tâ€™s been a busy start to 2015 for CC members. Planning matters have dominated the agenda in recent months. We started the year with the Cromleybank outline proposal that will eventually see over 900 homes added to the south of the town. The initial debate has focussed on whether a bridge should be included to link the development to the town or whether a by pass should be provided to divert traffic away from the town centre. The CC concluded that these options were not mutually exclusive and that initially a bridge would be beneficial. At a later stage in the development a by pass would most likely be required if developers sought additional housing land in Ellon We also considered the latest planning application for the derelict garage site on South Road. Whilst the latest proposal for 16 flats is a slight improvement on previous proposals it still does not meet our expectations that the site should contain a development of the highest quality as it will be the gateway to the town for many years. As I write members are actively considering their response to Aberdeenshire a Councilâ€™s Local Development Plan which will govern how Ellon develops over the next few years. The key proposals are for land for out of town retail development, more industrial land, a travellers site and outline options for the 2 academy sites. We take our responsibilities on such matters very seriously and will publish

our draft response on our Facebook page. In February we met with Jamie Harrison of Police Scotland to discuss our concerns regarding speeding along the by pass. Inspector Harrison was extremely positive and has committed to increase enforcement activity on the by pass and other roads subject to regular complaints in the town. I am afraid we have to concede that Aberdeenshire Council will not make any changes to the road as the accident rate does not warrant it. Finally, last week 250 residents enjoyed the Westminster General Election hustings that we hosted at Victoria Hall. Following the success of the Referendum debate in 2014 it feels that such local well organised events bring politics to the people of Ellon. Much credit goes to the CC vice chair, Peter Mackie who led the organisation of the event and we would like to thank an ex member of the CC, Tim Canning for his calm chairmanship of the event. As we look forward to the summer months keen gardeners will want to look out for the annual Ellon Garden competition and we are already planning the 2015 Christmas lights event. There is also some interest in reinstating the annual raft race and members are making initial investigations to see if this can be a reality in 2016. News from Councillor Davidson... I have a dual role in Aberdeenshire Council. I am your Local Councillor and I Chair the Education, Leisure and Learning Committee which oversees education, libraries, community centres, museums and other cultural services and all childrenâ€™s services. This is a very busy and interesting remit. Over the last few years we have been introducing the Curriculum for Excellence into our schools. The first cohort of kids who have gone through this system are just about to take their Highers. The introduction of a new education system has not been without its problems but I am anticipating good results in all Aberdeenshire Secondary Schools this year. We have also introduced additional free childcare and free school meals for children in Primary 1-3. Next year, parents will be able to use the 600 hours of free childcare more flexibly

to better fit in with their working hours or other activities. In Ellon, I am keen to see improvements to attract more people to use the town centre. The Farmers Market will shortly return to Neil Ross Square and I will be shopping there to support local producers. I am encouraging Aberdeenshire Council to look at ways for freeing up the shop units they use in Neil Ross Square so that other businesses can move in. The shops that are there now are attractive, selling items which are quirky and different and great coffee. There have been schemes to help businesses improve their shops, many of the retailers have taken this up and the difference it makes is clear. I am delighted that the new Ellon Community Campus is opening in August and look forward to seeing it when it is complete. I have

been working to ensure that there are good transport links, by foot, pushbike and bus, to the new Campus as I have concerns about its location which I have expressed throughout the planning process. This is a community campus and is there for all members of the local community as well as educating our children. Finally, I would like to congratulate the Community Council for all the hard work that they put in to representing the town. The Christmas Lights and switch on event are always excellent and a visible display of the work of the Community Council but they do so much work that isn’t so public, such as commenting on planning applications, challenging the Council on the services provided and organising or taking part in a range of meetings and events such as the gardens competition, election hustings and the gala.

The Ellon Community Council Garden Competition will soon be here again We have been able to enjoy some lovely Spring weather with some fine warm sunshine But all in all, we have had a fairly mild winter. With the arrival of Spring, gardening is a great hobby to have. Work and maintenance carried out in your garden in the spring will help to ensure your plants have a good start to bear flowers for long summer flowering. There is nothing more satisfying as starting your plants off and seeing them reach maturity â€“ giving you a show of colour as they move towards their Summer Glory. Gardening in Ellon seems to be going from strength to strength as there were over 100 entrants for the 12 categories last year. Judgeâ€™s Choice will be a new category for 2015. The judges will choose a garden which they think should be a winner - but was not nominated. ECC encourage you to nominate your family, friends or neighbours gardens if you think they have a well kept garden and deserves recognition for the work they put in to give it a good show of colour. Nominations need to be in by end of June/ beg of July, with judging taking place mid July . ECC Garden Competition Presentation evening will be at Ellon Academy Community Campus. Pensions Rules are Changing:

What You Need to Know By Ann Haldon If you’re confused by drawdown, annuity, tax wrappers and pots, you are definitely not alone. It sometimes feels like politicians are being deliberately obtuse - why don’t they use plain English when talking about pensions so we all know where we stand on this important issue? Although other choices are available, including property or stocks and shares, saving into a private pension does offer the following tax advantages: • The government pays tax relief on your payments • You’re not taxed on the money in your pension pot (up to certain limits) • At pension age you can withdraw a percentage of your pension as a tax-free lump sum But what about the State Pension – won’t that provide the income I need in retirement? • State Pension rules are set to change from 2016 when a weekly flat rate will be introduced. These are some of the new rules, should you reach State Pension age on or after April 6th 2016: • The full pension amount will be a minimum of £148.40 per week (the actual amount to be decided upon in late 2015) • At least 10 qualifying years are needed to receive the new State Pension • The total number of qualifying years for eligibility has increased from 30 to 35

Auto enrolment Auto enrolment is new legislation that obliges employers to offer eligible employees a workplace pension. The new scheme, which was introduced in October 2012, is being rolled out to include all UK employers by February 2018. Currently, if you earn a minimum annual salary of £10,000, are aged between 22 years and the State Pension age, and work under a contract of employment in the UK, you are entitled to automatic enrolment on a workplace pension. New legislation regarding annuities Until recently, when you retired you had no other option but to use your pension fund to buy an annuity. Annuities provide you with a fixed income for life, and even though the legislation has now changed, this product may still offer the most stable income for you in retirement. The 2014 Budget saw changes to pension legislation. From 2015 you will not be forced to buy an annuity with your pension fund, but can use the money in other ways. As a general rule, people choose the ‘income drawdown’ option, an annuity, or a mixture of the two. What is income drawdown? Income drawdown is an alternative to buying an annuity. You buy stocks, shares and other investments and take a regular

income by cashing them in over time, with 25% of each ‘drawdown’ being tax-free. If you are not risk averse and you have a larger pension pot of £100,000 or more, the rewards can be greater. Income drawdown is a complicated option with high fees and charges, and it will not be right for everybody, but there is a middle-ground that offers the security of an annuity with a little more flexibility.

An investment-linked annuity There are two types of investment-linked annuity: • Unit-linked: these depend on the performance of stocks, shares and other investments • With-profits: these retain part of your return in high-performing years for use if investment performance declines Charges and fees for pension products can be high, and serve to reduce the overall value of your fund. That’s why you need the advice and guidance of a professional financial expert to cut through the jargon, clearly explain what you are buying, and tell you the true cost of the product.

Ythan Cyc Ythan Cycle Club has been the main cycling club in the Ellon area since its inception in 1987 when it was started by a core of ten local cyclists. Today the membership is a healthy 140 men, women and youths. Ythan cyclists of all ages are now competing in various events throughout Scotland, Britain and internationally. A large percentage of members also enjoy the slightly less energetic social side of cycling at sportives at home and abroad. A huge area of Ythan’s success has been its youth section - Ythan QL (Quines and Loons). Youths aged 6-16 can regularly be seen taking part in sessions at Ellon Community Centre car park, Auchterellon School or the old railway line. This is an area where chairman, Colin Allanach, feels that the club stands out: “Our youngsters take great pride in being part of Ythan QL. We have a positive brand and have great role models in some of our former members such as Zak Loney and Jordan Stronach who have made an impact on the national stage and progressed to senior racing teams across Scotland. However, the fact that our young riders are learning new skills in controlling their bikes, learning to ride safely, improving their fitness and are being taught to respect each other on and off the bike benefits the entire community. We are extremely proud of them.” The new academy at Cromleybank will extend the club’s capacity for youth training and racing. Ythan CC with the support of local councillors, Ellon Community Council, Aberdeenshire Council, Tim McKay of Ellon Academy and the architects for the new school campus, has designed a 1km track in the grounds for cycling at weekends and evenings. This joint venture is the first combined effort of this kind between a local cycling club and a school

cle Club in Scotland and is being held up as an example of best practice for local community involvement in infrastructure design by cycling’s governing body, British Cycling. One of the highlights of Ythan CC’s year is the Ellon town centre races which take place prior to the annual pedal car race. This year’s event takes place on Sunday 30 August and will again form part of the Scottish National Youth Series ensuring that Scotland’s best youth riders will race around the town centre providing spectators with a glimpse of the next generation of Scottish cyclists, some of whom will progress to represent Scotland at future Commonwealth Games. British Cycling has an initiative called ‘playground to podium’ and Ythan CC are certainly playing their part. As well as the youth initiative, Ythan cyclists are competing at the very top level of the sport. Fiona Duncan and Neil Fachie took part in the Olympic and Commonwealth Games with Neil winning a clutch of gold medals and world championship jerseys. But it’s not just racing; the club arranges slower Sunday club runs and organises mountain bike runs, social get-togethers (where not all the talk is about bikes) and takes part in both local and national charity challenges. Ythan CC has also joined the new Ythan Community Sports Hub and is looking forward to combined events and training initiatives with the other sports clubs in the area. The club is always looking for new members of all ages especially in the QL section. The club is looking forward to 2015 as another year of progression for cycle racing and cycling in general in the Ellon area. Ellon Can-Do Community Recycling is a Day Service Project for Adults with Learning Disabilities. We collect used beverage cans (UBCs) from local pubs and businesses weekly and take them back to our unit to sort out the aluminium cans from the steel. They then get collected for recycling back into drinks cans. We would be pleased to accept drinks cans from you if you want to drop them off at our unit or we could collect them if you had a 3kg bag or more. “When I arrived in Ellon” says Alan, “the school roll was about 1000 pupils and when I left 15 years later we had over 1700. At the time, it was one of the biggest schools in Scotland and while there are many advantages to a large school there are also many complex challenges.” The growth was in some way because of the Oil Industry with many foreign nationals and their families arriving on 3 or 4 year Oil company contracts.

A Man for all Seasons is an oft-used phrase to describe a busy man. In the case of former Ellon Academy Rector Alan Cameron this is an apt title. Alan’s involvement in all things Ellon tells you he is a man who very rarely sits still and is involved in many local organisations and helps with many a worthwhile cause. Born on the Mull of Kintyre Alan attended Southend Primary school and Campbeltown Grammar school. Alan arrived in Ellon in 1981 to take over from Eric Slater as Rector at the local Academy. Having graduated from Glasgow University with an Honours degree in Chemistry in 1963 Alan went on to teach Chemistry, Physics, Zoology and Maths at schools in Invergordon, Stonehaven, Selkirk and finally Ellon. Whilst at Mackie Academy in Stonehaven he started and coached the School Rugby Team. During his tenure as Rector at Ellon, the Academy gained a reputation for good practice and was looked upon throughout Scotland as a well respected seat of learning. Alan has always said that a school is more

This obviously meant that we had to adapt to a more global multi-national way of thinking with Norwegians, French, German and Dutch pupils integrating with locals, and the changing nature and international diversity of the classes proved a significant challenge to the teaching staff who adapted magnificently to the changes. I have always maintained that the success of any school is founded on excellent teachers. The teachers pupils and senior staff responded magnificently to these challenges and unquestionably the quality of teaching and learning throughout the school was first class. Alan recalls many of his former pupils going on to reach the top in their chosen career. It is invidious to mention any names since so many have achieved great things but the outstanding former pupil must be Evelyn Glennie – now Dame Evelyn Glennie who went on to become the world’s greatest percussionist. But in all walks of life you will find successful pupils who attended Ellon Academy. As well as Evelyn, there are others in music, in all forms of sport in Politics, in Science, in Law and Medicine in the Arts and languages and that is what a school is about. Many of our former pupils have gained excellent jobs in

the oil industry and I am always delighted to see former pupils setting up their own companies. We must have done something right! Education is not only about passing exams; it is opening the door to a successful and fulfilling life. Among the more famous pupils Alan has taught in other schools include Roy McGregor, Highlands Entrepreneur and Rob McLean Sports broadcaster, both of whom Alan taught at Invergordon Academy and Alex Johnston MSP who was in his sixth year Chemistry class and also a star in the rugby team which Alan coached. Whilst at Invergordon also in October 1969 Alan met a pretty young Primary school teacher, called Elizabeth and it was love at first sight. Within a year Elizabeth Logan became Elizabeth Cameron. Alan and Elizabeth raised a family of Morag, Angus and John who tragically died in a car accident. In 1989 Alan was elected President of the Rotary Club and is currently Junior VicePresident of Ellon Probus Club. Among Alan’s passions are Golf, Robert Burns and the Gaelic language in which he completed an MA at Aberdeen University. Unfortunately, the golf handicap has matched the aging process in getting higher every year but this year we celebrated 27 www.gazettemagazines.com t : 01224 949085

From an early age, Alan sang in the local church choir and last year held a concert to celebrate 60 years of singing in church choirs. He first sang at the Mod aged 7 and he has in fact performed at the Mod on a number of occasions, singing in the Gaelic tongue in which his parents were native speakers. Incidentally, adding another string to Alan’s bow, he was instrumental in forming the Gordon Gaelic Choir which unfortunately was disbanded in 2003 after 10 very successful years in which it won the premier trophy for rural choirs at the National Mod. As locals will know, Alan has organised and performed at numerous Burns Suppers in the area sometimes Addressing the Haggis, or giving The Immortal Memory, other times leading the audience in community singing. ‘I really enjoy singing’ says Alan ‘and have done so since I was a young boy at school.’ ‘The Man for all Seasons’ latest project is to open up the Ellon Castle Gardens to the public and as Chairman of the Ellon& District Historical Society is keen to open an Ellon Heritage Centre giving town visitors and locals an idea of the history of Ellon. Another of Alan’s passions is the Scottish national Party and from 2000 until 2008, he was the SNP Councillor for Ellon and for the last 6 years was leader of the opposition group in Aberdeenshire Council. In an ever changing world Alan is one man who has tried to ‘make a difference’ and many people are grateful for his legacies in many parts of Scotland. ‘It’s true to say that over the piece when times are challenging and change is needed I have managed to adapt and I think that is part of the process in any walk of life’ says Alan. e : ellon@gazettemagazines.com

Secret Malts of Aberdeenshire The active and lost whisky distilleries dotted around Aberdeenshire have been brought together for the first time. Aberdeenshire’s rich but under-recognised whisky heritage is being showcased with the council’s Secret Malts of Aberdeenshire guide. Aberdeenshire Council’s economic development team has been working in partnership with local whisky producers to highlight the hidden range of small distilleries all within an hour’s drive of Aberdeen. Targeting the tourism markets, both at home and abroad, whisky connoisseurs, local people and historians, The Secret Malts of Aberdeenshire guide highlights the fascinating history of eight local working distilleries. The comprehensive booklet also details the area’s “lost”, or non-operational, distilleries, as well as a guide to whisky tasting and the location of some specialist whisky retail outlets. Of the eight working distilleries featured in the guide, most are relatively small in scale but each has its own distinctive history, style and taste. Four of them have small visitor centres and shops offering regular tours led by knowledgeable guides. Three of the distilleries are not officially open to the public, but will organise informal tours, often led by the distillery manager who can offer a unique insight into how their whisky is made.

Whilst the Speyside area is rightly celebrated across the world for being the centre of Scotland’s Malt Whisky Trail, our relatively small and intimate distilleries also have a huge amount to offer to visitors and to the whisky connoisseur. Perhaps a little less well known, the flavours, quality and charm of these “secret malts” make it well worth the effort for us to highlight the trail and for visitors to seek them out. The industry supports 35,000 jobs and around £2 billion is being invested in infrastructure over the next two years. It is of vital importance to the economy.

Community Learning & Development ~ Helping you and your community learn, change and grow. Rainbow Rogues – for children who need a little extra help Most children need extra help of one kind or another at some time in their lives. In the early years in particular it can be difficult to know whether behaviour that parents find hard to deal with is just a stage of the child’s development, or whether help and support may be needed. Rainbow Rogues was established to support families whose children may have additional support needs or disabilities. The group meets twice a week during school term times on Tuesday and Thursday mornings between 9.30 and 11.30 at Esslemont, just outside Ellon. The group is free. Children enjoy a safe supportive play environment which encourages their social and emotional development, while parents have an opportunity to meet other families who may be experiencing similar issues. Experienced staff are always on hand and can advise and offer support to families on a range of subjects. Sometimes, as adults, we can suddenly find we need help to improve our reading, writing and numbers. It could be a lack of confidence, a change in job or even that the kid’s homework is proving challenging! Community Learning and Development provide a free 1:1 service where individuals can get the needed tuition and support to improve these skills. We are looking for people to support this project through training to be volunteer literacy tutors. Ellon Foodbank Aberdeenshire North Foodbank is part of the Trussell Trust’s national network of over 400 foodbanks in the UK. The Trussell Trust is a Christian charity that seeks to provide assistance to people of all backgrounds who are found to be in genuine need. Their foodbanks are staffed by volunteers and provide a minimum of three days emergency food and support to people experiencing crisis in the UK. With their wealth of experience they have comprehensive guidelines and policies in place and work on a referral system from a variety of local agencies and bodies. Ellon Foodbank Centre opened on 6th June 2014, and is part of the Aberdeenshire North Foodbank which now has centres in Ellon, Huntly and Inverurie. The Foodbank is based in the Ythan Centre, Station Road, Ellon and is open on Tuesday 1pm-3pm and Friday 10am-12pm. This is a relatively affluent part of Aberdeenshire, yet there are people who struggle to feed themselves and their families for a number of reasons. Redundancy, illness, low income, benefit delay, domestic violence, debt and family breakdown can have a devastating effect. The Foodbank hopes to provide a welcoming, non-judgemental place where people can feel comfortable and leave relieved, knowing that their immediate need for food for themselves and their family is alleviated and one less thing to worry about. Thanks to the amazingly generous response of local people we have been given and continue to be given enough food to help

local people who are in need. the week and take a view’. Jack was brought up in the Borders town of Langholm and through his various roles in local government positions he has held is certainly a man of the community.

Jack Nixon It’s my opinion that anyone writing a local weekly newspaper column can court controversy and debate amongst the readership.

Among his previous jobs he worked as a Youth Development Officer counselling Under 16 year old kids in the Craigmillar district of Edinburgh, who had got caught up in Drugs, Alcohol and most of whom were living in real deprivation.

Secretary and they are still going strong today. The young Mr and Mrs Nixon then decided to take up a position in London in an Arts project with the Albany Trust. ‘Big mistake’ admits Jack and after 2 years they were on their way back to Scotland and indeed to Peterhead to take up a position of Community Development Officer in the Blue Toon. After two promotions in 1974 Jack moved to Ellon as Community Education Officer a job he looks back on with good memories.

‘This as you can understand was quite a challenge for a 22 year old trying to make his way in the world’ admitted Jack ‘but it gave me a good grounding of what life is all about and served me well in later years’

His proudest time though came between 1983 and 1993. Having been given massive responsibility, he oversaw 100 staff and a £ 5 million budget as he guided 1500 Trainees through their various courses.

I caught up with Jack in midweek as he prepared his piece for the Times.

In 1967 Jack married Elizabeth Anthony who ironically had been his secretary and they went on to have 2 sons . Older son Keith now lives in North Carolina and sibling Graeme is a Lecturer at Aberdeen University.

Retirement followed this chapter of Jack’s story but after 2 years a complete change of direction took place as a letter he had written to the editor of the Ellon Times took him in a very different direction.

contd\ In his time since, freelance journalist Jack has covered 47 different sports for various newspapers such as The Scotsman; The Sunday Times; The Border Telegraph and of course nearer home the Press & Journal and The Evening Express.

‘I enjoy all sports’ says Jack ‘but I suppose Rugby is probably favourite. Coming from the Borders and having met the doyen of Rugby Bill McLaren on a few occasions it just gets my vote. I still really enjoy doing my P&J reports’. Having also had a spell on the McDonald Golf Club council as Junior Convenor and then Captain Jack still enjoys a few holes of Golf. ‘I once interviewed American golfer Tom Watson and I can honestly say I have never met a more pleasant and humble individual in all my life .What a gentleman’. Then putting on his Cricket hat sports enthusiast Jack reminded me he had also interviewed Cricketer Ian Botham and his memory of this meeting was of a world renowned charity fund raiser who was just an ordinary, decent guy and a giant amongst sportsmen. As we ended the interview Jack looked back over the years and reflected ‘I like to think my future is not entirely behind me’ Prophetic words from a long time Man in the Community. Having been Secretary of Mcdonald Golf Club twice and a founder member of the Ellon bridge Club Lawrie is a ‘weel kent face’ in the AB41 area.

Auchnagatt Barons After 35 years in charge well known local Lawrie McLean steps down at the end of this season as manager of local amateur side Auchnagatt Barons. The Barons named after the local Auchnagatt hostelry , now closed, were formed in 1980 and Lawrie has been manager from day one. “Many of the players were from the village when we started “ says Lawrie “and it gave the young lads a chance to play competetive football”. In the early days it was tough going with primitive changing facilities for ourselves and the opposing teams but we got through it with great determination and spirit. The team finished 3rd in Division 7 in its first full season and they looked upon this as a good start for the Club. Since then the Barons have enjoyed a Yo-Yo existence flirting with both Promotion and Relegation since then. Lawrie’s enthusiasm however has never wavered over his time with the Club and when I caught up with him he was busy packing the playing kit for their next Saturday match. “Over the years at times it has been hard going” says Lawrie “ but I have been very lucky to have www.gazettemagazines.com t : 01224 949085

Originally from Leith, Lawrie studied Geography at Dundee University and eventually moved to Aberdeen to become a lecturer at the University a post he held for 39 years until he retired in 2014. It was in 1969 that Lawrie tied the knot with his wife June, they have a son Nicky who is a Computer analyst with Howdens in Glasgow. It’s rumoured Grandad Lawrie has already got grandson, Oscar on youth forms to sign for the Barons. Highlight of Lawrie’s 35 year association with the club was undoubtedly when they won the Castle Rovers Cup beating Byron Munich by 2 goals to 1 in the final. Mark Morris scoring the winner in the last minute of extra time. Lawrie also paid tribute to the Club’s all time record goal scorer Stewart Patience who scored a phenomenal 317 goals in 520 appearances. When I asked what legacy he will have left the Club his reply was “Good Standards.” “Very few players have left Auchnagatt Barons and had harsh words to say about the way the team is run and the way that myself and my assistant managers have gone about our business. This shows to me that they have all enjoyed the experience of playing for what will always be my favourite Club Auchnagatt Barons”. Colin Grant Senior

Glazed chicken kebabs with sweet potato mash and freshly ground black pepper and brush all over with sunflower oil. Cook under a medium preheated grill for 10-15 minutes, turning occasionally, until the chicken is just cooked through. Meanwhile, boil the sweet potatoes in a large pan of lightly salted boiling water for 10-15 minutes, or until tender. Drain well, then mash with the butter and crĂ¨me fraiche until smooth. Season to taste with salt and freshly ground black pepper.

These quick chicken kebabs with a tangy chilli glaze are perfect for a mid-week supper. Sweet potatoes cook just as quickly as ordinary potatoes, just make sure they are cut into evensized chunks and take care not to overcook them. Serves 4 Ready in 25 minutes 450g chicken breast fillets, cut into cubes 2 small red onions, peeled and cut into thin wedges 2 tsp sunflower oil 1 kg sweet potatoes, peeled and cut into chunks 25g butter 2 tbsp crĂ¨me fraiche 2 tbsp sweet chilli sauce 1 tbsp runny honey 2 tsp red wine vinegar 1 tbsp fresh chopped coriander Salt and freshly ground black pepper Method

Place the chilli sauce, honey and vinegar in a small pan and simmer for 1-2 minutes until syrupy. Brush half the glaze all over the chicken kebabs and grill for a further 1-2 minutes. Serve the kebabs on the sweet potato mash with the rest of the hot glaze drizzled over. Garnish with fresh chopped coriander. Tip : For an extra fiery flavour add some finely chopped fresh red chilli pepper to the glaze.

Lemon Curd Cookies Crisp and buttery with a tangy lemon flavour these delicious home-made cookies taste divine. You can change the flavourings if liked, try orange zest with fine shred marmalade or replace 1tbsp of the flour with cocoa powder and fill with chocolate and hazelnut spread for a moreish choc and nut version! Makes 16 Ready in 30 minutes, plus chilling

Method 50g butter, softened 1 tsp finely grated lemon zest 85g caster sugar 1 medium egg, beaten 175g plain flour, plus extra for dusting 4 tbsp good quality lemon curd Icing sugar, for dusting Place the butter and sugar in a large bowl and beat together until light and fluffy. Beat in the lemon zest and egg then sift over the flour and mix to a crumbly dough.

cookie cutter stamp out 16 circles, re-rolling the dough as necessary. Place the circles of dough on the baking sheets. Spoon about Â˝ teaspoon of lemon curd in the centre of each circle then pull up two sides of the each circle and pinch together tightly to seal. Chill in the fridge for a further 30 minutes.

Gather the mixture together with your hands and knead on a floured surface until smooth. Flatten to a disc shape, wrap in cling film and chill in the fridge for about 45 minutes.

Bake in the preheated oven for 12-14 minutes until pale golden. Cool for 5 minutes then transfer to a wire cooling rack and leave to cool completely. Serve dusted with icing sugar.

3 Preheat the oven to 180Â°C/160Â°F/gas mark 4. Line two baking sheets with baking parchment.

TIP: The chilled dough will keep in the fridge for 2-3 days. Leave at room temperature for about 20 minutes to allow the dough to soften a little before rolling out otherwise it may crack.
