WINE AND SPIRITS In this issue of Gen de Art magazine, we meet a variety of talented craftsmen producing

some of the world’s most exclusive wines and spirits. As per tradition, we start our journey

in France where we visit Domaine Leflaive in Burgundy where we speak with the head of the estate about the long-standing traditions of Leflaive winemaking. Then, we move to Domaine

Jacques-Frédéric Mugnier located in Burgundy’s most famous Côte de Nuit region to ask its

legendary winemaker Frédéric Mugnier about the complex portfolio of its wines produced in small communes across the territory. In Napa Valley, we visit BOND, founded by the creators of the internationally recognised Harlan Estate, known for its diverse wines made from grapes cultivated in five distinct Grand Cru vineyards across the region. Finally, we converse

with Kazuto Hombo, the president of Hombo Shuzo Co., Ltd., about the philosophy and craftsmanship of its globally acclaimed spirits.

How Domaine Leflaive’s wine brings people together

The valleys and slopes of Burgundy in eastern France produce some of the most famous wines in the world. But no history is more intertwined with the region and its terroirs than that of Domaine Leflaive. The family’s establishment in Puligny-Montrachet dates back to 1717, and the estate itself was created by Joseph Leflaive in the turn of the 20th century, with its legacy passed on through the family lineage.

Mr. Brice de La Morandiere is the fourth generation of his family to manage the estate and create its renowned wine. Now, he is following the estate’s traditions of working in concert with nature, while harnessing new techniques to ensure every bottle is its own unique work of living art.

MELDING NEW TECHNOLOGIES WITH OLD TECHNIQUES At Domaine Leflaive, traditional winemaking processes don’t have to stand in conflict with more experimental approaches. Both the rhythms of nature and promising technologies play a crucial role in the winemaking process, and this thoughtful combination of history and modernity is what makes their wine stand apart.

‘It's very important to respect the tradition but even more important to understand why it is the way it is,’ de La Morandiere says. While science can be beneficial, ‘you always want to ask yourself whether those new technologies, new science, new techniques are they true to expressing the terroirs of Puligny-Montrachet.

‘Does this new idea add anything - a little bit of complexity, some beauty to the wines? Does it reflect well the character of the terroir and of the wines?

That's what we are looking for.’

Creating a breakthrough egg-shaped cellar for storing wine at the right temperature is one example of Leflaive’s desire to continuously innovate.

However, de La Morandiere is keen to point out that this is not a stunt or purely for aesthetic purposes, but just one element of its inventive approach.

There are many different means of storage the vineyard has experimented with: ‘Egg shaped, big containers, small containers, big vats, stainless steel, concrete, wood…’ de La Morandiere lists.

‘It’s trial and error, but what you'll find in the end is that the diversity of what we are trying to do is closer to the answer than just provide a single answer.’

新しいテクノロジーと 古い技術の融合 ドメーヌ・ルフレーヴでは、昔ながらのワインの造り方と、実験的で挑 戦的なアプローチは相反するものではありません。自然のリズムと新鋭 のテクノロジーのどちらもがワイン造りに大切な役割を果たし、考え尽 くされた「歴史」と「今時さ」のコンビネーションが、ワインをより特 別なものにするのです。 「伝統の尊重は大事ですが、より大切なのは、なぜ、今の伝統の形であ るのかを理解することです」と話すド・ラ・モランディエール氏。科学 は便利だとする一方で、「新しいテクノロジーや科学は、ピュリニー・ モンラッシェのテロワールを表現するのに本当に適しているのか、常に 自問自答している」とも語ります。 「この新しいアイデアは、ワインに何かを足しているのか？複雑さなの か、美しさなのか…テロワールとワインの特徴をきちんと反映できてい るか？それが私たちが求めているものです」 ワインを適温で貯蔵するために発明された斬新な卵型のセラーは、ルフ レーヴの絶え間ない革新への意欲の表れとも言えます。しかしこれは決 して奇をてらったのでも、見た目の美しさのためでもなく、工夫を凝ら したアプローチのひとつに過ぎないそう。「卵型以外にも、容器を大き くしたり小さくしたり、素材をステンレスやコンクリート、木にしてみ たり、さまざまな貯蔵方法を試してきました」 「いろいろと試行錯誤してみて最終的に分かるのは、一つの答えを導き 出すよりも、アプローチのバリエーションを持つ方がより答えに近い、 ということです」

Domaine Leflaive’s philosophy is that each plot in the vast vineyards deserves specific and focused attention. Each has its own personality, crafted by the vagaries of the climats and condition of the soil. Some things are simply out of the winemaker's control - it is all part of a cyclical, energetic process.

This is why de La Morandiere believes crafting wine is much more than simply striving for perfection. In fact, he says, ‘we like the fact that there are some good vintages and then some average vintages - that's part of the beauty of what mother nature is giving us. We want to reflect it in the wine making.’

‘Wine is not perfect every year. In a way, perfection could be perceived as horribly boring.’ Rather, ‘the whole wine making process in a way is an artistic expression.’

And like a true artist, de La Morandiere is never satisfied, always thinking about the next thing. ‘If you say to

yourself, I can bring more, a little more, just a tiny more, that's also the artistic intent,’ he says.

This intense and imaginative process culminates in the moment of truth: the first sip of wine. ‘When, after the year of harvest, you are tasting the wine, there is something magical,’ he says. ‘There is the emotion, that spark in your heart. A moment where you say, “Ah! Wow!”

‘Surprisingly, there is nothing big in making wines. There is no secret. We are doing what's, in a way, is already written in the books. But there is the way you are doing it, the attention to small details, their reflect your philosophy.’

Like all great art, Leflaive’s wine brings people together to share something beautiful. ‘There’s a big connection between us and whoever is tasting our wines,’ he says.

Recent YouTube videos from the team at Leflaive are one way they are striving to enhance this connection.

SHARING FAMILY VALUES Making excellent wine is of course the goal of any vineyard. But for de La Morandiere, the final result isn’t everything - the rhythms of the terroirs, the unexpected moments, and the winemakers who play a pivotal part in it all, are just as important. As a family run business, people are at the heart of Domaine Leflaive.

‘I need to be surrounded by people who understand why details are important in the end, and who can share our family values,’ de La Morandiere says of Pierre Vincent the current régisseur who arrived at Domaine Leflaive in 2017.

It’s also pivotal to the philosophy of Leflaive that it can look outside itself to the broader impact of winemaking on the local environment. ‘We need people who have a true belief in the biodynamic, which benefits the wines and the planet,’ de La Morandiere says.

家族の価値観を共有する 優れたワインを造ることは、どのブドウ畑にとっても目指すべ きゴール。しかし、ド・ラ・モランディエール氏にとっては、 結果がすべてではありません。テロワールのリズム、予期せぬ 瞬間、そして、そのすべてにおいて中心の役割を果たす醸造者 もまた、同じくらい重要な存在です。家族経営であるドメーヌ ・ルフレーヴの中心は「人」なのです。 2017 年にドメーヌ・ルフレーヴに参加した現レジスールであ るピエール・ヴァンサン氏についても「なぜディテールが大事 なのかを最終的に理解し、私たちの家族の価値観を共有できる 人に囲まれていたい」と話します。 ルフレーヴのもう一つ重要な信条は、ワイン造りが地元の環境 に与えるさまざまな影響に目を向けること。「ワインと地球の ためになるバイオダイナミックに対して真の信念を持つ人が私 たちには必要です」

NATURE AS A PARTNER IN WINEMAKING Biody na mic techniques have been implemented in Domaine Lef laive since 1997, and entail that the winery work s i n h a r mony w it h n at u re , w it hout chem ic a l i nt er vent ion , t o produce w i ne w it hout ne g at ively impacting the ecosystem. Biodynamics enables each grape to reveal their true expression, the final note in a long, underground process that is set in motion by the mysteries of nature.

The instability brought on by climate change is at the forefront of many winemakers’ minds, and more recently, t he e s t at e h a s u nder gone a broa der sh i f t t owa rd s sustainability.

‘We are making three different buildings at the moment.

They all will be carbon neutral,’ says de La Morandiere.

‘And two years ago, we decided that we are not going to burn the woods that you take out when you are pruning the trees. We send it to a recycling factory. It is a very costly process. But at the same time, we thought it was the right thing to do.’

Domaine Lef laive’s deep respect for nature, and artistic approach to refining its wines, means whatever the next harvest brings will undoubtedly be as wonderful and surprising as those throughout its 300-year history.

自然はワイン造りの パートナー ドメーヌ・ルフレーヴでは 1997 年からバイオダイナミ ック農法を取り入れています。バイオダイナミック農法 とは、化学的なものを使わず自然と調和しながら、生態 系に悪影響を与えずにワインを造ること。この農法によ ってブドウは、真に自身を表現することができるように なります。 多くのワインメーカーを悩ませる気候変動に関しては、 ここ近年、サステナビリティに向けて大きくシフトチェ ンジを進めています。 現在、3 つの建物を作っており、すべてカーボンニュート ラルになる予定だそう。 「また、木を剪定するときに出る木材は燃やさず、代わ りにリサイクル工場に送ります。大きなコストがかかり ますが、正しいことだと思っています」 ドメーヌ・ルフレーヴの自然に対する深い敬意と、より 洗練されたワインにするための芸術的なアプローチは、 次の収穫がどんなものであっても、これまでの 300 年の 歴史と同様、素晴らしく、驚きに満ちたものになること を確信させてくれるものでした。

Burgundy is the French winemaking region known not only for its centurieslong winemaking tradition but also for its rich cultural heritage – historic monasteries, royal palaces, Baroque castles, and small but charming villages scattered like stars across picturesque hills. In the eyes of many wine lovers, Burgundy is not only a prestigious wine region but also a true artistic centre. A legendary winery with a history spanning over 160 years – Domaine JacquesFrédéric Mugnier – is located in famous part of Burgundy, Côte de Nuit. Most of its vineyards are near the village of Chambolle-Musigny, with the most wellknown ones including Musigny and Les Amoureuses. The winery also owns of Clos de la Marechale, the largest Premier Cru in Burgundy. Frédéric Mugnier took over the business in 1985 and spent the next 30 years developing the winery to become one of the top wine businesses in Burgundy. Prior to this step, Mugnier was a petroleum engineer with an enviable position in the industry but found himself deeply dissatisfied with his career. By chance, the young man entered the world of wine and discovered winemaking as his true life purpose. “I am able to think that, every night, people around the world share a bottle of my wine, and I contribute to them having a good time. I think it’s even more useful than oil”, – he says.

When he entered the wine world, Mugnier, l i ke a l l n ewco m e rs i n t h e i n d u s t r y, rushed to explore various winemaking technologies used by different specialists.

However, unlike the winemakers with a background in agriculture, Mugnier possessed the unique rigour of engineers, and the wine he began to make had the charm of both sensibility and rationality, coming across as strong and solid, yet elegant and gentle.

石油からワイン醸造へ 急激なキャリア転換 フレデリック・ミュニエは 1985 年にワイナリーを引き 継ぎ、30 年間でジャック・フレデリック・ミュニエをブ ルゴーニュのトップワイン事業にまで育て上げました。 ワイン造りを始める前、実は石油関連のエンジニアとし て、業界では誰もが羨む地位にいたミュニエ。しかし、 自身のキャリアに深い不満を抱いていたところで、偶然 にもワインの世界に足を踏み入れ、ワイン造りこそが人 生の本当の目的であることに気づいたのです。「毎晩、 世界中の人々が私のワインを飲むことがイメージできた のです。人々が楽しい時間を過ごすことに貢献できる。 石油よりもよっぽど役に立てるな、と」 ワインの世界に入った時、ミュニエは他の新参者と同様、 ワイン醸造技術をがむしゃらに身につけようとしまし た。しかし、農業出身の他の醸造家とは異なり、エンジ ニア特有の厳格さを持つ彼が造り始めたワインは、感性 と理性を兼ね備えた魅力がありました。力強く堅実で、 それでいながらもかつ上品さと優しさが感じられる、そ んなワインを彼は造ったのです。

"In all plant kingdoms, only vines can let us understand the true taste of the earth. What a loyal performance! Vines know the secrets of the soil and spread through grapes. Through vines, Flint let us know that it is a living thing, fusible and nourishing. Barren chalk cries out the golden tears of wine..."

As described in the poem by French national treasure writer Colette, when it comes to grape-planting and winemaking, Frédéric Mugnier has adhered to the philosophy of respecting nature and preserving its original form. In the management of the vineyard, he insists on manual cultivation and decrease of the impact of technology.

However, in our conversation, Mugnier emphasises that he is not an artist when it comes to winemaking, but nature is. “In French, there is no term ‘winemaker’, we call it a ‘vine grower’. Wine is a creation of nature, and my work is to preserve all the qualities of the fruit that are given by nature,” – he explains.

Mugnier goes on to say that his long-term experience in the wine world has shown him that the role of technology in making wine may often be overrated, adding that the overuse of technology could become detrimental to the qualities of the wine. In addition, the winemaker says he does not place an emphasis on using new oak barrels, mentioning that wine can be affected too much by the barrel and lose its natural fragrance. The oak barrels used at the winery are weathered for three years at the winemaker’s request, which is significantly longer than the standard, and only 15% of the new barrels are used every year.

Mugnier maintains a nature-oriented approach to wine tasting, believing that this process requires no skill, but merely the ability to listen to one’s inner sensations and observe the reactions of the body: “It doesn't take training to know whether the wine is good or not. You just have to pay attention, listen to your body. I strongly believe that when the wine is good, everybody knows it.” “ 植物界で、大地の味を私たちに教えてくれるのはブドウの木だけ。な んという忠誠の心だろう！ブドウの木は土の秘密を知っており、ブド ウの実を通しその秘密を広めていく。フリントはブドウの木を通して、 生き物であり、溶け込むことができ、栄養に富んでいることを私たち に教えてくれる。不毛の白亜はワインの黄金の涙を流す……” フランスの人間国宝である作家、コレットの詩にあるように、ミュニ エは、ブドウの栽培とワイン造りにおいて、自然を尊重し、その原型 を保つという想いを貫いてきました。畑の管理では、手作業での栽培、 そしてテクノロジーによる影響を減らすことにこだわっています。 しかし、ワインを造るアーティストは自分自身ではなく自然である、と ミュニエは言います。「フランス語には 『ワインメーカー』という言葉 はなく、『ブドウ栽培者』と呼びます。ワインは自然がつくり出すもので、 私の仕事は、自然が与えてくれる果実の良質さを守ることです」 さらに彼は、ワイン界での長年の経験から、ワイン造りにおいてテク ノロジーは過大評価されがちだけれど、テクノロジーの使いすぎはワ インの質にとって害があるとも語ります。また、新樽はワインに影響 を与え自然な香りが失われるとして、使用は重視していないそう。使 用するオーク樽は、ミュニエの要望で標準よりもはるかに長く、3 年も の間乾かし、また、新樽は毎年 15％しか使用しないのだとか。 テイスティングは自然の誘いによるものとし、技術ではなく、自分の 内なる感覚に耳を傾け、体の反応を観察するものだと話すミュニエ。 「ワインの良し悪しを知るのに、訓練は要りません。ただ、自分の体 に気を配り、耳を傾けるだけです。本当においしいワインであれば、 誰でもそれがわかる、と私は信じています」

To Frédéric Mugnier, music, like wine, is clean and pure, but can also touch people’s hearts. With Beethoven being his favourite musician, he strives to make his wine as powerful and yet elegant as the music of one of the most recognised composers in history. Among the vineyards owned by Domaine Jacques-Frederic Mugnier, the most famous is Les Amoureuses, which originally means “lovers in love”.

The oldest grapes planted in the vineyard are over 60 years of age, and the roots of grapes extend deep into the earth, bringing complex flavours to the wine characterised by scents of flowers and red berries.

For music lovers, indeed, it may seem that Beethoven's famous composition “To Elise” flows in the bottle itself, as the wine is strong yet fluid, gentle yet dominant, and elegant yet energetic.

Domaine Jacques-Frédéric Mugnier also owns a Premier Cru vineyard – Clos de la Marechale – located in Nuits-Saint-Georges. Covering an area of 9.76 hectares, the vineyard is the largest exclusive vineyard in Côte de Nuit. The wine presents a unique combination of the strong Nuits-Saint-Georges structure and the Chambolle Musigny softness with the aroma of black fruits, dense taste, solid tannin, and soft Pinot Noir flavour. Musical artist Trio Owon 音楽家 トリオ・オウオン

As a music lover, Frédéric Mugnier has made a significant contribution to the musical culture in Burgundy by organising a music festival in Beaune.

The upcoming concerts for the festival in 2023, which will run from April 20 to April 23, are dedicated to classical composers, including Bach, Mozart, Beethoven and Schubert. The concerts will feature a variety of internationally acclaimed musicians from all around the world, including one Japan’s most famous pianist Momo Kodama, French cellist Christophe Coin, an ensemble of the Paris Conservatory musicians, known as Trio Owon, as well as the string quartet Quatuor Chaos from Vienna, Austria. Aiming to bring chamber music played by musicians from around France and from abroad to Burgundy, Mugnier hosts the events in the historic places of Beaune, such as Hospices de Beaune and La Lanterne Magique arts centre.

The FUTURE of Domaine Jacques-Frédéric Mugnier

Living in the village of Chambolle Musigny, in this place of idyllic beauty remote from the big cities, Frédéric Mugnier also views himself as “the timekeeper”. “I live in a world that is very different from the modern world. Modern life in cities where you live needs speed, which is the measure of performance. Here, it is just the opposite, it is at least one field where slowness is a virtue,” – he says.

Looking to the future, Mugnier says he understands that the world has changed and there are many challenges to be faced by winemakers in the context of the increasing pace of life. “We make wines that have the quality not only to be kept for many years, but the wines that develop and improve with age,” – he says, adding: “For some wine, the qualities can only be created with time, with an extremely slow process. The world has changed, and we need to take this into account.”

Despite the future being uncertain, one can be sure that, with the hard work of Frédéric Mugnier, Domaine Jacques-Frédéric Mugnier, has an exciting journey ahead and will continue to bring outstanding wines to the grateful public.

An innovative approach to winemaking paired with a commitment to the terroir has been a decisive part of the philosophy of BOND, a winegrowing property founded by the creators of internationally recognized Harlan Estate in Napa Valley, California, USA. The f irst w ines relea sed under t he BON D label were produced in 1999 and introduced to the world in 2003.

The winery specialises in the production of singlevariety red wines, with grapes harvested from five distinct vineyards of Grand Cru quality in the leading winemaking region in America.

Birth of BOND According to Don Weaver, the inspiration for the creation of the BOND winery came from Burgundy, when Bill Harlan visited the famous French region in the 1980s.

“Bill had also spent some time in Bordeaux on that trip, and it was a transformational trip for him. He had lots of ideas about Napa Valley,” – Weaver says, adding: “He found that the most memorable wines were the ones that felt and tasted like the place where they were made. It was clear to him that, particularly in Burgundy, the best wines came not from the valley floor or up on the mountain. They were just up the toe of the hill.”

Weaver also explains that the BOND project has come to be as a result of the combined experience of the team—which includes founding winemaker Bob Levy— in making wine in Napa Valley: “We had been working on another project called Merryvale for several years where we were buying fruit from several growers around Napa, about 65 different growers at that time.”

Expressing the character of land

As a result, the creators of BOND decided that the expression of distinct types of terroirs in Napa Valley would become the foundation of the BOND philosophy. The diversity of Napa Valley geography is explored by BOND through the five Grand Crus sites with which the winegrowing team works.

“We thought it would go a long way to showing the diversity that exists in Napa Valley.”

Melbury is a hillside vineyard near Lake Hennessy, producing grapes with strong red fruit and spice characteristics. Quella, located on the eastern hills of Napa Valley, produces earthy wines with a touch of blue fruits. The historic St. Eden vineyard, facing the northern expanse of the valley, is responsible for the production of sweeter, rounder wines, while Vecina, with its volcanic soils, makes powerful savoury wines. Finally, rich and concentrated wines recognised by the notes of coffee and cedar are made from the grapes harvested on the elevated Pluribus vineyard located on the slopes of Spring Mountain.

Weaver goes on to reveal the mystery behind the bold name choice for this property BONDis not only the family name of Harlan’s mother, but the word “BOND” in the philosophy of the winery stands both for the BOND between the wine and the land, as well as between the growers and winemakers. Finally, the label is evocative of the financial iinstrument of the same name.

“Because we do all the farming, we want to make sure that we have complete harmony and complete understanding with the growers. This is one of the reasons we called the wine BOND. It was the BOND between the grower and the winemaker.”

A bottle of BOND is easily recognized by the image of the socalled Matriarch found on the labels of the wines produced by the estate.

“We felt that it needed a face and, and particularly a female figure, and then we found this image of this rather heroiclooking woman,” – Weaver explains. Each of the five wines produced in the five Grand Crus associated with BOND has its own unique colour reflecting its character: maroon/plum for Melbury, blue for Quella, green for St. Eden, terra cotta for Vecina, and deep purple for Pluribus.

“In addition to its own expression, each of the wines has its own merits and its unique reasons to enjoy it” – Weaver concludes.

BOND’s winemaker Cory Empting started his successful career from a visit to Harlan Estate. He eventually earned the opportunity to work under founding winemaker Bob Levy. “I think I always wanted to make great wine, but it never had kind of the sense of place. And this was the first property where I felt like I fell in love with the place,” – he says.

Empting recalls the process of mapping the exclusive BOND vineyards, saying the team worked initially with almost 60 different growers back in the day, creating a map of the best vineyard locations for the new project. Currently, the team has worked with over 100 properties, of which only five have been chosen. “We thought the best vineyards would be in areas that had hillsides, because we wanted the roots to be able to touch the mother rock,” – he explains.

“I think innovation is always important to us. I think our idea of innovation is about going deeper within.”

When asked about his personal approach to winemaking, Empting says that, for him, it is important to offer different wines that each possess a unique character, and to show how “these wines aren’t about the variety, they are really about the place”.

“Beyond that, I hope that a person can feel connected somehow to at least one of these wines,” – he concludes.

Spring Mountain, which makes it a warmer climate for a vineyard to grow in, compared to the valley floor.

Empting mentions that Pluribus wines are the most mysterious of all five, in an almost eccentric way, saying they “feel like you're in the forest surrounded by the conifer trees”. The wine has a complex aroma consisting of many elements and notes that continue to reveal themselves as the wine is being drunk. プルリバスはスプリング・マウンテンの中腹に位置 し、温暖でブドウが育ちやすい環境です。5 つの中で 最もミステリアスであるプルリバスは「森の中で針葉 樹に囲まれているような感覚」と表現されます。さま ざまな要素からなる複雑な香りがあり、それはワイン を飲んでいる最中にも姿を現し続けるのです。

that has a specific type of clay with a large amount of internal surface area, and the clay is essentially what defines the wine. For Empting, Melbury is a “longtime friend that you only get to see around the holiday time”, with its warmth and charm coming from the clay soils. Every year, Melbury wines reveal different nuances, making one want to taste them every season to find something new. メルバリーはヘネシー湖の近くにある畑で、表面積が 大きい粘土質の土壌を持ち、この土壌がワインの味を 決めます。「ホリデーシーズンにしか会わない旧友」 のようなワインで、そう思わせる温かみと魅力は、粘 土質の土壌からきているのだそう。毎年違ったニュア ンスを味わわせてくれるメルバリーのワイン。季節が 変わるごとに味わって新しい発見をしたくなります。

Quella

The name comes from an anglicised German word for “aquifer”, or water source. Unlike Melbury’s clay soils, Quella is known for its volcanic sand and coarse soil, in which only the strongest vines can survive and, more importantly, thrive. The winemaker describes the complex taste of Quella wines as “the choreography of a ballerina” on one’s tongue, as they come together as light and almost ethereal despite the inner strength of the vines growing in the vineyard. クエラの名は、ドイツ語で「帯水層」を意味する単語 に由来しています。火山性の砂と粗い土が特徴で、本 当に強いブドウの木だけが生き残ることができます。 この畑で育つブドウの木の内なる強さと、ほとんど空 気のような軽さ、その両方をまとっているため、この 複雑な味わいは、舌の上で織りなす「バレリーナの踊 り」に例えられます。

The vineyard has been through a lot and developed unique resilience, continuing to produce outstanding balanced wines, like a person who managed to achieve inner peace amid chaos.

Founded in 1872, Hombo Shuzo is a long-established general alcoholic beverage manufacturer.

Hombo Shuzo started out by producing shochu, and their business has grown to encompass a diverse range of drinks. In order to adapt to the changing tastes of society over time, Kazuto Hombo has been endeavouring to make innovative changes to the structure of the long-standing company, based on his firm belief that “it’s essential to add more value to the manufacturing technology that our company has developed over time.” In directing the company, the one thing that he has always placed importance on is being rooted in the regional community.

“Any kinds of drink is a processed agricultural product,” says Hombo. “Everything starts from the land and the natural resources uniue to each region. manufacturers should take root in the region and harness the characteristics of that particular agricultural products. In addition, it’s about how we keep making products with the skills we have inherited from our predecessors and developed over the course of our history—that’s what leads to creating value for the brand.”

At the heart of Hombo Shuzo’s liquor-making is their constant commitment to strive for greater heights, listening to the feedback from professionals and fans.

本格焼酎の製造で始まり、多岐にわたる酒類事業を展開して成 長してきた本坊酒造。本坊さんは、時代の流れと共に変化する 世の中の嗜好に合わせて、「自社が培ってきた製造技術をより 価値化していくことが大事なのではないか」という確固たる信 念のもと、老舗会社の体制の変革を試みてきました。その中で 変わらず大切にしてきたのは地域に根ざすことでした。 「酒は農産加工品。原材料を育てる農業が酒造り起点であり、 酒類メーカーは地域に根ざし、栽培環境や熟成環境を生かした モノづくりをしなければなりません。加えて、酒造りを始めて から、先代より継承され培ってきた技術で、いかに創造するか が、ブランドの価値化へとつながっていくのです」 さらにプロフェッショナルやファンの評価に耳を傾け、さらな る高みを目指して努力を重ねていく精神が、本坊酒造の酒造り の根幹にあるのだとか。 そう話す本坊さんに、グローバルなビジネス展開のビジョンや 指針を教えてくれたのが、ワインやウイスキーのビジネスであ り、それを通じて知った品質を評価する欧米の考え方でした。

“Wine is the most commonly consumed drink in the world. Wine brewers pay much attention to ‘terroir’ (the character of the land).

There are many winemakers that are small yet world-renowned.”

Hombo continues, “Liquor making that has deep roots in the local, and market in the global scale—with such a business model, it naturally leads to maximising the value generated by the characteristics of the particular regions in which we work.”

In response to the growing international popularity of Japanese whisky and the highball trend in Japan, Hombo Shuzo resumed their production of whisky at the Mars Shinshu distillery, which had previously been suspended. In November 2016, they newly opened the Mars Tsunuki distillery in the city of Minami-satsuma in Kagoshima Prefecture, where the company was founded.

“Culture of wine and whisky have evolved in the West, gaining recognition in the global market. The recognition and appreciation of Japanese wines and whiskies among international competitors have become one measure of whether we have achieved quality standards.”

Hombo Shuzo’s whisky is attracting attention from abroad as well. In 2017, the company won “the Craft Producer of the Year” award in the Icons of Whisky (IOW), which is awarded to small- and medium-scale whisky producers who have made a significant contribution to the whisky industry.

“What’s truly wonderful about Western culture is that no matter your roots or background, good things are properly recognised as good.”

In the face of changing times, Hombo Shuzo’s growth from shochu to the broader categories is part of what encouraged them to expand their reach to the world. Their development in both businesses can be described as a synergetic effect.

Mars Malt Le Papillon:

TAKAHIDE KOMATSU EDITION with Labels Painted by the Fine Artist

“There are two important factors that form a whisky’s character,” says Hombo. “The first are the distillation technique and the knowledge we have developed over the years. The second are the forces of nature and time—in other words, the maturing environment. Those things are what make each whisky unique. The Mars Malt Le Papillon series expresses that idea through the motif of butterflies, which inhabit their natural environment. The series was born out of my hobby: I loved insects from since I was in primary school.

I thought it would be interesting to express characteristics of whisky through characteristic butterflies.”

The “Mars Malt Le Papillon: Takahide Komatsu Edition” is a special edition of a rare 30-year-old whisky. The artwork for the whisky label was painted by the fine artist Takahide Komatsu. Each bottle has the original artwork, not the copies. Komatsu and his peers created paintings for no less than 365 bottles of Le Papillon. The empty space of each painting is filled with gold leaf.

“I happened to see Komatsu’s work in an art magazine, and I asked someone involved to introduce me to him. At first, I requested one painting to start with, but he generously replied, ‘I’d be happy to paint them all.’ It was an incredibly precious experienece that he painted for us each and every butterfly that I had only seen in illustrated books before,” says Hombo excitedly.

That was the birth of the “Takahide Komatsu Edition”: the meeting of two people in different fields with a shared love of insects. The bottles for this edition feature 257 species of butterflies that inhabit Japan, one on each label. This special series expresses the profound world view of whisky in vibrant colours.

「マルスモルト ル・パピヨン 小松孝英エディション」は、30 年熟成の希少なウイスキーを特別 版としてリリースしたもの。ラベルの原画を描いているのは、美術家の小松孝英さん。小松さんは、 365 本にわたる「ル・パピヨン」のボトル全ての絵を制作された。 「小松さんの作品をたまたま絵画雑誌で見かけ、関係者に紹介してもらったんです。『まずは１枚』 とお願いしたのですが、『全部描きますよ』と言っていただけて。図鑑でしか見たことのない蝶を 1 枚 1 枚、小松さんに描いてもらえたことは本当に貴重ですね」と、本坊さんは嬉しそうに語ります。 こうして、昆虫好きの異なる分野で活躍するふたりが出会い、日本に生息する蝶 257 種を 1 枚 1 枚 のラベルに収めた「小松孝英エディション」はウイスキーの奥深い世界観を、鮮やかに表現した特別 企画となりました。

From Kagoshima to the World: Hombo’s Mission of Liquor-Making

“In February this year, I turned 68,” Hombo says. “It’s time to start thinking about my retirement.”

He hopes to retire after making sure that “Hombo Shuzo’s philosophy of craftsmanship” can be passed on and maintained by the next generation.

He continues, “Right now our focus is on whisky, which has a relatively long history in the Hombo Shuzo’s liquor business.

We strive to make products that impress professionals and fans around the world, and win their trust. I always tell my employees to keep this in mind.” His tone gives us a glimpse of his unrelenting passion.

“There is a saying, ‘do what you love and success will follow.’

Indeed, I was able to devote myself to this work because of my love for it. My wife jokes that she had to put up with my hobbies.

All I can say is that this business was something that I could happily spend all my energy on and enjoy each step of the way.”

Hombo Shuzo has steadily invested in their whisky business, with the distilleries in Nagano and Kagoshima prefectures as their base. In both locations, barrel storage warehouses were built additionally by last year. They also have aging cellars on Yakushima Island, which attracts many whisky fans. “For our whisk y business,” Hombo explains, “ we will focus on maximising our business potentials with two distilleries and

“We’ll keep on disemminating our brand from Kagoshima,” he says. “This may be my mission as the heir to the Hombo family business.”

Hombo Shuzo has a history of more than a hundred years, which began with making shochu. Their philosophy—valuing their roots in the local region while harnessing the modern and traditional production techniques that they have cultivated over the years—will no doubt continue to make their drinks attractive to people around the world.

本坊酒造のウイスキー事業は、長 野県と鹿児島県の蒸溜所を拠点に、継続 した投資を行ってきました。昨年までに両拠 点とも樽貯蔵庫を増設。世界自然遺産の屋久島に もエージングセラーを構え、多くのファンが足を運ん でいます。「ウイスキー事業として、2 つの蒸溜所、３つ の熟成地の体制で、事業を最大化することに注力していきます。 それぞれの熟成の良さを引き出していきたいですね」と話します。 「今は本坊酒造の酒類事業の中でも歴史が長いウイスキーが中心ですが、世 界のお酒のプロフェッショナルやファンからリスペクトされるような企業を目指し て、世界的なマーケットの中で評価される良い仕事をしたいと思います。社員にもその ように伝えています」と続け、絶えない情熱をのぞかせます。 「これからも鹿児島から発信していきます。これは本坊家の家業を継いだ僕の使命かもしれません」 焼酎造りを始めてから百有余年、地域に根ざしながら長年培った技術を最大限に生かす哲学は、これからも 本坊酒造の酒造りにさらなる魅力を与えるに違いありません。

Born in 1941, Toyo Ito is the representative of Toyo Ito & Associates, Architects. His projects range far and wide, and some of the most notable include Sendai Mediatheque, Tama Art University Library, and National Taichung Theatre. He has received numerous awards, such as the Pritzker Architecture Prize, the Venice Biennale, and the Golden Lions at Architectural Institute of Japan Award. We spoke to him about the future of Japanese architecture and urban design.

Creating Small Communities in Tokyo

東京 に小さな コミュニティ

Tokyo - a metropolis where tradition intermingles with innovation.

Ito shares his concerns about how the unique personality of each neighbourhood is becoming lost due to the increasing prevalence of highrise buildings and redevelopment.

In Tokyo, meeting new people by chance is rare, and it’s not unusual to know nothing about one’s next-door neighbours. He hopes to create small communities scattered across the capital.

One of his initiatives is ZA-KOENJI Public Theatre, established in 2008 in the district of Koenji. Ten years have passed since its completion, and now, some people have become so familiar with it that they come and go as if it was their own home.

As an architect, Ito endeavours to create a space which gives rise to heartfelt connections between one person and another. 古い伝統と革新が混在する都市・東京。 伊東さんは、建築の高層化や再開発によって各地域のまち並みの良さ が失われていく事態を憂慮していると語ります。

Reviving the Animal Sensibility in Human Beings Ito also sounds the alarm for certain harmful effects of the rapid increase in artificial environments due to verticalisation and redevelopment: “When people spend a long time in a place where they can’t even tell whether it’s raining or sunny outside, their awareness of physical sensations will become numb.”

“That’s why,” he continues, “I want the architecture I create to enable people to regain their animal sensibility.”

A turning point which streng thened his resolve to pursue this direction wa s when he desig ned Sendai Mediatheque (2000), regarded as one of his most notable works. It forms a f luid space which allows users to move freely within its structure, keeping any walls that break up spaces to the bare minimum. “People can use the building as if they’re in a park,” says Ito.

“Traditional Japanese architecture comes with a garden and an engawa (a veranda-like, wood-f loored corridor facing the garden), so if you slid open the shoji doors, the room would be directly connected to the outside,” he explains. “It’s often required of modern architecture to build a boundary between inside and outside for the purposes of security and management. That’s inevitable. Nevertheless, I’m interested in recreating nature within my architecture.”

Ito always keeps the people who use his architect ure in mind while designing them. Even so, until he became involved in Sendai Mediatheque, he had the impression that architecture wasn’t very warmly received by the general public. When he visited the site after completion, however, he saw people using it as though it had been there for a decade, and his worries were washed away. He recalls how delighted he was in that moment: “I’ve never felt more gratified to have worked as an architect.”

人の 動物 的感性を蘇生する さらに高層化と再開発で人工的な環境が増える弊害につ いて「外で雨が降っているのか、晴れているのかも分か らないような空間にいると、身体感覚が失われていく」 と警鐘を鳴らします。 「ですから自分が造る建築は、動物的な感受性を取り戻 せるものにしたいと思っています」 その想いを強めた分岐点となるのが、伊東さんの代表 作のひとつとも評される「せんだいメディアテーク」 （2000）。壁による分断を最小限にとどめ、利用者が自 由に移動できる流動的な空間がつくられていて、「公園 の中にいるような感覚で使える」のだとか。 「日本古来の建築には庭と縁側があり、障子を開ければ 外と繋がる開放的なものでした。現代の建築は安全性の 確保や管理のために内と外に境界を作ることが求められ ます。 それはやむを得ない。ですが、やはり僕は建築の内に自 然を再現することに関心があるのです」 これほどまでに、使う人を想う建築家の伊東さんであっ ても「せんだいメディアテーク」に携わるまでは、一般 の人から建築が歓迎されていない感覚があったといいま す。ですが竣工後に訪れると、十年も前からこの建物に いたように利用している人たちの姿があり、その懸念は スッと消えたそう。「このときほど建築家をやっていて よかったと思ったことはない」と喜びを語りました。

Cultivating a Sustainable Society

Last year, Ito’s off ice celebrated its 50th anniversary.

Looking ahead in the future, he has various projects that he wants to focus on. The first is “to pursue architectural designs that make people feel like they’re in nature.” The second is to engage in social activities.

One of those activities is the “Architecture School for Children,” which he began in 2011.

Now, he says, “I have the most fun when I’m teaching elementary school kids. Children around ten to twelve years old can think about architecture without being hemmed in by common sense.

“I’m interested in seeing how far they can maintain their inherent freedom—their ability to think outside the box.”

Ito’s initiative to pass on architectural theory to these architects of the future can be seen as an extension of his continuous efforts at building communal neighbourhoods.

“Nowadays, there are strict reg ulations for building architecture in Japan, and it’s hard to propose bold ideas as we used to do in the past,” he says. “Young people today are losing hope for the future. I felt the need to put in more effort to call out to them, ‘Let’s dream big!’”

その活動のひとつに 2011 年に始めた「子ども建築塾」があります。 「規制が厳しい現在の日本建築において、かつてのような自由な提案は難 しい」「今の若い人たちは将来への希望を失っている。『もっと夢を持と う』と大きな声で発信していく必要性を感じた」と、私塾を始めた経緯を 語ります。

持続可能 な社会を育む

昨年、主宰する事務所が設立 50 周年を迎えた伊東さんに、今後力を入れ ていきたい取り組みについて伺いました。ひとつ目は「自然の中にいるよ うな建築のさらなる追求」もうひとつは「社会活動」だといいます。

今、「小学生に教えている時間が一番楽しい」と話す伊東さん。10 〜 12 歳 くらいの子どもは、常識にとらわれずに建築と向き合える年代なのだとか。 「彼らが持つ奔放さをどこまで維持していられるか、という点に興味があ ります」 未来の建築家に建築理論を継承する活動は、伊東さんの継続的なまちづく りの延長とも捉えられるかもしれません。 Gen de Art September 2022

In addition, Ito is also making wine in Imabari in Ehime Prefecture. He was always a fan of wine, so that was one motivation behind founding “Wineryfor-All on Omishima”—but what really influenced him most was the opening of the Toyo Ito Museum of Architecture, Imabari and his frequent trips to the island of Omishima since then.

In Omishima, where the population is aging, he noticed many patches of abandoned farmland where farmers used to grow mandarins. Ito had the idea that if he turned those lands into vineyards and started making wine, which would appeal to younger generations, it will give new strength to the local community.

The winery was completed in 2019. The project continues to grow, expanding its market through online sales and other venues.

農業のように 耕し育てる 「自然との関係」をテーマに掲げる伊東さん にとって、建築とワイン造りはあまり違わな いといいます。「誤解を恐れずにいえば、建 築も農業」と話す伊東さんの言葉は、有機的 に変化する地域やまちを耕して持続可能なも のにし、建築も利用者と共に育む必要がある ことを示唆しているようです。 「現代建築は一般社会に浸透していないこと が問題」だとする伊東さんは、「まずは一般 の人に建築が楽しく自由なものであることを 知ってほしい」と、付け加えました。 物腰の柔らかい伊東さんのナチュラルな言葉 は優しい風が吹き抜けるようで、添えられる ストーリーと共に穏やかな空間が立ち上がっ ていました。

ワイン 造りと建築 造りは 酷似している

For Ito, whose projects revolve around the theme of “relationship with nature,” architecture and wine-making are not so different from each other. “Don’t get me wrong, but in a way, architecture is agriculture,” he says. His words hint at the need to cultivate the ever-chang ing loca l neighbourhoods in organic ways into something sustainable, as well as to keep growing the architecture along with the people who use it.

“Contemporary architecture hasn’t integrated enough into the general public,” says Ito. He adds, “First of all, I want people in general to know how fun and free architecture can be.”

With his mild-mannered and candid ways, listening to Ito as he shares his stories is like spending time in a place of tranquility with a gentle breeze stirring the air.

さらに愛媛県今治市ではワイン造りにも取 り 組 ん で い ま す。「 大 三 島 み ん な の ワ イ ナリー」を始めた動機のひとつには、ご自 身がワイン好きだったこともあるそうです が、「今治市伊東豊雄建築ミュージアム」 （2011）ができ、大三島に頻繁に通うよう になったことが大きいといいます。 高齢化が進む大三島では、ミカン農家が栽培 をやめて放棄した畑が各地に見受けられま した。その土地をブドウ畑にし、若者への訴 求力もあるワイン造りを始めれば地域の活 性につながると考えたのです。 2019 年には醸造所も完成。オンライン販売 など販路を増やすなどして、成長拡大を見せ ているプロジェクトです。

Architect of Site-Specific Architecture

Born in 1973, Kentaro Ishida studied architecture at the Architectural Association School of Architecture (AA School) in London, and worked for the Swiss architectural design firm Herzog & de Meuron from 2004 to 2012. As an associate at the firm, he was in charge of project management and was also the lead designer for the Pérez Art Museum, Miami (Miami Art Museum), and the Triangle Skyscraper Project (Paris). We spoke with the architect, who currently runs Kentaro Ishida Architects Studio.

Architecture as a Vessel to Aid Activity During his universit y years in London, a cit y where modern high-rise buildings intermingle with old streets, Ishida was forced to think about how new architecture can exist while preserving the old, and he strongly recognised the influence that buildings and design have on cities.

As an architect, Ishida is more interested in public spaces and places than he is in buildings. He tells us that this is because “it is architecture that creates spaces for people to gather, and that is what we can offer people.”

“An example of this is the plaza in front of the Pompidou Centre in Paris. It has a gentle slope, which invites people to stay there, sit down, and watch street performances. I have a great interest in these human phenomena. Even in a city, even on a residential scale, it is possible to create conditions for people to gather. I think that is the inherent power of architecture.”

“As an architect, the most important thing to focus on is what will go inside the structure,” Ishida continues. “Architecture should be a vessel that makes people happy and helps with their activities.”

This aesthetic is also evident in the spaces he has created for the appreciation of art, which he has been involved in since moving to his current base in Tokyo. These spaces include N’s YARD, a private museum for contemporary artist Yoshitomo Nara, and the OTA FINE ARTS, a gallery featuring many of Japan’s leading artists.

Exploring the Set-Up Process of EXHIBITION SPACES An outstanding work of art can look completely different depending on the environment in which it is displayed. When working on a museum or gallery, Ishida states that “it is very important for an architect to explore what kind of environment will bring out the message of the artwork, and to arrange the structure to make use of natural light, the proportions of the building, and the space within it as a medium for displaying the artwork.”

To this end, Ishida has been analysing contemporary art-related architecture from around the world in order to develop a new typology for art museums.

However, in most cases, it is not known at the construction stage what kind of artworks will be housed in the museum. Therefore, Ishida’s work begins with learning and researching the artist’s philosophy and what the artist sees.

While researching case studies for his work, Ishida was exposed to the diversity and interest in art, and the strong message of the artwork, and was impressed by the energy that artwork possesses.

The Turbine Hall at London’s Tate Modern has a 36-metre-high atrium, and contemporary artist Olafur Eliasson’s “The weather project,” exhibited in 2003, was a work of art that seemed to erode the large space.

For Ishida, artists are “like textbooks that teach us about beauty, deep sadness, and the human way of life, from an angle that differs from our general sense of values. 優れたアート作品は置く環境によって見え方が 180 度変わるもの。 美術館やギャラリーを手がける場合「建築家は、作品のメッセージ 性を引き出す環境とは何かを探り、アートを展示する媒体として、 自然光を生かした構造や、建物や空間のプロポーションといった設 えを整えていくことがとても重要」だといいます。 そのため石田さんは美術館を手がけるために世界の現代美術関連の 建築を分析し、新しい美術館のタイポロジーを検証する作業を行な ってきました。 ですが建設する段階では、どのような作品が入るのかがわからない ことがほとんど。そのため、石田さんの仕事はまず、アーティスト の思想やそのアーティストが見ているものを学び、研究するところ から始まります。 仕事で事例をリサーチしていくなかで、アートの多様さや面白さ、 作品の強いメッセージ性に触れ、アート作品が持つエネルギーに感 銘を受けたといいます。 「ロンドンのテートモダンにある展示室『タービンホール』は高さ 36 メートルの吹き抜けがあります。2003 年に展示された現代美 術作家のオラファー・エリアソンの『The Weather Project』は、 大きな空間をどんどん浸食していくようなアート作品でした」 アーティストは石田さんにとって「一般的な価値観とは異なる角度 から美や、深い悲しみ、人間らしい生き方を教えてくれる教科書の ような存在」なのだとか。

Ishida was first introduced to contemporary art through the Pérez Art Museum Miami (Miami Art Museum) project, which he was in charge of from the concept design stage through to the project’s completion, while working for Herzog & de Meuron.

He describes the character of the city of Basel, where he was living at that time.

“It’s a city where art is close to home, with The Municipal Art Museum Basel, founded in 1662, having a history of opening its public collection to the public even before the Louvre. In June, when the world’s leading art fair, Art Basel, is held, it attracts art professionals from all over the world.”

We ask Ishida about his future outlook as he continues to deepen the inspiration he receives from art and apply the individuality of places to his work.

“I believe that architecture should be site-specific. There is no way that the same architecture can be created in different countries, with different climates, and different ways of using sites. Good architecture can only be created by researching and analysing the locality and its context.”

そもそも石田さんが現代アートに触れたきっかけは、 ヘルツォーク＆ド・ムーロンに勤務していた際にデザ インコンセプトから竣工までを担当した、ペレス・ア ート・ミュージアム・マイアミ（マイアミ現代美術館） のプロジェクトでした。 この頃に住んでいたバーゼルという街の個性につい て、こう語ります。 「ルーブル美術館よりも前にパブリックコレクション を公開した歴史を持つ、1662 年創設のバーゼル市立 美術館があるなど、アートを身近に感じる街です。ま た世界有数のアートフェア『アート・バーゼル』が開 催される 6 月には、世界中からアート関係者が集ま ってきます」 アートから受けるインスピレーションを深化させ、場 の個性を仕事に生かしていく石田さんに今後の展望を 伺いました。

“Architecture plays a very important role in a city, intervening not only in the city itself but also in the lives of its people. I want to continue to be involved in projects with that stance. As for art spaces, I would like to continue my search for spaces that create newer, richer viewing experiences.”

「建築はサイトスペシフィックなものでなければいけ ないと思っています。国や気候、使い方が異なれば、 同じ建築ができるはずがない。ローカリティやその文 脈を読み、分析して初めていい建築ができるのです」 「建築は都市や人々の暮らしに介入する、街にとって 非常に大きなポジションを担うもの。今後もそういっ たスタンスでプロジェクトに関わっていきたいです。 美術空間については、より新しい豊かな鑑賞体験を生 む空間の探求を続けていきたいですね」

This vision strongly reflects the solid perspective and sensitivity that Ishida possesses in his pursuit of space.

In addition to his imaginative Japanese paintings that give off an air of antiquity, Muraoka also creates t h ree - d i men sion a l a r t work s . We spoke to him about his philosophy as an artist.

The Allure of Materials in Japanese Painting 素材と向き合う日本画の魅力

Muraoka is a central figure leading the field of contemporary Nihonga, but his path to becoming a professional artist was far from smooth. When he was 20 years old, he became interested in Nihonga and decided to move to Tokyo to take the entrance exam for Tokyo University of the Arts. It was a late start compared to other students who had already been preparing for the exam throughout senior high school. “It was difficult to pass the exam, and I also felt a gap between the technical skills of others around me and my own,” says Muraoka. “I thought I wasn’t cut out for art, so unfortunately, I quit painting at that point.”

Muraoka became distant from the world of art. It was when he was travelling for work that he rediscovered his creative impulse despite his busy life. “I was gazing absent-mindedly at the landscape and remembering things from the past. Then all the feelings that I’d been suppressing came back to me. I felt a strong urge to paint again.”

After several years of working in a different field, he returned to art and entered the Department of Fine Arts at Tokyo University of the Arts. “Since then, even when things became painful while making art, I could compare it to the pain of working as an employee and keep going,” he says. 現代日本画の中核を担う作家であり、第一線で活躍している村岡さ んですが、日本画家になるまでの道のりは平坦なものではなかった と言います。日本画に関心を持ち、東京藝術大学を受験しようと上 京したのは 20 歳のとき。高校生から受験勉強に打ち込んできた他 の受験生と比べて、遅いスタートでした。「大学にはなかなか受か らず、周囲との技術的な差も感じていて、自分は画家に向いていな いと思い込み、描くことを止めてしまいました」 絵の世界から離れ、忙しい社会人生活を送るようになった村岡さん が創作の初期衝動を思い出したのは、仕事での移動中のときでし た。「ぼんやりと風景を見ながら、昔のことを思い出していました。 すると、それまで考えないように蓋をしていた気持ちが蘇り、また 絵を描きたいと強く思うようになりました」 その後、東京藝術大学美術学部へ入学。数年間の社会人経験を経て、 絵の世界に戻った村岡さんは「それ以降、絵の制作で辛いと感じるこ とがあっても、仕事の辛さと比べれば頑張れると思えた」と言います。

What drew Muraoka to Nihonga was the powerful texture of the medium. “The iwa-enogu (mineral pigments) of Japanese painting don’t involve a lot of binders (that hold the pigments together and allow them to adhere to the support), so the paints themselves are very beautiful,” he explains. “Even with the same colour, different nuances in tone will come out depending on the person using it.”

For most materials in Japanese painting, the artist needs to put in much effort and time to use them. At the same time, there is a depth to them that made Muraoka want to explore their qualities over a lifetime. There is no end to his curiosity when it comes to the media of art; now, he also makes three-dimensional works, studying the sense of presence that a solid object has.

“Oftentimes, when I’m working on a sculptural piece, I’m inspired by the atmosphere around things like ruins, museum objects, antiques, and curios. They have a certain touch, and textures, and they match well with iwa-enogu.”

What Muraoka gained from his creative practice, paying tactile attention to real objects, has become a foundation for forming his own ways of expression in Nihonga. そんな村岡さんが日本画に魅了されたきっかけは、素材が持つテク スチャーの力強さでした。「日本画の岩絵具は、多量のメディウム （絵具を支持体に接着させる溶剤）に包まれていないので、絵具自 体がとても美しい。そして同じ色でも、使う人によって違った色合 いが生まれます」 日本画の画材は扱いに手間がかかるものが多いですが、一生をかけ て探求したいと思える奥深さがあったと言います。村岡さんの素材 への探求心は止まることを知らず、現在は立体作品の制作も行い、 実体の持つ存在感と向き合っています。 「立体作品は、遺跡や博物館にある展示作品、アンティーク、骨董 品が持つ空気感から着想していることも多いですね。素材感や風合 いがあって、岩絵具との相性もいい」 実際に物体に触れて向き合う制作を通して得た手応えは、村岡さん が日本画という分野で表現する上での礎にもなっているのです。 Gen de Art September 2022

Although his style is realistic, what Muraoka pursues most isn’t photographic reality, but the sense of presence, the lingering echo, of a person or an object. When it comes to portraits, he is not so interested in reproducing the softness of the body or the minute, material details of the subject.

Among Muraoka’s portraits, those featuring women are particularly memorable. When asked why he paints women, he says, “I’m primarily interested in painting people. I think, in the beginning, I was drawn to Western art more than Nihonga because they tend to portray people more.”

He paints women because, as a man, he will never be able to fully understand them for as long as he lives. “Of course, it’s really difficult to understand other people, regardless of their sex. In my paintings, the woman functions as a symbol of something mysterious, one among the elements that make up the work.” Therefore, “femininity” in the sexual sense or “maternity” aren’t important themes for his work.

The woman in Murakami’s artwork, shrouded in an air of mystery and indecipherability, breathes within the surface of the painting—a wavering presence that faces the viewers like a mirror to reveal their inner worlds. 写実的な作風でありながら、村岡さんが追求するのは 写真のようなリアリティではなく、そこにある人や物 の気配や余韻。人物画も、身体の柔らかさの再現や物 質的な細密描写にはあまり関心がないのだとか。 村岡さんが描く人物画の中でも、女性の作品はとくに 印象に残ります。女性を描く理由を聞くと「描く対象 として、第一に興味があるのは人物。もともとは日本 画よりも、人物をモチーフに描くことの多い西洋絵画 に惹かれ、関心を持っていたように思う」と、振り返 ります。 女性を描くのは、男性である村岡さんにとって一生を かけても理解できない存在だから。「もちろん同性だ って、他人を理解するのはとても難しいです。絵を構 成する要素の中で、女性はミステリアスなもののシン ボルとして機能しているのだと思います。」 そのため「セクシャルな意味合いでの女性性や母性は、 重要なテーマではない」と言います。 村岡さんが描く不可解性をまとった女性は、画面の中 で空気のように揺らぎながら、観る者の内的世界を映 し出す鏡のように存在しています。

Art that Allows for Ambiguity Lives on to the Next Generation Muraoka has established his own singular style. Though we might expect him to have a vivid image of the completed piece in mind when he begins a new painting, he says that he only has a vague idea of the direction of the work in the beginning. “It comes together in the process of painting, like pieces of a puzzle.”

For his finished pieces, too, he believes it’s important to leave things open for the viewer to interpret the work. “It’s the same with films, for example,” he says. “It might feel good to watch something that has a clear plot with a beginning, middle, and end, but a film that leaves some kind of ambiguity makes the viewer think back and wonder, ‘what did it mean?’. It stimulates our imagination, I think.”

Muraoka hopes that people will look at his work in whatever way they like: “I don’t mind some interpretation sticking, even if it’s different from how I see it.” When asked why, he explains, “For a painting, what’s important is that it’s passed down from generation to generation after it’s completed—that it’s handed down from one person to the next.”

“A piece of artwork isn’t complete until someone sees it, talks about it, and enriches its content that way. Take Leonardo da Vinci’s Mona Lisa, for example. Of course it’s a wonderful piece of artwork, but it grew into a world-renowned masterpiece through so many people talking about it, sharing their interpretations, and delving into it over time.”

An artwork shines all the brighter when viewers engage with it and talk about it freely, passing it down over generations. It’s clear that Murakami’s philosophy of art feeds into his works that express a unique, profound vision, a world of ideas.

語られる余白を持った芸術が、 次世代へと受け継がれる 独自の作風を確立している村岡さん。新作を描く際には、完成のイメージを鮮 明に思い描いているのではと思いきや、聞けば、描き始めるときに作品の方向 性は漠然としているのだとか。「描き進んでいく中で、パズルのピースがはま っていくイメージですね」 完成した作品に関しても、観る人に解釈を委ねることを大切にしています。「た とえば映画でも、起承転結が分かりやすいものの方が観ていて爽快かもしれま せんが、曖昧さを残して終わる作品の方が、あとで『これは何だったのだろう』 と想像が膨らむのではないでしょうか」 作品は自由に見てほしいと言い「作者である自分とは違う解釈が、一人歩きし ても全くかまわない」と語る村岡さん。その理由を「絵は、描いた後に語り継 がれ、バトンを繋いでいくことが大事だから」だと説明します。 「作品は、観た人が語ることで内容が充実し、出来上がっていくものです。た とえば世界的名画として知られるレオナルド・ダ・ヴィンチの『モナ・リザ』 は当然素晴らしい作品ですが、いろいろな人が語り、共有し、掘り下げられて いったことで名作に育ったのだと思います」 人々に自由に語られることで作品は輝きを増し、後世まで残されることにつな がる、という芸術理念を持つ村岡さんから、観念的で深い独自の表現が生まれ たのは必然だったのかもしれません。

The Need to Preserve Traditions and to Revolutionise: The Future of Japanese Painting While teaching Nihonga to university students, Muraoka feels the tendency of contemporary society to conform to traditional forms. “There are also systemic issues in education at art schools and entrance exam preparations, but overall, students nowadays are too quick to look for the ‘correct’ answers.”

As for the world of Japanese painting in the future, he says, “While we need people who preserve traditions, it’s also necessary to change our culture when we think about reaching international audiences. We need people who step outside the framework of Nihonga, too.”

In that sense, Muraoka firmly believes that “young people are full of potential.”

Muraoka is thoroughly immersed in the fascinating appeal of Nihonga. It is precisely because of his dedication to the art form that he is so determined to explore his own distinct ways of expression and enliven the world of Japanese painting with the younger generation of artists.

また、日本画の業界について「伝統を守る人も必要 ですが、海外への展開を考えると、体質を変えてい く必要があるでしょう。ある意味、日本画の枠から 外れた人も必要です」と今後を見据えます。 そういった意味で「若い人は可能性を秘めた存在」 と、確信を持って村岡さんは続けます。 日本画の持つ魅力を存分に知る村岡さんだからこ そ、自身の表現を突き詰めながらも、後進と共に日 本画業界を盛り上げていこう、という決意がその言 葉から感じられました。

MANIKA NAGARE Born in 1975. Lives and works in Tokyo. Graduated from Joshibi University of Art and Design’s Department of Painting, majoring in Western Painting, in 1997, and won the Jury Prize at Tokyo Wonder Wall in 2001. From 2002 onwards, she was an overseas trainee of the Agency for Cultural Affairs and the Pola Art Foundation in New York and Turkey, where she lived for six years. Her solo exhibition, “Spectrum of Vivid Moments” (22nd April 2022 - 29th May 2022) at the Pola Museum Annex, featured a number of new works, including the “Traces of Colour by Female Artists.” Nagare said “I wanted to review the way of life of women in Japan, and their way of life as artists and as a part of history, and connect that to the future.”

The Fragility of LIFE

and the Brilliance of COLOUR Nagare explains why she focused on the “boundary between life and death”: “I was involved in a support project in Turkey, which was hit by the 1999 earthquake, and when I visited children in disaster-affected areas for the “Artist for a Day” project, which was launched after the 2011 Great East Japan Earthquake, I felt that part of the beauty and power of nature is that feeling of awe, particularly when it comes to natural disasters. That awe at the power of nature caused me to feel something, and expressing that feeling became the theme of my work.” She continues, “when I looked after my father a few years ago, I strongly felt the green colours of nature, and the light of the sun. When you experience the death of a friend or someone close to you, there is a change in your visual senses. I felt the need to express those realisations as an artist.”

Nagare says that “unlike the Western Christian view of life and death in which people ascend to heaven when they die,

in Japan there is a sense that there is something beyond this life, and that you cross rivers and oceans to get to that world.”

“In-Between” (2019-) is a series of paintings based on the impulse to “carefully depict these gradations without such boundaries.”

On her website, Nagare explains the concept behind the series: “When death is close to you, you realise that you are finite, and suddenly this world looks incredibly beautiful. Ryunosuke Akutagawa, who eventually committed suicide, said in his posthumous manuscript “A Note to a Certain Old Friend”: “I find nature more beautiful than ever,” and described his own gaze as “the eyes of a dying man.” Even if your own death is not imminent, you may experience the same kind of gaze when facing the death of someone close to you. I became aware of my own eventual demise, and in doing so, realised that I am alive,” (excerpt) she explains, in her own words.

と 此 岸 が あ り、 川 や 海 を 越 え て あ ち ら 側 の 世 界に行く」という感覚があると言います。「In Between」(2019-) は、「そういった境界線のな い、グラデーションを丁寧に描きとろう」という 衝動をもとに描き始めたシリーズなのだとか。 このシリーズのコンセプトについて、流さんは自 身のホームページで、「死が身近にある時、人は 自分が有限であると実感し、この世はとてつもな く美しく見える。自死を決意した芥川龍之介が遺 稿『或旧友へ送る手記』の中で、『只自然はかく 云う僕にはいつもよりも一層美しい』と語り、そ の自らの視線を『末期の眼』と表した。自らの死 が迫っておらずとも、近しい人の死に直面した時 も同様の視線を得ることがある。自分の終末を意 識し、生を実感する。」（一部抜粋）と瑞々しい 言葉を紡ぎ、説明しています。

生命の有限性と 色の輝き

流 さ ん は「 生 と 死 の 境 界 」 に 注 目 し た 理 由 を 「1999 年の地震で被災したトルコへの支援プ ロジェクトに関わった経験や、2011 年の東日 本大震災をきっかけに立ち上げたプロジェクト 『一時画伯』で子どもたちと被災地に訪れた際 に、自然の美しさや力強さには自然災害といっ た畏怖が含まれているから感じるものがあり、 それを表現していくことが自分の制作のテーマ になった」と言い、「数年前に父を看取ったと きに、自然の緑の色や太陽の光を強く感じたこ とがあった。友人や近しい人の死を間近に迫る と、視覚的な感覚の変化がある。そういった気 づきをアーティストとして表現する必要性を感 じた」と、語ります。

Nagare is known as a “painter of colours.” She puts paint on canvas without mixing it.

“Most painters mix pigments on a palette to create their own original colours, but I express the richness of the colours by applying them as they are and layering them on top of each other.

I feel as if each colour comes to life when I do this, whereas if I mix the colours together, I feel as if the colours are trapped inside the canvas.”

Nagare says that there is a unique texture that can be achieved by layering layers of thinly spread paint on top of each other.

“If the pigments are derived from earth, they leave traces on the canvas, as if the grains of earth are stuck to the canvas. I try to make sure that the colour itself develops organically, so that the inherent

properties of the colour can be brought to life on the canvas.”

Nagare’s interest in colour is also directed towards people’s colour sensitivity. She says that there are differences in the way people perceive colours depending on the country or region in which they live, such as differences in religious values and sensibilities rooted in daily life.

Nagare is also involved in the “Colours of Japan” project, which explores modern Japanese colours, and says that Japanese people tend to perceive colours emotionally. She points out that during the Edo period (1603 - 1867), the colours that could be worn were limited by the status system, so even with just the limited browns and greys, there was such a variety of ingenuity that the term “48 browns and 100 greys*” was born, showing the peoples’ sensitivity to subtle colour differences.

Layers of Living Colours

こうした流さんの色への関心は、人が持つ色彩の 感受性に対しても向かっています。宗教的な価値 観や生活に根付く感覚の違いなど、 色の感じ方は、 住む国や地域によって違いがあるのだとか。

現在の日本の色を探るプロジェクト「日本の色」に も参画している流さんは、日本人は色を情緒的に 捉える傾向があると言います。江戸時代には身分 制度で身につけられる色が限られていたので、そ の限られた茶色と灰色だけでも四十八茶百鼠とい う言葉が生まれるほどのバリエーションの工夫が あり、色文化からその感性を見て取ることができる と指摘します。

Aside from creating art, Nagare is also involved in the activities of the non-profit organisation Artist for a Day, which brings art to children who would normally have no opportunities to experience it themselves. “ There a re people who w i l l never go to a n a r t museum in t heir lives. When we orga nise workshops for children at museums, parents with an interest in art apply to take part, so most of the children who come to those workshops have already had contact with art before. I wanted to do something for children who have never had such an experience in their lifetime. So, in an attempt to bring art to places where there is no art around, I have held workshops at evacuation centres and institutions in disaster-affected areas.”

Nagare also says she wants to change the Japanese custom of treating art as a rarity, which is why she is actively collaborating with brands and creating public art.

“I hope that the culture of decorating one’s life with paintings and going to see art on a whim will spread to Japan.”

流さんは制作の傍ら、アートに触れる機会のない子どもたちにアートを 届ける非営利団体「一時画伯」の活動も行なっています。 「一生のうちに一度も美術館に行かないような人がいます。美術館で子 ども向けのワークショップなどを開催しても、アートにアンテナを張っ ている親御さんが応募して参加されるため、来るのはもともとアートに 接したことのあるお子さんが多い。私は一生のうちに一度もそういった 経験をしない子のために何かしたいと思いました。そこで身近にアート がないところにアートを持って行こうと、被災地の避難所や施設でワー クショップを行ってきました」 さらに、アートを特別視する日本の習慣も変えたいと言い、そういった 願いもあってブランドとのコラボレーションやパブリックアートの制作 も精力的に行なっているのだとか。 「生活の中に絵画を飾ったり、ふらっとアートを観に行くような文化 が、日本にも浸透してほしいと思っています」 そう真摯に語る流さん。話す言葉の端々にもプリズムのように光彩を放 つ感性が宿っていました。

YO S H I M A S A T S U C H I YA Born in 1977, Yoshimasa Tsuchiya graduated from the Sculpture Course in the Faculty of Fine Arts at Tokyo University of the Arts in 2001 and completed a doctorate degree in the Conservation Course in the same Faculty in 2007. As a postgraduate student, he began applying the techniques of Buddhist art to make wooden sculptures.

He continues to form dreamlike sculptures that have an air of innocent sacredness. We spoke to him about his creative practice.

Ever since he was little, Tsuchiya loved arts and crafts. He’d always wanted to make sculpture his work.

“In my kindergarten graduation yearbook, I wrote that ‘my dream for the future is to become a sculptor.’ I’m grateful for the environment I grew up in: my family was supportive, encouraging me to tap into my individuality and skills.”

Once he entered art school, he viewed many artworks from the past to learn from them. One of those works that left a deep impression on him was a Buddhist sculpture he encountered during a study trip.

With that realisation, Tsuchiya began to apply Buddhist sculpture techniques to his own work to pursue a unique way of expressing himself in woodcarving.

作品周囲の空気も 造形したい

“In the Dōganji Kannondō in Shiga Prefecture, there’s an incredibly beautiful statue called the Eleven-Faced Kannon. As I stood in front of it, face-to-face, I felt as if it was speaking to me, asking me questions. I was very moved. The sacred robes were drifting in soft waves, expressing a pleasant breeze. It was like the sculpture was shaping the very air around it. It made me want to make an artwork like that.”

幼い頃から図画工作が好きで、彫刻を仕事にしたいと思っていたという土屋さん。 「幼稚園の卒園アルバムに、『将来の夢は彫刻家』と書きました。個性や特技を生かし、見守 ってくれる家庭環境だったことに感謝しています」 美術大学に入学すると、学びを得るために過去に作られた多くの作品に触れたと言いま す。そんな土屋さんの心を動かしたもののひとつが、研修旅行中に出会った仏像でした。 「滋賀県の渡岸寺にある渡岸寺観音堂には、十一面観音というとてもきれいな仏像がありま す。向き合って見ていたら、問いかけられているようでとても感動しました。たなびいている 天衣は心地よい風を表現していて、周りの空気も造形されているようでした。こんな作品を自 分も作りたいと思いました」 そうして土屋さんは仏像制作の技法を応用した独自の木彫表現を追求していきます。 Gen de Art September 2022

Tsuchiya sought to express emotions in forms that have eyes, a nose, a mouth, and limbs, so he gradually settled on animals as his motif. He moulds each animal as a symbolic being that holds an inner world.

“For example, a lion is a symbol of ‘strength,’ but I wonder, what would happen if I make a lion that’s not so strong? If it can betray the viewer, in a good way, the artwork seems to walk on with a life of its own.”

sculpture called “g yokugan.” A rounded crystal or glass is fit into the statue’s eye sockets from behind to create a life-like effect. The gaze of such wooden statues leaves a lasting impression. For Tsuchiya, t he scu lpt u re’s fa ci a l ex pre s sion i sn’ t something that he deliberately designs in the beginning—instead, it comes into being in the process of creation.

“I have a general idea of how the face would look when I begin, but its expression and personality become clearer as I go on. Even though I’m the one shaping it, I couldn’t tell you how it will come out.”

Another distinctive feature of Tsuchiya’s st yle is his use of a cer tain milk y white

colour, similar to ivory or alabaster. Since he felt t h at u s i n g mu lt iple colou r s or adding patterns to his sculptures would be too distracting, choosing this method of colouring was crucial.

“I want to give the impression of a soft, downy touch, like baby skin,” he says. “Once I paint the first layer of white and the subtle pink around certain places like the eyes, the sculpture suddenly seems to come alive. It’s a fascinating part of the process, even for me.”

Ts uch iya’s de scr ipt ion of t he creat ive process, which includes moments even the artist himself can’t imagine beforehand, is like listening to a story of an independent life coming into being.

像に命を吹き込む 土屋さんは目や鼻、口、手足のあるもので心情を表現 したいと思い、動物をモチーフに用いるようになった のだとか。内的な世界を投影する対象として、シンボ リックに造形していきます。 動物は一般的なイメージとは異なるものになるように 意識しているといいます。 「ライオンといえば “ 強さ ” の象徴ですが、あまり強く ない獅子（ライオン）だったらどうだろう、とか。い い意味で裏切るようなものにすると、作品が自分自身 で歩き出す感覚があるんです」 土屋さんの作品には、仏像彫刻で用いられる技法「玉 眼」が用いられています。ガラスや水晶の瞳が入り、 命を吹き込まれた木像たちが向けるまなざしはどれも 印象的です。しかし表情は初期にデザインされたもの ではなく、制作過程で生まれてくるものなのだそう。 「顔は初めからだいたい決めていますが、表情や性格 は作りながら決まっていきます。他人事のようですが、 どのようになるかは僕にもわかりません」 さらに土屋さんの作品の特徴でもある、乳白色の色使 い。立体作品にさまざまな色や模様があると邪魔にな るため、この彩色方法を選んだのは「必然だった」と 言います。 「赤ちゃんの肌のようなフワッとしたニュアンスを表 現したいと思っています」「白い下地を塗り、ピンク の淡い色を目の周りなどに入れると、急に血が通った 印象になります。それは自分でも面白いと思うところ ですね」 制作には作者にも想像できない工程が含まれるとは、 まるで自立した生命が誕生するエピソードのようです。 Gen de Art September 2022

TECHNIQUE AND EXPRESSION “ Some a r t i s t s m i ght s ay t h at pa i nt i n g a piece of sculpture is heresy,” says Tsuchiya.

However, as an artist, he can’t help but keep exploring different methods of expression.

“At one point in the past, I used to have this vague notion that there was a right answer, and that someone would teach me what it is. Now I believe that it’s important to try things out for myself, without constraints.”

In his work, Tsuchiya also places value in creating a sense of translucency and making the most of the qualities inherent in the material.

“The light texture is vital for letting it coexist with the natural texture of the sculpture itself.”

The unique, weightless form of the animals, which stimulates

the imagination, is also inspired by Buddhist statues.

“If I can make the creatures seem like they’re not pressed down by the earth’s gravity, but are instead somewhere like the world of the moon—as if they’ve just f luttered dow n w ith the sof test touch—then, nat ura lly, the atmosphere around the work begins to change as well.”

Where does Tsuchiya get his inspiration from when it comes to form? He has quite a surprising answer to this question. “From the plants in my garden,” he explains. “It’s very interesting, watching them grow and transform in shape. Sometimes I think, ‘Oh, that’s a nice curve.’ There have been times when I got the idea for a silhouette shape by observing plants like that.”

It seems fitting that the still forms of the animals, with their graceful, rounded curves, stem partly from the shape of plants.

追求が独創性を形作る

「彫刻に色を付けることを邪道に感じるアーティストも中にはいるでしょ う」と、土屋さん。 ですが表現者として技法を試行錯誤することは避けられないのかもしれま せん。 「昔は何か正解があって、誰かが教えてくれるだろうと漠然と思っていた 時期もありました。今は自分で自由に試すことが重要だと思っています」 土屋さんは透明感や素材が持つ性質を生かすことも重視しているとか。 「薄いテクスチャーは、彫刻の質感と共存させるためには大切なんです」 自重を感じさせない生き物たちの幻想的なフォルムは、仏像を参考にして いると言います。 「地球の重力を感じるようなものではなく、月の世界にいるような、フワッ と舞い降りた感じが出せると、自然と作品の周りの雰囲気も変わってきます」 では独自の造形のイメージは、どのようなものから着想を得ているのでし ょうか。尋ねてみると、とても意外な回答でした。「庭の植物です。成長 して形を変えていく様子は、見ていて面白いですね。『このカーブは良い な』とか。そうやってシルエットを思いついたこともあります」 柔らかな丸みを帯びた動物たちの静的なかたちは、植物由来のものなのか もしれません。 Gen de Art September 2022

ART IN EVERYDAY LIFE At the end of the interview, we asked him about his aspirations for the future.

“I’ve been making sculptures in this milky white colour so far, but I also feel the urge to broaden my range of colours. In terms of material, too, I’ve been using wood that can give a sense of translucency, but I want to try another material to explore expressions that can’t be done with wood.”

In addition, as a new venture, he has opened an online shop featuring “art toys,” miniature versions of his wooden sculptures.

“This has been a dream of mine for many years, so I’m excited that I’ve finally made it happen. I want people to enjoy art as something close to them in everyday life. I hope to keep this up in the future, too,” he says.

Tsuchiya’s body of work tells a story of one artist pursuing the secrets of technique and expression, and gradually forming his very own style of expression like no other. Speaking to him, one can sense the pulsating energy of the artist radiating from him—the creative impulse to never stop pursuing new possibilities.

Born in Yamagata Prefecture, Hirokazu Tomisawa has a kind smile for everyone.

His career is flourishing as the head chef and manager of the Japanese restaurant, Yoshimura, and he has also been recognised officially as a Contemporary Highly Skilled Craftsperson and is active as a Goodwill Ambassador of Japanese Cuisine, appointed by the Ministry of Agriculture, Forestry and Fisheries. HIROKAZU TOMISAWA What was it that turned you on to becoming a chef in Japanese cuisine? What do you remember most from your apprentice days?

Many years ago, there was a drama show on TV called Dear Mother (Zenryaku Ofukuro-sama), starring Kenichi Hagiwara. As soon as I watched it, I thought, “this is it.” I wasn’t interested in anything else.

There were many restaurants around my childhood home, and when I passed through the side alleys, I could look right into their kitchens. I was full of admiration for the itamae (expert cooks) as a young child. I also saw restaurants for other cuisines, like Western, Italian, or Chinese, but I was always set on studying Japanese cuisine. I never wavered.

I was born in Yamagata, and I first became an apprentice in Kyoto. I was blown away by all the ingredients that I had never seen, let alone heard of, both vegetables and fish. When I tried them, it was so delicious that it made me want to learn more. I was amazed by the subtle techniques for using knives, too, and how they differentiated between each kind of knife depending on the use. I couldn’t wait to master those skills myself.

Even on my days off, I showed up to the kitchen. Then my boss would let me try some new skills on the side and things like that. It’s a tough field, so the work was intense, but all the same, I had fun.

冨澤さんが日本料理の料理人を目指したきっかけ、修行時代 の印象に残っている出来事を教えてください。 昔、萩原健一さんの「前略おふくろ様」ってテレビドラマが あったんですけど、それを観た時に「これしかないな」と思 いました。他に興味があるものってありませんでした。 実家の周りに料理屋さんがたくさんあって、脇道を通るとち ょうど調理場が見えていました。幼少期はその板前さんの姿 への憧れがありましたね。洋食やイタリアンや中華もあった けど、日本料理を勉強したいとだけ思って、気持ちが変わる ことはありませんでした。 僕は山形生まれで、最初に修行に入ったのは京都だったんで す。野菜も魚も知らない食材、初めて見る食材だらけです ごく衝撃的だったことを覚えています。食べたら美味しくて 「もっと知りたい！」と思いましたね。包丁の繊細な使い分 け、技術もとても驚きました。自分も早くその技術を習得し たいと思いました。

Could you tell us about your creed, “the bowl is a kimono for the meal”?

What would you like to show or convey to people through Japanese cuisine?

It’s a maxim by Kitaoji Rosanjin, a representative artist of Japan. He was a restaurateur, painter, ceramicist, calligrapher, as well as a gourmet. For us cooks, he’s truly a star. I came across this saying in a book about him. “The bowl is a kimono for the meal.” It’s an obvious truth, of course, but it left a deep impression on me, and I’ve carried those words with me since.

Of course, Japanese cuisine and the four seasons are just inseparable. I’m always attentive to what’s in season and making the best of those seasonal ingredients. And then I think about how easy it is to eat for the customer, and how balanced the meal is in terms of nutrition. I think Japanese food has gained much attention overseas as a healthy cuisine. The nutritional balance and using ingredients that are in season are extremely important elements.

Through my work, I often meet ceramicists. I strongly believe in t he power of unique bowls a nd dishes, stamped with the personality and individuality of each artist, to showcase the colours of my Japanese cooking.

Sometimes I choose the bowl first, sometimes the menu.

Technique is very valuable as well, though this applies to other cuisines, too. Even using one knife, for example, involves delicate techniques—it’s a form of art. I believe we need to hone our aesthetic intuition for the whole process, including the arrangement of the meal for serving.

Each ceramic piece has its own character—if it’s made by a young artist, it might be vibrating with energy, and if it’s by a woman artist, you might feel a sense of warmth or gentleness. It’s a wonderful thing, those colourful personalities.

As for things that are related to Japanese food, there’s the cultures of tea ceremonies and f lower arrangement, so I’d very much like to spread more knowledge about those. As a craftsman in Japanese cuisine, I couldn’t possibly offer any meal without having learnt about these two traditions first.

冨澤さんが日本料理を通して伝えたいこと・知ってもらいた いことは何でしょうか。 やっぱり日本料理と四季って切っても切り離せないですよ ね。素材の活用や旬、ここは意識しているところです。そこ から食べやすいか、栄養のバランスを考えてお出ししない と、と思っていますね。海外でも健康料理としての日本食は とても注目されていると思いますが、栄養のバランスも、旬 のものを使うことも非常に重要です。 また、和食に限らずですが、技術もとても大切です。包丁ひ とつとっても、繊細な技術が生み出す芸術があります。盛り 付けも含めて美的感覚を研ぎ澄まされていないといけないと いう想いがあります。 日本食にまつわるところから言えば、お茶とお花は、全て日 本料理に通じることがありますので、これはぜひ知ってもら いたいと思います。日本料理の職人としても、この二つを知 らずして日本食を提供することはできません。

How has your experience been as a Goodwill Ambassador of Japanese Cuisine?

I’ve had the opportunity to visit various places in China, and I’ve also given a Japanese cooking class in Paraguay. The title of that class was “Sushi,” actually. It goes to show how deeply sushi has taken root. I taught them about what the typical Japanese course meal entails, but in the Q & A session at the end, they asked me to teach them how to make nigiri sushi. For sushi, you use a variety of knives in different methods depending on the ingredients, and I realised just how central sushi is in people’s image of Japanese cuisine. That was a valuable moment for me.

Besides those experiences, I also offered sampling sessions and received feedback face-to-face at places like embassies and shopping malls. It was indeed a great pleasure to hear how much people in other countries enjoyed Japanese cuisine.

Is there anything you keep in mind in your work, or a goal you’d like to achieve in the future?

At Yoshimura, we also offer lunch and bento (lunch box) menus—we believe that people don’t necessarily have to pay a high price to enjoy excellent Japanese cuisine.

I always think about the highest level of meal I can offer, making the best use of the subtle techniques and ways of using ingredients that are specific to Japanese food.

Chefs of Japanese cuisine have mastered many different techniques, so I hope to create such courses that will captivate the taste buds of our diners.

日本食普及親善大使としての活動で印象に残っているエピソードを 教えてください。 中国は各地に行かせてもらって、パラグアイでは日本料理の授業を やらせて貰いました。そのクラスの名前自体が「SUSHI」なんです よ。寿司の根強さを感じました。日本の懐石料理やコースの流れな どを教えたのですが、結局最後の質問時間で聞かれたのは「寿司の 握り方を教えてください」でした。食材によって包丁の使い方・種 類も違うし、日本料理としての寿司の印象は強いのでしょう。気づ きのある貴重な時間でした。 また大使館やショッピングモールでも、日本料理の試食や意見を直 接聞いたりしました。海外の方にも日本食を「おいしい」と言って もらえるのは、やはり非常に嬉しかったですね。 冨澤さんが心掛けていること、実現したいことを教えてください。 よし邑ではランチやお弁当もご用意していますが、高い金額を出さ ないと良い日本料理が食べられないということはないと思っていま す。日本料理ならではの繊細な技術と食材の使い方を工夫して、 どれだけの料理を提供してあげられるかということを心がけていま す。日本料理の職人は色んな技を皆さん使いこなせると思いますか ら、そういう日本料理をお客様に魅せてあげたいと思っています。

After honing his Japanese cuisine at Tsuruya’s main restaurant, he became head chef at Umu in London in 2004, before becoming executive chef at Hoshino Kyoto, at the Hoshinoya Resort. The following year, in 2012, Hoshinoya Kyoto was awarded a Michelin Star. Ichiro Kubota, who has built up his career both in Japan and abroad, and is currently the owner and chef of KITCHEN 16 in Kyoto, looks back on his trajectory as a chef and explores the origins of his creative and artistic sensibility, which goes beyond the boundaries of Japanese cuisine.

The Kyoto Traditions that Nurtured Ichiro Kubota’s Sensibility

Chef Ichiro Kubota was born to the second-generation owners of the renowned Japanese restaurant Kappo Hassun in Gion, Kyoto. His father, a chef, had many acquaintances who were potters and lacquerware craftsmen, so Kubota learned first-hand that “tableware is indispensable to cooking.”

“My father used to say, “Cooking and tableware converse with each other.” In Japan, there are four seasons, which are deeply related to ingredients and cooking methods. If Japanese cuisine uses rich ingredients and paints a picture of the four seasons, then the tableware is the frame.

Furthermore, he says that Japanese cuisine has an artistic aspect, much like bonkei*, which creates a landscape.

“For example, a 24cm tray of kaiseki cuisine depicts a scene on a wooden tray.

Through the scenery, which changes with the seasons, I feel the depth of the ingredients and the fascination of Japanese cuisine.”

On the other hand, Kubota also has a side that is not bound by traditional frameworks. His curiosity about other culinary fields besides Japanese cuisine seems to have started at an early age.

“My grandfather on my mother’s side in Hiroshima loved to eat, so when I went to Hiroshima for summer holidays as a child, we would eat at the French restaurant in the hotel. That was something I looked forward to very much.”

This joy turned into longing, and he says, “By the time I was in primary school, I was attracted to the sight of cooks, glittering chandeliers, and crockery.” Having made up his mind to become a chef, Kubota entered the world of Japanese cuisine after graduating from university.

京都・祇園にある割烹料理の名店「割烹 八寸」の 2 代目 として生まれた、シェフの久保田一郎さん。料理人の父に 陶芸家や漆器職人の知人が数多くいたことから、「料理に 器は欠かせないもの」と、肌で感じたとか。

「父はよく『料理と器は一つの会話や』と、言っています。 日本には四季があり、それは素材や調理法に深く関わって います。日本料理が豊かな素材を使い、四季という絵画を 描くものであるとすれば器は額だと思います」 さらに、日本料理には盆景のように景色を生み出す芸術的 側面があると言います。 「たとえば会席料理の八寸（24㎝）は、木盆の上にひとつ の情景を描きます。季節によって変わる景色を通じて、素 材の奥深さや日本料理の魅力を感じています」 一方で、伝統的な枠組みに縛られない一面も持つ久保田さ ん。日本料理以外の調理分野への好奇心は、幼少期に芽生 えていたようです。 「広島の母方の祖父は食べることが大好きな人で、幼い 頃、夏休みに広島へ行くとホテルのフランス料理店で食事 をしました。それがとても楽しみでした」

Learning the Importance of Margins, From Western-Style Painter Morio Matsui After training at his parents’ restaurant Kappo Hassun and the main restaurant of Tsuruya in Osaka, Kubota began training in French cuisine at HOTEL LA VILLA in Corsica, France, in 2003. During this time, he went to the studio of the Westernstyle painter Morio Matsui and received advice from him that would become the basis of his current artistic perspective.

“When I brought my sketches to his studio, he pointed out that if I drew everything I wanted to draw, the picture would become boring. I learned that it is important to leave room for the recipient’s imagination.”

Furthermore, Matsui was also a key figure in helping Kubota surpass his father, who was his first teacher.

“He told me “I think you’re bound by a sense of duty, that you feel you have to make Japanese cuisine like your father. But Ichiro, you should cook the food you want to cook.” I think Matsui-san had a big influence on who I am today.”

In this way, the artist’s words inspired him to take his first step to explore the path of a chef.

The talented chef, who has had a spectacular career both in Japan and abroad, including a stint as executive chef at a kaiseki restaurant in London, is now surprisingly involved in a Thai restaurant specialising in take-away food. He runs KITCHEN 16 with his wife, Kaori.

sweetness of the pudding batter. The deep flavour lies in the ‘koji’, which is a very distinctive partner for whisky and brandy.

With this dish, they are introducing a new, mature way of enjoying whisky and pudding to the world.

Kubota’s favourite artist is “Pablo Ruis Picasso.”

Even in Thai cuisine, the approach of bringing out the best of the ingredients, which is the basis of Japanese cooking, is still alive and well, and Kubota describes producers as “important partners, who serve as a reference guide.”

“I try to listen to and analyse the opinions of producers honestly in order to be honest within my own cooking.”

“Before, I preferred realistic paintings and couldn’t understand those crumbling Picasso drawings. But when I saw an eightyear-old Picasso’s painting of a lion, which he drew with his outstanding drawing skills, I was very impressed.”

One of the restaurant’s signature products, which include Thai curry and khao man gai, is an unusual white miso crème caramel. They have created a dessert that goes well with whisky.

The foundation is there, so it can be ‘broken down’. “I can quote the glittering world of French and Italian cuisine because I have a foundation in Japanese cuisine,” he explains, paying homage to the artist and noting the similarities between his own style and that of Picasso.

The ‘caramel’ of the pudding, made with mirin (sweet sake) from Nara Prefecture’s Yagi Sake Brewery, is rich and flavoursome, with a moderate bitterness that compliments the

Kaiseki is a unique Japanese culinary tradition where food is experienced as a series of carefully crafted dishes that reflect seasonal changes and are designed to appreciate the resources provided by the local environment. This is the philosophy behind the creation of the two-Michelin-star n/ naka restaurant opened in Los Angeles by Niki Nakayama and Carole Iida Nakayama who are also partners in life.

We spoke with chef Niki Nakayama and sous chef Carole Iida Nakayama at n/naka about the cultural meaning of kaiseki, the importance of the broader Japanese tradition in their philosophy and the sources of inspiration for their work at the restaurant.

Tradition behind the art of

“ Kaiseki provides kind of a bridge for us

The chefs acknowledge the deep cultural roots of the kaiseki cooking tradition and describe how this Japanese custom affected each of them personally.

Niki Nakayama mentions that her idea to explore the tradition of kaiseki had strong connections to her vivid first experience with it. “What encouraged me to pursue kaiseki was the fact that my first experience was very profound and I enjoyed how special it felt,” – she says. “I always remembered it. It’s like opening little gifts because everything comes in these small plates and a beautiful setting.”

Carol Iida Nakayama, who grew up in Los Angeles, recalls that her immigrant parents were also running restaurants in the

city, which was the reason why food had great importance in the family.

“It was a way for me to feel connected to my family. Going to Japan and visiting our family, my brother and I were the only ones here in America, while the rest of our in-laws and families were in Japan,” – Carol explains.

Niki also states that , for her, “kaiseki is about the deep understanding and learning about Japanese culture”.

“What I feel most connected to about that is this, this part of Japanese culture that is, has gratitude toward nature. And I think that is what I find very enjoyable,” – she adds.

一方、ロサンゼルスで育ったキャロルは、移民であった両親もレス トランを営んでいたため、家族にとって食は大切なものだった、と 振り返ります。

また、ニキにとって「懐石とは、日本文化を深く理解し、学ぶこと」 でもあるそう。 「一番つながりを感じるのは、日本の文化には自然への感謝の想い があるという点です。そこに私は楽しみを見つけたんだと思います」

懐石料理は

ニキが懐石料理の伝統を深く知りたいと思ったのは、懐石料理を初 めて食べた時の鮮烈な経験と深いつながりがあるそう。「初めて食 べたときの経験がとても深く、特別感を楽しめたことが、懐石を追 求するきっかけとなりました。あの経験は何度でも思い出してしま うんですよね。小さなお皿と美しいセッティングに彩られたいろん なお料理が出てきて、まるで小さなプレゼントを開けるときのよう な感覚で」

お互いにコミュニケーションをとり、 お互いを理解し合うための 架け橋のようなものです

American soil, Japanese philosophy Niki and Carol emphasise that the concept behind their restaurant is founded on the connections between the longstanding Japanese traditions and the resources provided by the natural environment in California, thus creating a unique marriage between the two cultures.

“As chefs, you intrinsically want to develop your technical skills, so a lot of focus is on how it is done traditionally,” – Carol says.

“But over the years we have been able to take that backbone of tradition and evolve it in a way that matches the environment, the weather and the people here, as well as our desire to express things on the plate in our own way.”

Niki adds that the chefs hope that their guests, when tasting the food at n/naka, can experience the combination of both the Japanese and the Californian feel. “We want people to see how the flavour profiles are very Japanese, but at the same time, they not,” – she says.

“It’s always about gratitude, this feeling of understanding that we are all here, in the space of nature. And we really need to honour this moment that we’re here.”

The chefs recognise, however, that working in the food industry in America is linked to various challenges, specifically, the environmental ones. “Today’s key challenges are definitely the drought, the lack of water and the fires. The environmental issues we’re constantly facing during certain seasons very much affect the ingredients we are able to get,” – Niki mentions.

Carol adds that the current climate in California makes the work at n/naka increasingly difficult: “People often joke about Los Angeles not having seasons, and yes, it is very hard to notice the real seasonal shifts. For example, in the winter, the temperature can be 80 degrees. For us as chefs it makes it tricky to plan a menu: sometimes, you want to do a winter-inspired menu and represent what winters should feel like, so it can be hard to bring that together as a full experience in California.”

n/naka の料理を味わうことで、日本とカリフォルニア両方の感覚の融合をゲストに体 験してもらいたいと話すニキ。「日本らしいけど、同時に日本らしくない、そんな風味 を楽しんでもらいたいですね」 「私たちは皆、この自然という空間の中にいることを理解し、感謝すること。そして、 私たちがここにいるこの瞬間に誇りを持つということ、ですね」 アメリカの食品産業で働くということにはさまざまな挑戦がある中で、特に環境問題は 大きな課題だと話す 2 人。「今の主な課題は、干ばつ、水不足、火事です。その季節に なると、こういった環境問題が食材の調達に大きく影響します」とニキは言います。 キャロルによると、特に近年のカリフォルニアの気候のせいで、n/naka でのメニュー づくりはより難しくなっているそう。 「ロサンゼルスには季節がないと冗談でよく言いますが、実は本当に季節の移り変わり があまり感じられないんです。例えば、冬には気温が 26℃まで上がることもあり、そ うなるとメニューを考えるのが大変です。冬を連想させるメニューをつくり、冬とはど のように感じるものかを表現したくても、カリフォルニアでそれを 100% 実感してもら うのはなかなか難しいですね」

Inspiration in simplicity

The chefs discuss the inspiration behind their dishes served seasonally at n/naka, saying that most often the goal is to not just create a balanced flavour and beautiful presentation, but to convey a certain feeling anyone can understand and relate to.

“There is a true heartfelt sense of wanting to gift this special experience to your guests, the experience that exceeds the technical parts of fine dining,” – Niki elaborates.

“We are collecting these feelings and images of what it feels like right now. For example, when you are passing by a tree in the autumn and you see the leaves falling, then you feel a nice breeze coming, giving you a sense of happiness yet a little bit of loneliness too.”

“I think in doing the work we’ve done and having the technical abilities we’ve developed over many years, it is always about trying to find a way to visually express a feeling,” – Niki explains, adding: “So, we always start with that in terms of trying to recreate a feeling that we personally have.”

She continues, saying that, once the feeling is identified, the chefs move on to developing the best ways in which it can be expressed through food. For instance, Niki says, “it makes sense during winter time to have food that is heavy and rich, and then make sense when it gets warmer and warmer to lighten it.”

“With kaiseki, this depth is everywhere, and not just in the taste of the food but the actual care that went into the ingredients. People notice that, because it is a part of the enjoyment,” – Niki concludes.

In the near future, the chefs are opening a new restaurant called n/soto where they connect Japanese cooking traditions with various cultures. They plan to initiate collaborations with chefs from a variety of backgrounds to bring their guests new flavours, culinary experiences and ideas, which aligns perfectly with the innovative vision explored by Niki and Carol in their first venture.

n/naka の季節ごとに変わる料理は、バランスのとれた 味や盛り付けの美しさだけでなく、だれもが理解し、 共感できる感覚を伝えることを目指し、アイデアを出 しているそうです。 「ファインダイニングのスキルという面を超え、特別 な体験をゲストに贈りたいという想いが心からありま す」とニキは語ります。

「その瞬間にどう感じるか、そういう感覚やイメージ のようなものを集めているんです。例えば、秋に木の そばを通って葉っぱが落ちているのを見て、気持ちい い風が吹いてくると、幸せだけど、ちょっぴり寂しい 気持ちにもなる、みたいな」

Activities & Excursions Ise Shima National Park The protected forests surrounding Amanemu offer extensive walking and cycling trails. Each season offers a different experience, from pink sakura cherry blossom in spring to vibrant red maple leaves in autumn.

Ise Jingu The sprawling, revered Shinto shrine of Ise Jingu was first built in the late 600s. Dedicated to the goddess Amaterasu, it is rebuilt every two decades with wood from the ancient surrounding forests. Amanemu offers a range of private tours.
