WINE AND SAKE In the tenth issue of Gen de Art, we continue to explore the best wineries of the region

of Burgundy in France. Starting our journey from the historic wine house of Domaine Mongeard-Mugneret in Vosne-Romanée, we learn about the centrality of family

tradition in the business and the secrets behind the house’s internationally acclaimed

wines. Then, we move to Maison Joseph Drouhin, a house managing over 160 vineyards around the country, to explore the intricacies of working with a diverse portfolio of

wines and its commitment to biodynamic production. Finally, we return to Japan to speak with Jiro Nagumo, Managing Director of Hakkaisan Brewery, about the nuances of creating traditional sake.

Domaine Mongeard-Mugneret, one of the historic wineries located in Vosne-Romanée, a commune in the Côte de Nuits in Burgundy, dates back to the early 17th century when the Mongeard family first began producing their excellent wines in the region. The house itself, known under its current name Domaine Mongeard-Mugneret since 1945, currently owns over 30 hectares of vineyards, spread across 35 appellations in Burgundy.

The winemakers of the Mongeard family, spanning eight generations, have always held a deep respect for French winemaking tradition, and today produce internationally acclaimed wines from the classic Burgundy grapes – Pinot Noir and Chardonnay.

Gen de Art spoke to the head of Domaine Mongeard-Mugneret, Vincent Mongeard, about his commitment to the family heritage, the influence of the past and present on the work at the winery, as well as the secrets to producing wines to the highest standard. モンジャール・ミュニュレ。ブルゴーニュ地方コート・ド・ニュイのコミューン、ヴ ォーヌ・ロマネにある、歴史あるワイナリーのひとつであり、そのワイン造りの始ま りは 17 世紀初頭に遡ります。1945 年から現在の名前であるドメーヌ・モンジャー ル・ミュニュレとして世に知られ続け、ブルゴーニュ地方にて 35 のアペラシオンに 広がる 30 ヘクタール以上のブドウ畑を所有しています。 8 世代にわたるモンジャール家のワイン醸造家たちは、どの時代も、フランスのワイ ン造りの伝統を深く敬い続けてきました。今日では、ブルゴーニュを代表するブドウ、 ピノ・ノワールとシャルドネから、世界中で高く評価されるワインを造っています。 今回 Gen de Art は、モンジャール・ミュニュレの代表、ヴァンサン・モンジャール 氏に話を聞き、一族が築き上げてきたものへの忠誠、過去と現在がワイン造りに与え る影響、そして、最高水準のワインを造り出す秘訣について語っていただきました。

HARMONY & HERITAGE

調和と築き上げてきたもの

ヴァンサン・モンジャールは、父・ジャン・モンジャールと 20 年間 ともに働きワイン造りの技術の複雑さを学んだのち、1995 年にその 父からワイナリーを引き継ぎました。発酵やろ過、瓶詰めなどの方法 を伝統的なものに戻すよう父を説得したのは、実はヴァンサンでした。 「これまで築き上げてきたものを守ることに関われるというのは、心 地よさがあります。特に、このバランスが良く、素晴らしいワインを 造り出してくれるブドウ畑を所有しているということは本当にラッキ ーなことだと思います」 調和を重んじてきたワイン醸造一家なので、そういった環境の中で、 バランスを取ったり意見の同意を得ることは難しくなく、そんな家族 の一員であることはヴァンサンにとってやりやすさがありました。一 家はいつでも自ら積極的に地域の生活に入り込み、時間を共有してき たそうです。 「私たちにとっては、休日も含めて、生活やコミューンの活動すべてに 参加することが当たり前になっています。なので、継続という点では、 お互いの分野を引き継ぐことは割と容易です。また、信頼という点があ り、さらには、ドメインの維持、という点もある。だから年長者にとっ て若い人は信頼しやすいのです」と、モンジャール家が最高の結果を得 るために何世代もの間一丸となってやってきたことを語ります。

Vincent Mongeard

Vincent Mongeard took over the winery after his father, Jean Mongeard, in 1995, after two decades of working side-by-side with him and learning the intricacies of the craft. In fact, it was Vincent, who persuaded his father to return to the more traditional methods of fermentation, filtration, and bottling.

“There is something comforting in being able to take part in the conservation of the heritage, especially this extraordinary vineyard which we are so lucky to have – a particularly wellbalanced one, producing great wines”.

For Vincent, being a part of a family of winemakers that has always valued harmony is easy, as it is simple to find balance and agreement in such an environment. He recalls that the family has always actively inserted itself in the life of the community and shared these moments with each other.

“We are used to participating in all work of life and of the commune, including during the holidays. It is a part of continuity, so it’s relatively easy to take over the field after each other. On the one hand, there’s a part of the trust, on the other hand – there is this idea of the preservation of the domain, which is why it is so easy for the elder people to trust the younger ones,” – he says, explaining how the Mongeard family has always worked together to achieve the best result, generation after generation.

INTERTWINED

When Vincent speaks of the value of tradition for Domaine MongeardMugneret, he emphasises the importance of generational succession as part of the progress.

“When I speak of the Elders, it’s with a capital ‘E’. I mean it with a lot of respect because they have worked on the situation they worked with bases that were much more different than ours,” – he says.

Vincent goes on to elaborate on his idea, adding that, in the contemporary context, it is much easier to appreciate the characteristics of the terroir as it is, thanks to the availability of modern technologies that make the development of various wines possible. In the past, he says, previous generations were only able to work with the materials they had on their hands.

“Previous generations worked hard to produce the vineyard register which cannot be called into question today. It is something special, a well-founded good.”

He explains that, because of those efforts, today’s teams in the winery “work with great ease because we benefit from modern techniques with comfort”.

Despite the commitment to traditional methods, the vinery makes use of the latest technological developments in the wine world that allow bringing out the best fragrances and tastes in each bottle.

“Before, it was the grandfather’s tank, the old pump. Nowadays, it’s true that the image of the vinegrower – a man with a candle, the little tap, surrounded by the spider’s web in the cellar – doesn’t exist anymore. We have to live in the spirit of the times and, by God, it’s a good thing we’re enjoying our work in such a comfortable way,” – Vincent concludes. モンジャール・ミュニュレにとっての伝統の価値について尋ねると、ドメー ヌ発展の一環として世代継承が重要であるとヴァンサンは言います。 「年長者 (Elders) のことを話すとき、私は頭文字を大文字の "E" で書いて います。私たちの時代とはまったく異なる環境で仕事をしてきた彼らに対し 尊敬の念を表したくて、そうしています」 現代では、さまざまなワインの開発を可能にする近代的な技術のおかげで、 テロワールの特徴をありのままに評価できるようになっている一方、昔は手 元にあるものを使ってなんとかするしかなかったのだと話します。 「現代では疑問視さえされないブドウ畑の記録簿ですが、前の時代はそれを 作るためにとても苦労したようです。特別で、根拠のある良い物なのです」 こうした努力のおかげで、今日のチームは「現代の技術を快適に使え、とて も働きやすくなっている」そう。伝統的な手法を大事にしつつ、ブドウ畑で はワイン界最新の技術開発を活用し、ボトル 1 本 1 本に最高の香りと味わ いをもたらしています。 「昔は、おじいさんのタンクに、古いポンプ。ブドウ栽培者といえばロウソ クをもっていて、コックは小さく、セラーで蜘蛛の巣に囲まれていて…とい ったイメージは、今はもう存在しないのは事実です。時代に合わせて生きて いかなければなりませんが、こんなに快適に自分たちの仕事を楽しむことが できているのは素晴らしいことです」ヴァンサンはそう言います。

CONSERVATION OF HERITAGE

WINE IN THE MAKING As Vincent talks of the modern ways of winemaking in the winery, he clarifies that the family has made a lot of effort to ensure the heritage of the previous generations is preserved to the best of their ability.

“At Mongeard-Mugneret, I have always been fascinated by stone, especially all those Burgundian stones. I am also fascinated by wood, particularly, the oak, which has resonance and texture when you press your hand against a piece of wood. You can even feel a little bit of this mood in a certain way,” – he says, speaking of the atmosphere in the winery and the surrounding wine region.

The materials used to make the oak barrels for ageing are found in the proximity of Domaine Mongeard-Mugneret, in the nearby forests, making the whole environment a part of the process. “I am lucky enough to be able to go through the forests, to choose the wood that will help us make the barrels. The staves are dry here, when the wood is well done, we give it to the cooper who will make the barrels”, – he explains.

At the same time, because of the careful selection of the grapes, the wines made at the house would lack “astringency, bitterness, or greenness”, as Vincent puts it. “We have wines that are made with particularly ripe grapes and therefore we have wines that are well balanced, well structured. We want to have this generosity of flavours that we find inside the bottle.” モンジャール・ミュニュレの近代的なワイン造りの手法について話が移 るとヴァンサンは、先代が築き上げてきたものをできる限りそのまま保 存するために、一家は大きな力を尽くしてきたと言います。 ドメーヌやその周辺のワイン生産地の雰囲気についてはこう語ります。 「私はいつも石、特にブルゴーニュの石に心を奪われてきました。木に も魅力を感じますね。特にオークは、木片に手を当てるだけで響きと質 感が感じられるんです」 熟成樽を作るためのオーク材は、ドメーヌの近くにある森にあります。 環境そのものをワイン造りのプロセスに取り込んでいるのです。「森に 足を運び、樽用の木材を選ぶことができるのは本当にラッキーだと思っ ています。樽材はここで乾燥させ、良い状態にしたのち、樽作り職人に 渡します」 また、ブドウを厳選しているため、モンジャール・ミュニュレのワイン には「収斂性、苦み、青臭さ」がありません。「特に完熟したブドウを 使うので、バランスがよく、うまく構成されたワインができます。ボト ルの中で感じる風味ほどの寛大さを、私たちも持ちたいものです」

BOTTLE DESIGN AS ARTISTIC REFLECTION When asked about the importance of the label design, Vincent mentioned the element of a hand that “symbolises the hand of the winegrower that produces the grapes directly”. “It is something that has stuck to us since the 1960s, when a young graphic designer from Dijon, who was a friend of the family, created this logo for us”.

“It is always this hand that produces the grapes. That makes us have this logo that we will find on the labels, and it was also very revolutionary at the beginning.”

He adds that the bottles feature the images of Bacchus – the god of wine, Noé, who is the god of the vine and wine, and Saint Vincent, the patron Saint of winegrowers. “You have to choose a saint for all the French corporations. In all trade, in France we trust a saint”, he adds, smiling.

ラベルのデザインについて尋ねると、この手は「ブドウそのものを 造っているワイン栽培者の手を象徴している」のだそう。「1960 年代に、私たち一家の友人であったディジョン出身の若手グラフィ ックデザイナーが、私たちのためにこのロゴを作ってくれ、その時 から私たちの心に残っているものです」 「ブドウを造るのはいつでもこの手です。だからこのロゴをラベル にしたのですが、当初はとても革新的でもありました」 ボトルには、ワインの神・バッカス、ブドウとワインの神・ノア、 ブドウ栽培者の守護神であるサン・ヴァンサンも描かれているそ う。「すべてのフランスの会社に対し、神を選ばなければならない んです。すべての取引において、フランスでは神を信頼するので す」と、彼は笑いながら締めくくりました。

FRÉDÉRIC DROUHIN Maison Joseph Drouhin, an established wine producer based in Burgundy, France, has been run by the Drouhin family for over 140 years. Today, the house manages over 160 different appel lat ion s across t he reg ion, w it h v ineya rds in such prestigious locations as Chablis, Côte de Nuits, Côte de Beaune and Côte Chalonnaise. The family also operates two wine estates in Oregon, USA. The company’s American wines are produced by Domaine Drouhin Oregon under the direction of the family’s fourth-generation winemaker Véronique BossDrouhin.

Frédéric Drouhin, currently ser v ing as President of the Executive Board at Maison Joseph Drouhin, speaks about the roots of the winemaking tradition at the estate, respect for family values as part of the philosophy of the house and the importance of commitment to organic production in the changing climate.

The four Drouhin siblings – Frédéric, Véronique, Philippe and Laurent – were exposed to the world of wine from an early age. “My father let me play in the Beaune cellars with my friends when I was six years old. As a result, I had a feel of the atmosphere of the cellar.

It was dark, very unique. You could play hide-and-seek, surrounded by the beautiful smells of wine maturing cask,” – Frédéric recalls.

He adds that, along with his older sister and two brothers, they represent the fourth generation in the family. For as long as he can remember, the family has instilled interest in wine in them.

“We often had family lunches, and, on these occasions, my father was picking wines from his personal cellar, some very old bottles.

One time, when I was only ten, he pulled a bottle of wine – a blend of seven grapes without telling us what it was,” – Frédéric says. “We had to guess the origin of the wine. Of course, we did not know. But it was a great exercise helping us learn about the diversity of the terroir.”

He adds that he wa s only si x years old when he had his f irst sip of wine, which set him on the path to better understanding the nuanced f lavours and developing his palate. “As children, we are honest, we don’t lie. If the wine is good, we will tell it is good, very accurately. We all have a good palate, but it needs to be trained regularly. So, if you start young, you train your palate for a longer time.”

フレデリック、ヴェロニク、フィリップ、ローランの 4 人のドル ーアン兄弟は、幼い頃からワインに触れてきました。フレデリッ クは当時をこう振り返ります。「父は僕が 6 歳の時からボーヌの セラーで友だちと遊ばせてくれたので、おかげでセラーという空 間の感覚を知ることができました。暗くて、とても独特で。ワイ ンが熟成する樽の素晴らしい香りの中で、かくれんぼをしたこと もありました」 姉と 2 人の兄とともに、4 代目として一家を代表するフレデリッ ク。物心ついたときから家族は 4 兄弟にワインへの興味を徐々に 教え込んできました。 「家族で一緒に昼食をとるとき、父はよく自分のセラーから古い

ワインを出していました。私がまだ 10 歳だったある日、父は 1 本のボトルを取り出しました。7 つのブドウをブレンドしたワイ ンでしたが、そのブドウが何なのか言わずに。そして私たちは、 そのワインの原産地を当てなければいけませんでした。もちろ ん、当時の私たちには当てられなかったけど。でもそれが、テロ ワールの多様性を学ぶのにいい練習になりましたね」 初めてワインを口にしたのはわずか 6 歳のときだそう。そこから、 微妙な味わいの差を理解したり、味覚を発達させていく道を進ん でいったそうです。「子どもは正直で嘘をつきません。おいしい ワインなら、素直においしいと言います。人は皆、良い味覚を持 っていますが定期的に訓練する必要があり、若いうちに始めれば それだけ長い間、味覚を鍛えることができるのです」

Commitment to Organic Production Maison Joseph Drouhin is known for its long-term focus on organic and biodynamic methods of production. Frédéric Drouhin explains that organic winemaking used to be the norm for his grandfather who founded the estate in 1921 but was later replaced by the use of chemicals to protect the vineyards, as recommended by various engineers to his father.

“When you walk in the vineyards, you see life. If you dig a hole in the ground, you find worms, you see some insects, you see wildlife. We believe, if the vineyard is healthy, the grapes would have better taste – and the wines will be better too.”

According to Frédéric, the decision to go back to organic

production was made back in 1988 but the commitment was taken even further than before: “When you go organic, you still use some copper to control mildew infection in the vines.

So, because we wanted to be 100 percent consistent, we decided to move from organic to biodynamic.”

In his view, the focus on organic and biodynamic production is becoming more widespread in Burgundy, which supports the wine industry in the face of increasing problems linked to climate change.

“In Burgundy, we see a trend of many winemakers moving to organic culture. At Drouhin, we started 30 years ago, and we have a lot of experience, which we want to share,” – he explains.

有機栽培への 取り組み オーガニック農法やビオディナミ農法に長期的な目線で取 り組んでいることでも知られるジョゼフ・ドルーアン。 1921 年にメゾンを設立した祖父の時代にはオーガニック 農法が主流でしたが、その後さまざまな技術者がブドウ畑 を保護するための農薬をフレデリックの父に勧めたため、 農薬を使用するようになったそうです。 「ブドウ畑を歩くといのちを見つけることができます。地面 に穴を掘ればミミズや昆虫や、野生の動物がいたりしますよ ね。ワイン畑が健康であれば、ブドウの味もより良くなり、 そしてワインも美味しくなると私たちは信じています」 1988 年、オーガニック農法に戻すことを決めましたが、 そのこだわりは農薬を使う前よりもさらに大きくなってい きました。「オーガニックにしても、ブドウの木に発生す るうどんこ病やべと病を抑えるために結局銅を使用しなけ ればなりません。だから 100％筋を通すために、オーガニ ックからビオディナミに移行することにしたのです」 ブルゴーニュ地方ではオーガニックやビオディナミ農法が 普及しはじめており、この動きは、気候変動に関する問題 が深刻化するワイン業界を支えている、と彼は見ています。 「ブルゴーニュの多くのワインメーカーがオーガニック栽 培に移行している流れがあります。私たちは 30 年の経験 を積んでいるので、その経験を共有していきたいですね」 Gen de Art January 2023

In 2021, Frédéric Drouhin became president of the Bourgogne Wine Board (BIVB) – a trade association, designed to bring together the region’s wine estates, negociants and cooperative cellars. Commenting on his recent appointment, Frédéric mentions that his ultimate mission in this position is not only to promote the wines of Burgundy, but also to “find ways to research the existing issues in the vineyards today”.

“For example, there is the issue of global warming. The vineyards of Pinot Noir and Chardonnay we have been planting so far – are they suitable for the weather we will have 50 years from now? We’re not sure,” – he explains. “As president, I have launched research initiatives to look into that. As a result, we partnered with the Champagne Wine Board (CVB) to research the strength of Pinot Noir and Chardonnay on Woodstock.”

For Frédéric, the positive aspect of these initiatives is the process of communication that takes place between winemakers of Burgundy. “There are more connections between people, they talk and share experiences. I believe this is a very good trend – working together to solve the issues we have.”

When asked about a possible solution to the threat posed by global warming, he emphasises there are both short-term and long-term solutions being developed by exerts.

“In the short term, you can change the way you manage the canopy of your vineyards. We can find ways to protect them from frost in spring,” – he says, adding: “In the long-term, we are working on new varieties of Pinot Noir and Chardonnay.”

Frédéric goes on to say that there are over 460 types of Pinot Noir and around 300 of Chardonnay grapes being grown in Burgundy today. “We believe that, among this population of Pinot Noir and Chardonnay, some types are more adaptable to whatever is coming in terms of climate.”

He concludes by saying that the process of experimental cultivation of these varieties could take years, as the first crop takes at least four years since the grape is planted, and several more years are needed to understand how the plant behaves under different weather conditions. Nevertheless, if these experiments are successful, they promise a great future for the wine industry in France, even in the context of the rapidly changing climate.

フレデリックは一昨年、ブルゴーニュワイン委員会（BIVB。ブルゴ ーニュ地方のワインエステート、ネゴシアン、協同組合を取りまとめ る事業者団体）の会長に就任。ブルゴーニュのワインを広めるだけで なく、「ブドウ畑が今日抱えている問題を研究する方法を見つける」 ことが、会長としての使命だと話します。 「例えば、地球温暖化。私たちがこれまで育ててきたピノ・ノワール やシャルドネの畑は、50 年後の気候でもやっていけるのでしょうか？ 確信は持てないですよね。なので会長として、それを調べるための研 究構想を立ち上げました。その結果、シャンパーニュ委員会（CVB） と提携し、ウッドストックにてピノ・ノワールとシャルドネの強さを 研究することになりました」 フレデリックにとっても、こうした取り組みを率先して行うことが、 ブルゴーニュのワインメーカー同士がコミュニケーションをとって いくことにつながり、プラスになります。「人と人とのつながりが 強くなり、話をしたり経験をシェアしたりするのはとてもいい流れ ですよね」

また、地球温暖化がもたらす影響をどう解決していくかについて尋ね ると、専門家が考えた短期的な解決策と長期的な解決策の 2 つがある そうです。 「短期的には、キャノピーマネージメントの方法を変えることです。 春にブドウ畑を霜から守る方法を見つける、など。長期的な目線では、 現在、ピノ・ノワールとシャルドネの新しい品種に取り組んでいます」 現在、ブルゴーニュでは 460 種以上のピノ・ノワール、約 300 種の シャルドネが栽培されているそうです。「これだけあるピノ・ノワー ルとシャルドネの中に、気候がどうなろうとも適応しやすい品種があ ると考えています」 この品種の実験栽培は何年もかかるそう。最初の収穫はブドウを植え てから少なくとも 4 年かかり、その後、異なる気象条件のもとでブド ウがどう反応するかを理解するのにさらに数年かかるからです。しか しこの実験が成功すれば、この急速な気候変動の中でも、フランスの ワイン業界には素晴らしい未来が待っているでしょう。 Gen de Art January 2023

Hakkaisan Brewery, based in Minamiuonuma, Niigata Prefecture, has a diverse business that ranges from producing high-quality Japanese sake, known for their lightness and depth, to manufacturing other kinds of liquors such as shochu, “Rydeen Beer,” and amazake (sweet sake), as well as the sale of fermented foods and the management of restaurants. We spoke to Jiro Nagumo, the third generation leader and Managing Director of the company who has dedicated himself to expanding the business, on his approach and commitment as a leader to realise the philosophy of the Hakkaisan Brewery.

父から多大な影響を受けた

経営者としての姿勢

Nagumo’s Approach as a Manager Nagumo was born in Niigata Prefecture in 1959. After graduating from the Brewing department at Junior College of Tokyo University of Agriculture in 1980, he worked as a trainee at the Niigata Brewing Research Centre, then joined Hakkaisan Brewery in 1983, becoming its Managing Director in 1997. By expanding the company’s business range across variety of projects, he was able to stabilise the company at a time when it is difficult for sake breweries to rely on sake production alone. Hakkaisan is now celebrating is 100th anniversary. Nagumo, who has demonstrated his management prowess at Hakkaisan, calls himself a “producer.”

1959 年新潟県生まれ。1980 年に東京農業大学短期大学醸造科を卒業後、新潟県醸造試 験場に研修生として勤務。1983 年に八海醸造に入社し、1997 年に同社代表取締役に就 任。さまざまな事業を取り入れ、日本酒の製造だけでは不安定になりがちな業績を安定さ せ、創立 100 周年を迎えた八海醸造で経営手腕を発揮する南雲さんは、自身の立場を「プ ロデューサー」だと表現します。

“Since I was a child, the sake brewery was a familiar presence for me,” says Nagumo. “I used to pop by there, and they’d give me some ‘hineri-mochi’ (kneaded rice cake) that they made to check the condition of the steamed rice, so the sake brewery was a fun place for me. But it wasn’t as though I felt a special interest in sake. I only had a vague idea that I would become the successor one day. It was at the Brewing Research Centre that I found my own path in sake brewing.”

At the Research Centre, where Nagumo learned about brewing techniques, he discovered that he was more intrigued by the process of putting systems in place to achieve the target quality: fostering human resources, securing raw materials, and investing in equipment.

This experience was what convinced him to take up the sake brewing business. He says his current approach to management was heavily influenced by his father, his predecessor.

“My father wasn’t directly involved in brewing either,” Nagumo explains. “He worked closely with the production manager, who was like a partner to him, giving him a clear idea of exactly what kind of sake and quality they were aiming for, and left the brewing part up to him. The production manager had the skills to make it a reality. I believe that my father, who thought outside the box and took various initiatives to develop the company, must have been well aware of his position as the executive in charge of managing the business.”

Nagumo learned much about the standpoint and approach of a business manager by observing the diligent work of his father and the highly capable brewers. Working within the organisation built up by his predecessors, Nagumo has inherited the management policy based on his father’s philosophy.

酒を造る技術を学ぶ醸造試験場で、南雲さんは醸造の技術ではな く人材育成や原料の確保、設備投資など、目標の品質を達成させ るための仕組み作りに興味をそそられることに気付いたのだとか。 こうして本格的に酒造りに取り組もうと決心した南雲さんは、現 在の自分の経営者としてのあり方について先代の父親に多大な影 響を受けていると言います。 「私の父も直接、酒造りには手を出していませんでした。相棒の ような存在だった製造部長に、目指す酒と品質について明確に伝 え、酒造りに関しては任せていました。製造部長もそれを実現で きる技量を持った人でした。会社を発展させるために自由な発想 でさまざまな取り組みを行なった父は、経営を担う管理責任者と しての自分の立場をよく心得ていたのでしょう」 父親と優秀な造り手たちが仕事に勤しむ背中を見て経営者として の姿勢を学んだ南雲さん。先代たちが育み、築いた組織の中で、 父の理念をベースにした経営方針を継承しています。

In October 2014, Hakkaisan Brewery renovated their Kowa-gura brewery, which was originally built when the company was founded. At this brewery, which produces top-quality daiginjo (highly refined sake), seasoned brewers face the challenge of brewing sake while training the next generation of brewers. Nagumo explains how vital these initiatives are.

“The most important thing in sake brewing is the processing technique.

In order to achieve the quality of sake we strive for, we need to build an organisation that can realise our ideal sake brewing. At Kowa-gura, the brewers hone their skills by putting in all their effort to sake brewing, evolving our processing technique as well as training young brewers.”

Hakkaisan’s aim is “to make high quality sake because we drink sake every day.” In order to achieve this, they make no compromises in their sake brewing, and their organisation grows through this commitment to quality.

Nagumo’s resolve has strengthened the sense of dedication that runs through the brewers of Hakkaisan.

“To produce is to persuade,” Nagumo declares in a friendly yet serious tone. “My role is to convey our ideals and goals to the brewers and rope them in, and sett things in motion.”

“In order to materialise what we want to make, the leader who comes up with the idea must be excited about the goals they envision. It ’s crucial for the leader to imagine just how amazing it would be to be able to make sake like that, and really dive into the work. In some ways, it’s like falling in love. You can’t stop thinking about this person from the moment you wake up to when you fall asleep, and that person is all you can think about.”

“I tend to plough on to realise what I want to do, so I think it’s tough work for my employees to put up with me,” Nagumo says with a wry grin. Nevertheless, the persuasive passion of the leader that can bring ever yone t o ge t her i s i mp or t a nt . “ The le a der ’s enthusiasm will persuade the surrounding people, and it enables the whole team to share one vision and approach the project with the same level of commitment.”

ENTHUSIASM Moves the Team

His employees are aware that when Nagumo makes a move, something more is going to happen. It is an understanding that has “naturally spread throughout Hakkaisan Brewery,” he says.

The expansion of the company across a wide range of businesses was made possible because of the strength of the organisation that had the ability to implement them. While he is modest, saying “All I did is come up with the idea,” he also reveals his confidence in the relationship of trust shared within his organisation.

Nagumo’s goal for the future is to expand overseas.

He says, “I want to put a system in place so that we are prepared for when the inbound demand recovers, to make the sources for tourism we can offer even more attractive. We also have high expectations for ‘Brooklyn Kura,’ the first local sake maker in New York, with whom we entered into a business and capital tie-up in 2021. Besides that, we will also focus on disseminating information more widely.”

“I want us to become an organisation that dreams of a bigger future: to evolve in a way that never sits satisfied with the status quo and always has hope for the future,” Nagumo continues, his positive words captivating the people around him.

“Whatever the industry, the people who will play a central role in the future must make choices that looks ahead, far beyond short-term profits. They have to seek out the possibilities that are linked to the businesses they are running now.”

Hakkaisan Brewery is committed to making sake that leads to a future in which sake will be a familiar companion in people’s daily lives. Nagumo, who is at the heart of this endeavour, will always be up for a challenge. He remains firm in his stance to turn possibilities into reality.

「プロデュースとは、説得である」と断言する南雲さん。気 さくに語りながらも、真摯な語り口で「造り手に理想や目標 を伝えて巻き込み、仕掛けていくことが自身の役割」と続け ます。 「造りたいものを形にしていくためには、まず提案するリー ダーが、イメージする目標に対して、興奮していなければい けません。こんな酒を造れたらどんなにいいだろうと想像し て、没頭するように仕事に向き合う姿勢はとても大切です。 それは人を好きになることと似ているかもしれません。朝か ら晩までその人のことを考えていて、その人のことばかりが 頭の中にあるようなことなのです」 「どうしても自分のやりたいことを実行してしまう気質なの で、付き合う社員たちも大変だと思う」と苦笑いをしながら も、求心力となるリーダーの熱は「周囲を説得し、チーム全 体が志を共有して同じ温度感で向き合うために必要」なのだ と、話してくれました。

そんな社員の中には、南雲さんが動き出すとより一層「何か 起こりそう」な空気が共有されていて、それは「無意識のう ちに、八海醸造に浸透しているもの」だと言います。 幅広い事業展開が実現できたのも、実行できる組織力があっ たからこそなのだとか。「私は発想しただけ」と謙遜しなが らも、組織で共有されている信頼関係に自信を覗かせます。 そんな南雲さんが、先々を見据えて目指すのは海外展開。 「インバウンド需要が回復したときに、私たちが提供できる 観光資源に対して、より魅力を感じてもらえるように体制を 整えていきたいですね。また、2021 年に業務資本提携した 米国ニューヨーク州初のローカル SAKE メーカー『ブルッ クリン・クラ』への期待度は高く、情報発信にも力を入れて いこうと考えています」 「発展した将来を夢見る組織になってほしい。現状に満足せ ず、将来に希望を持てるものに進化させていきたい」と、ポ ジティブな言葉で場を魅了する南雲さん。 「どのような業界にしろ、これから中心になって盛り上げて いく人たちは、目先の利益ではなく将来を見据えた選択をし ていかなければいけません。今、行なっている事業に結びつ けて、可能性を見出していかなければならないのです」 食卓を囲む人の日常と共にある日本酒の製造を叶えるため に、真摯に目の前の酒造りに取り組む八海醸造。その中心に いる南雲さんは、挑戦の手を止めず、ひたむきに可能性を実 践に移すスタンスを貫いています。 Gen de Art January 2023

Martial Raysse, an internationally renowned figure in the world of art, began his long and eventful career in France, the country of his birth, where he stayed and worked throughout his life. Despite his long-term disregard for commercial contemporary art, in 2011, Raysse became the most expensive French living artist with his piece “Last Year in Capri” sold for over $6.5 million. Today, the artist is known as one of the

founders of the group Nouveaux Réalistes (New Realists) established in 1960, compared by many to the American Pop Art movement of the 1950s.

1960 年に結成された「ヌーヴォー・レアリスム（フランス語でニュー ・リアリストの意）」は、1950 年代のアメリカのポップ・アートと比 較されることも多くある芸術グループですが、レイスはその創設者の 一人としても知られています。

商売目的の現代美術には長く関心を示していなかったにも関わらず、 2011 年、作品「ラストイヤー・イン・カプリ」が約 650 万ドルで落 札され、存命のフランス人芸術家として最高の落札額となりました。

Gen de Art は今回、マルシャル・レイス本人と対談し、自身の芸術家 人生において視覚芸術が意味するもの、古典芸術に対する想い、そし て芸術史における彼自身の位置づけについて話を伺いました。

Gen de Art conversed with Martial Raysse about the meaning of the visual forms of art in his career, his views of classical art, and the place of the artist in history.

Despite being known for his visual pieces, including vivid artworks, innovative installations, and mesmerising sculptures, Raysse mentions that his preferred art form is, in fact, a verbal one. Born into the family of a ceramicist, as early as at the age of twelve the young artist started the path to his creative exploration by writing poetry – a genre that he keeps coming back to throughout the years.

“I am, above all, a poet. I write

However, poetry has not always satisfied Raysse’s longing for expression and, after discovering the obstacles in the way of transmitting meanings, he turned to painting.

For him, then, “there is a physical relationship to language that is lost in translation”, where painting comes into play as an art form transcending the cultural barriers set by language.

“I realized at a very young age that, for example, if I say the words ‘apple’ or ‘brioche’ in a poem in French, someone from a different country, for example, a Japanese person, will most likely be able to find a translation of these words. However,

“So, I deliberately chose to do painting because if I paint an apple, a Japanese person will see that I am painting an apple, which is exactly what I want to say in my art,” – Raysse concludes.

しかし、詩はいつでもレイスの表現 欲を満たしてくれるものではあり ませんでした。意味を伝えることの 難しさに気付いた彼は、そののち、 絵画に方向転換することとなりま す。 「例えば、私が詩の中でフランス 語で 『リンゴ』や『ブリオッシュ』 と言ったとしても、他の国の人、例 えば日本の人は、日本語でその訳語 を見つけることができるでしょう。 ですが訳語になってしまった途端、

彼にとってそこには、翻訳で失われ てしまう言語とのつながりが現実 的にありました。そこで、言語で起 こる文化の壁を超えた芸術のかた ちとして登場するのが、絵画です。

“I became a painter even though I still write a lot of poems,” – says Raysse, reflecting on his career.

「私がリンゴを描けば、日本人も、 私が描いているリンゴを見る。そ れこそまさに私が芸術を通じて伝 えたいことでした。だから私は、 絵を描いていくことを選びました」

To Raysse, the ideas of mastery and excellence are central to his work. When asked about what excellence means to him, the artist responds, saying that it is about “doing your best and doing everything you can to do well”.

He goes on to say that, though there is a notion of mastery inherent to almost every profession, when it comes to visual art and painting, in particular, “there is a long tradition of excellence” that demands a certain standard of work delivered by artists and sets certain rules to be followed.

“That is why painting is very open. You can work with all your heart to do well, and, at the same time, you learn the lessons from the masters of the past on the path to excellence. In the end, painting is always a lesson in humility.”

Raysse clarifies that “in painting, there are specific rules that people have 39

tried to apply and there are people who have applied them in a fairer and more wonderful way than others”.

As one of the founders of the New Realists movement, Raysse has long been considered an important part of the historic moment for art. He was often seen as a “Pop” artist who transformed the artistic thought of the time by using art as a series of political statements. In the 1960s, then, he experimented with plastic as a primary material for his creations to reimagine and reflect on the patterns of consumerism in society.

Later, Raysse once again revolutionized the art world by introducing his expressive neon art works, representing a concentration of colour and light.

It was arguably these works that brought the artist his fame and recognition in the contemporary art scene.

ニューリアリズムの創設者の一人として、芸術史における重要 な役割を担ってきた人物とされるレイス。政治的主張のために 芸術を使うことで当時の芸術思想を変えた「ポップ」アーティ ストと称されることもありました。1960 年代には、社会にお ける消費主義を考え直し非難する目的で、プラスチックを主な 素材とした創作活動も実験的に行いました。

「だから絵画はとても開かれた道なのです。うまくやるには思 い切り心をこめてやればいいし、卓越への道を歩む途中で、過 去の巨匠たちから教訓を学ぶこともある。つまり、絵画は常に 謙虚さを学ぶことなのです」

Martial Raysse PLACE OF ART IN HISTORY

Reluctant to speak of his upcoming projects, the artist says that, to him, his works in progress are “like birds – you talk about them, and they fly away”.

Instead, Raysse shares his thoughts regarding the power of art in the history of the 20th century, saying that, in uncertain times at the beginning of the century, art was a way “to find the new”. While the search for the innovative seems to continue today, the artist makes a distinction between something he calls the “real art history” and “the history of commerce and the stock market”.

To Raysse, the great painters of the 20th century are not someone like the post-Impressionist artist Paul Cézanne, but creators like German Realist Adolph Menzel, who is thought to have anticipated the arrival of Impressionism in the 19th century, or names like Félix Vallotton, Edward Hopper, and Lucian Freud.

Indeed, a true turn in Raysse’s work took place in the late 1970s, as the artist, frustrated with the increasingly commercialised environment in the art scene, chose to follow in the footsteps of the great master painters mentioned above.

Raysse calls such an approach the “Royal Road”, the path to excellence, the real history of painting, which is why he decided to leave the New Realism to focus on figurative painting – a path that he has followed since the 1980s till today.

Even though the world knows him for his artistic creations of the 1960s, it is his more recent works that truly represent his artistic mastery and search for Excellence.

The Royal College of Art (RCA) has long earned a reputation as an internationally acclaimed college of art and design specialising in postgraduate education. Dr. Paul Thompson was appointed Vice Chancellor of the institution in 2009 – a nd si nce t hen he h a s b e en work i n g t o elevat e t he programs offered by the college to a whole new level. He has transformed the RCA’s academic vision, introducing faculty members with expertise in STEM subjects, such as computer science and robotics. Thanks to Dr. Thompson, new programs in Environmental Architecture and City Design have been added to the School of Architecture’s curriculum at the RCA.

In his conversation with Gen de Art, the RCA Vice Chancellor discussed the institution’s strengths in today’s increasingly competitive art world, emerging trends in arts education, as well as the future role of technology in various cultural practices.

T H E A RT I S T I C CONTRIBUTION AT THE RCA Speaking of the importance of the RCA in the contemporary academic study of art, Thompson says: “I think we are different in the sense that we are postgraduate-only”.

He adds that, because the college focuses exclusively on students enrolled in Master’s and PhD programs, the leadership is enabled to stay “much more concentrated on our pool of students”.

“We are a postgraduate art and design college, and we are the largest concentration of artists and designers at postgraduate level in the world.”

He goes on to say that RCA prides itself on its “pioneering spirit, very much in the vanguard of new thinking, new methodologies, new approaches to art and design”.

Dr. Thompson adds that the college is distinguished by its focus on academic research and innovation. “We expect our students to be leading the field,” – he says, adding: “It shouldn’t be us telling them how it should be. It should be them really leading with their own creativity, their own insights and their own original thinking.”

He adds that another important issue in art and design is climate change. “There is a pretty dystopian view of the future and what it might look like. And I think dealing with climate change is where the focus is for a lot of our students.”

Dr. Thompson says a lot of interest in the art world also focuses on the potential of rapidly evolving technology. This is also a key area of research at the RCA, as the institution encourages students to explore new points of intersection between art and science.

“What we are interested in here is trying to bring in the traditional disciplines that we have always known – ceramics, glass and metalmaking, fine arts and sculpture. We cherish the old, but we also want to start looking at the new frontiers where art and design meet science and technology.”

Thompson says that technology, which increasingly impacts so many aspects of contemporary life, presents a unique area of interest for art researchers: “We are already looking at computer science and design, AI and design, robotics and design, data science and design. These are all areas of tremendous interest for future academic programs.”

For him, new technolog ies can increasingly be used in the creation of more traditional and familiar art forms. Technology is facilitating the development of new materials, even in the ancient practices of textiles, weaving, architectural construction and other disciplines, opening up a world of possibilities for art students and professionals around the world.

at the RCA

RCA st udent , ar t ist and eng ineer A LYSE STONE, who works in the genre of Afrofuturism, is currently completing her Master’s degree in Contemporary Art Practice. The artist strives to combine the principles of contemporary art, technological development and archival work in her large-scale mixed media projects.

Stone is the second Black student in the history of the RCA to receive a Global Talent Visa .

Alyse decided to attend the institution to complete her ambitious project, which has now been three years in the making. According to the artist, her “moonshot” project represents “a ten-year plan to correct the historical record on the history of Black Americans” u s i n g t he l a t e s t t e ch nolo g ie s s uch a s a r t i f ic i a l intelligence. For the project, Stone has developed a new methodology that includes auto-science-fiction writing, archival research and storytelling. The artist is expected to present the first chapter of her project at the RCA's final exhibition in the summer of 2023.

Speaking of her experience at the RCA, Stone says: “The network at the RCA is like being a part of a global family. The resources, opportunities, and connections you make during your time at the institution and then after graduation are unparalleled. It’s reassuring to be integrated into an ecosystem recognized across the arts and design community.”

Another student at the RCA, CHERYL WONG, is soon to complete her Ma ster ’s deg ree in A rchitect ure, graduating in the summer of 2023.

Her large-scale project is inspired by the disappearing sheet metal craft that originated in Hong Kong. According to her, k nowledge of t he met a l cra f t is becomin g increasingly rare in Hong Kong due to the lack of proper documentation. As a result, the artform is preserved mainly through oral exchanges in apprenticeships that last for decades. The artist says that her project, thus, “investigates the decline of metal craftsmanship in the ever-gentrifying city of Hong Kong”.

“Studying at the RCA has opened up the medium of my work to much more than the conventional architectural outcomes you see in other schools. For instance, this has also bled into animation and film which has been so refreshing,” – Cheryl describes her experience at the RCA. 49

Artist David Stanley Hewett, known globally for his large, powerful paintings in gold leaf, focuses on themes of bravery, courage and loyalty and is inspired by events in Japanese martial history.

Hewett works in many genres, from ceramics, kimono design to gold leaf painting. Born in the United States to a family of artists, Hewett grew up surrounded by various forms of art, giving him a love of the creative arts from an early age.

“My mother is an artist, a printmaker. I grew up painting in her studio. I have two older brothers – one is a jazz singer and the other one is a sculptor and architect. The whole family are artists, so it’s kind of a family business,” – he says, smiling.

When Hewett was only four years old, he started learning the art of ceramics in his mother’s studio.

He took his passion for this craft further and continued to study ceramics in both school and university. Later in life, Hewett began to explore different forms of art, eventually coming to be introduced to his signature gold leaf technique that brought him international recognition.

In our conversation with David Stanley Hewett, we found out about the artist’s sources of inspiration, his fascination with the Japanese culture, as well as some of his upcoming projects.

The artist recalls that it was his exposure to Japanese ceramics during university years that led him to Japan. “In the world of ceramics, a lot of artists end up in China, Korea, or Japan. Personally, I got attracted to a particular type of pottery from Northern Kyushu called Takatoriyaki (stoneware ceramic art made in Fukuoka Prefecture), of the Korean families brought to Japan in the 1500s,” – Hewett explains.

According to Hewett, Takatoriyaki ceramics are famous for being “symmetrical, thin and highly tuned”, which was something that impressed the young artist from the beginning. Seeing those delicate works, he made the decision to continue learning the craft of ceramics in Japan, first – by going to Hokkaido University as an exchange student. Soon after that, Hewett came back to the country for four more years to learn the art of Japanese pottery – and stayed.

In 1992, Hewett, who already had his own small studio in Tokyo, started arranging his first shows.

His first one was dedicated to figurative human drawings on Washi paper (traditional Japanese paper from local fibre, pressed by hand). After submitting his work for a competition, the artist received his first major commission: 108 paintings for the Imperial Hotel in Tokyo.

金箔を使った巨大で力強い絵で世界にその名を知られるアー ティスト、デビット・スタンリー・ヒューエット。日本の武道 の歩みからインスピレーションを受け、勇敢さ、勇気、忠誠心 をテーマにした作品を生み出してきました。陶芸から着物のデ ザイン、金箔画まで、様々なジャンルにおいて創作活動を続け ています。アメリカの芸術一家に産まれ、様々なかたちのアー トに囲まれて育ったことが、幼いうちから彼の中に創造性あふ れるアートへの愛を育みました。 「私の母は版画家で、私は母のスタジオでいつも絵を描いて 育ちました。また、兄が 2 人いて、1 人はジャズ歌手、もう 1 人は彫刻と建築をやっています。家族全員がアーティストなの で、家業のようなものです」と、ヒューエットは笑いながら話 します。 そんな彼が母のアトリエで陶芸を学びはじめたのはわずか 4 歳の時。そこから陶芸への情熱はさらに高まり、大学まで陶芸 を学び続けました。その後、様々なかたちのアートを探求しは じめ、ついに、現在では彼の特徴とも言える金箔を使った技法 に出会い、やがて国際的に知られる芸術家となりました。 今回の対談では、インスピレーションの源や日本文化への想 い、そして今後のプロジェクトについて話を伺いました。

大学時代に日本の陶芸に触れたことが、日本へ行くきっかけに なったと振り返るヒューエット。「陶芸の世界では、中国や韓 国、日本へ行き着く芸術家が多いです。私の場合は、北九州の 高取焼（福岡県で作られる炻器製の陶器）という、1500 年代 に朝鮮から日本にもたらされた焼き物に惹かれました」 高取焼の陶磁器はヒューレット曰く「左右対称で、薄く、きめ 細かい」ことで有名で、彼自身も初めからその特徴に感銘を受 けたそう。その繊細な作品を見て彼は、陶芸の習得を日本で続 けることを決意し、北海道大学に交換留学生として入学。その 後、日本の焼き物を学ぶために再び日本に 4 年間滞在し、そ のまま日本に残りました。 1992 年、すでに東京に小さなスタジオを持っていた彼は、初 めての展示会を開く準備を開始。和紙に人を描いた形象派の絵 画が中心の展示会でした。その後コンペに応募し、そこで彼に とって初めての大きな制作依頼、東京の帝国ホテルへの 108 枚の絵画の制作を行いました。 Gen de Art January 2023

Several years later, in 2004, Hewett visited an exhibition of Japanese screens created in the period between the 12th and 14th centuries. The visit served as yet another turning point on his artistic path.

“The screens were so old that you couldn’t even see the painting anymore, just the gold leaf and the Kofun (the white in Japanese painting made from shells) that were left on the screens. But, to me, as an abstract artist, they just appeared to be a complete work”, – he says.

Inspired by the ancient Japanese art, Hewett spent the next six months learning to make screen s si m i l a r t o t he one s he saw at t he exhibition. Because of how rare this art form

was, he recalled, there were almost no artists left who could teach him. However, he managed to f i nd a teacher f rom t he Mu sa sh i no A r t University and thus started taking lessons with one of the few experts in traditional screenmaking left in Japan.

“We made screens using techniques unchanged since the Heian period in the 10th century. We made everything ourselves. Nails were made out of bamboo, the adhesive for the pigments is called Nikawa that comes from boiling deer skin.” Hewett says, adding: “It's a really labourintensive process, very expensive and very hard to make.”

その数年後、2004 年、ヒューレットは 12 〜 14 世紀の日本の屏風の 展示会を訪れました。この展示会が、彼の芸術家としての道のもうひ とつのターミングポイントとなります。 「屏風はもう古すぎて絵が見えないほどで、金箔や胡粉（貝殻からつ くられた日本画の白色絵具）が残っているだけでした。しかしそれが 抽象画家である私には、まさに 1 つの完璧な作品に見えたのです」 日本古来の芸術にひらめきを受けたヒューエットは、展示会で見たも のと同じような屏風をつくる方法を学ぶために、その後 6 カ月の時を 費やしました。日本でも屏風づくりという芸術は珍しく、教えること のできる芸術家はほとんどいなかったそう。しかし、なんとか武蔵野 美術大学の先生を見つけ、学び始めました。 「10 世紀の平安時代から変わらない技術で屏風を作りました。全部自 分たちで。釘は竹で作られていて、顔料の接着剤には、鹿の皮を煮て 作るニカワと呼ばれるものを使います。屏風づくりはとても手間のか かる作業で、とても高価で、とにかく大変なのです」 「日本の歴史における出来事や感情を、とても少ない素材と色数で表 現することに強く興味を持ちました。」 2005 年には「武士道」シリーズを発表。日本の武道と戦争の歴史か らアイデアを得た有名な作品です。彼自身、何年もかけて空手を学び、 また、アメリカへ戻った 4 年間は海軍に従事していました。この武士 道シリーズでは、日本古来の屏風づくりと抽象画という 2 つの芸術へ の興味を組み合わせ表現しています。 武士道シリーズでもともと使われていた色はたった 3 色のみ。金沢の 金箔は日本の上品さを、黒は規律を、赤は情熱を象徴しているのだそ うです。 57

In 2005, Hewett launched his famous Bushido (a mora l code def ining samurai at t it udes, behaviour and lifest yle) series, inspired by Japanese martial art and war history. Hewett spent years learning the martial art of karate, as well as dedicated four years of his life back in the US as a United States Marine. The series allowed the artist to combine his interest in traditional screen-making and abstract art.

The Bushido series originally used only three colours. The Kanazawa gold leaf represents Japanese elegance, while black and red symbolise discipline and passion, according to Hewett.

David Stanley Hewett is known for his gold leaf artworks, currently displayed in many locations around Japan. The gold leaf is one of the key materials in the artist’s many works, featured in the Bushido series, his Japanese screens works, and numerous design collaborations.

金箔を使った作品で知られるヒューエット。金箔は、武士道シリ ーズや屏風など、多くの作品に使用されている、鍵を握る素材の ひとつです。

“I want to continue using great Japanese materials. Some artists think that they were the only ones who created what they created, but my view is that we are conduits. We’re just a kind of a river, the water flows through us. I didn’t create the gold leaf technique, it has been around for thousands of years, but I inherited the knowledge.”

「日本の素晴らしい素材を使い続けたいですね。芸術家の中に は、自分の芸術は自分だけで作ったものだと思っている人もいま す。しかし、私たち芸術家は水路のようなものだと私は思ってい ます。私たちは川で、水は私たちの中を流れていく。金箔の技法 は私がつくり出したものではなく、もう何千年も前からあるもの です。私はその知識を受け継いでいるのです」

Hewett mentions that, in the past several years, he began focusing more on large-scale works, considering them more impactful and, ultimately, “more fun”.

そう語るヒューエットですが、ここ数年は、より大規模でインパ クトがあり、そして「より楽しい」と思える作品に力を入れるよ うになったそう。

In 2021, Hewet t worked on a major project, the Kumano Shrine in Nagano, where he was commissioned to paint the ceiling of a 600-yearold Shinto shrine building. The area of the ceiling amounted to 24 square metres, requiring months of work to cover the ceiling with over 2,400 sheets of gold.

2021 年には、長野県にある熊野皇大神社にて、600 年の歴史の ある社殿の天井絵を制作するという大きなプロジェクトを依頼さ れました。天井の面積は 24㎡に及び、2,400 枚以上の金箔で天 井を覆う作業には何ヶ月も要しました。

“You can say more in a larger piece. I’ve been doing a lot of very large work lately. In September we held an exhibition in Ginza, launching my new series of paintings called ‘LIFE’. The works included in this exhibition included one piece that stretched over five meters,” – the artist says.

「大きな作品では、より多くのことを語ることができます。これ までも非常に大きな作品を多く手がけてきました。9 月に銀座で 「LIFE（生命）」という新作の絵画シリーズを発表する展示会を 開催しましたが、中には 5 メートルを超えるサイズの作品もあり ました」

In October 2022, Hewett’s large work titled ‘Selfless’ was purchased and hung in the Ritz Carlton Kyoto.

また、10 月には、大作「Selfless（無我）」が、ザ・リッツ・カ ールトン京都に展示されました。

I n t he golden lea f t ech n ique , a r t i s t s u se ex t remely t h i n 0.1-micrometre sheets of gold. The sheets are applied on various surfaces for decorative purposes. Gold leaves are made in the process known as goldbeating, in which a small piece of gold is gradually flattened to become thinner and thinner through beating.

Gold leaf production dates back to ancient Egypt, from where it spread to Europe and Asia. Gold leaf arrived in Japan from China and has ever since been produced almost exclusively in the city of Kanazawa.

Gold leaf technique 金箔を使った絵画技法

Gilding gold leaf on various surfaces is an ancient ar t that requires precision and skill. The gold leaf sheets are typically applied w it hout overlap to prevent wa ste of t he precious material. Japanese artists use bamboo sticks to pick up the leaf to reduce the build-up of static electricity and then quickly apply the sheet on the carefully prepared surface covered with a thin layer of adhesive. 金箔を使った絵画では、0.1 マイクロメートルという極めて薄い 金箔を、対象物の表面に貼り付けて装飾します。金箔は、金を 叩いて徐々に平らにし、薄くする打ち延ばしの金箔製法で作ら れます。 金箔づくりは古代エジプトにさかのぼり、そこからヨーロッパ、 アジアへと広がっていきました。中国から日本へ伝わり、それ以 来、日本国内ではほぼ金沢でのみ、つくられています。 金箔をさまざまな種類の表面に貼ることは、正確さと技術を必要 とする古代の芸術です。貴重な金箔を無駄にしないため、重なら ないように貼るのが一般的です。日本の芸術家たちは、静電気の 発生を抑えるため、竹の棒で金箔をつまみ、接着剤を薄く塗った 表面に、素早くかつ慎重に金箔を貼り付けていました。

存在の描写を追求する、 写実絵画の本質とは 1971 年、広島県福山市生まれ。現在は広島市立大学芸術学 部で油絵専攻講師を務めながら制作を行い、国内外のアー トフェアへの出展や個展を行っています。 「ずっと絵は好きでしたが、画家を目指そうと明確に思っ たことはありません。家に父が趣味で集めた画集があって、 子供の頃からそれを見て描いてはいました。今も好きだか ら続けている感じです。」 高校 2 年に進級する年の春、教師のすすめで画塾に通う ようになりました。1990 年、金沢美術工芸大学へ入学。 1996 年に金沢美術工芸大学大学院を修了すると、2 度にわ たりリアリズム絵画の本場スペインへ留学し、マドリード ・コンプルテンセ大学で学びました。 「スペインでは美術作家の卵と意見を交わしました。制作 のスタイルなど、学んだことは多かったですね。」 アントニオ・ロペスから教えを受けた原さんは、近年アー ト市場で人気のある細密描写にこだわった日本の写実絵画 には疑問を感じると言います。表面的なディテールを追う ことに固執せず、対象をそのままに大きく捉える姿勢で制 作に臨んでいます。

In Pursuit of Presence: The Essence of Realist Painting Born in 1971 in Fukuyama City in Hiroshima Prefecture, Hara works on his own paintings while teaching oil painting at the Department of Fine Arts at Hiroshima City University. He holds solo exhibitions and participates in art fairs in and outside Japan.

“I always liked to draw, but I never had a clear idea that I wanted to become a painter,” he says. “There were art books in the house that my father had collected as a hobby, though, so I used to look at them and draw from when I was little. And now, I just keep drawing because I like it.”

One spring, just as he had moved up to second year of senior high school, he started going to art classes, following his teacher’s advice.

In 1990, he entered Kanazawa College of Art. When he completed his course in their graduate school in 1996, he travelled to the centre of realist painting. He flew to Spain twice to study at the Complutense University of Madrid.

“In Spain, I exchanged ideas with emerging fine artists. I learnt so much from that experience, including styles of making art.”

In recent years, Japanese realist paintings that focus on depicting minute details have been popular in the art market. Hara, who was taught by Antonio López García, has some reservations about their approach. Instead of concentrating on depicting superficial details, his stance is to capture the essence of his subjects in a general way.

Stripped Down by the Artist’s Sensibility: The Struggle of Selection to Express Realism On his own realist art, Hara says, “I’m placed in the genre of fine arts, but it’s not that I keep painting in order to express something about myself. I paint because it’s there. That’s how I feel.”

A realist painting represents the subject just as the artist views it. According to Hara, one of the differences between realist art and photography is the texture that is unique to the medium of oil painting.

“Nowadays, you can use technology to add a painterly effect on photos. But for a digital image, its texture as an object is always flat, even though, visually, you can make them look like they have the texture of icons or paintings. In oil painting, you can adjust the textures, from dry and flaky to moist and smooth.”

To express the real presence of the subject, it’s not enough to have a mastery of technique. Hara does not simply paint things as they appear to him, but deliberates over how he expresses them.

“In painting, you have to create another space within a f lat surface,” he explains. “Take colours, for example—in a painting, it’s not always the case that using the same colour as you see in reality turns out well.”

When asked how the singular matière of his artworks comes into being, Hara answers, “I pay close attention to the colours I choose to give a sense of unity to the image.”

Another point he values while painting is simplicity. He strips things down and organises it during the creative process so that the image doesn’t feel too busy. His paintings, extracted onto the canvas through a filter of the artist’s piercing sensibility, are redolent with a sense of presence that is a world apart from works of photography.

「美術というジャンルに身を置いていますが、自分の何かを表現するために 続けているわけではありません。ただ、あるから描くという感覚です。」 目の前にある対象をありのままに捉える写実絵画。写真作品との違いのひと つに、油彩という素材が持つ質感があると言います。 「今のテクノロジーを使えば、写真に絵画のようなエフェクトをかけること もできるでしょう。ただデジタル作品は図像や画像の視覚的な質感は画面内 に反映されても、物としての質感は均一です。油彩はかさついた絵肌にも、 しっとりとした質感にも調整することができます。」 卓越した写実的に描く技術をもってしても、対象を見たままに描くだけでは 本当のリアルに到達することは難しい。多くの試行錯誤が行われています。 「絵画は、平面の中に別の空間を作らないといけません。たとえば色も、現 実と同じ色を乗せたところでうまくいくとは限りません。」 原さんの作品が持つ独特のマチエールはどのように生み出されているのかを 尋ねると、「画面に統一感を持たせるようにどの色を選び取るか、神経を使 っている」のだと言います。

描く上で重視している点はシンプルさ。うるさく感じる画面にならないよう に、制作過程で、整えていくのだそう。画家の鋭い感性のフィルターを通じ てキャンバス上に抽出された写実絵画は、写真作品とは一線を画した存在感 を放っています。

Drawing Beauty from Everyday Subjects Hara’s motifs are various things in everyday life, such as scenery, still lifes, and people. For portraits, he doesn’t use models, but people who live in the neighbourhood.

“It’s because I feel an attachment to those people I interact with in daily life. There are so many things that move me in everyday settings, so my list of things to paint keep piling up.”

The subject is always the main focus of his work. Rather than using the subject to create a painting that he wants, he explores ways of getting closer to the subject that inspired him to paint it.

“When do you feel that you’ve painted something well?” we ask.

“I’ve never felt satisfied with my work,” he says, simply.

There is no sign of compromise in his principles as an artist in his pure pursuit of painting the truth.

A Fresh Look at the Mundane

身近な対象から美を汲み取る

Beyond 2022, Hara is planning to participate in an exhibition at Arcadia Contemporary, a gallery in SoHo in New York City and, in Japan, an exhibition called “Takanawa Gathering,” held at the Grand Prince Hotel Takanawa under the sponsorship of Sogo & Seibu. Both exhibitions are known to attract numerous devotees.

原さんが描くモチーフは、景色や静物、人物など日常にあるあらゆる 事物。人物画にはモデルは使わず、近隣に住む人々を対象に選んでい ます。

On what he wants to convey through his works, Hara says, “People don’t really pay conscious attention to the familiar things around them. But when they are turned into a painting, even mundane things might be seen in a different light. If ordinary cityscapes can feel fresh and different, or if everyday scenes can become moving for the viewers, I would be happy.” Throughout this conversation, he speaks in a modest, unaffected tone.

“I don’t want my paintings to be the kind of work that forces the artist’s aims onto people. I hope my paintings leave some room for the viewer, a blank space that will draw them in when they stand in front of it. You’re welcome to think about all kinds of things.”

Through Hara’s paintings - led by their subjects, seen through a patient, observant gaze, and drawn in delicate, tender brushstrokes we can encounter wavering presences in everyday scenes. A visitor at his exhibitions are sure to be touched by such encounters.

「自分が日頃から、お世話になっているものには愛情もあるわけです から。心を動かされるものが身の回りにたくさんあって、今はペンデ ィングリストがいっぱいです。」 主役はあくまでも描く対象。自分が描きたい作品の素材に用いるので はなく、自分が描きたいと感じた存在にどのようにして近づくかを模 索していく作業なのだと言います。 「うまく描けたと思う瞬間は？」と尋ねると、「自分の仕事に満足し たことはありません。」と自然体で答える原さん。 純粋に真実を描くことを追求する、妥協のない作家の信念が垣間見え ました。

日常の風景が、違った一面を見せる 原さんは 2022 年以降に、ニューヨーク・マンハッタンのソーホー 地区にあるギャラリー Arcadia Contemporary での企画展と、国内 ではそごう西武主催で行われるプリンス高輪ホテルでの展示会「高輪 会」への出展を予定しています。どちらも多くの愛好家が足を運ぶ展 示会です。 作品から感じて欲しいことを尋ねると、「人は身近にあるものをあま り意識して見ていません。ですが作品に置き換えることで、なんの変 哲もないものでも、違う感覚で見ることができるかもしれません。い つも見ているはずの街の景色が新鮮に見えたり、感動を感じてもらえ たなら嬉しいです。」と終始、気取らない口調で語る原さん。 「画家が追求したものを押し付けるような作品ではなく、前に立つと 引き込まれるような余白のある作品を作ろうと心がけています。自由 にいろいろなことを考えてください。」 主体を対象に預け、存在と真摯に向き合い、細やかな筆づかいを通し て描かれた、日常の風景に揺らぎを感じさせる作品と出会える会場 へ、足を運んでみてはいかがでしょうか。

Artist and fifth generation Iemoto (the headmaster of a School of Ikebana) of the Ohara School of Ikebana, known as one of the three major schools of ikebana in Japan. Hiroki Ohara is committed to popularising ikebana and exploring artistic expression. We speak to him about ikebana’s unique methods of expression and how they resonate with and appeal to contemporary sensibilities.

幼少期に知った、 いける喜びが今を支える

Ohara inherited the title of Iemoto in 1995, at the age of six. He says that there was a long period of preparation before he truly became an Iemoto. He recalls this as “a period of time in which I developed a fundamental love of flowers.”

“I had a teacher who became my guardian and guided me. From primary school onwards, what I worked on with that teacher was not how to arrange f lowers or in what style, but getting to know my own sensibilities and simply falling in love with f lowers. At the time, I didn’t pay much attention to how to choose a container or how to match the f lowers to the container. Looking at it now, the work is a mess, but it’s full of fun. I think it was an important period for me.”

The art of arranging f lowers is gradually perfected by acquiring knowledge, gaining experience and developing sensitivity. The time he spent learning the joy of expression and experiencing the beauty of plants and flowers formed the core of Ohara’s skill as an ikebana artist.

1995 年に 6 歳で家元を継承した小原さん。家元として活動するまで、長い準 備期間があったのだとか。それは「根源的に花を好きになるための期間」だっ たと振り返ります。 「私の後見人となり導いてくださった先生がいました。小学生くらいから、そ の先生と一緒に行っていたのは、いけ方や流儀を学ぶのではなく、自分の感性 を知り、シンプルに花を好きになることでした。当時の私は、器の選び方や、 器に合わせた花の取り合わせなどをあまり気に留めていませんでした。今見て みれば、作品としては “ はちゃめちゃ ”。ですがいける楽しさに溢れています。 大事な期間だったと思います」 花をいける技術は、知識を得て経験を重ねながら、感性を磨くことで徐々に完 成されていく。表現する喜びを知り、植物や花の魅力に触れた時間が、小原さ んのいけ手としてのコアをつくりました。

“MORIBANA”

A Style Born Out of a Changing Way of Life

Moribana, the style which typifies the Ohara School of Ikebana, was invented by Unshin Ohara, the founder of the Ohara School.

The flat container, the ‘suiban,’ is used to express the expanse of the surface of the flower, as if the material were being served up.

Japanese ikebana was originally mainly vertical in shape, suitable for displaying in the tokonoma (an alcove in traditional Japanese buildings). However, after the end of the Edo period (1603 - 1867), Western architectural techniques began to enter the country, and as a result the traditional preference for wooden Japanese-style houses began to change.

“As Japanese peoples’ way of life changed, so did the places where flowers were displayed. Additionally, in the Meiji era (1868 - 1912), various garden plants began to enter the country from overseas, increasing the variety of flowers that could be used. On the other hand, Japan still has four seasons. In this context, moribana was born out of the consideration of how best to incorporate new floral materials and make the most of the beautiful natural scenery.”

Ohara also believes that Japan’s four seasons create a blessed environment for ikebana.

Expressing the Changing Seasons “A sen se of t he sea son s , i n wh ich we perceive ch a n ge s i n temperat ure and env ironment through the f ive senses, is a sensibility unique to the Japanese,” says Ohara.

“Japan has seasonal changes and is home to one of the world’s largest variety of plants. It is precisely because of this environment that the art of ikebana was born and still exists today.”

“The water in the suiban is also very important to ikebana,” Ohara continues. Houn Ohara, the third Iemoto, said that “Water, just like flowers, has colour.” In this respect, water is also an important element in expressing the timeline and drama of the seasons.

「盛花」は生活様式の変化と共に生まれた “ 最も小原流らしいいけばな ” とされるのが、小原流の祖・小原雲 心さんが考案した「盛花（もりばな）」。平たい器である水盤を 用いて、素材を盛るように面的な広がりを表現していきます。 日本のいけばなは、床の間に飾るために適した縦長の形の作品が 主流でした。ですが幕末以降、西洋の建築技術が入ってくるよう になり、従来の木造日本家屋から住宅のあり方が変わりました。 「生活様式が変化すれば、花を飾る場所も変わる。さらに明治時 代になると、海外からいろいろな園芸植物が入るようになり、扱 える花の種類が増えました。一方で、日本には変わらず四季があ ります。こうした中で、新しい花材を取り入れ、美しい自然の風 景を生かしていくにはどうしたら良いか、と思案して生まれたの が盛花です」 そして小原さんは、四季がある日本はいけばなを行う上で恵まれ た環境なのだと語ります。

季節の移り変わりを表現する 五感で気温や環境の変化を感じ取る「季節感」は、日本人特有の 感性だと言います。 「日本には季節の移り変わりがあり、世界有数の多種の植物が生 育する国です。そんな環境だからこそ、いけばなという芸術が誕 生し、現在も残っているのだと感じます」 さらに「水盤の中にある水も、いけばなではとても重要」だと、 小原さん。「水もまた花であり、色である」は、三世家元・小原 豊雲さんが残した言葉。季節の時間軸やドラマ性を表現するため に、水は大切な要素なのです。

AESTHETICS Using Margins to Show the Strengths of Subtractive Aesthetics

Ohara is active both in Japan and abroad. The minimalist style of expression that makes use of margins is said to be characteristic of the uniqueness of Japanese culture. Ikebana expresses the natural qualities and charm of an object by eliminating unnecessary elements and using as simple a process as possible.

For example, when dealing with flowers and trees, the branches are shown to play the leading role, which is a big difference from Western flower arrangements, in which the flowers play the leading role.

Ikebana uses branches to show the movement of beautiful lines. The process of removing unnecessary branches from a single branch draws attention to those beautiful lines, enhancing the presence of each flower by using less, rather than more.

This is also true of other aspects of Japanese culture. “In calligraphy, the blank areas in the space add to the overall expression, and in Kabuki, each gesture, action, or sound is enhanced by stopping and creating silence in-between.

Daring to create these blank spaces is a uniquely Japanese form of expression,” explains Ohara.

Connecting Cultures On 1st June 2022, an ikebana demonstration was held at the Japanese Cultural Institute in Rome, Italy, to commemorate the 80th anniversary of the establishment of diplomatic relations between Japan and the Vatican. Performances were given by Ohara, dancer and choreographer Seishiro, and costume designer Hirosumi Saito.

The performances were based on the theme of “connection,” symbolising the relationship between the two countries, and combined traditional art with contemporary dance, embodying the flexibility of the Ohara School, which embraces change in line with the times.

“Traditional culture is often perceived as something that aims to stay the same, but it endures precisely because it has changed.”

“Even the same type of plant has its own personality and no two plants are the same, so it’s a once-in-a-lifetime encounter.

I never get bored because I always make discoveries as I assess the nature of the plants I encounter each time,” says Ohara.

This style of ikebana expression, in which the artist’s own way of life is revealed by interacting with the subject, seems to overlap somewhat with the flexible and tough attitude of the Iemoto, who confronts modernity without fear of change.

余白で表現する引き算の美学 国内外で活動をする小原さん。ミニマルに余白を生かす表現 スタイルは、日本固有の文化の特徴とも言います。いけばな は無駄な要素を省き、なるべくシンプルな工程で、対象物が 持っている持ち味や魅力を表現します。 たとえば花木を扱うときに、枝を主役に見せる表現にも表れ ているといい、それは花を主役にする欧米のフラワーアレン ジメントとの大きな違いなのだとか。 「いけばなは枝で、美しい線の動きを見せます。一本の枝か ら無駄な枝を除いていく作業は、綺麗な線を引き出すための 工程です。花もたくさん使うのではなく、少なくすることで、 一輪一輪の存在感を高めていく、という考え方です」 それは他の日本文化にも通じます。「書道は余白を含めて空 間を表現していますし、歌舞伎では動きを止めたり、静寂を つくることで、次の所作や動作、音がより引き立てられてい ます。あえて余白をつくるということが、日本ならではの表 現」と言います。

文化をつなぎ結ぶ 2022 年 6 月 1 日、日本バチカン国交樹立 80 周年を記念し た、いけばなデモンストレーションがイタリアのローマ日本 文化会館で実施され、翌日の 2 日に、ローマ市内のカンチ ェレリア宮殿で小原さん、ダンサーで振付師のセイシロウさ ん、衣装デザイナーの齋藤ヒロスミさんによるパフォーマン スが披露されました。 パフォーマンスは二つの国の関係を象徴する「結ぶ」をテー マに、伝統芸術と現代的なダンスを融合させたもので、小原 流が時代に合わせて変化を受け入れた柔軟な流派であること を体現した形になりました。 「伝統文化は、変わらないことを目指すもののように受け取 られがちですが、続いてきたのは、変わってきたからです」 「同じ種類の植物でもそれぞれに個性があり、同じ状態のも のはないので、一期一会。その都度、出会った植物の性質を 見極めていく中で、いつも発見があるので飽きないですね」 と、小原さん。対象と向き合うことで、いけ手自身の生き方 もあらわになってしまうといういけばなの表現スタイルは、 変革を恐れずに時代と対峙する、家元の柔軟でタフな姿勢と どこか重なるようです。 Gen de Art January 2023

N O B U H I S A M I YA S A K A Born in 1974, Nobuhisa Miyasaka trained for eleven years at a Japanese restaurant in Tokyo and for ten years at a Michelin three-star kaiseki (traditional multi-course) restaurant in Kyoto. He became independent at the age of 41, when he opened his own Japanese restaurant called Restaurant Miyasaka. It relaunched as Miyasaka at a new location in November 2021. We spoke to Chef Nobuhisa Miyasaka, who delights visitors with his culinary prowess, about what makes Japanese cuisine attractive and what values he keeps in mind as he develops his own restaurant.

What inf luenced Miyasaka to pursue the path of a chef in Japanese cuisine was his parents’ simple, small Japanese restaurant.

“Kyoto’s culinary industry was an unknown world to me. It took some courage to make that decision.”

“When I got home from school, I’d often find my friends eating at the restaurant,” he recalls. “Looking back now, I think that kind of environment made me happy.”

He was involved in the establishment of a kaiseki restaurant, which would go on to win three Michelin stars. With his illustrious career, it’s hard to imagine him facing any difficulties, but after bracing himself to start afresh in Kyoto, he was

“I was equipped with the fundamental techniques and knowledge, but I knew nothing about tableware. I realised that I had so much more to learn as a cook. But that was a good thing,” he says.

“I think going to Kyoto made me who I am now,” he continues. “Life is a series of choices.”

His earnest decision to learn everything about being a cook from scratch gave him a chance to observe and absorb all that he experienced in his stimulating new life in Kyoto.

“I also came into contact with the Way of Tea for the first time in Kyoto,” says Miyasaka.

It was in Kyoto that he witnessed the intimate relationship between Japanese cuisine and the Way of Tea. He began to learn the art of the tea ceremony under a teacher in the Omotesenke school.

In addition, meeting the Karatsu ware ceramicist Sakurei Okamoto had a profound inf luence on him. It resonated with his outlook on life, and the experience helped shape him into a new person.

“Each day, we live to welcome our guests. When you go to a restaurant, you’re already in high spirits on your way there, aren’t you? I’d like my guests to have that kind of experience, so I try to pay careful attention to the surroundings to create the space.”

In fact, the way Miyasaka designs his restaurant— 「また、京都で初めて茶道に出会ったんです」 宮坂さんは京都で、日本料理と茶道の密接な関係性を 目の当たりにし、表千家の先生の元で、お茶を習い始 めました。さらに、唐津焼の陶芸家である岡本作礼さ んとの出会いの影響は大きかったのだとか。宮坂さん の人生哲学にも通じるもので「新しい自分を作ってい くものになった」と振り返ります。 ちなみに、食事をする空間にも趣向を凝らす「宮坂」 85

The Meaning Behind the White Rice at the End of the Course

The only item on the menu at the restaurant Miyasaka is an “omakase” chef ’s choice course.

The white rice that comes at the end of the course is one of the highlights that visitors look forward to. The rice is carefully cooked, served fresh at just the perfect timing.

The rice that Miyasaka uses is delivered from Koka in Shiga Prefecture, harvested by a farm with which he has a contract. Passionate about quality, Miyasaka says, “This rice was grown in the wonderful environment and climate of Shiga. I want to offer it in the best possible condition.”

“The producers don’t get to see the people eating their product,” he continues. “I think of it as my job to convey the rich quality of the ingredients to my guests.”

He expands on what makes Japanese cuisine so attractive.

“There’s not so many opportunities to feel deeply moved by something in everyday life. But when it comes to Japanese cuisine, it can make you notice the season just from a single leaf that decorates the dish and appreciate its beauty.”

That’s why, for him, God is in the details—he always pays close attention to the smallest details to perfect his work.

MIYASAKA Japanese Restaurant

When asked about his aspirations for the future, Miyasaka gives a surprising answer: to experience the food culture of Europe.

“I’ve never been to Europe,” he explains. “I think that France, where the cities are brimming with historical and cultural objects, is similar to Kyoto. Just as I had a culture shock when I first moved to Kyoto, I have a feeling that I’ll have the same eye-opening experience if I visit Europe.

I’d like to explore various areas while cooking with ingredients that can only be found in Europe, like fish that aren’t available in Japan.”

With no fear of change, Miyasaka continues his work, as thoroughly and as attentively as ever. In contrast to his steadfast commitment to quality, however, the restaurant Miyasaka has a relaxed atmosphere, welcoming the guests to sit back and enjoy their meal, drinks, and the ambience.

“One time, I went to see a ceramicist in Kyoto without even making an appointment beforehand. But they welcomed me in like their own family. ‘So good to see you!’ they said. I felt that that was true hospitality.”

“I want my restaurant to be a warm place, where everyone is welcome like family,” says Miyasaka. True to his word, he is busy preparing to give his guests a hearty welcome everyday. 宮坂さんにこれから挑戦してみたいことを訊ねると、 なんとヨーロッパの食文化に触れることなのだとか。 「僕はヨーロッパに行ったことがありません。まちに歴 史的文化財が溢れるフランスは、京都に似ていると感じ ます。京都に初めて行ったときに衝撃を受けたように、 ヨーロッパに行けば、また刺激を受けることができるの ではないかと。日本にない魚や、ヨーロッパならではの 食材を料理しながら、各地を回りたいですね」 変化を恐れない宮坂さんが手がけるのは、変わらない 丁寧な仕事。そんな日本料理店では背筋を伸ばさなけ ればならないのではと気構えそうなものですが、「宮 坂」は肩肘をはらずに、リラックスして食事とお酒と しつらえを楽しめるお店です。 「京都にある陶芸家さんのところへ、突然アポも取ら ずに行ったことがあります。そこで僕は自分の家族に するような歓迎を受けました。よう来てくれたと。こ れが本当のおもてなしだと感じました」 「家族を迎えるような、あたたかい店でありたい」と 話す宮坂さんは、今日ももてなしの支度をして訪れる 人を待っています。 89

In 1976, Keigo Kimura was born as the oldest son at a sushi restaurant in Osaka Prefecture. After graduating from senior high school, he studied the art of French cuisine at a culinary school in Osaka and went on to gain experience at a Westernstyle restaurant in Tokyo. He moved to France in 2000. He worked at a Western restaurant in a small village, then transferred to La Maison des Bois. After that, he honed his skills at several first-class French restaurants and became independent in 2014. His own restaurant earned a Michelin star in only about ten months. We spoke to him about his love for gastronomy and how he lives his life of cooking.

The biggest inspiration for Kimura, now a chef at a top-class French restaurant, was his father, who had trained as a sushi chef. Since starting a small hotel business, his father taught himself French cuisine and offered Western-style meals to guests. It felt natural for Kimura to pursue the path of a chef as well. He graduated from a culinary school in Osaka (now École Tsuji Osaka) at the head of his class. After gaining experience in Tokyo for about four years, he felt the urge to go abroad and flew to France in 2000. It was there that his authentic, full-scale training in French cuisine began.

The most significant experience for Kimura during his years of training was a first-rate restaurant in Haute-Savoie called Marc Veyrat. He worked there for about four years, but it was such a strict restaurant that the staff would quit one after another.

Even so, he felt deeply excited by what he learnt in his work. “The dishes that were offered there were completely different from anything I’d seen before. I was moved by how free and liberating the art of cooking could be.”

“It was just so much fun, I couldn’t get enough of cooking. I didn’t feel at all that I was working hard and putting in a lot of effort to keep going. It’s more like I just got here before I knew it.”

Besides Marc Veyrat, Kimura also trained at other illustrious French restaurants. “By nature, I’m good at enjoying challenges—I just had fun coming all this way,” he says. His bright and gentle tone tells the story of how he has overcome many obstacles with his boundless love for cooking.

“It was just so much fun”: His Father’s Influence in His Love of Cooking 「料理が本当に楽しくて」 父の影響で抱いた料理愛 一流フレンチレストランのシェフとして働く木村圭吾さんが、そ の道を目指したきっかけは、元々鮨職人だった木村さんの父から の影響が一番強いといいます。木村さんの父がペンションを始め てからは、独学でフランス料理などの洋食を提供するようにな り、木村さんも自然と料理人を志すように。大阪の調理学校（現 在の「エコール 辻 大阪」）を首席で卒業し、東京で 4 年ほど腕 を磨いた後、世界に進出したいという想いから 2000 年に渡仏。 そこから木村さんの本格的なフレンチの修行が始まりました。 修行時代に一番大きな経験になったのは、オート・サヴォアにあ る「マルク ヴェラ」という一流レストラン。合計 4 年ほど過ご しますが、メンバーがどんどん辞めていくほど厳しい店でした。 そんな中でも「そこで提供していた料理自体が、今まで見てきた ものと全然違かったんです。料理ってこんなに自由なんだと感じ ました」と、そのお店で料理の面白さを心から感じていたそう。 「ほんとに楽しくて、料理が楽しくて。自分がとても努力して頑 張ってるというような意識は全くなくて、いつの間にかここに来 たなという感じです」 マルク ヴェラ以外にも、一流のフレンチレストランで修行を重 ね「挑戦することを楽しめる性格で、楽しくやってきただけ」と 大きな料理愛でいくつもの壁を乗り越えてきたことが木村さんの 明るく優しい話し方からも伝わってきます。

Staying True to What You Think is Good When asked about what it’s like to be a Japanese chef in a foreign country, Kimura explains that in the last decade or two, it has become basic for people to put aside notions of nationality and have the chef offer the chef ’s own cooking. At the same time, he also thinks that his Japanese self that seeps through from inside him into his cooking style is something that can’t be avoided. In those instances, he says, “I stay true to what I think is good when I taste it. That way, I can incorporate Japanese seasonings, too, without ruling them out.”

Kimura works at the frontiers of French cuisine with the simple aspiration to turn his vision into reality and create delicious French dishes. He says he doesn’t think too much about the “artistry” that is characteristic of French cuisine.

“In the culinary world today, the visual arrangement and design have become extremely important. I don’t really like the trend of so much attention getting directed at the design and the concept in the culinary world. In France, cooking is counted as one of nine arts.

What’s different about cooking from the other eight arts, I think, is the senses of taste and smell, the artistic sensibilities that’s only in cooking.” While he does appreciate the appearance of dishes, he also hopes the succulent flavours that only cooking can express will be savoured more carefully, and its value fully recognised.

「自分が食べて おいしいと思うもの」 を素直に、大切に

日本人が海外で料理を提供することに関しては、 最近の 10 〜 20 年では、「国籍がどうよりも、 そのシェフの料理を提供する」というのが基本と なっているのだとか。その反面、自分の内面から 出る料理ということで日本人としての自分が出て くることは、避けられないと明かしてくれた木村 さん。そんな時には、「自分が食べて美味しいか どうかを大切にすることで、日本の調味料もあえ て否定することなく取り入れることができる」と 考えているそうです。 美味しいフランス料理をいかに形にしていくか。 その純粋な想いを失わず、1 人のフランス料理人 として、第一線を走り続けている木村さん。フラ ンス料理特有の「芸術性」についてはあまり意識 していないのだそう。 「今、料理界で、盛り付け、デザインがものすご く重要視されていて、料理界のデザインとコンセ プトに注視されている風潮があまり好きではなく って…フランスでは、料理は９つの芸術の１つと されているんです。じゃあその他の８つと何が違 うのかってそれは『味覚・嗅覚』というのが料理 だけが持つ芸術的感覚だと思ったんです」と語る ように、見た目も大事にしながらも、料理でしか 表現できない美味しさを、大切に味わってほしい と木村さんは語っています。

Kimura received one Michelin star in Auxerre in 2015, and in Dijon, Burgundy, in 2019. One of his reasons for his move to Dijon was that he loves Burgundy wine. Moreover, he also wants to express the richness of the land that can’t be found in a large city.

Ever since he was little, Kimura would get completely absorbed in whatever he liked, to the extent that he would forget about everything else. Now, he feels the same about wine. But in his work, he takes care not to make dishes to accompany a certain wine, but instead to have a sommelier pick the wine for the dishes.

Kimura’s mind is full of cooking, but he has found another interest in management. By opening a new branch of his restaurant, he discovered the new excitement of running his own business.

“Cooking is an art that gives pleasure by stimulating a number of senses,” Kimura concludes, driven by his passion for gastronomy. “ I n t hat sen se, cook i n g i s t r u ly wonder f u l . A mon g a l l t he sensations, the one you feel when you taste something delicious is the most precious. I hope everyone might think about that when they enjoy their meal at a restaurant.”

With his profound love for cooking and his thirst for exploration, K i mu ra’s l i fe a s a F rench chef h a s been r ich w it h d iver se experiences, and he has become so skilful as to land on the Michelin guide. In speaking with Kimura, we rediscovered the wonders of enjoying delicious flavours—an experience he always aspires to share with everyone.

木村さんは、2015 年にオーセールで一つ星を、2019 年 に移転したブルゴーニュのディジョンでも一つ星を獲得し ました。移転のきっかけは、ブルゴーニュのワインが好き なことも理由の一つ。それに加え、大都市ではない土地の 豊かさを感じてほしいから、との想いもあるようです。 子供の頃から、興味があること以外は見向きもしないほど、 好きなものにとことんのめり込んでいく性格の木村さん は、ワインも大好きなのだそう。ただ、仕事としてはあく までソムリエが料理に合わせ、自身がワインに寄せること はしないという姿勢を大切にしています。 そんな料理一筋の木村さんですが、経営についても興味を 持つようになったのだそう。新しい店舗を開くことで、店 を運営する面白さにも目覚めた様子です。 最後に「料理というものは、いろんな感覚を刺激し楽しま せる芸術だと思う」と木村さん。「そういう意味で、料理 は本当に素晴らしいし、その中でとりわけ食べたときの『お いしい』という感覚がとても大切です。皆さんがレストラ ンに行かれるときはそんなことも考えながら楽しんでいた だけたらいいなと思います」と、料理への熱いメーセージ をくれました。 料理への多大なる愛と探究心で、数々の経験を積み、ミシ ュランにも載るほどの凄腕フレンチシェフへと駆け上がっ た木村圭吾さん。彼が追い求める「おいしいを楽しむこと」 の素晴らしさを、改めて知ることができました。

Zaborin is located in the Niseko-Shakotan-Otaru Kaigan Quasi-National Park. The Park is home to Mount Yotei, also known as “Ezo Fuji,” and the Niseko Volcanic Group, a mountain range with an elevation of 1,000 metres or more.

DINING Zaborin’s original “kita kaiseki” blends together the techniques of the traditional Japanese course meal with a new, imaginative flair that goes beyond it, offering the rich fruits of the northern ocean and land. The visionary behind Zaborin’s dining experience, Yoshiro Seno, returned to his birthplace, Hokkaido, after honing his skills in Tokyo and in New York. With a new appreciation of his native land and the exceptional ingredients that it has to offer, he has visited the producers of those ingredients directly and learnt about their processes. Instead of relying on produce from around the world, which can be easily obtained from anywhere these days, he applies his culinary skills and knowledge to draw out the finest flavours of the local produce, to deliver the care and dedication of the producers to the guests, and to highlight the appeal of local food.
