Being the bigge st name in the world of winemaking, Dom Pérignon prides itself on producing some of the most anticipated champagne vintages of today. The history of the brand goes back to the 17th century and has long been surrounded by a variety of legends and myths.

Vincent Chaperon became Dom Pérignon’s chef de cave in 2019 after 13 years of work with the house. Himself coming from the top French winemaking region of Bordeaux, Chaperon practically dedicated his whole life to the wine industry. Twenty years ago, a young graduate of agronomy, he began his career in Moët & Chandon and stayed in the region of Champagne ever since.

BALANCING TRADITION AND NOVELTY Tradition lies at the foundation of the Dom Pérignon brand. However, in the rapidly changing demand for novelty in today’s market, Vincent Chaperon emphasises the importance of creativity and communication with customers.

“There is always the attention to the balance between consistency on the one hand and uniqueness of each year’s vintage on the other.”

“It is in our DNA, we live in the permanency of the tradition with the team, as well as with the place, the vineyard, and the wine library we have,” – he says, adding: “But we are also always in contact with the consumers. The consumers are looking for something new, they are changing, and the world is changing.”

Still, Vincent notes that much of the inspiration for the team comes from the history of 300 years, the legacy of Dom Pierre Pérignon, the Benedictine Monk, himself. To him, the history of Dom Pérignon goes far beyond winemaking, being an important part of the broader French history.

“We do not forget the main source of our inspiration and we are not just looking into the future. The uniqueness of our luxury champagne in France comes from the fact that we are inspired by our history,” – he concludes.

Speaking of some of the most memorable creative collaborations at Dom Pérignon, he recalls a project with contemporary artist Jeff Koons.

“When I entered his world, I realized there were so many similarities with our

process,” – he says. “His ideas for designs are always in his head. Then, there are

people who make them with the use of 3D digital software, and these people are also artists.”

“This is a very structured and highly organised process – from the idea of one person

to its execution by a group of people,” – Vincent concludes.

Fragments of history and strength of tradition at Domaine Gros Frère et Soeur in Burgundy Domaine Gros Frère et Soeur, a renowned wine estate in Burgundy’s Vosne-Romanée, goes back in its history to the early 19th century (1830).

The estate specialises in making classical Burgundy wines, honouring the long tradition of the Gros family winemaking.

Today, brother and sister Vincent and Elodie Gros who represent the seventh generation of the Gros family work at Domaine Gros Frère et Soeur.

Both born and raised at the estate, Vincent and Elodie spent most of their

“A PIECE OF HISTORY” To Vincent, the estate means more than just business. It is the place where he and his sister were born and grew up, learning about the complex craft of making outstanding Burgundy wines.

“It was our daily life. The rhythm of the seasons, the harvest, the smells that accompany winemaking in the winery in the evening when we came home from school,” – Vincent recalls.

Later on, he continued his journey of learning about winemaking, as he studied at the School of Viticulture and Oenology in Beaune where he had a chance to meet like-minded young professionals with a passion for wine.

Being part of the long family history dating back generations has had a major impact on Vincent as a winemaker. He speaks about his first revelation of the depth of the family tradition which took place when he was still a teenager.

“It happened at a family meal for the birthday celebration of my grandmother Jeanine Gros. We opened a Château Caillou made in 1929, the year of her birth,” – Vincent says.

“This bottle remained for years in the personal cellar of my great-grandfather Louis Gros. I understood that day that this wine had preserved its quality without being rushed. It immersed us in its time and made us experience a piece of its history in the present.”

POWER OF TRADITION AT THE ESTATE Tradition is greatly valued at Domaine Gros Frère et Soeur, underlining the very process of creation of the wines at the estate. The winemakers at the house strive to “master the chain in its entirety”. “One hundred per cent of the wines produced here come from vines cultivated by the estate team year-round,” – Vincent emphasises.

He explains that, according to the family tradition and strictly defined practices of winemaking, all wines, from the basic pinot noirs to the estate’s top-of-the-range Richebourg Grand Cru are “vinified, aged and bottled with strictly identical care”.

However, Vincent acknowledges that, together with Elodie, they strive to modernise the production tools at the estate to ensure the best possible results.

“You have to live with the times and know how to find the tools you need today.

Our ancestors used picks and shovels to shape the cellars, surely, if they had jackhammers, they would have used them,” – he suggests.

One of them is the main symbols of Domaine Gros Frère et Soeur is its tasting cellar which, in Vincent’s view, clearly reflects the spirit of history at the estate.

“This is a 16th-century cellar,” – he says. “It was the private cellar of my great-grandfather Louis Gros.

The cellar was transformed from 2006 to 2009. It has seen many modifications.”

Today, the cellar represents a beautiful area with innovative lighting systems and a piano, where guests get a chance to enjoy the wines produced by Domaine Gros Frère et Soeur in a welcoming atmosphere.

The other symbol of Domaine Gros Frère et Soeur is the golden wedding cup that can be seen on the emblem of the house.

“It is linked to the Christian tradition and symbolises the commitment to the faith of the spouses. It is often offered by the groom to the future wife. At the end of the wedding mass, it is filled with Burgundy wine, the bride and groom will take their turn to drink from this cup,” – Vincent explains.

Founded in 1731, the Bouchard Père & Fils estate remains one of the oldest and largest producers of top-quality wines in the French region of Burgundy. Today, Bouchard Père & Fils is known to have the biggest Premier Cru in Burgundy’s wine capital of Beaune.

Frédéric Weber, the maître de chai at Bouchard Père & Fils, has been a part of the estate for almost twenty years since 2003. For the first ten years at the company, he worked with the chief winemakers, learning all about the varieties of grape grown in different vineyards owned by the producer.

CREATING TIMELESS VINTAGES At Bouchard Père & Fils, winemakers work hard to ensure the wine’s longest ageing potential through sophisticated vinification practices, the use of high-quality barrels, and perfect cellar conditions.

Frédéric says that, after thirty or forty years, winemakers need to replace the cork to ensure lasting potential. “We observe the bottle and the cork. After observation, we take all the bottles to the winery and open them for tasting. Sometimes, there is corkage and oxidation as a result, and we have to eliminate the wine,” – he adds.

After the bottle is opened, little quantities of carbon dioxide (CO2) are pumped into it to limit the harmful effect of oxidation, and then the new cork is introduced.

For Frédéric, the process of recorking is also important as it allows the winemakers to taste vintages after a long period of time and monitor the changes that come with ageing. All the changes are registered to understand the evolution of the wine. Some wines are left to age further, while others can demonstrate signs of approaching deterioration, and will be served at an upcoming event to be enjoyed at its prime.

Changing climate of winemaking As for many wine producers across the world, climate change poses serious challenges for winemaking processes at Bouchard Père & Fils. In 2015, the domain was awarded High Environmental Value status in France signifying the winery’s commitment to environmentally friendly practices.

Frédéric says that “as vine-growers, we work with nature”. “It is important for us to protect nature. For more than ten years we have been working to decrease the use of chemical products,” – he continues.

“We only use organic methods, and not only in the vineyards, but also in the winery to decrease the quantities of CO2 and to respect the nature and terroir of the wine.”

In addition to the sustainable practices in the vineyards, Bouchard

Père & Fils works to rebuild the root systems in the vineyard to maintain the generations of vines and add to the diversity and complexity of the future wines.

Commenting on the dangers of climate change for the current winemaking practices, he says that there is no way to avoid it, which is why winemakers have no choice but to adapt.

In particular, wineries in Burgundy face the dangers of frost in the spring, as well as drought in the warmer seasons. However, at Bouchard Père & Fils, new techniques are in place to protect the vines from the impact of climate change, and the estate plans to make further adjustments in the future.

Restaurant Sens at the Hotel Vitznauerhof, located on the shores of the beautiful Swiss Lake Lucerne surrounded by the Alps, offers its guests a dining experience like no other. The high cuisine at Sens is focused on fermentation, giving the imaginative dishes bold and memorable flavours.

At the heart of it all is the young Michelin-star chef Jeroen Achtien, passionately leading the team at Sens to carefully craft the unique culinary combinations to surprise the clients at the restaurant.

Jeroen Achtien’s career as a chef was never an easy path. He started working at the age of 14 and never gave up on his dream.

“When I was 14, I had no idea what I wanted to do. But my brother is a chef as well and has his own restaurant in Holland. When he came home, he was always so enthusiastic about his work, it was amazing” – Jeroen recalls.

He began his journey by helping his brother at the restaurant and, just after a year of work, came to a realization that becoming a chef was his life’s dream.

“As a chef, you have to be baker, a fisherman, a butcher, a gardener.

You have to acknowledge so many different things, you always have to learn, and for me, it was very exciting.”

Over the course of his career, Jeroen worked for many different places, from catering companies to Michelin-star restaurants.

Shortly after taking part in the culinary competition held by Institut Paul Bocuse in Lyon, France, he received his first experience with a Michelin-star restaurant. Soon, he was offered a position at a different restaurant in the Netherlands, De Librije, which by the time also held three Michelin stars.

Everything changed when, one day, he was allowed to take part in plating dishes with twenty other chefs at De Librije: “This was the moment I finally saw what I was cutting vegetable cubes for every day.

Something changed, and I realized that this was exactly what I wanted.”

Since that day, Jeroen spent over eight years at De Librije, gradually working his way up from a junior chef to a station chef, and then to the sous-chef. In his last year at the restaurant, he finally became head chef.

One could say his career at the Hotel Vitznauerhof was a result of a coincidence. While travelling around Switzerland, he decided to visit the place and suddenly fell in love. “It is a magical place. When you walk in, it’s like a fairy tale,” – Jeroen says. Soon, he met the chef at the restaurant and the director of the hotel, and so his career at Sens began.

“It is really exciting when I can manage to bring the harmony in all those difficult flavours, all together in one plate. It feels like a symphony.”

Finding Harmony in Complexity of Flavours For Jeroen, high cuisine is all about the balance between a variety of flavours. At Restaurant Sens, his team is working with fermented foods, which creates an additional challenge to marrying strong and bold tastes together. “It’s like you are travelling the world in your mouth,” – he says, adding: “You have so many intense flavours but, at the end of the day, it all fits together.”

Jeroen explains that developing the perfect flavour combinations take a lot of patience.

The process of refining each dish is intricate and thoughtful.

“You have to ask yourself questions: what could make the dish even better? Should you add something? What should it feel like – is it like a cracker, or maybe a vegetable?

Is it a raw vegetable or a pickled one? What flavours are you missing? Do you need something fresh, something crispy? There are so many elements you can think of and dig deeper,” – he explains.

However, the final result is always worth it, Jeroen adds: “When you come to the point when you say, ‘all right, we have it’, it's an amazing feeling because you put so much effort in it.”

Because of this, Jeroen says, he makes sure to never rush when developing a new dish.

“What you see a lot from other chefs is that they do not have the patience to wait for perfection, they are so focused on change. But I think our guests appreciate that we do not just change something just for the sake of changing, we do it to achieve quality.”

For Jeroen, the feedback from the guests is also of high importance. He explains that it is key to pay attention to the ways in which the guests experience the food and listen to their thoughts.

Craftsmanship above creativity

Jeroen stresses that talent is not enough to become a great chef. In his view, craftsmanship is what matters most. He recalls that, when working with De Librije, he was responsible for the sauce and meat sections for over three years. In this period, every day at lunch and dinner he spent at least 40 minutes tasting every single one of over 30 sauces to check whether they needed reworking.

“Craftsmanship is all about the hours. We start from the bottom to move the top, spending hours doing the same thing over and over again,” – he summarises.

“At the end of the day, you have to spend hours repeating again and again, and then you achieve craftmanship.”

Jeroen concludes that he always encourages his team to “never start their day without the tasting spoons in front of them”. “You cannot start the day without a bottle of water, you always need to have a clean palette, and you can do that with just a small piece of bread,” – he adds.

SHIN Arimura says he grew up in an average, ordinary family of five. Ever since he was little, he loved to eat; sometimes, he even had stomachaches from eating too much of his favourite foods.

“When I was in senior high school, I often packed my own bentō lunch,” he recalls. “I already liked cooking then.”

What first drew him to the world of professional cooking was his experience at his aunt’s izakaya pub, where he had been helping out since senior high.

“I still remember how delighted I was to hear that comment from the patrons: ‘Thanks, that was delicious.’ That’s when I decided I want to become a chef.”

However, his parents were against this idea, and he entered the Self-Defence Forces of Japan after graduating from senior high. Nevertheless, his passion for cooking was revived when he was assigned to the catering department for three months. After two years of work, he found a new job at a wedding hall. Finally, he was on his way to becoming a chef.

ASPIRING TO BECOME A PROFESSIONAL CHEF 一途に思い続けた料理人への道 ごく普通の 5 人家族の中で育ったという有村さん。小さい頃から食べることが好き で、好物をお腹いっぱいまで食べてお腹を壊すことがあったほど。 「高校のときは、よく自分で弁当を作っていました。料理は好きでしたね。」 プロの料理人の世界に関心を持ったのは、高校生から手伝いをしていた叔母の居酒 屋での経験がきっかけだったと言います。 「お客さんにかけてもらった『ありがとう、美味しかったよ』の言葉がすごく嬉し くて。このとき、料理人を目指したいと思いました。」 両親から料理人になることを反対され、高校卒業後は自衛隊に就職。３か月間、料 理を作る部門に配属されたことで、一度は諦めた料理への思いが高まり、2 年間在 職した後に結婚式場に転職。料理の道へと進みました。

A Unique Service Focused on Communication, in a Style that Values Japanese Culture

In the landlocked country of Switzerland, it is no easy feat to maintain a regular stock of fresh, high-quality fish. About a decade ago, when Arimura first arrived in Switzerland, it was also a challenge to procure other necessary ingredients of Japanese cuisine.

“Back then, I couldn’t even find tofu or konnyaku (a chewy jelly made from the devil’s tongue plant), so I had to make it all from scratch. What’s more, the water in Switzerland is hard, so you can’t make dashi (Japanese soup stock) from it. I actually used to go all the way to the mountains just to bring back spring water.”

Sushi Shin’s menu is called Omakase, and each guest is welcomed with a course set designed by the chef.

Using Japanese dishes and bowls, each course appears in the kaiseki style of Japanese fine dining. Arimura is incredibly attentive, so that every visitor, even those who aren’t familiar with Japanese food culture, can relax and enjoy their meals.

“For example,” he says, “if you don’t explain to them beforehand, they might think the decorative leaves laid underneath the food is for eating, or they might drink the dipping soup that comes with tempura. I make sure to carefully instruct the service staff about the timing of serving and explaining each dish.”

What Arimura emphasises in the restaurant’s service is communication. He pays attention to the reactions of each guest to see whether they aren’t puzzled by the manner of arrangements peculiar to Japanese cuisine, and, if they are, he reaches out to them. His goal is to create a space where anyone can dine at ease.

Kazu Saito, who pursues beauty and freedom through Nihonga (Japanese painting), was born in 1960 in

He was drawn into that world and majored in Nihonga at “Kyoto Prefectural Private Art University”. After graduating, he won the Shinwa Art Exhibition Gold Award and the Kyoto Arts and Crafts Exhibition Grand Prize, and has been attracting attention far and wide. Captivated by Japanese painting Saito starts by telling us how he enjoyed drawing shapes, and spent time in the garden or schoolyard drawing with sticks. It was during his third year of high school (year 10) when Nihonga first stole Saito's heart. A portrait that Saito drew of a teacher caught the eye of another teacher from an art prep school which he ended up joining. “It was the first time I met a ‘Nihonga artist’, and instantly I became captivated by Nihonga and Japanese paints.” says Saito, vividly recalling how he could feel his very soul stir.

Despite having never thought about pursuing art, and not knowing the first thing about Nihonga, for Saito, the world of art called to him. “Seeing Nihonga and Japanese paints come to life showed me a world that I had never seen in art textbooks. I was fascinated by the freedom of the unbound expression and its profound depth.” Saito says that he became inseparable from Nihonga.

京都に暮らす斉藤さんの日常は、職人文化が根付いてい る傍ら、手のついていない自然がすぐ横にある”不思議な 世界”を歩いているような毎日だと言います。「その両方 の世界を行き来出来る環境が、絵を描くという環境に適 していると思いますね。道を歩いていても絵を描いてい る人がいて、その人の姿さえも日常の中に溶け込んでい て、すっと受け入れられるんです。」 斉藤さんのあたたかで優しさ溢れる作品は、生活の中で 身近にあるものや、自然の中で感じる想いをべースに日々 生まれているようです。 自然から感じ取ったインスピレーションは、どれも斉藤さ んをワクワクさせてくれるものばかりです。「ときには、 興奮して平然といられないこともあるのです。その感動や 感情を言葉にするのは難しい…。」しかしそんな想いを、 想うがままに表現できるのが斉藤さんにとっての日本画で あり、斉藤さんの心を躍らせるのは言うまでもありません。 自然から受け取った興奮をそのままスケッチし、写し取 ることに加えて、もうひとつ想いがあるそうです。「感 動の種を一つひとつ丁寧に確かめて、自然と繰り返し対 話した“気持ち”を落とし込むことを大事にしています。」 斉藤さんは、感じたままの美しさや空間を体現できる自 由さが、日本画の魅力だと語ります。

“Now, I feel that the things that come to me naturally are comforting to others.” He added.

言葉に表せない美を日本画に込めて 自身が求めるものは、作品を見た方が受け取った感情と同じだと 斉藤さんは感じています。斉藤さんが描く日本画は、じわじわと 感じる生命の力や儚さ、香り…。普通の生活の中にはあるのに、 どこか非日常が感じられるような、言葉に表せない美が、人々の 心を優しく、包み込みます。 斉藤さんの作品を通して生まれる“平和”や“癒し”そして“安心感”な どの想いは、斉藤さんが向き合い続けている心情のひとつ。「作 品を見た方と通じ合えている」と斉藤さんご自身も、そう思える のだそうです。 「今は自分から自然と沸き出てくるものを、皆さんに癒しとして感じ てもらえるような気がする。」そんな言葉も、聞くことができました。

“I made and donated art collections to elementary, junior high, and high schools in Kyoto, where people lived in lockdown due to the Coronavirus. Like the dandelion fluff that floats into the distance, I started to feel the desire to spread the word of Nihonga to everyone.”

Through the Tanpopo Project, Saito's work not only provides healing and relaxation to the hearts of many more people, but it is also a valuable opportunity for young people to encounter Nihonga.

In addition, in Yamaguchi Prefecture, Saito's work can also be found on a sake label from a high school sake brewing, adding a gentle flare to the sake label. “I think it would be great to have Nihonga in everyday life. It's nice to be able to hold art in your hands.” Saito wants Nihonga to become more familiar, beyond conventional framing... As a big step towards this vision, he told us that he has something in the works. What could it be?

I’m making a promotional image for the game called ‘Overbook Trade’ by a Swedish company “Longhand Electric”. It will be launched in spring 2023. The unique combination of a game and Nihonga is quite a surprise.

Regarding this, Saito said, “I am very happy to see Nihonga included in cutting-edge European technology, and I am happy that I can take a leap forward that will lead to the future.”

“I love the word ‘Nihonga’. I always make a conscious effort to use traditional words such as ‘Washi’ (Japanese paper), ‘Fude’ (brush), and ‘Iwa-enogu’ (mineral paint) when I talk to people from overseas during my solo exhibitions.” Saito wants people to learn about Japanese traditional crafts through himself and his works, and to preserve this wonderful tradition. Each of Saito's efforts will spread gently yet powerfully, and take root, just like the dandelion.

「コロナで自粛生活をしている京都市内の小中高へ作品集を制作し、寄贈させてもらったりしていました。タンポ ポの綿毛が飛んでいくように、日本画もみんなにどこまでも伝えていきたいと思って始めました。」 タンポポプロジェクトを通して斉藤さんの作品はより多くの人々の心に癒しやくつろぎを与えたことはもちろんの こと、若い人たちが”日本画”に触れる貴重な機会となっています。 他にも山口県の高校にある酒造クラブが醸造した日本酒のラベルには、斎藤さんの作品が優しく華を添えます。 「日常のなかに、日本画があるってとってもいいなって思っているんです。手に取る物のなかにアートがあるって 素敵ですよね。」日本画が“額”という枠を超えてより身近に親しまれて欲しいという斉藤さんの想い…その次の一 歩として、またひとつ制作しているものがあると教えてくれました。それは何なのでしょうか。 「2023 年の春、発売予定のスウェーデンの Longhand Electric が手掛ける“Overlook Trail”というゲームのプロ モーション用の絵を制作しています。」ゲーム×日本画という新しい組み合わせには驚きです。これについて斉藤 さんは「ヨーロッパの最先端技術のなかに、日本画が入っていくことがとても嬉しくて、未来につながっていく一 躍を担えることを幸せに感じています。」と語ってくれました。 「私は“日本画”という言葉が大好きなんです。個展で海外の方とお話させていただく際も”和紙”や”筆”、”岩絵の具” というような伝統的な言葉をあえて使うように意識しています。」斉藤さんはご自身や作品を通して日本の誇る伝 統工芸についても知ってもらい、この素晴らしい伝統を残していきたいと願っているのです。このような斉藤さん の活動の一つひとつが、タンポポの綿毛のように、優しく、力強く広がり根を張ることでしょう。

Saito says that he is still in the process of searching for ways to express what he holds in his pocket - those “I want to draw that” thoughts - so that they can be shared with the world. “If I can uncover that, I can go even further.” Even with just the movement of the wind, there is a wide variety of forms of expression. Through his relationships with nature and people, Saito's journey of Japanese painting continues forwards.

IZUMI KATO Born in Shimane Prefecture in 1969 and graduated from Musashino Art University, Faculty of Art and Design, Oil Painting Department; This is Izumi Kato, a contemporary artist who started his career as a painter in earnest around 1998 and has continued to win international acclaim since he participated in the Venice Biennale International Art Exhibition in 2007. All the while keeping mysterious characters as the main motif, Kato not only creates drawings, but also works in wood, stone, soft vinyl, and fabric among a variety of other media. Here, we will delve into the origins of the one-of-a-kind world that Kato has created, where you get an organic feel for the roots of existence itself.

"I could already draw" When an artist truly searches for a means of expression Born in the town of Shimane surrounded by the sea and mountains, Kato says he loved playing outside when he was a child. "If it was sunny, I would always be that kid going outside to play among nature. I've been good at drawing since I was little, but I was never particularly inclined to draw."

After spending so much time being an active little boy, in high school he devoted himself to football. Later on, without having the conscious aim of becoming an artist, he entered Musashino Art University, and while he was there, he put all his energy into music. "Whilst I was at art school, I was set on becoming a musician. I could already draw just by putting pencil to paper, so I never felt the need to try and improve."

Even when he was showing glimpses of talent as a world-class artist, he still felt no passion towards drawing or painting. However, this all changed at the age of 30. He then realised a strong interest in art, and began to search for his own form of expression. That was when Kato's mysterious figure was born.

"At first, my style was completely different from what it is now. There were points where I used animals as a motif instead. But, anyone can draw a cute animal, right? It's more difficult to draw humans. Works with human motifs are also judged much more harshly. But for me, it was precisely the challenge that made it interesting."

This is how Kato established his own distinct character, and is beginning to broaden the scope of his works.

Overcoming Adversity: The Key to Artistic Expression I wondered out loud if he chose the theme of nature and the roots of life for his work because he spent his childhood among the mountains and the sea. But that was not the case. " My wor k of ten s eems ex pres s i ve of primitive powers and nature, but I don't consciously decide to use nature as my theme. When a piece of art is forming, it’s like I’m bringing to life something that has come to me intuitively.”

But Kato tells us he also has moments of creative block.

"When I get over a slump, I feel like I've

made my way out of a dark tunnel. Rather than 'finding an answer', it feels more like a door to new possibilities has opened."

According to Kato, you can see in an artist's work whether they have overcome such adversity or not.

"In fact, there is an overwhelming number of artists who never get over the slump."

When Kato falls into a slump he would push away the branches holding him back and try out a new form of expression, breaking through the wall that was blocking him. However, he mentions that he doesn't actively choose to push the barriers of

expression, or purposefully try to be daring.

"At that moment I feel like I'm working on something that will fuel my motivation. The most exciting thing is when you don't know why you find it interesting. So, whenever I start something new, my ironclad rule is to go forth still unknowing. The moment I figure out why I find it interesting, that interest withers away. That's when I stop creating with the same theme."

It is difficult to systematically deepen your own world view. It is by following their intuition and curiosity that a true artist begins to take shape.

Inspired by the Individuality of Materials from Different Places Kato currently works in two locations, Tokyo and Hong Kong. He tells us that he also gets a lot of his ideas from his surroundings while he works.

"I had a solo exhibition in Hong Kong. Someone bought one of my pieces, and when I went to deliver it, the place had this beautiful ocean view. So now I rent a corner of that building to use as my studio. There are so many views and landscapes abroad that I have never seen in Japan. As an artist, it's incredibly inspiring."

With all his domestic and overseas exhibits, I ask Kato which venue had left the biggest impression upon him so far. He tells me that it was the Red Brick Museum in Beijing; “It had such a vast space that we were able to exhibit a dynamic installation. In China, when they install new works in a venue, a lot of people are involved to change the space in one go. I felt a strength that is unique to China."

Kato has received high praise both in Japan and abroad, but he modestly tells me, "I wouldn't yet say I was an artist of worldwide attention." Precisely because he has spent such a long time abroad, Kato says "I don't feel that the world is a sweet place."

On the other hand, being overseas allows him to feel even more potential as an artist. He hopes to continue to make more and more progress in the future.

ART'S ROLE IN SOCIETY Finally, Kato talks about his thoughts on the role of art in society.

"Art is not good at explaining things. If you just want to convey something, illustrations and road signs that can convey information regardless of race or age are more suitable. However, the point of art is to be the exact opposite. I want the act of confronting my work to be the precise reason people begin to feel something, and to think something."

Every interpretation is unique. Hearing about the stresses of creation, and the broad-minded approach to each interpretation, I could truly feel the depth of this world-renowned artist. But at the same time, the studio where we spoke was full of nods to Kato's hobbies like plastic figurines and fishing lures. It was impressive that such a space could also evoke such a childhood innocence. My time there pulled me into the world of Izumi Kato, an artist who hasn’t forgotten his youth.

Yuki Nara was born in 1989 in Kanazawa city, Ishikawa prefecture. He is the eldest son of Ohi Chozaemon XI, the direct descendant of a long line of renowned ceramicists making Ohi-yaki pottery, whose history reaches back to the Edo period (1603– 1868). Having specialized in architecture as an undergraduate and postgraduate student at Tokyo University of the Arts, he is both a ceramic artist and an architect. We spoke to Nara to find out how he creates the unique beauty of form in his artworks and how he cultivated his singular perspective.

“In a way, I was brought up with a laissez-faire approach,” Nara says, looking back at his childhood. “I was lucky. If I’d been told that ‘this is how arts and crafts should be’ when I was little, I wouldn’t have known any other way.”

Until his final year of senior high school, his life revolved around baseball. His family never pressed him to be a ceramicist. At one point, he aspired to become an architect.

The support from his father, who is also active as a contemporary artist, was a major factor in Nara’s decision to set his sights on architecture. “Just as I was starting to get interested in the field, he put me in touch with an acquaintance of his who works as an architect. It was encouraging.”

Even so, the environment Nara grew up in was undoubtedly full of the presence and the charms of pottery. When he was in his first year of postgraduate school, he visited back home and suddenly felt an awakening: “I might give pottery a try.”

He took a leave of absence for two years and went to study ceramics at the Tajimi City Pottery Design and Technical Centre.

In 2017, Nara completed his postgraduate studies with the highest honours.

Currently, he runs his own architecture office and is active as a ceramic artist. His approach to his work is influenced by what his grandfather, Ohi Chozaemon X, told him in the past.

“While I was at university, my grandfather would always tell me, ‘Look for something only you can do.’ He was also a student at Tokyo University of the Arts, so I felt close to him.”

What Nara gained from these experiences feed into his practice now, which combines the design methods of architecture and the traditional techniques of pottery.

The Path to Architecture and Ceramics

「ある意味、放任されて育ちました。とても幸運だったと思います。幼少期か ら刷り込まれてしまうと、教わったままに『工芸や芸術とはこうあるべき』と 思い込んでしまうこともありますから。」と、当時を振り返ります。 高校３年生までは野球に没頭する生活を送り、陶芸家になることを強要されず に育った奈良さん。一度は建築家を志します。 建築の道へ進む決断をすることができたのは、現代アーティストとしても活動 している父の勧めによるところも大きかったそう。「建築の分野に関心を持ち 始めたときに、建築を生業にしている知り合いに会わせてくれたことも後押し になりました。」 とはいえ、陶芸の魅力を存分に感じられる環境で育ってきた奈良さん。大学院 １年のあるとき、実家に戻った際にふと「陶芸をやってみてもいいかな」と思 えた瞬間があったのだと言います。そして大学院を休学し、2 年間多治見市陶 磁器意匠研究所で陶芸を学びました。 2017 年、建築を学んだ大学院を首席で卒業。現在、自身の建築事務所を主宰し ながら陶芸家としても活動する作家としてのあり方は、当時、十代目である祖 父にかけられた言葉からの影響だと言います。 「大学在学中には、祖父からいつも『自分にしかできないことを探れ』と言わ れていました。祖父も東京藝大に通っていたので、身近な存在に感じていまし たね。」 これらの経験は建築の設計技術と伝統的な工芸手法を融合させた、今の創作へ とつながっていきます。

Cultivating Multifaceted Perspectives and Multidisciplinary Activities Leads to Unfaltering Individuality “I want to take ceramics to the next level,” says Nara. He is energetic in his collaborations with artists in other genres. To him, his practice isn’t just in the field of ceramics, but straddles multiple disciplines as a compound whole.

“It’s fun to explore—bringing in the essence of different fields, finding the right balance, and gradually refining my own technique. The history of pottery goes back for tens of thousands of years, and our predecessors have continually explored new forms of expression. In order to come up with innovations in pottery, there’s no way forward but to incorporate the techniques and ideas of other fields.”

Nara recently worked together with the flower artist Nicolai Bergmann for an exhibition in MinamiAoyama, Tokyo (to be held from 15th December 2021 to 14th January 2022), and in 2022, he will hold a solo exhibition showcasing his collaboration with the furniture brand ROLF BENZ (from 23rd October to 3rd November). Crossing over disciplinary boundaries, Nara says, “My originality lies in having a hybrid view across various genres.”

Nara—who also works in the world of architecture, which requires space on a larger scale as well as teamwork—says that “There are things in common between the approach needed in architecture and that of pottery.” In the future, he is planning to focus more on creating spaces for installations or exhibitions.

Nara explores the art of ceramics and his creative practice with a broad perspective. He is sure to continue expanding his unique voice, enticing us with his innovative, eye-opening artworks.

Moment Factory is a multimedia studio founded in 2001 by Sakchin Bessette and Dominic Audet, one with a background in visual art and the other specialising in technological innovation.

The two partners began their long creative journey with organising light shows and installations in the underground scene in Montreal. Recalling the early years of the studio’s existence, Marie-Pier Veilleux mentions that some of the first projects were created for the music events, yet, later, the scope of

Moment Factory’s expertise expanded to a variety of spaces, now including airports, train stations, and other unconventional locations.

Commenting on the philosophy behind Moment Factory, Marie-Pier says that “what drives our projects and teams is the fact that we want to bring people together”.

“We want to use technology, but we also want to bring people offline. We want to make people go out and gather for a collective experience,” – Marie-Pier concludes.

MIXING CULTURE AND TECHNOLOGY As Moment Factory teams work in urban and natural locations across the world while creating elaborate immersive events, respect for the primary culture and environment is another key principle by which the studio abides.

Lumina Night Walks are signature immersive events created by the company around the world over the years. Each walk is set in a natural landscape, as the team develops elaborate light decorations and sound accompaniment to create an immersive experience for the participants. “We want to enhance the beauty of a site and showcase the culture of a place. This is what we do with the Lumina Night Walks,” – Marie-Pier explains.

“We want to make sure that we respect the culture and the traditions of the place where we create our events,” – she adds.

“We are based in Montreal, but 90% of our projects are all over the world. We work very closely with local where we do the projects.”

INNOVATION AT EVERY STEP

At Moment Factory, every project is different from the other. “Even with the Lumina Night Walks, we created close to 15 experiences, and none of them are the same,” – says Marie-Pier.

She also points out that the creative process behind the Lumina Night Walks involves a complex technological integration. In recent years, the teams came up with the idea of a “forest lab” – a creative space in nature in which new ideas and technologies can be tested prior to being implemented into new events.

In 2020, Moment Factory created a large-scale installation at the Olympic Agora in Tokyo. “The project reflects on the emotions we feel when it comes to the Olympics. We wanted to bring in the idea of moments of perseverance, of team playing,” – explains Marie-Pier.

Today, the studio teams create immersive experiences in a variety of spaces, including churches, museums, and airports. Over the years, Moment Factory began to create more permanent projects, such as the recent immersive experience at the Shinjuku station in Tokyo.

Expression in dance “A good dance teacher will explain that your presence and your emotions are part of every dance, even in class,” – Kathryn states.

“A dancer needs to be aware, they must feel something and have a story, imagination, which relates to the audience as they dance.”

For this reason, she stresses the importance of free time and relaxation for the competitors who work very hard throughout the week: “I definitely recommend having some free time every day to relax and read a book or meet with friends, do something outside of ballet.”

“With Béjart, we did eight months of touring every year.

I would get up early in the morning and go sightseeing.

When you find yourself in a different culture, I think it helps to learn and be open, which, in turn, helps relate these experiences on stage to the audience,” – Kathryn recalls.

At the same time, she speaks of the experience at Prix de Lausanne as an important learning process. She explains that the teachers at the competition are world-renowned dancers, which often makes young competitors nervous.

“These teachers make them feel more comfortable. Each day throughout the week it is the same class with a little bit more exercise added gradually,” – she elaborates. “By the time they are judged in front of the jury, they feel more relaxed, as they have progressed during the week. So it really is a learning experience, like a workshop type.”

「意識して、感じ、ダンスを通じて自身のストーリーやイ マジネーションと観客をつなげる。それがダンサーにとっ て大事なことです。」

また、ローザンヌ国際バレエコンクールでの経験は、学び のプロセスとしても財産になる、と話します。ローザンヌ では世界的に名の知れたダンサーたちが講師をつとめるた め、若いダンサーは緊張してしまうそうですが、それにつ いて次のように語っています。

そのため、1 週間のコンクールの期間ずっと意識を張りつめ ている参加者に、自由時間とリラックスすることが大切であ ることを伝えています。「毎日少しでもいいから自由時間を 確保して、本を読んだり、友達と会ったり、バレエ以外のこ とをしてリラックスすることをすすめています。」 実は自身も同じ経験をしているキャサリン。「ベジャール とは毎年 8 ヶ月間のツアーを共にしていましたが、ツアー 期間中は、私は朝早く起きて街を観光したりしていました。

「講師陣は参加者を安心させるのがうまいんです。一週間 のコンクール期間、毎日のレッスン内容は基本的には同じ なのですが、運動量が毎日少しずつ追加されていきます。 一週間で進歩するおかげで、ダンサーたちは、リラックス した状態で審査に臨むことができるようになっています。 これこそ、体験型の学びの経験と言えるのではないでしょ うか。」

LOOKING INTO THE FUTURE

In the summer, European pre-selections are to be held to find the best dancers who will take part in the 2023 Prix de Lausanne. As the 2023 programme will mark the 50th anniversary of the competition, the teams develop many exciting projects and events as part of the celebration.

“We will have a gala performance with our prize winners who are still dancing the day after the finals,” – she says.

“We are also making a documentary a part of which will be filmed during the 2022 Prix, and we will use our archives.”

Kathryn mentions that more projects are currently being developed, but some of them are kept secret and will only be

Ski resort Gstaad has long won the hearts of travellers from across the world with its elaborate natural landscape and the unique alpine feel of its villages. Gstaad belongs to the Swiss municipality Saanen located in the German part of the country. The population of Saanen is comprised of just 7,000 inhabitants and almost as many cows.

The villages of destination Gstaad are located at the height of 1,000 to 1,400 metres above sea level, allowing visitors to get away from the rhythm of city life and enjoy the silence of the mountains. ABOUT SKI AT GSTAAD A network of cable cars in Gstaad is designed to provide guests with access to a range of ski slopes of various levels of difficulty.
