Welcome to the latest edition of "Gen de Art." Upon turning the cover, a collection of captivating experiences from around the world awaits, carefully curated by our team. Some of our members have returned with intriguing stories from events like the "CRAFT SAKE WEEK 2023" and the "Tokyo International BarShow 2023" in Japan. We had the privilege to indulge in soulstirring musical performances at the Beethoven Festival in the picturesque town of Beaune, France.

witness Yoshitomo Nara's solo exhibition, "Yoshitomo Nara: All My Little Words," where we had the opportunity to directly experience h i s u n ique a r t i s t ic ex pre s sion . Th rou gh dialogues with Nara, we were able to sense the wellspring of his creativity, his affection for his hometown, and his fervor for artistic creation.

For those with an interest in wine, engaging conversations with Brice de la Morandière from Domaine L ef laive and Louis-Michel Liger-Belair from Domaine du Comte LigerBelair will surely delight. We gained profound insights into the connection between wine and the people who create and enjoy it.

陽光が地球を温め、生命が活動する季節が訪れ ました。この美しい季節に感謝しつつ、芸術の感 性を解き放ち、素晴らしい旅に身を任せるひとと きをお過ごしください。 「Gen de Art」最新号 へのご案内です。 表紙をめくると、私たちのチームが集めてきた世 界各地の興味深い体験が待っています。日本で は「CRAFT SAKE WEEK 2023」 や「Tokyo International BarShow 2023」に参加し、面 白い話題を持ち帰ったメンバーもいます。フラン スの美しい町ボーヌで開催されたベートーヴェン フェスティバルでは、心に響く音楽パフォーマン スを堪能しました。

ウィーン で 開 催 さ れ た 奈 良 美 智 氏 の 個 展 「Yoshitomo Nara: All My Little Words」に 足を運び、彼の独特な芸術表現を直接体験しま した。奈良氏との対話から、彼の創造性の源泉 や故郷への愛情、創作活動への情熱を感じるこ とができました。

ワインに興味のある方々は、Domaine Leflaive の Brice de la Morandière 氏 や Domaine du Comte Liger-Belair の Louis-Michel Liger-Belair 氏との対話を楽しんでいただける ことでしょう。彼らからワインと人々との繋がりに ついて深い洞察を得ることができました。

”All My Little Words”

Yoshitomo Nara, an artist whose works featuring sharpeyed people and animals as motifs have attracted fans worldwide, is not only showcased in domestic art museums but also has artworks housed in the Museum of Modern Art (MoMA) in New York and the Museum of Contemporary Art (MOCA) in Los Angeles. Currently, art enthusiasts are immersed in the profound journey of Nara's creative

evolution at the Albertina Modern in Vienna, where his exhibition, "Yoshitomo Nara: All My Little Words," unfolds its beauty until November 1, 2023. At Gen de Art, we were privileged to engage in an enlightening conversation with Nara himself in Vienna, exploring about his formative experiences, music, travel, and the relationship between his hometown and his creative process.

European Exhibition: Yoshitomo Nara's 40-Year Journey "Yoshitomo Nara: All My Little Words" at the prestigious Albertina Modern is a profound exhibition of Yoshitomo Nara's work in Europe, held for the first time in over a decade. This grand showcase gracefully charts the artistic odyssey of Nara, spanning a remarkable of nearly four decades, with a primary emphasis on his evocative drawings.

Within this immersive exhibition, a rich tapestry of Nara's creative legacy unfolds, ranging from his early forays into experimental works on paper to a captivating array of paintings, sculptures, and a meticulously curated installation titled "My Drawing Room 2008 Bedroom included".

Angela Stief, the director of the Albertina Modern, offers insights into Nara's creative process, stating, "Nara-san sometimes draws improvisational drawings on scraps of paper, old envelopes, packaging materials, flyers, and more. These works display a direct influence from subcultures such as rock music. They serve as expressions of the artists' social concerns and reflect societal values, norms, and ideals."

ヨーロッパ展覧会 : 奈良美智の 40 年間の軌跡 アルベルティーナ美術館で開催中の『Yoshitomo Nara: All My Little Words』は、ヨ ーロッパにおける奈良美智氏の大規模な展覧会として、10 年以上ぶりに開催されます。 この展覧会では、ドローイングを中心に、約 40 年にわたるアーティストの創作の軌跡 をたどります。 展覧会では、紙に描かれた初期の実験的な作品から、多種多様なペインティングや彫刻、 そして「My Drawing Room 2008 Bedroom included」と名付けたインスタレーシ ョンまで、幅広い作品が展示されています。 アルベルティーナ美術館のディレクターであるアンゲラ・シュタイフ氏（Angela Stief) は、奈良氏の創作について次のように説明しています。「奈良さんは、紙片や古い封筒、 包装材、チラシなどに、即興でドローイングを描くことがあります。これらの作品には ロック音楽などのサブカルチャーの直接的な影響が見られます。これらはアーティスト の社会的関心を表現し、社会的な価値観、規範、理想を映し出すものです。」 Gen de Art JULY 2023

Journey and Melodies: Inspiration for Creation

Nara believes that traveling has an exceptional capacity to enhance and elevate one's sensitivity. He says, "I don't think that going on a journey has a significant impact on creativity. However, it refines the way I think and perceive emotions. It allows me to become more sensitive.

The reasons for traveling are diverse. For example, my grandfather worked as a coal miner when he was young. I desire to visit the coal

mines in Hokkaido and Sakhalin where he used to work. I want to see the landscapes he saw. Additionally, I'm interested in Taiwan, which is geographically opposite to Sakhalin. I would like to visit places where I can observe the lives of ethnic minorities and indigenous people.

Although what I see during these travels may not be directly depicted in my artworks, it undoubtedly enhances my sensitivity and senses."

The fact that Nara engages in creative activities while listening to music is widely known among fans, but Nara has harbored a deep affection for music since childhood. "Many people mistakenly believe that music is important only during the process of creating artwork, but in truth, music has always held significance for me even before the act of creation. From the

moment I first heard music playing on the radio as a very young child, I remember that sensation and have loved music ever since.

I never had the thought of wanting to draw or become an artist while listening to music; it was simply a constant presence in my life. Consequently, when I draw, I also listen to music, but it's not as if I listen to music specifically for the purpose of drawing."

旅行を通じて感性が洗練されると奈良氏は語 ります。 「旅に出ることが創造力に大きく影響すると は思っていません。ただ、自分の考え方や感情 の感じ方を洗練させてくれます。より敏感にな るという意味で、旅を通じて得られるものが あると思います。旅に出る理由は、本当にバラ バラです。例えば、僕の祖父は若い頃に炭鉱

労働者として働いていました。彼がかつて勤め ていた北海道やサハリンの炭鉱を訪れること が自分の望みです。祖父が見た風景を自分も 見てみたいと思っています。また、サハリンと 地理的に反対の位置にある台湾にも興味があ ります。少数民族や先住民の生活が見られる 場所を訪れたいのです。そこで見たものが作 品に描かれることはないですが、ただ自分の 感性や感覚をより磨いてくれるはずです。」

奈良氏が音楽を聴きながら創作活動を 行うことは、ファンの間では広く知 られていますが、奈良氏自身は幼少期 から音楽に親しんできました。「作品 を作る際に音楽が重要であると多くの 人が思い込んでいますが、実は音楽は 作品を作る前から大切でした。僕が子 供の頃、非常に小さい時に初めてラジ オから流れてきた音楽を聴いた瞬間か ら、その感覚を覚えていて、それ以来、 音楽がずっと好きでした。音楽を聴い ている時に絵を描きたい、アーティス トになりたいと思ったことはなく、た だ音楽がずっとそばにありました。そ の延長線上で、絵を描く時も音楽を聴 いていますが、絵を描くために音楽を 聴いているわけではないんです。」

The Artist's Identity and True Self While Nara basks in global acclaim as a distinguished contemporary artist, he honestly expresses that the label of an artist is merely a facet of his true identity. "I may be recognized by many as an artist, but that is just a part of my true self. Perhaps only about 20% of who I am is the artist within, while the remaining 80% is unknown and unknowable to others—that is my authentic self. To convey this, I make use of social media platforms such as Instagram and Twitter. Through these channels, I share glimpses of my everyday life as a person. As a result, it may appear that I am constantly traveling or simply having fun, but that too is a part of who I am. In the future, I will continue to make posts that make you wonder, 'When does this person find time to paint?' However, I would be delighted if these posts provide you with some understanding not only of me as an artist but also as a person."

Returning to the Origin: Passion for Aomori and the Autumn Exhibition in 2023 Nara, who grew up in Aomori Prefecture, speaks about the profound influence that his beloved hometown has imprinted upon his artistic journey. "I was born and raised in Aomori Prefecture, and I spent the majority of my teenage years there.

This autumn, I have plans to hold a large-scale exhibition in Aomori. For the exhibition, rather than showcasing new works, I aim to create an exhibition that allows an understanding of my sensibilities and growth process. I wish to display books I read during my childhood and items related to my personal development. During high school, I even collaborated with older peers to establish a rock café. I consider such experiences, where we created our own small community, as the beginning of my life—not as an artist, but as a person. I intend to recreate those experiences within the exhibition."

アーティストとしての 自我と本当の自我 奈良氏は全世界から高い評価を受けている現代アーティストでありなが ら、アーティストというラベルは自分のアイデンティティの一部に過ぎな いと語ります。「僕は、多くの人にアーティストとして認識されているか もしれませんが、それは本当の自分の一部にすぎません。おそらく自分の 中でアーティストとしての部分は 2 割程度で、残りの 8 割はみんなが知ら ない、そして知ることのできない自分、それが本当の自分だと思っていま す。それを伝えるために、僕はインスタグラムやツイッターなどの SNS を 利用しています。僕はインスタグラムやツイッターで人としての自分の日 常を発信しています。その結果、常に旅行をしていたり、遊んでばかりい ると思われるかもしれませんが、それも自分の一部です。これからも皆さ んが 『この人はいつ絵を描いているんだろう ?』と思うような投稿をする と思いますが、アーティストとしての自分だけでなく人としての自分を少 しでもわかってもらえたら嬉しいです。」

原点への回帰： 青森県への情熱と 2023 年秋の展覧会 青森県で育った奈良氏は、その土地が自身に強い影響を与えたと語ります。 「僕は青森県で生まれ、育ちました。10 代の大半をそこで過ごしました。 今年の秋に、青森で大規模な展覧会を開催する予定です。展覧会では新作 展ではなく、僕の感性や成長の過程が理解できるような展示を計画してい ます。子供の頃に読んだ本や、成長に関連するアイテムを展示したいと思 っています。高校時代には、年上の先輩と一緒にロックカフェを作りまし た。そのように自分たちで作り上げた小さなコミュニティが、僕の人生の 始まりだと感じています。美術家としてではなく、人としての自分の始ま りなのです。その経験を展覧会で再現することを計画しています。」

"Our world is showing its unique smallness daily, and sometimes weekly, an aspect that holds significant implications for institutions like ours, an art museum.

When our museum was founded in the 18th century, our founder, Duke Albert of Saxe-Teschen, wished to represent the entire art world through a series of works ranging from Italian, French, and German paintings, from Michelangelo to Dürer. Today, the world is simultaneously expanding and shrinking.

We can travel from Tokyo to Beijing, to Rome in an instant. Therefore, we must broaden our artistic perspective to comprehend the entire world. How can we understand the world without taking into account Japanese culture and art?"

A Tapestry of Basel's Social and Cultural Identity Ref lecting on his diverse professional experiences in both the United States and Europe, Helfenstein acknowledges t he ha r monious blend of a r t ist ic perspectives he acquired: " I brought European ideas to the US while, in the US, I learned a lot from Americans about American culture, American artists and American politics."

These ex per iences have undeniably informed Helfenstein's approach to his current role at the Kunstmuseum Basel.

He views the museum as a vibrant city organ, its historical roots extending deep into the cultural soil of Basel.

" I believe there is a special affinity of the Kunstmuseum Basel with the city of Basel. It has a very strong role in the city because it was founded a long time ago, in 1661, and the people in Basel now see it as their own," Helfenstein explains, highlighting the role the museum plays in Basel's cultural identity.

Moreover, for him, the Kunstmuseum Basel is not only a cultural institution, bu t a l s o a s o ci a l one : “ For me , t he museum is a platform for people to meet, without pressure of consumption. Many people come here very often, and I think that is very precious. In a way, we are a

social place as well.”

He explains that visitors at the Kunstmuseum Basel are free to spend time together at the museum, looking at a nd discussin g t he a r t work s a nd communicating in different ways, as well as going to the restaurant in the inner yard of the museum’s oldest modernist building of the 20th century and using the rest of Kunstmuseum Basel’s multiple facilities.

“So, I think we have an important role in the social fabric of the city and its environment,” – Helfenstein concludes.

“My colleagues, the curators, have to do a lot to stay informed about what is going on in the art world,” – Helfenstein says. “We live in a time with a lot of information, constant change, where a lot of things are happening. One of our assets is that we can offer living artists to not only show their work, but to be in a dialogue with old masters and historic art,” – he adds.

Furthermore, Helfenstein underscores the museum's digital engagement initiatives, ensuring visitors can access exhibition information on various platforms and maintain a virtual rapport with the public.

guide that I think must have been brilliant because she managed to entirely capture my attention at age five." Filipovic changed her career path from an intent to study law to pursuing a master’s and Ph.D. in Art History after discovering that becoming a

curator could be a profession. In her words, "I met someone who explained what a curator does. And from that moment on, I knew that that was the profession that I had really, in my heart, wanted to be. I just didn't have the term for it before."

As the director and chief curator of Kunsthalle Basel, Filipovic brings a unique and refreshing perspective to contemporary art. She is committed to making exhibitions whose form emerges from the questions that artists ask in their work and the ideas they are grappling w i t h , rat h e r t h a n t r y i n g to m a ke a particular type or style of exhibition. The same irreverence for a “type” goes for her artistic interests, which are extremely varied and have included in recent years, curating breakout exhibitions with Michael Armitage, Dora Budor, Anne Imhof, Geumhyung Jeong, Lydia

Ourahmane, Wong Ping, Andra Ursuţa, Anicka Yi, Lynette Yiadom-Boakye, and many others. Her process of selecting artists for exhibitions involves visiting studios, attending art fairs and biennials, reading art magazines, talking to artists about other artists, and keeping an eye out for artists doing unexpected things in unconventional spaces.

Filipovic's criteria extend beyond creative prowess. She carefully considers whether artists are ready to take on the grandiose and challenging spaces of Kunsthalle Basel. This approach reflects her

commitment to fostering an environment that is both supportive of artists and challenging to them, pushing them to grow and explore new possibilities. " I would say maybe one of the important considerations is not just which artist to choose, but which moment to do a project with them." The curatorial team actively seeks out new talent by visiting studios, attending art fairs and biennials, and listening to what artists are saying and doing. "The institution has always had a reputation for showing artists early in their careers, before they are widely known," she adds.

Discovering Her Passion

Filipovic's interest in art and exhibitions began during a school trip to a museum when she was young. She was fascinated by the storytelling that happened in front of the artworks and was captivated by the experience. In her words, "We had a

David Hammons's Elusive and Powerful Performance Art

ilipovic spent nearly nine years researching the artwork and interviewing people about David Hammons's "Blizaard Ball Sale”. It is a performance piece that has captured the imagination of contemporary art enthusiasts, despite there being relatively lit tle concrete known about it. In 1983, Hammons, an African American artist, stood on a cold Februar y day in New York Cit y among sellers who were offering trash and items found on the street. Without any announcement to the press or the art world, he laid out carefully arranged rows of perfectly sized snowballs

sorted by size and sold them. Although captured in a few photographs that had become iconic since, the performance remained elusive to most people. For Filipovic, the artwork is a testament to the power of ar t to create meaning ful experiences that stay with us long after the performance is over, and even if an audience never actually saw it in the f lesh. Inspired by Marcel Duchamp, Hammons's ability to create a simple yet powerful artwork that, as she notes, "slips between your fingers like a snowball that melts," is a true work of genius.

A Feast for the Senses 感覚の宴

The Beethoven Festival in Beaune is a beloved celebration of chamber music that draws music enthusiasts from around the world to the picturesque town of Beaune in Burgundy.

Created in 2018 by Sung-Won Yang, cellist, and artistic director, in collaboration with Frédéric Mugnier from Domaine Jacques-Frédéric Mugnier, the festival celebrates the unifying power of music to bring people together in a warm and welcoming atmosphere.

The festival is the brainchild of Mugnier, a wine producer and Beethoven enthusiast who wanted to share his passion for music with others. He believes that Beethoven's music can touch people's hearts and bring them together, regardless of cultural or linguistic differences. Mugnier's deep appreciation for Beethoven's music inspired him and Yang to create a festival that celebrates not only music but also cultural heritage and nature.

The festival's values align with those of Beethoven, who was passionate about s o c i a l j u s t i ce a n d d e m o c racy. T h e festival's programming reflects these values by offering diverse and accessible performances that cater to all audiences.

"The festival is for everyone, not just music experts," says Yang. "We want to make Beethoven's music accessible to as many people as possible and showcase its beauty and universality."

He has brought extensive experience as a business manager in various industries across different countries. Although his background lies outside the wine industry, he has gained valuable insights and a unique perspective.

For de la Morandière, today’s wine market environment is becoming increasingly challenging, as the customers’ preferences change and “they want wines that hold more truth”. de la Morandière adds to this view, saying: “I think the market prefers wines that express a sense of where they belong to, of where they’ve come from.”

However, in 2021, transferring a sense of place in Domaine Leflaive wines was more difficult than usual. “The year 2021 was a very cold one, so it’s been a difficult one when everyone at the winery – the winemaker, the whole of the domaine, the people in the vineyard, the people in the cellar – really had to work hard to make something very special,” – de la Morandière says. Still, the difficulties did not stop the winemakers from delivering an excellent result in these climate conditions and presenting their customers with yet another set of great vintages, each with an outstanding character to try.

The new generation of customers expects much more from wine than just good taste and strong aroma, challenging wine producers around the world to create something new. And the winemakers at Domaine Leflaive 51

the world of wine “When a customer buys the wine made by Domaine Leflaive, they want to know this wine is pure. They want to feel like being here – and that’s the experience we are trying to bring,” – de la Morandière says.

Walking into one of the cellars, de la Morandière explains that its shape is one of its most important features: “You can see this is a very old wine cellar because, if you look, it is all round like that, it is called the shape of a basket candle, a wooden basket.”

“We make sure that all cellars in Domaine Lef laive have the same atmosphere. And this one is very nice. It’s resting for the eye, and I think 53

it’s a very peaceful place for wine,” – de la Morandière says. “Peace is exceptionally important. This way, it is a more spiritual shape in a way. I’m happy to be here, I hope my wine is happy to be here as well”.

As he shows us the barrels, he mentions that the wines stored in them today are made from grapes harvested last year. “It will be in bottles in April, May, and June. September is the new harvest. So, October, November, December is the best time for the wine to be presented on the market”.

Domaine Leflaive is truly one of the most well-known biodynamic wine producers in France and around the world. For de la Morandière, as he puts it, biodynamic winemaking is a combination of methods that are safe for the planet and the natural surroundings of the estate.

To stay true to these values, the winery focuses on environmentally friendly practices of building. For instance, there is a lot of investment into proper insulation at the cellars, so that the excessive use of air conditioning can be avoided. Domaine Leflaive also works on reducing the weight of the bottle, as well as recently has stopped burning wood.

De la Morandière says that all the materials used in the construction of the buildings of the estate were collected locally. “We only used materials that are approximately 100 kilometers from the winery. The stones are 85 kilometers from here. When we do all those things, we try to be as carbon-neutral as possible,” – he explains.

“We have done a carbon analysis at the domain to understand where we are spending carbon, and it turned out that the carbon footprint of the domain is very low,” – de la Morandière concludes.

In Connection with Nature

For the director, the continuous evolution of various processes at the winery is key to excellence: “Every year we say, is it a good idea? Is it a bad idea? A lot of times it’s an okay idea, but not a fantastic one.

But you have to have that spirit of exploring what is interesting. You need to want to say: ‘I am going to try’.”

Summarising his experience with making wine, de la Morandière crystallises his philosophy in the following simple words: “I think you need to be humble enough to recognise that there are a lot of things that you don’t know. You need to be curious enough to want to know the things that you don't know.”

As Domaine Lef laive continues to marry tradition with innovation and sustainability, their commitment to excellence in winemaking remains steadfast. With de la Morandière at the helm, the estate is poised for a bright future, producing some of the world's most exceptional white wines.

A young w ine estate Domaine du Comte Liger-Belair wa s created in t he ea rly 2000s by Comte L ouis-Michel L i gerBelair, oenologist and agricultural engineer, who comes from the family with a complex background in winemaking. LigerBelair resurrected the family estate with his own hands, proudly leading the winery to its international success over the years.

Today, the estate produces over 15 different wine blends from grapes harvested across various villages in Burgundy.

In the interview, Liger-Belair, an agricultural engineer and oenologist, spoke about his journey towards becoming a successful winemaker, his vision and inspiration, as well as the creation of the new organic wine bar and in Vosne-Romanée – La Cuverie.

The Liger-Belair family winemaking tradition goes back to the 18th century but, for several decades, the estate remained active but not directly controlled by the family. As LigerBelair explains, he was born into the family of a military man: “My father was a French army officer, so we moved frequently. Every t wo years, we had to move to a di f ferent city or country, and I had to learn to make c on n e c t ion s w i t h p e op l e q u ic k l y. Th i s upbring ing taught me the impor tance of being open to new experiences and learning from others, which has helped me greatly in my career as a winemaker.”

His father made a brilliant military career after joining the army in 1947 but was unable to manage the historical estate in VosneRomanée all by himself. He had to employ people from the village to work in the winery and keep it up and running. However, for Liger-Belair, the estate has always been the destination of his dreams where he wanted to stay one day and revive the family craft.

“When I was eight years old, I told my parents t hat I wa nted to st ay in Vosne-R oma née in stead of goin g back to Ger ma ny. They

To fulf il his parents’ wishes, Liger-Belair graduated with a degree as an Agricultural Engineering from the University of Dijon, as well as received a Master’s degree in wine business and oenology. In 2000, he was finally able to take over the production at the family estate.

According to him, Vosne-Romanée is a small town with only 320 residents, which is why it is so important to be open to the community.

“My life is not just about wine; it is about c r e a t i n g c on n e c t i on s w i t h p e op l e a n d learning from them,” – Liger-Belair says.

He adds, nevertheless, that it is important for him to stay well-rounded in all spheres of life and not focus on winemaking exclusively, once again confirming his commitment to openness: “I am passionate about art, music, and spending time with my family. For me, it is essential to be open to the world, to travel, to learn from others, and to enga ge with people from different backgrounds.”

His mentor also taught him a lot about the of making wine that is not just good, but great. One of these principles imply that the quality of win is determined by the grapes: if the grapes are poor quality, it will be impossible to make good with them. “ M y f o c u s h a s a l w ay s b e e n o n t h e v i n e y a r d management, taking care of the canopy, and every single vine. If the grapes are perfect, then it is very easy to make wine,” – Liger-Belair summarises.

Moreover, for him, “winemaking is a series of 250 small decisions, from planting the vineyard to putting the cap on the bottle”. “My goal is to make 10 decisions each year and improve upon them,” – he adds.

Embracing the Beauty of Sustainability Speaking of the current challenges for the whole of the winemaking industry, including global warming, Liger-Belair says that these issues helped him change the way he thinks about wine. For instance, he notes that a rise in temperatures enabled Pinot Noir grapes in Burgundy to reach perfect ripeness.

“We work hard to make sure that everything we do in the vineyard and the winer y is in harmony with the terroir,” – Liger-Belair says,

adding : “ We a lso pr ior it ise sust a inabi lit y in our practices, such as using organic and biody na m ic met hod s in t he v ineya rd a nd minimising the use of chemicals and additives in the winemaking process.”

To mitigate the impact of changing weather conditions on the wine produced by the estate, the team at the winery carefully monitors and adjusts the winemaking and grape selection techniques with each vintage to maintain a

high level of quality and character.

“But despite these challenges, I am passionate about the work we do here at Domaine du Comte Liger-Belair and remain committed to producing wines that are true expressions of our terroir and our values,” – Liger-Belair says in conclusion, leaving no doubt that the estate will continue producing outstanding wines and surprising wine lovers from all around the world with brilliant flavours each year.

La Cuverie Last year, Liger-Belair, together with his wife Constance, opened a beautiful complex located at the centre of Vosne-Romanée village that included an organic wine bar, a shop, and a guest house. The innovative complex was placed in the old Lamadon estate near the vineyards and the chateau itself, enabling easy access to the beautiful views for the visitors.

La Cuverie by Comte Liger-Belair is designed to stimulate interest in wine tourism in Burgundy among the wine lovers’ community all around the world, inviting all to come and share everything the village has to offer.

The bar at La Cuverie offer a selection of over 1,500 organic and biodynamic wines produced locally wines to satisfy the desires of any wine lover, no matter how sophisticated. A Sparkling Celebration of JAPANESE SAKE Team Juyondai Day Tatsugoro Takagu from Takagi Sake Brewery Co., Ltd

This grand event was organized by the 'JAPAN CR A FT SA K E COMPA N Y,' led by Hidetoshi Nakata, a former Japanese national soccer team player. Over the course of 10 days, 10 different breweries attended daily, carefully chosen from among more than 1,400 breweries nationwide.

Each of t he 10 days of t he event feat ured a unique theme for the showcased breweries. On the f irst day, under the theme of 'AWASAKE Day,' sparkling sake from renowned breweries such as 'Mizubasho' (Gunma Prefecture) took center stage, offering globally popular Japanese sparkling sake. On the final day, the theme of 'Team Juyondai Day' highlighted the prestigious sa ke 'Juyonda i' a nd n i ne ot her brewer ie s , captivating numerous sake enthusiasts.

ARCHITECTURE Additionally, the venue design was created by architect Takeshi Tane, based in Paris, France. His concept of 'Mass = Masu' used approximately 3,000 wooden sake cups stacked across the front of the venue, creating an overwhelming yet softly enveloping, wood-accented space. さらに、会場デザインはフランス・パリを拠点に活動する 建築家、田根剛氏が手がけました。彼の「Mass ＝枡」をコ ンセプトにしたデザインは、約 3000 個の枡を会場前面に 広がるように積み上げることで、圧倒的な存在感の中にも 木に包まれた柔らかな空間を創り出しました。

The Tokyo International BarShow, one of the biggest events in the alcoholic beverage and bar industries, has returned after a four-year hiatus due to the pandemic. The event, held on the 13th and 14th of May at Tokyo Dome City, Prism Hall, was hosted by the Cocktail Culture Foundation, which is chaired by STAR BAR GINZA legend Hisashi Kishi.

This year's event brought together 54 exhibitors from around the world, showcasing the very best in the industry. The world-renenowned Japanese whisky brands, including Suntory, Nikka, and Ichiro's Malt, were among the highlights of the event. The show buzzed with an electrifying atmosphere as industry insiders and passionate liquor enthusiasts came together to exchange knowledge, expertise, and revel in the sheer delight of cocktails, whiskeys, spirits, as well as the latest tools, glasses, and other bar essentials.

In the realm of whisky, few names evoke as much reverence and admiration as Shinji Fukuyo, the esteemed chief blender for Suntory Distillery, who has been regarded as a leading authority in the industry.

Throughout his illustrious career, Fukuyo has had the privilege of attending various events and exhibitions that celebrate the artistry of whiskey making. “Among these the Barshow stands out as a remarkable platform. The discussion, titled "Whisky 100-year Project - Fellow Distillers - Japanese Blender Discuss the Future", saw presenters Jota Tanaka (Master Blender, Kirin Brewery Company Limited), Shinji Fukuyo (Chief Blender, Suntory Spirits Limited), Hiromi Ozaki (Chief Blender, Nikka Whisky Distilling Co., Ltd.), Ichiro Akuto (Master Blender, Venture Whisky Co., Ltd.), Hajime Kunai (Chief Blender, Hombo Shuzo Co., Ltd.) sharing their insights on the future of the industry.

The event also boasted some special guests, including Adal Márquez, who has years of experience as a bartender and is currently managing bars in both Barcelona and Madrid. Márquez, known for his "throwing" cocktail-making technique and artistic mixology, is also a university lecturer and the recipient of numerous awards, including "Timeless International Bar Awards 2020." During his appearance, he emphasized the importance of experiencing bar culture in Japan.

Another special guest was Dave Broom, an editor of alcohol and music and famously known for the publication of The 'World Atlas of Whisky.' Masataka Hosoo's Creativity and Passion Fuel a Pioneering Venture:

The global expansion of Nishijin-ori

This traditional weaving style was highly esteemed among the affluent, including emperors and aristocrats during the Heian period. They valued not just the finest materials and designs but also extolled this craft as "wearable jewelry." Growing up in a family business centered on this heritage craft, Hosoo had initially seen it as "conservative." Post-university, instead of joining the family business, he continued to pursue his desire for creative endeavors, pouring passion into music and launching fashion brands.

It wasn't until his father, the eleventh generation leader, started the overseas expansion of Nishijin-ori at the age of 30 that Hosoo's perspective shifted, and he decided to join the family business.

西陣織は平安期より、天皇や貴族など の富裕層の間でその美しさが讃えられ ました。彼らは最高の素材とデザイン に重きを置く一方で、この技術を「着 るジュエリー」とも称えました。 この伝統的な織物を継承する家業に対 して、細尾氏の印象は「保守的」でし た。大学卒業後、家業に入らず、創造性 に満ちた仕事への憧れを持ち続け、ミュ ージシャンやファッションブランドの 立ち上げなどに情熱を注いできました。

細尾氏の視点が変わったのは、30 歳のとき、彼の父であり 11 代目 の当主である真生氏が西陣織の海 外展開に踏み出したときでした。 この新しい挑戦に触発され、細尾 氏は家業に入る決意をしました。

His global venture significantly advanced at the "kansei Japa n Desi g n E x h ibit ion" held in Pa r is in 2008. A n e x h i b i t i on s h owc a s i n g t h e obi of Ni sh iji n- or i wa s wel l received, leading to an offer from Peter Marino, an interior designer for luxury brands in t he pol it ic a l a ren a . Ma r i no proposed the development of a new textile using Nishijin-ori.

This, however, presented a new challenge. The traditional width of Nishijin-ori is 32 cm, which

is too short for use as interior tex t i le, r isk ing not iceable seams. Consequently, Hosoo set out t o creat e a fabr ic of 150 cm width, while utilizing traditional Nishijin-ori techniques and materia ls.

Hosoo realized that if he could not pr o duce a f a br ic of t he world - s t a nd a r d s i z e of 1 5 0 cm, his hopes of a successful international expansion would be dim. The development of a machine capable of weaving wide Nishijin-ori textiles was

a lon g proce s s , t a k i n g over a yea r due to t he complex structure of the fabric, which combines threads of varying shapes and thicknesses.

But the labor bore fruit . The completed wide Nishijin-ori textiles began to be adopted in interiors of famous luxury bra nds abroad. " The beaut y and high quality of Nishijin-ori have been recognized by top brands worldwide," Hosoo said, delighted with the successful global expansion.

細尾氏の海外展開への 挑 戦 は、2008 年 に パ リで開催された展覧会 「 感 性 kansei Japan Design Exhibition」 で大きく前進しまし た。西陣織の帯を展示 した展示は大好評を博 し、 そ の 後、 政 界 に な だたるラグジュアリー ブランドの内装デザイ ナ ー、 ピ ー タ ー・ マ リ ノ氏から「西陣織を用 いた新たなテキスタイ ルを開発したい」とい う提案を受けました。 しかし、この提案は新 たな課題を生み出しま した。伝統的な西陣織

の 幅 は 32 セ ン チ で あ り、これではインテリ アのテキスタイルとし て使用するには短す ぎ、継ぎ目が目立つ恐 れがありました。そこ で細尾氏は、伝統的な 西陣織の技法や素材を 用 い な が ら 150 セ ン チ幅の生地を作ること に 挑 戦 し ま し た。 テ キスタイルとして世 界の標準サイズであ る 150cm 幅 の 生 地 を 作ることができなけ れば、海外展開の成功 は見込めないと考えた 細尾氏は、広幅の西陣 織を織り上げるための

"Japanese dyeing and weaving culture is rooted in the climate, history, and local culture of each region, from Hokkaido to Okinawa. These were created by people in those areas for their livelihood, and I believe they serve as a media representing t h e h i s t o r y a n d l o c a l i t y. To c o nvey humanity, the continuation of this dyeing and weaving culture is crucial," says Hosoo.

Looking beyond dyeing and weaving, Hosoo believes that crafts with a long history and tradition harbor opportunities for global expansion. As part of this belief, he is working on a project called "GO ON" with six successors of traditional crafts.

This project aims to connect crafts to the future through cross-border activities.

"We recognize that it is important to continue using craftwork that maximizes the unique features of its region. As we transition from an era of mass production and consumption to one that considers the environment, we believe companies like ours can convey this message," says Hosoo. He sees his mission as pioneering Nishijin-ori and promoting the value of traditional crafts more widely. Hosoo's passion and talent are not only paving the way for the future of Nishijin-ori, but also contributing to the prosperity of Japanese craft culture as a whole. Thanks to his efforts and creativity, the beautiful tradition of Nishijin-ori is spreading globally, radiating a new luster in a new era.

Born in Tokyo in 1979, Mayumi Onagi ventured into the world of lacquer art after graduating from the Tama Art University's Department of Architecture and working for a Japanese garden design company. She began her apprenticeship under Nagatoshi Onishi in 2002 and won the prestigious Japan Crafts Award at the Japan Crafts Exhibition in 2006. Her innovative and expressive work has gained international acclaim, earning her a spot as a finalist in the LOEWE FOUNDATION Craft Prize 2022.

1979年東京生まれの小梛真弓さんは、多摩美術大学美術学部建築 学科を卒業後、日本庭園の設計会社を経て漆芸の道を歩むことに。 2002年から大西長利さんに師事し、2006年に日本クラフト展の 日本クラフト大賞を受賞。独創的な表現力が国際的に評価され、 2022年の「ロエベファンデーション クラフトプライズ」では ファイナリストに選ばれました。今回は、柔軟な発想で漆と向き 合う小梛さんのルーツや思考に迫ります。

Transition from Designer to Craftsman Onagi grew up in a household unrelated to lacquer or traditional crafts. Her interest in the craft world was sparked during a school trip to Wajima in Ishikawa Prefecture, where she observed the process of lacquerware production. In high school, she studied design and art, further deepening her passion for creativity.

Initially, she did not consider pursuing a career in traditional crafts.

In college, she became fascinated with architecture, and crafts remained a hobby. However, while working at the Japanese garden design company, she encountered artisans and was inspired by their passion for their work. This experience fueled her desire to be involved in hands-on craftsmanship.

設計者から工芸家への転身 漆や工芸とは無縁の家庭で育った小梛さんが工芸の世界に目覚める きっかけは、小学生の夏休みの研究で訪れた石川県・輪島での漆器制作 工程の見学でした。高校ではデザインや美術を学び、芸術への興味が 深まっていきます。 しかし、当初は工芸を仕事にすることは考えていませんでした。大学 では建築に魅せられ、工芸は趣味の範疇に留まっていました。しかし、 日本庭園の設計会社で働く中で、職人たちと出会い、彼らの仕事への 情熱に触発され、自らも手仕事に携わりたいという想いが強まります。

Recalling her childhood experience, Onagi decided to follow her interest in lacquer art and apprenticed under Nagatoshi Onishi, committing to the path of lacquer artistry. "I first discovered the joy of creating things as a child, and every day during my training felt like I was learning magic," she says. そして、幼少期の経験を思い出し、漆に対する関心に従って大西長利 さんに師事し、漆芸の道へと進むことを決意します。「子供の頃に 物作りの感動を初めて知り、修行中は魔法を身につけていくような 毎日でした」と語ります。

The Allure of Dry Lacquer: A Craft that "Grows" Over Time Onagi devotes herself to various creations using lacquer. In particular, she is captivated by the technique of "dry lacquer," which involves layering lacquer-soaked linen over a mold made of clay or other materials.

"I find the process of molding the linen fibers, applying layers of clay and lacquer mixture, and then carving and shaping the piece very appealing. The sense of nurturing each piece with my own hands, applying and polishing lacquer, is incredibly attractive. I'm drawn to the production process that utilises the blessings of nature, such as lacquer from plant sap, linen fibers, and clay," she explains.

Unlike lacquerware carved from wood, dry lacquer allows for unrestricted shaping. Leveraging this characteristic, Onagi has crafted items she desires for everyday use, such as small containers and bags she calls "lacquer pockets," stools, flower vases, and sake vessels. Each piece is the result of time-consuming handiwork, from molding to drying the lacquer.

乾漆の魅力：時間をかけて「育てる」工芸 小梛さんは、漆を使った多様な制作に専念しています。特に、漆を 染み込ませた麻布を粘土などで作った型に重ねて成形する「乾漆」 という技法に心を奪われているといいます。 「麻の繊維を固めて形作りながら、土と漆を混ぜたものを塗り重ね、 削って形を整えていく。仕上げには漆を塗って磨き、自分の手で 丹念に育てていく感覚が非常に魅力的です。植物の樹液である 漆、麻の繊維、土という自然の恵みを使った制作過程が魅力的です」 と語ります。 木材を削ることで作られる漆器とは異なり、乾漆は木材の形に 縛られず自由に形作ることができます。この特性を活かし、小梛 さんは「漆ポケット」と名付けた身につける小物入れやバッグ、 腰掛け、花器、酒器など、生活に密着した自らが欲しいと思う アイテムを制作してきました。それぞれの作品は、成形から漆を 塗り乾かすまで、時間をかけた手仕事の結晶です。

"Although the production process takes a long time and can be challenging, the 'lacquer time' I spend carefully working with the material soothes my soul and brings me insights. I spend months creating each piece, engaging in a dialogue with the work to discover its ideal form. When these creations resonate with viewers beyond words, I feel immense joy and encouragement," says Onagi. 「制作に日数がかかるため、大変さを感じる こともありますが、じっくりと漆と過ごす 『漆時間』が私の心を落ち着かせ、大切な ことに気づかせてくれます。何か月もかけて 作品と対話しながら制作し、作品がどのような 形をとるべきかを見つけ出します。こうした 作品が、鑑賞する方と言葉を超えて共鳴する 瞬間があると、非常に喜ばしく、励みに なります」と小梛さんは語ります。

Having mainly worked on smaller pieces, Onagiʼs ambition for larger works grew as she entered her thirties and experienced milestones such as childbirth and parenting. To fulfill this desire, she tackled her largest piece to date, a 90-centimeter-tall work, in the LOEWE FOUNDATION Craft Prize 2022.

これまで主に小ぶりな作品を手掛けてきた小梛さんですが、30代 に入り、出産や育児などの人生の節目を迎えて、大きな作品への 意欲が高まりました。それを叶えるべく、ロエベファンデーション クラフトプライズ2022では、自身の作品としては最大の90cmに 及ぶ壮大な作品に挑戦しました。

"Small pieces can be felt with the hands, but larger works can be experienced with the entire body. Looking back, my initial desire to create small, life-like objects has evolved into a theme that encompasses nurturing life on a broader scale, like the earth itself. I'm eager to discover what future creations will emerge, and I plan to steadily progress, exploring each possibility," she says, confidently looking towards the future of her craft.

「小さな作品は手で感じられる存在ですが、大きくなることで 体全体で感じられる存在に変わってきます。振り返ってみると、 小さな命のような存在を創りたいと考えて制作を始めた当初から、 現在では命を育む大地のような広がりを持つものへと、テーマが 移り変わってきたように思います。これからどんな作品が生まれる のか、その可能性を一つずつ発見し、着実に前進していきたいと 考えています」と語ります。

The Potential of Traditional Crafts through the Fusion of Tradition and Modernity Mayumi Onagi is not only a lacquer artist but also a guardian of the traditional craft of dry lacquer, which dates back to the Nara period. Amidst the nationwide decline of traditional crafts, she maintains a positive attitude, believing that "the fusion of tradition and modernity opens up new possibilities."

Onagi says, "While we create Japanese crafts by learning from their long history, inherited traditions, and aesthetic sensibilities, imagining the passion and thoughts of the founders allows us to think about what kind of works we should create now, rather than just inheriting the tradition. It's essential to create works born from contemporary times and lifestyles, and the ideal is to produce works that can only be born in the present age while inheriting the tradition."

Onagi draws inspiration for "works born from the contemporary age" from everyday life and people's reactions to her art. As a result, she values the opportunities to

showcase her work and those who appreciate it. She says, "I continue to create works that are attracted by the soft touch and deep colour of lacquer. I want to explore the power of lacquer, which has been used since the Jomon period, more deeply. I hope that by viewing and touching my works, people can experience the incredible charm of lacquer."

Believing that integrating the allure of traditional crafts into modern life creates new value, Onagi is dedicated to her craft.

Through her works, people can feel the power and beauty of lacquer and rediscover the potential of traditional crafts.

In the future, Onagi 's works will continue to captivate many people by conveying the unique charm of lacquer and pursuing new expressions that blend tradition and modernity. Her approach could serve as a beacon of hope for the decline of traditional crafts in today's world, providing us with great optimism.

伝統と現代の融合が伝統工芸の可能性 小梛さんは、漆芸作家でありながら、奈良時代から 続く乾漆という伝統工芸の守り手でもあります。 全国的に伝統工芸の衰退が課題となっている中、 「伝統と現代が融合することで可能性が広がる」 と前向きな姿勢を見せています。 「日本の工芸は長い歴史や受け継がれた伝統、 美意識を学びながら制作していますが、創始者 たちがなぜ作り始めたのかという情熱や想いを 想像することで、単に受け継ぐだけでなく、 自分が今どのような作品を創るべきか考えられ ます。現代の時代や暮らしの中で生まれるものを 生み出すことが大切であり、伝統を受け継ぐと 同時に、現代だからこそ生まれる作品を創り出す ことが理想です」と語ります。 小梛さんは、普段の生活や作品を観た人の反応から、 「現代だからこそ生まれるもの」のアイデアを 得ています。そのため、作品を発表する機会や 観てくれる人を大切にする姿勢が伺えます。

「漆の柔らかい触感や深い色合いに惹かれて作品 を制作し続けています。縄文時代から使われて きた漆の力をさらに深く探求したいです。私の 作品を実際に鑑賞し、触れていただくことで、 漆の驚異的な魅力を感じていただけることを 願っています」と小梛さんは語ります。 伝統工芸の持つ魅力を現代の暮らしに取り入れる ことで、新しい価値が生まれることを信じて、 小梛さんは日々制作に励んでいます。彼女の作品 を通じて、漆の持つ力や美しさを感じ、伝統工芸 の可能性を再発見していただけることでしょう。 今後も小梛さんの作品は、漆の持つ独自の魅力 を伝え続け、伝統と現代が融合する新たな表現 を追求し続けることで、多くの人々の心を魅了 することでしょう。その姿勢は、伝統工芸の 衰退に悩む現代において、新たな道筋を示す光 となり得ることであり、私たちにとっても大きな 希望となります。

Yudai Fukuoka the Principal Who Devotes His Life to Ballet Yudai Fukuoka, the principal of the National Ballet of Japan, discovered the captivating world of ballet at the young age of seven. He polished his talents both domestically and internationally, earning him numerous awards and recognitions. This year, he was awarded the Minister of Education, Culture, Sports, Science, and Technology Award for the 4th year of the Reiwa era. In this article, we delve into Fukuoka's passion and efforts towards ballet, as well as his pursuit of artistic expression on stage.

The Beginning of a Dream Fukuoka's journey began when he was urged by his mother to attend the K-Ballet Studio, where his sister was already studying.

Captivated by the allure of ballet, he began to devote himself to the art form. Fukuoka's talent blossomed, and in 2003, he was selected as a participant in the Agency for Cultural Affairs' Overseas Training Program and joined the Zurich Junior Ballet in Switzerland. He then joined the Zurich Ballet, where he further honed his skills for about five years. Upon returning to Japan in 2009, he joined the National Ballet of Japan as a soloist and performed in many productions.

He was promoted to principal in 2012.

福岡さんの才能は開花し、2003 年には⽂化庁の 在外研修制度の⼀員に選ばれ、スイ スのチューリ ッヒ・ジュニアバレエ団に入団。その後チューリ ッヒ・バレエ団にも所属し、約 5 年間でその踊り をさらに磨き上げました。帰国後の 2009 年に新 国⽴劇場バレエ団 にソリストとして入団し、多く の作品で主役を務め、2012 年にはプリンシパル に昇格しました。

夢の始まり

新国⽴劇場バレエ団のプリンシパルを務める福岡 さんは、7 歳の時にバレエと出会いまし た。母に 勧められ、姉が通っていたケイ・バレエスタジオ へ⾜を運んだ彼は、バレエの魅⼒に取り憑かれ、 情熱を注ぐ道を歩み始めました。

To deliver the highest performance on stage, Fukuoka prepares himself mentally by gradually increasing the tension leading up to the show. "I try to prepare myself to be in the best possible state when I hear the orchestra tuning before the performance," he said. He also focuses on maintaining his high physical abilities through muscle training and injury prevention.

His goal is to perform at his best on every stage. Fukuoka perceives ballet as an art form that is constantly evolving, building on the foundation created by previous generations.

While choreographers and directors deepen their work, he, as a dancer, uses his imagination and engages in trial and error to immerse himself in his role on stage and respond to the evolution of the art form. Fukuoka's most memorable work is Balanchine's "Apollo." He continued to perform even after learning of his grandfather's passing during a performance, which served as a source of inspiration for him to face the stage even in the face of adversity. "I still remember that moment vividly. My grandfather wouldn't be pleased if I were just mourning, and I knew that. It was a valuable experience for me."

Fukuoka's repertoire includes classical and contemporary ballet, and his most recent performance in "The Rite of Spring" earned him the prestigious 4th year of the Reiwa era Minister of Education, Culture, Sports, Science, and Technology Award for Dance. He humbly expresses his gratitude towards those who supported him throughout his career and aims to live up to the honor of the award. 舞台で最⾼のパフォーマンスを披露するために、福岡さ んは公演に向けて⼼を落ち着かせ、徐々に緊張感を⾼め ていきます。「（本番の前の）オーケストラの調律を聴 いた時に⼀番いい状態に持っていけるように⼼掛けてい ます」と福岡さん。その⾼い身体能⼒を維持するため に、筋⼒トレーニングやケガ予防にも努めています。 彼は⼀つ⼀つの舞台で最⾼の状態で踊ることを⽬標に し、努⼒を続けています。バレエの芸術形式は、これま での先⼈たちが築き上げた基盤の上に加え、⽇々「深 化」していると感じています。振付家や演出家が作品を 深める中で、福岡さんはダンサーとして、想像⼒を働か せ、試⾏錯誤しながら舞台での役割に没頭し、その深化 に応えています。福岡さんにとって特に⼼に残る作品と して、バランシンの「アポロ」が挙げられます。公演中 に祖⽗が亡くなり、悲しみを抱えながらも舞台に⽴ち続 けた経験は、彼にとって舞台に臨む上での糧となってい ます。「その時のことは今でも鮮明に覚えています。悲 しんでばかりいても祖⽗は喜んでくれない、と悲しみを エネルギーに変えて舞台に立ちました」と振り返りま す。「自分自身が抱えている喜怒哀楽の感情も、舞台に 立つためのエネルギーに変えて踊れるよう努力していま す」と、福岡さんは舞台での表現の深みを追求し続けて います。

彼のレパートリーは古典・近代バレエはもちろんのこ と、コンテンポラリー作品と幅広いジャンルにまで及び ます。近年では、2 台のピアノと男女 2 ⼈のダンサーで ⼈間の根源的で壮⼤な世界観を描いた「春の祭典」。こ れにより、令和 4 年度芸術選奨の⽂部科学⼤臣賞（舞踊 部⾨）も受賞しました。 「⾃分がもらったという実感はなく、周りの⽀えてくだ さった皆様がもらった賞だと思っています」と謝意を⽰ す⼀⽅、「賞の名に恥じないように」と、福岡さんは意 気込みを新たにしています。 Gen de Art JULY 2023

Passion for Macbeth and Inspiration for the Next Generation Currently, Fukuoka is rehearsing for the world premiere of "Macbeth" by Will Tucket. While feeling some anxiety about dancing the well-known story of Shakespeare's "Macbeth," he says that challenging himself with new choreography is like a dream for a dancer. "It's something that can only be realized by living in that era and meeting that person (choreographer), so I feel blessed to have such an opportunity," he says. Fukuoka's passion for dance and his willingness to take on new challenges inspire the next generation of dancers to continue pursuing their dreams.

At 40 years old this year, Fukuoka continues to strive for greater heights through ballet. "The day will come when I step off the stage, but until then, what kind of dancer will I be remembered as? How far can I complete the picture on my own canvas? I will continue to challenge myself with passion and determination, carrying the dream I had since I was seven," he said.

現在はウィル・タケット氏による世界初演の「マクベス」 に向けて、稽古を重ねている福岡さん。よく知られている シェイクスピアの「マクベス」という物語を踊ることに対 して不安も感じつつ、新しい振り付けに挑むことはダンサー にとって夢のような時間だと語ります。「その時代に⽣き、 その⼈（振付家）と出会わないと実現しないことですので、 巡り合わせに恵まれていることを感じます」

YOSHIHIRO NARISAWA Yoshihiro Narisawa, the owner and chef of the restaurant "NARISAWA," has established an innovative genre called "Innovative Satoyama Cuisine" after accumulating diverse experiences through Japanese cuisine and eight years of training in Europe. His fame is not only based on the taste and skill of his dishes but also on his high ideals and commitment to the natural environment, tradition, and culture. We had the opportunity to speak with Narisawa, who celebrated the 20th anniversary of his opening in Tokyo. レストラン「NARISAWA」のオーナーシェフ、成澤由浩氏は、日本料理から始まり、ヨ ーロッパでの 8 年間の修行を経て、多様な経験を積み重ね、「イノベーティブ里山キュイ ジーヌ（革新的里山料理）」という独創的なジャンルを創設しました。彼の名声は、料理 の味わいや技巧だけでなく、高い理念を持ち、自然環境や伝統、文化に対する取り組みか らも評価されています。東京での開業から 20 周年を迎えた成澤氏にお話を伺いました。 111

Narisawa, who has long been acclaimed as one of the top chefs in the world, was born into a family that ran a restaurant and naturally developed an interest in cooking from a young age.

From his father's strict emphasis on hygiene and thorough organization, he acquired the fundamental attitude of a chef.

長く世界のトップシェフの一人として称えられている 成澤氏は、飲食店を営む家庭に生まれ、幼少期から自 然と料理に興味を抱くようになりました。父親が衛生 面に厳しく、整理整頓を徹底する姿から、料理人とし ての基本的な姿勢を身につけました。

"The most important thing is to ensure the safety of the diners.

This involves selecting safe ingredients, such as chickens and pigs not treated with hormones, and using pesticide-free vegetables. Ensuring food safety and considering health are absolute prerequisites."

「最も重要なことは、食べる人の安全を守ること。そ のためには安全な食材を選びます。例えばホルモン剤 を使っていない鶏や豚、無農薬の野菜を選ぶなどで す。食の安全性と健康への配慮が絶対条件です」

The deliciousness created by Narisawa carries a strong message.

成澤氏の創り出す美味しさには、強いメッセージが込 められています。

"I believe that deliciousness is extremely important. I adhere to Japanese ingredients and the sense of the seasons, expressing the beauty of Japanese culture. By clearly highlighting the main elements in each dish, I believe that the message of the cuisine becomes more easily conveyed."

The Traditional Satoyama Thriving in the Modern Age The "Japanese culture" that Narisawa wants to convey is the intersection of nature and humanity, as well as the traditions cultivated there.

"The geographical and climatic conditions of Japan, as well as the culture and lifestyle that have developed over a long period, have had a significant influence on our cuisine.

Satoyama refers to the natural landscape on the 113

boundary between mountains and villages, which has been utilized and cherished by the Japanese people since ancient times. The sustainable agricultural and fishing traditions and food culture that have been nurtured there are deeply embedded in my cuisine."

Commitment to a Sustainable Future Narisawa's culinary philosophy includes efforts aimed at a sustainable future. Protecting the global environment and ensuring that ingredients do not become depleted are fundamental principles.

"I aim for my cuisine to be considerate of the global environment. For instance, I choose fish that can be caught sustainably, avoiding species that are being depleted due to excessive fishing.

Additionally, by using locally sourced vegetables and fruits, we support local agriculture and reduce transportation distances for ingredients, thereby reducing CO2 emissions."

HARUHISA TADANO In 2004, Chef Haruhisa Tadano was honing his cooking skills at a top restaurant in the P iedmont reg ion of It a ly. He met Da isu ke Ikeda, the founder of Sagaya Ginza and later its president, and their fate was set in motion.

A t t h a t t i m e , t h e S l o w Fo o d m o v e m e n t , which aimed to re-evaluate traditional food cultures and ingredients in the region, was gaining momentum in Italy. Ikeda, who had experienced the Slow Food movement in Bra, Piedmont, was deeply attracted to its charm.

Upon returning to Japan, Ikeda decided to establish a restaurant concept that utilized the local "Saga beef." Chef Tadano also resonated with Ikeda's character and philosophy, and decided to embark on a new challenge as the head chef of Sagaya Ginza.

"Japa n ha s nur t ured it s ow n food cu lt ure while accepting various cooking cultures from around the world. Japan's abundance of seafood and mountains, and the seasonal bounty of ingredients, are its unique features. When creating

dishes, I always keep in mind the seasonal feeling and ingredients of Japan," says Chef Tadano.

"If we had continued doing the same thing as 100 years ago, cooking would not have evolved.

While valuing the tradition of Japanese cuisine, I believe it is important to pursue changes with the times," he adds.

This way of thinking also led to the collaboration with teamLab at Sagaya Ginza, "MoonFlower Sagaya Ginza, Art by teamLab."

2004 年、イタリア・ピ エモンテ 州の 一流レストランで料理の腕を磨いてい た只野晴久シェフ。彼は「Sagaya 銀 座 」の創設者であり、後に社長となる 池田太右氏と出会い、運命が動き出し ます。

帰国後、池田氏は地元の「佐賀牛」を活 かしたコンセプトのレストランを立ち上 げる決心をします。只野シェフも池田氏 の人柄や理念に共鳴し、 「Sagaya 銀座」 の料理長として新たな挑戦を始めるこ とを決意します。

当時、イタリアでは地域の伝統的な食 文化や食材の再評価を目指すスローフ ード運動が盛り上がりを見せていまし た。ピエモンテ州ブラでスローフード 運動に触れた池田氏はその魅力に深く 惹かれます。

「日本は多様な料理文化を受け入れつ つ、独自の食文化を育んできました。豊 かな海や山に囲まれ、四季折々の恵み を感じられる食材が日本の特徴です。 私は料理を創る際、日本の季節感や素 材を大切にすることを心がけています」

と只野シェフは語ります。 「もし 100 年前と同じことを続けてい たら、料理は進化しないでしょう。日本 料理の伝統を大切にしつつ、時代ととも に変化を追求することが重要だと考え ています」と彼は付け加えます。 その思考は、 「Sagaya 銀 座 」で 展 開 されされるチームラボとのコラボレー ション『月花 - MoonFlower Sagaya Ginza, Art by teamLab』にもつなが っています。

In 2015, Ikeda was inspired by the collaboration exhibition between Arita-yaki, a 400-year-old pottery from Saga prefecture, and teamLab held at "Maison et Objet" in Paris. From his innovative idea, the collaboration with teamLab, "MoonFlower Sagaya Ginza, Art by teamLab" was born. "'MoonFlower' utilizes beautiful images rooted in Japanese cuisine traditions such as 'flowers' and 'seasons.' We aim to create a harmonious production that does not interfere with the meal, but instead enhances its beauty," says Chef Tadano.

W h e n " M o o n Fl owe r S a gaya G i n z a , A r t by t e a m L a b ( ‘MoonFlower’)" first opened, Chef Tadano had difficulties because he believed that the "cooking" should be the main focus.

However, the team created a unique style by incorporating productions that made "cooking," "space," and "dishes" all equally important. For example, in the scene where a river flows, a fish dish is served with a device that makes the fish on the dish swim in the river drawn on the dish. Also, in the scene where a bird flies away, dishes shaped like birds are used to express the beauty of the four seasons by merging "cooking," "space," and "dishes."

"'MoonFlower' has a selection of traditional Arita-yaki and Karatsu-yaki pottery from Saga prefecture. Together with the pottery artist, we created dishes that express Japanese beauty through production. The production of 'MoonFlower' uses AI technology to recognize the shape of the dish and change its motion. Through this innovative experience that blends traditional beauty, cuisine, and technology, Chef Tadano hopes to convey the beauty of Japan's four seasons.

例えば、川のせせらぎのシーンでは、魚料理を提供し、器に 描かれた魚が清流に泳ぐ仕掛けを施しています。また、鳥が 飛び立つシーンでは、鳥の形をした器を使用するなど、「料 理」「空間」「器」が融合し、四季折々の美を表現しています。 「『MoonFlower』の『器』には、佐賀県の伝統的な有田焼 や唐津焼を取り揃えています。陶芸家と共に、日本の美を伝 える演出に最適なデザインを模索しながら、こだわり抜いた 『器』を創り上げました。」 『MoonFlower』の演出は、AI 技術を利用して皿の形を認識 し、モーションが変化します。伝統の美と料理、そしてテク ノロジーが融合した革新的な体験を通じて、日本の四季の美 しさを感じていただくことを只野氏は願っています。 Gen de Art JULY 2023

"MoonFlower Sagaya Ginza, Art by teamLab" was created prior to the Tokyo Olympics with a strong desire to have people from overseas experience Japan's food culture.

Once the collaboration began, the number of foreig n customers increased to occupy 60-70% of the total visitors.

It is said that many people come to visit after hearing about TeamLab's fans or the moving experience of "MoonFlower".

"Foreign customers are very interested in dishes that value Japanese ingredients and seasonal f lavors. We propose menus that allow people to enjoy Japanese ingredients more deeply by incorporating both Japanese and Western element s ." I n s pr i n g, m a ny forei g n cu s t omer s v i sit "MoonFlower" to enjoy the cherry blossom scenes, and reservations can be fully booked up to a month in advance.

The Essence of Japan's Beauty Spreading to the World "With the increase in foreign customers, there is a demand for diverse foods that can accommodate relig ious or cultural differences," said Chef Tadano. He aims to develop menus that all customers can enjoy until the end, just like the regular menus. "I am interested not only in Japan but also in restaurants overseas,". He speaks of his global vision to respect local ingredients and provide dishes that incorporate seasonal beauty even abroad.
