantro, just as they melt into frijoles blancos guisados—a thick Spanish and Latin American stew rich with paprika, tomatoes, and chorizo. In North Africa and the Middle East, the same mild beans soak up cumin, ginger, and olive oil in loubia, eaten hot with crusty bread. They step in seamlessly for traditional tetovec beans in the North Macedonian tavče gravče, baking in a traditional clay tavče until a savory crust forms over sautéed peppers, smoked sausage, and spices, or anchoring pasulj, the rustic winter stew beloved across Serbia, Bosnia, and Croatia.

Simmered for hours alongside smoked meats or steeped in spiced coconut milk, the kidney bean anchors some of the world's most comforting stew pots. In northern India’s rajma, the beans soften in a fragrant base of onions, tomatoes, ginger, and garlic spiced with cumin, turmeric, and garam masala. Iranian cooks slow-cook them with meat, bitter limoo amani (dried lime), and a forest of sautéed herbs for ghormeh sabzi. Across the Atlantic, they sink into Tex-Mex chili con carne, Jamaican stew peas thickened with spinners and Scotch bonnet chiles, and New Orleans red beans and rice layered with smoked pork or andouille. In Portugal, they cook straight alongside rice, tomatoes, and chouriço in arroz de feijão. Cold in bright salads or hot in bubbling broths, their firm skin keeps them intact through long, gentle heat.

GOOD TO KNOW

GOOD TO KNOW

Great northern beans are the ultimate chameleon for any recipe calling for unspecified white beans, retaining their distinct shape while adding body to soups and stews. Their name traces back to the Great Northern Railway, which distributed the variety across the northern United States.

Raw and undercooked kidney beans contain dangerously high levels of toxic lectins, which can cause severe food poisoning. Simply simmering them or cooking them in a slow cooker below 212°F (100°C) actually increases toxicity by releasing lectins without destroying them. Always boil dried kidney beans vigorously to neutralize the toxins. Never eat them raw or sprouted. Note that cooked beans easily stain other ingredients, so cook and rinse them separately before combining.

APPEARANCE Kidney-shaped seeds in dark reddish-brown, light red, white, or marbled hues. TASTE AND TEXTURE Mild and subtly sweet flavor with a floury interior and a firm skin that holds its shape.

Canning isn’t rocket science, but you should follow certain procedures and rules to ensure that the freshly picked produce that goes into your jars lasts through winter. Blood oranges are a family favourite

Which fruit and vegetables are suitable for canning? Not every fruit and vegetable can be canned. Structure and ripeness are important, and the best ones to choose are produce grown in your own garden or sourced from local organic farmers. • For compotes: Ripe but firm fruit that contains little water holds its shape best. Whole fruit and vegetables (such as plums, raspberries, and cherries) or larger pieces (such as peaches, pears, and pumpkin / winter squash) also work well. • Very ripe, soft fruit is better suited to making sauces and purees, jams, jellies, and fruit spreads, because they break down easily when cooked. Fruit that contains large amounts of pectin (such as apples, citrus fruit, apricots, currants, and gooseberries) provide the desired gel-like structure. Less ripe fruit also contains more pectin. • Fruit with a higher sugar content that can be cooked for a long time without losing its typical flavor (such as apples, pears, and plums) is suitable for fruit butters and chutneys.

Hopper the chihuahua has his eyes on the prize – of pudding

• For syrups, juices, and vinegars, use ripe, succulent fruit with an intense flavor and easy-to-extract juice (such as strawberries, raspberries, blackberries, blueberries, and sour cherries). You can also add aromatic herbs, such as lemon balm, mint, thyme, rosemary, and sage. • Firm, crunchy fruit and vegetables with a fine skin should be used for pickling and fermenting, because they will keep their shape. • Herbs and leafy vegetables are suitable for pestos and infused oils. These include basil, parsley, arugula (rocket), and wild garlic. • Note: All rotten or moldy fruit and vegetables must be discarded, or the preserved goods will quickly spoil.

Sour cherry liqueur is merely the high note – the gimlets are really powered by Stauffenberg gin

INGREDIENTS F O R T H E G A Z PAC H O

14 oz. (400 g) fresh ripe tomatoes, roughly diced 1 small red bell pepper, deseeded and roughly diced 1 small garlic clove, grated 1 small peperoncino, crushed salt, pepper a drizzle of olive oil a few torn basil leaves F O R T H E B R I WA T S

In the sizzling days of summer, it feels like one dinner out of two ends up being a gazpacho. Not much can compete with it: it allows the pure taste of the tomatoes to shine, it’s refreshing, requires no cooking, and is put together in minutes. It’s a pure seasonal treat, something you can and want to make only at that precise moment in time. The variation that I prefer involves sweet red bell pepper, which brings a velvety texture and an enticing reddish-pink color to it. I like to balance the freshness of the gazpacho by pairing it with something salty, dense, and crunchy. On most days, Manchego on rustic bread is enough, but when I can muster a bit of courage, I cook these crunchy brick dumplings. The idea of making briwats comes from Morocco (similar brick dumplings exist all over the Middle East), but the filling here is more Italian inspired. First make the gazpacho. In a large mixing bowl, use a hand blender to blend the tomatoes, bell pepper, garlic, and peperoncino until smooth. Salt and pepper to taste. Wait until serving to add the olive oil and basil. Put the bowl in the fridge while you prepare the briwats. Grate the zucchini in a strainer, add two pinches of salt, and leave it to drain for a few minutes.

(M A K ES 8)

1 small zucchini 6 tbsp. olive oil a dozen sage leaves, chopped 4 oz. (115 g) fresh brousse or ricotta 1 garlic clove, grated ½ tsp. lemon zest 4 brick pastry circles (12 in./30 cm wide)

Heat up 2 tablespoons of olive oil in a non-stick pan (the same you’ll use to fry the briwats) and fry the sage leaves for a few minutes, until slightly golden and crispy. Put in a bowl to stop the cooking while you prepare the rest. Don’t wash the pan, you’ll use it later. Press the zucchini in the strainer to remove as much liquid as you can. Transfer to a mixing bowl with the brousse, garlic, lemon zest, and black pepper. Mix well with a fork. Cut your brick circles in half with a pair of scissors. Put a small tablespoon of the brousse mix in one corner and fold the circle over itself to form a triangular dumpling. Put it on a plate and make the 7 others in the same way. Heat up your pan on high heat, add the remaining 4 tablespoons of olive oil and quickly put your briwats to fry (watch out for the hot oil). Wait until they’re light brown before flipping them. Fry them for 3–4 minutes on each side, lowering the heat if they color too fast. Once ready, drain on paper towels before dividing them between two small serving plates. Pour the gazpacho into bowls, top with a drizzle of olive oil and a few torn basil leaves.

As a rule, I try to keep tomatoes out of the fridge, but in this case, putting them in the fridge a few hours beforehand will ensure your gazpacho is cold right away. If you haven’t planned ahead, you can drop a few ice cubes into it before serving—just don’t wait too long before eating! The classic method would be to do the gazpacho ahead of time and then put it in the fridge, but I feel too much planning ahead goes against the carefree nature of a good summer meal.

Afternoon respite

Pick a small, fresh zucchini for this. Bigger ones will tend to have more seeds and be more watery. Folding the brick pastry in triangles is relatively easy, but if you don’t do it often it’s perfectly normal that the first ones turn out a bit wonky. The good news is that no matter how imperfect, they will still taste good. Don’t put in too much filling and you’ll be fine.

DESIGNING BAKERIES FOR TASTE AND SPACE

RECIPES AND STORIES FROM GEORGIA: A CULINARY ROADTRIP

VEGETARIAN RECIPES INSPIRES BY GREAT PAINTINGS

A global journey into the new wave of bakeries, from minimalist Japanese micro-shops to Nordic sourdough labs, Parisian pâtisserie temples, and Mexico City hubs. Baked In reveals how design, craft, and community meet where bread becomes culture. With striking photography and voices from the bakers shaping them.

To understand Georgia, pull up a chair. In Of Soil & Smoke, 2019 MasterChef winner Ia Dzagania travels through the country’s regions, gathering recipes and stories from the people she meets. Part cookbook, part travelogue, the book pairs vivid photography with an intimate portrait of Georgian food and hospitality.

What once appeared carefully arranged on canvas—vegetables, fruit, bread, and everyday meals—sparks modern recipes guided by taste, intuition, and practicality rather than visual reconstruction. Featuring around 70 artworks and 70 vegetarian dishes, the book invites readers to cook with art in mind, creating a striking, giftable crossover between art book and cookbook.

9 783967 042467 ARTICHOKE CAPONATA Serves 4

Ingredients

9–10 baby artichokes 1 lemon, cut in half

4 tbsp extra virgin olive oil

Caponata is one of Sicily’s most famous dishes. It is usually made with fried eggplant but it can also be made with other vegetables like celery, artichokes, cardoons, or wild fennel. In this recipe it is prepared with sliced artichoke bottoms that have been fried in olive oil, then simmered in a delicious sweet-and-sour tomato sauce with green olives, capers, and pine nuts.

Mix water and yeast in a large bowl and set aside to activate for 5 minutes. Add flour, salt, and olive oil. Knead until the dough is smooth and elastic. Cover and let rise for 1 ½–2 hours, or until doubled in size. Preheat the oven to 475 °F–485 °F (240 °C–250 °C).

1 medium onion, finely chopped 1 celery stalk, trimmed and cut into small dice 7 oz (200 g) canned plum tomatoes, forced through a strainer or pureed in a food processor ½ cup (75 g) green olives, pitted and sliced

Mix cheese with ground millet and form 3 equal balls, each weighing 9 –10 ½ oz (250–300 g) for the filling. Divide dough into three equal portions, each weighing 9 oz (250 g), and shape into balls. Roll out each dough ball into a circle, add a portion of the filling, seal into a pouch, and gently flatten into an 8 ½–10-inch (22–26 cm) circle. Bake the flatbreads for 12–15 minutes, or until golden and bubbling.

½ cup (100 g) ground millet (petvi)

Trim the stalks of the artichokes and remove the leaves and chokes. Rub the remaining hearts with lemon to prevent them turning black. Cut in halves or quarters and then slice fairly thinly.

2–3 tbsp well-rinsed salted capers,

Heat half of the olive oil in a heavy skillet and add the artichokes. Cook over a moderate heat for 2 minutes, then add a few tablespoons of water. Cover and simmer for 15 minutes or until tender, stirring from time to time so they cook evenly.

3 tbsp pine nuts, lightly toasted

to taste 3–4 tbsp white wine vinegar, to taste 2 tsp sugar

Meanwhile, heat the remaining olive oil in another skillet and add the onion and celery. Cook over a moderate heat until just tender, stirring from time to time so they cook evenly. Add the tomato puree and continue to cook for 8–10 minutes or until the sauce is thickened. Add the artichokes, olives, capers, vinegar, and sugar and continue to cook for a few more minutes to blend the flavors. Sprinkle with pine nuts and serve at room temperature.

wood, concrete, terracotta-colored tiles, and terrazzo—were inspired by Brazon’s interest in the minimalist aesthetic of Scandinavian baking culture. Specialty breads like the Canilla sourdough baguette are stacked on wooden counter shelving, and the wider menu serves French and Venezuelan classic breakfasts and locally inspired pastries like apple turnovers, cachitos, bourekas, and guava-cheese danishes. Charming, unpretentious, and expressive, Caracas Bakery is a neighborhood gathering spot that relishes the rituals of sharing good food with family, friends, and fellow Miamians. Nurturing an urban culture for bread that is both lively and at ease—rather than rushed and transactional—each location radiates the kind of joy the original bakery was founded on.

PUMPKIN FLOWERS STUFFED WITH SPINACH AND RICOTTA Serves 4–5

Wine Cult ure

Ingredients 12–15 pumpkin or squash flowers Olive oil for brushing For the filling: 5 oz (150 g) spinach 1 tbsp butter 1 cup (250 g) ricotta, well drained

In this recipe from Piedmont, pumpkin flowers are stuffed with a mixture of spinach, ricotta, egg yolk, and grated cheese, brushed with olive oil, sprinkled with more cheese, and baked in the oven till golden. They make a delicious appetizer or light main course. You can serve them on their own or with a simple tomato sauce on the side.

1 egg yolk ½ cup (50 g) freshly grated Grana Padano or Parmesan cheese A grating of nutmeg Salt Freshly ground black pepper

Wash the flowers and cut away the pistils with kitchen scissors. To make the filling, wash the spinach and cook in a covered saucepan for 5–7 minutes or until tender. The water clinging to the leaves is sufficient to prevent burning. Drain well and chop coarsely. Melt the butter in a heavy frying pan and add the spinach. Simmer for a few minutes.

Push the ricotta through a strainer into a mixing bowl. Add the spinach, egg yolk, and half of the grated cheese and mix well. Season with nutmeg, salt, and black pepper. Spoon a little of the mixture into each squash flower. You can use a piping bag if you like. Close the ends of the flowers by twisting them with your fingers. Arrange the flowers side by side in a single layer in the bottom of a well-oiled, shallow baking dish. Brush lightly with olive oil and sprinkle with the remaining grated cheese. Bake in a preheated (350 °F / 180 °C / Gas Mark 4) oven for 20 minutes or until the tops are golden. Serve hot.
