WINE The summer issue starts in the French historic wine regions of Champagne and Burgundy,

known for producing the most extraordinary wines in the world. In conversation with Olivier Krug, the director of Krug Champagne, we explore the culture and true essence of

champagne, diving deep into the family history and winemaking culture of one of the most

significant champagne producers in the world. Maxime Cheurlin, head of Domaine Georges

Noëllat of Vosne-Romanée, spoke to us about his quick rise to fame and the mastery behind

his now renowned Pinot noir wines. Finally, talented young winemaker Olivier Bernstein talked at length about the importance of appreciation of Burgundy wines in his work.

Founder Joseph Krug consigned the founding principles of the House to posterity in a deep cherry-red notebook. 創設者のヨーゼフ・クリュッグ氏は、深いチェリーレッドのノー トで、メゾン設立の原則を後世へ残しました。

Established back in the 19th century, Krug Champagne is located at the heart of the French region of Champagne near the city of Reims. Krug expresses the true essence of champagne culture with its consistent commitment to the quality of every individual vintage and respect for the individuality of its champagnes. Olivier Krug is currently the director of the house of Krug, representing the sixth generation of the Krug family. Olivier recalls that he was interested in the business of champagne-making since he was a young child. He explains that, even though he was not allowed to enter the cellar where his father worked, as an energetic boy, he used to sneak in to feel the beautiful aromas of the wine.

“For me, it was like magic. I knew as a little kid that one day I wanted to join,” – he adds.

“I knew very early that champagne was a part of our life, but it was something everyone was very respectful of. On every special occasion, my dad was opening champagne and he was the only one to touch the bottle,” – Olivier recalls his early experiences with champagnes of Krug.

To him, his father was the one who stimulated Olivier’s interest in the family business and inspired him to join Krug Champagne as he graduated from university with a degree in business: “I was 23 years old when my father came to me and said: “I am going to retire in 15 years, so I only have 15 years to train the team that you will be taking over.” And it was the first time he ever mentioned me joining Krug Champagne.”

Olivier goes on to explain that, apart from the experience and craftsmanship, one thing that is deeply valued at the house of Krug is transmission, ensuring that the traditions, skills, and ideas on which the Krug brand is founded are passed on.

“Every time someone joins Krug, the mindset is about transmitting. It may be something that I’m doing for many years, but the day I pass it on to someone, they will already be projecting themselves in the next step.”

幼い頃からシャンパーニュ造りに興味があったというオリヴィエ。父親が働くセラーに入ることは許さ れていなかったにもかかわらず、エネルギー溢れる少年だったオリヴィエはよくそこへ忍び込み、ワイ ンの素晴らしい香りを感じていたのだそうです。 「私にとってそれは、まるで魔法のようでした。いつ かこの世界に入りたいと幼いながらに思っていました」 「シャンパーニュが生活の一部であることは小さいころから知っていましたが、それだけでなく、み んながシャンパーニュに高い敬意をはらっていることにも気づいていました。特別な日にはいつも父 がシャンパーニュを開けるのですが、ボトルに触れることができるのは父だけでした」 オリヴィエにとってその父親こそが、ワイン造りという家業への興味をかきたてた人物。オリヴィエ が経営学の学位を取得し大学を卒業するときに、クリュッグ メゾンの一員になるよう背中を押した のも、父でした。 「23 歳のとき、父が私のところにやってきて言いました。" 私は 15 年後に引退する から、おまえが引き継ぐチームを育てるには 15 年しかない “ と。それが、私がクリュッグ メゾンに 入ることについて、父が初めて口にした瞬間でした」 経験や職人の技に加え、クリュッグが深い価値を置くことのひとつに、ブランドの基盤である伝統や 技術、アイデアをしっかりと引き継いでいく「伝承」がある、とオリヴィエは言います。 「クリュッグに新しいメンバーが入るたびにいつも、伝承することを意識しています。自分は長年やっ てきたことかもしれませんが、誰かに伝えた日には、彼らはもうすでに次のステップに自分を投影し ているのです」

BRINGING KRUG TO JAPAN According to Olivier, the f irst challenge he was g iven as he star ted his job was introducing Krug Champagne to the Japanese market. His father thought that the best way for his son to train would be going away to a new and challenging market, as the family brand was still majorly unknown in Asia.

“I did not speak Japanese. The champagne market was very small and I was working for the distributor. The beginning was challenging because no one was really interested in Krug. It was the era of cognac in Japan. It was not the champagne time,” – he recalls, adding: “I made a list of the top a hundred restaurants in Japan and decided to visit each of them at least twice to make connections.”

Though success did not come immediately, Olivier says, but, thanks to his energy and perseverance, he managed to start building small points of distribution in Japan. “We started with love, and people fell in love with Krug immediately. We had Krug lovers from day one,” – he says.

He adds that, in his experience, “in Japan, more than elsewhere, you have to be extremely passionate”. The passion that Olivier was able to bring to the Japanese chefs was what set him and the brand of Krug apart from the competitors.

“People loved the taste of Krug because it has all kinds of aromas you could expect but it’s also very harmonious. You have these tiny bubbles; they play with your palate and on your tongue. They are elegant, so Krug is a taste for the Japanese people.”

“Krug is very modern and the taste is very accessible. You don’t need to be an expert to understand our champagne. The first sip, you may be a bit intimidated. The second sip is a “wow”, as you get to experience this firework of aroma,” – Olivier continues, describing the approach he used when promoting the company in Japan. 「KRUG ENCOUNTERS」 クリュッグ エンカウンターズ

「日本語は話せませんでした。日本のシャンパーニュ市 場はとても小さく、私は代理店で働くことになりました。 始めのうちは本当に大変でした、だれもクリュッグに興 味がなかったのですから。当時の日本はコニャックの時 代で、シャンパーニュはお呼びではなかったのです」さら にオリヴィエは続けます。 「日本のトップレストラン 100 軒をリストアップし、それぞれのお店に少なくとも 2 回は 足を運んで、コネクションを作ろうと決めました」 成功はすぐに訪れたわけではありませんでした。しかし、 彼自身のエネルギーと忍耐強さで、日本国内に少しずつ、 小さな販売拠点をつくることができるようになってきまし た。 「愛を持ってはじめました。そうしたらみんな、すぐに

クリュッグを好きになってくれた。最初の 1 日からクリュ ッグラヴァーをつくりだすことができたのです」 「日本では他の国以上に、熱い情熱を持っていなければ なりません」と話す彼が日本のシェフにもたらした情熱 は、彼自身とクリュッグというブランドを築き、他のワイン メーカーをも圧倒しました。 「クリュッグは、想像できうるすべての香りを持ち合わせ ながら、それらがとてもうまく調和している。だから人々 に愛されたのです。小さな泡が、舌の上で遊び回り味覚 をもてあそび、それでいてエレガント。クリュッグは日本人 の口に合う味なのです」

クリュッグに入って初めにオリヴィエへ与えられた課題 は、クリュッグ シャンパーニュを日本のマーケットに広め るという挑戦でした。当時アジアでは、クリュッグという ブランド自体まだあまり知られていなかったため、父は 「新しいマーケットへ飛び込むという挑戦が、息子にとっ て一番の勉強になる」と考えたのです。

日本での販路拡大アプローチについて、 さらに続けます。 「クリュッグはモダンでありながら親しみやすい味わい です。ワインのエキスパートでなくても、クリュッグのシャ ンパーニュを理解することができる。最初の一口は、少し 驚くかもしれません。2 口目は、花火のように華やかな香 りを体験し、思わずうーんと唸ってしまうでしょう」

THE HARMONY OF KRUG CHAMPAGNES To Olivier and his family, music has long been the inspiration for creating outstanding champagnes at Krug. It was something that his father taught him, saying to Olivier on the first day of work for the company: “This job is equivalent to that of a music conductor. Krug is like an orchestra where I have to sit every year, with all the different kinds of musicians. And every year I go to the music school and I listen to the new generation.”

Music has inspired Olivier to create something known as “Music Pairings” in the project called Krug Echoes. Instead of pairing champagne with food, they invite musicians who play the music that, in their opinion, matches the chosen champagne.

The idea was born in 2013 when Olivier travelled to Hong Kong and met with the head of the local orchestra and asked him to pair different champagnes with different music. “I remember that we started with Krug 2000 vintage, and he said: ‘This is my pairing’,” – Olivier adds.

Olivier concludes, saying that with music and champagne, “there is a dialogue between the two”, which allows the guests at Krug Echoes to truly experience the pleasure of drinking the Krug champagnes in a way that is completely revolutionary.

音楽をきっかけに、オリヴィエは「クリュッグエコー」というプロジェク トで「ミュージックペアリング」という概念を創り出します。シャンパー ニュと料理をペアリングするのではなく、音楽家を招き、選び抜かれた シャンパーニュにマッチする音楽を演奏してもらうという、音楽とシャ ンパーニュのペアリングです。

オリヴィエとクリュッグ一族にとって、音楽は長い間、傑出したシャンパ ーニュを生み出すためのインスピレーションとなってきました。 それは、 オリヴィエがクリュッグに入った初めの日に父から教えられたことでも ありました。 「この仕事は、音楽における指揮者だ。クリュッグはオー ケストラのようなもので、私は毎年そこで、さまざまな音楽家と席を並 べる。そして毎年音楽学校へ行き、新しい世代の音楽を聴くんだ」と。

Domaine Georges Noëllat of Vosne-Romanée, located in Côte de Nuits at the heart of Burgundy, is a small historic estate famous for its renowned Pinot Noirs – but only recently. Not long ago, the estate was known as a negociant, or wine trader business, and the production of wine started in Domaine Georges Noëllat when the young winemaker took over the estate in 2010.

Maxime Cheurlin became the head of the estate when he was 20 years old after his grandmother decided to retire. He was the person responsible for Domaine Georges Noëllat’s rise to fame and quickly earned the reputation of a talented winemaker, enjoying a powerful presence on the wine scene ever since.

We spoke to Maxime about the early start of his career, the changes that took place in the industry over the past decade, and the primary inspiration behind his world-famous Pinot Noir wines. ブルゴーニュ地方の中心、コート・ド・ニュイにあるヴォーヌ・ロマネのドメーヌ・ジ ョルジュ・ノエラ。歴史ある小さなワイナリーですが、ピノ・ノワールによってその名 が知られるようになったのはつい最近の出来事です。少し前まではネゴシアン（ワ インの流通業者）として知られていましたが、2010 年に現在の当主が若くしてドメ ーヌを引き継ぎ、そこからジョルジュ・ノエラでのワイン造りが始まりました。 祖母の引退の決断とともに、わずか 20 歳で当主となったマキシム・シュルラン。ジ ョルジュ ・ ノエラの名を世間に広め、 瞬く間に才能ある醸造家としての評価を獲得し、 現在はワイン界で強力な存在感を放っています。 若くして醸造家というキャリアを歩み始めたことや、過去 10 年間に起きたワイン 界の変化、そして今日では世界的に知られるジョルジュ・ノエラのピノ・ノワールの インスピレーションについて、 マキシム・シュルラン氏に話を伺いました。

The founder of the estate, Georges Noëllat, was the nephew of one of the established wine business owners in Vosne-Romanée, Charles Noëllat.

Until the estate was taken over by Maxime Cheurlin, the house started by George Noëllat specialised in selling the harvest to the leading winemakers in Burgundy.

Maxime began his path as a winemaker very young, as his 70-year-old grandmother Marie-Thérèse Noëllat was keen to retire and live a more tranquil life. Despite growing up in Champagne, Maxime had a chance to familiarise himself with the terroir of Burgundy during his studies in Lycée du Viticole in Beaune, and was even able to work with some of the reputable wineries in the region before joining the family business.

“I had the opportunity to start, being very young, and essentially do what I wanted,” – the young winemaker recalls. “The big objective was to make my own wines. I thought it was very easy.”

“Maybe I didn’t realise back then what I could make. In 2011, everything changed because everybody wanted my wine. It was a surprise for me, and it put more pressure on me to make wine that was good.”

Comparing the situation in the wine industry back when he started and in recent years, Maxime says the estate struggled without many customers and publicity since Domaine Georges Noëllat was known primarily as a negociant. Because of that, as Maxime says, he had little pressure when he just started making wine under the name of the estate.

NOW AND THEN ドメーヌの創設者ジョルジュ・ノエラは、 ヴォーヌ・ロマネのワイン事業主の一人、 シャルル・ノエラの甥にあたります。ジョルジュ・ノエラが始めたドメーヌは、当 初はブルゴーニュの主要ワインメーカーに収穫物を販売することを専門として いました。 当時 70 歳だったマキシムの祖母、 マリー・テレーズ・ノエラが、引退し穏やかな 生活を送りたいと希望したため、若くしてワイン醸造家の道を歩み始めたマキシ ム。育ちはシャンパーニュ地方でしたが、ボーヌのワイン醸造学校、リセ・ヴィテ ィコールでワインについて学びながらブルゴーニュのテロワールに親しみ、家業 を継ぐ前に、ボーヌの有名なワイナリーで働くという経験も得ました。 「若くして、やりたいことをやるチャンスを得ました。まず 1 番の目標は、自分の ワインを造ること。そしてそれは簡単なことだと思っていました」 「たぶんその時はまだ、自分が何を造ることができるのか気づいていなかった んです。2011年になって、私のワインを求める人が増え、 すべてが変わりました。 驚いたし、良いワインを造らなければ、というプレッシャーになりました」 彼がワイン造りを始めた頃と、ここ数年の状況を比べると、以前ジョルジュ・ノ エラはネゴシアンとして知られていたため、顧客も少なく知名度も低く、厳しい 状況が続いていたのだそう。そのため、ジョルジュ・ノエラの名でワインを造り 始めたばかりの頃は、まだプレッシャーも少なかった、と話します。

As Maxime speaks about the philosophy and inspiration behind his wine, he explains that today’s customers are different from the people buying wine 20 years ago. According to the winemaker, these changes make him rethink and adjust his approach every year.

“The reason is that now customers want some freshness and good balance, while, in the past, the idea was to make wine for new generations and wait 20 years for the wine to fully develop in the bottle. Now, for me, the idea is to make good wine now, every time,” – Maxime says.

“My inspiration is the pleasure I get when I drink wine, the freshness of the wine, the energy in your mouth.”

He goes on to explain that, for him, inspiration comes from the wines he wants to drink himself.

“My inspiration comes from the best wines in the world. Just in my village in Vosne-Romanée alone, I am inspired by Romanée-Conti, Leroy, Cathiard, Henri Jayer. It’s the inspiration from Burgundy,” – Maxime says. “But I can also find inspiration in Porto [Portuguese fortified wine], or in the German Riesling”. 彼自身のワインへの想いやインスピレーションについて語る中で、今の時代の顧客 は、20 年前にワインを買っていた人たちとは異なるという話をしてくれました。こ ういった変化を考慮して、毎年アプローチを見直し、調整しているそうです。 「以前は、新しい世代のためにワインを造り、ワインが瓶の中で完全に熟成するの を 20 年間待つ、という考え方でした。しかし今、顧客は新鮮さとバランスの良さを 求めています。そして今の私の考えは、今も、そしていつでも、良いワインを造るこ とです」 「ワインを飲むときの喜び、新鮮さ、口の中に広がるエネルギー。これが私のイン スピレーションです」 さらに「自分自身が飲みたいと思うワインからも、インスピレーションを受ける」と も語るマキシム。 「私にインスピレーションを与えてくれるのは、世界中の素晴らしいワインです。例 えば私の住むヴォーヌ・ロマネ村だけでも、ロマネ・コンティ、ルロワ、シルヴァン・ カティアール、アンリ・ジャイエといった数々のドメーヌから、ブルゴーニュワインの ヒントをもらっています。でも同時に、ポートワイン（ポルトガルの酒精強化ワイン） やドイツのリースリングからアイデアをもらうこともあります」

Returning to the topic of past, present and future, Maxime touches upon the key challenges ahead of the estate in the context of changing climate.

“Now, the biggest challenge is to adapt to the world as the climate changes rapidly. It is very difficult nowadays to be able to see the future and understand what the prices of the vineyards will be.”

He goes on to elaborate, suggesting that the challenges of global warming are linked to the need for winemakers to “adapt both your culture and your philosophy”.

Indeed, as temperatures rise, the grapes become richer in sugars due to quicken ripening, which results in the wines having higher alcohol content. “And for me, Pinot noir is all about freshness and purity. I don’t want to make anything else,” – Maxime states.

The winemaker also explains that, compared to when he started his work in 2010, today’s wine industry is becoming increasingly complex: “In 2010, everything was simple, there was no stress. I knew what I wanted. Now, the more experience I get, the more questions I have. But to me, it’s more interesting to make wine this way.”

Speaking of his plans for the future, Maxime says that he is the most inspired by a change in his work ethic, allowing himself to take on new approaches to make classical wines. “Now I try to work wiser because I want to discover a lot of the greatest terroirs,” – he says.

In his endeavours, Maxime started to work with Bonnes Mares in 2020, which is another appellation in Burgundy specialising in Pinot Noir grape. The wines of winemaker Olivier Bernstein who established himself as a talented Premier and Grand Cru producer in Burgundy are now recognised all around the world. His success comes against all odds: born in a family of entrepreneurs, Bernstein himself has never been properly introduced to the world of winemaking and learned about the craft on his own. His immense success in winemaking started with Bernstein’s passion for wine and deep appreciation for French winemaking.

In the interview with Gen de Art, Olivier Bernstein spoke extensively about his exciting journey from a music publisher to winemaker, his love for Burgundy and the inspiration behind his internationally acclaimed wines. ブルゴーニュのプルミエ・クリュとグラン・クリュの実力派ワインメーカーとして 地位を確立し、今や世界中で認められるオリヴィエ・バーンスタイン。起業家の家 系に産まれ、独学でワイン造りを習得したバーンスタイン氏の大きな成功は、ワ インへの情熱と、フランスのワイン造りへの深い尊敬から生まれました。 今回のインタビューでは、音楽出版社からワインメーカーに転身した異例の経歴 や、自身のブルゴーニュへの愛、そして今や世界で愛されるワインのインスピレー ションについて語ってくれました。

Ol iv ier B er n s t ei n come s f rom a fa m i ly of bu si ne s smen , t he generations of which had a deep respect for culture in its various forms. However, winemaking was never one of them.

He explains that this decision also came as a result of frustration he felt in his job, as he was not able to produce something of his own and share his creativity with the world.

“I discovered the wine passion very late. I think I was 26 years old. I was working in my family’s company in Germany, a classical music publishing company called Bärenreiter,” – Bernstein recalls. “I missed France when I was in Germany. There was a wine merchant next to my house where I was going two or three times per week to buy a bottle of wine. At home, I was cooking dinner and drinking the wine. I think it was the moment when I fell in love with wine.”

“I was managing and selling, but not creating. The action of creation was very important to me. But I was so happy being with growers, it was so exciting to talk to them. I just wanted to become one of them one day”, - Bernstein adds.

Bernstein goes on to add that his passion did not simply stop at buying different wines from the shop. Soon, he began reading books about winemaking, visiting wineries and talking to winegrowers. “I spent a lot of time with them, vinifying, harvesting and tasting”, – he says.

バーンスタイン氏の家系は代々実業家で、幅広い文化を深く敬ってき ましたが、ワイン造りだけは専門領域ではありませんでした。 「自分自身のワインへの情熱に気付くまでには、けっこう時間がかか りました。26 歳の時、ドイツにある親の会社で、ベーレンライター というクラシックの音楽出版社で働いていたのですが、フランスが恋 しくて。家の隣のワインショップへ週に 2、3 回ワインを買いに行き、 家で夕食をつくってワインを飲むという生活をしていました。ワイン に恋したのはその時でした」 彼のワインへの情熱は、ワインショップでワインを買って飲むだ けにはとどまりませんでした。すぐにワイン造りに関する本を読 み始め、ワイナリーに足を運び、生産者と話をするように。「醸 造から収穫、試飲まで、多くの時間を生産者の方々と一緒に過ご しました」

Following his passion, in 1995, Olivier Bernstein decided to come to Burgundy. He recalls that, back then, it was easy to simply “knock on the door at Romanée-Conti” for a visit and wine tasting. It was then that he discovered the taste of red Burgundy wines for the first time: “The Pinot Noir wines were the ultimate delicacy for me. Never before had I ever had the same pleasure. ”

当時関わっていた仕事では創造力を生かして自分で何かを生み出すこ とができないというフラストレーションも、この決断に至るきっかけ になったそう。 「マネジメントや販売はしていても、なにかを『つくり出す』ことは していなかったんですよね。でも『つくる』という行為は私にとって 大切なことだったので、ワインの生産者と一緒にいて話をするのはと ても楽しかったし、わくわくしました。いつか生産者側のひとりにな りたい、と純粋に思ったんです」 その心の声を聴き、1995 年、ブルゴーニュへ渡ることを決意。当時 は、ロマネ・コンティの門を文字通り叩いて見学や試飲をすることが 簡単にできた時代で、その時初めて彼は、ブルゴーニュの赤ワインの 素晴らしさを知りました。「ピノ・ノワールのワインには、究極の繊 細さがありました。あれほどの喜びはあの時以来味わっていません」

“It is about the scope of difficulty, complexity and pleasure.

It is so unlimited that, depending on so many criteria, you can have so many emotions in red Burgundy wines that it can be compared to a piece of art.”

However, after f ive years of hard work, Olivier Bernstein began to realise that “it was extremely difficult to live from the production of wine”. “In Roussillon, I was happy, but not completely happy because I could not reach the delicacy of wines that I wanted to reach,” – he continues, adding that the quality of the wines was different from the Burgundy standard he had in his mind.

“I gave it a try, rented everything – and it became a success.

Experts and press tasted the wines and said that they were very good. Everybody started to buy my wines. Somehow, what was extremely difficult in Roussillon suddenly became very easy in Burgundy,” – Bernstein says.

THE FIRST SUCCESS

To make his dream a reality, at first, Bernstein could only afford to buy eight hectares of vineyards in the south of France which were inexpensive back in the day. In Roussillon, he was able to buy some equipment to start making his very first wines.

In 2007, Bernstein finally decided to enter the world of Burgundy wines. He was already familiar with the region and what he really wanted was to have the chance to work with his favourite grape – Pinot Noir.

He attributes his success to the fact that his background was not connected to winemaking for most of his life: “I think one important thing is that I am making wine because I love wine, not because I inherited vineyards. Some growers don’t really like wine, they make wine because they inherited it. To me, it is a privilege, and I am extremely demanding in what I’m doing.”

「だから、やってみよう！と思って、挑戦しました。そした ら、うまくいったんです。専門家や報道の方々がワインを飲ん でとてもおいしいと言ってくれ、みんな買ってくれるようにな ったのです。ルシヨンではとても難しかったことが、ブルゴー ニュではなぜかあっさり、簡単にできてしまいました」

2007 年、ついにブルゴーニュワインの世界に足を踏み入れ ることを決意。すでに見知った地域でしたが、彼が本当に 望んでいたのは、大好きなピノ・ノワールでワインを造る ことでした。 「ブルゴーニュの赤ワインはとても難しく複雑なのですが、そ

初めての成功

夢を実現するためには、当時そこまで値段のはらなかった南仏 に 8 ヘクタールのワイン畑を買うのがやっとでした。ルシヨ ンでワイン造りを始めるための設備も購入。

Coming from a musical background, Bernstein sees many connections between winemaking and various forms of art.

“I learned from my family that everything is about nuances and personal interpretation,” – he explains, saying that this knowledge has assisted him a lot on his winemaking journey.

“I think with classical music, you learn how a small detail can make a very big difference in the end when you hear the final result. A small nuance in the process of creating wine, especially in the vineyard, can also make a big difference in the end.”

For Bernstein, winemaking is no longer merely about wine, but about the artistry contained in this complex process. “What is fascinating is diversity, the differences in styles,” – he says. “You can really enjoy wine like contemporary art, there are so many different interpretations. To me, it is a playground that is absolutely beautiful.”

However, Bernstein’s personal philosophy when it comes to making wine is “less is more”, which is expressed in the minimal design of his bottles. “Very often in burgundy, there are too many things on the label. I wanted to have only what was absolutely necessary,” – he notes, speaking of his designs.

Still, Bernstein clarifies that simplicity is not always the approach he is ready to take when it comes to the creation of the wine since, as he says, “sometimes, you need to interfere”. He concludes that excellent wines truly require very close attention from the winemaker, as every step of the process will eventually define the final outcome.

もともと音楽関連の仕事をしていたバーンスタイン氏。ワイン造りと芸術の間には多くの関連性があ ると言います。 「何事もニュアンスと個人の解釈が大切だ、と家族から教わりました」と言う彼は、この考えがワイ ン造りの旅にもとても役に立っていると話します。 「クラシック音楽では、最終的な仕上がりを聞いたときに、小さなディテールがいかに大きな違いを 生むかを学びます。これはワインも同じで、ワインを造る過程、特にブドウ畑での小さなニュアンスの 違いが、出来上がりに大きな違いを生むのです」 彼とってワイン造りは、もはや単なるワインにとどまらず、この複雑な過程に通ずる芸術のようです。 「多様性やスタイルの違いがワイン造りの魅力です。ワインは本当にさまざまな見方で解釈すること ができて、現代アートのように楽しむことができる。私にとって、 ワイン造りは美しい遊び場なのです」 同時に、彼のワイン造りにおける哲学は ”Less is more”「少ないほうが豊かである」。この考えは、 オリヴィエ・バーンスタインのシンプルなボトルのデザインにも表れています。 「ブルゴーニュのワイン は、ラベルにいろんなことが描かれていることが多いのですが、本当に必要なものだけを残したかっ たんです」 しかし「干渉しなければいけない時もある」と、ワイン造りにおいて常にシンプルであることがベスト な答えとは限らないとも考えているそう。プロセスの一つひとつが最終的な出来上がりに映し出され るので、本当に優れたワインにはワインメーカーの細かい気配りや配慮が欠かせないのですね。

ISAO ONISHI, Living National Treasure: “The key in life is light and shadow”

Isao Onishi was officially recognised as a Holder of Important Intangible Cultural Property, popularly known as a Living National Treasure, for his lacquer coating technique (kyūshitsu) in the urushi (lacquer) craft. Born in Fukuoka Prefecture, Onishi experienced a crucial turning point in his life at 30 years old when he met Yusai Akaji, a Living National Treasure, and became his apprentice. Onishi’s sense of craftsmanship was nurtured through assisting his father in his carpentry work. Always giving his all for everything he does, Onishi has pursued the path of a master craftsman even though he had no intention of becoming an artist. We spoke to him about his journey and philosophy.

As a child, Onishi’s family moved often because of his father’s work as a carpenter. He also had a stutter, and he struggled with making friends. “I only went to half of elementary school,” he recalls.

But he still has a vivid recollection of how he enjoyed making things using the scraps of wood that came out of his father’s work.

Onishi met his first true friend, Shuji Irie, in junior high school. “He taught me about how to make mock-up models. That technique is still valuable to me, even now,” he fondly remembers. When they graduated from junior high, Irie gave him a stone with the words “honesty is the best policy” carved on it. “Those words have become very precious to me,” he says wholeheartedly. They truly connected heart to heart, and Onishi still treasures that stone to this day.

大工を父に持つ大西さんは、父の仕事の関係から転 校も多くどもりに悩み、友人ができなかったと振り 返ります。「小学校も半分しか通わなかった」と明 かしながらも、父の仕事で出た木端で木工細工を作 ることが楽しみだったことをとてもよく覚えている と教えてくれました。 そんな大西さんが中学生にして初めて出来た心友、 入江修二さん。「彼からはソリットモデルを教えて もらいましたよ。その技術は今でも生きていると思 います」と懐かしそうに話します。入江さんからは 中学卒業時に「『honesty is the best policy』と書か れた石を貰いました。この言葉は僕にとっても、大 切な言葉になりましたね」としみじみ。文字通り「心 の友」だった入江さんから貰った石は今でも大切に しているのだそうです。

Hard Work Behind the Scenes, the Importance of Tools “Now, I can gauge how skilled a craftsperson is just by taking a glance at their tools,” Onishi says. His experience in carpentry work taught him the importance of tools. As a young worker, he says “everyone looked after me so well, and they taught me so much.” He realised then that no matter how young he was, or how much muscle power he had, he was no match for the older, experienced carpenters who took good care of their tools and made full use of them.

“I learned that when you use tools, they get damaged over time. They become bent or weak.

When the tip of the blade became damaged, I fired it and cooled it in cold water to make it stronger again. I learned that that kind of hard work behind the scenes is vital.”

Onishi is always committed, giving his all for his work. His approach itself must have attracted many opportunities of learning.

Although the tools that he takes care of so well are never seen by the viewers of his artworks, it is his consistent commitment that lays the foundation for his singular creations.

When Onishi was 32 years old, he became an apprentice to Yusai Akaji, who established the hoop-built technique (magewa tsukuri).

Magewa tsukuri is a delicate traditional technique of combining wooden rings (magewa) of different diameters to make an object or vessel, then painting many layers of lacquer over the surface. Onishi handled the whole process by himself, starting from making the refined lacquer.

He looks back on his apprenticeship: “It was interesting. I was like a sponge soaking up water. My teacher let me do anything, encouraging me to learn. It was the first time I experienced anything like that, so I was engrossed.” His voice is filled with the excitement and gratitude he felt in those days.

It was then that he inherited the magewa tsukuri technique.

At 40 years old, Onishi debuted in the Japanese Traditional Crafts Exhibition with his work entitled “Magewa Tsukuri Disc of Golden Moonlight” (Magewa tsukuri ousai tsuki mon ban). Inspired by the moon that he saw as a child over coal mine mountains, this artwork embodies Onishi’s unique skill and a true innovation of lacquer ware.

About ten years since then, Onishi was designated a Living National Treasure. He is still modest, calling himself “just a lacquer craftsman.” Looking back on his journey, he says, “Becoming a Living National Treasure doesn’t mean I’m some kind of special artist. I suppose it’s just I was suited to building up something from scratch.” 大西さんが 32 歳の頃「曲輪造」を確立した赤地友哉さんのも とへ弟子入りすることになります。 「曲輪造」とは、径の異なる木材の輪「曲輪」を組み合わせて 器の木地を成形し、漆を幾度も漆を塗り重ねてゆく伝統的か つ繊細な職人技です。漆の精製の工程から全て、大西さん一人 で行います。 当時のことを「面白かった、まるでスポンジがね、水を吸うよ うでしたよ。先生は何でも自分にやらせてくれて、勉強しなさ いって言ってくれていました。 こんな経験は初めてでしたから、 夢中になってやりました」と振り返る大西さんの声からも当時 の嬉しさや、感謝の気持ちが感じられます。 そこから「曲輪造」を継承し、大西さん 40 歳で日本工芸展へ のデビューを作品「曲輪造黄彩月文盤」で果たします。幼少期 に眺めた炭鉱山の上の月をモチーフに生み出されたこの作品 のユニークさは、漆器の革新そのもので、大西さんの腕が光 る素晴らしいデビューとなりました。 そこから約 10 年後には人間国宝になった大西さん。今も変わ らず「ただの漆職人」だと、謙遜します。 「人間国宝になった からと言って、何も特別な芸術家ではないんです。ただ、最初 から何かを築き上げることが自分には向いていたのでしょう」 と、これまでの歩みを振り返ります。

Life as “the flame of a candle” Onishi uses the flame of a candle when planing a piece of wood. When asked why he persists in using candles in spite of technological development, he answers, “Light and shadow are key. It’s the same with human life. There’s light and shadow. Shadows reveal the texture most clearly. The candle gives off just the right amount of light for that. If it’s too bright, I can’t see the grooves and ridges on the surface of the wood very well. It’s not easy to make young people understand that, though,” he says with a gentle smile.

No matter what difficulties he faced, Onishi continued to build on his skills. He tells us that light and shadow are important for perceiving the surface of the wood as well as living life — that brighter isn’t always better.

Treasured Words

There is a saying that Onishi treasures in his life as a craftsman.

When there is time in the heavens, spirit in the earth, and beauty in the material, there is skill in the craft.

“It means, ‘the best technique is born when there are fortuitous opportunities for the development of the environment and the subject, and when the best material is given by nature, and the skills of the craftsperson are aligned.’ These are words on the essence of the culture of technique from Kao Gong Ji, one of the oldest records of craft and technique in the world, originating from China around 30 BC. It has left a deep impression on me, and I’ve always cherished it.”

When Onishi first encountered this sentence, he was overcome with a feeling of profound sympathy and gratitude. He even gave Gen de Art these words written by his own hand.

Onishi’s determined spirit, which never swayed in the face of hardship, and his commitment to remember his roots and value tradition shine through in his artworks and touch countless people.

O X fw fiPfl qT \^s 大西さんは、木にかんなをかける工程でろうそくの火を使います。機械技術の発展もある なかで、ろうそくの火を使った作業にこだわりを持つことについて聞いてみると「光と影が とても大事。人が生きることもそうですよね。光と影があります。影ができるところが一番、 質感がよく見える。その光がろうそくだと思うんです。明るすぎたら木面の凹凸が良く見え ないんです。なかなか若い方に伝えても分かって貰えないですけどね」と優しい笑みを浮 かべます。 どんなに大変な時期も技術を磨き続けてきた大西さんは、人が生きることも木目の凹凸 も光と影がとても大切で、明るいだけの良さに任せてはいけないと話してくれました。

Seitaro Kuroda was born in 1939 in Osaka. In 1961, he began working at the Yoshio Hayakawa Design Office. From 1966 to 1969, he lived in New York. When he returned to Japan, he founded the design office K2 with Keisuke Nagatomo. Now, he is based in Kitakyushu City in Fukuoka Prefecture, where his atelier is located, and is active as a painter, illustrator, and graphic designer.

1939 年大阪生まれ。1961 年に早川良雄デザイン事務所に勤務。1966 年にニュ ーヨークへ渡米。1969 年に帰国し、長友啓典さんとデザイン事務所 K2 を設立。 福岡県北九州市にアトリエを構える画家、イラストレーター、グラフィックデザイナ ーの黒田征太郎さんにお話しを伺いました。

The Greatest Joy: Making Art to Discover Why He Likes Making Art Kuroda is an energetic artist, his activities ranging from live painting performances to painting murals, creative workshops, and hospital art, both in Japan and overseas.

“Sometimes people ask me, ‘Why do you do so much?’ The answer is simple — I just love making art more than anything else. If you ask me why I like drawing, I couldn’t tell you exactly. In fact, that’s what I’d like to find out.”

He says he is drawing even while having this interview. “It’s always interesting,” he continues.

“Some ways of making ar t work, like teaming up with an ar t dealer to make something that sells — I don’t think that’s interesting. I’ve been an artist for 50 years now, so it’s not as if I don’t know how the artists’ world goes round, but I don’t want to know about any of that. I want to focus just on the feeling that drawing is exciting, and keep it at that.”

Kuroda approaches each of his artworks one at a time, but his creative process also involves interactions with many artists and people of culture.

作ることが何より好き。 そして「なぜ好きなのか」 を知りたいから描く ライブペインティングや壁画制作、絵話教室、ホスピタルアートなど国内外で精力的に幅 広い活動を続ける黒田さん。 「『なんでそこまでやるの』と聞かれることもあるけど、作ることが何より好きなんです。 そして僕自身、なぜ絵が好きなのかがはっきりとは分からない。むしろそれを知りたいと いう想いがあるんです」 インタビューを受けている今も絵を描いているという黒田さんは「やっぱり面白い」と続 けます。 「画商と組んで売れる作品を作るとか、そういう描き方は面白くない。50 年も続けたわ けですからアーティストの世界を知らないわけではないけれど、そういうことは知りたく ないし、描くことを面白いと思うところに留めておきたいという気持ちがあります」 作品と一対一で向き合う黒田さんですが、制作には多くのアーティストや文化人との交流 が大いに関係していると言います。

“Yes, I can draw”: The Eureka Moment “First of all, a painting isn’t something you can make all by yourself, is it?” Kuroda points out. “I’ve been fortunate with meeting people,” he adds in a warm, gentle tone. “I was also lucky that I’ve always been a fan of Akiyuki Nosaka.”

Turning Nosaka’s book A Collection of War Fairy Tales (Sensō dōwa shu) into a picture book and adapting it for film left a deep impression on Kuroda.

“A Collection of War Fairy Tales is about life. All animals except humans only hunt other animals in order to eat. Why do humans kill each other in war? A human is merely a living creature that is born, then dies. That’s what Nosaka-san tells us.”

Kuroda was 52 years old when he came across Nosaka’s book.

“At the time, I heard the then-prime minister Keizo Obuchi announce, ‘50 years have passed since the war. Let’s start talking about other topics than war.’ I wondered, ‘Why?’ Right around then, I stumbled across Nosaka-san’s A Collection of War Fairy Tales at the Kinokuniya bookshop in New York.”

Back then, Kuroda was working at a school where students

included the children of United Nations personnel. When he asked the elementary school students whether they are learning about war, they replied, “Of course.”

Kuroda felt concerned that “if things keep going at this rate, children in Japan might grow up without ever learning about war.” That was when Nosaka’s War Fairy Tales came to his mind, and an idea hit him like a revelation.

“A signal came to me, somewhere in my body, telling me to ‘turn it into a picture book’. I thought, ‘That’s right, I can draw.’”

Then in 1955, the Great Hanshin Earthquake occurred. “It was a major disaster, a life or death situation. Nosaka-san and I went to the affected areas. Because it was a matter of life.” Nosaka had a profound influence on Kuroda’s way of thinking about life and things in general.

“Now, I understand drawing pictures and performing music as an act to try to understand life,” says Kuroda. When asked what else he is engrossed in, he answers, “Living.”

なかでも黒田さんが野坂さんの著書『戦争童話集』を絵本 化し映像化したことは特に強く印象的だったと言います。 「『戦争童話集』は命の話。人間以外の動物は食べるため に狩りで他の動物を殺しますが、人はなぜ、戦争という殺 し合いをするのか。人は生まれて死ぬだけの生き物、とい うのが野坂さんの考えなのです」 『戦争童話集』を知ったのは、黒田さんが 52 歳の時。 「当時、総理大臣だった小渕恵三さんが『戦後 50 年が経 った。戦争のこと以外を発信していきましょう』と話して いて『なぜ？』と感じました。そんなときにニューヨーク の紀伊国屋書店で、野坂さんの『戦争童話集』に出会った のです」 当時ニューヨークで、国連の職員の子どもが通う学校の仕

事をしていた黒田さんは、小学生に「戦争のことは習って いるの？」と尋ねると「当たり前じゃないか」と答えたと 言います。 「日本の子どもたちは、このままでは戦争のことを知らな いまま育ってしまうかもしれない」と危機感を抱いた黒田 さんの頭に『戦争童話集』が浮かび、啓示のような考えが ひらめきます。 「僕の体の中に『絵本にしろ』という信号が来たんです。 『そうか、僕は絵が描けるんだ』と」

「僕は絵が描けるんだ」

「そもそも絵って一人で作れるものではないでしょう？」 と話す黒田さんは、「僕は人との出会いに恵まれている」 と穏やかな愛溢れる口調で語ります。また「野坂昭如さん をずっと好きでいたことは、僕にとってラッキーなことだ った」と話します。

そして 1955 年に阪神・淡路大震災が発生。「命に関わる 大災害が起き、野坂さんと僕も、現地に向かったんです。 命のことですから。」野坂さんには、命の考え方について 大きな影響を受け、黒田さんの考え方にも大きな影響を受 けたと言います。 「今、絵を描くことや音楽を演奏することは、命のことを 人が分かろうとするための行為だと考えています」と語る 黒田さん。絵のほかに夢中なことを尋ねると「生きること」 だと教えてくれました。

Nature Teaches Us about Art and Music Live painting is part of his life’s work, and Kuroda wants to convey the joy of drawing to children through his performances.

“I hope to give them an opportunity to discover just how fun art and music is,” he explains. “My commitment to this shares common ground with what I said about art, that ‘to draw is to try to understand life.’”

He continues, “When I observe nature closely, I can’t help but feel that it’s teaching us about art and music. Even now, when I look up, I see the mountains on the opposite bank, and the dense, towering cloud spreading beyond them. And beyond that there’s the Kanmon Straits with the Kanmon Bridge over it, said to be one of the most prominent bridges in Japan — but even that, to me, looks weak and feeble.”

“Without the sun, we can’t see anything. In painting, we use colours that we’ve learnt from the seven colours of the rainbow that the sun creates. Musical scores are made by the sensual perception of sounds in nature, like the wind or the waves. No matter how great the artist, every piece of art is born of nature. I hope to talk to the children about things like that,” he concludes.

Kuroda’s art work, like an ode to humanit y, shines with the brilliance of life. Our conversation with him made us realise how his art springs from his own sensibility and philosophy that hold a steadfast respect for nature and human beings.

自然が絵や音楽のことを教えてくれる 黒田さんは現在、ライフワークのひとつとして行ってきたライブペイ ンティングを通じ、子どもたちに描くことの楽しさを伝えることに関 心があると話します。 「絵と音楽の面白さを気付かせてあげたい。この思いは先ほど話し た『描くことは、人が命のことを分かろうとすること』という考えに 通じています」 さらに「自然をよく見ていれば、絵や音楽のことを教えてくれている ような気がしてならないんです。今も顔をあげたら対岸に山々が見え て、その向こうに入道雲が広がっています。さらにその向こうには関 門海峡があるのですが、僕には日本有数の橋と言われる関門海峡で さえも、ひ弱なものに見えてしまう」と、話す黒田さん。 「太陽がなければ何も見えないし、絵画は太陽が作る七色の虹から 色を知って描くものです。楽譜は風や波の音に官能してできる。どん な偉大な芸術家の作品も、自然のもとに生まれたんです。子どもたち ともそんな話をできたらと思っています」と、締めくくりました。 命の輝きを放つ人間讃歌のような黒田さんの作品は、自然や人への 敬意を失わない作家の感性や哲学から生まれるのだと実感させられ た瞬間でした。

On the Relationship between Art and the City

In 2009, he became the managing director of this company. He also serves as a Council Member of the UK-based Tate International Council Executive Committee, Mori Art Museum, the Hara Museum of Contemporary Art, the Ishikawa Foundation, and the Kawamura Cultural Foundation. He is an active supporter of art museums and the dissemination of contemporary art. Well-versed in art, Obayashi holds a deep fascination for architecture and the kind of urban development that stimulates people’s creativity. We spoke to him about cities rooted in culture and about his passion for art.

「アーティストの 発想力に衝撃を受けた」 本社移転プロジェクトが契機

Obayashi has a deep knowledge of art in general and is one of Japan's leading art collectors. But when he was a child, he says, he didn’t have any particular interest in art.

“I was in the art club in senior high school, and later on, I became acquainted with Hiroshi Senju, who was a younger student also in the art club at the same school.

Other than that, I didn’t have much contact with art at all. I only started collecting art once I graduated from university.”

Around that time, I was collecting drawings by architects such as Tadao Ando, Shin Takamatsu, and Aldo Rossi.

A turning point for Obayashi, when he grew more interested in contemporary art, was the relocation project for the headquarters of Obayashi Corporation in 1999. In this large-scale, inventive project, they sought to merge architecture and contemporary art in the office space, inviting 18 internationally recognised artists, such as Yayoi Kusama, Emi Fukuzawa, and Pascal Convert, to create artwork for this space. Besides those pieces, the space also exhibits more than 70 pieces of contemporary artworks.

Obayashi recalls being amazed when he saw first-hand just how imaginative the artists’ creativity was.

“All the artists enjoyed working on the project — they told us it was ‘wonderful’ and ‘great,’ and they thanked us. The most fun part of all was talking to the artists face to face.”

From around this time, he became a Member of the International Council of the Museum of Modern Art (MoMA) in New York. As he strengthened his ties with the art world, he thought more deeply about how architecture relates to the townscape and culture of a city.

美術全般に造詣が深く、日本有数のアートコレクターでもある大林さん。小さい頃はアート には特に興味を持たずに育ったと言います。 「高校では美術部に所属し、後に同じ高校で美術部の後輩である千住博くんと知り合い になったりはしましたが、それ以外にはほとんど美術と触れる機会がなく、アートのコレク ションを始めたのは社会人になってからです」 この頃にコレクションしていたのは、安藤忠雄や高松伸、アルド・ロッシといった建築家の ドローイングだったのだそう。 そんな大林さんが現代美術への関心を深める契機となったのが、1999 年に行われた大林 組本社の移転プロジェクト。オフィス空間の中で、建築と現代美術の融合を目指した大規 模でラディカルなこの試みには、草間彌生や福澤エミ、パスカル・コンヴェールといった世 界で活躍する 18 人のアーティストが参加し、この空間の為に作品を制作してくれました。 他にも 70 数点の主に現代美術の作品が展示されています。 芸術家の自由な発想力に触れたこのときの経験は「インパクトのある出来事だった」と、 大林さんは振り返ります。 「『素晴らしい』『よかった』『ありがとう』と、アーティストたちみんなが喜んでくれ、アー ティストと実際に会話ができたことは、なによりも楽しい時間でした」 この頃からニューヨーク近代美術館（MoMA）のインターナショナル・カウンシル・メンバ ーに加わるなど、アート業界との関係も深めていった大林さんは、建物とまちの景観、文 化の関係性について考察を深めていくことになります。

The Future of Japan: Community Development that Draws on Local Character In 2019, Obayashi published the book The Rebirth of a City through Culture (Art) (Toshi wa bunka (art) de yomigaeru) (Shueisha). He explores the relationship between cities and culture (art).

In the book, he discusses the limits of art projects that are designed to promote the local region but haven’t been thought through carefully enough, as well as the issues in the kind of urban development that pursues functionality and economic efficiency. When asked why he wrote about these topics, he says: “In Tokyo, there was an excess concentration of population, and that led to the city’s own particular development; the city was also active in taking measures to prevent disasters. Meanwhile, regional cities have been copying how things are done in Tokyo or overseas for a long time. From now on, the future of Japan will lie in community development that draws on local character.”

He continues, “In the book, I wanted to introduce great examples of regional cities that made effective use of architecture and art that can only be found in that particular city. I wanted to show how important it is to weave together the preexisting cultural features or historical attractions of the locality, while bringing them up to date as a new environment, for forming the identity of the region.”

This book draws together Obayashi’s principles and past experiences in what reads like a multi-dimensional structure.

A Meeting Point between Art and Local Industries

これからの日本は 「地方性の魅力を引き出したまちづくり」をテーマに。 2019 年に『都市は文化（アート）でよみがえる』 （集英社）を刊 行。都市と文化（アート）の関係について考察しています。 同著の中で、安易に企画した地域振興のためのアートプロジェ クトの限界や、機能性、経済性を追求する都市づくりの問題を 綴った理由について、こう話します。 「東京には人口が一極集中してきたことから独自の発展を遂 げ、さらに積極的に防災対策が施されました。一方で地方はず っと、東京や海外にあるものをコピーする形でまちづくりが行 われてきました。これからの日本は、地方の魅力を引き出した まちづくりがテーマになると思います」 さらに大林さんは「その都市でしか見られない建築やアートを 活用した好例を紹介し、既存の文化や歴史的なスポットをうま く紡ぎ合わせ、いかに新しい環境としてアップデートすること が、地域創生のために重要かを提示したかった」と、話します。 同著は大林さんのポリシーとそれまでの経験を立体的に編ん だ作品のような書籍となっています。

芸術作品と地域の産業に出会える、 アートプロジェクト

Obayashi also serves as the Chairperson of the Organising Committee for the international art festival, Aichi Triennale 2022 (dates: 30th July 2022 to 10th October 2022). He shares his thoughts on this festival as an art project that marries regional characteristics and art.

大林さんが組織委員会会長を務める、国際芸術祭「あいち 2022」 （会期：2022 年 7 月 30 日〜2022 年 10 月10 日）について、 地域性とアートプロジェクトの融合という視点で語っていただ きました。

“This year, the four main venues include the Aichi Arts Centre; Ichinomiya City; Tokoname City; and Arimatsu, Nagoya City. We hope visitors from within the country as well as overseas will rediscover the regional attractions of Japan through Aichi Triennale 2022.”

「今回、 会場は愛知県名古屋市の愛知芸術文化センターのほか、 一宮市、常滑市、名古屋市有松地区の 4 つのエリアに会場が設 置されます。 『あいち 2022』をきっかけに、国内外の来場者の 方々に日本の地方の魅力を再発見していただきたいですね」

“The festival has such a rich content this year that we hope visitors would make it at least an overnight trip,” he says. “Staying overnight is important for getting to know the region. You can experience the food culture and the industries specif ic to the locality, such as the ceramics of Tokoname, the textiles of Ichinomiya, the shibori tie-dying of the Arimatsu district.”

さらに「今回は最低 1 泊は滞在してゆっくり味わっていただき たい内容です」と、続ける大林さん。 「宿泊することは、地方を 知るために大事」 なのだと言います。 「食文化も体験できますし、 常滑の焼き物、一宮の繊維、有松地区の絞りといった地域の産 業も感じられます」

In the four locations, they are planning to set up venues that not only exhibit invaluable artworks but also highlight the unique characteristics of the region.

4 つの会場では、価値の高い芸術作品の展示のみならず、地域 の個性も引き出した空間が立ち上がることになりそうです。

A World Where the Old and the New Coexist

古いものと新しいものが両方ある世界がいい

At the end of the interview, when asked about what kind of world he wants to see in the future, Obayashi says, “I like works by contemporary artists but vintage antiques as well — I’m also drawn to timeless masterpieces that don’t fade with the passing of time. I want to see a world where those things coexist: a world of diversity, of various cultures blending together.”

インタビューの最後に、 今後見たい風景や景色を尋ねると、 「私 は現代アーティストの作品も好きですが、古いアンティークも 好きで、時代を経ても色あせない名品にも惹かれます。そうい ったものが共存する世界がいい。多様さがあって、色々な文化 が混じった世界が見たいと思います」と、語った大林さん。

His words, which embody his creative point of view while also valuing modern functionality, stem from his stance as the leader of a building firm, maintaining a balanced perspective that ranges beyond art.

その答えはクリエイティブな着眼点を必要としながらも、現代 的な機能性も大切にする、アート志向だけに傾倒しない建設 会社トップのスタンスにも通じる言葉でした。

Aichi Triennale 2022 International Art Festival STILL ALIVE

Aichi Triennale Aichi Triennale 2022 is one of the biggest art festivals in Japan, featuring a hundred artists from 32 countries and regions in the world across five continents. It will take place in a wide region, including the Aichi Arts Centre and other city venues across Aichi Prefecture. The festival will range over diverse genres, from contemporary art to performing arts, learning programmes, and more, bringing the most exciting art to Aichi.

The theme of Aichi Triennale 2022, “STILL ALIVE,” was inspired by a series of works entitled I Am Still Alive by the Aichi-born and world-renowned conceptual artist On Kawara, in which he continually sent telegrams to various people from the 1970s onwards, bearing the message that he is still alive. Aichi Triennale 2022 will interpret this theme from multiple perspectives, revisiting the origins of contemporary art and exploring the gaps between domains that have become fixed categories, while traversing back and forth across the past, the present, and the future. Through artistic expression, the festival promises encounters with uncertainty, the unknown, diverse values, and overwhelming beauty. These encounters also offer an opportunity to think about how we can work together to create an ideal, sustainable future.

好奇心から「楽」 の追求そして感謝へ 書道家武田双雲 の哲学

The Philosophy of the Calligrapher

SOUUN TAKEDA Curiosity, Joy, and Gratitude When you meet Souun Takeda, you get the impression that he is lively and cheerful. Renowned for his calligraphy as well as his work as a contemporary artist, Takeda inspires many people through his joyful, positive way of living.

Souun Takeda was born in 1975 in Kumamoto Prefecture, and he trained under his mother and professional calligrapher, Souyou Takeda. After graduating from Tokyo University of Science, he joined NTT where he worked for three years before turning to the path of the calligrapher. Since then, he has worked on numerous projects, including the title lettering and logos of many films and TV programmes. In recent years, he has been expanding the range of his activities overseas. We spoke to him about his philosophy at the root of his positive energy. 「明るい」 「楽しい」という言葉が似合う武田双雲さんは、書道家としての活躍は もちろん、現代アーティストとしても注目を集めています。明るく前向きな生き方 は、多くの人に活力を与えています。 武田双雲さんは、1975 年に熊本県に生まれ、書家である母・武田双葉に師事し ています。東京理科大学卒業後、NTT に入社し 3 年の勤務を経て書道家の道を 歩みます。映画やテレビなど数多くの題字やロゴを手掛け、近年は海外へ活躍 の場を広げています。 武田双雲さんの明るさの源となる哲学についてお話を伺いました。

Choosing to Live by Curiosity and Gratitude Since his mother is a professional calligrapher, Souun Takeda first took up calligraphy at the age of three. He was brimming with lively curiosity as a child, always wondering why the strokes of a character are written in a fixed order, or what sets apart “bad” calligraphy from “good.” He often played around with calligraphy, loosening up the strokes or writing faintly on purpose.

Takeda studied engineering at university; even now, his mind is full of thoughts of atoms and equations, and he has a wealth of knowledge on the sciences. When it comes to calligraphy, it’s not as if he feels a compulsion to write. Rather, what he holds on to is his gratitude for and curiosity towards his existence in the present, a point in the long galactic time.

“Ever since I became independent,” Takeda says eagerly, “these 母親が書家という環境から 3 歳から書道を始めた武田さん。しか し、幼少期は「なぜ字は書き順が決まっているのか」「下手と上 手の違いは何」など好奇心の強いお子さんだったと言います。わ ざと字を崩して書いたり、薄く書いたりして字で遊ぶことも多か ったそうです。 大学が理系ということで、武田さんは今でも頭の中は原子や数 式に溢れていて、知識も豊富です。書に対しても「書かなけれ ばならない」という気持ちはなく、長い銀河系の時間の中で今 ここにいる感謝の気持ちと好奇心だけを持つようにしていると 語ってくれました。

twenty years have been nothing short of heaven. Every day is a paradise.” During our interview, he showed us how he creates a piece of artwork, following his inspiration and using India ink in many vibrant colours. Since the beginning of his calligraphy career, his mindset has always been that he is “being allowed to participate” in the history and culture of calligraphy, as well as in the techniques that the people of the craft have developed over time, never forgetting that words and kanji characters existed long before him.

Once he decided to live only by curiosity and gratitude, he has been keeping control of himself to try not to have other kinds of emotions. Every morning, he says with a boyish sparkle in his eyes, “I adjust my mind to align with ‘relax and enjoy’ before getting up, so I never stop smiling throughout the day.” 「独立してからの 20 年間があまりにも天国。毎日がパラダイス」 と嬉しそうに語る武田さん。取材の際も様々な色の墨汁を感性の ままに使い作品を制作してくださいました。自分が言葉や漢字を 作ったわけではなく、書道の歴史や文化、職人が培ってきた技術 の中に「参加させてもらっている」という気持ちで独立してから の 20 年間を過ごしてきたそうです。 好奇心と感謝だけで生きると決めてからは、それ以外の感情をあま り持たないようにコントロールしてきたといいます。毎朝「自分の 心をリラックス＆エンジョイに整えてから起きるから笑いが絶えな い」と語るその眼は、少年のようにキラキラと輝いていました。 Gen de Art June 2022

Being Mindful of Each Gesture Sets Life “Free” When asked why he chose the character “ 楽 ”(raku or gaku) as his kanji to represent life, he answers that this kanji signifies relaxation and enjoyment. For him, positive energy and having fun give birth to calligraphy and art. When it comes to relaxation and joy, it seems, he has it all covered.

One experience that encouraged him to become independent as a calligrapher was when he saw that his work had made someone cry. He was intrigued by what his work — something merely drawn with a brush — communicated to the viewer to move them so much. For him, such a feeling of being moved is about wonder. “I wonder at everything. Even myself. Trillions of cells are in my body, collaborating without thinking.

I appreciate what god has made, and I am overcome with wonder and gratitude.” This feeling seems to be at the heart of his creative practice.

“I like having fun, so I can do that naturally,” says Takeda. “But it’s easy to take things for granted and forget to be thankful for them. So I’m conscious about being grateful.” In order to do so, he controls his bearing. Looking into human behaviour led him to realise that, while it is difficult to control your emotions, you can stabilise your emotions by putting on a peaceful expression. It’s possible that being mindful of each movement you make in equanimity naturally allows the emotions of gratitude to come out.

“If you only look at things negatively, there’s no wonder or gratitude,” he continues. “The deeper my wonder is, the more I want to try everything to convey how wonderful this world is. The negative aspects are only a part of it. If you look at the whole, the world is wonderful — that’s what I’d like to convey.”

丁寧に味わう所作が人生を「楽」にする 人生の漢字を「楽」にした理由をお聞きしました。楽という漢字 には、 リラックスとエンジョイの意味が込められているから。 「明 るさや楽しさは書道やアートになる」と教えてくれました。 「リ ラックスとエンジョイは自分に任せて」と言えるような気持ちが 「楽」には込められているのではないでしょうか。 書道家として独立するきっかけは、自分の作品に涙を流してい る人を見たからなのだそうです。筆で描いただけの作品に何が 伝わり感動させているのか興味をもったそうです。武田さんに とって、感動とはどのようなものなのでしょうか。 「すべてに感動 します。自分にも感動します。何十兆個もの細胞が自分の中で 何も考えずにコラボして。神様の作ったことを鑑賞して感動して 感謝が湧いてくる。」感動と感謝が制作の根本にあることを感 じさせる言葉です。 武田さんは「楽しむことは好きだから自然にできる。ただ、感謝 することは当たり前になって忘れてしまう。だからこそ意識して 感謝するようにしている」といいます。意識して感謝するために 行っていることが所作のコントロールです。人間を研究し、感情 をコントロールすることは難しいけれど、和やかな顔「和顔」を することで感情が安定すると感じたそうです。安定した感情の 中で一つ一つの所作を丁寧に行えば感謝の気持ちも自然と湧 き出てくるのかもしれません。 続けて「否定的な見方ばかりでは、感動も感謝も生まれない。 感動が深いほど何とか工夫してこの世の素晴らしさを伝えた い。否定的な情報はほんの一部で全体をみれば世界は素晴ら しいと伝えたい」と語ってくれました。

To Contribute, Not to Advance For his current project, Takeda is making washi paper in a washi studio and writing on these pieces of paper while they are still wet. His writing in white on spotless white paper gives the impression of purity. Sometimes people describe Takeda as “pure,” too. He says, “I always live in the present, the ‘now,’ so I don’t have a timeline.” Instead of focusing on schemes or ambitions for the future, he embraces the wonder and gratitude of the present.

Takeda believes that his works might speak to some people in a way that makes them realise pure emotions they had forgotten, whether by clinging to their stature or by bearing a burden from their past.

In the future, Takeda wants to keep being grateful to the history of calligraphy and its timehonoured technique. He also hopes to spread the wonders of Japan to other countries. To do so, he will begin with accepting and being thankful for the cultures of those countries. The important thing is not just to communicate what you want to communicate, but to stand in the other person’s shoes and think about what makes them feel happiness and contentment. Art is a form of communication between the maker and the viewer. His aim for the future is not to “advance,” but to “contribute.”

Calligraphy is an art form of words, and even just by the calligrapher’s choice of words, it functions as a communication. Takeda’s works, however, have something in them that goes beyond words. One way to put this, perhaps, is wonder and gratitude. His works have the power to speak to people around the world regardless of their languages because his art resonates with the universal emotions of joy and gratitude.

武田さんは、ポジションへのこだわりや背負った過去によって忘れてしまったピュアな感情に自身の 作品を通して気がつく人がいるのかもしれないと語っています。 これからの活動については、まずは自身が書道の歴史や職人の技術に感謝し、それから日本の素晴 らしさを海外に伝えていきたいそうです。相手の文化を受け入れて感謝することから始めたい。自分 が伝えたいことだけ伝えるのではなく、相手の立場になって「何に幸せを感じるのか」を考えること が重要と考えているそうです。アートは、作る人と見る人とのコミュニケーションです。これから目指 すことは海外 “ 進出 ” ではなく “ 貢献 ” と語ってくれました。

これからも進出ではなく 貢献をしたい

現在武田さんは、和紙工房で和紙を手作りし濡れている状態の和紙に手で字を書く作品を制作して います。真っ白い紙に白い字を書く作品は、まさにピュアな作品です。武田さんは自身も「ピュア」と 言われることがあるそうです。 「“ 今 ” の人生を生きているので自分には時間軸がない」という言葉 からは、将来の計画や野望よりもピュアな感動と感謝で今を楽しんでいることが伝わってきます。

書道は言葉であり、言葉を選ぶだけでコミュニケーションとしての役割は果たします。しかし、武田 さんの作品は言葉では言い表せない伝わるものがあります。それは感動であり感謝なのかもしれま せん。言葉が通じない海外でも心をとらえている理由は、世界共通の感覚「楽」 「感謝」が人々の心 に響いているからではないでしょうか。

Unravelling the origins of creativity and craftsmanship HIROYUKI KANDA

In 1963, Hiroyuki Kanda was born as the eldest son of a family running a highclass Japanese restaurant in Tokushima prefecture. After graduating from senior high school, he trained in traditional Japanese cooking for five years in Osaka, then moved to France. In Paris, he served as the chef of a Japanese restaurant for five years. Upon returning to Japan, he worked at the celebrated Japanese restaurant Aoyagi in Tokushima and Basara in Akasaka, Tokyo, before becoming independent in 2004. Now thriving as the owner and chef of Kanda in Toranomon Hills, Tokyo, he creates dishes that remain faithful to orthodox Japanese cuisine but with his own imaginative flourish. He shared with us his wide-ranging perspectives on the subjects he is most interested in.

The restaurant Kanda, which has been winning three stars in the Michelin Guide Tokyo for many years in a row, is a minimalistic. Since the chef is attentive to everything that goes on in this space, there is no menu set down on paper. Instead, he serves the meal and the drinks that are perfectly tuned to each individual guest, in impeccable timing.

Although the world of Japanese cuisine gives the impression of being conventional, Kanda is different. He strongly believes it needs to be f lexible enough to ref lect the changing times and to appeal to an international audience.

He had the same stance when he was an apprentice: rather than cling to Japan, he set off for Paris at twenty-three. “At the time, I had the idea that Japanese cuisine should incorporate ingredients from overseas and absorb foreign techniques. So I decided that it would be quicker for me to go there myself and learn directly, instead of waiting for the information to come to me.”

Kanda places great emphasis on the material for cooking, and it was the culinary ingredients in Paris that left a deep impression on him. “The same kinds of vegetables or fish you’d find in Japan had such different f lavours. This made me review all the ingredients that we use at the restaurant. I also travelled to various places in France where those produce had come from, both on the coast and in the mountains, and I learned so much from that experience.”

He has held a keen interest in culinary ingredients and their production since his twenties. As a result, he is very active in supporting producers: in 2010, he joined hands with five chefs and founded the NPO “FUUDO.”

『ミシュランガイド東京』で、三ツ星を連続で獲得し続けている「日本料理 かんだ」は、 ミニマルで洗練された空間。料理人の目が行き届くこの店に紙のメニューはなく、その日に 訪れたゲストに応じ、あうんの呼吸で料理とお酒を出していきます。 保守的な印象が強い日本料理の世界ですが、神田さんは、料理に時代性を反映すること や、海外の人にも提供できる適応力は必要だと言い切ります。

「日本にもある食材 でも味わいが違う」

修行の場も日本に固執せず、23 歳でパリに向かっています。 「この頃、日本料理は海外の 食材を取り入れ、海外の調理技術を吸収するべきだと考えていました。それなら情報が来 るのを待つより、自分が直接行って学んだ方が早いだろうと考えたのです。」 素材の力を重視する神田さんが、パリで感化されたものも食材でした。 「日本にもあるよ うな野菜や魚でも、食材の味わいは大きく異なるものだったのです。店で使う食材は、全 て見直すことにしました。そしてフランスの海や山、畑といったさまざまな産地に出向き、 多くのことを学びました。」 20 代の頃から持っていた素材や産地への強い関心は、後に食材のつくり手である生産者 への支援活動へとつながり、2010 年には仲間のシェフ 5 人と NPO 法人「FUUDO」を 設立しました。

Stimulated by encounters with people through his work, Kanda is especially devoted to programmes for the production of rice, the crop at the heart of Japanese culture.

“Every year, in the seasons for planting and harvesting, I go with more than a hundred young people to Minamiuonuma in Niigata prefecture, to help out at a rice farm that makes the rice for my restaurant.”

In addition, he has developed his own brand of Japanese sake, called “Ultra Refined Pure Sake: Produced by Kanda,” which is sold online. A luxurious sake, it is brewed from Yamada Nishiki rice grown in Hyogo prefecture. The grains are milled and polished up to fifty per cent, fermented into sake, then matured for one year at three degrees below freezing point. This new junmai-daigin’jyoshu, or highly refined sake made of pure rice, brings out the deep umami of rice to the maximum and is a superb companion to food.

“The junmai-daigin’jyo is a wonderful kind of sake,” says Kanda.

“You could say it’s one ideal form of Japanese sake. But due to reasons related to management and distribution, it often ends up on the store shelves too quickly. In many cases, people are drinking sake that have just been made.”

From growing rice to making sake: On sustainable production and Japan’s unique culinary culture

When Japanese sake is matured over time, the sugar content lightens and the taste settles down, giving it a deeper, more rounded flavour. However, it is difficult to store the sake during its fermentation while maintaining its quality.

“Another problem is that in Japan’s liquor tax law, you must pay tax at the time of purchase from the supplier. That’s why liquor shops in Japan tend to put the bottles up in the shop as soon as they stock them. There was no system in place to store sake properly to let it rest. So about five years ago, I worked together with a sake producer to create a new system based on advance payments, so that the Junmai Daiginjo can be matured without putting extra burden on the liquor shops.”

The label on “Ultra Refined Pure Sake: Produced by Kanda” shows Kanda’s own calligraphy, printed on the Awa washi from Tokushima prefecture. Every detail of the bottle reflects Kanda’s aesthetics.

Its cap, for instance, is made using the same methods as “Satsuma buttons,” which draws on the exquisite painting technique of the traditional White Satsuma ware from Kagoshima prefecture. Each bottle is wrapped in a tenugui cloth dyed in Awa indigo.

In recent times, the restaurant industry suffered a considerable blow from the COVID-19 pandemic, and there are concerns about the loss of diverse food cultures. Kanda, with his wide-ranging perspective that includes systems of distribution and production, argues for the importance of protecting Japan’s food resources.

“Japan is a nation surrounded by the sea, and we have resources for food all around us. We should be considering a self-sufficient system of production that doesn’t rely on other countries.

We should increase our self-sufficiency rate and the ratio of agricultural and maricultural products within the country.

Moreover, if we keep consuming as we’ve been doing so far, we’ll likely lose our valuable resources. It’s time to think about sustainability in the ocean, the mountains, and the farms.”

Kanda’s vision spans over the future of production sites. With the firm conviction and creative energy of a craftsman and a master of culinary arts, he is realising his ideas one step at a time.

持続可能な生産と日本固有の食文化への想い

さらに日本酒「かんだ撰 純米大吟醸酒」のプロデュースも行い、オ ンラインで販売しています。兵庫県で栽培された山田錦を 50％ま で贅沢に磨き上げ、醸成させた後に氷点下３度で一年間熟成。米の 旨味を最大限に引き出した、料理とも相性のいい新しい純米大吟醸 酒を生み出しました。 「純米大吟醸は素晴らしい酒です。日本酒のひとつの理想形でしょ う。ただ管理や流通の事情ですぐに店頭に出されてしまう。残念な がら、作った直後のものを飲んでいることが多いのです。」 日本酒は寝かせると糖分が抜けて味が落ち着き、奥行きのある味わ いになります。ですが、熟成期間中に酒の品質を保ちながら保存す ることは難しいと言います。

米づくりから酒づくりまで

仕事を通じた出会いに触発されたこともあり、食材の中でも日本人 のソウルフードである米には、労力を惜しまない取り組みを行なって います。

「さらに日本の酒税法は、仕入れのタイミングで税金を払わなけれ ばなりません。そのため、日本の酒屋はすぐに店頭に出してしまう。 今まで日本酒を寝かせるためのシステムがなかったのです。そこで 僕は五年ほど前に酒蔵と共同して、前払い制にし、酒屋に負担をか けない純米大吟醸を熟成させるためのシステムをつくりました。」 「かんだ撰 純米大吟醸酒」のラベルは神田さんの直筆で、徳島の阿 波和紙を使用。鹿児島の伝統工芸品「白薩摩」の絵付け技術を駆使 する「薩摩ボタン」の手法で製作したキャップや、阿波藍で染めた手 ぬぐいで日本酒のボトルを包むなど、隅々まで神田さんの美意識が 反映されています。 そして、新型コロナウイルスで外食産業が大きな打撃を受け、多様 な食文化が失われることが懸念される昨今。流通や生産のシステム まで見据えた高い視座を持つ神田さんは、日本の食の資源を守るこ との重要性を説きます。 「日本は海に囲まれた海洋国家で、食材は周りにありますから、他 国に頼らず自国で完結するような生産の体制を検討するべきではな いでしょうか。食料自給率を上げ、国内での生産の割合を増やすべ きです。また、今までのように消費していれば、大切な資源が失われ ることになりかねません。海と山、畑のサステナビリティを考える時 期だと感じています。」 生産地の未来までを見据えた構想は、食のプロフェッショナルであ る職人の強い信念と創造力をもって、着々と実現しつつありました。

‘We’re not artists’ The artistry born of a craftsman’s hands Naturally, Kanda’s originality shines most of all in his culinary creations. He says that the sensibility and inspiration for his work are highly intuitive, deriving from years of experience.

a leading practitioner of a different field: he is working on building a new restaurant with the ar tist and architect Hiroshi Sugimoto.

“I think of cooking as something like this: you touch the ingredients with your right hand, they pass through the filter of your body, and they come out from your left hand.”

“Mr Sugimoto’s sensibility, of course, is in the artist camp.

We’re envisioning a new space that combines his worldview as an artist and my worldview as a chef.”

Japanese cuisine is often compared to works of art, for it integrates the colours of nature and seasonal ingredients, requiring a delicate sensibility on the part of the chef.

It has been about twenty years since he opened his restaurant Kanda. Internationally recognised as a chef, Kanda will be turning sixty soon. Even now, he is eager to keep creating in new ways: “I want to cook more freely, drawing on my own intuition.”

“We’re proud that we’re not artists, but artisans,” says Kanda, regarding his own work. “Many works of ar t have been created by craftspeople. Cooking, too, involves artistry. I always want to be a craftsman myself, and I hope to imbue the flavour of my cooking with artistry.”

Born in 1984 in Hiroshima Prefecture, Kayama worked at “Mona Lisa,” “Motoazabu Kanda,” “Lew’s,” “L’Atelier de Joel Robuchon,” and “Quintessence.” In 2015, he was selected as the finalist in the “RED U35” Gold Egg, the biggest competition for chefs in Japan. In 2017, he became the first Japanese chef to be named “upand-coming chef” by the International Gastronomy Society. With his spectacular career and innovative dishes shaped by his keen senses, Kayama has attracted the attention of people around the world. Kayama’s Mastery of Temperature and Fragrance: A Sensation that Left a Deep Impression 温度と香りを自在に操る加山シェフが 強い影響を受けた感覚の記憶 “Margotto e baciare” is a French restaurant known for using truff les of the highest quality. Drawing on his experience of training in both Japanese and French restaurants, Kayama treads a fine line between the two cuisines, careful not to turn his creations into “Japanese French.”

“The motto of our restaurant,” says Kayama, “is to offer French cuisine that’s both classical and contemporary, filtered through my Japanese perspective into dishes that feel familiar, comforting, and delightful. Our aim is to make dishes that will be loved by everyone.”

Behind Kayama’s calm demeanor, one can sense the delicate, perceptive sensibility of an incredibly sharp person. It shines through especially when he shares his painstaking attention to temperature. In his restaurant, t h e y s e r ve d i s h e s t h a t br i n g ou t t h e p a r t i c u l a r characteristics and flagrant flavours of the ingredients at precisely the right temperature.

He is a tr ue master of f la g rance and temperat ure, controlling each at will. What laid his foundations as a chef was the presence of his father.

「フランスのクラシカルな料理でありながら現代的でもあ る。そして日本人である僕のフィルターを通した、食べやす くて安心なおいしい料理を出すことがうちの店のモットー です。いい意味で万人受けする料理を目指しています」

“By the time I was in elementary school, I was helping out at my father’s restaurant, so I often watched what went on in the kitchen. The smoke wafting up from the frying pan, the steam from the arranged dishes, the smiles on the customer’s faces when they saw their dishes, and the plates that came back to the kitchen sparkling clean. I thought my father was a magician.”

“I can still picture those scenes as if they happened yesterday,” says Kayama. Back then, he had yet to realise that what he was sensing there was “temperature,” but it was still “a formative experience for me as a chef.”

“So the dishes we serve are really steaming hot,” he says.

“It would be unthinkable at other restaurants.”

His vivid memories of the five senses formed his core as a professional chef.

“Controlling the senses”: The Key to Match-making Margot’s concept is “haute couture for each table.” In their thorough attention to every detail, they were influenced by Hiroyuki Kanda, the head chef at the celebrated Japanese restaurant “Kanda,” who is always attentive to his guests. Kayama looks up to Kanda as his mentor: “His style of serving food while imagining how the expressions on the customer’s face will change in half an hour or an hour is something I constantly keep in mind, right after the temperature.”

It was through Kanda’s recommendation that Kayama was appointed as an ambassador for KRUG, one of the most prestigious Champagne houses in the world.

Every year from 2015 to 2020, KRUG hosted the “WORLD OF CRAFT DINNER,” in which they chose one ingredient as the main theme, and ambassador chefs from various countries around the world proposed a dish that would make a nice match with KRUG’s champagne. For the fifth and final year, they organised “WORLD OF CRAFT,” looking back at the ingredients featured in each year of the event. As one of the ambassadors, Kayama also participated, showcasing his skills in five dishes, each with a different ingredient as its theme.

“When mushrooms was the theme,” says Kayama, “I created the ‘Hairy crab and mushroom tart with black truffles’, expressing the complexity and evolution of ‘KRUG 2006.’” He believes truffles and KRUG is a perfect match.

When asked what was the most important factor to consider in pairing truffles with KRUG, he answers, “Whenever you match a drink with a dish, it’s essential to control the human sensory perception.” He explains, “When the dish meets a glass of KRUG, the dish shouldn’t overwhelm the drink. But at the same time, if KRUG is always taking the lead, people would get used to it and won’t be moved by its delicious taste anymore.” This subtle attention to the senses of the person who tastes the food is part of what enables him to bring about these remarkable culinary marriages.

世界最高峰のシャンパーニュである KRUG のアンバサダーに就任したのも、神田さんからの推薦 がきっかけだったとか。 KRUG が毎年ひとつの素材をテーマに設定し、世界各国のアンバサダーシェフが、KRUG とのペア リングが楽しめる料理を提案する「WORLD OF CRAFT DINNER（ワールド・オブ・クラフト ディナ ー）」。2015 年から 5 年間開催され、2020 年には集大成として 5 年間の食材を振り返る「WORLD OF CRAFT」が実施されました。加山さんもアンバサダーのひとりとして、５つの食材でそれぞれ 5 品を考案し、腕を振るいました。

マルゴットのコンセプトは「テーブルごとのオートクチュール」。こうした行き届いた気配りは、ゲス トに寄り添う日本料理の名店「かんだ」の料理長・神田裕行さんからの影響だと言います。神田さ んを師匠と慕う加山さんは「お客様の 30 分後、1 時間後の表情を想像して料理を提供するスタイ ルは、温度の次にこだわっている」と話します。

「マッシュルームがテーマの料理で、僕が手がけたのは『毛蟹とマッシュルーム 黒トリュフのタル ト仕立て』。 『KRUG 2006』の複雑性と変化のイメージを膨らませて完成させました」 加山さんは「トリュフと KRUG の相性は完璧」と続けます。 ではトリュフと KRUG をペアリングする上で、最も重要なこととは何でしょうか。尋ねてみると「飲 み物と料理のペアリングは、人間の感覚を操ることがすごく大切」なのだとか。 「KRUG と出合ったときに料理が勝ってはいけないし、だからといって、KRUG のおいしさがずっ と先行していると、かえって人間の感覚は KRUG に感動しなくなってしまいます」 味わう人の感覚への絶妙なアプローチが、至高のマリアージュを奏でる料理に生きていました。

Opening a New Branch: Offering the Margotto Style “Margotto e baciare” plans to open its first branch restaurant, “Margotto Hawaii,” in Kaka’ako, Honolulu on the island of Oahu in June 2022.

“I’ve always wanted to take on the challenge of opening a restaurant in the US,” Kayama says with enthusiasm. “I’d like to serve dishes specialising in truffles in the same style as the main restaurant in Nishi-Azabu. I hope to collaborate with KRUG for the Hawaiian branch as well.”

Kayama’s culinary artistry, with his skillful control of flagrance and temperature, is sure to receive a hearty welcome.

1924 年に滋賀県・近江八幡で生まれ。柳宗悦の民藝思想に影響を受け、31 歳で染織 の道に入りました。日本古来の「草木染め」と当時普段着であった「紬織（つむぎおり）」 を通して美を探求し、芸術の域にまで高めました。その功績が認められ、1990 年に重 要無形文化財「紬織」保持者に認定、2016 年には文化勲章を受章しています。近年では、 フランス・パリやドイツ・ベルリンでも展覧会を開催。2013 年には、娘・志村洋子、孫・ 志村昌司とともに芸術学校アルスシムラを創設、後進の育成に力を入れています。

Born in 1924 in Ōmihachiman, Shiga Prefecture, Shimura was influenced by the mingei (folk craft) movement of Yanagi Sōetsu and decided to pursue the path of the textile artist when she was thirty-one years old. She sought to express beauty through the traditional Japanese techniques of kusaki-zome (natural dyeing) and tsumugi-ori (slub-woven silk fabric) which was used for everyday wear at the time, and she sublimated her work into an art form. For her achievements, she was officially recognized as a Preserver of the Important Intangible Cultural Property (popularly known as Living National Treasure) of Tsugumi-ori in 1990, and she was awarded the Order of Culture in 2016. In recent years, she has held exhibitions overseas as well, including in Paris, France and Berlin, Germany. In 2013, she established the art school Ars Shimura with her daughter, Yoko Shimura, and her grandson, Shoji Shimura, to encourage the growth of younger generations.

ATELIER SHIMURA Led by Shoji Shimura, grandson of Fukumi Shimura, artists of the next generation have created this dyeing and weaving brand with the aim of spreading knowledge about the colorful world of plant dyes to the present society. While valuing the traditional culture of Japan, such as kimono, the collective is always exploring the meaning of beauty in today’s world. We are creating and selling products with the overarching theme of “embracing nature and art in the everyday.”

Indigo (ai) is at the heart of atelier shimura’s dyeing. During the Meiji Restoration, foreigners from overseas were astounded by the sheer beauty of Japanese indigo and praised it as “Japan blue.” Japanese indigo is unparalleled in the richness of its tonal qualities and in its spiritual significance.

To prepare the indigo for dyeing, we use the traditional method of natural foam fermentation that we inherited from Fukumi and Yoko Shimura over

generations. Following the lunar calendar, we begin the process with the new moon.

We pray to the Matsunoo Taisha, a Shinto shrine in Kyoto that worships the deity of the moon, Tsukuyomi-no-Mikoto.

In a special indigo urn, we blend in the sukumo, a dye made from the fermented leaves of the indigo plant from Tokushima Prefecture; the foam; lime; and Japanese sake, and we mix it every day. The process of indigo is like raising a child: each urn has its own personality, and there is no set

manual to follow. The only thing we can count on are our five senses. During the aidate process, we are constantly alert to the subtlest changes in colour, lustre, scent, temperature, texture, and so on.

Some days after this process of aidate (literally “raising indigo”), air bubbles called “indigo flowers” start to blossom, and from around the full moon, the full dyeing begins. We slowly submerge silk threads in the indigo urn, let them swim in ample time

and space, then lift them up. As soon as the threads touch the air, they turn a mystical shade of emerald green, but in no time at all, the colour changes into indigo blue. In natural plant dye, it’s not possible to create green directly, but indigo dyeing gives us a momentary glimpse of this elusive green. We call this phenomenon “the mystery of green.”

Indigo has its own life cycle: from its birth to its youth, to its prime and its old age, all the way to its last breath, the tones of

colour change over time. In its early years, from birth to youth, it creates a youthful, translucent blue; in its prime, a weighty, solid blue; in its old age, the colour gradually grows lighter, approaching a colourless colour, until it reaches the end of its life, when it doesn’t dye anything at all. When you work on dyeing everyday, you witness an infinite variation in the gradation of indigo. We often weave in a technique called “Ai no bokashi” (indigo shading), and this effect is thanks to the subtle gradation

of indigo dye.

In Japan, there are many names for the numerous shades of colour that indigo can create. Even if we name just the representative ones from darker shades to lighter, there are plenty: nōkon (navy blue), kon (azure blue), ai-iro (indigo), hanada-iro (cerulean), asagi-iro (teal), mizu-asagi (light teal), kame-nozoki (light blue). Just from this range of words, it is clear how deeply indigo has taken root in Japanese life and culture.

アトリエシムラの染めの中心は藍です。かつて明治維新のと きに海外からきた外国人は、あまりにも美しい日本の藍をみて 「ジャパン・ブルー」と称賛しましたが、日本の藍ほど色相が 豊かで、精神性の高い藍は世界に類を見ないほどです。

藍建ての仕方は、志村ふくみ、洋子から代々継承した伝統的 な天然灰汁（あく）発酵建てによるもので、太陰暦に従って新 月から建て始めます。京都・松尾大社の月読尊（つくよみのみ こと）に合掌し、藍の葉を発酵させた徳島の蒅（すくも）、灰汁 （あく）、石灰、日本酒を藍甕に入れて、毎日混ぜていきます。 藍は子育てのようなもので甕ごとに人格が異なるので、 マニュ アルというものが存在せず、私たちの五感だけが頼りです。藍 建て中は、常に色や艶（つや）、匂い、温度、手触りなどを確認 し、微妙な変化も見逃さないようにしています。

藍にはそれぞれの一生があり、誕生から青年、壮年、老年、そ して終焉まで、色相が変化していきます。誕生から青年期まで は、若々しい透明感のある青色、壮年期は安定感のあるどっ しりした青色、老年期はだんだんと色が薄くなり、色なき色へ と近づいていき、終焉を迎えると、まったく染まらなくなりま す。毎日染めていると、無限の藍のグラデーションを目にする ことになります。私たちは「藍のぼかし」という織りをよくしま すが、これも藍のグラデーションのおかげです。

The Culture of Kimonos in Summer

Summer kimonos are commonly hitoe in June and September; ro, sha, and a light garment called jōfu in July and August. Hitoe refers to a kimono without a lining, so they are lighter than awase (a lined kimono), distinguished by their airy quality. Ro and sha are silk kimonos that are woven in a special technique called mojiri-ori; to use a term from Western clothing, they are see-through. Jōfu is a kimono made from hemp cloth, and famous examples include the Echigo-jōfu and the Miyako-jōfu.

In the height of summer, people often wear yukata. Yukata used to be called “yukatabira” (a compound of “bath” and “unlined clothing”), and it was worn after bathing in the Edo Period. After the Meiji Era, luxury yukata began to circulate, and it became common for people to wear yukata when they went out, such as for summer festivals, Obon festival dances, or enjoying the cool evening breeze. Yukatas are often made from indigo-dyed cotton, and there are many ways of dyeing them, from kata-zome to shibori-zome. One of the reasons why indigo became so popular for the yukata is that cotton absorbs the dye very well, and the colour patterns made from indigo and white appealed to the Japanese people.

They say “Raising indigo is the same as having a child. Indigo embodies the personality and character of the maker themselves.” It is a sacred vocation. We are able to give birth to the beauty of Japanese indigo, the Japan blue, because we accept the workings of nature while we protect and cultivate the life of indigo. 夏の着物といえば、 ６月、 ９月は単衣（ひとえ）、 ７月、 ８月は絽（ろ）、紗（しゃ）、上布（じょうふ） といった薄物（うすもの）ということになります。単衣とは裏地がついていない着物のことで、 袷（あわせ）の着物よりも軽く、風通しがよいのが特徴です。絽や紗は、特殊な織り方（もじ り織り）をした絹の着物で、洋装でいうとシースルーになります。上布（じょうふ）は麻の着 物で、越後上布や宮古上布が有名です。 盛夏では浴衣（ゆかた）を着ることも多くなります。浴衣はもともと「湯帷子（ゆかたびら）」 という言葉から転じたもので、江戸時代では風呂上がりに着用されていました。明治時代以 降、高級浴衣が流通しはじめると、夏祭りや盆踊り、夕涼みなど外出時にも着るようになり ました。浴衣は木綿に藍染めをしたものが多く、その方法も型染めや絞り染めなどさまざま です。吸湿性のよい木綿生地であることと、藍と白という色柄が日本人に好まれることが浴 衣人気の理由でしょう。 「藍を建てることは子供を一人持ったと思わねばならない。藍はその人の人格そのものであ る」と言われるほど、藍染めは神聖な仕事です。自然の法則に従い、藍の生命を守り育てる ことが、ジャパン・ブルーと呼ばれる日本の藍の美しさを生み出しているのです。

Their locations, both in and outside Japan, weave in the joy of experiencing the essence of the region’s natural features, history, culture, and so on, liberating visitors from their day-to-day life. On the 1st of July, 2020, HOSHINOYA opened yet another charming attraction as its eighth location in the village of Yomitan in Okinawa Prefecture. The “Gusuku* Villa” stretches over the coastal line, encircled by a “gusuku wall,” which took inspiration from gusuku, the archaeological remains of Okinawa. In this space that gathers the luxuries of Okinawa, visitors can unwind and spend their days gazing at the sea. *Gusuku refers to archaeological remains in places such as Okinawa and the Amami Islands. Many of them have walls made of Ryukyuan limestone, which used to surround wooden buildings.
