WINE AND SPIRITS The spring issue begins with the renowned Japanese producers of spirits – Taketoshi Kishimoto, the CEO

of Nikka Whisky, sharing his passion about upholding the quality-first principle of the distillery. We then

dive deep into the universe of French winemaking as we visit the country’s wine regions of Burgundy and

Bordeaux that have long enjoyed global recognition for producing the world’s finest wines. We speak to the heads of Château Mouton Rothschild in Bordeaux and Domaine Olivier Leflaive in Burgundy to gain

an understanding of the power of generational connections in their winemaking traditions, the artistic

approach to creating fine wines, and the power of centuries-long histories at these two estates. After that, Olivia Matsumoto shares her insights into “wine is art” after her remarkable Burgundy journey. We then converse with the Yaegaki Brewery specialising in sake and ask Yusuke Hasegawa about the passion that goes into creating the pride in the Japanese traditions informing his creative approach.

TAKETOSHI KISHIMOTO was born in 1959 in

Hyogo Prefecture. He joined Nikka Whisky Distilling Co. Ltd. in 1982 and became the CEO in 2016. From April 2016 to March 2019, he served as the Chief Director of the Japan Spirits and Liqueurs Makers Association. He has inherited the pioneering spirit of Masataka Taketsuru, the founder of Nikka, also known as “The Father of Japanese Whisky,” who was passionate about producing whisky in Japan, made by Japanese people to suit the Japanese palate. We spoke to President Kishimoto about passing on Taketsuru’s zeal and upholding the quality-first principle of Nikka Whisky.

Eight Years Learning On-site Made Kishimoto the Man He Is Now When he was little, Kishimoto dreamed of becoming a carpenter. He had a carefree childhood surrounded by nature in the Seto Inland Sea region in Hyogo Prefecture until he graduated from senior high school. He went on to study in the Engineering Department of Osaka University, and when he was job hunting in the industrial technology sector, he came across Nikka Whisky by chance.

“There were six people applying for the position, including myself. Two were going to get hired.

I looked around at the other applicants and thought I didn’t have a chance, so I just took home a Nikka ashtray as a memento,” he laughs.

After joining the company, he was stationed at the Miyagikyo distillery located deep in the mountains between Yamagata and Miyagi Prefectures. Since it was such a remote place with nowhere to go besides the distillery and the dormitory, he worked in the distillery until late at night every day, getting absorbed in the process of making whisky.

“I devoted myself to making whisky for eight years at the Miyagikyo distillery, to the extent that people in the company started to say, ‘No one makes Nikka Whisky like Kishimoto.’ Living at the dorm, I became close with my colleagues and the staff, and I learned so much from them. Those eight years made me what I am today.”

Kishimoto’s unchanging passion for whisky shows through his modesty. He says that he is still grateful for the rich learning experience at the Miyagikyo dorm.

幼少の頃の夢は大工だったという岸本さん。兵庫県瀬 戸内海地方の自然豊かな環境で高校まで自由奔放に過 ごしました。大阪大学工学部卒業後、ものづくりがで きる製造技術職の就職先を探していたとき、偶然出会 ったのがニッカウヰスキー（以下、ニッカ）でした。 「自分を含め受験者は６人。選ばれるのは２人です。 他の面接者を見回して自分は受からないと思ったの で、記念にニッカの灰皿をもらって帰りました（笑）」 と、面接当時のことを振り返ります。 入社後は山形県との県境の山奥にある、宮城峡蒸溜所 へと配属。蒸溜所と寮以外はどこへも行く場所のない 仙台の山奥で、岸本さんは毎日遅くまで蒸溜所に残 り、ウイスキーをつくる現場にのめり込んでいったと 言います。 The process of bottling Nikka Black Clear Whisky ブラックニッカクリア壜詰作業 Pot stills at Miyagikyo distillery, which uses steam to distill the whisky slowly at about 130℃ 宮城峡蒸溜所にある「蒸気間接蒸溜方式」のポットスチル

「宮城峡蒸溜所での 8 年間をウイスキーづくりに没 頭したことで、社内では『ニッカのウイスキー造りは 岸本』とまで言われるようになりました。寮生活のな かで従業員の方々と親しくなって、たくさんのことを 教わりました。あの 8 年間があったからこそ今の自 分があります。」 謙虚な姿勢の中にも変わらぬウイスキーへの情熱を覗 かせる岸本さん。育ててくれた寮生活には今でも感謝 しているのだとか。

"From the Barrel": true to its name, this whisky is bottled in almost exactly the same condition as it was in the storage barrel. 「フロム・ザ・バレル」その名の通り再貯蔵 ” 樽 ” からほぼそのままの 状態でボトルに詰められるウィスキー。

Nikka’s Pioneering Spirit: Always Challenging the Preconceptions of Whisky In 1989, an amendment on liquor tax laws brought about a sharp rise in the price of whisky, which used to be in the low range. As a result, people grew distant from whisky, and the weak market continued for more than twenty-five years. At one point, the shipment quantity of whisky companies including Nikka even dropped to one sixth of what it had been at its peak.

It was a long, bitter winter for the whisky industry, and Kishimoto saw many colleagues—both seniors, juniors, and those in the same year—leaving the company. When his wife asked him what he was going to do, he answered, “I’m ready to die with Nikka. I’m sorry if Nikka goes bankrupt.”

“I felt even more love for Nikka,” he recalls, “and I began to think about how to rebuild the company.”

In 2001, Nikka’s “10-Year-Old Single Cask Malt Whisky Yoichi” won the overall first place in the Best of the Best Awards (now called World Whiskies Awards, or WWA), hosted by Whisky Magazine of the UK. Although Japanese whisky won recognition on the international stage, sales in Japan were still low.

It was a difficult time for management and capital investment, but Kishimoto says that Nikka never stopped investing in casks.

“There were times when we had to cease operations at a distillery or close a factory. But even in those hard times, we never gave up investing in casks. That’s the backstory of how we were able to create whisky that gained international recognition. We stayed loyal to the principle of our founder, Masataka Taketsuru. With the passing of ten years, and twenty years, it has come to fruition.”

Although he has a calm demeanor, a fierce sense of commitment and dedication towards Nikka radiates from Kishimoto’s every word.

ニッカのパイオニア精神 既存のウイスキーにとらわれず挑戦し続ける 1989 年に酒税法改正があり、低価格帯のウイスキーの価格が高騰。ウイスキー離れが進み、市場 の低迷期は 25 年以上も続きました。ニッカも他の企業と違わず、ピーク時に比べて 6 分の 1 まで 出荷量が落ちた時期もあったのだそう。 ウイスキーの冬の時代が続き、先輩や同期、後輩の多くが辞めていきました。妻に「あなたはどう するの」と聞かれ、「俺はニッカと心中する覚悟なんだ。もし潰れたらごめんね、と答えた」と、 辛い時代を振り返ります。 「ニッカへの愛は年々深まり、会社の再建方法を考えるようになりました。」 2001 年に「シングルカスク余市 10 年」が、英国のウイスキー専門誌『ウイスキーマガジン』 の「ベスト・オブ・ザ・ベスト（現：ワールド・ウイスキー・アワード（WWA））」で総合第 1 位を獲得。ジャパニーズ・ウイスキーが世界で認められながらも、国内でのウイスキー市場の 低迷期は続きました。 経営は苦しく設備投資が難しい時代にも、ニッカは樽への投資をやめなかったと言います。 「蒸溜を休止した時もあり、閉鎖した工場もあります。そういった辛い状況下でも、樽への投資を やめなかったことが世界的に評価されるウイスキーを生み出すことができた背景にあります。創業 者・竹鶴政孝の信念を忠実に守ったからこそ、10 年後 20 年後に花開き、結果がついてきたのだ と思います。」 穏やかな表情で語る岸本さんの言葉の端々には、ニッカへの熱い想いがこもっていました。

Putting the Happiness of his Employees First, and Taking Nikka to the Global Market These days, whisky sales both in and outside Japan is going well, and the market is growing on a steady upward trend. Even so, it is impossible to foresee what lies ahead. Kishimoto is determined to build a bright future for Nikka, which will reach its 90th anniversary since its establishment in 2024: “My aim is to preserve our high quality, but also to challenge ourselves to undertake new endeavours.”

“Of course, it’s important to promote things like increasing productivity and management that focuses on earning power, but it’s just as vital to keep creating new value for whisky and to introduce appealing products that will get whisky fans excited. I often say this to my employees.”

In recent years, Japanese whisky has been rising in fame overseas, especially in France. “My dream for the future is to make Nikka an even more global company,” says Kishimoto.

“Since I became the CEO, I’ve been putting the happiness of my employees first, above everything else. What keeps a company running is the people—not equipment, not money. I want Nikka to be a company where all the employees can say to themselves, ‘I’m glad I’m part of Nikka.’ As long as I’m in this position, I want to enrich the lives of my employees. A company that cares most about their people’s happiness, making products that are recognised around the world—I think that is a company with a strong appeal.”

It takes many years for whisky to mature. What protected and nurtured Japanese whisky, which has evolved on its own ways as a unique liquor in the specific natural environment of Japan, is the devoted work of the makers who took up the baton from the previous generation and came face to face with whisky-making to give it their all. Kishimoto’s eyes are lit with the spirit of the maker who carries the full responsibility, taking care of the life of the people who form the backbone of whisky-making.

社員の幸せを第一に、ニッカをグローバルな企業へ 現在、国内外でウイスキーの売れ行きは好調で、市場も右肩上がりの成長をしています。 とはいえ、この状況がいつまで続くのかは分からず、先は見えない中、2024 年に創業 90 周年を迎え、創業 100 年を目前にしているニッカ。岸本さんは「品質を守りながら、新し いことに挑戦していかなければと考えている。」と決意を語ります。 「生産性の向上や収益力を見据えた経営を推進することは、もちろん大切ですが、ウイス キーの新しい価値を創造し、ウイスキーファンが是非とも買いたいと思う魅力的な商品を 打ち出していくことも同様に大切なのです。それは常々社員に伝えています。」 そしてここ数年、ジャパニーズ・ウイスキーはフランスを中心に海外でも評価が上がって います。「今後の夢はニッカをさらにグローバルな企業にしていくこと」と岸本さんは話 します。 「代表取締役社長になって私は、ウイスキー造りを支える社員の幸せを第一に考えていま す。企業が成り立つための要は、設備でもなくお金でもなく人です。社員のみんなが『ニ ッカにいて良かった』と感じてもらえる会社にしたいと思っていますし、私がこの立場に いる限りは、社員の生活を豊かなものにしていきたいですね。社員の幸せを第一に考えて こそ、世界に認められるような商品づくりができ、強い訴求力を持つ企業になると考えて います。」 熟成に長い年月を必要とするウイスキー造り。日本の風土の中で独自の酒として進化を遂 げたジャパニーズ・ウイスキーを守り育てたのは、前の世代から渡されたバトンを受け取 り、ウイスキーと真摯に向き合い、次の後世に手渡してきたつくり手の努力によるもので す。岸本さんの目には、つくり手の幸せを第一に考えることからニッカのウイスキー造り を担う、つくり手の精神が宿っていました。

Château Mouton Rothschild Château Mouton Rothschild is a historical wine estate located in Haut-Médoc, the heart of Bordeaux. With its history spanning almost two centuries, the wines produced at the château gained international recognition thanks to the mastery of its winemakers and the creative outlook of the Rothschild family. We asked Julien de Beaumarchais de Rothschild, co-owner of the estate, about the importance of an artistic component in the Mouton Rothschild wines, power of family values, and innovation in the world of wine. シャトー・ムートン・ロスチャイルドは、ボルドーの中心地、オー・メドックに位置 する、およそ 200 年にわたる歴史を持つワイナリーです。ワインメーカーの卓越した 技術とロートシルト家のユニークな考え方から、そのワインは国際的に高く評価され ています。ムートン・ロスチャイルドにとっての芸術という存在の大切さ、家族の価 値観、そしてワイン界における革新について、シャトーの共同所有者であるジュリア ン・ド・ボーマルシェ・ド・ロスチャイルドに話を聞きました。

Please tell us your story. How did you grow up and join the family wine business?

Since 2014, following on from my mother Baroness Philippine de Rothschild, I have been responsible for commissioning the artist – a different one each year – who will create the artwork for the label of the next vintage of Mouton Rothschild to be released.

The branch of the family I come from has always had an artistic vocation: my great-grandfather was a playwright, my grandfather was a poet who designed Mouton as a place of art and beauty, my mother was an actress for a long time and I myself studied art history.

And then of course there are the labels, illustrated each year since 1945 with original artworks, a brilliant idea on the part of my

grandfather, who had a highly developed sense of artistic curiosity.

My family has been at Mouton Rothschild since 1853 and we have always nourished a deep love of the arts, as patrons and collectors.

How do you select artists to design the label from vintage to vintage?

I lead the selection process in consultation with the two other coowners of Château Mouton Rothschild, my sister Camille Sereys de Rothschild and my brother Philippe Sereys de Rothschild.

The artists are chosen first and foremost because we like their work. But of course we also expect their place in the art world to be consistent with that of Château Mouton Rothschild in the wine world, which explains the choice of recognised and confirmed artists.

どのような環境で育ち、家業であるワイン造りに参加し たのですか？

私の家族は 1853 年からムートン・ロスチャイルドに籍を置き、パト ロンやコレクターとして常に、芸術への深い愛情を育んできました。

2014 年から母、フィリピーヌ・ド・ロスシルド男爵夫人の後を継 ぎ、次に発売されるヴィンテージのラベルとなるアート作品を制作 するアーティストの選定・任命を行っています。

ヴィンテージのラベルをデザインするアーティストはどの ように選んでいるのですか？

私たちの家系は昔から芸術の才能に恵まれていました。曾祖父は劇 作家でしたし、祖父は詩人であり、またムートンを「芸術と美の場」 としてデザインした本人で、母は女優で、私自身も美術史を専攻し ていました。 そして、1945 年以来、毎年オリジナルのイラストをあしらったア ート・ラベル。これは、芸術的好奇心が旺盛だった祖父が思いつい た素晴らしいアイデアでした。

共同所有者である姉のカミーユ・セレイス・ド・ロスチャイルドと 兄のフィリップ・セレイス・ド・ロスチャイルドと話し合いながら、 私が主導で選定しています。 アーティストを選ぶときのポイントはまず第一に、私たちがその作 品を好きかどうかです。ですが同時に、芸術界におけるそのアーテ ィストの地位が、ワイン界におけるシャトー・ムートン・ロスチャ イルドの地位と一致していることも望んでいます。だからこそ、有 名で実力のあるアーティストが選ばれているのです。

What role does the label tradition play in the wine world?

In 1924, my grandfather Baron Philippe de Rothschild (1902-1988) asked the famous poster designer Jean Carlu to create a label for Mouton Rothschild to celebrate the first vintage entirely bottled at the Château. Ahead of its time, the label was a one-off and not used for subsequent vintages. In 1945, to celebrate the return of peace, Baron Philippe decided to crown the label for the vintage with the “V” for Victory, drawn by the young painter Philippe Jullian. An exceptional event gave birth to a tradition, and since 1945 a different artist has been invited each year to create an original artwork for the vintage.

The labels illustrated with an artwork symbolise the two mainstays of Château Mouton Rothschild, art and wine, both of them deeply rooted passions in our family. As well as being part of our family history, on occasion they attest to historical events. Wine stands as testimony to

a moment in past time, to a vintage. The label for Château Mouton Rothschild 1945 was the first, and it started a tradition, but it also bears witness to History with a capital H.

With Mouton seen as a drinkable work of art, what do you think is the most valuable to wine lovers? What makes the Mouton wine so reputable across the world?

Quality is what wine lovers appreciate more than anything else. A wine must be the reflection of its terroir, to which it is intrinsically linked, and the conditions of the vintage, especially the weather. The label for Château Mouton Rothschild 2019 is a perfect illustration of this. As Olafur Eliasson says, “wine is a testimony, a fingerprint, of the soil in which the grapes grew and ripened, the year in which it was made, the influence of the sun that year and its cyclical relationship to its environment.”

ワイン界において、アート・ラベルの伝統はどのような役 割を担っているのでしょうか。 1924 年、祖父のフィリップ・ド・ロスチャイルド男爵（19021988）は、すべてシャトーで瓶詰めした初めてのヴィンテージを 記念し、有名なポスターデザイナーのジャン・カルリュにアート・ ラベルのデザインを依頼しました。当時には珍しくこのアート・ラ ベルは一点もので、それ以来一度も使用されませんでした。 その後、1945 年、平和の訪れを祝うために、若手画家のフィリッ プ・ジュリアンが描いた ”Victory”（「勝利」の意）の ”V” をヴィ ンテージのアート・ラベルに用いました。この出来事から伝統が生 まれ、それ以来、毎年異なるアーティストを招き、オリジナルラベ ルを制作してもらっています。

Château Mouton Rothschild What does it mean for Château Mouton Rothschild to be a 100 percent family-owned brand, and how does the family history affect the wine world?

Alongside other leading wine families, we stand for the transmission of values and ideals and a certain independence. Baron Philippe de Rothschild was a true pioneer in wine history. He was the first to introduce château bottling in order to control the quality of the wine from end to end. He most definitely left his imprint on both our history and that of wine.

Our mission is to protect and pass on. We want to preserve the vineyard that was passed on to us, but also improve it so that we in turn can pass it on to the next generation with pride. We are profoundly attached to a family endeavour that preceded us and will continue after us.

That idea of family ownership also affects the way we see the business and our attachment to our employees, some of whom spend their entire career with us and have known different generations of the family.

Château Mouton Rothschild How do you protect the legacy of the family business? What are your main objectives plans for the future, particularly in today’s turbulent market?

The estate benefits from exceptionally favourable natural conditions, in the quality of the soil, the position of its vines and their exposure to the sun. From grape to bottle, combining respect for tradition with the latest technology, the wine receives meticulous attention from highly skilled winemakers and vinegrowers responsible for each parcel of the estate. The grapes are harvested by hand in small open crates, sorted on vibrating tables and vinified in oak vats with some transparent staves, after which the wine is matured for 18 months in new French oak casks.

Brought to the pinnacle by two exceptional people, Baron Philippe de Rothschild then Baroness Philippine, Mouton Rothschild is a place of art and beauty, famous for the spectacular vista of its great barrel hall, its magnificent vat house and the renowned Museum of Wine in Art with its collection of precious objects associated with the vine and wine from two millennia.

My sister Camille Sereys de Rothschild, my brother Philippe Sereys de Rothschild and myself, true to their work, with the same enthusiasm and determination, are committed to perpetuating Baron Philippe’s dictum: “Live for the vine”. Domaine Olivier Leflaive, a well-established wine estate in France’s Burgundy, has roots that go back almost 400 years in history. The Leflaive family has been producing wine in the commune of Puligny Montrachet in Côte de Beaune since 1635. Today, Olivier Leflaive and his daughter Julie Leflaive represent the eighteenth and the nineteenth generations of the family that has become part of the long history of winemaking in Burgundy.

In 1985, three years after taking over Domaine Lef laive from his father, Olivier founded a new company under its current name. The goal of Domaine Olivier Lef laive was to grow the winemaking portfolio of the house by expanding the production to a broader variety of white wines of Côte-d’Or. CREATIVITY IN DIVERSITY Olivier’s motivation in establishing the new company under his name was connected to his passion for working with a variety of different grapes and experimenting with wines. He continued to buy new vineyards across Burgundy to increase the variety of wines produced under the name of his company and capture the full scope of the region’s rich terroirs. Currently, the company produces 600,000 bottles a year across 14 villages in Burgundy.

“Today, I make 82 different wines at 82 different vineyards. This means that I harvest grapes from 82 different vineyards every year and that I have 82 different wines to taste in my cellar,” – Olivier mentions.

He explains that the beauty of Burgundy and, specifically, Côte-d’Or, lies in the fact that “each plot of the vineyard gives a different taste”.

“It is my passion to be able to experience plenty of different tastes and smells, this is what I love about having such a diversity of wine.”

Recently, Olivier began to experiment with champagne, launching champagne Valentin Leflaive back in 2015. Olivier explains his decision, saying that this “was not an ambition, it was curiosity”.

“85% of my production is Chardonnay, and it was interesting for me to apply my technique of making wine in the Côte-d’Or,” – he says.

Same as the business of winemaking, the love of art runs deep in the Leflaive family, making the production of wine exclusively a process of artistic creation. Both Olivier and Julie enjoy music and sometimes sing together in front of the guests.

Olivier says that, to him, winemaking can be compared to composing music: “You need an awareness of the rhythm to create good music, same as you need to be sensible of the weather and to understand the personality of each terroir to make wine.”

CENTURIES OF ARTFUL WINEMAKING Family traditions and history are highly valued at the estate, inspiring winemaking at all levels of production.

Julie Leflaive says that the meaning of tradition also translates to the vineyards themselves: “The vineyards here took a long time to become what they are now. It took over 2,000 years for them to develop. And we really want to continue our tradition this way and to respect nature, time, and our secrets.” “ We are ver y traditional. It means we work to make the wine exactly like my father, grandfather, and grand grandfather. Nothing is new except for the materials (stainless steels tanks, bottling machine, air-conditioned) ,” – Olivier adds.

“We want wine with elegance, finesse, and complexity. Those are the three aims of our winery.”

The contemporary technology allows speeding certain processes at the winery, such as bottling the wine. In the past, according to Olivier, only 100 bottles were being bottled at the production line every hour, while today, thanks to technology, this number rose to 2,000 bottles per hour.

Domaine Olivier Leflaive Domaine Olivier Leflaive constantly receives multitudes of tourists from around the world wanting to explore the region of Burgundy and meet one of its legendary winemakers who happily receives them at the Hotel Olivier Leflaive.

Olivier takes an active part in showing the guests around the winery and cellars, saying that allows him to create a special relationship with his visitors and helps them feel more comfortable. “I love my visitors, and I am happy to see them from anywhere in the world, it is very interesting for me,” – he adds.

The family focuses on introducing their guests to the complexity of Burgundy and helping them fall in love with the region, just like Olivier himself.

Julie also mentions that it is important to show the visitors the family traditions at Olivier Leflaive. “The people who come to Burgundy want to see the family, want to see the tradition of the living. It is important for us to give them a real and full experience. They will know so much about the family that they can feel as if they are a little part of the family,” – she says.

She concludes by saying that there are three main experiences designed for the visitors to have the best time staying at the hotel – food, wine, and sightseeing. The guests are welcome to dine at the restaurant Klima, which is due to open soon. The family also invites the guests to visit the vineyard and the cellar with Olivier himself, who chooses the wines and is happy to tell the visitors all about them.

Another experience recently introduced at the winery is the “wine bike” – an electric car that rides around the vineyards and the villages. There are ten such bicycles at the vineyard that the guests can take to ride around the territory.

“We are trying to do our best to welcome the guests and to share the best of Burgundy. When they come back to their home country and go to restaurants or wineries, we want them to have this great memory about their trip to France.”

My interview with Olivier Leflaive made me take a walk down memory lane, recalling the days of my journey to Burgundy, the prestigious wine region that inspired me to explore the idea of wine seen as art.

I am particularly impressed by the humble beauty of the magnificent seasonal changes. The terroirs and climate together paint the landscape, the soul and the spirit of Burgundy. When the question “Is wine an art form?” is addressed to the Burgundian winemakers, they all emphasise the incredible connection with nature, mentioning that their job is to express the character of each terroir gifted by it. In Burgundy, wine and art are inseparable in terms of uniqueness and nature at the heart of the process.

My trip begins with the charming sounds of music at the Festival Musique & Vin au Clos Vougeot. The orchestra plays beautiful compositions that seem to fill the vineyards and cellars across the whole region of Burgundy with living and breathing sounds. The soul and spirit of the wine are awakened by the twirling butterflies and slowly nodding flower buds across the vineyards.

Nature and Burgundy spirit are closely connected. The egg-shaped cellar of the renowned estate Domaine Lef laive is an iconic example. Its unique shape is inspired by natural forms, as Brice de La Morandière, the general manager of Domaine Leflaive, explained with a visible sparkle in his eyes: “The egg signifies life.

The joy of harvest in Vosne-Romanée ヴォーヌ・ロマネでの収穫の喜び

In Burgundy, the creation of art requires the power of thought and inspiration, as well as the understanding of nature, which together give birth to the best wines. In late summer here, the grapes are getting mature. The vine-growers are ready to communicate with nature and decide on the best date for the harvest. I find myself in luck to witness the grandiose harvest at Domaine de la Romanée-Conti, where I understand how winemakers pursue perfection at every step of wine creation. Their team begins the work in the early morning, harvesting branches of grapes one by one and sorting them by hand on sorting tables. The hand craft requires deep concentration, patience and skill. Undoubtedly, the harvest starts as a ceremony to show sincere appreciation to nature for making it all possible.

In autumn, the wineries finish the busiest work of harvest and prepare to present their new wine vintages to the public. The wine tasting is the time when the winemakers’ communication to their work particularly shines through. To me, coming to the tasting at Domaine Gros Frère et Soeur, the whirlwind of tastes and smells are overwhelming, while the quiet attention of winemakers to the wines they taste reflects the deep knowledge that goes into their craft. Like Rose-Marie Ponsot of Domaine Ponsot once shared, “When you open a bottle of wine, you are sharing emotions and creating experiences with others. This traditional centuries-old practice is the best description of art.”

The vineyards rest in winter. But as the days grow longer, the pale brown shades of the winter season are gradually making way for the greens of the awakening vines. I feel how inspiring it is to see how wines, from the moment of their conception in the vineyard to their full development in the cellars, from childhood to adulthood, travel through history and time, absorbing the gifts of nature and the culture carved in them by the hands of the man.

As spring 2022 comes, nature starts to wake up, excited to make the new year even more enjoyable. We get ready to become spectators of the lively vineyards in Burgundy giving birth to new lives. As Japanese figure skater Yuzuru Hanyu portrayed beautifully in his “May Spring Come” performance at the closing ceremony of Beijing Winter Olympic, I wish Burgundy to wake up to a prosperous Spring. ブルゴーニュでは、芸術の創造には、思考と発想の力とともに、自然に対する理解が不 可欠です。それらが相まって、素晴らしいワインを造り出します。ここでは、夏の終わ りにブドウが熟します。ワイン生産者は自然と対話し、ベストとなる収穫のタイミング を決めます。幸運なことに、ドメーヌ・ド・ラ・ロマネ・コンティでの大規模な収穫の 様子を見ることができました。これを見て私は、造り手たちが、ワイン醸造のすべての 段階において、パーフェクトを目指していると実感しました。彼らはチームを組んで、 朝早くから仕事をはじめます。手でブドウを摘み、テーブルに並べて仕分ける。手作業 には、集中力、忍耐力、そして技術が必要です。収穫はセレモニーであり、これにより、 自然を真に理解することと、それが可能であることを示しているのでしょう。 秋には、収穫の繁忙期を終え、新しいヴィンテージをお披露目する準備に入ります。ワ インの試飲は、生産者がその出来映えをアピールする場です。私は、ドメーヌ・グロ ･ フレール ･ エ ･ スールで試飲をする機会に恵まれました。立ち昇る香りと味に圧倒され ながら、生産者のワインに対する秘めたる情熱が深い知識となり、ワインに昇華されて いると感動しました。ドメーヌ・ポンソのローズ・マリー・ポンソはかつてこう言いま した。「ワインのボトルを開けると、その場にいる人と感情と経験を共有します。これ も何世紀も続く伝統であり、最良の芸術なのです」 ブドウ畑は、冬は静かです。日が長くなるにつれ、色のなかった畑に緑が芽吹きはじ めます。ブドウ畑に命が宿るこの瞬間からセラーで熟成されるまでは、子どもから大 人への成長です。自然の恵みとそれらによって育まれた文化に敬意を払いながら人間 が手をかけた、歴史と時間の詰み重ねの様子を目にできるのは、何と素晴らしいこと なのでしょう。 2022 年の春はもうすぐです。自然が目覚め、新しい年のはじまりに胸が躍ります。ブ ルゴーニュのブドウ畑にも命の兆しが見られます。日本人フィギュアスケーターの羽生 結弦選手が、北京オリンピックのエキシビションで、「春よ、来い」の音楽による美し いパフォーマンスを見せました。ブルゴーニュにも豊かな春が来ることを願います。

YUSUKE HASEGAWA Imagine a bottle of sake displayed like a stunning piece of art with a backdrop of water flowing down all across the wall. Ever since its foundation in 1666, Yaegaki Brewery has been making sake in the area of Himeji in Banshū, surrounded by beautiful nature. Their sake is sold directly in Tokyo at “Hasegawa Eiga Roppongi,” an exclusive store graced with an air of tranquility. It was Yusuke Hasegawa, leading the Yaegaki Group (which includes Yaegaki Brewery) as the CEO since 2016, who established this brand to mark their 350th anniversary. We spoke to him about his past journey and what awaits him in the future. 壁一面をさらさらと流れ落ちる水をバックに、アート 作品のように美しく展示された日本酒のボトル。1666 （寛文６）年の創業以来、豊かな自然に恵まれた播州 ・姫路で酒造りを営んできたヤヱガキ酒造の直営販売 店「長谷川栄雅 六本木」は、静謐な美の空間です。 創業 350 年を記念し、このブランドを立ち上げたのが、 2016 年、ヤヱガキ酒造を含むヤヱガキグループ全体の 代表取締役社長に就任した長谷川雄介さん。これまで の道のりと今後の展開についてうかがいました。

“Can I love sake as much as I love music?”: Hasegawa’s Early Dilemma Hasegawa Eiga Roppongi 長谷川栄雅 六本木

“Hasegawa Eiga” takes its name from Hasegawa’s ancestor, who first began the brewery. The Hasegawa family are descendants of the Fujiwara clan, a powerful family that used to dominate the imperial court in classical Japan. Eiga Hasegawa was the 33rd descendant of Fujiwara no Kamatari.

Yusuke Hasegawa was born into this family in 1977. After completing a Master’s degree in business administration at Rikkyo University, he began work at an audio technology company in the international sales department. “I felt the need to broaden my experience working at a non-food-related manufacturing firm before I took on the family business. More importantly, I love music. It was a source of great pride for me to be part of making something linked to music.”

In 2007, he joined the Yaegaki Group, which operates in various industries such as liquor, food, and health care. “Just like music, sake can nourish your soul.” This belief is at the core of Hasegawa’s business ventures and expansion into the overseas market. “When I first started here, to be honest, I wasn’t sure whether I could love sake as much as I love music,” he laughs. “But now, I really do love sake.”

「長谷川栄雅」は、酒造りを始めた長谷川さんの 先祖の名前。長谷川家は公家・藤原氏の一族に連 なり、長谷川栄雅は藤原鎌足の 33 代目子孫にあ たります。 1977 年、創業家に生まれた長谷川雄介さんは、 立教大学大学院で経営学を専攻し、博士課程前期 修了後、オーディオメーカーで勤務。海外営業を 担当しました。「家業を継ぐ前に、食品以外のメ ーカーで経験を積む必要を感じていましたし、何 より音楽が好きなんですよ。音楽に関わるものを 作っていることは、大きな誇りでした。」 2007 年、酒類や食品、ヘルスケア事業などを多 角経営するヤヱガキグループに入社。“ 音楽と同 じく、日本酒も人の心を豊かにする ” というビジ ョンを持ち、経営企画や海外事業展開に携わりま す。「入社当時、正直に言えば、自分は音楽ほど 酒を愛せるか疑問でした。今となっては、日本酒 が大好きですけどね。」と笑います。

A private space of tranquility that a guest can reserve just for their party. 完全貸し切りで一組のみ過ごせる、静謐な空間。

The Project that Transfigured Sake into Art The Hasegawa Eiga brand is luxuriously brewed from the precious Yamada Nishiki rice harvested from the special A-grade district, known as a top-notch rice for sake. The water used in their brewing process is channelled from the underground stream of Hayashida River, a branch of the Ibo River, which flows from Shika-ga-tsubo, the deep waterfall pool known for its scenic beauty. The kōji yeast is prepared in a traditional method called “futa-kōji-hō,” and they employ the subtle “fukuro shibori” pressing technique for extracting the sake in order to achieve the most delicate, pure flavour. The whole process is the fruit of more than 350 years of tradition, technique, and experience. At the zenith of refinement, this sake represents the true Japanese art of brewing. It’s fitting that it came into being through Hasegawa, who has a passion for all the arts.

It is not only sake that he turned into art, but also the Hasegawa Eiga project overall. In 2018, he opened Hasegawa Eiga Roppongi, and its spatial design was shaped by his taste in art—well versed in both Western art such as Cubism and Picasso, and Japanese art such as traditional paintings—as well as his strong desire “to offer the ideal space for enjoying sake, where people can truly savour its rich flavours.”

At Hasegawa Eiga Roppongi, visitors can experience sake tasting in a Japanese-style room of about thirteen square metres under a lofty ceiling, lit by a soft light from the yukimi window (or “snow watching” window, a sliding shōji partition with the upper half covered in translucent paper and the lower half consisting of a glass pane, which affords a nice view of the garden from inside). In bespoke sake cups specially commissioned from ceramic artists, five kinds of Hasegawa Eiga are offered for tasting, each paired with a special side dish formulated by top chefs of Japan to match their particular flavours.

alcove in a simple, elegant style. Stepping into this space, we feel a breath of fresh air, and, enveloped in the soothing sound of trickling water, we savour the sake along with inventive side dishes—it is indeed a feast for all the senses.

For this project, Hasegawa was careful to find true masters of their art for each collaboration: for the sake cups and flower vases, he worked with the ceramic artists Tsuyoshi Hotate, Ryuji Iwasaki, and Tasuku Mitsufuji. For the flower arrangement, he worked with the kadō artist Shungetsu Nakamura. Rising stars in the chef world, such as Tsuyoshi Fukuyama of La Maison de la Nature Goh and Natsuko Shoji of été, have worked on the side dishes for the sake tastings.

酒だけでなく、長谷川栄雅プロジェクト全体もアートへと昇華させました。2018 年 に開店した「長谷川栄雅 六本木」の空間は、キュビズムやポストピカソなど西洋芸 術だけでなく、日本画など日本の芸術にも造詣が深い長谷川さんのセンスと、「お酒 を楽しむ最高の空間を整え、日本酒はおいしいと心から感じてもらえるシチュエーシ ョンを実現したい」という強い想いが生きています。 日本酒体験ができる天井の高い八畳の和室には、柔らかな光が差し込む雪見窓が切ら れています。陶芸家に特注した酒器でティスティングする 5 種類の長谷川栄雅の酒そ れぞれに、国内トップシェフによるオリジナルの「酒のあて」をペアリング。酒器と 同じ陶芸家の花器に活けた季節の花が床の間にすっきりと飾られます。清々しい気に 満ちた空間で、水の流れる心地よい音に包まれ、粋を凝らした肴と共に酒を楽しむ時 間に、五感の全てが高揚します。 プロジェクトでのコラボレーションは「本物」にこだわりました。酒器と花器の製作 は陶芸家の保立剛氏、岩崎龍二氏、光藤佐氏。花は華道家・中村俊月氏。日本酒体験 の「酒のあて」を手掛けてきたのは、「La Maison de la Nature Goh」福山剛シェフ、 「été」庄司夏子シェフなど、新進気鋭のシェフたちです。

長谷川栄雅ブランドは、高品質の酒米を生産する特 A 地区の希少な山田錦を贅沢に使 い、名勝「鹿ヶ壺」を源流とする揖保川系林田川の伏流水で醸されています。麹づく りは古くから伝わる「蓋麹法」、搾りは雑味のない繊細な味わいを実現する「袋搾り」 など、350 年以上の年月で培った伝統の技と経験の結晶です。日本酒の粋を極めた逸 品はまさに “ 発酵の日本芸術 ”。アート全般をこよなく愛する長谷川さんだからこそ 生まれたと言えます。

“I’d like my customers to take home their memory of the time they spent here as an unforgettable experience,” says Hasegawa in a serene tone. “I hope they’ll feel closer to sake by coming here—not just our sake, I mean, but any sake.” If they felt inspired to pause, even at home in their everyday lives, and take the time to savour some sake in a refined cup, gazing at delicately arranged flowers, it would add a splash of colour to their lives.

Hasegawa himself has had an unforgettable experience. In his first work-training at the audio tech company, he had the opportunity to listen to a performance of Eric Clapton played in an audio room with equipment of the highest quality. “It was astounding how good the sound was, just because of the equipment and the surroundings,” he recalls. “It was as though Eric was standing right in front of me.”

This mind-blowing experience—along with the realisation that all aspects of the surroundings are critical for maximising the effect—is also part of what drives the Hasegawa Eiga project.

Hasegawa Eiga Roppongi: Born out of a Moving Experience

Awaiting the Global Recognition of Sake’s Depth “I hope there will come a day when sake will be recognised around the globe as something cool and attractive,” says Hasegawa. From ancient times, sake has grown out of tender veneration for nature and the pursuit of better quality through honing techniques without compromise. It symbolises the values and the pure soul of Japanese people. But Hasegawa feels that even within Japan, many people have yet to understand the true value of sake.

In order to reach international circles, to spread the love of sake as something that embodies Japan’s rich culture and aesthetics, Hasegawa is ready to break free from tradition and continue to expand the value of sake by collaborating with true artists: always striving to be more creative, more artistic. Hasegawa will challenge himself to keep innovating, for he holds a firm belief in the infinite possibilities of Japanese sake.

「お客さまには、この空間で過ごしたことを “ 忘れられない体験 ” として、持って帰ってい ただきたいんですよ。うちの酒じゃなくても、日本酒にもっと親しもうという気持ちにな れる場所でありたいです。」と長谷川さんは静かに語ります。家であっても、丁寧に活け た花を眺めながら、品の良い酒器に注いだ日本酒を落ち着いてゆっくり味わう生活は、人 生を彩り豊かにしてくれます。

日本酒の奥深さがグローバルに 評価される日を信じて

「日本酒がクールなものとして、グローバルに評価される日がくることが願い です。」と話す長谷川さん。日本酒は、太古から自然を慈しみ、妥協のない技 を用いて質の高さを追及するという、日本人の価値観と「美しい心」そのもの です。しかし国内においてさえ、日本酒はまだ正当にその価値を理解されてい ないと、長谷川さんは感じています。 日本の豊かな文化と美を体現している日本酒を国内外にさらに発信するため、 伝統に固執せず、「本物」とのコラボレーションで付加価値を高めていく。よ りクリエイティブに、よりアーティスティックに。日本酒の無限の可能性を信 じる長谷川さんの挑戦と革新は続きます。

1941 年東京生まれ。53 歳のときにフランス印 象派の大家クロード・モネの『睡蓮』に感銘を受 けて以来、日本の浮世絵や文化に影響を受けた 印象派の画家に着目。2020 年にはジャポニズム 研究の集大成となる『睡蓮交響曲』を発表しまし た。フランスのジヴェルニー公立印象派美術館や ドイツのベルリン国立アジア美術館などでも展覧 会を行い、国内のみならず欧米からも高い評価を 受ける日本画壇の重鎮、平松礼二さんにこれまで の作家の歩みについて伺いました。

Reiji Hiramatsu was born in 1941 in Tokyo. At fifty-three years old, he was deeply moved by Water Lilies, the work of the French painter and key figure in impressionism, Claude Monet. Since then, he has been studying impressionist painters who were influenced by Japan’s art and culture, such as ukiyo-e. In 2020, he exhibited The Symphony of Water Lilies, his series of paintings in which his research on Japonisme culminates. His artworks have been displayed in various locations, including the Giverny Museum of Impressionisms in France and the Berlin State Museum of Asian Art in Germany. Highly acclaimed in Japan as well as in the West, Hiramatsu is an influential figure in the world of Japanese painting. We spoke to him about his artistic journey.

Tracing the Evolution of Reiji Hiramatsu’s Colours and Style

The world of Hiramatsu’s paintings mesmerise us with a kaleidoscope of resplendent colours and bold compositions. His style has continued to evolve over his artistic career, which spans more than half a century. He was fifteen years old, he says, when he was captivated by colour.

“At the time, I used to live near Nagoya in Aichi prefecture, and there was a pottery place for Seto Ware, one of the six ancient kilns of Japan. I used to go there often to sketch nearby.”

It was there that he was entranced by the colour on a fragment of pottery, which had been discarded and smashed by a potter as a failed piece.

“I was enthralled by the irresistible beauty of the gosu blue (a blue pigment created from an impure cobalt oxide, historically used for porcelain). I gathered up the fragments eagerly and brought them home with me. As I gazed at them, I was drawn into the world inside that colour, more and more.”

In his twenties and thirties, Hiramatsu preferred to use deeper colours, such as grey and Prussian blue, with black as a base, but his colour palette gradually expanded. It was at fifty when he reached a turning point. He travelled to France for the first time for his solo exhibition in a gallery on the Avenue des Champs-Élysées. The colours he experienced in Paris entered his paintings, and, since then, his work took on more gorgeous hues.

華やかな色彩と大胆な構図で魅了する平松さんの絵画世界。半世紀以上にわたる画業の中で作風は 変遷を遂げていきました。そんな平松さんが色に魅了されたのは、15 歳のときだったと言います。 「当時住んでいた愛知県名古屋市の近くには、日本六古窯のひとつである瀬戸窯があって、高校時 代はよくその近くでスケッチをしていました。」 そこで陶芸家が失敗作として割った陶磁器の破片の色に魅了されます。

「呉須（ごす）の青に、たまらない美しさを感じました。夢中でいくつもポケットに入れ、持ち帰 って眺めているうちにその色が持つ世界観にどんどんと引き寄せられていったことを覚えていま す。」 平松さんが 20 代 30 代の頃は、作品にグレーやプルシャンブルーなど、黒を基準とした深い色を 好んで使っていましたが、徐々に色数は増えていきました。大きな変化が訪れたのは 50 歳の時。 フランスのシャンゼリゼ通りにあったギャラリーでの個展のために初めて渡仏し、このときにパリ で感じた彩りが絵の中に加わり作品は華やかに変貌していったと言います。

The Fascination with Impressionism and Japonisme that Shook the Sensibilities of Japanese Painting It was when he travelled to France for his solo exhibition that Hiramatsu encountered Monet’s art. He stopped by the Musée de l'Orangerie when he was out on a walk in a park near his hotel. There, he saw Monet’s Water Lilies extending across the wall, measuring no less than ninety-one metres in length. As a painter himself, Hiramatsu felt a shiver of utter excitement.

“The special room in which Monet’s Water Lilies is displayed at the Musée de l’Orangerie is oval-shaped. The canvas hangs all around the wall, at the same height. To me, it was just like a byobu (a folding screen with decorative panels), and I wondered, ‘Why did a Western impressionist paint a byobu?’”

This incident triggered Hiramatsu’s life work: his research on French impressionism and Japonisme.

“Why did these distinguished artists of the West seek the aesthetics of a faraway country like Japan, which they might not even have visited? Because they could find inspiration there. That’s how these artworks were born. Then in turn, I came from Japan, fell in love with their artworks, and began to seek the origins of Japonisme in Paris.”

“After many years,” says Hiramatsu, “another artist may take inspiration from my paintings, and the beauty will be passed on. If

this link is never broken—this link of an artist falling in love with another’s work—beauty will never wither away.”

Hiramatsu began to visit Paris often, tracing the paths of the impressionist painters and exploring the thoughts or emotions of the Western artists of the period from the particular perspective of a Japanese painter. His research, which has continued over thirty years, was also recognised in France. In 2018, he held an exhibition on the theme of Japonisme at the Giverny Museum of Impressionisms in Giverny, a village in France where Monet resided until his death. In 2021, he received the Ordre des Arts et des Lettres (Chevalier) from the French Republic.

“Impressionist paintings are truly wonderful,” says Hiramatsu, “the artists’ time and even their ways of life are embedded within the artwork. The air on your skin, the touch of cold, the singing of birds—the artists felt all this while painting. In the East, the moon is considered the supreme beauty, but in the West, artists are conscious of the sunlight in their expressions. I realised that this was the realism that I had lacked.”

The singular world of Hiramatsu’s art, with its splendid lights and colours, is enriched by his profound study of Japonisme and by his respect for impressionist art—and it glows all the more for them.

「モネの『睡蓮』が展示されているオランジュリー美術 館の特別室は楕円形をしていて、壁を囲むように同じ高 さのキャンバスがぐるりと展示されています。それを見 た僕は屏風と錯覚し、『なぜ西洋の印象派の画家が屏風 を描いたのだろう』と不思議に思ったのです。」 この出会いをきっかけに、フランス印象派とジャポニズ ムの研究が平松さんのライフワークとなりました。 「西洋の名だたる作家たちがなぜ、訪れたこともないよ うな日本の美を競い合うようにして求めたのか。インス ピレーションを得られたからです。また、日本人の僕が そうして生まれた作品たちに恋をし、ジャポニズムの源 泉を求めてパリに向かいました。」「時が流れて、また 別の画家が僕の絵画からインスピレーションを受けて、

美をつないでいく。画家が恋をし合っていくような連鎖 が続けば、美が枯れることはありませんよね。」 パリに通うようになった平松さんは印象派の画家の軌跡 を辿り、当時の西洋画家の心境を日本画家の視点から探 りました。30 年以上続く平松さんの研究はフランスで も認められ、2018 年にはモネが終焉の地としたフラン スのジヴェルニーにあるジヴェルニー印象派美術館でジ ャポニズムをテーマにした展覧会を開催。2021 年には フランス共和国芸術文化勲章（シュヴァリエ）を受章し ました。

日本画家の感性を揺さぶった、 印象派の作品とジャポニズムの魅力

平松さんがモネの作品と出会ったのは、個展でフランス を訪れた時でした。ホテルの近くにある公園を散歩して いて立ち寄ったオランジュリー美術館に、全長 91 メー トルにもなるモネの大作『睡蓮』が展示されていました。 平松さんは同じ画家として衝撃を受け、震えを感じるほ ど感動したと言います。

「時間や彼らの生き方までもが描き込まれた印象派の作 品は、本当に素晴らしい。肌に触れる空気、寒さによる 凍え、鳥のさえずりも感じながら描いています。東洋で は月を最上の美としますが、西洋では太陽の光を意識し て表現します。自分にはこのリアリズムが足りなかった と思いました。」 平松さんの独自の芸術世界を構成する光と色彩は、ジャ ポニズムに対する深い考察と印象派作品への敬意に育ま れ、輝きを放っています。

Hiramatsu says that his “research is nowhere near enough,” not only about Western art, but also about artistic media. His many creations witness his experimental practice, in which he has explored diverse materials and techniques, such as iwa-enogu (pigments made mainly from ores), sumi ink, and collage.

“The materials used in Japanese painting are fantastic,” says Hiramatsu. “There is an incredibly wide range of pigments as well as brushes. There are also innumerable techniques, such as the various ways of portrayal that make the colours come out differently. Japanese painting branched off from the tradition of Eastern painting and evolved in its own way. It came to fascinate Western masters because Japanese people are well suited for delicate handiwork.”

By using diverse materials and techniques, Hiramatsu continues to reconstruct Japanese painting and create revolutionary pieces. When asked whom he trusts the most, he speaks of his wife of fifty-five years, his face softening with a tender warmth.

“When I’m successful with a painting, my wife smiles and gazes at the piece. If it’s not a good one, she turns her nose up at it and just passes by. She’s my trusted partner as well as my foremost judge.”

Through his research on Japonisme, Hiramatsu recognised anew the profundity of Japanese painting—its playfulness, decorativeness, and stylistic beauty—and he persists in striking out his own unique world view with his art. For a man who talks in such a gentle way, his journey as an artist has been astonishingly powerful.

西洋画に限らず、画材についても「まだまだ研究が足りない」と話す平松さん。岩彩、コ ラージュ、墨などの多彩な技法を駆使して実験的な試みを行いながら、数多くの作品を制 作してきました。 「日本画の画材は素晴らしいものです。顔料の種類は豊富で、筆にも多くの種類がありま す。発色の違いが出せる描写の仕方など、技法もさまざまあるのです。東洋画から独立し て発展した日本画が、西洋の巨匠たちを魅了するまでになったのは、日本人が繊細な手仕 事に向いているからです。」 多彩な画材や技法を通して日本画の再構築を行い、革新的な作品を生み出す平松さん。そ んな日本画家の大家が最も信頼を寄せるのは、連れ添って 55 年になる妻だと言います。 「僕の作品の出来が良いと、妻は微笑んで作品を眺めていますが、出来が良くないと、ツ ンとして作品の前を通り過ぎていってしまいます。彼女は僕の相棒であり、偉大な審査員 なんです」と、優しく温かな表情で語った平松さん。 ジャポニズム研究を通して、日本画の遊び心、装飾性、様式美の奥深さを再確認し、独自 の世界観を打ち出している作家の歩みは、温和な語り口からは想像できないほど力強いも のでした。

Fernando Botero is a Colombian-born painter and sculptor known for his largescale works with exaggerated features. Botero’s artworks are internationally recognized and have been exhibited in the leading museums around the world. The artist positions himself as a purely Colombian creator, as he draws inspiration from his native culture and traditions.

We spoke to Botero about his path as an artist, sources of inspiration, and key cultural influences in his works. 描くものや人がすべて膨らんでいる「大きめサイズ」な作品で広く知られるコ ロンビア生まれの画家兼彫刻家、フェルナンド・ボテロ。その作品は世界中で 認められ、これまで多くの名だたる美術館で展示されてきました。ボテロは母 国コロンビアの文化や伝統からインスピレーションを得ており、自らを生粋の コロンビア人アーティストだとしています。 今回はボテロに、アーティストとしての道のりやインスピレーションの源、作 品に見られる文化の影響について話を聞きました。

ARTISTIC COMING OF AGE Recalling his earlier experiences, Fernando Botero says: “I have always said that, if you are a true painter, everything you see is an excuse to paint. It is true that I didn’t have any professional training in painting, but I had an enormous passion for painting and drawing. Ever since I was a boy, I have only found true pleasure in the art of painting.”

“I had a curious experience once, as I was trying to paint a man standing in front of me. I went to a market and started painting someone, but the man realized that I was painting him. Suddenly, he came and tore my sheet; that is how I learned that one could not paint a model in that way. I could not be looking at someone and painting them because that could bother the person,” – he adds, reflecting on the key moments that shaped the direction of his career.

Botero goes on to say: “After that, I have never ever painted with a model in front. Not in any of my works. My works are traces of my memory. I can express with the help of my memory all those atmospheres and characters, all of the “paisa” [rural] culture I lived in for 20 years. Things like this remain within you; it was where I learned to live, it’s this entire wonderful atmosphere that remains deep in your memory.”

ボテロは続けます。「それ以来、モデルを前にして絵を描いたことは 一度もありません。私の作品は、私の記憶なのです。私が 20 年間暮 らした “ パイサ ”( スペイン語で「田舎・地元」の意 ) の街並みや人物 を、記憶の力を借りて表現しています。こういうことって記憶に残り ますよね。そこは私が生き方を学んだ場所であり、そういう素晴らし い空間がまるまる、記憶の奥深くに残るのですよ。」

PHILOSOPHY OF EXAGGERATION Speaking of the style of his artworks, Botero mentions that he is interested “in expressing the manifestation of volume in art”.

“I started to paint these volumetric figures when I was seventeen. There are still watercolours of my most early works that you can find in catalogues that have a particular disproportion of the form,” – he says, adding: “But I did not know why I did it; I did it by intuition because it said something to me. Then, when I was in Europe, especially Italy, I rationalised the importance of the volume because I saw that all Italian painters like Michelangelo, Raphael, Giotto, Masaccio, Piero della Francesca made a celebration of volume.”

“There is a great use of volume, especially in Italian painting, which is volumetric. They did it to exalt the sensuality of the subject, to exalt the form and colour; everything in those paintings was a celebration. Art is always an exaggeration. The painter exaggerates the colour or the shape or exaggerates the line,” – Botero concludes, adding: “If you want to be an artist, always look up after those great artists that inspire you and push you to be a better person, a better artist and constantly keep learning every day.”

Reflecting on his decision to move to Paris in the 1970s, Botero mentions: “I always had that feeling that I wanted to feel and touch all my paintings and give them a three-dimensional aspect. In 1972, I decided that I wanted to learn the art of sculpting and fully committed myself to a whole year in Pietrasanta in Italy to learn to sculpt. I started doing small figures, very shy, and then learned how to give them more volume, more power, and more magnitude.”

大げさの哲学 ボテロは自身の作品スタイルについて、「アートでボリュームを表現すること」に興味が あると話します。 「17 歳の時にふくよかな体型の人物を描き始めました。初期の水彩画でデフォルメ表現 が大きく見られるものは、まだカタログにも残っています。」ボテロはさらに続けます。 「でも、どうしてふくよかな人物を描いたのか、自分でもわかりませんでした。それが何 かを私に伝えているような気がして、だから直感でやってみたんです。その後、イタリア に行ったとき、ミケランジェロやラファエロ、ジョット、マサッチョ、ピエロ・デラ・フ ランチェスカなど、イタリアの画家はみな豊満さを描いているのを見ました。そこで、ボ リュームはアートにおいて重要であることを理解したのです。」 「特にイタリア絵画はボリュームの使い方が素晴らしい。イタリア絵画は、人やものをよ り官能的にし、色やかたちをより強調するためにボリュームを使っています。賞賛したく なるほどに。アートはいつだって大げさなもので、画家は色やかたち、線を誇張するので す。」さらにボテロはこうも言いました。「もしアーティストになりたいなら、良い人間、 良いアーティストになるよう背中を押してくれる、インスピレーションを与えてくれる偉 大なアーティストを尊敬し、日々学び続けることです。」 1970 年代にパリへ移住することを決めた当時を振り返り、ボテロは言います。「自分の 絵を感じ、触れたい。三次元のかたちを持たせたい。いつもそう感じていました。そこか ら彫刻を学びたいと思い、1972 年、イタリアのピエトラサンタで 1 年間、彫刻を学びま した。小さな像をつくることから始まり、そのあと、もっとボリュームを持たせ、もっと パワーを与え、より大きくする方法を学んだのです。」

POWER OF LATIN AMERICAN ARTISTIC TRADITION “For art to be universal, it has to be local. I come from a very humble city of Medellin. There were no museums, no cultural institutions, and no tradition in art. For me it is amazing how I was attracted to become an artist growing up in a city where there was none of the mentioned above,” – the artist recalls.

“I have always said “What you achieve in life, is a function of your admirations”. The most important thing in life is who you admire.”

Commenting on the strong influences of his native culture, Botero says: “I have always painted all my childhood memories from Colombia, even though I left Colombia at a very young age. I have always been very much inspired by the great masters of the history of art, but always managed to paint in a way that has always been very local yet managed to speak in a universal language. I am inspired to know that my work definitely speaks a universal language.”

ラテンアメリカの伝統的なアートの力 「アートが万国共通であるためには、同時に地域的でなければなりません。私が生まれ育ったコロ ンビアのメデジンという街は、美術館も文化施設もなく、伝統的なアートもない小さな街です。そ のような街で育った私が、なぜアーティストになろうと思ったのか、不思議ですよね。」 「『人生で何を達成するかは、何を賞賛するかである』私はこう信じています。人生でいちばん大 切なことは、誰を尊敬するか、です。 」 幼少期にコロンビアを離れたものの、その頃のコロンビアの記憶を描き続けているというほど、母 国の文化の影響を強く受けているボテロ。「もちろん、歴史に残る偉大なアーティストからも大き な影響を与えられました。でも、地域的であり、かつ、万国共通の言葉で語る、そんな方法で絵を 描いています。私の作品は間違いなく世界共通語を話しているのだと思うと、感動的ですね。」

MAGIC IN FULL FORM ボテロ展 ふくよかな魔法 The exhibition “Botero: Magic in Full Form” will be held in Japan to celebrate Botero’s ninetieth year. In 2022, for the first time in twenty-six years, Botero’s art will be back in Japan, and the exhibition will tour around three venues in the country. Botero himself has overseen the selection for this exhibition, and it includes a total of seventy pieces of oil paintings, watercolour paintings, and drawings, many of which will be seen in Japan for the first time. The display of Mona Lisa’s Profile (2020), a recent addition to Botero’s ongoing series of paintings based on the Mona Lisa, is no doubt eagerly awaited by many. Botero remains prolific even now, and “Botero: Magic in Full Form” offers a new encounter with the artist. ボテロ生誕 90 周年を記念した「ボテロ展 ふくよかな魔法」が日本で開催されます。 日本では実に 26 年ぶりとなる 2022 年、国内 3 会場を巡回することとなりました。 本展はボテロ本人監修のもと油性ならびに水彩・素描作品の全 70 点で構成され、 その多くは日本で初公開となります。なかでもボテロが描き続ける「モナ・リザ」 をテーマにした作品「モナ・リザの横顔」(2020) の公開は多くの方が心待ちにし ているのではないのでしょうか。今もなお、作品を生み出し続けるボテロとの新た な出会いが「ボテロ展 ふくよかな魔法」で待っているかもしれません。

Born in 1960 in Tokyo, Akane Teshigahara is the granddaughter of Sōfū Teshigahara, who founded the Sōgetsu school of ikebana (Japanese traditional floral art). She is the second daughter of the 3rd Headmaster of Sōgetsu school, Hiroshi Teshigahara. The Sōgetsu school of ikebana values a free-form style of expression and individuality, unrestrained by conventions. Their creations are remarkable for their wide range, from friendly arrangements that can blend into daily life to bold, avant-garde works of art. Akane Teshigahara became the 4th Iemoto (Headmaster) of Sōgetsu school in 2001. We spoke to her about her creative practice as well as the philosophy and aesthetics of Sōgetsu school that have been passed down over generations.

From a young age, Akane was trained in the art of ikebana by her aunt Kasumi, the 2nd Headmaster of Sōgetsu school. Since flowers were a constant presence in her life, she never felt that ikebana was anything extraordinary.

“Once a week, I attended the ‘Junior Class,’ an ikebana class for children at the Sōgetsu Kaikan. It was like playing to me, and I felt free to arrange flowers as I liked.”

Nowadays, Akane herself leads the “Akane Junior Class.” Before she formally joined the Sōgetsu Foundation, she used to work as a kindergarten teacher for four years. She learned an essential skill through that experience: to express herself and to convey ideas in a way that would reach small children. It comes in handy for teaching ikebana, too.

THE IMPORTANCE OF EXPRESSION Twenty years have passed since Akane succeeded to the position of Headmaster. More than anything, she has placed great value on communicating with the people supporting Sōgetsu ikebana, from behind-the-scenes atelier staff who assist her floral creations to the teachers of Sōgetsu school. When she joined Sōgetsu Foundation, she started in the public relations department, and it was through her work there that she made an invaluable discovery.

“I was struck by the sheer depth and earnestness of the passion the teachers felt towards Sōgetsu ikebana whenever I went to meet them for interviews. I realised that what has kept Sōgetsu alive since my grandfather’s generation is the presence of these devoted people who love Sōgetsu ikebana.”

“At kindergarten, you’re trying to communicate with children. If they’re not interested, they won’t even listen. You need to find a way to express yourself effectively to catch their interest. It’s the same with teaching ikebana—style of delivery is important.”

To commemorate the twentieth year of Akane’s term as a Headmaster, the solo exhibition titled “RELEASE” was held in the annex atelier of Sōgetsu Kaikan in November 2021, including largescale installations and ikebana art. During the production process, the strong bond of mutual trust that she has been cultivating with the atelier staff flourished.

“The trick to conveying ideas,” she says gently, “is not to expect everyone to understand with the same kind of teaching, and not to skip over trivial details expecting people to get them without your explanation. You should be aware of what kind of person your student is and adapt your method of teaching to suit each one.”

The central piece of the exhibition was a massive spherical installation using flora and iron. They dismantled an objet d’art made by the founder Sōfū and incorporated it into this new artwork. The reconstructed piece came to embody the beating heart of Sōgetsu, passed down from one generation to another in an unbroken line.

幼少の頃から叔母である第二代家元・霞にいけばなの手ほどきを受けていた茜さん。いつも身の 回りに花があり、いけばなは特別なものではなかったと言います。

現在は茜さん自らが「茜ジュニアクラス」を主宰しています。茜さんは草月会に入る前、幼稚園 の教諭として 4 年間勤務していた経験があり、このとき身につけた小さな子どもたちへの「伝え 方」の工夫は、いけばなの教え方にも通じるところがあったのだとか。 「幼稚園では子どもが相手。興味がなければ話も聞いてくれません。関心を持ってもらえるよう に、伝える方法を工夫する必要があります。いけばなの指導でも『伝え方』は重要です。」 そして、「同じ指導で誰もが理解してくれるとか、些細なことは言わなくてもわかってくれると 考えるのではなく、相手がどんな人なのかを見極め、その人に合った伝え方をしていかなければ いけません。」と、穏やかに語ります。 家元を継承して 20 年。家元作品の制作を陰から支えるアトリエスタッフをはじめ、会員（草月 流師範）とのコミュニケーションを何よりも大切にしてきた茜さんは、草月会に入ってすぐ、広 報部で勤務していた時代に、大切な気付きを得たと言います。

伝える力の大切さ

「週に一回、草月会館のジュニアクラス（子ども向けのいけばな教室）に通っていて、遊び感覚 で自由にいけていました。」

「取材で赴いた先で出会った会員の方々の草月への想いの深さ、強さに驚かされました。草月が 祖父の時代から今日まで存在し続けてこられたのも、こうして草月のいけばなを愛してくださる 方がいるからこそなのだと実感しました。」 茜さんの家元継承 20 周年を記念して、草月会館別館アトリエで 2021 年 11 月に開催された「勅 使河原茜展 ひらく」では、大型のインスタレーションやいけばな作品が展示されました。制作 過程では、これまで培われてきたアトリエスタッフとの絆が遺憾なく発揮されました。 メインの大作は、植物と鉄を使った巨大な球体のインスタレーション。初代家元・蒼風のオブジ ェをパーツとして組み込み、新たに再構成した同作は、脈々と受け継がれてきた草月の遺伝子が 今も息づいていることを実感させるものとなりました。

to work together with artists to bring out the appeal of each side, instead of adhering to a fixed idea of their ways of expression.

In the collaborative project with the creative company “NAKED Inc.” she created a fantastic scene of f loral beauty lit up by projection mapping. She encountered a problem that she would never have experienced had she stayed within the confines of the ikebana world.

“In that sense, Sōgetsu has always evolved through collaborating with creators of different genres.”

“Projection mapping illuminates objects with videos, so it has to be done in a dark environment. I wasn’t quite content with the level of darkness that made it difficult to see the floral art.

We had many discussions over it, and eventually, we were able to present the work in a way that both sides were satisfied with.”

“You accentuate the characteristics of each flower and plant, while adding a personal touch, the originality of the artist.

That’s what’s intriguing about ikebana—the most exciting part.” As she speaks, this sense of joy flashes across her face: the thrill of coming upon an idea through engaging with the flora before her, which in turn animates her creative impulse towards expression.

他分野との交流、 新しいいけばなの可能性を探る

茜さんは、他分野の表現者とのコラボレーションも精力的に行っています。

いけばなはやはり植物と向き合うことが何よりも大切だとも話します。 「植物の特徴をいかし、そこにいけ手の個性をプラスしていく。そこがいけ ばなの面白いところであり、ワクワクするところですね。」と、茜さん。植 物との対話を通じて得た着想が、表現に向かうエネルギーに変えられていく。 その喜びが表情からも読み取れました。

As ever, Sōgetsu school continues to embody the fresh, ever-evolving world of ikebana. One question that Akane raises is the public’s impression of ikebana: how ikebana tends to be seen as something more special, more out of the ordinary than it really needs to be.

“People from outside Japan have no preconceptions about ikebana, so they simply take it as art,” she says. “Also, they tend to be more aware of flowers in their daily lives.

It’s common for them to send flowers to people, or use them to decorate their homes when they invite people over. I wonder how close Japanese people feel towards ikebana nowadays, even though it’s a beautiful part of Japan’s traditional culture.”

She feels that “for busy people today, flowers are becoming more and more distant from their lives.”

“You don’t need knowledge or experience to do ikebana,” she says. “I’d like to invite you to pick a flower in a flower shop, set it in a vase, and think about where it would shine as a decoration in your home. A single flower can change the entire space into something more charming. For a start, I’d love it if people could experience that change for themselves.”

Ikebana tends to be considered as highbrow, something beyond the reach of ordinary people. Because of this, Akane urgently feels the need to create more opportunities for people to see and experience ikebana in person.

“I think it’s my duty to open up ikebana to a wider public, to create opportunities for people to become more familiar with it,” says Akane. As she continues to pursue beauty through moving works of art that speaks to the heart of many viewers, she strives to spread the appeal of ikebana to wider spheres.

Making the Beautiful Traditional Culture of Japan More Familiar in Everyday Life 日本の美しい伝統文化をもっと身近に いつの時代も風化することなく、瑞々しいいけばなの世界を体現する草月流。茜 さんは今、いけばなが必要以上に特別なものと捉えられがちなことに疑問を抱い ていると言います。 「海外の方は、先入観なくいけばなを “ アート ” として捉えてくれます。また、 海外では人に花を贈ったり、人をお招きするときに花でもてなしたりすることが ポピュラーなせいか、花への意識も高いように思います。今の日本人は日本の美 しい伝統文化であるいけばなを、どれだけ身近に感じているでしょうか。」 茜さんは「忙しい現代人にとって、ますます花が遠のきつつある」と、続けます。 「いけばなは、知識や経験がなければできないものではありません。お花屋さん で花を一輪買って、器にいけ、ご自宅のどこに飾れば一番素敵なのかを考えてみ てください。一輪の花で空間は華やかに変わります。まずはその変化を体験して みてほしいですね。」 敷居が高く、手の届きにくいものと認識されてしまう。だからこそ、実際に作品 を見て感じてもらう機会の必要性を痛感としていると言います。 「いけばなを身近に感じてもらうためのきっかけを作ることが、私の使命だと思 う。」と語る茜さん。多くの人の心に訴えかける作品を通して美の追求を続けな がら、いけばなの普及に力を注いでいます。

"RELEASE" ~ AKANE TESHIGAHARA SOLO EXHIBITION FOR 20TH ANNIVERSARY In November last year, a second exhibition to commemorate Akane’s twentieth year as the headmaster of Sōgetsu, titled “RELEASE” was held. In July of the same year, the f irst exhibition titled “CONNECT” was held at Sōgetsu WEST in Kyoto, their headquarters in Western Japan. The venue for “RELEASE” was the annex atelier of Sōgetsu Kaikan, a site of creation for generations of Sōgetsu headmasters. A place laden with the histories and the memories of the Sōgetsu school, the atelier housed an enormous spherical installation, the centrepiece, and numerous other grand artworks during t he ex hibit ion, of which t he v isitors were ena moured.

The current atelier, built in April 1984, is scheduled to be demolished within the next few years, due to the development of the surrounding neighbourhood.

家元継承 20 周年記念

勅使河原茜展 ひらく 昨年 11 月、茜さんの家元継承 20 周年を記念した個展第二弾 「ひらく」が開催されました。同年 7 月には、西の拠点であ る草月 WEST（京都）にて個展第一弾「むすぶ」を開催。個 展第二弾「ひらく」は歴代家元の創造の場であり、草月流にと って心臓部とも言える草月会館別館アトリエが舞台。草月の歴 史を通じて思い出深い場所で、メインとなった巨大な球体のイ ンスタレーションや壮大な作品の数々が人々を魅了しました。 1984 年 4 月に建設された現在のアトリエは、周辺地域の開発 に伴い数年以内に取り壊される予定となっています。

TSUYOSHI TANE Tsuyoshi Tane is a Japanese architect who heads the Parisbased, international team, ATTA – Atelier Tsuyoshi Tane Architects. ATTA carries out research into the “memories” attached to a place, and based on what they uncover, they design lasting architecture to carry us into the future. Tane has won numerous awards, such as Le Grand Prix AFEX for French architecture overseas in 2021 for the red-brick Hirosaki Museum of Contemporary Art in 2020. His other projects, including the Estonian National Museum, Todoroki House in Valley and “LIGHT is TIME” demonstrate his distinctive vision. Here, Tane shares his thoughts on the role of architecture as an element of culture.

Meeting People and Place, Widening Values When Tane was little, he had a quiet personality, but he loved sports, playing football whenever he had the chance.

“Rather than winning the game,” he recalls, “I was more interested in forming a good team. In football, each team member must pay close attention to each other while constantly moving on the field, and it’s important to be able to bring out the best in your fellow members. It’s a totally different ball game from my current work, but there’s a lot I learned from it that’s still useful for what I do now.”

In senior high school, he was on the youth team and aspired to be a professional football player, but he had to change course due to an injury. In 1998, he entered Hokkaido Tokai University’s School of Art and Technology, Department of Architecture. As an undergraduate, he went on a study abroad programme to Chalmers University of Technology in Sweden. After graduating, he was a visiting researcher for one years at the Royal Danish Academy of Fine Arts in Denmark.

He then worked at architecture offices in Denmark and in the UK.

architects. Their concept was praised for utilizing the airstrip of a former Soviet military base: a building that will pass down the national memory of Estonian people. Taking this opportunity, they established DGT (DORELL.GHOTMEH.TANE / ARCHITECTS) and started their activities based in Paris, France.

Tane values encounters with people, and he collaborates with world-leading creators. One of those collaborations is with Kei Kobayashi, the first Japanese chef to win three Michelin stars in France, to redesign the interior of Restaurant Kei. Kobayashi’s restaurant is in a historical building in the Empire style of Paris.

The idea was to redecorate the interior to create a space that will complement the world of Kobayashi’s artistic, refined cuisine. Using crystals and marble, Tane created a light-flooded space, “La galerie des glaces: the hall of mirrors.”

Through meeting international students from all over the world and learning about their cultures, he felt his own worldview and values expand.

“For ATTA, it was the first time we built something for a three-star level restaurant,” says Tane. “Since spaces in the French classical style are decreasing, even in France, we incorporated features resembling the Hall of Mirrors in the Palace of Versailles as one way of symbolising high-quality status.”

The turning point came when he was twenty-six years old. In 2006, he won an international competition to propose a design for the Estonian National Museum, which he entered it with two fellow

幼少期は物静かな性格でしたが、運動が好きで、時間さえあればサッ カーをしている少年だったそう。 「試合に勝つことはもちろん、いいチームを作ることに強い関心があ りました。サッカーはメンバー全てがそれぞれ考えながら動き続ける スポーツで、仲間を生かす発想が大切です。建築の仕事とは全く関係 のないように思われる分野ですが、現在でも生かされていることはた くさんありますね。」 高校在学中はユースチームでプロサッカー選手を目指していました が、怪我をきっかけに断念。1998 年に北海道東海大学芸術工学部建 築学科に進学し、在学中にスウェーデンのシャルマス工科大学へ留学 しました。卒業後はデンマーク王立アカデミーで客員研究員を 1 年 経て、その後、デンマークとイギリスの設計事務所に勤務しました。 さまざまな国から来た留学生たちと出会い、グローバルな交流を行う 中で、自分の価値観が拡張されていく感覚があったと言います。 転機が訪れたのは、26 歳の時。2006 年に友人ふたりと応募したエ ストニア国立博物館の国際設計コンペに優勝。旧ソ連時代の軍用滑走 路を使った案が、エストニア民族の記憶を継承する建築になるとして 評価されました。これを機に DGT. を結成し、フランスパリを拠点に 活動をスタートさせました。

ある歴史的建造物を改装し、小林シェフの芸術的で洗練された料理の 世界観を表現するレストランを手がけようという構想から、クリスタ ルと大理石を用いた光に浸る空間「Lagalerie des glaces – 鏡の間」 が生み出されました。

人との出会いを大切にしている田根さんは、世界的クリエイターたち とコラボレーションしています。

「三つ星クラスのレストランを作ることは ATTA にとって初の取り組み でした。フランスでもフレンチの古典的な空間が減っています。ひとつ のステータスとしてベルサイユ宮殿のような空間を取り入れました。」

そのクリエーションのひとつが、日本人で初めてフランスでミシュラ ンの三つ星を獲得したシェフ小林圭さんのレストラン「Restaurant Kei」の内装を手掛けるプロジェクト。パリのエンパイアスタイルに

“Place, memory, time, and space are inseparable” As the internationalization of construction industry emerged with the modernisation of the twentieth century, the culture of architecture—meant to create an environment that supports the lives of ordinary people—turned into a system of industrial production.

“Industrial production offers its services to encourage more and more consumption,” says Tane. “All architecture need space to be built. That order shouldn’t get reversed. But now, economy and efficiency are often prioritised.”

He believes that this tendency is especially evident in Japan.

“When they see that the value of a building has gone down

with the passage of time, they decide to tear it down. It’s a ridiculous way of thinking. There are so many buildings that become more valuable as time goes on. Once you destroy them, the culture and the civilization attached to that particular place is lost, and then forgotten. Place, memory, time, and space are inseparable. It is critical that we consider just how important it is to preserve the cultural architecture of a place: to preserve the memory of the land and to keep cultivating it.”

From early in his career, Tane’s work has been concerned with “memory of place.” His thinking on this theme has deepened over time, and he continues to explore the role of the architect in society.

20 世紀の近代化に伴い建築業が国際化してから、人が暮らす 環境を支える街並みを形づくる建築という文化が、産業に変わ ってしまった面があると言います。 「産業は消費を促す発想でサービスを行います。建築は場所が あって初めて創ることができる。この順序が逆転してはいけな いと思います。ですが今は、多くが経済的なものや効率を優先 しています。」 日本は特にその傾向が顕著だと指摘します。 「時間が経って建物の価値が下がったからその建物は壊そうと いう発想はおかしい。時間と共に価値が高まる建物はたくさん ありますし、土地固有の文化や文明が失われ、忘れられてしま います。場所、記憶、時間、空間を切り分けることはできませ ん。文化的な建築を土地に残し育てていくことの重要性と向き 合うことが今、重要ではないでしょうか。」

Tane describes his process: “We excavate the essential memories from a place through research with an archaeological approach. Based on what we find, we build the design, incorporating some experimental aspects. Every place has memories— an accumulation of the wisdom of humanity—and I want to preserve that for the future.” With “Archaeology of the Future” as their manifesto, ATTA is making progress with multiple projects that create architecture rooted in the memory of place.

For their latest project, ATTA designed a new museum space for the Al Thani Collection inside the Hotel de la Marine, an iconic structure located on Place de la Concorde in Paris, built by Louis XV in the eighteenth century to house the royal collection of furnishings. The new museum opened to the public on 18th November. As an architect of the new era, Tane continues to stride forward in his endeavours to connect distant memories of the past with the future.

“We want to discover memories from a place. If the place remembers for us, its culture can be passed down across generations and eras. I believe architecture has the power to make that happen.”

Tane is constantly exploring the role and purpose of architecture in society. Always receptive, listening to what the land has to tell him, his creations emit a fierce individuality, with a compelling message to shape the future.

「僕らは場所の持つ記憶を心から信用している」 「考古学的なリサーチでその場所の本質的な記憶を発掘し、それをもとに実験的な取り組みを行いながら建築を創り、その 場所の記憶としてこれまでに積み上げられた人類の叡智を未来に残していきたい」と語る田根さん。ATTA は「Archaeology of the Future」をマニフェストに、場所の記憶から未来の建築をつくるプロジェクトを多数進行しています。 「考古学の分野では新発見が歴史自体を変えることがあり、そういった面にシンパシーを感じています。」 最新のプロジェクトとしては、パリのコンコルド広場前に位置する 18 世紀にルイ 15 世がフランス王室コレクションの 保管場所として建てた建物オテル・ドゥ・ラ・マリーン内に、ザ・アール・サーニ・コレクションの美術館が 11 月 18 日にオープンしました。新世代の建築家として、遠い記憶と未来をつなぐ活動に邁進しています。 「僕らは場所の持つ記憶を発掘したいと思っています。場所が覚えていてくれれば、世代や時代が変わっても、文化の継 承はできるので。建築にはそういった可能性があると思っています。」 建築に求められる社会的意義を自身に問い続ける新世代の建築家は、常に土地に根ざした受け身の姿勢でありながら、そ のクリエーションは未来を創造する強いメッセージ性を持ち、強い個性を放っています。

HIROKO OTAKE Born in Gifu prefecture, Hiroko Otake completed her Doctor of Fine Arts degree at Tokyo University of the Arts, majoring in Nihon-ga (Japanese-style painting). In 2014, she was awarded the Emerald Grant Award by Tokyo University of the Arts. She lived in New York for a year from 2015, supported by the Agency for Cultural Affairs Program of Overseas Study for Upcoming Artists. Since her postgraduate studies, her artwork has featured butterflies as a motif. Her use of Japanese painting materials such as haku (metallic leaf) and iwa-enogu (mineral pigments) to discover new ways of expression have garnered high praise both within and outside Japan. Building on such traditional techniques, Otake has been exploring the theme of “permanence in the moments of constant change” through her creations. Drawn to the “New” in Japanese Painting: Starting to Paint at 15 Years Old Otake grew up surrounded by nature. As a child, she used to play with butterf lies in the forest, and the flowers that would come and go each season. “I felt the cycles of nature and its life force very closely—the f lowers blooming, falling, the seeds getting planted, new seedlings sprouting up,” she recalls.

From a young age, she started drawing and trying out various media: dessin sketches, watercolours, oil painting. When she was fourteen years old, she encountered Japanese painting. Around fifteen, she began practicing it in earnest.

“It was in the library that I discovered Japanese painting for the first time, coming across some artworks by Hasegawa Tōhaku, Maruyama Ōkyo, and others. Paradoxically, it felt ‘new’ to me—I was drawn to how they were already painting such abstract works from so long ago, how they valued nature, and how they conveyed a sense of space—so I decided to pursue Japanese painting.”

After that, she graduated from a senior high school with a special focus on art. Aspiring to build and sharpen her skills further, she went on to major in Japanese Painting at Tokyo University of the Arts and completed her doctorate degree.

大竹さんが生まれた環境は、自然豊かなとこ ろ。森で蝶と遊んだり、季節ごとの花と戯れ たりしながら育ったそうです。 「花が咲き、散って、種ができて、芽が出 る。というような自然の循環や生命力などを とても感じていました」 幼い頃から絵を描き始め、デッサンや水彩 画、油絵などを描いていた大竹さんが日本画 と出会ったのは 14 歳のとき。本格的に日本 画を始めたのは 15 歳の頃でした。 「長谷川等伯や円山応挙の作品を図書館で 見て、そこから日本画というものが存在する ことを初めて知って、すごく古い時代からア ブストラクトな作品を描いていたり、自然を 大切にしていたり、また空間感があるような ところに惹かれて、逆に新しいなと感じて日 本画を描こうと思い至りました」 その後、美術科の高校を経て、自分の技術を 鍛錬させたいという気持ちから東京藝術大 学を志し、同大学の絵画学科日本画専攻へと 進み、博士号を取得します。

THE LIQUIFYING METAMORPHOSIS

FASCINATED BY THE ECOLOGY OF BUTTERFLIES, DISSOLVING ITSELF ONCE TO BECOME AN IMAGO According to Otake, she began to paint butterflies while she was a postgraduate student.

“It started when I was struck by the morphing process of butterflies: inside the chrysalis, the larva dissolves itself once before becoming a fully-formed imago. When I was painting butterflies, the thought of this complete metamorphosis resonated with my desire at the time to grow and transform as a person as well as an artist. After that, I delved into butterflies and encountered notions such as the butterfly effect and the word “psyche” in Ancient Greek. I think butterflies are a very fitting motif for me, since the theme that runs through my work is ‘permanence in the moments of constant change.’”

Otake calls her own artwork contemporary Japanese painting. Her paintings attest to her strong desire to paint Nihon-ga as contemporary art: to break away from its classical image while respecting its tradition, and to use the materials and techniques of Nihon-ga as an artist living in the present day.

大竹さんが蝶を描き始めたのは、大学院に在学していた ときだったといいます。 「きっかけは、蛹の中で蝶の幼虫が一度液化して成虫に なるという過程に衝撃を受けたことです。この完全変態 という過程と、大学院生の自分が人間的にも画家として も変化して成長していきたいという感覚が、蝶を描いて いるときにシンクロしました。その後、蝶のことを調べ ていくと、バタフライ・エフェクトや Psyche という言 葉にも出会いました。“ 流動的な瞬間の中にある恒常性 ” をテーマにしている私に蝶というモチーフはとても合っ ていると思っています」 大竹さんは自身の描く絵を現代日本画と呼んでいますが、 そこには日本画の伝統に敬意を払いながら、古典的なイ メージを払拭し、現代に生きるアーティストとして日本 画の画材や技法を使いながら、現代アートとして日本画 を描きたいという思いが込められています。

Unique Expressions of Chance コントロールしきれない 素材から生まれる唯一無二の表現

In her work, Otake often uses mineral pigments as well as gold and silver leafing. When we ask her why, she answers, “Using metal such as gold leaf and silver leaf can enhance the depth of a painting in a way that’s different from oil, acryl, or watercolour painting. It expands the range of my expression. Metallic leaf reflects light, and I’m fascinated by how it changes depending on the time or the angle you view it in. For silver leaf, I create a burnt kind of tone by sulphurating it. By incorporating such chemical reactions into my creative process, I introduce an element that I can’t fully control, which I leave up to nature.”

大竹さんの作品には岩絵具のほかに、金箔や銀箔を用いたもの が多く見られます。その理由についても語っていただきました。

Otake also feels sympathy towards the ways of thinking and the attitudes that live on from ancient Japan. “I wish to pass on the spirit of animism that existed in Japan from long ago,” she says, “as well as the willingness to learn from and to coexist with nature.”

大竹さんは日本に古くからある考えや姿勢にも共感を抱いてい ます。「もともと日本にあったアニミズム（自然崇拝）や、自 然から学ぶ姿勢、自然と共生する考え方なども作品を通じて伝 えていけたらいいなと思っています」

「金箔や銀箔のような金属を使うということで、油絵やアクリ ル絵画、水彩画にはない、奥行きを生み出したり、表現自体の 幅を広げたりしてくれます。箔は光を反射する素材なので、見 る方向や時間帯によって違って見えるところにとても惹かれて います。銀箔では硫黄で硫化させながら焼けたような色合いを 出すのですが、化学変化を用いることで作品の中に自分がコン トロールしきれない部分、自然に任せる部分を作っています」

The Influence of New York on Otake’s Art From 2015 to 2016, Otake lived in New York, immersed in the dynamic city of cutting-edge contemporary art. This experience left a significant mark on her creative practice and her approach to her artwork.

“By coming into contact with many pieces of contemporary and conceptual art, I realised how important impact is. Also, by living and creating art overseas, I was able to think more deeply about the distinguishing features of Japanese painting, which led me to explore how I can use traditional techniques of Japanese painting and present my work as contemporary art. For example, I began to define and to consolidate the concepts behind my artwork more thoroughly, and I became more aware of creating highly saturated, vivid images that will have a powerful impact on the viewer.”

“When I held a solo exhibition in New York,” she continues, “many visitors gave me feedback face to face, in their own words, so I learned so much from that. I was delighted and pleasantly surprised that they saw the techniques of Japanese painting as something new and were genuinely interested in them.”

The more exhibitions she has had overseas, the more her own feelings towards Japanese painting have changed.

“At universit y, I paid more at tention to honing my technique or deepening my k nowled ge of Japa nese pa int in g, but g radua l ly, I ca me to t hin k of Japa nese painting techniques as just one of the many tools of expression. Now, my aim is to use that tool to express my concepts more effectively, to create unique works of art that would stand out in this information society and embody my own identity.”

ニューヨークでの経験が作品に与えた影響 2015 年から 2016 年に現代アートの最先端の街ニューヨークに滞在した経験が、作品 づくりや作品に対する姿勢に大きく影響しているそうです。 「たくさんの現代アート、コンセプチュアルな作品にたくさん触れることで、コンセプ トやインパクトの大切さを学びました。海外に住んで作品を制作することで、日本画の 特徴についてより深く考え知ることができ、日本画という伝統技法を用いて現代アート としてどのように発表していくのかを考えるきっかけになったと感じています。具体的 には、コンセプトをしっかりと据えて作品の強度を高め、彩度の高いビビットでインパ クトのある画面作りを意識するようになりました」 「ニューヨークの個展ではたくさんのお客様が直接自分の言葉で感想を伝えてくれた ので、とても勉強になりました。私にとっては、日本画の手法を新しいものとして捉 え、興味を持ってもらえたことが嬉しい驚きでした」 また海外での展示経験を重ねるにつれ、自身の日本画への思いも変化してきたといいます。 「大学時代は日本画の技術を高めたり知識を深めたりすることに集中しがちでしたが、 段々と日本画の技法を１つの表現ツールとして考えるようになりました。今はそのツー ルを使って、コンセプトをよりよく伝えたい、この情報化社会の中で私なりのアイデン ティティを考えて唯一無二の作品を作りたいと思っています」

Widening Horizons through Collaborations with Companies While throwing herself into creating her own artworks, Otake is also active in collaborating with many companies and brands. On her future prospects, she says, “I often get invited to collaborate with companies, and I hope these projects will help to bring Japanese painting as well as art in general closer to the daily lives of many people. There’s a collaboration project with a famous brand coming up soon, so I’m really looking forward to that, too. It would make me happy if projects like that open up my artwork to more and more people.”

Otake dazzles us with her art that reaches beyond the framework of traditional Japanese painting, crossing over genres and national borders.

Her magnetism and energy were more than palpable in this interview.

企業とのコラボレーションで広がる世界 精力的に作品作りに取り組む一方で、多くの企業やブランドとのコ ラボレーションなどでも活躍されている大竹さんに今後の展望につ いて伺いました。 「企業の方からコラボレーション依頼のお声がけをいただくのです が、もっと日本画やアート自体が、多くの方の生活とより近くなる といいなと思ってお受けしています。今後も、ある有名ブランドと コラボレーションすることが決まっていて、それもすごく楽しみに しています。そのような活動を通して、私の作品を見ていただける 方がどんどん増えていくと嬉しく思います」 従来の日本画という枠に収まらず、ジャンルや国境を超えて活躍す る大竹さんの魅力が存分に伝わるインタビューとなりました。

Kei Kobayashi is a Japanese chef making French cuisine, born in Nagano prefecture in 1977. Both his parents are chefs, and he decided to pursue French gastronomy when he was fifteen.

After training in Japan, he f lew to France at twenty-one and studied under the eminent Alain Ducasse. In 2011, he opened his own Restaurant KEI. He accomplished the extraordinary feat of becoming the first Asian chef to win three stars in the Michelin Guide France 2020. フランス料理のシェフ、小林圭さんは長野県出身。両親が料 理人という環境で育ち、15 歳でフレンチの道へ進みます。日 本での修業を経て、21 歳で本場・フランスへと渡りました。 フランス料理の巨匠とされるアラン・デュカスさんに師事し、 2011 年にはオーナーとしてパリで『Restaurant KEI』をオ ープン。2020 年のフランス版ミシュランガイドで、アジア人 初の三ツ星を獲得する偉業を達成しました。

Growing up with “Cooking” Born as the second son to a family running a restaurant, Kobayashi grew up surrounded by food, watching the kitchen and the cooks around him. Everything he ate, including sweets, were all homemade, so he used to envy his friends for having packaged snacks and cup noodles.

For him, the cook was a familiar figure—certainly no one to admire. But this turned around completely when he was fifteen. As soon as he watched a television show featuring the chef Alain Chapel, he was spellbound.

He dreamed of becoming a chef wearing black trousers and a spotless, white jacket. To learn from a chef who had trained in France, he started to work at a local hotel.

幼少期から身近だった「料理」 1977 年、長野県にある料理店の次男として生まれた小林さん。幼少期から、厨房や料理人とい う存在が間近にありました。食事もおやつも全てが手作りだったため、子どものころは友達が 食べているスナック菓子やカップラーメンを羨ましいと思っていたそうです。 小林さんにとって料理人はあまりに身近で、親しみはあっても憧れとは程遠いものでした。し かし、それは 15 歳で覆ることになります。テレビに出ていたフランス料理のシェフ、アラン・ シャペルさんの姿に一目惚れしたのです。 黒いズボンに真っ白な上着とエプロンをつけた “ 料理人 ” になるため、小林さんはフランスで修 業をしたシェフがいる地元ホテルの門を叩きました。

THE “SECRET TO SUCCESS” Kobayashi, who runs his own restaurant in Paris, calls himself “one of Japan’s representatives”: “I’m a Japanese citizen, but they let me live in France and make French cuisine.”

現在パリで店を構える小林さんは、自身のことを「日本の代表のひ とり」と表現しています。「日本人としてフランスに居させてもら って、フランス料理をやらせてもらっている。」

He learnt to be modest when he first began his career as a cook. From fifteen to nineteen years old, he was taught more about the etiquette and conduct of a professional adult than about the ABCs of cooking.

こうした謙虚な姿勢は、小林さんが料理人としての道を歩みはじめ た 15 歳から 19 歳のあいだに教わったそうです。この期間は料理 のいろはよりも、社会人としての在り方を指南されることが多かっ たといいます。

Rather than ingratiating yourself with others, respect them. Observe others closely and think about what they want to do, and what they want you to do. These skills that he had picked up were precisely what enabled an “outsider” like Kobayashi to survive in the world of French cuisine and gain recognition. The fact that he was chosen as the souschef in Alain Ducasse’s three-star restaurant attests to this.

After training in Nagano, Kobayashi continued to work hard in Tokyo and France, always communicating with people with the same approach that he had learnt early on. “I can detect what other people are looking for better than anyone else,” he says. Even now, with three Michelin stars to his name, he remains attentive and genuine to the people around him, both cooks and diners.

人に媚びを売るのではなく、リスペクトすること。そして、相手を よく見て「何をしたいのか・どうしてほしいのか」を探ること。こ の教えこそ “ よそ者 ” の日本人がフランス料理の世界で生き抜き、 認められる術でした。小林さんがアラン・デュカスさんの指揮する 三ツ星レストランで副料理長に抜擢されたことは、その証と言える でしょう。 地元での修業を経て、東京・フランスでも研鑽を重ねた小林さん。 多くの人と出会い、教えに沿ってコミュニケーションを取ってきた からこそ「人が何を求めているかを察する力は、誰にも負けません」 と語ります。ミシュランの三つ星を獲得した今も冷静にアンテナを 張り巡らせ、ほかの料理人やお客さんと真摯に向き合っています。

Restaurant as “Theatre”: Discovering a Unique Perspective through the Pandemic Kobayashi, who learnt how to connect with others around him even before he learnt how to be a cook, calls his own restaurant a “theatre”: a unique perspective born of his ability to read the room, to notice the feelings or needs of the people around him.

Restaurant KEI is a space of encounters with people, food, and space. Kobayashi sees it as a place where diners can not only enjoy their meal, but express and experience all kinds of encounters. “That’s our cooking,” he says. He even remodelled the interior design so that guests can have an immersive experience in the “theatre,” stimulating their five senses.

Plans for the redecoration came up in 2019. He joined hands with Tsuyoshi Tane, an architect who has designed Japan National Stadium, among others. The project was already underway when Kobayashi won three stars in 2020, but that didn’t diminish his aspiration to keep striving upwards, and he worked with Tane to draw up the new space.

It was around then that the COVID-19 pandemic became rampant. Paris went under lockdown, and restaurants had to close. Kobayashi, however, saw the silver lining. He took it as an opportunity to continue the remodelling project, rest his body, and think about what lies ahead.

On becoming the first Asian chef to win three stars, he says, “I was only happy for about the first five minutes.” Though he was highly praised for marrying Japanese aesthetics with French flavours, Kobayashi himself feels something is missing.

During the pandemic, he ruminated on “what’s missing” and “what we can communicate.” Through gathering knowledge from books and having discussions with his staff, he came to the conclusion that it’s all about “encounters.” As he continued to prepare for reopening, he focused all his attention on offering guests a pleasurable time and memorable encounters through food, space, and people.

料理人である前に社会人として周囲との関わり方を学んだ小林さんは、ご自身のレストランを “ 劇 場 ” と表現します。それは、周りの人の気持ちやニーズを敏感に読み取る力をつけた小林さんな らではの見方でした。 『Restaurant KEI』に訪れたからこそ出会える人や食材、空間。ただ料理を味わうだけでなく、 さまざまな出会いを表現し体感してもらうことこそが “ 自分たちの料理 ” だと小林さんは語りま す。ゲストに五感すべてを働かせて “ 劇場 ” に集中してもらうため、店内の改装にも着手しました。

そんななか、コロナウイルスが猛威を振るいます。パリでは都市封鎖という措置が取られ、三ツ星 を取ったばかりのレストランも営業は不可能。しかし、小林さんは厨房に立てない時間を前向きに とらえていました。改装を進める傍ら、体を休め、今後のことについて考える機会にしたのです。 小林さんはアジア人ではじめて三ツ星を獲得したときのことを「嬉しかったのは 5 分くらいでし た」と振り返ります。『日本の美学とフランスの味を融合させた』と絶賛されたものの、小林さ ん自身はまだ満足していない様子。 そこで、コロナ禍のあいだに「何が足りないのか」「どんな発信ができるのか」を考えたそう です。本を読んで知識を蓄えたり、店のスタッフと話をしてたどり着いた結論が “ 出会い ”。料 理や空間、人を通してお客さんのいい時間・いい出会いの演出に焦点を定め、再オープンへの 準備を進めました。

レストランは「劇場」コロナ禍で 見つけた独自の視点

内装のリニューアル計画が持ち上がったのは、2019 年。国立競技場をはじめとする建築物を手 掛ける、田根剛さんとタッグを組みました。計画の実行途中である 2020 年に三ツ星を獲得した ものの、小林さんはさらに高みを目指して田根さんと共に空間演出を考え続けたそうです。

More Encounters for a One-of-a-kind “Theatre” Kobayashi has his sights set on creating and presenting the whole experience of being in his restaurant, which goes beyond the flavours of the dishes.

“It’s always about making it new when I’m cooking,” he says. “If there’s no change, there’s no ‘progress.’”

Just as technology keeps moving forward every day, the culinary arts are constantly evolving. Amid those movements, Kobayashi is also exploring his own new ways of expression. Far from being content with his Michelin achievement, he is always looking ahead: “Now I’m finally standing on the starting line.”

Remarkably self-disciplined, Kobayashi continues to expand his range of expression.

His “theatre” has only just begun. With his unique performance, he will continue to dazzle and allure the world.

LIONEL BECCAT Restaurant Esquisse, opened in Tokyo’s luxury Ginza district in 2012, presents a unique culinary approach combining traditional Japanese elements with French techniques brought in by its Corsican chef Lionel Beccat.

The restaurant serves a constantly changing course menu introducing the guests to the world of Beccat’s culinary creations.

Two-stars Michelin chef Lionel Beccat moved to Japan to work as a chef for Cuisine[s] Michel Troisgros. We spoke to him about his professional success, cooking inspiration and the importance of an artistic outlook on his dishes.

“I want the guests to feel my energy.

I don’t want to tell them what I did, how or why I did it.

Birth of Esquisse

エスキスの誕生秘話

Lionel Beccat was born in Corsica, France, in 1976. At the age of 20, he started work as a chef, inspired by the cooking of his grandmother. He moved on to become second chef at the Michelin-star restaurant La Maison Troisgros merely six years later.

ベカは 1976 年、 フランスのコルシカ島に産まれました。幼いころより 祖母の料理に影響を受け、20 歳の時に料理の世界に入り、 その 6 年 後には、 ミシュランレストラン 「メゾン・トロワグロ」 のセカンドシェフの 座に就いていました。

In 2006, chef Michel Troisgros decided to open a branch in Tokyo, asking Beccat to come and run the new restaurant. “I did not have a choice. I would have never thought to live in Japan when I was 26 or 27. But I had the opportunity, and I went,” – Beccat recalls.

2006 年、 「メゾン・トロワグロ」 のシェフであるミッシェル・トロワグロは 東京に支店を出すことを決め、 ベカに東京での新しいレストランを運営 する話を持ちかけます。 「26, 7 歳で、 まさか日本に住むことになるなんて 想像もしていませんでした。 でもチャンスが訪れた。 だから日本へ来たん です。 」 ベカは当時をこう振り返ります。

Six years later, he opened his own restaurant Esquisse, a beautiful haute cuisine restaurant in the heart of Tokyo’s glamorous Ginza districts. At the restaurant, Beccat serves his guests seasonal course menus designed entirely by himself, as he ultimately shares his artistic voice with the guest through his dishes.

その 6 年後、東京の中心地・銀座に美しいフレンチレストラン 「エスキ ス」 をオープン。 このレストランでは、 ベカが自ら考案した季節のコース 料理を提供し、料理を通じてゲストにベカ自身のアートな想いを伝え ています。

For, Beccat, food is very personal. He explains: “I have no right to expect anything [from my guests]. Sometimes, I see chefs struggling to make people enjoy the dish. And I want to tell them to stop.”

ベカにとって食とは、個々人のもの。 「私はゲストに何かを期待する権 利はありません。 ゲストに料理を楽しんでもらおうと必死なシェフを見 ると、 やめてくれ！と言いたくなってしまいますね。」

Beccat recalls that his arrival to Japan changed the way he looked at the world. “I had to reopen my eyes and learn to be touched by the beauty I would normally pass by,” – he says. “This is not something you learn. This is something infused in you little by little.”

The chef explains that learning to see beauty is the first step to becoming able to create true art. “You create your art, and to create your art, you have to first create your way of seeing things. Japanese people and this country teach me to see further than I could see before,” – Beccat concludes.

“When I create the menu, I create all the dishes together, not one by one, from the appetizer through the desserts. I have all my ideas together, like a symphony.”

Beccat explains that, to create a successful menu, a chef needs to learn to combine inspiration with brilliant technique. He compares the process to the art of photography which he also practices in his spare time.

“In photography, technique is very important, but technique anyone can do, anyone can learn. But without technique, you cannot make good photography or anything else. If I want to make good food, I need good techniques and a lot of practice,” – he states.

He concludes, saying there are various elements that shape a chef ’s signature style: “I trained technically and I trained emotionally. Then everything comes together and starts to make sense.”

ベカは日本に来て、世界を見る目が変わったと話します。「目をも う一度開けて、これまでは横を素通りしていた美しさが心に触れる ということを学ばざるを得ませんでした。学ぼうとして身に付くも のではなく、少しずつ自分の中に吹き込まれていく 感覚です」 ベカは、美を見つめることを知ることこそが、真のアートを創りあ げるための第一歩だと言います。「アートを創るには、まず自分な りのものの見方を創らなければなりません。日本やここの人々は、 私がこれまで見ていたよりももっと多くの景色を見ることを教えて くれました。」 「メニューを作るときは、前菜からデザートまで、一品一品ではな く、すべての料理を一緒に作ります。シンフォニーを奏でるように、 すべてのアイデアをひとつに。」 良いメニューを創るためには、インスピレーションと優れた技術の 組み合わせを学ぶことが大切だと語るベカ。彼はそのプロセスを、 時間がある時によく撮っている写真というアートに例えます。 「写真において技術はとても大事です。しかし、技術は誰でも学ぶ ことができ、使うことができる。でも技術がなければ良い写真は撮 れない。何だってそうです。もし私が美味しい料理を作りたいなら、 必要なのは高い技術と、そして練習をたくさんすることです。」 ひとりひとりのシェフ特有のスタイルを形づくるにはさまざまな要 素があると語るベカ。「私の場合、技術の訓練もしたし、感情面で の訓練もしました。それらすべてが一緒になって、意味を成すよう になるのです。」と話してくれました。

A chef, a photographer, a writer Chef Lionel Beccat has long shown himself a multifaceted creator. He finds photography to be another source of artistic inspiration outside the Esquisse’s kitchen, as well as practices writing.

In late 2021, Beccat released his new book “ESquiSSE no Ryori”, combining his love for cooking, photography, and writing. The culinary book tells the story of Beccat’s inspiration through photographs taken by himself, taking the reader on the journey of his creative growth.

Beccat explains his love for photography, saying it helps him change the way he sees the world.

“It makes me feel safe and it makes me feel more in harmony with the world I live in,” – he adds.

Over the years, Lionel Beccat worked together with numerous craftsmen, like perfumer Philippe Di Méo and artist Akito Akagi, to provide his guests with multidimensional sensory experiences. He comments on these collaborations, saying that their value lies in the fact that “different craftsmen or artists do not need to inspire each other, but find a common space where they can invent a new language for things”.

“Of course, I have my favourite painter, my favourite designer, my favourite musician. But I refuse to be an expert because if I see art, I still want to feel new. I want to be empty.”

However, when defining his creative path, Beccat says he will “never stop being a chef ”. “I’m a chef who does photography. This is the only way I define myself,” – he adds.

“ESquiSSE no Ryori” 『エスキスの料理』

ベカは長年にわたり、香水デザイナーのフィリップ・ディメオや、輪島塗の塗 師である赤木明登など、数多くの職人たちと協力し、ゲストにさまざまな感覚 の経験をしてもらうことに取り組んできました。「職人やアーティストは、互 いに感化し合う必要はなくて、共通の空間を見つけることで、ものごとに対し て新しい言語をつくりだす」という点に、ベカはコラボレーションすることの 価値を見出します。 「もちろん私にも、好きな画家やデザイナー、好きなミュージシャンはいます。 でも私は、専門家にはなりません。アートを見ても、新しいと感じ続けたいか ら。空っぽでありたいから。」 しかし、自分自身を語るとき、ベカは「シェフであることを決してやめない」 そう。「私は写真を撮るシェフです。これが、たったひとつの私の定義です」 ベカはそう締めくくりました。
